Meet Mark We’re thrilled that Mark Lazar has joined the JCC as director of Jewish education to head up the Center for Jewish

Hailing from Israel, Mark, a professional Jewish educator with more than 40 years’ experience spanning diverse global settings, topics, and audiences, has joined the JCC team to provide creative leadership of the JCC’s new Center for Jewish Life. Mark has taught and trained in over 40 countries as well as guided groups in Israel and Europe, with well over 60 heritage journeys to Poland. Mark has brought his special flavor of Judaism and Jewish identity to thousands of individuals of all ages. He is known for his hands-on, experiential learning style and promises to surprise Orange County in many ways. The Center for Jewish Life is operated in collaboration with Orange County’s Jewish Federation and Family Services. T
urning back the pages of Herzl Camp, a popular Zionist enclave in Webster, Wis., reveals a chapter in Bob Dylan’s history that predates his reign as the most poetic voice in rock ‘n roll. The youth camp, located 100 miles from the Twin Cities, was founded in 1946 by a group of ardent Zionists from St. Paul, Minn., who saw potential for Jewish kids to explore the great outdoors in a town with a population of 502. This founding of Herzl Camp made an inimitable impact on Midwestern Jewish

culture, and the story has found its way into a book-in-progress, to be published by Random House, called “The Boys from the North Country.” The author is former Herzl camper Louie Kemp. In the forthcoming memoir, it is revealed that Bobby Zimmerman – a.k.a. Bob Dylan, from Hibbing, Minn. – registered at Herzl Camp in 1954, the year he met Kemp, who hailed from Duluth. As these two small town Jewish boys shared the same rustic cabin for three weeks in the Wisconsin woods (which cost just $165
THE JEWISH 411 for the whole session!), a long friendship blossomed. That connection, rooted in those carefree days, endures like the memories of so many Jewish summercampers throughout the U.S. Bob and Louie continued to meet up at summer camp for a few years, and I was there too eventually, in a different dorm of course, but always wanting to be involved in the action. It was the summer of 1957 that stands out as the most raucous of all the years. “Herzl was a Zionist-inspired camp and Israeli songs were part of the program,” Kemp recalls. But by that summer of ’57, Bob Zimmerman was playing a different tune. His guitar was his constant companion, and it was clear Zionist songs were not to be his calling. After camp that year, Bob and a group of us from Herzl spent the remaining long summer days in Highland Park, the Twin Cities’ Jewish neighborhood, mostly watching Bob jam on any available piano or guitar he could get his hands on. October 13 is a date I’ll always remember. There was an impromptu basement party at a friend’s house that quickly expanded to my cousin’s living room – there was a Baldwin piano there and Bob was in the mood to sing. Bob Dylan was already making people uncomfortable with his new rockin’ brand of rhythm and blues. Aunt Bess and Uncle Teddy were quite traditional and the verses that came out of Bobby that day are still unfit to mention in a story such as this. An excerpt from my diary dated Oct. 13, 1957 reads “Zimmerman was looking at Judith [my cousin] while he was singing one of his songs. … So, he likes her!” My instincts were proven right when Bob accepted her invitation to the B’nai B’rith Girls dance that November. I still remember the “Milton J. Blumenfeld” color photo that
sat on her dresser for ages – it showed Bob Dylan in a solid black suit and pink ruffled shirt, the only one with such a bold style which would come to define his career not too long after that photo was taken. It’s memories like these that keep camp and the excitement of adolescence alive for years long after they’re both gone. When Bob Zimmerman left the Twin Cities for New York in 1961, Louie Kemp eventually caught up with him and in 1975-76 managed Dylan’s “Rolling Thunder Review” tour. Kemp’s family, established in Duluth’s fishing industry, conveniently “provided the smoked salmon” for the Review’s Thanksgiving dinner. Later, in the 1980s, Kemp lived with Bob for three years, as chronicled in Seth Rogovoy’s “The Rogovoy Report.” Kemp eventually sired six children producing four grandchildren. He remains an advocate of Jewish summer camp. In retrospect he says, “This is where children realize opportunities and life experiences away from home, in a Jewish environment.” Reflecting on his Jewish camp experience of more than 60 years ago, Kemp reaffirms that “children will find fundamental opportunities to grow in mind and soul while being exposed to Jewish experiences away from home.” The bottom line, he says, with a wise smile, is that “the skills kids might otherwise not experience from camp can impact their life and friendships in ways they could never imagine.” In his case, it was a Jewish camp deep in the Wisconsin woods that established a deep friendship and the stories of a lifetime. TOMATO PESTO TART with cauliflower crust INGREDIENTS: 1 cup shredded mozzarella cheese 1 egg, beaten 1 tsp oregano ¾ tsp minced fresh garlic ¼ tsp turmeric ¼ tsp salt Pinch of cayenne pepper ¼ cup basil pesto ½ cup crumbled goat cheese 2 ripe tomatoes A few sprigs of fresh basil ¼ tsp crushed red pepper flakes, or more to taste (optional)

INSTRUCTIONS:
Preheat oven to 425 degrees F and place a rack in the center of the oven. Pulse your cauliflower florets in a food processor until they resemble fine crumbles or couscous (don’t over-process to a paste). Alternatively you can hand grate the cauliflower using the fine holes on your grater. Place the processed cauliflower in a microwave-safe bowl and microwave it on high for 7 minutes. No need to add any liquid, the cauliflower will steam itself. While cauliflower is cooking, line a baking sheet with parchment paper or a silpat. Take the cauliflower out and stir it repeatedly to release steam and cool it down, until it is lukewarm (not hot) to the touch. To the bowl with the cauliflower, add the mozzarella, egg, oregano, minced fresh garlic, turmeric, salt and cayenne pepper. Stir the mixture with a fork until well blended. Place the cauliflower mixture in a pile in the center of the lined baking sheet. Gently press out the mixture to form a 9-10 inch circle of even thickness, making sure to keep the center as thin as the edges. This is the beginning of your cauliflower “crust.” Use your fingers to gently press against the outer edge of the crust to form a small edge around the circle. Lay both hands flat in the center of

the circle and gently press to flatten out the middle, ensuring an even thickness throughout the crust. Place the crust into the hot oven and let it bake for about 20 minutes, turning the baking sheet around once halfway through baking, till the crust is golden brown. While the crust is cooking, slice the tomatoes thin and shred or chiffonade the basil. Remove the crust from the oven and let it cool for 5-10 minutes. Use a spatula to very gently slide the cooked crust off of the parchment paper directly onto a greased baking sheet. Preheat your oven’s broiler. Spread out the pesto onto the center surface of the crust to the outer edges. Sprinkle half of the goat cheese evenly across the top of the pesto. Lay the sliced tomatoes on, then sprinkle the rest of the goat cheese across the top. Sprinkle the surface evenly with crushed red pepper flakes. Place the tomato tart into the oven under the broiler. Broil for 3-4 minutes until hot and bubbly, keeping an eye on the crust to make sure it doesn’t burn (it will get dark brown but shouldn’t blacken). Remove the tart from the oven and sprinkle with fresh basil. Serve sliced warm or at room temperature. Keep in mind that the bottom “crust” of this tart will be slightly soft in the center. Slices are best eaten with a fork and knife. A

INSTRUCTIONS:
Before he begins, Michael likes to take the skin off of the chicken, so the dish doesn’t contain as much fat. You can leave the skin on if you prefer. Sprinkle the chicken pieces generously with paprika, salt and pepper (if using kosher chicken, salt lightly). Place the bell peppers, tomatoes, chicken consommé powder and garlic into a blender. Blend to form a sauce. In a large pot, heat olive oil over medium. Sauté the onion slices in olive oil until tender. Once the onions have softened and are starting to caramelize, add the seasoned chicken pieces to the pot. Sauté for a few minutes. Pour the blended sauce over the top of the chicken pieces. Add water until the sauce just covers the chicken. Sprinkle with 3 tbsp of the

chopped parsley, season with salt and pepper to taste (we used about 1 1/4 tsp of each), and bring to a boil. Reduce heat to a low simmer. Cover the pot, vented slightly. Cook the chicken for about 1 hour or to desired tenderness. The longer it simmers the more tender it becomes. When the chicken is finished cooking, adjust salt and pepper seasoning to taste. Mix together 2 tbsp cornstarch with 3 tbsp of cold water. Gently stir the corn starch mixture into the chicken sauce and simmer for a minute or two to thicken. Serve chicken and sauce over warm nokedli (spätzle) or the starch of your choice. Mashed potatoes, egg noodles and rice will also work well. Sprinkle with remaining 1 tbsp chopped parsley to garnish (optional). A 2017 | 51

CHALLAH BREAD PUDDING
with Kahlua Cream Sauce PUDDING INGREDIENTS: 1 loaf plain (unseeded) challah bread- day old is okay 1 cup chopped walnuts 1 quart half and half 6 eggs, beaten 1 cup sugar ½ cup light brown sugar 2 tbsp melted butter 2 tsp cinnamon 1 ½ tsp vanilla ½ tsp nutmeg ½ tsp salt 2 cups raisins and/or chocolate chips (optional)
KAHLUA CREAM SAUCE INGREDIENTS: 3 tbsp unsalted butter 1 pint heavy whipping cream 1 egg ¾ cup sugar 1 tbsp flour ¼ tsp nutmeg Dash of salt 1 tbsp Kahlua liqueur 1 tsp pure vanilla extract
YOU WILL ALSO NEED: Electric mixer or immersion blender, cookie sheets, skillet, very large mixing bowl, 9×13 baking dish, small saucepan Yield: 12 servings Total Time: 2 hours Kosher Key: Dairy Note: It can be difficult to find Kahlua with a kosher hechsher. If you’re concerned about this, simply double the vanilla in the sauce in place of Kahlua.

Preheat the oven to 350 degrees F. Slice the challah bread into 1-inch cubes. You’ll need about 12 cups of loosely packed cubes. If you don’t have enough challah on hand, you can mix in any kind of light-colored bread to make up the difference (white, buttermilk, Hawaiian). Spread into a single layer on two cookie sheets, place in oven, and lightly toast the cubes for 7-8 minutes until they are dry and just beginning to brown. Remove from oven and allow to cool. Meanwhile, heat a skillet over medium. Toast the chopped walnut pieces, stirring constantly, until they begin the lighter colored parts of the walnut flesh begin to brown. Remove from heat. In a very large mixing bowl, combine half and half, beaten eggs, sugar, brown sugar, melted butter, cinnamon, vanilla, nutmeg and salt. Use an electric mixer or immersion blender to thoroughly blend all ingredients. Pour the toasted challah cubes, chopped walnuts, and raisins into the liquid mixture. Stir all ingredients together for a couple of minutes until the bread cubes have soaked up most of the liquid. You may have to lightly mash some of the bread cubes down to make sure they’re fully immersed in liquid.

Generously grease a 9×13 baking dish or pan. Pour the bread pudding mixture into the dish, being sure to scrape any excess liquid from the bowl. Cover tightly with foil. Bake pudding at 350 degrees F for 1 ¼ to 1 ½ hours. Take off the foil after 1 hour to let the top brown. The pudding is done when the top is brown and springy to the touch. The center of the pudding should be baked through, not liquid. Serve warm topped with Kahlua Cream Sauce. To make the Kahlua Cream Sauce, melt the butter in a small saucepan over medium heat. Add heavy whipping cream to the pan, whisking to blend with the butter. Add egg, sugar, flour, nutmeg and salt to the pan. Whisk continuously for about 10 minutes until the sauce thickens. Remove from heat. Whisk in Kahlua and vanilla. Serve warm atop freshly baked bread pudding. A

In the residential consumer channel, innovation of portable hand-held extinguisher has not taken place. The industry continues to provide low cost, unreliable, corrosive, environmentally unfriendly and hazardous portable fire extinguishers that are un-effective to “Kitchen” born fires, which according to the NFPA’s November 2016 report, 1,345,500 home fires were reported during 2015 of which 501,500 were structure fires. Almost half (46%) of reported home structure fires were caused by cooking related incidents: • Cooking equipment was involved in an annual average of: • 480 civilian fire deaths, or one of every six (19%) home fire deaths, • 5,540 civilian fire injuries, or more than

two of every five (44%) reported home fire injuries, and • $1.1 billion in direct property damage, or 17% of total direct damage in home structure fires. • Ranges or cooktops, with or without ovens, accounted for the majority (62%) of home cooking fire incidents and even larger shares of civilian deaths (88%). • Unattended cooking was by far the leading contributing factor in these fires and fire deaths. • More than half (55%) of reported non-fatal home cooking fire injuries occurred when the victims tried to fight the fire themselves. SPOTLIGHT ON... San Diego Couple Leaves $400 Million to Ben-Gurion University FROM THE AMERICAN ASSOCIATES OF BEN-GURION UNIVERSITY
L
ongtime San Diego residents Dr. Howard and Lottie Marcus each fled Nazi Germany in the 1930s – while they still could – and immigrated to the United States. “The Marcuses escaped Hitler’s Germany and lost their families,” says Philip Gomperts. “They came to believe that if Germany – ‘the most civilized nation in the world’ – could descend to barbarity and to the mass murder of Jews, it could happen anywhere. A strong and secure State of Israel, they concluded, would have saved their families and was essential for the future.” The Marcuses became involved with Ben-Gurion University of the Negev

(BGU) in 1997 after meeting Gomperts, Southwest regional director for American Associates, Ben-Gurion University of the Negev (AABGU). They became fascinated by the University’s work in desalination and desert farming, among other areas. “”They believed that peace could come to the Middle East if water scarcity could be addressed,” Gomperts explains. Lottie Marcus died in December, 2016, at age 99, just two months short of her 100th birthday, while Howard died in 2014 at age 104. The magnanimous legacy gift they bequeathed to AABGU – estimated to be $400 million when fully
THE JEWISH 411 received – is the largest gift ever made on behalf of an Israeli university, and may be the largest donation ever made to benefit any institution in the State of Israel. The funds will be used to establish a permanent endowment in support of BGU, which will yield endowment assets that more than double the size of the current University endowment. Ten percent is earmarked for a separate endowment to support BGU’s worldrenowned work in water research at the Zuckerberg Institute for Water Research – Israel’s leading water institute. The Marcuses earned their fortune as a result of a relationship with the legendary investor, Benjamin Graham. Lottie worked as the head of the secretarial pool at a major Wall Street firm. She met Graham through the Wall Street Ski Club in the 1930s. They became lifelong friends and, in the early 1960s, Graham
told Howard and Lottie about a student of his at Columbia Business School, a young man he thought a prodigy. He invited that student, Warren Buffett, to meet with Howard and Lottie and they put most of their nest egg in Buffett’s new partnership, which later became Berkshire Hathaway. With annual compounding that investment grew. Warren Buffett says, “I met Howard and Lottie more than 50 years ago – through a mutual friend, my lifetime hero Ben Graham. We hit it off and they joined my investment partnership. Knowing them, it comes as no surprise that they elected to use their financial success to enhance the lives of thousands of Israeli young people.” “More than anything else, Howard and Lottie were like second parents to me. They were warm, giving, wonderful people and I miss them every single day,” says Gomperts. A
