Celebrating a 100TH anniversary Longtime Hampton residents know that Tobey & Merrill has been a community landmark for many years in four different locations in downtown Hampton and for the last 33 years at 20 High St. It was Tobey & Larry Marsolais Merrill’s mission to make it a commitment to be active in the community, and that commitment has carried on throughout the generations that have run the agency. Tobey & Merrill’s sign is regularly used by local organizations to promote nonprofit events, auctions, plays, fundraisers, community events and even birthdays. Their journey starts out in the year 1908, when Reverend Edgar Warren started the business. Seven years later Reverend Warren sold the business to Herbert Tobey. In 1916, Mr. Tobey hired Carolyn Ruth Noyes as his assis-

tant. In 1917, Miss Noyes married Mr. Dean Merrill who had just returned from the war. In 1918, Mr. Merrill joined the agency and then in 1920 they became partners and the agency formally became Tobey & Merrill Insurance. The Merrills purchased the agency in 1987 from the Tobeys, keeping the current name of Tobey & Merrill, Inc. The agency continues to thrive with owners, Dean Merrill and Geoffrey Merrill, with a fourth generation, Kimberly Merrill Wood, joining the agency in 2017. Celebrating 100 years they had an anniversary mission to give back to the community and so far they have donated $5,000 to places throughout the Seacoast. Building sand castles with plastic buckets and shovels is fun, but there’s so much more you can do with sand — and the sculptors participating in the 20th annual Hampton Beach Sand Sculpting Classic are going to prove it. “I like to call it an outdoor art gallery,” Lisa Martineau, co-director of marketing for the Hampton Beach Village District, said of the work that the sculptors create on the beach. “These guys are really at the top of their game.” The competition is usually held in June but was postponed due to Covid-19. Now, the sand will be brought in Thursday, Aug. 27, the creation of the sponsor site will start Friday, Aug. 28, a group carve will happen Tuesday, Sept. 1, and the solo competition starts Wednesday, Sept. 2. Beachgoers will still have the opportunity to gaze at the massive sand sculptures, but the process of choosing a winner will be a little different. “Usually, for people’s choice, viewers cast their vote on a piece of paper that’s put into a bucket,” Martineau said. “Because of the virus, we don’t want any interaction that involves different people touching the same piece of paper. Plus, everybody has to stand in line, and it’s really hard to socially distance that way.” Instead, she said, they might post pictures online and have people vote that

world,” Martineau said. The $27,000 in purse and entry awards will be distributed among the top four sculptors and recipient of the people’s choice award, which will be facilitated differently to adhere to social distancing guidelines. Even though finding a way to safely cast votes has been challenging, Martineau says the people’s choice award is crucial, as it is important not only to the community, but to the sculptors as well. “We want to make people’s choice happen,” Martineau said. “The sculptors will tell you that people’s choice is the award that means the most to them. Some of them don’t even sculpt to win — they just want to make people happy. I think that’s a great mindset to go into the competition with, especially under these circumstances.” Judging for the other prizes is primarily based on the overall “wow” factor, level of difficulty and how creative the name of the sculpture is. Picking a winner from a group of the world’s best sand sculptors isn’t easy in Martineau’s eyes. “It’s really difficult to judge,” Martineau said. “These are top sculptures, some of which have been making these for upwards of 30 years. It’s incredible and intricate work.” Sculptors from around the world have

travelled to Hampton Beach in the past to show off their skills, including artists from India and the Netherlands. “We usually get people from all over the world, but it’s been a little difficult with the pandemic,” Martineau said. Some international sculptors from past competitions are still returning this year, along with a few people who are new to the scene. Experience aside, Martineau stressed the talent these artists possess. “They’re an amazing group of people, and they have such an incredible talent,” Martineau said. “They all have their own style, just like any painter. I’m at the point where I’ve been to the competition so many times that I can tell who did which sculpture just by looking at them.” One particular sculptor that Martineau can always pick out of the crowd is Abe Waterman, whose unique personality and out-of-the-box thinking shines through his art. Other notable contestants include Greg J. Grady, whose father started the Hampton Sand Sculpting competition. Greg Grady, the founder and current organizer, has been sculpting with sand for over 30 years. After participating in sand sculpting competitions around the world, Grady convinced the commission to hold a competition in Hampton. CONTINUED ON PG 8

Grady’s son grew up watching his dad sculpt with the pros, and learned from the best at a young age. In this case, the saying “like father like son” rings true. “I remember his junior prom,” Grady said. “He had the choice to go to prom or go to Atlantic City with dad to do some sand sculpting, and he chose Atlantic City.” Grady’s son was awarded with fifth place in last year’s competition, securing himself a spot for this year. Though the sand sculpting competition is a big hit at Hampton Beach, the art form has been turning heads in other countries for years. “Thirty years ago this was an up and coming thing in the Netherlands and on its way to the U.S.,” Grady said. Martineau says the competitive side of sand sculpting has stretched as far as India. “There’s a huge sand sculpting competition in India. The sand is very different out there. It’s a little orange and claylike,” she said. It may seem like an enormous amount of support is required to keep these sand sculptures from collapsing, but Martineau assures that sculpting is as simple as it seems. “There’s nothing special in there that keeps them together,” Martineau said. “It

just takes water and sand, and an incredibly creative mind.” The fun begins on Aug. 27, when 200 tons of sand from a local quarry will be transported to Hampton Beach for the sculptors to pound up. According to Martineau, the sand at Hampton is too porous for the sculptors to work with and will not be sturdy enough when compacted and molded. Once combined with water, the imported fine-grain sand gets pounded and molded into something special. “There is no glue in the sand, but the sculptors are allowed to spray their sculptures with an adhesive glaze so they stay up longer,” Martineau said. “It’s kind of like an M&M; it’s soft on the inside, but the hard outside is what keeps it together.” The sponsor site made with 100 tons of sand will be ready to view by Monday, Aug. 31, followed by a master group carve on Sept. 1. The solo carving competition will begin on Sept. 3, and judging and people’s choice award voting will take place on Sept. 5, followed by an awards ceremony at 7 p.m. Sculptures will be illuminated for nighttime viewing, and the window for viewing will likely be shorter this year. “Normally they stay up for a couple weeks, but I think it’ll only be an extra week this year,” Martineau said. —Shane Jozitis

Why all the boring car colors? Dear Car Talk: A casual look at traffic shows you that almost all cars are either gray, black or white — with a few red sprinkled in. OK, some people call their gray cars “silver,” but we know betBy Ray Magliozzi ter. My second car was a two-tone copper and cream 1956 Bel Air. A later one was a two-tone Buick Regal. Such imaginative color combinations were the rule as much as the exception. What happened? Why are our colors so boring and washed out? Are the manufacturers cheap, or have they lost their imagination? — Paul I’m actually color blind, Paul. So no one’s listened to a word I say about car colors since that time I came home with a purple AMC Pacer in 1976. The answer is fashion, Paul. Fashion is something that’s so ridiculous that we have to throw it out every six months and start all over. And when it comes to less expensive purchases, some people can throw stuff out every six months. You can buy a powder-blue leisure suit with white piping one day because it seems fashionable. And then, six months later, you can leave it in the closet and go buy something else. But as we go up the expense ladder, people tend to get more conservative. So you might

take a chance on a loud shirt for $50 and see how you like it over time, figuring you can always stop wearing it. But when you’re buying a house or a car, you’re likely to feel more risk-averse. You’d hate to spend $30K on a new car and decide it looks ridiculous six months from now, with 78 months of payments still to make. So people tend to stick with (a) muted colors and (b) colors that lots of other people have already chosen, because that makes them feel that they’re making a safe choice. Safety in numbers, right? We can’t all look ridiculous. The truth is, if people wanted to buy lime green cars, the carmakers would be happy to paint them that color. It’s more or less the same to them in terms of cost. But what they don’t want is a lime green car sitting on the lot for two years waiting for a color blind idiot like me to think it’s gray and buy it. Still, you can find some fringe colors out there. You just might have to special order them. Dodge, in fact, makes a Day-Glo lime green Charger. Honda makes a bright orange Fit. You can get a Ford Transit Connect in school bus yellow. You can order your Jeep Renegade in metallic aqua. And you can get pretty much any Mini you want in two-tone paint. As for me, I drive a “silver” car. But in my closet, just waiting for it to come back into

AT SUNDAY BBQ For more than two decades, Erin and Steve Candiano of the Seabrookbased CanDo Ventures have run food concessions at festivals and carnivals across New England. The pandemic forced the cancellation of their 2020 season, but rather than letting the new smoker they recently purchased sit in their yard, the Candianos have found a new alternative business venture. Sunday BBQ (find them on Facebook) opened last month at the site of Seabrook Tire & Auto (58 Lafayette Road), where you can find the Candianos every Saturday and Sunday from 11 a.m. to 8 p.m., likely through the end of the fall. They offer ribs, brisket and pulled pork as well as their own homemade rubs and barbecue sauces, and sides like cornbread, baked beans, grilled corn on the cob and coleslaw. Other unique options include “barbecue sundae” cups, featuring layers of corn bread, baked beans, coleslaw and pulled pork, garnished with a pickle. The Scene recently spoke with Erin Candiano about what the response to Sunday BBQ has been like so far and some of her must-try recommendations.

Wedding cake Reading the title of this recipe, you may wonder why on earth I’m sharing a recipe for wedding cake. Isn’t that only to be eaten when one attends a wedding? My answer is a resounding no. Wedding cake really is just a basic yellow cake with a different flavor to it. However, doesn’t it sound so much more elegant than yellow cake? Plus, if you treat it like a wedding cake and add a filling of fruit or chocolate in addition to its buttercream frosting, you have a dessert that is truly divine. I have been making homemade wedding cake every year for our anniversary ever since the bakery that made our original cake closed. But there’s no need to save this cake only for wedding celebrations. It would be a lovely end to a family meal or holiday dinner. This recipe is a straightforward baking recipe with one caveat: it requires cake flour. If cake flour isn’t an ingredient that you have on hand, it can be replaced. For each cup of cake flour, you need one cup of all-purpose flour and two tablespoons of cornstarch. Remove two tablespoons of all-purpose flour from the cup, and replace with two tablespoons of cornstarch. Sift the flour and cornstarch mixture, and then use as the recipe notes. The two tablespoons of removed flour can be returned to your flour Wedding Cake Makes 12-16 servings 2/3 cup butter, softened 1 3/4 cups sugar 2 eggs 2 teaspoons almond extract 3 cups cake flour 2 1/2 teaspoons baking powder 1/2 teaspoon salt 1 1/4 cups milk Preheat oven to 350 degrees. Grease and flour two 9-inch rounds baking pans. Cream butter with sugar until fluffy. Add eggs, and beat well. While mixing add almond extract.

Sometimes it’s lemon curd, other times it’s blueberry compote. The list goes on. Pick the filling that you like most when you bake this cake. In a separate bowl, combine flour, baking powder and salt. Add half of the flour mixture to the butter mixture and mix just to combine. Add half of the milk and, again, mix just to combine. Repeat with remaining flour and milk. Pour batter into prepared pans. Bake for 22-26 minutes, or until a toothpick inserted in the center comes out clean. Cool in pans for 10 minutes, then remove cake from pans and place on baking rack to cool completely. Decorate cake with buttercream frosting and filling. Look, I know, when you think beach time and summertime, you don’t think about porters and stouts. I don’t either, except sometimes I do. From May through September beer enthusiasts are drinking and talking about beers that are crisp, fresh, light and bright, and that’s great. I’m all for it. Most of the time in the summer, that’s what I want too. You have to shake things up, though. You just do. Sometimes things just get a little too crisp and a little too bright, and nothing resets your palate in summer quite like a rich porter or stout. Now, OK, I’m not suggesting that you crack open a Guinness at 1 p.m. on a blazing hot summer day at the beach. You’d regret that move. Not every day is a blazing, hot summer day at the beach, though. Especially in New England — though admittedly perhaps not this summer — you have plenty of days at the beach or at the lake or in the mountains where cool breezes stand out more than the fiery sun, so seize those moments and treat yourself to something a little richer. Imagine taking in the summer sunset on a cool, clear New Hampshire evening with a decadent coffee stout. It’s truly hard for me to imagine something more relaxing and more satisfying than that. I want that experience right now and I think you should want it too. This notion really came to me a week or so ago when I was on vacation enjoying a porter called “Portah” by Barnstable Brewing of Hyannis, Mass. The deep richness and complexity was unlike anything I’d drunk recently and it was invigorating as I, wait for it, took in the sunset at the beach. Here are four stouts and porters you should try this summer.

This brew is in fact robust, but at 6.4 percent ABV this is much more palatable in terms of its heft than you might be thinking. You’ll pick up smoky notes for sure, along with pronounced rich

That’s real good.” This is a “New England Double IPA brewed with flaked oats, white wheat, and aggressively dry hopped,” according to the brewery. Boys State (PG-13)

Teenage boys who might be some degree of embarrassed by this movie when they are older spend a week giving a pretty good demonstration of modern American politics in the documentary Boys State.

The opening credits remind you of where you’ve likely heard of the week-long, American Legion-sponsored government camp Boys State before: that iconic photo of Boys State try-hard teenage Bill Clinton, shaking hands with President Kennedy at Boys Nation (whose participants are chosen from Boys State). Other notable participants, as the movie highlights, include Dick Cheney, Rush Limbaugh and Samuel Alito (also Cory Booker). As we are introduced to the participants in 2018’s Texas Boys State we meet kids who seem like fitting heirs to that list. In particular, hit-the-ground-politicking Robert MacDougall feels like exactly the sort of kid who would introduce himself by saying he’s the future governor of Texas. We also met Ben Feinstein, a teen who lost both his legs to meningitis as a preschooler. He has worked hard to achieve and, he explains, that has shaped a very “up by your bootstraps” mindset. The big prize of Boys State is to get yourself elected governor (or, as becomes Ben’s goal, be the teenbehind-the-curtain for the kid who does get elected). “Oh, their poor mothers” I found myself thinking about the crop of boys who are absolutely certain in their world views (so many opinions about abortion!). We also meet kids who arrive ready for a challenge: René Otero and Steven Garza come to Boys State aware that many of their fellow participants

are likely more politically conservative than them but they are eager to make their mark nonetheless. Watching them figure out how to work themselves into the boy-created power structure is probably the most compelling action of the early part of the documentary. Then, about halfway through this movie when I was wondering why Girls State wasn’t chosen as the focus (girls unleashed to be aggressive political animals feels like something more ripe for examination and suited to this moment in history than boys yelling into mics about masculinity), the movie makes a little turn and shows you a story of kids really caring about really making a difference — and really, aggressively playing politics the way you would if your formative political experience was 2016. Though the documentary clearly anoints its heroes, I don’t really think it turns other kids (and these are just kids, kids who I hope are OK with how this movie shakes out) into villains. You see people with political viewpoints and also political instincts and a desire to win. The movie demonstrates why this is a worthwhile program and not just a resume-burnisher; we see boys care, and care deeply and watch them become genuinely respectful of their peers. It’s a fascinating little study of what this moment in American history means to the practice of politics and how it’s being learned by the next generation of politicians and activists. B+ Rated PG-13 for some strong language, and thematic elements, according to the MPA on filmratings. com. Fans, friends and business associates (including one who eventually sued Mercado for use of his own name) explain the legend and the impact of Walter Mercado in this jolly documentary. The new paperback (592 pages) is the timely expansion of a book first released in 2006. Greger, who runs the website Nutritionfacts.org, says he donates all
