T

he “hot days of ending summer” are upon us again, and from store to shore the people of the Sea Islands soldier on. Where for some countries August is a time of holiday when few work and the few who must do as little as is necessary, stateside (and specifically here in the Lowcountry) things, much like the people, continue on, and we of these islands continue doing the work that must be done. Even in the heat that makes one fear the short walk from car to home without A/C. Even in that 100+ degree heat we’ve closed another round of our local festivals and our kids, sweaty from the summer play, have enjoyed their time away from pencils and books. The heat will carry on for a bit more, through and past this month and into the next, and so will the mosquitoes, and the humidity probably isn’t going anywhere anytime soon either. But still, summer is ending nonetheless, and with football training camp starting up and the kids going back to school it’s time to wrap up a few important things before the days are more directly occupied with how the Gamecocks* are doing or Junior’s report card. Enjoy these last few trips to the beach with your loved ones, build castles made of sand with the kids and watch them fall into the sea, eventually. Polish off your summer reading list with our own Pat Conroy’s My Losing Season or Faulkner’s A Light in August. Though there isn’t much in the way of national holidays this month, celebrate family. Celebrate community. Celebrate life. Enjoy the moments.

Sea Island Activities August 2015 Opening, August 3; Exhibition August 3-31: The Return of the Artist Saint Art Exhibit After several years exhibiting at art festivals from DC to Miami, FL local artist James St.Clair (aka The Artist Saint) will be doing a one man show at USCB for the month of August. Saint has most recently exhibited on Amelia Island, FL where his painting “Function at the Junction” won for best acrylic painting. August 10: Wolfpack Wolfpack, USCB indie film series. Locked away from society in an apartment on the Lower East Side of Manhattan, the Angulo brothers learn about the outside world through the films that they watch. Nicknamed the Wolfpack, the brothers spend their childhood re-enacting their favorite films using elaborate homemade props and costumes. With no friends and living on welfare, they feed their curiosity, creativity, and imagination with film, which allows them to escape from their feelings of isolation and loneliness. Everything changes when one of the brothers escapes, and the power dynamics in the house are transformed. Town of Port Royal

The town takes pride in its unique natural environment and its accessibility to that environment through its network of walking trails, community beach, boardwalk, and observation tower. Since Columbus discovered America in 1492, seven flags have flown over what is now the Town of Port Royal.

Looking for something new and fun to do with your kids at the beach? Here are some suggestions that will be enjoyed by young and old alike. 1. Tic-tac-toe. Draw a big square in the sand. Find some shells or use extra sand to make an X or an O and have a tic-tac-toe contest.

2. Hand ball. Use a soft plastic ball roughly the size of a volleyball. Draw a large square in the sand, and divide the square into two, cutting a line down the center. One person starts by serving the ball with her hand, and the ball must cross over the line and hit the other person’s square. Once the ball bounces up, the receiving person must hit the ball back to the other person’s square. Works best on packed sand.

6. Beach darts. A large circle drawn in the sand serves as the target. Draw one large circle as the outside of the target area. For extra complexity, add smaller circles inside, with varying points assigned to each ring. Each player needs his own rock, seashell or other item. Having each person choose a different type of material makes it easier to keep track. The players take turns tossing the objects toward the target to score.

3. Treasure hunt. Bury a few items in the sand and give some clues about where to find them. Let the kids be treasure hunters.

7. Beach golf. You need a set of plastic clubs and golf balls. For putting, consider going down near the wet part of the beach where the ocean waves meet the soft sand. Dig the holes and swing away.

4. Beach bowling. Bring extra plastic cups and a ball to use for bowling when you visit the beach. Have your child fill the plastic cups with wet sand to weigh them down and arrange the cups in a triangle. Mark a line in the sand for the starting point and encourage your child to roll the ball toward the “pins” without crossing the line. You may also form pins by packing moist sand into the cups, turning the cups over and carefully pulling them upward. The result will be sand in the shape of the cup.

8. Wave racing. This may be a familiar game when it comes to beach games for kids. Line up at a safe spot in the ocean where the waves start to come in and race to be the first to hit the beach. 9. Sand writing and drawing. Using play tools can be helpful in order to create pictures or writing your name.

2 (8 ounce) cans diced tomatoes 1 (10 ounce) package frozen okra 1 cup fresh or frozen corn 1 teaspoon salt 1/4 teaspoon red pepper flakes 1/4 teaspoon dried thyme 1 bay leaf 1/8 teaspoon Tobasco sauce

Bring 2 cups of water to a boil in a 3 quart pot. Dissolve bouillon cubes in the boiling water. In a medium skillet, heat the oil and cook the celery, green pepper, onion and garlic until tender. Add the tomatoes, okra, corn and cooked vegetables to the boiling water. Season with salt, red pepper flakes, thyme, bay leaf and tobasco. Reduce heat, cover and simmer for 30 minutes. Add catfish, cover and simmer for approximately 15 minutes until catfish is flaky and tender.

4-6 catfish fillets, about 1-2 1 teaspoon garlic powder pounds 1 teaspoon black pepper 1 cup milk or buttermilk 1 teaspoon paprika Salt 1/2 teaspoon cayenne 3/4 cup fine cornmeal 1/4 teaspoon celery seed 1/2 cup flour Oil for frying In a heavy frying pan pour enough oil to come 1/2 inch up the sides of the pan. turn the heat to medium-high. turn your oven to 200째 and lay a cookie sheet inside. Place a wire rack on top of the cookie sheet. While the oil is heating, soak the catfish in the milk or buttermilk. Mix the cornmeal, flour and spices together. Let the oil reach 350 degrees. once the oil is hot, sprinkle the catfish fillets with salt and dredge them into the breading. Shake off the excess and gently lay into the hot oil. Fry until golden brown, about 2-4 minutes, depending on how thick the fillet is. Use a metal spatula and gently turn the fish over and cook for another 2-4 minutes. once the fish is ready, move it to the oven while you cook the rest of the catfish. Keeping the fried catfish warm in the oven will help keep it crispy.

1/3 cup all-purpose flour 1/2 teaspoon salt 1/2 teaspoon cayenne pepper 1/2 teaspoon thyme 1 lb catfish, cut into 4 portions 2 tablespoons lemon juice 1 tablespoon chopped fresh parsley

Heat 1 tablespoon oil and butter in a small saucepan over medium heat. Add almonds and garlic and cook until both are just beginning to brown, 1 to 3 minutes. Set aside. Combine milk and egg in a shallow dish. In another shallow dish, combine flour, salt and cayenne. Dip fish in the milk mixture, then in the flour mixture; shake off any excess flour. Heat the remaining 1 1/2 teaspoons oil in a large nonstick skillet over medium heat. Add fish and cook until lightly browned and opaque in the center, 4 to 6 minutes per side. Return the almond-garlic sauce to the stove over medium heat. Add lemon juice and heat through, 1 to 2 minutes. Pour the sauce over the fish and sprinkle with parsley.
