elcome to the July issue of Seattle Natural Awakenings! This month, I’m excited to bring you “Food Choice Freedom” (page 24) by Elizabeth Larter, communications director for Yes on 522. An initiative that would require the labeling of foods containing genetically modified organisms, I-522 will be decided upon by the voters of Washington state this fall. Many nations have imposed restrictions and some have even banned GMOs outright. Plus, a growing body of research shows GMOs aren’t going to feed the world or require less pesticides, both claims proponents have made in the past. The jury is still out on long term effects of GMOs, but I’ve read enough study abstracts to know that I don’t want my family eating them. Labeling is a step toward awareness, letting consumers choose for themselves and encouraging companies to choose non-GMO ingredients in their products. People aren’t the only ones in the household who deserve to eat well and nourish their bodies. Our furry friends do too, and that’s why I am glad to offer “Pet Food Perils” (page 20), which details research that shows a link between GMO foods and the increasing prevalence of animal allergies and illness. Fortunately you have options: many brands are beginning to provide GMO-free pet food, and it’s easier than it sounds to make your own, with the guidance of your vet. Learn more in the article. In this issue we profile wellness activist and bestselling author Kris Carr’s “Health Rules” (page 14), with her top suggestions for “crazy sexy” ways to eat well. B

RAS Thermography is celebrating their one-year anniversary at their Gilman Village clinic in Issaquah. Owners and sisters Ursula Walker and Ingrid Adams opened the practice last June to offer Seattle area women an additional tool for breast screening. Thermography is a fast, radiation-free and compression-free breast and body screening using medical grade imaging cameras. An FDA-approved adjunct treatment, thermography can alert doctors to changes that indicate breast disease, often years before the changes would appear on a mammogram. “A breast cancer tumor has grown for five to seven years before a mammogram can detect it,” Adams explains. “This is not early detection.” “Early detection provides time for preventive measures far in advance of what is seen with traditional mammograms,” Walker says. “This screening can also be beneficial for younger women, who are traditionally advised to wait until 40 to start getting mammograms,” she continues, noting that cancer in women under 40 is usually more aggressive. The cost of a thermogram screening includes evaluation by medical doctors, who will flag any abnormalities and forward the information to the client’s primary health care provider if requested. The service requires two visits: the first provides a baseline for the client’s thermal signature. A session three months later checks to see if patterns remain unchanged, with annual thermograms suggested thereafter. Yoga for Hope Seattle Takes Place July 13

n Saturday, July 13th, four of Seattle’s celebrated yoga instructors will lead hundreds of yoga enthusiasts in an outdoor class for beginners and experts alike to promote the benefits of yoga practice and to raise crucial funds to continue the search for cures. This year marks the fifth anniversary of Yoga For Hope. Proceeds from the event fund City of Hope’s research, treatment and education programs. City of Hope, designated as one of the nation’s leading cancer treatment centers, is dedicated to the prevention and cure of life-threatening diseases –cancer, diabetes, HIV and AIDS. At City of Hope, patients are offered gentle, restorative yoga classes for relaxation and well-being, in addition to traditional treatments. This program has had a profound impact on symptom management and quality of life for many City of Hope patients. The Sheri & Les Biller Patient and Family Resource Center at City of Hope offers the most integrated array of support services in the country. Patient navigators help patients and families access a wide array of services, including counseling, support groups and other resources that address patients’ physical, emotional or spiritual needs. According to organizers, Yoga For Hope offers the chance to have an exceptional yoga experience, while supporting leading research and life-saving treatments for cancer, diabetes, HIV and AIDS and promoting the benefits of yoga. “Lift Your Spirits” Radio Show Launch

ocal business owner and Natural Awakenings sales manager Dena Marie is launching a new radio show in July. “Lift Your Spirits With Dena Marie” will air Fridays from 10 to 11 a.m. on KKNW 1150 AM in the Seattle area. “I have spent the last year trying to lift my spirits,” Dena Marie explains. “I found certain people, places and events that had a certain type of energy about them. 10th Annual NW SolarFest Offers Sun & Fun

he 10th annual NW SolarFest will take place Saturday, July 27. The longest running locally organized event of its kind, SolarFest is free and is held annually on the campus of Shoreline Community College. Over 100 booths and family friendly activities will be featured this year, including solar cooking demonstrations and presentations throughout the day. The first 300 kids to the KidZone will receive free mini solar cars. The NW Ecobuilding Guild will host green building sessions all day long and demonstrations by urban livestock experts will also be available. A favorite of children everywhere, the Casper Babypants band will perform on the main stage at 11 a.m. The beer garden opens at noon and will feature live entertainment: Baby Gramps, The Gallus Bros and Louis Ledford. Radio and TV gardening expert Cisco Morris of “Gardening with Cisco” will bring his expertise to the blue stage at 2 p.m. Tesla cars will be on site at SolarFest, in addition to a variety of alternative transportation ideas to explore. Backyard Barter will host a Barter Fair from 2 to 4 p.m. NW SolarFest is an outdoor annual regional event supported by the City of Shoreline, Shoreline Community College and many others and is organized by Shoreline Solar Project. Skalitude Retreat Taking Place in July

n July 18, Skalitude, a retreat center located in the Methow Valley of Washington, will host a retreat called Circle of Circles: A Shamanic Gathering for Community Building and Sacred Activism. Dr. T Speaking & Raising Awareness of Child Trafficking

D

r. Tel-Oren, also known to the Seattle natural health community as “Dr. T,” is visiting Seattle July 25-27, this time to raise awareness of the need for education in Nepal and prevention of child trafficking. The fundraising event, called “Embrace Nepal,” is supported by the Nepal Seattle Society and Dr. T’s Ecopolitan Eco-Health Community and will take place on July 27 in the Everest Kitchen restaurant in Shoreline. Admission of $20 includes a presentation by Dr. T, a vegan buffet lunch and silent auction. Proceeds will go toward a nonprofit called Everest Learning Academy (ELA), which has previously been funded solely by Dr. T’s earnings. ELA opened its doors in 2011 and consists of a network of schools, childcare centers and orphanages that helps the Nepali children by providing holistic education and protection for disadvantaged children in the poorest rural areas. ELA supports 3,000 of the poorest children in Nepal and provides an education in order to

reduce the chances the children will be sold in India for prostitution, lifetime slavery or organ donation. Dr. T’s goal is to raise awareness and funds to support 100,000 Nepali children. Annual education and care costs $100 per child. Volunteer opportunities in Nepal are available as well. In addition to the Embrace Nepal fundraiser, Dr. T will give a lecture: “The dark side of vaccinations: what medical and public health authorities fail to share with you” at 7 p.m., July 25 at University Heights Center, 5031 University Way NE, room 109, Seattle. healthbriefs DIY Herbal Remedy for Leg Cramps

T

he agonizing pain of a cramp in a calf or thigh muscle can be more than annoying. When it happens during the night, it can ruin sleep and leave residual daytime grogginess, irritability and loss of focus through the next day. We have all heard the advice, “Drink more water, eat bananas, take magnesium or potassium.” Sometimes this works, but traditional use of herbs can help address leg cramps, as well. It’s easy to create an at-home water decoction of a variety of roots, herbs and bark to apply to aching and cramping muscles to relax them, settle restless legs and quell over-active nerves. Anecdotal experience has shown that when bananas, supplements and water don’t work, the

following herbs may do the trick. Native Americans rubbed rosemary on their legs before long-distance running in order to enhance the suppleness of their muscles. Cramp bark (Viburnum opulus) was so named because of its reputation for relaxing all types of muscle spasms, says clinical herbalist Penelope Ody in The Complete Medicinal Herbal. Mexican wild yam and sage, abundantly found in the Southwest desert, also have been found to work synergistically to relax tight muscles and relieve cramping. Simmer this combination of roots, bark and herbs slowly for several hours over low heat because the vital constituents are fragile and it takes time to get the goodness out of roots and barks. Peppermint, lavender and St. John’s wort are useful addictions to any anti-leg cramp remedy to help relieve oversensitivity of the sympathetic nervous system, says British herbalist Andrew Chevallier in the Natural Health Encyclopedia of Natural Medicine. Add them to the basic herbal decoction for relief of the pain, discomfort and irritation associated with overworked muscles. he U.S. Department of Agriculture’s new food pyramid, MyPlate (ChooseMyPlate.gov), is based on its 2010 Dietary Guidelines for Americans, aimed at helping people make better food choices. Fruits and vegetables should comprise half our “plate”, and dark green veggies are the USDA’s top choice of nutrients. Kale leads the list of helpful leafy greens for many reasons. Like its cousins in the Brassica family—broccoli, Brussels sprouts, cabbage and collards—kale is a low-calorie, nutrient-dense powerhouse of antioxidants, including vitamins A and C. Per calorie, kale contains more iron than beef and more calcium than milk, and it is better absorbed by the body than most dairy products. A single serving (about one cup, chopped) provides 5 percent of the recommended daily intake of fiber, plus two grams of protein. I

n the United States, healthcareacquired infections (HAI) result in 100,000 deaths annually and add an estimated $45 billion to healthcare costs. Common HAI microbes that often contaminate items within hospital rooms include methicillin-resistant Staphylococcus aureus (MRSA) and vancomycinresistant enterococcus (VRE). Few strategies have been clinically proven to reduce the spread of these infections, but copper’s antimicrobial properties are promising. According to a recent study published in the journal Infection Control and Hospital Epidemiology, placement of bed rails, tables, IV poles and nurse’s call buttons in intensive care unit hospital rooms reduced the number of HAIs in patients by more than half.

olony collapse disorder, a mysterious ailment that has been killing large numbers of honeybees for several years, is expanding, wiping out 40 to 50 percent of the hives needed to pollinate many of America’s fruits and vegetables. Some beekeepers and researchers cite growing evidence that a powerful class of pesticides known as neonicotinoids, which hinder the bees’ brain learning function and leave them unable to make the connection between floral scents and nectar, could be a key factor. Although manufacturers claim the pesticides pose no threat to bees, a recent British honeybee field study found enough evidence to convince 15 of 27 EU member governments and the Executive European Commission to support a twoyear ban on three of the world’s most widely used agricultural pesticides in this category, starting this December. Our recipes are often guided by what’s available in the fridge,” she advises. The secret is a three-to-one ratio of three veggies for every piece of fruit. Kale reigns in their home. The dark leafy superfood is especially suited for smoothies, salads and sautés. They like kale’s generous helping of vitamin K for maintaining strong bones. Carr’s Crazy Sexy Kale Salad is dressed with vinaigrette that includes flax oil, which she notes is high in omega-3s to promote healthy brain function. It’s also a well-known antiinflammatory food. “Make sure to buy cold-pressed, organic flax oil in a dark bottle and store it in the fridge,” she advises, “because light and heat may turn the oil rancid. Massage and mix using both hands to “wilt” the kale and cream the avocado (takes just a minute or two). Then serve. For a fun touch, cut a thin lengthwise slice of cucumber and create a circle to outline each serving of salad, stitching the ends of the cucumber slice together with a toothpick. early everyone has some reflux, the upward backflow of the stomach’s contents into the esophagus connecting the stomach with the throat, or even up into the throat itself. When it occurs more than twice a week, reflux can progress from a minor irritation causing heartburn to gastroesophageal reflux disease, or GERD. When the throat is most affected, it’s called laryngopharyngeal reflux, or LPR. Untreated, LPR can damage the throat, airway, and lungs. If left untreated, GERD can damage the digestive system and cause precancerous Barrett’s esophagus or even esophageal cancer. “In the United States, the prevalence of esophageal cancer has increased 850 percent since 1975, according to National Cancer Institute statistics,” says Dr. Jamie Koufman who has been studying acid reflux for three decades as part of her pioneering work as a laryngologist, specializing in treating voice disorders and diseases of the larynx. She is founding director of the Voice Institute of New York and the primary author of Dropping Acid: The Reflux Diet Cookbook & Cure. Koufman prescribes combining science, medicine and culinary arts to treat the ailment, which she mainly blames on the acidification of the American diet, along with increases in saturated fats, high-fructose corn syrup and agricultural pesticides. Consider that almost all bottled or canned foods have an acidity level of 4 or lower on the pH scale—a key measurement in medicine, biology and nutrition, and significant in Koufman’s clinical research and conclusions from examining upwards of 250,000 patients. “Soft drinks are the major risk factor for reflux,” she notes. A single statistic from the American

Beverage Association highlights the problem: In 2010, the average 12-to29-year-old American consumed 160 gallons of acidified soft drinks, nearly a half-gallon a day. “Trends in the prevalence of reflux parallel soft drink consumption over time, especially in young people,” says Koufman. She clarifies that the term “acid reflux” is misleading because the problem centers on the digestive enzyme pepsin, which is manufactured in the stomach to break down proteins into more easily digestible particles. It is activated by the acid in high-acid foods. “If there is no protein around that needs digesting, pepsin can gnaw on the lining of your throat and esophagus,” explains Koufman, who is a professor of clinical otolaryngology at New York Medical College. She has seen many reflux cases misdiagnosed as something else. “It’s common for doctors to mistake reflux symptoms of hoarseness, postnasal drip, chronic throat clearing, trouble in swallowing or sore

throat and cough for asthma, sinusitis or allergies.” She adds that heartburn and indigestion are sometimes treated with over-the-counter antacids, which are ineffective for these. Koufman helps her patients, including professional singers, to overcome acid reflux with a two-week detoxification program consisting of a low-acid, low-fat, pH-balanced diet. “For two weeks, avoid acidic foods (nothing below pH 4),” she advises. “Eat fish, poultry, tofu, melons, bananas, oatmeal, whole-grain breads and cereals, mushrooms and green vegetables. Refrain from fried foods, chocolate and soft drinks. Basically, consume nothing out of a bottle or a can, except for water.” She remarks that reflux is definitely curable by following a proper diet, although it can still take up to a year for a person to become totally symptom-free. Noted Integrative Physician Andrew Weil agrees with Koufman’s recommendations. He suggests developing an exercise and relaxation strategy, because stress and anxiety worsen reflux symptoms, as well as increasing fiber intake by eating more

whole grains, vegetables and fruits, and staying hydrated by drinking plenty of purified water. Keep a log to track foods and beverages that worsen symptoms, and avoid alcohol and stimulants like caffeinated beverages and tobacco that irritate the gastrointestinal tract. Weil also suggests ingesting a slippery elm supplement according to label directions, which can help heal irritated digestive tract tissues, and chewing a tablet of deglycyrrhizinated licorice (DGL) or taking a half-teaspoon of a DGL supplement powder before meals and at bedtime. Reduce doses after symptoms are under control. “For most people, there is probably a middle road—having an occasional glass of orange juice or soda doesn’t cause reflux disease—but if that’s all you drink day in and day out, it’s likely to create a problem. The Arts in Nature Festival A Magical Experience in the Woods by Monica Thomas

estled in the woods of Seattle’s only campground, the Arts in Nature Festival is an experience of music, dance, art, and sound. From indie rock to jazz, from contemporary dance to sculpture, there are new wonders to be discovered around every corner. The Arts in Nature Festival will return to Camp Long on August 10-11. Acclaimed eco-rockers Cloud Cult will headline the Arts in Nature Festival with two intimate, acoustic performances in front of the fireplace in Camp Long’s rustic lodge. Cloud Cult, who traveled their first American tour in a van covered in solar panels, is known for their earthy, environmental vibe. In addition to Cloud Cult, there will be a wide array of modern and traditional music at the Arts in Nature Festival ranging from experimental and improvised to world, classical, jazz, bluegrass and folk. Performances will be ambient and acoustic in four different venues throughout the park: in the Lodge, in a forested grove by the Pond, on the climbing Glacier, and in the Meadow. Camp Long’s rustic cabins will house the Museum of Sound, where artists will create multidisciplinary

installations blending sound, auditory arts, music and visual arts. The cabins meander through the forested outer perimeter of the park and festival goers will have the opportunity to enter and explore each cabin. Most of the cabins will have a hands-on component allowing attendees to interact with the artists’ work.

“Arts in Nature is my favorite music festival in Seattle,” says Steven Arnston, artist and long-time festival attendee. “We’re treated to a beautiful park, leisure wandering, wonderful lunch on a sun-speckled patio, and the most diverse array of performances, from Country Western music to man-eating metal volcanoes. I hope

the festival continues for many, many years, and that I have the opportunity to attend every time.” Dance performances and literary readings will be presented in various locations throughout the park. Festival goers will also be able to participate in art activities, a ropes challenge course, knitting and fiber arts, hikes through the forest, and naturalist activities. One unique thing that Arts in Nature attendees will notice is that, aside from delicious local food, there will be no large booths of vendors trying to sell them anything. The Festival experience is one centered on interaction rather than transaction. Admission to the Arts in Nature Festival is free with suggested donation; $10 for individuals and $25 for families. A Fresh Approach To Fibromyalgia Neurology May Hold The Key To Individual Treatment Strategies by Ann Dorn

A

ccording to the American College of Rheumetology, a staggering one in 50 Americans live with fibromyalgia, an illness characterized by fatigue, brain fog, tender points on the body, muscle pain and difficulty sleeping. Recent research from the University of Michigan points to the possibility of pain signal processing problems in the brain, leading sufferers to experience the unpleasant symptoms of the disease. “A growing body of medical literature points to a syndrome of dysfunction in which the brain loses the ability to dampen pain,” says Michael Taggart, a chiropractic doctor who specializes in neurology at the Kirkland Health Institute. “To help someone who suffers

from fibromyalgia you have to understand the physiologic mechanisms that produce the symptoms.” Dr. Taggart notes that the onset of fibromyalgia symptoms often have been shown to follow traumatic injury, emotional stress, anesthesia and even viral infections, which may cause changes in serotonin levels and the hormonal system known as the hypothalamus-pituitary-adrenal gland axis, creating conditions unique to each individual. “There can be other metabolic factors that will also complicate the syndrome such as internal inflammation, thyroid problems and food sensitivities that will compromise the ability of the brain to function properly,” Dr.

Taggart says. “With this understanding, a comprehensive laboratory evaluation and a comprehensive neurological evaluation must be done to know what therapies will be effective.” Perhaps because various conditions contribute to fibromyalgia, depending on the individual, a onesize-fits-all approach to management does not work. In February of this year, researchers at the University of Munich published a study showing that nearly as many fibromyalgia patients taking prescription drugs got worse as the number of patients who got better as a result of treatment. Not only is medication not effective for some fibromyalgia sufferers, but Dr. Taggart also finds that symptoms may

legislatures in Connecticut, and Maine. Washington, however, is the only state sending a labeling of genetically engineered foods bill to a vote of the people this fall. Supporters of Yes on 522, the campaign to label genetically engineered food, believe that consumers have the right to know what is in the food they and their families are eating. “This initiative is about providing consumers with important information so they can control the grocery shopping decisions that affect their family’s health,” says Delana Jones, the campaign manager for Yes on 522. Food manufacturers already label ingredients, nutrition facts, the country of origin, whether fish was farm raised or wild caught, whether vanilla extract is pure or artificial, and now even whether meat was tenderized mechanically. Initiative 522 is all about giving customers the information they are requesting and need to make informed choices about the foods they eat. Many of the campaign’s partners

are also advocating for full label transparency here in the state and across the nation. Walter Robb, co-CEO of Whole Foods Market, has said, “The prevalence of GMOs paired with nonexistent mandatory labeling makes it very difficult for retailers to source non-GMO options and for consumers to choose non-GMO products.” Whole Foods Market made history this year when they announced that they would be the first national grocery chain to label genetically engineered foods. Washington has a strong history of leading on progressive issues, including being the first state to unanimously pass the nation’s first law requiring labels on salmon to tell consumers where the fish came from, and whether it was farm-raised or caught in the wild. The state of Alaska already labels genetically engineered salmon and Washington should do the same. In recent years, Washington State has used ballot measures as a force for good public policy—from Death With Dignity, to Marijuana Decriminalization, to Marriage Equality. Last year, California’s Proposition 37 was defeated at the polls after the opposition outspent the “Yes” campaign six-to-one. In the wake of California’s Proposition 37 defeat, people have come together early here in Washington, to get organized, train volunteers, and to raise the funds necessary to compete with the opposition on the air and in other paid communications. As part of Yes on 522’s early outreach efforts and organization, we have garnered the support of several high-profile organizations, such as Ben & Jerry’s, the Washington State Nurses Association, PCC Natural Markets, Washington Conservation Voters, Whole Foods, and Washington Toxics Coalition as well as many independent farmers and ranchers. These organizations and companies understand the


importance of providing consumers with the information they need to make informed decisions when buying the food they are eating. Come November, the voters of Washington State will have the ability to declare their right to know what they eat and feed their families. If Initiative 522 passes, Washingtonians will be the first in the country to enact and implement labeling of genetically engineered food. Success in Washington will not only help build national momentum and engage more Americans in the effort, but also will help lay the groundwork for future campaigns across the nation. Savor Summer Revel in Blissful Indulgences by April Thompson

rom freshly picked cherries to moonlit hikes, summer offers endless free gifts. Its lingering daylight reminds us to step outside, take a deep breath and savor life’s simple joys. “Summer is a time to enjoy the small things in life, which are often the sweetest,” counsels Janet Luhrs, author of The Simple Living Guide and founder of the online Simplicity School (SimplicityJourney.com). “Kids do this instinctively, like seeing who can throw a rock furtherest into the water. I’m happy just having a simple backyard dinner with friends, reading a book in a city park or paddling a canoe.” Here are some summer classics to expand our own “to savor” list. Feast on Earth’s bounty. Make the most of summer’s cornucopia of candy-sweet berries, rainbow-colored

heirloom tomatoes and other natural treats abounding at local farmers’ markets. Read by sunlight. The pleasure of reading heightens with natural light and fresh air. Pick an easy read to take to the beach or a hammock with sunglasses and a glass of herbal sun tea. Celebrate community. ‘Tis the season for free local festivals, picnic concerts, open-air movies and state fairs. Invite a friend or make a Dutch treat of it, even organize an informal potlatch block party. Take a day trip. Consider the healthy dose of activities that exist close to home. Delightful discoveries await the curious when traveling by local waterway, walking trail or bicycle path. Map a flexible route, allowing ample time for unexpected stops. Try something new. Summer is a chance to be adventurous. Step into a

bright, pastel shirt or tropical sundress, and then revel in the compliments. Move from an indoor exercise routine to a free yoga class in a shady park and test ride a standup paddleboard. Look up. Summer skies offer more drama than daytime TV. Perch on the porch at sunrise, sunset or before a thunderstorm rolls in. On a clear calm night, lie back on a blanket and trace constellations while watching for shooting stars and meteor showers. Capture memories. Gather a pocketful of seashells, press wildflowers from special spots, make breadand-butter pickles from the garden and print favorite snapshots to spark happy summer memories any time of the year. Do nothing. In the midst of so many marvelous options, we can also give ourselves permission to cancel our own plans on a whim and just do nothing. Simple daydreaming can lead to good ideas and inner rhapsodies.
