How Did It Start?

In 2008, Lisa and Tony Kofakis were looking for land to buy on which to build a homestead. This was at the time of the housing market falling apart. They saw some foreclosed homes in the area and decided to look at one. When they saw the property near Clayton, Wisconsin, it was love at first sight. The farmhouse needed lots of work, but the valley was beautiful, with a lovely creek running through it. Since then, they’ve been fixing up the house and cleaning up and caring for the land, committing themselves to being good stewards of the land. They grow much of their own food, create herbal products, are tattoo artists, and are also establishing nature trails through the landscape. They are at a point now where they’d like to share the place with others beyond their friends and TM of the property from family. west to east and meets up with Turtle Creek and then flows into the Hay River. There are multiple springs along their section, thus the name, Silver Creek Springs. When asked what motivated them to start a farm like this, they said, “We’ve been eating organic meats and veggies for a number of years and also using natural body care, health care, and cleaning products. We slowly moved from purchasing these products to making them ourselves and eventually raising our own meat and vegetables. We believe in being a diverse farm that can sustain itself while providing all the necessities to live. Healthy food, healthy medicine, healthy life. We encourage others to do the same, and we want to help provide natural, healthy alternatives for our community. And there sure is no comparison between a fresh picked tomato out of the garden to the one you find in January on


the grocery shelf. The same goes for the poultry we raise. The quality and taste are superior, not only because of the natural diet our chickens eat, but because of the way they’re raised: outdoor, on pasture, with sunshine and fresh air.”

Holistic Skin Care

All of the skin care and holistic body products at Silver Creek Springs are handcrafted. The Kofakises grow and harvest many herbs on their farm, which are used as ingredients. What they don’t grow or wild harvest on the property, they acquire from conscientious companies they respect. There are no added preservatives, dyes, or chemicals in any of their products. Their skin care products, available on their website, include: • Jewelweed oil (for itchy rashes, bug bites, allergies, and poison ivy) • Body balms (for chapped and dry skin) • Healing salves (great for your first-aid kit) • Cold and flu chest rub (helps clear your sinuses naturally) • Woodsman’s bug repellent (works well and smells great!) • Face and body creams (moisturizing for face and body) • Tattoo aftercare cream and balm (itch-relieving, moisturizing) • St. John’s Wort liniment (for sore muscles) • Beard Balms • Old fashioned black drawing salve (for drawing out hard to get splinters)

Pastured Poultry

The couple raises Cornish Cross chickens on pasture in mobile pens. This gives the chickens a natural diet, keeps them clean, and helps them remain healthy. Their poultry receive no hormones or antibiotics. Every day their mobile pen is moved to new pasture, and they are given fresh well water and natural grains to supplement their diet. The plan in 2016 is to add to the laying flock and to be able to offer eggs for sale. There are also turkeys on the farm—Broad Breasted Bronze turkeys, which are free range. Lisa and Tony plan to add a few heritage breed turkeys to the flock, including a breeding pair. Lisa explains how you can get their poultry and eggs. “We’re not a CSA. We sell directly from the farm with pre-orders for the poultry and on-site sales. Our eggs we’ll be selling direct from the farm, no pre-order.”

Nature Retreat for Artists, Naturalists, and Cyclists

The couple loves what is known as “silent sports,” which means any human-powered aerobic exercise like cycling, hiking, Nordic skiing, or snowshoeing. Both Lisa and Tony are mountain bike enthusiasts. They are volunteering with the county to help maintain the trails in one of their non-motorized county forests, which is only half a mile from Silver Creek Springs. Lisa adds, “It’s a great place to ride, hike, and snowshoe.” Volunteers are welcome to come out for a day or a week and help

A Farmer’s Share of the Retail Dollar

At a typical grocery store, $0.91 of every dollar you spend goes to suppliers, processors, middlemen, and marketers. Yep, only 9/100 of the dollar goes to the producers of the food! In the United States, a wheat

farmer might get $0.37 for a 5 lb. bag of flour that retails at $1.79. For a gallon of milk that retails at $3.59, the farmer gets $1.24 at best. For a loaf of bread, a farmer only gets about $0.07, roughly the cost of the

We’d love to be able to host riders as they prepare for races, both on our private trails and with easy access to all the other fantastic public trails in the area.” Lisa and Tony also have plans to bring various artists out to their place. “Once the reconstruction of our barn is complete, we’ll have a heated space for workshops and seminars. We’ll host some of these and the space will also be available for rent to other artists. n rolling farmland near Mondovi, Wisconsin, Together Farms is owned and operated by Andy and Stephanie Schneider. They bought the farm in 2009, but weather issues made it tough going the first several years. Things are going well now, says Stephanie, “Now we don’t have to worry about what the weather will be like next year, because we have resiliency built into our system...a growing, grass-based perennial farm.” Their outlook for the future is bright. “The opportunities right now for grass-fed beef and lamb are really unlimited,” explains Stephanie, because currently the United States imports most of its grass-fed beef and almost all of its lamb. “We also have to consider what our farm can sustainably produce. These steep hills can’t support annual crops like corn, but perennials like grass and clover are a perfect fit.” As their website, www. togetherfarms.com, says, “We believe that we are all on this Earth together. As such, we need to care for and work with the land to create a symbiotic relationship in which humans, animals, and plants work together

to sustain each other.” They practice Intensive Rotational Grazing (animals are moved every one to three days) and try to be as transparent as possible. “Health is our goal, and it’s the goal of most of our customers. That means 100 percent grass, 100 percent of the time. But we also know that labels and producers try to confuse them, not only by what is said, but also by what isn’t said. We don’t play any gimmicks with grass feeding terms that are meant to confuse you—our animals are born and raised here and are fed no grain ever, just grass/clover, minerals, apple cider vinegar, and some essential oils,” the Schneiders note. The animals are treated and processed humanely by an Animal Welfare Approved processing facility. “The more you learn about how animals are treated throughout the entire process, the more you will want to find a farm like ours or go vegan, we hope you pick the first option.” The Schneiders raise woodland pork in addition to the grass-fed beef and lamb. The large black boars and the Tamworth sows roam the woods and grasses. They are never crated. Because

they are raised on pasture, their meat contains five times the vitamin D found in conventionally raised pork. The beef are mostly British White Park, a breed that finishes remarkably well on grass and Tunis lambs, a Slow Food Ark of Taste breed. The farm is Certified Naturally Grown and American Grassfed Approved. When eating beef, pork, and lamb from Together Farms, what you aren’t eating is also important: there aren’t any weird chemicals like nitrates/ ites, monosodium glutamate, pesticides, herbicides, or unnatural ingredients in the meat. To buy their products, you have a few choices. One way is to have it delivered via their food route. They have drop sites in the Twin Cities, River Falls, Menomonie on the 2nd and 4th Saturday, as well as weekly options for Eau Claire. Product is available at several retail locations and at the onfarm store (but call ahead). Wisconsin Dairy with a Dutch Flair Rolf and Marieke Penterman are firstgeneration Wisconsin dairy farmers who moved from The Netherlands to Wisconsin in 2002. Having both grown up on small, 60-head dairy farms in Holland, Rolf and Marieke wanted to pursue their passion for dairy farming in an area that would afford them the capabilities of expansion. Wisconsin, with its vast diary base and farmfriendly people, seemed ideal. They began dairy farming in Thorp, and so began the adventure. Missing the Gouda cheese they grew up with in The Netherlands, Marieke began making cheese in November of 2006 and won Best of Class with a flavored Gouda, Marieke Gouda Foenegreek, at the 2007 U.S. Championship Cheese Contest. Since her first win, Marieke and her team have earned over 115 international and national awards, some of which include: U.S. Grand Champion at the U.S. Cheese Championship in 2013; a sweep of the Aged Gouda division at the World Competition in 2014; a sweep of the International Style with Flavor Added division at the 2015 American Cheese Society Competition; two Gold Awards for Best USA Cheese in two divisions at the 2015 Nantwich International Cheese Awards, UK; and a sweep of the Flavored Gouda division at the 2016 World Competition.

Marieke® Gouda is their signature cheese made exclusively with raw cows’ milk from Penterman Farm in accordance to an authentic Old World Gouda recipe. The equipment, cultures, and majority of the herbs and spices are imported from Holland. The rBGH-free cows’ milk couldn’t be fresher, being piped directly from the first milking of the day into the processing vat. Within five hours, the milk has been turned into 20-pound wheels and then sent to the brine tank. Once out of the brine tank, a breathable coating is applied, and all wheels are aged on wooden planks in a special humidity and temperature controlled aging room where wheels are meticulously cared for as long as they are in their facility—anywhere from two months to two years. Seibel’s Organic Dairy is a fifth-generation family owned and operated dairy farm near Bloomer, Wisconsin. Chuck and Diane Seibel bought the farm from his dad in 1983. Chuck transitioned the farm and became certified organic in 2001 in search of a healthier life style. Their son Adam and his wife Chrissy joined the operation about ten years ago. Around that time they all formed their pasture-raised organic meat business.

Why Organic?

Organic farming does not use pesticides or synthetic fertilizers, which are designed to kill living organisms, can be harmful to wildlife, and can contaminate food, air, and water, as well as accumulate in our cells. Organic farmers also do not use synthetic growth or breeding hormones, which are often used to alter reproductive cycles and speed up growth. This means healthier, less stressed animals and less exposure to endocrine-disrupting hormones for those consuming organic meats. The Seibels do not use antibiotics in raising their beef, nor do they use any genetically modified crops. They seek to raise their animals in harmony with nature. They feel strongly that their meat tastes better and has more flavor than other meats due to the humane way they are raised.

How Are the Animals Raised?

All of their animals are raised in well-ventilated facilities, all built since 2005. From birth until two months of age, the calves 26 | 2016 Western Wisconsin Farm Fresh Atlas TM

receive milk, water, and calf starter, which is a mix of oats, corn, and all the right minerals to help them get off to a great start. Calves are housed in a state-of-the-art calf facility with individual pens. From two to six months the calves eat oats and dry hay and are grouped in adjustable pens to comfortably house anywhere from two to fifteen calves. Once the calves reach six months of age, they receive a majority of their feed from the farm’s rich, lush pastures. If the weather is not ideal for them to be outside, they can come into the barn to cool off in the summer or warm up in the winter.

What Products Do They Sell?

Seibel’s Organic Meats, LLC, offers frozen ground beef, tenderloin, ribeye, New York strip, sirloin steak, round steaks, sirloin tip roast, rump roast, prime rib roast, and beef roast. Beef is also available by the eighth, quarter, or half. They just recently began raising chickens. Their chickens are fed all certified organic feed and raised with access to pasture. These chickens are frozen whole and available year-round, however they are not certified organic due to processing plant licensing. All items are available for pick up at the farm, but they ask that you call before coming to make sure someone will be there. All pricing is listed on their website. An Ongoing Adventure Starting a chicken farm was an exciting thought. I could have never imagined the diverse road of ups and downs it would lead us on. I have a passion for poultry, and that is where it all stemmed from. Then I found myself starting a family back a few years ago and wondering if I could build a business here at home that would allow me to be a stay-at-home mom. In 2009 with our second child on the way, the egg/poultry farm became a reality. Now, in 2016, seven years, four children, and a few thousand chickens later, I sometimes wonder what I have gotten into, all the while enjoying the daily challenges of running my own business. Initially I wanted to produce a quality local product that was moderately priced and offer options for poultry that weren’t currently available in the grocery store. For example, stew hens and whole free-range chicken, poultry feet and organ meats such as liver, gizzard, heart. To introduce the lost art of canned chicken, pickled eggs, and gizzards and be conservative and sustainable with the resources we have. And to have my kids work along beside me, all the while impressing upon them a healthy work ethic, responsibility and appreciation for the many things God has allowed us, and of course the farm life that is strongly part of our roots. Currently we have 1,500 laying hens and raised 700 broilers or meat birds in 2015. We collect, wash, and pack over 100 dozen eggs per day. In March and September we start new pullets for laying. They arrive as day-old chicks. When they are 16–20 weeks old, or 4–5 months old, they start laying little “pullet” eggs, which are regular eggs only much smaller. The eggs continue to get bigger over the course of the next month until they become a largesize egg that is suitable for distribution, although we have many customers who enjoy the pullet eggs too. We offer cage-free, freerange eggs by the dozen or the case, poultry meat as tender young chicken or flavorful stew hens, chicken feet, liver, and gizzards too. In addition, in the spring and fall I have live laying hens.

We do things as close to natural as we can. Our hens have a place to call home in a repurposed dairy barn where they have access to the outdoors. Here they find dirt, bugs, grass, and sunshine, which add richness and nutritional value to the egg and poultry meat. They are also supplemented with a balanced diet of grain and proteins to maintain their health and egg-laying. In addition, they need free choice oyster shell. This is a rich source of calcium the hen uses to maintain and improve the shell quality of each egg. In addition to the shell, they also need grit or tiny pieces of rock they pick up and swallow where the grit sits down in their gizzards to grind up their food. Some challenges include cleaning pens and labor for keeping the operation running smoothly. We bed the chickens with wood shavings to keep their house dry and control odor. We also feed diatomaceous earth in the feed ration and use it in dusting pans with lime for the chickens to dust themselves to get rid of bugs and pests that plague larger flocks. Using diatomaceous earth eliminates the need for chemical pesticides. In addition, we treat any health issues with vinegar, garlic, and vitamin packs metered through the water supply. This has been very effective in keeping the birds healthy and productive, eliminating the need for any antibiotic use. Currently we have ten retail locations in the area from Bloomer to Eau Claire and Chippewa Falls. See the website for locations. Also we have eggs every day here at the farm on a self-serve basis. We have a refrigerator set up in the coop and a coffee can atop for payment. Just pull in the yard and follow the Egg banner to the coop. Call ahead for packaged poultry. We work hard to provide a quality natural local product. Delivery is available for large orders (15 dozen+) every Monday in the cities of Chippewa Falls and Eau Claire; every Wednesday in Menomonie.
