So You Think You Can(‘t) Get Out & Dance? By Becky Streeter

Y

our audience has been watching you all day. They watched as you walked down the aisle, said “I do,” and kissed on their command. And last but not least, all eyes will again be on you under the disco ball: the first dance. You’ve done great so far, and now you’re ready to show off your moves. Wait, you think to yourself, what moves? Tom Neterval, owner and instructor at Get Out & Dance based in Schofield, wants to make sure the last impression you leave on your wedding guests is just as amazing as the first. “At a lot of weddings,” Neterval says, “the bride and groom do the ‘prom hang’ and they just rock back and forth for an entire song. But if you start with a really nice walk-on, a curtsey and a bow, then spin the bride out and do some body drops, and it’s all really neatly put together, it’s very impressive.” Neterval, who has taught ballroom dance since 1989, says Get Out & Dance has been instructing brides and grooms for so many years, they practically have it down to a science. Early lessons begin with the building blocks of dance, such as walking steps, chassés and rock steps. “Before we go into intricate choreography,” Neterval states, “it’s good for the bride and groom to know how to move around the dance floor together. They should be able to understand how to go into promenade, how to turn, and how to change directions.” These are steps that can be applied to any type of dance and incorporated in any song. Once the couple gets the basics down, the instructors can start on standard dances like the rumba, foxtrot, waltz and hustle.

The first dance, however, is the one guests are going to remember. Neterval suggests the couple only dances for two minutes. Why? You want guests begging for more when the couple walks off the floor, as opposed to a four minute dance that loses attention spans. The instructors at Get Out & Dance tailor each couple’s education to their personal dancing goals. The first dance can be simple or as elaborate as creating a medley from three different songs. Once the couple feels comfortable with the choreography, they have the opportunity to perform the dance many times in front of other students and instructors in order to get used to the idea of dancing in front of a crowd. Neterval recommends beginning lessons at least three months prior to the big day so students don’t feel like they’re cramming another pre-wedding task in at the very last minute. Get Out & Dance offers a promotion with a free first lesson, then seven successive lessons for $350. Eight total lessons help students get comfortable with a routine and feel confident in their dancing abilities. The Journey is Just as Important as the Destination By Becky Streeter

intage, antique and rustic chic are currently ‘in’ for weddings. You love the DIY look, but you don’t have the time, energy, or money to make it happen. Also, what would you do with all those wedding and reception decorations after the big event? Don’t sweat it—you can rent it all from Journey Eleven. With a degree in Interior Architecture, Sandi Dahlke, owner of Journey Eleven, worked formerly in the furniture and staging industry. It wasn’t until she attended a barn wedding a few years ago that she realized her true calling. Dahlke says, “When I saw those amazing crystal chandeliers against the barn wood backdrop, I feel in love, and ideas started brewing.” Journey Eleven, based in Wausau, is a rental warehouse supplying all your wedding décor needs. From ornate candleholders and bronze chandeliers to distressed barn doors and an antique teacart, everything is one of a kind. Dahlke scours estate sales, resale shops, and architectural salvage yards looking for unique pieces that have already had a wonderful ‘journey’ and will continue to gain value as they age, becoming part of others’ journeys through weddings and events. She also relies on her contacts in the thrift and antique business who contact her when something amazing comes across their desk. Some decorations are ready to rent, and some (larger rentals) may need a little extra assembly. Regardless, Journey Eleven is prepared for the DIY aspect. “We do some of the construction, depending on our capabilities,” Dahlke states. “My Photo by Sandra Stolen Photography

holiday and birthday gifts have recently consisted of air compressors and table saws!” They also contract some pieces out to local artists in hopes to showcase others’ talents and specialties. With so many well-traveled and seasoned objects at their disposal, all you have to do is shop for that rustic piece everyone will be talking about long after your big day. And to top the cake, everything can be done online! “Our inventory is easily accessible 24/7 for brides, wedding planners, professional decorators and florists to do their creative planning anywhere, at anytime, with no restrictions,” Dahlke says. “Plan in your jammies if you want to, I say!” Simply browse the online inventory at your convenience, reserve, use and return. There is no need for storage ahead of time or for resale afterwards, and Dahlke ensures everything is clean, prepped and packaged as needed for transport. However, if a bride wants to see the pieces in person, Dahlke would love to set up a warehouse visit and actually pull pieces together for a better visual. Dahlke recommends renting a decoration as soon as you fall in love with it, since all the décor is one of a kind; once it’s gone, it’s gone. Journey Eleven can book out as far as six months to a year, or as little as four weeks in advance for those last minute planners. Pickup is the Thursday or Friday prior to your wedding, and return is the following Monday. Rental fees are listed on its website. Each piece at Journey Eleven already has a story, but they still have more to offer. “I have always said the right groupings of décor with the right layering of pieces can make almost anything beautiful,” Dahlke states. “I think it is rentals like these that really set certain weddings apart from others and this is what most brides are looking for. They want to be unique and memorable. Cj’s Catering in Wausau, Wisconsin, has more than forty years of experience in both delivering a great meal and keeping it within your budget. A family business started in 1970, daughter Corrie Merklein took the reins in 2012.

Merklein learned from experience it’s best to provide the bride and groom with options. Everyone needs to stay within budget goals, and each couple has their own preferences for how much to spend, favorite foods, and wedding trends they might want to incorporate. “As in anything, trends change,” says Merklein. “We want to offer choices to fit with the trends of the day.”

Another consideration is whether to have the meal served banquet style or have plated meals brought to your table. Cj’s offers options on this, too. “We offer buffet-style service for most of our catered events. This can be done with disposables or china,” Merklein notes. “We can serve plated-meals or family-style meals if the venue has the staging space needed, and it can be easily accessible for china. We do ask that china be used with full place settings for all seated meals.”

This kind of flexibility, however, means good communication between the couple and the caterer is essential. “Consultation is a must!” Merklein explain. “With options come details, which help us achieve the bride’s vision for her special day. We can then work within the budget and help prioritize what is most important.”

Whether your reception will be indoors or outdoors is another factor to discuss with your caterer. Merklein says, “Cj’s Catering has served many wedding receptions in tents, barns, and other outdoor venues. The venue and its amenities are kept in consideration when we make recommendations to our clients.”

CJ’s can work with many different budgets, adjusting different aspects of the reception meal in order to achieve the desired food or place setting. Merklein states, “When a budget-minded bride and groom are looking at options, I often mention what it costs to go to a restaurant—meal, beverage, tip, etc. In catering we bring the food to you, so travel cost also comes into play. The other option is to adjust the level of service, for example disposables verses china. All those variables can affect pricing in addition to the menu.” Merklein suggests that you could even serve pricier food with paper plates, if
