Hiding Under the Snow By Ruth Forsgren
D
uring the winters in northern Wisconsin, most people consider much of the natural world to be in a dormant or resting state. But hiding under the snow, in our acidic soil forests, a low-growing shrub is still green and photosynthesizing.
Originally, natural wintergreen oil was used in flavoring and medicinal creams. The leaves produce methyl salicylate, which our bodies metabolize into salicylic acid, an NSAID pain reliever. Nowadays, the process involved in creating wintergreen oils is so extensive that the actual plant is not typically used. It takes approximately one ton of leaves to produce one pound of pure oil. So today, the scent or flavor of wintergreen for oil is usually synthetically produced.
Wintergreen is a woodland perennial that grows close to the ground and, in winter, is covered by a blanket of insulating snow. The snow allows wintergreen to avoid the normal stress of being exposed to sub-zero temperatures and the drying winter winds. Each plant has three to five thick, waxy, oval shaped leaves that help reduce water loss. Wintergreen spreads by an underground stem (rhizome) that sends up new shoots. The plant blooms in late July to August and then produces tiny, red fruits.
That means that there is still an abundance of it in nature! While you are out enjoying the snow-covered winter wonderland this season, a plant that is awake and surviving could be right under your feet.

W
ith winter nearly upon us, we tend to find ourselves curled up next to the fireplace with a blanket and warm cup of cider until the warmer weather returns. We fall out of the habit of taking our dog out for a long stroll through the park and keep them inside with us to avoid that bitter wind and slushy sidewalks. However, a dog’s exercise needs remain consistent all year and behavior problems often arise when these needs are not met. Similar to us, dogs can also develop “cabin fever” if they are cooped up inside for days on end. It’s important to keep them active and mentally stimulated every day, especially during the colder weather. There are multiple ways to meet your dog’s exercise needs when the weather turns sour. Experiment with different games such as tug-of-war or fetch by alternating the toys and making it challenging by tossing the toy upstairs. Consider arranging a play date with your dog’s favorite dog friends, whether at the dog park or even your backyard. Practice some agility with your dog. Agility is a year-round sport and both humans and dogs can run, jump, and weave through tunnels. If you don’t have the time or budget to attend a class, make one in your living room with dining room chairs and boxes. You can also keep your dog’s mind busy by making games out of eating breakfast or dinner. Dogs are natural scavengers, designed to spend hours searching for food. Rather than filling up their food dish at meals, put your dog’s kibble into a food puzzle or food ball. It’ll keep them busy for a while and satisfy their drive for hunting food. Another way to keep them occupied is to stuff a hollow toy or treat, such as a Kong or beef trachea, with canned food and freeze it. This may get messy, so it’s a good idea to put them in an area of the home you don’t mind getting a little dirty. When all else fails, bundle up and head outside! Most dogs love snow and will get a thorough workout by running and diving through it. While you’re out, take a drive to your veterinarian’s office to engage your pet with the staff for a positive experience or stop at a pet-friendly store to have them meet other people and animals, maybe even pick out a new toy! No matter what you decide, keeping your dog physically and mentally stimulated is sure to help them, and you, feel at ease this winter.

e all have them in our families: that one person who has everything, and you can never come up with good gift ideas for them. Well, have you ever thought of giving a flower arrangement? It’s such a simple idea with so many possibilities, and Sarah Lambert Freeman, owner of Hive & Hollow in Menomonie, can make any arrangement unique and beautiful. With 25 years of floral experience under her belt, Freeman decided to shift gears and open her own shop, but with a little twist. Instead of purchasing flowers from around the world and competing with large flower stores, Freeman is keeping it local. “I have always loved working with flowers,” she says. “But I don’t love what I have learned about the damage the intensive flower farms are doing to communities and the environment in South and Central America and Africa, not to mention the fuel needed to fly flowers all over the globe.” All the flowers for Freeman’s business are sourced from local growers during the warmer seasons and domestic growers in the winter months. Many of the flowers come right from Freeman’s own farm —that’s the “Hollow” part of the business. The actual storefront of Hive & Hollow opened on September 5 in downtown Menomonie. Having dabbled in beekeeping in the past, Sarah decided “Hive” seemed perfect for the name, as it incorporates the many facets of her business. All of Freeman’s arrangements are placed in unique, vintage containers or recycled glass vases. In addition to flowers, merchandise from 20-30 local artists is featured throughout the shop. You can find everything under the sun: soy candles, goat milk soaps, handmade cards, works from local authors and musicians, printmakers, painters, felters, rock and fossil collectors, and vintage treasures. 10 | www.secondopinionmagazine.com
Freeman also plans to offer classes that will be open to the public to learn about flower arrangements. Just before Thanksgiving, she will host a centerpiece-making class featuring locally sourced materials in vintage containers. And when the storefront becomes more established, some of her featured artists will teach various craft workshops or provide demonstrations. Freeman states, “I want the store to be that kind of buzzing hub of activity for the community.” If flowers don’t feel like the perfect gift for that impossible-toshop-for loved one, Hive & Hollow is home to many unique items. Freeman states, “We have such an interesting collection of oddities and curiosities in addition to unique handmade items and locally sourced gift baskets. The other day I sent a woman off with a taxidermied squirrel that wasn't even out on the sales floor. You get to chatting with someone and suddenly you are like, ‘I have just the thing for you!’ It feels like magic.” So buzz on over to the Hive & Hollow — you might be pleasantly surprised by what you find.

very year we wait in the big lines, sweat our tails off in our winter coats, trudge through the blinding snow to get the best deals, and we do it all just to buy more stuff. Don’t we all have enough stuff already? What if this year you give the gift that no one ever has enough of: quality time. One way to do that is to sign up for a class at the Paint Shack in Eau Claire. Cyndi Kortbein, owner of the Paint Shack, really enjoys seeing people come for a fun night out at her business. “I love interacting with our painters and helping them create something amazing!” she says. “People have commented that painting is like a therapy for them. I have to agree.” They offer so many fun and unique classes from happy hour paint to kid classes to canvas, wood, and wine glass painting. Kortbein even developed an interesting method of painting on a screen. The calendar month is usually planned out in advance, with a different painting selected for each day. The instructors will help as much or as little as you’d like, and there’s no experience necessary! You get a great time out, and you get to keep your creation at the end of the class. If you don’t care for any of the set paintings, bring your special someone in for an “Open Paint” and pick from almost 600 paintings hanging on the walls at the Shack. The goal for every event is a fun and positive outing together. Looking to treat your employees or do something fun with your coworkers this holiday season? You can book a private party through the Paint Shack. You need at least ten to twelve painters and you have to book a two-hour time slot. The Paint Shack can host parties at their building, right next to Cherry Berry in Eau Claire, or an instructor would be more than willing to meet you somewhere, too. They have been to Menomonie, Bloomer, Tomah, and Sparta, and many places in between. If you decide to do a class at the Shack, you can also purchase drinks for only $3 if you are 21 or older. So think about gifting a painting class to that loved one who already has too much stuff. Or maybe you can add a painting class at the Paint Shack to your own Christmas list. Either way, it’s a great way to unwind and do something fun and creative. A Skateboard for Christmas By Becky Streeter
A
skateboard, a band saw, and a quirky, fun imagination. That’s everything Joseph Taylor needs to create a masterpiece, but it might not be exactly what you’re thinking. During a house move some time ago, Taylor’s father loaned him a band saw. Taylor looked at the saw, looked at a skateboard, and ideas started to flow. He began his art journey by making jewelry as presents for his friends and family. But after becoming more comfortable maneuvering the saw, Taylor decided to try his hand cutting intricate shapes out of skateboards and fusing them into wall hangings. Taylor’s wall pieces vary in subject matter from gorgeous mountain scenes, to an exploding rhinoceros, to a ship fighting to survive the crashing waves of the sea. Sometimes he grasps at the ends of his imagination, and sometimes he just has to look at a skateboard and he knows exactly what it’s going to be. “The medium itself holds enough intrigue so within my basic format I can explore many different subjects and ideas,” says Taylor. “I can make a spaceship and a pyramid if I am interested in spacey alien theories, or I can have a lone wolf in a field for more sentimental and earthly feelings.” Based in Madison, Taylor reuses and up-cycles many of the materials needed to create his masterpieces. He found his source for old and broken skateboards by building relationships with skate shops and receiving donations from skateboarders in the community. “I love the satisfaction of fixing something that was broken or breathing life into something that's been discarded,” states Taylor. The veneers on skateboards embody so many different colors that can’t be found in natural wood. They often lead to a world of unique and intriguing opportunities for an aspiring artist.
After honing his technique, Taylor took his work public, made it into a business, and became an instant hit. His first solo reception was in the fall of 2014, and he has been booked with solo receptions and art fairs nearly every month since then. He continues to make and sell jewelry and wall art equally, and he loves talking to people at shows and fairs about his work. His favorite thing is watching what draws their attention and seeing the light in their eyes when they appreciate his art, whether they buy it or not. Taylor feels at the very top of his game when he can create a custom piece. “I love when someone feeds me ideas and asks me to depict a new scene or animal or visualize a passage from a Mark Twain novel,” says Taylor. “They can contact me via email with pictures from my website or simply call me and say ‘I like this color, this layout, this size, I have this much money to spend, and I was just in Australia and made friends with a giant kangaroo named ‘Jazz’ and boom! I have a fresh slate and a new story to tell that's just for them.” With the holiday season right around the corner, why not try to buy local and creative this year? Your Holidays Can Be Less Stressful T he holidays are here and they don’t have to be hard or stressful. Let’s re-think in terms of “my holidays are stress-free zones.” Here are expert tips to help you relax and have more joy with a happier, healthier holiday. 1) Take a moment to identify triggers for stress What gives you the holiday blues? Is it finances, too much to do, interpersonal relationships, high expectations, or something completely different? Thinking about it now might help you alleviate some of the stress before it happens this year. Once you can name them, you can change them. It is time to raise the bar on what really brings you joy and creates inner peace.

4) Be willing to make new traditions Families and friends don’t necessarily live close or all have the same schedules. Be flexible and change dates or times in order to gather everyone together. Instead of baking ALL the cookies, create a cookie exchange where everyone bakes enough of their two favorites to share with others. And remember, this time of year everyone’s budget needs a break, so set a dollar amount for gifts that fits and stick to it—see who can be the most creative. Memories are made from what we create and share together, like a family Christmas in June or lasagna for Thanksgiving.
2) Moods will move when you move Science and mental health experts agree exercise is one of the best ways to reduce depression, anxiety, and overall stress levels. Exercise can also raise and stabilize moods as well as improve sleep. Judith Orloff, MD, an assistant professor of psychiatry at the University of California in Los Angeles, states adding sunshine to your daily movement can create more feel-good serotonin in your body and help ease symptoms of seasonal affective disorder (SAD) [1].
5) Feed the mood, mind, and tummy good food Decorating for that perfect mood doesn’t have to be complicated. Simplify or use humor, like Mistletoe for hugs with a sign under it that says: “Stand Here.” Have a tree dressed only with lights and then have the guests add decorations. Ask a “techy" family member to update the holiday playlist. We all love the snacks, cookies, and appetizers, but make sure to offer healthy choices, too. Also, no one needs the stress of cell phone buzzes and email beeps…turn them off! It is not the time for news or CNN.
Spend time outside or near a sunny window and enjoy a “sunshine” nap when you can.
Feeding positive vibes of joy creates more positive vibes to enjoy.
3) Positive holiday events and practical expectations It is OK to let go of perfection. Remember it doesn’t have to be a one-person show—share a task from your list or assign dishes to others. Pre-planning for shopping, errand running, and cooking can help, too. This is your time to enjoy friends and family, and the best times happen when you stop to share them.

Not to Stress You Out, but… M ost of us know that when you’re hungry, you don’t have as much energy, and simple cognitive or physical tasks can seem difficult. But this connection runs far deeper than just communicating hunger and lack of energy. You know that funny feeling in your gut when you start to get nervous about something? Or how you might feel “sick to your stomach” about hosting the perfect holiday party? Stress can directly impact the health of your gastrointestinal tract, which can lead to a whole host of other issues throughout your body. Anxiety is perceived emotional stress. All stress, big or small, has an effect on the body. Some stress is very temporary, like being late for a meeting. The body understands how to handle temporary stress properly. Other stress, like divorce or the death of a loved one, can cause long-lasting effects that the body is not necessarily equipped to control. An article from Harvard Health Publishing at Harvard Medical School put it this way: “Stress (or depression or other psychological factors) can affect movement and contractions of the GI tract, make inflammation worse, or perhaps make you more susceptible to infection” [1]. The more you worry about something, the greater these symptoms are compounded. Emotional stress can play all kinds of tricks on the body— many starting in the GI tract. Symptoms can include heartburn, abdominal cramps, loose stool, or constipation. What’s even more interesting? The connection between your stress and your GI tract is actually a conversation, not just a one-way message. If you are experiencing gut issues, that can lead to more stress, just as stress can lead to gut issues. It is an intimate and cyclical system. released. Cortisol is a steroid hormone produced in the adrenal glands. The more stress, the harder the adrenals work to keep up. With continued over-working of the adrenal system, the resilience of the body’s cells, tissues and organs begins to break down. Because of this, the body’s longer-term capacity to respond to these changes (metabolic reserve) becomes hindered [2]. All of this leads to an overactive adrenal system, which can turn into HPA-D, formerly known as adrenal fatigue. HPA-D is often a precursor to and a symptom of many different issues, including gastrointestinal disorders. In short, chronic emotional stress can manifest physical conditions. So what can you do about it? Just relax. Easier said than done this time of year, right? However, this is the main idea. If you want to feel healthy again, you will have to make some changes in your lifestyle and nutrition. Mindful Awareness of Holiday Expectations
S
ome holiday seasons we make the trek down to Florida to visit my in-laws. What could be better? Sunny Florida in December, twinkle lights on palm trees, and a break from the cold and cloudy days of midwest winter! Yet as we anticipate spending time with loved ones during this joyous season, sometimes I’ve notice a creeping sense of dread mixed with the excitement. Remember what happened last year? What if they bring up _______ again? This feeling can sometimes hang over our holiday preparations and dampen the season of cheer. Family gatherings are rarely Hallmark Card perfect, yet that is what we expect. We are bombarded with messages, both internal and external, about how our holiday times with family “should” look. We see warm, smiling families gathering in television commercials and we painstakingly deliberate over choosing the perfect photo to put on our holiday card. When things don’t measure up to our expectations, we react in ways that don’t always fit the holiday spirit. It could be snapping at your kids for not picking up their new toys before the guests arrive, or quietly seething because once again your brother is not helping AT ALL with the holiday feast, or maybe you eat and drink a little more than planned in order to help cope with challenging relatives. Our reactivity can quickly snowball into family squabbles and hurt feelings, further dampening our holiday spirit. When we strive to live up to unrealistic expectations around the holidays, we are setting ourselves and our loved ones up for suffering. We get lost in the story of how things are supposed to be and frustration and disappointment take over. We are human beings, who have emotions and make mistakes. As families, we have long histories of habits and patterns of relating to each other, and these do not get placed on hold just because we are supposed to be happy and joyfully celebrating. Allowing space for imperfection creates opportunities for the clarity and connections we long for at the holidays. Mindfulness is about allowing ourselves to come in contact with the full range of our experience— thoughts, emotions, and sensations—whether they are pleasant or unpleasant. In allowing ourselves to take the time to acknowledge and honor the experience we are having, we have the space to relate to what we are feeling in a skillful, gentle way that offers kindness to ourselves. ou can take some small steps in your every day life to improve on your health and fitness journey, making you a healthier YOU! Start with the following steps, take on the challenge, and see how making better choices and decisions can make you and your body feel. 1. Drink water. Adding water to your daily activities will improve mood, help with migraines and headaches, reduce fatigue, aid in digestion (out with the bad and in with the good!), encourage weight loss, and so much more. Here’s a challenge: drink eight ounces when you get up in the morning and eight ounces before each meal. By adding that to your regular water consumption, you will see a difference. REACH 4 the WATER! 2. Have a bedtime. I know this one is easier said than done as life catches up with us most days. Getting enough sleep will help with focus, mood and even your immune system. Challenge: give yourself a bedtime and stick to it. 3. Cut out sugar where you can. It’s okay to start out small! Maybe just do milk in your coffee and no sugar, or a glass of water with apple slices and cinnamon instead of that afternoon soda. Cutting out sugar can be easier if you start out by replacing the smaller things with a healthier option, then 22 | www.secondopinionmagazine.com
keep moving forward with elimination day by day. However, you can still indulge in those sweet sugar treats occasionally— what fun would it be if we couldn’t, and then it really is a treat. Challenge: cut out one sugar this week. 4. Find an exercise you actually enjoy. Exercise not only makes you more physically fit, it also boosts mood and increases energy and mind clarity. Having an exercise that you enjoy will help you want to get your workout on. Find a type of workout and a place that fits YOU (which yes could be your living room or the walking trail). Having a support system can also help make exercise fun. Challenge: try a new fitness class or exercise this month, make a plan, and maybe even get a friend to join you. 5. Add those vegetables. Incorporating healthier food choices can only do positive things for your body and your health. Start small. Change up the easiest meal for you, whether that might be breakfast, snack, lunch or supper. Choose healthier options with vegetables, protein and healthy carbs and fats. Challenge: Make sure there is a vegetable on your plate for every supper this week (French fries don’t count). Adding these key elements into your daily life can get you on the right path for a successful, happier, healthier YOU!

No-Bake Monster Cookie Dough Energy Bites Ingredients • ⅔ cup creamy peanut butter • ⅓ cup honey • 1½ cups old-fashioned oats • ⅓ cup mini M&M's • ¼ cup mini chocolate chips
(Serves: 16)
Instructions 1. In a mixing bowl, mix together the peanut butter and honey until well incorporated. 2. Add the oats and stir. 3. Add the M&M's & chocolate chips. Stir together until well incorporated. 4. Refrigerate dough for about 1 hour to chill. 5. Scoop out dough with a cookie scoop or Tablespoon measuring spoon and roll into balls. Roll into balls with hands. Place into resealable bags or containers and refrigerate or freeze. Enjoy!
