The start of a new shooting season No shooter ever forgets their first shooting season or first shoot. There is something magical about the sensation of everything being new and unexpected. A new chapter in the adventure of life. When a new shooting season opens, we feel an echo of this expectation. For us at Seeland, there is some of the same buzz when we send out a new catalogue. This time especially so, since we have loads of new products that really stand out. Successful innovations are usually based on the familiar, the well-tested and the well-thought-out. The flagship of this autumn collection focuses on technical innovation. We present the Hawker suit alongside Paramount and Ageo – three products designed on the well-known three-layer principle and which have been made to work in combination. Our vision is to give shooters a set of shooting garments that meet the demands of active shooting for 365 days a year. Hawker comprises intelligent technical details and careful design considerations, so we are confident in the success of this range. Another example is our new tweed range, Ragley, which improves tweed's functionality but displays a deep respect for its history. Further on in the magazine, you can read more about tweed's traditions and how we have developed the functionality and fabric. There is also good news for the high seat shooter out in the winter woods. With the Arctic range we have incorporated a number of innovations for comfort and shooting functions such as low noise and low reflection. We have also been out shooting on the water in Denmark's Limfjord, out in the woods with one of Sweden's best retrieving dogs and cooked duck and pheasant over an open fire. European bison The population of European bison is certainly not excessive, but this is a living example of a species that had become extinct in the wild and then successfully re-established. The original population of European bison was seriously decimated during the First World War, and the last wild bison in Europe was shot in 1921. Starting with a small group of individuals in captivity, since the 1950s bison have been released in a number of locations, including areas like Denmark where it had not lived in the wild since the last Ice Age. Today, there are around 5,000 European bison living wild – sufficient for it to be no longer considered as threatened.
THE COMEBACK KIDS Many game species are better off now than they were 100 years ago. Here are five of the large mammal populations that have seen a dramatic resurgence: Elk There is now a healthy population of elk over a wide area, covering Scandinavia, the Baltics and into Eastern Europe. The largest population is in European Russia, while Sweden has the second largest at around 400,000 before the game season. Around 1810 there were only scattered groups of elk in Sweden, Norway and Finland. The elk's resurgence is primarily due to better wildlife management.
Wild boar One of the species to have made the most dramatic comeback in Europe is the wild boar. In the mid-20th century, the population was scattered thinly across central Europe – but has grown by at least 350 per cent in under 50 years. There is no doubt that the wild boar is very esteemed by shooters, as evidenced not least by its history in Sweden. Here, the Swedish Parliament decided, in 1980, that the wild boar was not wanted in Sweden and should be exterminated – apart from a small population in a restricted area. The shooters did not agree – or else they missed much of the time – because today there is a large population of wild boar throughout Southern Sweden. In addition to which, Parliament's decision has been overturned.
The most expensive shotgun in the world Shotguns come in many price ranges, and shooters often discuss whether price reflects quality or if you are paying for the "wow" factor. The price of the most expensive shotgun sold at auction went sky-high for other reasons entirely. We're talking about the favourite gun of US President Theodore Roosevelt: The Fox, a 12-bore from A.H. Fox Gun Company. In his book African Game Trails, he claims that "no better gun was ever made". The shotgun was sold for no less than 862,500 US dollars. But this is not the most expensive firearm ever, since George Washington's pair of pistols had previously sold for nearly two million dollars.

Roe deer It's hard to imagine that roe deer weren't always to be found everywhere. Today, there are roe deer in the woods, in the fields, in the suburbs, and even in the towns. They are everywhere from Belarus to Spain. From Norway to Italy. But it hasn't always been so. In much of Europe, roe deer had disappeared by the end of the 19th Century and, if not threatened, they were nonetheless relatively rare. For example, there were only 200 individuals in the entire Scandinavian peninsula around 1850. The decline was the result of shooting becoming more accessible to the general rural population across Europe in the 19th Century. Today, there are at least 10 million roe deer in Europe. Ibex The ibex, which has previously been close to extinction, has enjoyed healthy growth for a number of years. In the early 19th century, there was only one population, of less than 100 individuals of alpine ibex at Gran Paradiso in the Italian Alps. In 1821, shooting was prohibited and, around 100 years later, they began to be reintroduced into other parts of the Alps. The same is true of the Iberian ibex, which has grown by 800 per cent since the 1960s. The genetic variation of the ibex is however lower than before and some sub-species of Iberian ibex have died out.

Back to the site of the kill These are trophy pictures as you've certainly never seen them before. French photographer Pierre Abensur is responsible for "Subjective Trophies", a series of photographs of shooters with their stuffed trophies at the site of the kill. The series has taken him around the world, and there are portraits of both wealthy trophy shooters and professional shooters – for example, a shooter from Burkina Faso who was asked by the authorities to shoot an aggressive hippo. To give the series a surrealistic imprint, he has used artificial light and asked the shooters to
wear civilian clothes. As he puts it, the pictures are a study of man's relationship with nature – and not an argument for or against shooting. "Most of the shooters I know have a real fascination for nature and, for them, taking life is part of that love. I considered the act to kill, followed up by a will to restore the appearance of life as a sign of paradoxical love", says Pierre Abensur to National Geographic.
The photos from Subjective Trophies will be exhibited at the Finnish hunting museum, Suomen Metsästysmuseo, in the autumn of 2017 and elsewhere.
SEE RIGHT THROUGH It's a good idea to have covers to protect the lenses of one's optics. However,when you need to move fast, but also silently, it can be nerve-racking to have to flip the covers up to look through the sight. Should a track dog have a long pedigree? Or is a cross between two good breeds preferable? Scientists have undertaken the greatest comparison to date between pedigree dogs and mixed breed dogs in a study published in spring 2017. More than 14,000 dog owners were asked about their perceptions of their dog. The study showed that pedigree dogs were perceived as calmer and had fewer problems with other dogs than did mixed breed dogs. Conversely, there was a tendency for cross-breeds to be more trainable than pedigree dogs, according to the study, which was performed by researchers from Eötvös Loránd University in Hungary.

If you tread on a flatfish when you are bathing, your first instinct will probably be to pull your foot away. But you could also just stand still, and pull the fish up and thereby guarantee your evening meal. In Scotland, they've turned this into a tradition where, each year, at Palnackie in the south-west of the country, they hold the World Flounder Tramping Competition.

RATTING WITH DOGS
• Th e elk or moose is not just a proficient swimmer. It is also a good diver and can graze under water. The American moose has been observed at a depth of five metres.
Many small breeds of dog which we now consider lapdogs were originally bred for ratting. So it's not so surprising that this sort of shooting is still prevalent. Perhaps more surprising is that it happens in central New York, where, since 1995, Ryders Alley Trencherfed Society (RATS) – a metropolitan shooting club – has promoted urban rat shooting.

SHOOTING WITH EAGLES
• Th ere are persistent rumours in Sweden that King Karl XI attempted to create an elk cavalry, since the elk was both faster and had better stamina than the horse. But this has never been documented – and there are so far no reports of elk at war.
Most people have heard of, or even seen, a falconer. But a little more unusual is the eagle shoot practised by nomads in Mongolia, Kazakhstan and Kyrgyzstan. A few hundred still cultivate this type of game chasing with golden eagles on the great plains. Normal practice is to release the eagles after 10 years to live out their lives in freedom.
• There are also reports in Sweden of elk getting drunk every autumn from eating apples which ferment in their stomachs, producing alcohol. It is still debatable whether the drunk elk is myth or reality.
SHOOTING MAKES BIRDS MORE WILY You are no doubt convinced that you have become a smarter and better person from going shooting, but perhaps shooting has also made birds wise up too. We simply have a tendency to shoot the less wily ones. Anders Pape Møller, a biologist at Paris Sud University, has analysed nearly 4,000 birds, handed to a taxidermist from 1960 to 2015. The sample included pheasants, partridges, crows and jays. Some of the birds had been shot by shooters. Others had died of other causes. The study clearly showed that the birds that had been shot by shooters had smaller brains than the others. This may mean that, over time, the proportion of birds with larger brains will increase.

Covering the whole season Seeland's Ageo, Paramount and Hawker ranges offer mix and match potential to cover the whole season using the layering principle. When applying the layering principle, it is important for moisture to be transported away from the skin. Moisture conducts heat away significantly faster than air. If you have wet skin, you will quickly get cold. Ageo is a moisture-wicking, lightweight base layer in synthetic four-way stretch fabric with body mapping and quick dry technology. The mid layer's primary function is to insulate by trapping air. Paramount is a two-layer fleece that both insulates and transports moisture to the outside. rida lifts her black nose up into the air. She breathes in the forest air with enthusiasm, as though it was a tasty treat, even though she is well aware that this is all just training. Her owner, Björn Bengtsson, is one of Southern Sweden's most experienced scenthound trainers. He has laid a blood trail out, but all that is waiting at the end is a wild boar trotter. Frida is a Hannoverian hound – recognised as one of the world's best bloodhound breeds – and a dog in her prime: five years old and with many awards behind her, including the Southern Sweden scenthound championship. "She's always happy to be on the trail. The dog has to respond to the thrill of tracking, even if it's just a trail you've laid. If it's no longer enjoying it, it won't be at the top of its game. Hannoverians are bred to enjoy tracking and, as a handler, it's your job to keep the dog happy", says Björn Bengtsson, who explains that the most common fault among dog handlers is to lose patience and not give the dog time to work on the trail. The dog has to be patient. And so does the dog handler. VOLUNTEER TRACKERS Björn is one of the volunteers in the Southern Swedish tracking pool. This is a group of experienced handlers, ready, 24 hours a day, seven days a week, to go out tracking for animals that have been wounded during shooting or injured in traffic. Björn is 63 and celebrating his half-centenary as a shooter this year. But these days, he doesn't have much time for shooting.
Björn has won the Scanian championship for scenthounds with Frida, his Hannoverian – and twice with one of his other dogs, a Laika. TAKE IT OUTSIDE AW 17

"Bula" is the only professional Swedish tracker. He has published several DVDs on tracking using scenthounds.
IAN OPENSHAW Dog breed: Cocker Spaniel Where: England Ian Openshaw is England's most famous dog trainer and has an astonishing record of more than 100 championship wins. He is known for his Cocker Spaniels, one of which he supplied to Queen Elizabeth II. In the spring of 2017, however, there was a heated debate in English gundog circles about whether this dog was actually a "Sprocker" – a Cocker and Springer Spaniel mix.
DAVID LISETT Dog breed: Springer Spaniel Where: Scotland David Lisett is something of a cult figure and a "dog whisperer" in the Springer Spaniel world. He has won several English and Irish championships for Springer Spaniels.

"This is our big passion. And all the trackers feel the same. I started tracking when I felt I was done with shooting. There came a time when shooting was no longer so much fun. And what we do here is a bigger challenge", says Björn. Unlike in Germany and Denmark for example, in Sweden there's no legal requirement to summon a registered scenthound handler if you wound a deer or wild boar. It is up to the shooter himself to find a "trained dog" to do the tracking – and it doesn't necessarily have to be a registered bloodhound. Björn doesn't hide the fact that he'd like to see the Danish scheme copied in Sweden, even though most shooters know full well that you need a trained bloodhound after a wounding. Within the last year, Björn's phone has rung 80 times with a shooter on the other end of the line. And he's been called out around 170 times to traffic collisions with game. "The most difficult ones are traffic collisions. Often, there's not enough blood. And wild boar are tricky. A wild boar always tries to head home when it is wounded. Home may be 200 metres away. But it could also be five kilometres. A wild boar shot in the belly might survive several days", he explains. Moreover, wild boar also pose a safety risk to shooters and dogs. "The medium-sized wild boar of 90-100 kilos in particular are fast and there’s a lot of fight in them. Always. You need a dog that’s persistent. But, on the other hand, it mustn't go straight for the attack. Again, it's a question of the dog having the right mentality", explains Björn, who has two other tracking dogs in addition to Frida and "a retiree" at home in Ekeby, Sweden.

Let’s tweed again For generations, the classic, stylish woollen tweed has been associated with hunting and British rural life. But the history of tweed was created through the interaction between town and country. BY MICHAEL RACHLIN
T
he discreet check and the feel of the soft, coarse wool used in tweed automatically evokes rural life in the British Isles and the English shooting tradition. But its history stems from further north, where you need to be careful not to say “typically English”. Tweed is inspired by Scottish tartan, which for generations signalled clan membership and at times also resistance against the English hegemony. As far back as the 1700s, the English forbade Scots men and boys to wear the tartan, following the Battle of Culloden in 1746. But the woollen fabric survived, and barely a century later the English looked on with fascination and wonder when another Scot, the author Sir Walter Scott, brought a variety of the tartan to London. Best known today for the novel Ivanhoe, Scott arrived in London with one of the simple checked woollen blankets that shepherds used. Here he had a tailor sew a pair a trousers for him from the material and, of course, this created a sensation. But it took a few more years until tweed as we know it today was born. Back in Scotland, the English were beginning to buy up estates in the Highlands in order to enjoy life in the country – and, not least, shooting. But even if here in the romantic era they were fascinated by the lives of shepherds and crofters, wearing tartan would have been a step too far. Instead, they created the first estate tweed, which was a combination of the colourful tartan and the simple black and white check that Sir Walter Scott has taken to London. As the name suggests, estate tweed is reserved for the owners and staff of an estate. It is from its roots in estate tweed that tweed has acquired its traditional role as part of the uniform of game shooters over much of the world.
But tweed did not gain world fame until some years later. This happened when, in 1848, Queen Victoria and Prince Albert purchased Balmoral and created a tweed named after the estate. After that, tweed was no longer reserved for individual estates, but instead became associated with the British monarchy. This link was later reinforced by the Prince of Wales check, honouring heir to the throne Edward VIII. In the 1960s and 1970s, tweed and tartan were de rigueur for the creative class – such as architects or jazz musicians – but it also turned up in other, more surprising contexts, in rebellion against upper-class over-refinement. "It pops up in fashion from time to time. To shock and amaze as a gently ironic take on iconic British attire, from designers such as Alexander McQueen and Vivienne Westwood. There are even some punk bands that wear tartan. And whenever a typically British wave hits the scene, tweed and tartan are bound to put in an appearance. But in the long run, it will always be part of the self-assured country wardrobe," says Danish fashion journalist Niels Pedersen.

All outdoor types should own a good pair of rubber boots. They are easy to put on and take off, easy to clean and, all things considered, among the most practical types of footwear, whether for use in the garden, the woods, on a fishing trip or shooting. The construction of a rubber boot is deceptively simple, but rubber boots are as different as people's feet.
F
undamentally, three things make up a rubber boot. The upper, the sole and the lining. Rubber boots were made as far back as 1850, shortly after the invention of the vulcanisation process. Natural rubber is mixed with sulphur and other chemicals, and then baked at high temperatures to make the rubber both strong and elastic. Rubber boots are made by laying pieces of pre-cut rubber over an aluminium mould.

The rubber is then vulcanised together with a sole, which is either pre-shaped or produced during the process. The mould is called a last, and this is what determines the boot's fit – width and instep height and so forth. If the last does not more or less match the shape of the foot, nor will the rubber boot. A poor fit also means that the boot wears out more quickly because it bends incorrectly as the wearer steps, or squelches because it doesn't sit properly on
the heel. This is why it makes sense to try out a range of styles before buying. THE RUBBER BLEND MAKES A DIFFERENCE. The rubber blend used on the boot's upper has a big influence on comfort and durability. The blend must suit the environment where the boot will be used. For walking long distances, a supple rubber is preferable, and you will typically choose a

large proportion of natural rubber in the blend. This makes for excellent comfort, but it does mean that the rubber has to be treated more frequently so as not to dry out and split. Conversely, if you go for a lower proportion of natural rubber, the boot will be more robust and resistant to the alkaline soil of farmland. However, you also get a much stiffer boot which is not nearly as comfortable to walk long distances in. THE IMPORTANCE OF THE SOLE. The sole's profile, i.e. its tread pattern, determines how it works on the ground. Modern boots have a moulded outsole that is fused with the rest of the boot during the vulcanisation process. Producing the outsole separately allows it to be given a coarse tread. This is a major benefit, especially on shoots that involve walking long distances on different uneven and often slippery surfaces. Conversely, for a more elegant boot you need to choose a less aggressive tread. As well as the depth and pattern of the tread, the hardness of the sole plays a major role. The sole must be both sufficiently stiff to support the foot and soft enough to make it comfortable to walk long distances on. To resolve this dilemma, the outsole is often made in two different

hardnesses. Typically the tread is made in a stiff, durable rubber and a soft midsole in EVA foam is then placed on top. This provides better comfort and a good, durable transition between outsole and boot.

If the rubber boots don't fit properly from the beginning, they probably never will. LINING, COMFORT AND INSULATION. Lining is about insulation. Whether the lining consists of a thick sock or is part of the boot is ultimately a matter of personal preference. In principle, fit is more important than lining, since it is the blood circulation to the toes that keeps them warm. If your toes are pinched together so you can't move them, no matter how much you insulate, they will still get cold. Having said that, lining is of course very important for insulation, fit and comfort. The most common lining types for rubber boots are nylon and neoprene.
Nylon is the most traditional lining. It is thin and typically the cheapest. Nylon lining does not insulate, and is therefore often preferable when using boots in hotter weather. Of course, there is always the option of increasing insulation with some good socks, and so rubber boots with nylon lining can be an excellent choice for a year-round boot. A thick lining is obviously more comfortable to walk in. Neoprene is a popular lining for rubber boots because it is soft, comfortable and insulating. Neoprene is also hardwearing because it follows the movements of the rubber. However, in warm spells, neoprene-lined rubber boots can be very hot to walk in and they may also feel heavy compared with nylonlined boots. THREE THINGS TO CONSIDER What is your intended use? If you're using the boots for hunting where you are walking long distances over long periods, the rubber blend should have a high percentage of natural rubber and a soft sole with a coarse tread. For shooting parties, you will probably want to go for a style with a less aggressive sole. If you are hopping in and out of the boots to go into the garden, the rubber blend should contain less natural rubber. This will give you a hardwearing boot that needs less maintenance. The profile of the sole is less important here, but of course you’ll still want a boot with a good fit. When will you be using them? If you are mainly going to use the boots in winter, a good, thick lining is preferable. This gives a more comfortable boot with good insulation. However, for an all-year boot or one to

Obviously, this is the main consideration when choosing a pair of rubber boots. Though many rubber boots have a leg closure with a buckle or a zip for a snug fit there’s no option to adjust the fit as you would for a pair of laced hiking boots. Who sits on an ice cold fjord for hours waiting for a duck? We accompany a duck punter out on one of the last days of the season for a glimpse of a hunt with deep roots in Denmark. BY MICHAEL RACHLIN / PHOTOS: LARS HORN
T
here are few things in the world as dark as a January morning on the Limfjord in Denmark's North Jutland. Here, there is no fallen snow to light up the ground, and at seven in the morning there's still an hour to wait until dawn’s light streaks the sky. Both the moon and the nearest village, Løgstør, are shrouded in a thick mist. Out of the mist, a car emerges with a trailer carrying a duck punt. It's the last Sunday in January, and Martin Poulsen from Thisted is getting ready for the final trip of the season at Vejlerne, a well-known preserve in the north-west corner of Denmark's longest fjord. The fjord cuts 180 kilometres into Jutland, and in the west shelters the Thy landscape from the otherwise relentless west wind. Here around the fjord, hunting and fishing, not least for mussels and oysters, has always been outstanding. At least for the last 7,000 years, as revealed by the famous excavations from the Mesolithic period on the other side of the fjord. Wednesday will be the 1 February, when the 2016 hunting season closes. Today, Martin has the fjord to himself, even though this hunt is open to all Danish hunters. Denmark is a small country, with modest natural resources, but with its surprisingly long coastline – 8,750 km – there are coastal waters, ducks and geese to provide sustainable hunting for everyone. A truly

Going out on a pitch-black fjord and lying down in five degrees of frost to shoot a duck is not for everyone.
Stand shooting and wildfowling: The people's hunt in Denmark Hunting has always been a way of life in Denmark for landowners as well as the ordinary rural population. With the exception of the royal swan hunts, which were popular during the Renaissance, it has never been considered proper to hunt shore birds. Wildfowling was both too bothersome and unsociable to attract royalty and the nobility. However, for thousands of farmers and fishermen in the remote areas, hunting on the beach and off the coasts was not just a leisure activity – for many it was an indispensable part of their livelihood. Through a royal decree of 1840, hunting for birds at sea was made free for all. And this rule is the basis for the fact that hunting is now free for all of Denmark's 174,000 registered hunters – with natural restrictions defined in the hunting legislation and bird protection areas. The main principle is that, as long as the punt or boat has at least one centimetre of water below the keel, the hunt is open. The wildfowling season runs from 1 September for dabbling ducks and 1 October for diving ducks up to 31 January.

unique freedom in a country where most aspects of life are highly regulated and the price of hunting on land in recent years has followed the same trajectory as a mallard in flight. Martin launches the punt into mushy ice at the water's edge that has the same consistency as a slush ice on a hot summer's day. He lets his hands slip through the ice cold water for a couple of minutes. One of the fixed rituals that ensures his fingers don't freeze on a long day's shoot. Martin's experience will be in demand today if we are to set out decoys with a visibility close to zero. One of the few ‘gadgets’ Martin always has with him in the punt is an old-fashioned compass. Because even though we are close to land, it is easy to lose your bearings on a day like today. And so, Martin falls back on his routine and sets a course for one of the locations on the fjord where he knows ducks or geese like to fly over at sunrise. DAYBREAK There is still no hint of sunrise when the decoys are laid out and the hunt can begin. Although night time hunting is generally prohibited in Denmark, there is an exception for duck and geese which may start an hour and a half before sunrise and finish an hour and a half after sunset. While we begin to detect a feeble light in the east, Martin explains how hunting with a punt began. "I was brought up hunting, and have been out since I was knee high to a grasshopper. It was ordinary shooting on a plot my grandmother had here in North Jutland," he explains. He started duck punting at around the age of 30. Those early days were spent proving he could hit loads of duck and geese. 180 birds in the first year alone. "But the focus quietly shifted more to the hunting itself. That’s what makes duck punting interesting. Anyone can set themselves

up on a forest track and wait for dogs to drive pheasants over. But if you make a mistake here on the fjord, you won't be taking any birds home. It's about identifying what you've done right and always getting smarter," explains Martin. THAT WAS A GOOSE... A little more contrast in the greys is starting to appear, and somewhere out in the mist we can hear the raucous calls of swans. 25-30 metres away is a goldeneye – one of the small, tasty ducks, which are unmistakable from the white spot on their cheeks. Martin gives a shout to get it to take flight, but the goldeneye is completely unphased. Suddenly, two large birds come towards the punt. At first, Martin thinks they are swans – all swans are protected in Denmark – but when they approach and prove to be two greylag geese, he gets busy. He sits up and shoulders the Beretta, and after a good swing the silence is broken by a deafening bang. One goose is hit and lands with a proper splash. Martin collects the bird, and the day's hunting is under way. This is far from a given this late in the season. "The birds behave differently than at the start of the hunt on 1 September. Early in the autumn, many of the birds are just large ducklings who are easily taken in by the decoys. But now no longer. There are not many birds out there who haven't seen a hunter shoot. They are wilder and better flyers now," explains Martin. The temperature, which is still just below freezing, also reminds us that September is long past. But it is nonetheless the end-of-season hunt that defines the duck punters.

There's the freedom of just going out hunting without being dependent on a consortium or an estate owner.

When I'm sitting alone out here, I don't think about anything. You really become part of nature. I need that," says Martin, who often takes new hunters out with him. Some take to this type of hunting immediately. While others find it hard to see the appeal of waiting hours on the fjord when you can easily risk going home empty-handed. All the same, duck punting remains popular and there may be a number of reasons why. "There's the freedom of just going out hunting without being dependent on a consortium or an estate owner. Plus, hunting leases on land have now gone up to the point that few can afford them. And then we have Denmark's best duck hunting here. To my mind, anyway," says Martin. Suddenly, two mallards are flying straight towards the decoys. Martin sits up, but in the first instance doesn't place the shot correctly. The pellets pass underneath the lead bird. The ducks rise up sharply, and Martin gets another chance. The next shot finds its mark perfectly, and a drake plummets dead into the water. Martin can hardly conceal his enthusiasm when he goes out after the year's last duck. A mallard and a goose are a splendid conclusion to a turbulent season. "I've got what I came for. Did you?" says Martin to the photographer. The photographer has got what he wanted, and it just remains to paddle back to shore, find the trailer and the season is over for another year. Now the countdown to 1 September 2017 begins, when the shooting season in the sea around Denmark reopens.

So, for inspiration on how to prepare game where it is felled and on the most primitive heat source, we went deep into the Swedish forest with shooter and chef Nikolaj Juel. He had brought some of the season's pheasants and mallards along. All meals are for four people.

RECIPES
Nordic pheasant shawarma For most people, shawarma means fast food on the city streets. But I like to serve shawarma to my fellow shooters after a day's shooting. We marinated the pheasant in za’atar. FLATBREAD (ABOUT 10 PIECES)
500 g of flour 350 ml lukewarm water 10 g yeast 10 g salt Mix all the ingredients together in a bowl. Knead the dough for 10-15 minutes until it is smooth and elastic. Let the dough rise to double the size. Put to one side. TAHINI SAUCE
2 tbsp tahini 1 clove of garlic, crushed with a little salt 2 tbsp olive oil The juice of half a lemon 3-4 tbsp water Stir all the ingredients together and add salt and perhaps a little extra lemon juice to taste. The tahini sauce should have creamy, pourable yoghurt-like consistency. If the sauce is too thick, add water to achieve the right consistency. CHILI SALSA
1 red chilli, deseeded and finely chopped 1 handful broadleaf parsley, finely chopped 1 handful of mint, finely chopped The juice of half a lemon 4-5 tbsp olive oil Salt and pepper
Za’atar can be bought ready-made but it's quite easy to make from scratch by pounding one tbsp sesame seeds and two tbsp of fresh thyme leaves in a mortar.
Stir all the ingredients together in a bowl. Add salt, pepper and extra lemon juice to taste. Put to one side. KALE SALAD
A handful of finely shredded kale The juice of half a lemon 3-4 tbsp olive oil Salt and pepper Stir the olive oil and lemon juice together, and add salt and pepper to taste. Add the kale and mix well. Put to one side. THE MEAT
2 pheasants, deboned 4 tbsp za’atar Salt and pepper 3-4 tbsp olive oil Put the meat in a bowl with za’atar and olive oil and mix well. Cover the bowl with clingfilm and place in the fridge. Let the meat marinate for at least an hour, but preferably overnight. Season the pheasant meat with salt and pepper and place it on a hot grill skinside down. When the skin is crispy and golden, turn the meat. Grill the meat until it is almost cooked through. Take it off the grill. Place it in a dish and cover with foil. Leave the meat to rest. While it is resting, roll out the flatbreads and place them on the grill. Grill the breads on both sides. We're now ready to make our shawarma. Place a small handful of kale salad in the middle of the flatbread. Add 4-5 slices of pheasant meat on top of the salad. Pour a tbsp tahini sauce and a tbsp of chilli sauce over the meat. Roll the flatbread up and serve immediately.

Casseroled pheasant with root vegetables and Chianti This is one of the best casseroles ever. You just brown the pheasants and add the rest of the ingredients to the pot. Put a lid on the pot and come back an hour and a half later. Nothing could be easier. 2 pheasants, preferably hen birds 1 red onion, cut lengthwise into 8 A celery heart, roughly chopped 1/2 a Hokkaido pumpkin, cubed 1/2 a celeriac 250 g of firm potatoes A sprig of sage 1 cinnamon stick One bay leaf 1 bottle of red wine (we used a Chianti) Salt and pepper Broadleaf parsley, roughly chopped

Put a castÂiron pot on the fire. Season the pheasants with salt and pepper. Add 2 tbsp olive oil and brown the pheasants all over. Add all the vegetables, herbs, cinnamon and red wine. Bring the wine to the boil and place the pot on the embers where the heat is less intense. Cover the pot and let it all simmer for an hour and a half. Turn the pheasants every 20 minutes so they are evenly heated on all sides. When the pheasants are ready, cut the meat from the bone and serve with the vegetables, red wine sauce and a sprinkling of parsley.

Waiting in the forest
In our daily life, we hate to wait. But in shooting, waiting is not just fundamental. It is part of the magic. We shoot for a paradox. BY MICHAEL RACHLIN
P
eople generally don't like to wait. Waiting in traffic, in a shop or on the phone makes many people decidedly uncomfortable. With smartphones buzzing in our pockets and our calendars stuffed with appointments, we have not become better at waiting – to put it mildly. Yet, more and more people are going shooting – an activity in which waiting will be an essential part of the day, no matter what the type of shoot. High seat stalking, in which you wait patiently in the wood for a deer or a fox, is an exercise in waiting. Paradoxically, it is this very waiting that is part of the attraction for many of today's novice shooters. This is what Charlotte Jensen explains. She's an anthropologist and one of the experts who has studied why we go shooting. A former employee of the Danish Hunters Association, she is currently an external lecturer at Aarhus University, specialising in how people view nature. In her study, many new shooters explain that, in addition to the shoot itself, one of the main drivers for going on e.g. a shoot or a stalk is the calm that they find in nature. "Many new shooters – women especially – said that the experience of being out in the wilds was important. They often expressed it in different words, but they talked about the shoot as a therapeutic or de-stressing space. Many said that they went shooting for personal development. In any case, a lot of it is about one's inner life. Shooting something is not that important, although of course this is a major event when it happens", explains Charlotte Jensen, who

naturally enough asked why this group didn't just go out for a walk without a firearm. The answer was that going without it was a non-starter. A LONGING FOR AUTHENTICITY "Shooting is deep-seated – which is what makes it interesting to many anthropologists. Modern life is very busy and we make great demands on ourselves. So shooting may be symbolic of a longing for authenticity. Going out to kill something means standing face-to-face with life and death. Admittedly in a figurative sense, but the shooter is still entering into a meaningful relationship with nature. For the shooter, the shoot is bound up with respect for the animal, in contrast to industrially slaughtered animals, which are reduced to objects. This also legitimises the choice to eat meat, in a world in which there are many good reasons to refrain", says Charlotte Jensen, who divides shooters into four main groups in terms of motivation. Beyond "the experienced shooter", there is a group for whom shooting is so bound up with family traditions that they scarcely wonder why they do it. A third group she calls the "the social shooter", where shooting is part of a local sense of community. Finally, there's "the status shooter", for whom equipment and trophies play a large role. "The status shooter was the one I met fewest of. But it's clear that many shooters show traits of the different types. But common to all of them is that shooting gives them a strong identity and sense of meaning in our times".
