Have a proper hand sink available to employees and make sure it is used often. Never touch ready-to-eat or cooked foods without washing hands and changing gloves. Check and clean equipment regularly. Check overall utensil condition daily: holding pans, storage containers, serving utensils, knives, pots, and pans. Thermometers should be used to regularly check food temperatures. Cooked food should be chilled to 41°F or below within four hours.

Cook & Chill

Identify all potentially hazardous foods on your menu and create a flowchart to follow these foods throughout the operation. Perform overall equipment checks and maintenance regularly: exhaust hoods, reach-ins, hot holding, cold prep units, cooking equipment. Condenser, coils, and fans should be cleaned regularly. Temperature of refrigerators should be monitored regularly with properly placed thermometers. Be sure to cook all food to its required minimum internal temperature. Cool rapidly from 135°F to 70°F in two hours and from 70°F to 41°F or lower in four additional hours. When reheating, food must rapidly reach 165°F for 15 seconds within two hours.

Food Storage Dry Product

Lighting should be shielded. Shelves should be slotted for proper air circulation. Food should be six inches from the wall and six inches above the floor. Ambient temp/humidity level is adequate. Temperature should be between 50°F and 70°F. Bins for dry ingredients must be covered, labeled, and dated. Use durable brooms, mops, and buckets to keep the area clean. Receiving

Thoroughly inspect foods immediately upon delivery. Use thermometers to record the temperature of food as it arrives. Pay close attention to sensitive foods: eggs, milk, refrigerated entrees, packaged frozen foods, meat, fresh produce, and dairy products. Check appearance of all products received. Refuse any products that have lost any integrity during shipping. Schedule delivery during off peak hours so you can take your time during inspection. Place incoming shipments on dunnage racks. Keep it off the dock floor at all times. Mark all items for storage with date of arrival, or use by date. Keep receiving area well lit and clean to discourage pests.
