TV segment digs deeper into Davila’s BBQ family history

(Seguin) -- The legacy behind the family of a thirdgeneration pit master is now a story that everyone has come to learn. thanks to the featuring of Adrian Davila on The Dish -- a part of CBS’ Saturday Morning.

Davila, operator of Davila’s BBQ here in Seguin, was interviewed about not only his culinary talents, but about the foundation that helped him get started in the family-owned business -- a business that continues to operate on West Kingsbury Street in Seguin.

CBS correspondent Janet Shamlian sat down with Davila at the local restaurant for the weekend segment.

In addition to sampling all of the restaurant’s favorites. including the all so popular barbecue grilled cheese sandwich, Shamlian shares Davila’s passion for culinary arts and his desire to keep the cooking traditions of the Vaqueros, or cowboys alive.

Camera crews even follow Davila to his ranch on the east end of Guadalupe County, where he puts some of his most precious cooking skills to action.

Perhaps the most rewarding opportunity for Davila is to have had a chance to share the importance of his family with viewers and pays homage to his late grandfather Raul – who started it all.

“I remember him taking something that at the time was so primal as a big cut of meat and breaking it down and making something beautiful with it and when it came out, onto the table and people enjoyed it, that was astonishing to me,” said Davila.

The operation of the business was then inherited in the 90s by Adrian’s father, Edward, who assumed the reins from Raul.

Today, Edward works alongside Adrian in continuing the 50-plus year tradition.

During the TV segment, Shamlian shared an observation.

“I was watching your dad watch you and you couldn’t see it, but I saw the pride in his eyes. He’s proud of you,” she states.

Unable to hold back the tears, Davila replies, “that’s what we all want right? We’re born with this inherent trait to satisfy our parents. It’s human. Everybody wants it –to satisfy their parents, right? Everybody wants to make their parents proud.”
