From the start of the year to now, our chosen goals have begun to take form and bloom, which seems fitting considering April comes from the Latin word “aperio,” which translates to “uncover” or “open up”. In the Northern Hemisphere, spring themes of rebirth, resurrection and transformation are abundant. But that does not mean there are no times of wariness and indecision.
Life works in mysterious ways and even in the times that we do not understand why a certain desire or dream does not come to fruition, embracing the uncertainty is just as important as not giving up. Adjusting your perspective is a powerful move that could open the door to an opportunity of a lifetime while leading you to exactly where you want to be or are meant to be.
In this month’s issue, you will find stories about Seguin residents who stuck with their goals and changed their perspectives. They continue to put in the hard work to maintain the longstanding wisdom of caring for our surroundings and the creatures within them, upon which human life depends.

Backyard Birds and the benefits of raising them

Many of us are familiar with the age-old question, “Which came first: the chicken, or the egg?” While she may not know the answer to that question, Robin Kresta does know all about what it’s like to raise chickens. That’s because she’s been doing just that for more than five years now, inspired by her love for eggs. And, she’d be the first to tell you that the difference between store-bought and homelaid eggs is remarkable. Though she has a few different varieties of egg layers — chickens whose
eggs are used for food rather than to be hatched— she says the high quality is consistent between them all.
“The yolks are really yellow, they’re thicker, and they’re just all-around better,” she said.
Though Robin prefers not to name her chickens due to the rate of countryside tragedy from predators such as raccoons, she believes that they have definite personalities, commenting that some are egg-stremely “wild,” and that chickens as a whole are smarter than most people think.

Robin has some advice for anyone interested in raising chickens themselves. First, she said it’s not as difficult as one might think.
“Raising dogs is probably harder than raising chickens,”she said. Although they need shelter, food and water, chickens are typically self-sustaining creatures. Unless they’re badly hurt, Robin’s chickens are typically able to heal from injuries without intervention. But that doesn’t mean that chickens aren’t influenced by their surroundings.
What they’re fed, for example, can strongly impact both egg laying and egg quality. Robin recommends a mix of layer pellets and table scraps such as potato peels and eggshells. That’s right — chickens are happy to eat their own shells — reduce, reuse, recycle. Also, as a quick tip, mixing a little apple cider vinegar into their water helps keep chickens healthy
Eggs are a precious commodity these days, but Robin doesn’t focus too much on capital, selling any extras at the occasional farmer’s market and to friends or those who hear about her by word of mouth. Typically, Robin keeps a flock of around 20 hens, and gathers as many as 12 eggs a day.
The practical benefits of raising chickens is clear, especially with the price of eggs on the rise due to the Avian Flu, .Robin’s flock has been unaffected. Robin also expressed how therapeutic it is to raise chickens.
“Just watching them interacting and scraping up the dirt is peaceful in a way,” she said.
But, just as every rose has its thorns, every hen has her claws, or, excrement, as is the case with raising a large flock of birds. Robin admitted that one of the downsides to working with chickens is their lack of cleanliness.
“They’re disgusting… They poop a lot, they eat a lot,”she said.
Though most people are required to take various different math classes in school, “chicken math” is not one of them. Luckily, Robin was able to explain the basics.

“If you buy chicks, buy double,” she said. “It’s very unfortunate, but several will die and not make it through. Chicken math is a legit thing.”
There are several variables to take into account when planning your flock size, such as the number of risks in your area including potential predators, how many eggs your chickens will produce, how many eggs you actually want, how many chickens you have room and resources for, and more.. Keep in mind, too, that many stores will throw in a few extra free chicks when you buy a certain number of them.
Also, it’s important to know that when they’re still chicks, it’s too dangerous to leave the flock alone in their coop. So, aspiring chicken keepers will need to have an indoor safe space available as well, until they get a little bigger. Robin converted her bathtub into a temporary coop for the young flock, before eventually transferring them outside.
As for the outdoor coop, Robin had a few suggestions like fans for the summertime and heat lamps for winter to keep chickens safe from the weather. She also suggested to make sure to add plenty of hay when there’s a freeze forecasted. The coop should have a dirt floor, and scraps of feedbags can be slid under the nests and thrown away periodically to make cleaning up easier. Robin typically cleans the coop every few months, just to keep the smell from getting too bad.
“I don’t have a completely enclosed coop like most people do,” she said.
Instead, she provides plenty of shade and generally doesn’t have any problems with keeping the chickens in the coop.
“They’re only in there to lay an egg and sleep for the most part,” she said. “They’re probably outside right now, trying to get bugs out of the ground.”
All in all, Robin has proved herself an egg-spert at hobbyist chicken farming, and is hopeful her tips and wisdom help others.

For the past four years, Brady and Dawn Stanley, of Trinity Ranch, have grown some gorgeous green delights that have supplied local schools, restaurants and other organizations. As the owners and operators of the ranch, they use hydroponic techniques to grow a variety of vegetables in their greenhouse.
“We supply Seguin ISD, Navarro ISD, and now Smithville ISD,” Brady said. They even supplied Seguin schools with lettuce for mobile meals during COVID lockdowns.

The Stanleys, who run a 50,000-chicken ranch, are no strangers to hard work. It’s a trait they’ve passed on to their children, who have helped establish and build this one-of-a-kind thriving ranch.
“Although you can’t technically call hydroponics organic due to the specific manner in which it is grown, I really love the challenge,” Dawn said. “I’m really into everything we do. We do it naturally and eat what we grow. Although you call hydroponics organic because of the way it’s grown, but we grow it all organically, and that’s just important to me.”.
The hydroponic method involves growing plants without the use of soil. Specifically, this is achieved through the suspension of the plant roots in long troughs of nutrient-rich water in a greenhouse environment. The Stanleys are able to produce more favorable conditions for the plants, as well as their ranch, using the hydroponic method instead of using soil outside in the elements.
Since the plants have constant water access in the greenhouse, there are no dry spells or droughts to slow down growth. The plants also get the exact amount of water they need, and flooding is never an issue. Lighting, oxygen levels and temperature in the greenhouse are all maintained at ideal levels so that ultimately, the plants grow faster and become more lush from seed to harvesting in about six weeks. As a bonus, the conditions also eliminate most pests and vermin, which ensures the health of the plants.
“This is all homemade, but you can go online and buy small kits. It’s very easy, especially on a small scale” Brady said.
The pair are considering holding weekend seminars after numerous intrigued people and groups have approached them with interest in building either their own hydroponic garden or perfecting their already established hydroponic gardens.
The above-and-beyond efforts of the Stanleys are obvious as one enters either of their two large greenhouses. The solid blanket of jade and emerald plants suspended waist high in the

greenhouse is so picturesque that it’s hard to believe your eyes. The vegetables are so painstakingly cared for that they look more like living art than something at a salad bar.
So far, the Stanleys primarily grow lettuce, but they also have plenty of spinach, cucumber and arugula. Trinity Ranch has grown and supplied residents with fresh, organic greens for about five years, and is currently in the planning stages of building one or two more greenhouses. With room to grow more plants, they have the opportunity to supply more nutritious, organic vegetables.
“We would love to have one greenhouse dedicated to food banks,” Brady said.
The future of Trinity Ranch is looking bright as they move into the next phases of their operations, on top of more greenhouses equipped with their unique hydroponic setups. They plan to hire help to improve and upgrade their ranch. The only thing Dawn and Brady didn’t need hydroponics to grow is their reputation and quality. With two pairs of green thumbs and 1,000 gallons of clear water, I doubt there is a plant alive that wouldn’t thrive in their care.

For the love of the HORSE and the love of seeing what IT can do

At Keeton Race Horses, owners Cindi and Toby Keeton train professional race horses year round here in Seguin. Cindi and Toby first met at a horse race in 2009, where he was working with a horse he had trained. The two were introduced by mutual friends, began dating, eventually married and now both train horses fulltime.
Toby had trained horses all his life when he met Seguin native Cindi. Their chemistry and connection over their shared love for horses was instant.
“I have been around horses my whole life, not necessarily race horses, but I have always worked with horses,” Cindi said.
Now, 14 years later, the pair has created a very successful horse training business where they work with professional race horses to build them into champions from start to finish.
From the Sam Houston Race Park to Retama Park located in Selma, the Keetons have seen gold and glory across the country.
“We work with quarter horses, which run shorter distances than a thoroughbred,” Cindi said.
Quarter horses are known for their power and stamina, which make them perfect for sprinting short distances.
“Basically, all our clientele are people who do racing as more of a hobby,” Cindi said. “We do have a few

people who own stud horses, breed their own horses, and make somewhat of a living from racing, but it is more a hobby to them than it is to make money.”
Just like the Keetons, most of their clientele want to own a racehorse not for the money, but for the love of the animal and the love of seeing what the horse can do when properly trained. There are some benefits to having a horse win, though, for all involved from trainer and jockey to owner and those who bet on them.
“We had a very good year last year. Our horses ran out at about $1.8 million in winnings and we got about 20 winnings,” Cindi said.
The Keetons train year round and love watching a horse progress from a yearling to a fully-trained professional racehorse.
“We start running horses at 2 years old,” she said. “We have to keep them in shape year-round to get their energy up. It is a snap and quick race, it is not the Kentucky Derby, they are not going very far.”
It takes an extreme amount of determination and grit from both trainer and horse to win a race. Just like an athlete, there are many factors that play into a win such as their diet, training regime and rest.
“From the time the horses eat at 5 a.m. to when they eat dinner in the evening, they are training or having something done to them for training,” Cindi said.
On the Keetons’ part, they have to be prepared for anything and make a special bond with their horses much like a coach and a player have on a field. They travel most of the racing season with their horses and enjoy the thrill of every race.
“We go to all the races with our horses from Oklahoma City to Houston and further,” Cindi said.
The Keetons said they don’t do much betting on the races themselves most likely because they love their business so much they don’t need winnings to know that their horses are some of the best around.

A How-to on a Kentucky Derby Classic

There are just a few things that I think of when the Kentucky Derby comes around: horses, mint juleps and, of course, idyllic fashion topped off with fancy hats. These fantastic articles of clothing are often reserved for the grandest of parties and come with the notion that they have to be expensive. I’m here to tell you that does not have to be the case.
Whether its a day at the races or a party with some friends sipping bubbly, a hat can complete any ensemble. Especially if it’s one made at home with materials found on hand.
So, in the spirit of spring, here’s a step-by-step guide on how to construct an elegant fascinator. Give this a try and land yourself in the winner’s circle.
The first step is to collect the tools you’ll need to construct your hat. Here I have a hot glue gun for the adhesive, a 3-ounce tooling leather as the base, scrap upholstery leather for the coating, floral foam or Styrofoam to position the decorations, wire for the brim, feathers, sundry extras for filling the gaps, scissors, wire cutters and a headband to affix to the hat for wear.

- Instructions -
1. Start off with making a simple pattern. I used a classic fascinator teardrop shape. Cut the tooling leather as a stiff base. (Cardboard can be substituted for this) Cut a pair of slits big enough to slip the headband into. Cut the upholstery leather to the size of the base plus an extra ¾ inch seam allowance. (Fabric of any kind could be substituted for this.) Cut the seam allowance around the shape in ½ inch increments to allow for gentle curves.
2. With the glue gun, attach the base to the upholstery leather. Work the wire around the base shape and glue in place. Once you’ve done this, work around the shape and fold the upholstery leather edges down and glue in place.
3. Once the edges are all in place, cut a second base shape in upholstery leather. Slip the headband into the cut slits and position. I like a jaunty tilt to one side or the other. With a position determined, glue the upholstery shape to the underside, and hide all the folded over edges for a smooth finish. Be liberal! Don’t be afraid of extra hot glue.
4. Once the base is complete. Add floral or Styrofoam to the top, attaching it with hot glue. I chose to
place mine in the middle back, as I want my feathers to arch back from there. Once the foam is attached, begin laying feathers. Start from the back with the longest feathers, pressing them into the foam a good ¼ to ½ inch. If it seems a little shaky, add hot glue. Note: As you lay feathers, try to start flat and angle up toward upright as you go.
5. Continue laying as many feathers as you like. Let their natural curve and flow tell you where they want to go. The closer to the front you get, stand them more upright, and don’t be afraid to trim the bottoms of the feathers to length.
6. Once you reach the front, place smaller feathers, and use a bit of glue to hold them in place if needed. If there are gaps, use the extra decorations you’ve collected to hide any visible Styrofoam. Here I used a string of plastic pearls to fill in, adding a classy look to my feather headpiece. Curl the wire to a more appropriate head shape. Usually just a little will go a long way. Place your headband on your head and gently press. This will help it fit you to a “T.”
7. Look fancy. Pull out your Sunday best and wear your new creation with pride. You did it!

Is it just me or is this year going by extremely fast? It seems like only a week ago we were bringing in the new year, and now we’re already bringing in all the fresh flavors of spring!
It’s that wonderful time of year when we finally get out of the house and start seeing family and friends again. The weather is warming up and the flowers are in bloom. For me, it’s a time for picnics and having fun outside. That’s what inspired this month’s article.
Every year for Easter my family likes to get together and have a traditional southern Sunday meal of fried chicken. It may seem simple (and it is), but it screams Sunday lunch and, together with potato salad, makes an amazing picnic food!
This time, I thought I’d pair the recipe with a nice, refreshing drink to bring it all together. A nice mint julep brightens the flavors and the mood, plus the fresh mint cleanses the palate too!

Fried Chicken
made-from-scratch Southern Style
- Ingredients -
Fried chicken-
3 pounds of chicken
A neutral frying oil (I prefer canola)
Brine-
1 quart of buttermilk
1 tablespoon of mustard powder
1 tablespoon of chili powder
1 tablespoon of salt
1 tablespoon of garlic powder
2 tablespoons of hot sauce
Coating-
4 cups of flour
2 tablespoons of cornstarch
1 tablespoon of salt
1 tablespoon paprika
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon chili powder
1 tablespoon black pepper
1 tablespoon mustard powder
1 teaspoon celery salt
- Instructions -
Brine the chicken
The most important step for any fried chicken recipe is the buttermilk brine. Not only does it allow for the chicken to stay extremely juicy, but it also allows a ton of flavor to penetrate deep into the chicken. Mix all of the seasonings above together in a gallon freezer bag, then place the chicken
inside. Let that marinade for a minimum of 6 hours, but I recommend overnight. Once done, move on to the breading and frying.
Cooking the chicken
There are two schools of thought when it comes to breading meat. Most will suggest an egg wash, but the best thing about buttermilk chicken is that the marinade itself acts as the binder. So, once the chicken is all done in the marinade you can transfer right to the seasoned flour and into the hot canola oil. Cook about 8-10 minutes depending on how the cut, then drain on a paper towel. You’ve now got the juiciest fried chicken ever!

Chocolate Mint Julep
Cool as Kentucky, Fresh as Spring
- Ingredients -
5-6 mint leaves
2 oz good bourbon
1 teaspoon powdered sugar
2 oz carbonated water
1 splash of chocolate bitters
Crushed ice
- Instructions -
In a tall glass muddle 4 leaves of mint and cover with crushed ice.
In a cocktail shaker mix bourbon, bitters, remaining mint and powdered sugar. Add ice cubes and shake violently. Strain into a glass, top off with carbonated water and enjoy!
The Mint Julep has been the traditional beverage of Churchill Downs and the Kentucky Derby for nearly a century.
Each year, almost 120,000 Mint Juleps are served over the two-day period of Kentucky Oaks and Kentucky Derby weekend at Churchill Downs Racetrack. That’s a feat that requires more than 10,000 bottles of Old Forester Mint Julep Ready-to-Serve Cocktail, 1,000 pounds of freshly harvested mint and 60,000 pounds of ice.
