It fills my heart to dive into a matter that’s near and dear to me: our local seniors and their health and well-being. This topic means a lot to me because my grandparents are such a big part of my daily life.

My grandparents aren’t just family — they’re part of my daily motivation. Whether it’s giving guidance at doctors' appointments or navigating the latest tech hurdles together, there's always something to keep us busy. Sure, we sometimes struggle to understand each other, but having them around is totally worth the occasional head-scratching moment!

One of the major joys of having my grandparents in my life is witnessing how my teenagers interact and learn so much from them. It's heartwarming to see the bond between generations grow stronger as they share stories, laughter and wisdom.

In this issue, you’ll find stories of local seniors who are making a real impact on our community. They’re the ones volunteering their time and wisdom, and showing us all how to keep going with a smile.

I have to remind myself often to appreciate the time I have with my elders while I have them. These moments are precious, and I hope the stories in this issue inspire you to cherish and celebrate the seniors in your own life.

For all of the years Ed Engelhardt has lived in Seguin, he has served the community in one capacity or another.

As the voice on the radio or flipping flapjacks for a fundraiser, Engelhardt has been there with a smile on his face and love for Seguin in his heart.

"We just enjoyed living here," Engelhardt said. "Most people from a bigger city miss the bright lights and more action, but I didn't. We have a place out in the county. We had two kids that grew up here from elementary school through high school all here. I made a lot of friends here and I just enjoy living here."

Originally from San Antonio, Engelhardt made the journey to Seguin

through his work in broadcast media.

He started working for a television station in El Paso after he went to San Antonio Junior College. He worked at KTSM for two years until Uncle Sam called, and Engelhardt joined the Army.

"I was at Fort Bliss and the rumor was we were going to Germany," he said. "I thought, ‘let's go.' The following day they announce the following were going to Korea and they called my name."

Engelhardt, along with hundreds of other soldiers, sailed on a cruise ship converted to troop ship to the other side of the globe to Korea.

"It just so happened that we were at an Air Force base and there was a

radio station there," he said. "This was in the mid-50s. There was no television, one newspaper that came out once a week called the 'Wing Spread.' The only thing these guys had, and some were on 24-hour duty, the only thing they had was us, the radio station, to listen to."

When he got there, a commanding officer learned Engelhardt had radio experience and tried to assign him to fixing radio, which he contested.

"I said, ‘I don't repair them, I talk on them,'" he recalled. Seeing the soldier was from Texas, the officer assigned him to take over the daily Western Show for the Armed Forces radio, AFKN (American Forces Korean Network).

Engelhardt said he was beyond thrilled to do the thing he loved and share it with his fellow troops.

"At the time it was horizontal programing," he said. "We had troops from all over the country and they had different tastes in music. So we tried to please everybody. I did two hours of country western music. The guy next to me did two hours of rock and roll, the one next to him did two hours of classic."

After he returned stateside, Engelhardt worked at KRIS, a station in Corpus Christi, for about a year, until it was sold. In the process of leaving, he was given the inside track on a potential job closer to home.

"A co-worker tells me about Stan McKenzie here in Seguin, who was looking for help on his radio station," he said. "He was going somewhere else, but there was an opening here. I said I'd check it out and that's how I got here."

From 1957 until his retirement, Engelhardt enjoyed his 55 years on the air. He even turned down a job offer in San Antonio to stay in the small town he fell in love with.

"I had one opportunity to leave and I turned it down," he said. "I liked where I was at, so I decided to stay."

During that time, it wasn't just his work on the air that made him wellknown in the community.

He helped organize a pair of softball leagues throughout the years. First was the church league, which was a hit for about three years, then he struck a home run with an over-40 league a few years after. He also served on the Seguin Area Chamber of Commerce board of directors.

He joined the Kiwanis Club of Seguin under the urging of McKenzie and has been a member since, helping flip flapjacks and sausage at the group's annual fundraiser.

"I've been with the Kiwanis for 65 years," he said. "I just enjoy being with the group. We have our pancake fundraiser once a year and the money goes to sponsorships and scholarship. It's all youth oriented."

Engelhardt and longtime friend and Kiwanis Henry Hill are among the longest serving Kiwanis Club members.

"Henry has been in there about as long as I have. We're the grandpas of the Kiwanis Club," Engelhardt said.

Senior pets find Sanctuary

Nonprofit Provides Loving Homes for Elderly Pets of Aging Owners

Seguin native Carole Harrison had a sweet dream she turned into reality. Harrison founded Sweet Dreams Senior Pet Sanctuary, a nonprofit organization that provides a safe and loving home to senior pets whose elderly owners are no longer able to care for them.

The sanctuary sits on a sprawling 10-acre patch of land in the southeast portion of Guadalupe County that she purchased in January.

"This has been a dream of mine for a very long time," Harrison said. "I always said that this was what I was going to do when I retire."

Harrison has experience working with the elderly as a physical therapist and, since 2011, as the director of the Inpatient Rehabilitation Unit (IPRU) at Guadalupe Regional Medical Center.

"As a PT, my favorite patients were geriatric patients," Harrison said. "They can be going through a whole lot of life changes due to a medical emergency or sometimes even an elective surgery."

Too many times, Harrison saw patients who could no longer live on their own and give their pets the lives they wanted. They were known to fret over what would happen to their valued pets next.

"In some cases, they may have a senior pet that nobody wants, and their fate is to end up in a shelter, and my patient ends up emotionally devastated," she said.

When her 60th birthday came around, Harrison made the decision to shoot for her dream and asked some longtime friends to join in her journey.

"I reached out to some friends and told them this is what I wanted to do and asked them if they would come along," she said. "We took a workshop in Tennessee at The Old Friends Senior Dog Sanctuary and then filed for our 501C."

Currently, Sweet Dreams Senior Pet Sanctuary houses nine dogs and two cats. Among them are Pearl, a beautiful 14-year-old beagle, and Canelo, a 19-yearold chiweenie. There is Buddy, a 12-yearold cocker spaniel mix, and Dottie, a 9-year-old Australian cattle dog. All the animals are remarkably well behaved and get along great as they share the freedom to roam the house and property.

"Four of these dogs recently came to us from a gentleman in Kingsbury who had to give up his home because he was moving into an assisted living facility," Harrison said. "He had checked multiple organizations and nobody could help him. He reached a point where he was

considering having them all euthanized rather than abandoning them in a shelter."

Not wanting to see that happen, his daughter found Harrison's group and set up a meeting between them and her father.

"We went to meet Harry. He was such a sweet, old gentleman and he'd had these dogs for years," she said. "So, he brought them out here for a visit just to see how they would do."

Making sure Harrison was a good fit for Harry's pets was necessary for his and their well-being. Eventually, the time came. The assisted living facility was ready for him and Harrison was ready for his pack to join hers.

"Buddy, Daisy, Annie and Roger were all his and now they have a home with us," she said.

Another newer pup to the pack is Dottie, whose owner died.

While canines make a majority of the pets currently housed at Sweet Dreams Sanctuary, there is room for more, Harrison said.

"It is called senior pets, so I am really hoping for an old donkey," she said. "Two, preferably, because I think they do better in pairs."

As a 501c3, Sweet Dreams Senior Pet Sanctuary receives funding through grants, donations and assistance from volunteers. Its mission statement is very specific as to the people and pets the organization can serve.

"Our mission is very focused on elderly humans that can no longer care for their elderly pets," Harrison said. "We've been approached by multiple people who are inconvenienced by an old dog. We must have boundaries because this was set up to help elderly people and their elderly pets."

Older pets have slimmer chances of finding new homes. Harrison saw this as her opportunity to combine the community need and her personal passion, which resulted in Sweet Dreams Senior Pet Sanctuary.

With help from community members with big hearts and open doors, Harrison hopes to expand the services she offers.

"The big thing that we are trying to

do is to have Guardian Angels," she said. "These are people who serve as permanent fosters. After we vet them, one of the animals may go live with them forever, but they remain a Sweet Dreams Senior Pet Sanctuary (resident). We still manage their vet bills, their heartworm meds, anything they might need. It is just

Roger and Daisy are examples of the different kinds of pets Sweet Dreams Senior Pet Sanctuary handles. Roger, a good-looking tan and white mixed breed, is one of the younger seniors in residence. At just under 9 years old, Roger has a decent chance of finding a forever home

outside the sanctuary. Daisy, on the other paw, is a gorgeous black and white cocker spaniel mix. But Daisy is an older dog that is blind in both eyes.

"Daisy is 13 1/2," Harrison said. "She is not going anywhere. The sanctuary is meant for her. Another dog, Canelo, is 19. He will be staying here forever."

Other pups like Dottie, a 12-yearold healer, would do good in environments more conducive to their nature, Harrison said.

"If the dog still has a lot of spark and spunk in them, they have a chance to do better outside in a forever home," she said. "Dottie is… like a 12-year-old living in a nursing home. Most of the pets coming to Sweet Dreams Senior Pet Sanctuary come from Guadalupe County or surrounding areas. A team of regular volunteers provides support as Harrison remains employed in her full-time job. The generosity both in time and funding that her Seguin neighbors and fellow residents have provided continues to impress Harrison.

"All of our donations go directly to the animals," she said. "Nobody who volunteers here receives an income. Volunteers are the reason we exist. We recently had 28 people come out here to help with things like raking leaves and cleaning up junk, all sorts of things. Prior to that day, I had never met 20 of the 28 volunteers that came here to help. The community has been amazing."

Since Harrison purchased the property in January, the organization has expanded exponentially. She has big goals for the sanctuary in the future.

"My hope is that within the next five years, we can develop more of the property into living space," she said. "We want the animals living here in a sanctuary setting, not in cages or in pens. As we expand, we hope to build small housing units for as many as eight dogs with a kitchenette and a living area where people can come in and recreate a home setting for the animals."

One specific pose Read suggested focuses on hip opening and flexibility. She also said many resources and videos can be found online for both mat and chair yoga.

"I would recommend going into what's called an easy pose and this could also be done in a chair," Read said. "If in a chair, you raise your arms and then drop one of them to the side, hanging onto the chair and then lifting the opposite arm overhead and gently leaning over."

Yoga, with its multifaceted approach to fitness, offers a sanctuary for individuals to reconnect with their bodies and minds regardless of age or fitness level. For seniors, in particular, yoga becomes a gentle yet powerful tool for promoting mobility, stability, and overall vitality.

A Nutritious Pancake Recipe for a Wholesome Breakfast

hat's your favorite breakfast food? Is it something savory with lots of protein to get you through the day? What about something sweet and over the top like French toast? Or are you the kind of person who is completely content just enjoying their bowl of cereal day in and day out? Personally, I like a breakfast that takes me back. Back to the days of waking up on Sunday morning with my mom making pancakes while my dad makes the coffee. Back to me being so excited for those pancakes every week that I'd look forward to it from the time I got off of school on Friday until we made them Sunday morning. There was just something magical about mom's pancakes. Honestly, it was probably the

insane amount of butter in the batter and crazy amounts of sugar-laden syrup spread on top, but for 12-year-old me it was heaven.

As I've gotten older, I realize that I just can't eat the junk I used to. Gone are the days of crazy amounts of sugar first thing in the morning, but I still wanted to have that same feeling of waking up excited like I did when I was a kid. More importantly, I wanted to make something my kids could get excited for but that wouldn't be as bad for them. The result was these whole-grain, gluten-free banana pancakes that are to die for. They come out fluffy, slightly sweet, and delicious. Top them off with the amazing blackberry reduction included here and you'll wish you could have these every day!

- Ingredients -

Pancakes-

½ cup buckwheat flour

½ cup sorghum flour

4 over ripe bananas

2 eggs

1 ½ cups of cold milk

¼ cup neutral oil

1tbsp Xanthan gum

1 tsp baking powder

Blackberry reduction-

6 oz fresh blackberries

Juice from one lemon

2 tbsp honey

Lemon zest from one lemon

Fresh mint

- Directions -

In a blender mix all of the ingredients for the pancakes, and blend on high for at least 2 minutes. You may have to scrape the sides with a silicone spatula once or twice. It should end up fairly thick and extremely smooth.

Lightly grease a skillet (I always recommend cast iron) with a small amount of neutral oil and heat to medium. Once heated, use a scoop or ladle to portion out the pancakes onto the skillet. Unlike normal pancakes, these do not bubble when ready to flip, so it's best to try to flip when the bottom is set (about 2 minutes per side)

In a separate saucepan, mix the blackberries, honey, and lemon juice and heat on medium-low. As the berries warm up, they will become softer. Slightly mash them with a silicone spatula as you stir, and it will end up great. If you absolutely have to have a super smooth texture here, an immersion blender works great after you have it well mixed and heated.

All that is left is to plate up, top with lemon zest, mint to taste and enjoy. The mint may seem a little weird, but I promise you'll thank me.

These are super simple, easy, and tasty. While you may have to buy some flour that you're not particularly used to, they are all available at the local grocery. These pancakes are a great way to add fiber to your diet, enjoy more whole grains and fruit, and honestly just start the day off right. I make these for my kids, parents, and everything in between and I'm sure after you try them for the first time you will too.
