We’ve reach out first anniversary!

Cuando tengan ustedes la revista entre sus manos, hará un año de la aparición del primer número de Selectus Wines. Hemos hecho un gran esfuerzo para llegar hasta aquí, en lo personal y en lo financiero. Estamos muy contentos con nuestros colaboradores, con el equipo de fotografía, con el comité de cata, con quien está en la retaguardia y da imagen a la revista, la web, … con nuestros lectores, y con los establecimientos que nos dan acogida (hoteles, restaurantes, clubs de golf, …).

Entre todos estamos haciendo que Selectus Wines sea una revista exclusiva, tanto a nivel de contenidos como del público a la que va dirigida.

Desde esta publicación vamos a seguir manteniendo la línea que nos hemos marcado y que nos parece la idónea para el tipo de productos de los que hablamos y los lugares en los que está distribuida . Esperamos poder hacer un largo recorrido, ya que pensamos que el sector demandaba una publicación de este estilo: reportajes de calidad, colaboradores de alto nivel, y un tipo de producto que a todos nos gustaría poder adquirir y degustar en algún momento de nuestras vidas. ¿Quién no se ha comprado alguna vez una revista de coches y cuando ha llegado a la sección de los deportivos de lujo no ha soñado con conducir alguno de ellos?

Esperamos que sigan manteniendo la confianza en esta modesta publicación que acaba de cumplir su primer año de vida y que podamos celebrar juntos muchos más aniversarios. Que sigan disfrutando tanto como nosotros.

When you are flicking through this magazine, it will be one year since the publication of the first issue of Selectus Wines. It’s been a long, hard slog, both personally and financially. We have a great group of collaborators - the photographic team and the tasting panel who bring up the rear and to whom the magazine owes its image - and a great website. All our readers and the venues (hotels, restaurants, golf clubs, etc.) which hosted our events have been fantastic. Together we are turning Selectus Wines into an exclusive magazine, both in terms of content and the readership to which it is addressed.

In this publication we will continue to follow the course we have set and that we consider to be right for the type product we cover and the places where it is distributed. We hope the journey will be a long one. We believe that the industry was calling out for this style of publication: quality reports, top collaborators, and a type of product that we would all like to buy and enjoy at some point in our lives. Who hasn't bought a car magazine and, when reaching the luxury sports car pages, dreamed of driving one?

We hope that you continue to give our modest, one year old publication, your vote of confidence and that we can celebrate many more anniversaries together.

Dominio de Pingus El arte de la tierra y de la ciencia The art of land and science PAZ IVISON El enfant terrible danés, rubio como la cerveza, desembarcó en la Ribera del Duero a principios de los años 90 y con él llegó el escándalo, en el mejor sentido de la palabra. En una vieja bodega de Quintanilla de Onésimo comenzó su exitosa andadura. Hoy casi 20 años después, sigue en la vieja bodega, ampliada cuidadosamente y convertida en un sofisticado laboratorio que comparte espacio con viejos calados , de los más antiguos de la zona. Peter Sisseck triunfa en todo lo que se propone porque es un obseso de la calidad y de la investigación. Nada se debe al azar ni a la suerte. El ingeniero agronómo y enólogo danés sabe muy bien lo que quiere. Estamos en Dominio de Pingus, una bodega que es un auténtico referente internacional.

The Danish enfant terrible, blonde like the beer, touched down in the Ribera del Duero at the beginning of the 1990s and caused a commotion, in the best sense of the word.

His successful career took off in an old Quintanilla de Onésimo bodega. Today, almost 20 years later, he is still there in the old bodega, carefully extended and converted into a sophisticated laboratory that shares space with ancient caves, some of the oldest in the region. Peter Sisseck succeeds in all he sets out to do because he is extremely particular about quality and research.

Nothing is due to chance or luck. The Danish agricultural engineer and oenologist knows very well what he wants. We are at Dominio de Pingus, a winery that is a genuine international benchmark.

Recuerdo que en el año 2002, capicúa y poco interesante enológicamente hablando, me acerqué a Quintanilla de Onésimo a ver a Peter Sissek en su pequeña bodega.

Una vieja nave donde no había ni depósitos ni prensas, ni prácticamente nada más que barricas alineadas sobre un hermoso y antiguo pavimento de piedra. Me comentaba entonces que tenía un sueño, comprar la vieja bodega contigua, pero que no lo conseguía. No querían vendérsela. Hace unos días, por tanto más de diez años después, la vieja bodega sigue, sin depósitos

I recall that in 2002, palindromic and quite uninteresting oenologically speaking, I went over to Quintanilla de Onésimo to see Peter Sisseck in his little bodega. An old warehouse where there were neither tanks nor presses, and practically nothing else but barrels lined up on a lovely old stone floor. He told me then that he dreamed of buying the old bodega next door, but he couldn’t. They didn’t want to sell it to him. A few days ago, therefore more than ten years later, the old bodega carries on, without tanks or presses, just as before, but he has realised his dream of expansion –9

Ha conseguido unir ambos edificios de una espléndida

manera. Una zona dedicada a vinificación, abajo los viejos calados remozados para la crianza de los vinos en su segundo año, y arriba despacho, oficina y un laboratorio espectacular en sus contenidos, pero que como todo lo que rodea a Peter, se muestra sencillo y sin estridencias.

Ha convertido una vieja bodega de los años 30 del siglo 19 -estamos hablando de mil ochocientos treinta y tantos- en la sede social de uno de los diez vinos más míticos del mundo, y sin lugar a dudas, y teniendo en cuenta su juventud, la primera cosecha es de 1995, en el vino nuevo más buscado del mundo. Prácticamente todos sus compañeros en este ranking de honor son marcas centenarias. Pingus es la única referencia joven, la única que nació casi en los albores del siglo XXI.

Buscando viñedo desesperadamente

Cuando Peter llegó a Valladolid en 1990, para hacerse cargo de la enología de la nueva bodega Hacienda Monasterio, un ambicioso proyecto en el que su tío

the wines in their second year, and upstairs, a store, office and spectacularly equipped laboratory, but as with everything to do with Peter, it comes over as uncomplicated and unpretentious.

He has converted an old bodega from the thirties back in the 19th Century – we’re referring to the 1830s or thereabouts - into the head office of one of the ten most mythical wines in the world, and without a shadow of a doubt, considering its youth, with 1995 being the first vintage, the most sought after new wine in the world.

Practically all its companions in this honour ranking are century-old names. Pingus is the only young reference, the only one that came into being almost with the dawning of the 21st Century.

Desperately seeking vineyards

When Peter arrived in Valladolid in 1990, to take charge of winemaking at the new Hacienda Monasterio winery, an ambitious project in which his uncle, Peter Vinding and Danish like himself, was directly involved, any pre– 11

Tras años de trabajo en Burdeos y en California, completamente inmerso en un mundo de nuevos conceptos enológicos, que realmente por ser tan nuevos, resultaban de lo más tradicional, se dio cuenta del potencial de la zona.

Cambió lo que pudo los esquemas de Hacienda Monasterio elaborando los fastuosos Selección Especial, era su trabajo y para lo que había llegado a estas tierras hermosas y duras, menos estéticas, más rústicas que los viñedos bordeleses a los que estaba acostumbrado, y comenzó a hilvanar un sueño. Su propia bodega.

Lo hizo realidad enseguida y empezó la casa por los cimientos. Compró unas cuatro hectáreas y media a viejos propietarios en la zona de La Horra, la ribera del Duero burgalesa. Uvas que vinificó en la primitiva bodega de Quintanilla, entonces auténtico garaje. De allí salieron los Pingus y Flor de Pingus 95. Las uvas de éste último provienen de otras hectáreas diferentes a las de Pingus, también excelentes, pero no son las mismas. Peter no mezcla, ni ideas.

En la nueva bodega de vinificación, los depósitos siempre de pequeño volumen y de acero inoxidable, y los de roble francés abiertos, se miran cara a cara. Están los unos frente a los otros. Los primeros para vinificar Flor de Pingus, los segundos para Pingus. Hoy están trasegando la Flor de Pingus y en la pequeña bodega, que ya no es un garaje, hay movimiento. No queremos estorbar. Llega Didier Belondrade, otro extranjero, esta vez francés, amigo de Peter y afincado en tierras vallisoletanas desde hace algunos años. Didier se dedica al blanco y su rueda Belondrade es otro de los grandes de la zona interpretado en blanco verdejo. Nos vamos a probar los Pingus 2012 que están en sus barricas alineadas perfectamente sobre el suelo y sin que el peso de ninguna otra colega les moleste. Sólo una, como cuando llegué aquí en el 2002. Está en barrica nueva desde el mes pasado mes de noviembre y es pura fruta. “Una añada muy buena, una gran sorpresa...

Mucha sequía, mucho sol y teníamos mucho miedo...

Este año ha habido una diferencia enorme entre los viñedos que se cultivan a la manera tradicional de los que están cultivados a la manera orgánica. Los primeros han sufrido mucho el verano y los segundos no se ha notado la sequía para nada” comenta Peter.

Más madera y menos madera

Parecería un acertijo pero es simplemente un empeño y una convicción. Peter está firmemente convencido de que la madera es un bien a tener en cuenta y que debe usarse con mucha, mucha moderación en los vinos. De hecho nos cuenta que en el 2006 bajaron la cantidad de barrica nueva para el Flor de Pingus, porque con todos los esfuerzos que estaban haciendo en la viticultura, la madera no les ayudaba nada... “Para

Un tonel barrica ovalado, a la manera de Alsacia, de roble francés de Taransaud… “siempre trabajamos con ellos” que en un futuro muy próximo sustituirán a las barricas tradicionales bordelesas de 225 litros “Llevamos tres años probando ovales de madera y la idea es que en

mediately made it come true and began by laying some foundations. He bought about four and a half hectares from old landowners in the La Horra area, on the banks of the Duero in Burgos province. Grapes were vinified in the primitive Quintanilla winery, a real garage then.

From there came forth Pingus and Flor de Pingus 95.

The latter’s grapes originated from other hectares, distinct from the Pingus ones, also excellent, but not the same.

In the new vinification cellar, the tanks, low volume always and stainless steel, and the open ones made of French oak, look at one another. They sit facing each other. The first ones are for vinifying the Flor de Pingus, the second for the Pingus. Today, the Flor de Pingus is being racked and in this small winery, which is no longer a garage, there is a lot going on. We don’t want to get in the way.

Didier Belondrade arrives, another foreigner and French this time, a friend of Peter who settled in the Valladolid countryside some years ago. Didier has concentrated on white and his Belondrade Rueda is another of the local greats, a rendition of the white Verdejo. We are going to try the 2012 Pingus wines which are in their barrels perfectly lined up on the floor and without the weight of another to bother them. Singly, just as when I came here in 2002. The wine has been in new oak since last November and is pure fruit. “A very good vintage, a great surprise... A very bad drought, very sunny and we were very worried... This year there has been a huge difference between the vineyards that are cultivated traditionally and those which are being cultivated organically. The first suffered a lot in the summer and the others weren’t affected by the drought at all” remarks Peter.

More wood and less wood

do. Contemplamos el estreno del primer fudre de la casa Dominio de Pingus. Me cuenta Peter que en estos calados antiguos encontró los soportes que mantenían grandes toneles de madera de entonces… Dominio de Pingus convertirá sus barricas bordelesas en fudres, más o menos, 20, de los que irán adquiriendo tres o cuatro al año.

Y la modernidad está arriba. Un laboratorio de campanillas… “Hemos invertido mucho dinero en el laboratorio. Este es el primer laboratorio privado certificado de bodega… Certificado para los papeles de

Peter is firmly convinced that wood is an asset to bear in mind and should be used with a considerable amount of moderation in wine. In fact, he told us that in 2006 they reduced the number of new barrels for Flor de Pingus, because with all the effort they were putting into the viticulture, the wood was of no help at all to them... “For Flor de Pingus, right now, we need 40% new barrels and for Pingus 2012 this is the first year of having 10% new and the rest 12 to 18 months old…” And he gave us an important piece of news that concerned what we could see in the renovated old cellars lying beneath our feet and which we made our way over to. An oval cask, typically used in Alsace, made of French Taransaud oak …“we always work with them”, which in the very near future they will use to replace the traditional 225 litre Bordeaux barrels. “We’ve been trying out wooden oval ones for three years and the idea is that over the next five years we shall move away from barrels for Flor de Pingus. Introducing these tanks has to be done very slowly. These tanks can easily last for 30 or 40 years.”

To Peter, making a barrel from a very old tree in order to use it for only 12 months, seems like utter nonsense ecologically, and even more so if in some cases – not in his of course – the results are not brilliant. We took a good look at the first Dominio de Pingus cask to make its debut. Peter explained to me that in these ancient caves he found the supports that used to hold the huge wooden casks of former days... Dominio de Pingus will exchange – 15

exportación y tal… tenemos 3 personas que trabajan aquí sólo para mirar los bichos del vino… Estamos intentando hacer vinificaciones sin azufre, la tempranillo es una uva muy reductora y estamos con las bioaminas… Se empieza a hablar de que los vinos no podrán contener bioaminas, y yo quiero controlar mis bichos, que son mis bichos, por tanto tenemos que investigar mucho. Estamos intentando tener el nivel de azufre más bajo posible. Estamos trabajando con la Universidad de Valencia. Tenemos máquinas que investigan el ADN del vino y en dos horas tenemos una respuesta…

Buscamos maneras de no filtrar y tal pero sabiendo lo que estamos haciendo… La naturaleza si va mal, hay que controlarla”.

They’re starting to say that wines shouldn’t contain bioamines, and I want to keep my bugs under control, as they are my bugs, so we have to do plenty of research. We’re trying to keep the sulphur level as low as possible. We’re working with the University of Valencia. We have machines that check out the wine’s DNA and in two hours we get an answer... We’re looking for ways of avoiding filtration and such like, but understanding what we’re doing... If nature goes wrong, it has to be kept under control”.

Desde la terraza del Hotel W de Barcelona se puede casi acariciar el mar, igual de cercano se muestra Sergi Figueras que acaba de ganar el concurso oficial de mejor sumiller de España con el que dice haberse sacado una espina que tenia clavada desde la anterior edición.

Sumiller del restaurante Bravo 24 desde hace dos años y medio, estuvo alejado del mundo del vino seis años y no duda en agradecer el voto de confianza que Antonio Lopo y Carles Abellán le dieron para defender la carta del restaurante. En sus días libres visita bodegas, reconoce el esfuerzo y sacrificio de la elaboración del vino y su vía de escape es el grupo de música Nuus, del que es vocalista y guitarrista.

¿Se ha presentado a otras ediciones?

En 2004 me presenté al concurso catalán, quedé segundo, y no me había vuelto a presentar hasta el año pasado.

Fue entonces cuando quedé segundo en el concurso catalán y también en el español. Me quedó una espina clavada y tenia ganas de probarme de nuevo para ver si podía ganar y lo he conseguido, tanto en el concurso de Catalunya como en el español, que se celebró nuevamente en San Sebastián. ¿Por qué presentarse a un concurso?

Fue un poco mi mujer, yo había estado desconectado del mundo del vino durante seis años y ella me propuso presentarme para ver en qué nivel me encontraba. Además, tengo que reconocer que soy un poco vago y tener una meta como el concurso me obligó a estudiar más. ¿Qué se siente al ganar un concurso de estas características?

Alegría, satisfacción y relax. La presión los 15 días anteriores es fatal, los nervios, el estudio… Además, cuando

From the terrace of the Hotel W in Barcelona you can almost touch the sea, and just as close at hand is Sergi Figueras who has recently won the official competition for Best Sommelier in Spain, which, he says, has enabled him to remove a thorn in his side that had been stuck there since the previous edition. Sommelier at the Bravo 24 Restaurant for two and a half years, he had been away from the wine world for six years and is unhesitatingly grateful for the vote of confidence he has received from Antonio Lopo and Carles Abellán to champion the restaurant's wine list. On his days off, he visits wineries, recognises the effort and sacrifice involved in winemaking, and his form of escape is the music group Nuus, as vocalist and guitarist.

Have you entered other contests?

In 2004 I entered the Catalan competition, I came second, but I'd not entered again until last year. I then came second in the Catalan competition and also in the one for Spain. It was a thorn in my side and I was keen to put myself to the test again to see if I could win and I succeeded, in both the Cataluña contest and the Spanish, which was held once again in San Sebastian.

Why go in for a competition?

It was my wife really; I'd been detached from the wine world for six years and she suggested I go in for it to see what level I was at. I also have to admit to being a bit lazy and having a goal like the competition forced me to do more studying.

How do you feel after winning a competition of this nature?

Happy, satisfied and relaxed. The pressure the fortnight before is terrible, the nerves, the studying… Also, when I took the theory I felt I'd made a mess of the exam, so then I became even more nervous. I was absolutely overjoyed, and

hice el teórico tuve la sensación que había hecho un desastre de examen, así que después me puse aún más nervioso. La alegría fue enorme y cuando ves que las personas que te han ayudado durante el proceso de preparación también están contentas, te alegra más. ¿Qué fue lo primer que hizo al ganar?

Abrazar a Pepe Roldán, presidente de la delegación de Barcelona de la Asociación Catalana de Sumilleres, que me había ayudado mucho y había estado muy pendiente y amable. ¿Cuánto tiempo estuvo preparándose?

La verdad es que la parte intensiva de más estudio fueron los días previos, pero por el resto no me he dado mucha cuenta, puesto que entre servicios ya leo habitualmente y la carta que tenemos es bastante compleja y nos hace estar actualizándonos constantemente. ¿Cómo se gestiona la presión de un concurso de estas características?

Me he sentido presionado por mi mismo, pero pensaba que si soy capaz de subir a un escenario a tocar la guitarra también podía subir al escenario del concurso. Cuando estudiaba tenía profesores muy exigentes y ya te preparan para la presión y el rigor. ¿Cuál fue el momento más complicado del concurso?

Para mi las decantaciones, puesto que el año pasado perdí por esta prueba, levanté la botella en el concurso catalán y en el de España se me rompieron dos cerillas y me entretuve demasiado limpiando las copas.

Leemos en el Diario Vasco unas declaraciones suyas donde afirma que “un sumiller no deja de ser un camarero, el que se piense que es más que un camarero se equivoca”. ¿Es esta la definición o añadimos matices?

Si Josep Roca, nuestro “ Dios”, es el primero en definirse como camarero de vinos y Antonio Lopo, mi maestro, dice que no es sumiller ¿qué puedo decir yo? Es la manera de hacer y

when you see the people who've helped you through the preparation process are happy too, you're more pleased than ever.

What was the first thing you did on winning?

I hugged Pepe Roldán, president of the Barcelona area's Catalan Association of Sommeliers, who had helped me a lot and been very attentive and kind.

How long did it take you to prepare?

To be honest, the intensive part with most studying were the days before, but as for the rest I didn't give it much consideration, since I usually read anyway between serving, and the wine list we have is fairly complex and makes us keep ourselves constantly up-to-date.

How do you manage the pressure of a competition like this?

I felt I was putting myself under pressure, but I thought that if I was capable of going up on stage to play the guitar I could also go up onto the stage at the contest. When I was studying I had very demanding teachers and they prepare you in advance for the pressure and rigour.

What was the most complicated part of the competition?

For me it was the decanting, because last year I lost because of that test, I raised the bottle in the Catalan contest and in the Spanish one two wax seals broke and I spent too long cleaning the glasses.

We read in the Diario Vasco some remarks you made where you claim that “a sommelier doesn't stop being a waiter, and anyone who considers himself more than a waiter is mistaken”. Is this definition complete or can we add touches to it?

If Josep Roca, our “God”, is the first to describe himself as a wine waiter and Antonio Lopo, my teacher, says that he isn't a sommelier then what can I say?

It's a way of behaving and thinking. In Carles Abellán’s restaurants we all have the same philosophy and nobody was surprised that I said this, as we all serve dishes here. Perhaps I would add that in my opinion a sommelier transmits what

Para mi lo básico es si un vino te gusta o no te gusta, tenemos clientes que me dicen que no saben de vino, pero yo les digo que lo principal es si les gusta o no. Yo creo que un sumiller no vende grandes vinos, te los piden. Personalmente, no soy capaz de vender grandes vinos, a mi un Ermita o un Petrus me los piden explícitamente.

Es más divertido buscar la relación calidad-precio e intentar sorprender y agradar. ¿Objetivos profesionales a corto y largo plazo?

Por ahora me quiero quedar en el Bravo 24, me han dado mucha confianza y quiero intentar devolvérsela.

What role does a sommelier have in raising wine awareness among the general public?

The fundamental thing for me is whether you like a wine or not. We have customers who tell me they know nothing about wine, but I tell them the main thing is whether they like it or not.

I believe that a sommelier doesn't sell the great wines, they are asked for. Personally, I'm not capable of selling great wines – people explicitly ask me for an Ermita or a Petrus themselves. It's more fun looking for the quality-price ratio and trying to surprise and please.

Any short or long-term professional objectives?

For the time being I want to stay at Bravo 24, as they have given me a lot of confidence and I'd like to try and repay their trust.

Nacido en Francia pero enamorado de Inglaterra, Gerard Basset fue coronado en 2010 como mejor sumiller del mundo. La sencillez y la proximidad podrían definir a este reconocido sumiller, cuya voz es siempre tomada en buena consideración. Instalado en New Forest regenta un hotel donde la comida y el vino toman un papel principal, siempre asociados al concepto de diversión, relax y disfrute, porque para Basset, la base es la emoción. Además, realiza catas alrededor del mundo, lo que le permite seguir creciendo, aprendiendo y transmitiendo el vino y su esencia.

¿Qué le hizo dedicarse al mundo del vino?

En mi familia no se bebía mucho vino, la verdad. Empecé a trabajar en un restaurante y, allí, una mujer joven me pidió que le explicara un vino. No supe muy bien como hacerlo y fue en ese momento cuando se me despertó la curiosidad por el vino. Después hice un examen en Francia y también en Inglaterra, todo para poder aprender y ganar confianza.

Born in France but a lover of England, Gerard Basset was crowned best sommelier in the world in 2010.

Natural and affable might well describe this renowned sommelier, whose opinions are always highly regarded.

Settled in the New Forest, he runs a hotel where food and wine play a leading role, always related to the idea of having fun, relaxation and enjoyment, because in Basset’s opinion feeling emotions is fundamental. In addition, he takes part in tastings around the world, which enables him to continue increasing self-awareness, learning and imparting wine and its essence.

What made you become absorbed in the wine world?

In fact, my family didn't used to drink a lot of wine. I began working in a restaurant where a young woman asked me to explain about a wine. I didn't know how to do it properly and that was when my curiosity in wine was aroused.

Afterwards, I took an exam in France and also one in England, all so I could learn and gain confidence.

¿Cuándo empezó a trabajar como sumiller?

La primera vez tendría unos 25 o 27 años, ya trabajando en Inglaterra, mi vida transcurrió al principio entre este país y Francia. Estuve 8 meses en el Reino Unido y después trabajé como chef en Francia, una experiencia muy positiva porque así aprendí a entender la comida.

When did you start working as a sommelier?

The first time I would've been about 25 or 27 years old, and already working in England; I spent my life going between this country and France at the beginning. I was in the United Kingdom for 8 months and afterwards worked as a chef in France, a very positive experience because that’s how I learnt to understand food.

A pesar de ello, la gente acaba pensando que eres una especie de superman, pero yo no lo veo así.

En 2010 fue nombrado Mejor Sumiller del Mundo, había participado en el certamen varias veces. ¿Qué supone dicho reconocimiento y más después de los intentos?

Lo había intentado ya 6 veces, 4 de las cuales alcancé la final. Cuando gané, lo primero, evidentemente, fue mucha emoción. La verdad es que requiere mucha preparación, de hecho, la edición que gané fue la que me había preparado mejor, seguí los consejos de profesionales, hice actividades complementarias de formación…

Muchos consumidores ven el vino como un mundo de élite y quizás un poco snob. ¿Por qué cree que sucede? ¿Cómo podemos modificar esta percepción?

Es difícil, el mundo del vino está muy fragmentado, hay muchas regiones, variedades de uva… Hacen falta muchos conocimientos y si no tienes tiempo a veces es normal sentirse perdido, además, es cierto que hay gente muy snob. ¿Cuál es la mayor dificultad de una cata?

Se necesita mucha experiencia, hay días buenos y días malos, es un ejercicio difícil, como jugar al golf, hay días en que todo funciona y otros en que no. Entreno mucho y te vas desarrollado poco a poco, lo que es claro es que se necesita estar fresco. Hace falta ser cauteloso porque un mal detalle te puede llevar a un error. No hay que especular, hace falta ser abierto y estar fresco.

Catar es un trabajo diferente según quien lo hace, el enólogo buscará corregir defectos, el sumiller el placer y el periodista querrá un ranking. El sumiller tiende a ser positivo, puesto que la gente que va al restaurante lo hace para pasar un momento agradable y emocionarse.

In 2010 you were named World's Best Sommelier, having taken part in the competition several times. What did that recognition mean, especially after the previous attempts?

I'd already tried 6 times, and reached the final on 4 occasions. When I won, the first thing I felt, obviously, was great excitement. It really requires a lot of preparation; in fact, the edition I won was the one I'd best prepared myself for; I followed the advice of professionals, did some extra training exercises…

Many consumers see wine as an elitist world and perhaps rather snobbish.

Why do you think that is? How can we change this perception?

It is difficult; the wine world is very fragmented; there are many regions, grape varieties… there's a lot you need to know and if occasionally you don't have time, then it's quite normal to feel lost, and also, there are definitely some real snobs.

What is the biggest problem with tasting?

You need a lot of experience; there are good days and bad days. It's no easy task, and like playing golf, there are days when everything goes right and others when it doesn't. I do plenty of training and you gradually get underway, but you definitely need to feel fresh.

You must be careful because one wrong detail can lead to making a mistake.

You can't speculate; you need to be receptive and fresh.

Tasting is a different job depending on who does it: an oenologist will be aiming to correct defects, the sommelier to please, and the writer to get a rating.

A sommelier tends to be positive, since people who go to a restaurant do so for pleasure and enjoyment.

¿Qué piensa de puntuar el vino?

A veces es importante marcar el vino, pero no es una ciencia exacta. Hago muchas catas para revistas y me piden que puntúe, y el hecho de tener que dar una nota te hace centrar más, tienes que pensar cuidadosamente en todos los aspectos del vino y valorar las puntuaciones positivas. Eso sí, es un acto de responsabilidad puntuar un vino y yo intento hacerlo de la manera más fiel posible.

What do you think about giving wine ratings?

Sometimes it's important to give wine marks, but it's not an exact science. I do a lot of tastings for magazines and they ask me for ratings, and the fact that you have to give a mark makes you more focussed; you have to think carefully about all aspects of the wine and make good judgements. Consequently, rating a wine is quite a responsibility and I try to do it as accurately as possible.

Sí, claro. Un vino bueno te transmite emociones cuando es complejo, es puro, en el paladar te otorga una armonía y te emociona, es muy subjetivo, también te sugestiona donde estás, la situación… Al fin y al cabo, si un vino es bueno todos lo entenderemos así, aunque quizás discrepemos en cómo de bueno es, pero seguro que coincidimos en que no es malo.

Are there good and bad wines?

Yes, of course. A good wine conveys sensations to you when it's complex, pure; on the palate it confers harmony and you feel it, it's very subjective, and also where you are has some bearing, the location… In the end, if a wine is good we will all reach the same conclusion, although we might perhaps disagree on how good it is, but we're sure to agree that it isn't bad.

De 1994-2004 creó el Hotel du Vin group. Después junto a su mujer inauguraron Hotel TerraVina en New Forest ¿Cuál es la filosofía del lugar?

Queríamos abrir una tienda-hotel con buena comida y apostamos por californian food, que encontramos muy colorida. Con respecto al vino no quisimos ser pretenciosos, soy sumiller, pero lo he querido tratar de una forma relajada.

En enero incluimos el menú degustación, donde el maridaje puede ser importante, pero para nosotros lo vital es que la gente venga a pasar un buen rato.

From 1994-2004 you established the Hotel du Vin group. Afterwards, along with your wife, you opened the Hotel TerraVina in the New Forest.

What is the idea behind it?

We wanted to open a boutique hotel with good food and we went for Californian, which we found very colourful.

As regards the wine, we didn't want to be pretentious. I am a sommelier, but I wanted it to be low-key.

In January, we included the tasting menu, where pairing can be important, but for us the vital thing is that people should come to have a good time.

Intentamos ser internacionales, tenemos vinos de Australia, Nueva Zelanda, Chile, Argentina, Francia, España, Japón, Canadá… unos 100 vinos de precio medio de mercado la gran mayoría, entre 8 y 20 €, pero tenemos de todo, el más caro es de 800 €.

How have you made the wine selection?

We've tried to be international. We have wines from Australia, New Zealand, Chile, Argentina, France, Spain, Japan, Canada… about 100 wines at average prices, the majority between 8 and 20 €, but we have some of everything, with the most expensive at 800 €.

Australia, en busca de la finura

Australia, in search of finesse

PEDRO BALLESTEROS MW (Master of Wine) La mayor parte de nosotros asocia el vino australiano con la calidez de esos shiraz de color y aroma intensos o esos chardonnays de peso. Es una idea bastante cercana, en términos estadísticos, a la realidad. La inmensa mayoría del vino australiano vendido en Europa es vino de grandes marcas. Son vinos hechos con criterios de marketing moderno, muy afrutados, voluminosos, un poco subidos de alcohol, algo pastosos a veces, con evidencia de aromas del roble, frecuentemente con azúcares residuales añadidos para redondear el sabor, directos, limpios, no muy complejos.

Afortunadamente, está naciendo otra Australia, la de los terruños que se comienzan a descubrir, la de los viñadores que además hacen de vinateros (frente a los vinateros que compran uva, que son las grandes marcas). Sus vinos no son ni mejores ni peores que los de las grandes compañías, son simplemente distintos. En su estilo, los vinos de marca son muy buenos, a veces magníficos. Las grandes compañías pueden elegir las mejores uvas de cientos de viñedos. No se les hace muy complicado producir vinos de concentración frutal y tánica impresionantes. Un pequeño viñador lo tiene muy difícil para hacerles la competencia en esos términos. A diferencia de sus congéneres europeos, que a veces valorizan más su terruño por la concentración que por la finura, a los viñadores australianos no les queda otra que hacerse apreciar por los factores más arduos de conseguir y de valorar, la finura, la complejidad, la personalidad.

Para una buena parte de los apasionados del vino, Borgoña y su uva tinta de predilección, la pinot noir,

Most of us associate Australian wine with the warmth of those intensely coloured and aromatic Shirazes and weighty Chardonnays. This impression is not far from the truth, statistically speaking. The vast majority of Australian wine sold in Europe comes from the big brands. These are wines made with modern marketing in mind, very fruity, bulky, quite high in alcohol, rather mellow at times, showing evidence of aromas from the oak, frequently with residual sugar added to round off the flavour, straightforward, clean, and not very complex.

Fortunately, another Australia is coming to light, one of terroirs that are beginning to be discovered, one where the grape growers are also the ones making the wine (as opposed to the wine growers who buy up grapes, the big brands). Their wines are neither better nor worse than those from the large companies, they are simply different. In their own style, the branded wines are very good – superb sometimes. The large companies can select the best grapes from hundreds of vineyards. It is not that complicated for them to produce wines with impressive fruit and tannin concentration. A small grape grower finds it very difficult to compete on those terms.

Unlike his European counterparts, who at times value their land more highly for concentration rather than refinement, Australian grape growers have no other option but to get themselves noticed for the hardest factors to obtain and appreciate - finesse, complexity and personality.

For a large number of wine enthusiasts, Burgundy and its red grape of preference, the Pinot Noir, represent the nec plus ultra of finesse. Consequently, all over the world, from Sonoma to South

representan el nec plus ultra de la finura. Es por ello que en todo el mundo, desde Sonoma a Sudáfrica, desde Argentina a Rumanía, desde Chile a Nueva Zelanda o desde Alemania a Australia, se invierten vidas y fortunas en encontrar ese vino mágico de pinot noir. Raramente con éxito, pero siempre con pasión.

Los grandes vinos de pinot noir provienen de climas bastante frescos. No es fácil encontrar un clima frío en Australia. Basta pensar que Melbourne se encuentra en la misma latitud que Sevilla y Adelaide en la de Fez, en Marruecos. Pero, aprovechándose de factores tales como la influencia del océano, la orientación y la altitud, y utilizando la ciencia y la técnica vitícolas más modernas, se pueden encontrar lugares muy frescos, adaptados al cultivo de la pinot noir para vino. The great Pinot Noir wines come from fairly cool climates. Yet it is not easy to find a cold climate in Australia. Suffice it to realise that Melbourne lies on the same latitude as Seville and Adelaide on the same as Fez in Morocco. However, taking advantage of such factors as the ocean’s influence, orientation and altitude, and making use of the most modern vine-growing science and technology, very cool locations can be found, adapted to Pinot Noir wine cultivation.

The Mornington Peninsula, the Macedon Ranges, some estates in Gippsland and especially the Yarra Valley, give us the best examples.

Yarra a mencionar, es un caso particular. Desde 1928, producen todo tipo de vinos comerciales, algunos muy buenos, en Riverina, una región cálida y de cultivo intensivo de la viña que se sitúa muy al norte de Yarra.

Pero en 1987 la pareja formada por Steve Webber, uno de los más grandes enólogos australianos, y Leanne De Bortoli, decidieron adquirir viñedos y crear una nueva bodega en Yarra, con una filosofía de calidad y respeto medioambiental. Su vino más grande para mí es su Riorret Emu 2010. Un pinot noir en el estilo más europeo, con un cierto desarrollo de crianza muy elegante, raro en la tradición australiana. Un vino que ya se muestra expresivo pero que mejorará en 4 o 6 años. En cata a ciegas este vino pondría en dificultades a más de un experto, porque parece un borgoñón de añada cálida.

Producen vino desde 2001. El propietario, Phil Sexton, muestra una visión de negocio inteligente, uniendo a su concepto de vinos de terruño un restaurante muy original. Mi vino preferido es el pinot noir Applejack Vineyard 2010, que se distingue por su mineralidad y sus aromas florales, en un estilo muy derecho, que da más relevancia a la complejidad que al fruto.

Una de las bodegas más emblemáticas de la zona es sin lugar a dudas Bass Phillip. Fueron pioneros en la colonización con viña de Gippsland, en 1979. Desde entonces, su Premium Pinot Noir se ha convertido en poco menos que objeto de culto. Es un vino rico, lleno de fruto sabroso, casi se diría crujiente de pura concentración, pero también elegante. Como la mayoría de los grandes vinos, se resiste a ser clasificado, es un estilo de vino en sí mismo.

Una de las cosas que admiro más en Australia es la libertad para innovar de que gozan sus viñadores. En lugar de parlotear de ‘derechos’ (que se debieran llamar privilegios) de plantación y tantas otras castraciones del

At a blind tasting this wine would cause problems for quite a few experts, because it resembles a warm vintage Burgundy.

Giant Steps owes its name to a jazz album by John Coltrane. They have been producing wine since 2001. The owner, Phil Sexton, has a clever business strategy, linking up his concept of terroir wines to a very original restaurant. My favourite wine is the Pinot Noir Applejack Vineyard 2010, which stands out due to its minerality and floral aromas, in a very direct style, attaching more importance to the complexity than to the fruit.

One of the region’s most emblematic wineries is undoubtedly Bass Phillip.

They were pioneers in the colonisation of Gippsland with vines in 1979. Since then, their Premium Pinot Noir has become nothing less than a cult object. It is a rich wine, full of flavoursome fruit, almost crunchy in its pure concentration you might say, but elegant too. Like the majority of great wines, it proves difficult to classify, being in a wine style of its own.

One of the things I most admire in Australia is the freedom to innovate which grape growers enjoy. Instead of prattling on about plantation ‘rights’ (which should be called privileges) and so many other depressing blows self-inflicted by the sector in Europe, instead of raising to mythical status terroirs that don’t seem to deliver anything much in the glass, many Australians and European emigrants in Australia are concentrating on understanding the whys and wherefores

Timo Mayer es un emigrante alemán en Australia, que reúne su amor por su terruño con su espíritu viajero. Produce pinot noir, chardonnay y riesling en Yarra y en Alemania, transmitiendo en sus vinos una combinación de la estructura científica alemana con la “joie de vivre” australiana. Su Bloody Hill 2010 es intenso, con una gran precisión aromática. Tánico y poderoso, alcanzará su plenitud dentro de 8 a 10 años.

His winery is intentionally simple in the extreme, and exactly the opposite of our recent custom of building ‘cathedralsize’ wineries, which sometimes seem like beautiful wine factories rather than installations serving the purpose of a biological process. Mac Forbes’ Pinot Noir 2010 is probably the high point of his efforts. Rounded and stylish, very balanced, profound. Excellent.

Timo Mayer is a German emigrant in Australia, who combines a love for his land with his keenness to travel.

He produces Pinot Noir, Chardonnay and Riesling in the Yarra Valley and in Germany, conveying in his wines a combination of German scientific structure with Australian “joie de vivre”. His Bloody Hill 2010 is intense, with great aromatic clarity. Tannic and powerful, it will reach its peak in 8 to 10 years.

William Downie has all the attributes of a wine genius, that intuition which enables him to look at the vines and location and see a truly great wine there in the making. He is a man with a mission, and puts his heart and soul into finding the one wine that will be on a par with the greatest ever, being too a unique image of a terroir. In very much the Burgundy way, he labels his wines according to their place of origin, without saying whether it is a Pinot Noir or any other variety. He has put his resources into developing a new vineyard in a virtually brand-new area in Gippsland, based on biodynamic principles. He is also the oenologist at 1000 Candles. This is a million-dollar investment made by somebody from Singapore, extremely rich but without the time to visit his vineyards. The wine was famous from the day of its conception, and sells at a high price. It didn’t impress me much, and seemed more showy than profound. Bill makes much better ones. His Yarra Valley 2005 is one of the most complex, refined, profound and delicate Pinot Noirs that I have ever tasted. It is a simply magnificent wine, a signature as well as an origin wine.

Su Yarra Valley 2005 es uno de los pinots noirs más complejos, refinados, profundos y delicados que he probado nunca. Es un vino sencillamente magnífico, vino de autor tanto como de origen.

Macedon Range, donde se sitúa Bindi, se encuentra muy cerca de Yarra.

Bindi es una de las casas de vino más idiosincráticas y originales en Australia. El fundador de Bindi, Bill Dhillon, es un personaje inolvidable.

De origen sikh, conserva un modo de actuar y dialogar en la más pura tradición filosófica india, pero ha sido capaz de crear un viñedo excepcional, de tan solo 6 hectáreas, en medio de una finca de 170 hectáreas, como solo antes los monjes cistercienses del siglo X hicieron. Su hijo Michael, ahora en cargo, ha obtenido bellos resultados en la expresión de su pedazo de tierra.

Sus vinos son sobre todo particulares, diferentes, con una delicadeza que casi parece fragilidad. Su Block 5 es en mi opinión el pinot noir más conseguido y representativo. Tiene un grano finísimo, un final largo y elegante. Muy equilibrado.

La Peninsula de Mornington, muy cercana a Melbourne, es un área expuesta a la urbanización por parte de los pudientes de la ciudad. Por todos lados se ven chalets de lujo, y ésto hace que el precio de los viñedos de

The Macedon Ranges, where Bindi is located, lies very close to the Yarra Valley. Bindi is one of the most idiosyncratic and original wineries in Australia. The founder of Bindi, Bill Dhillon, is an unforgettable character. Of Sikh origin, he has retained a manner of acting and talking that reflect the purest Indian philosophical tradition, yet been capable of creating an exceptional vineyard, of just 6 hectares, in the midst of a 170 hectare estate, as only the 10th Century Cistercian monks previously did.

His son Michael, now in charge, has obtained some lovely results in the expression of this piece of land. His wines are particularly individual, different, with a delicacy that borders on fragility. His Block 5 is, in my opinion, the most successful and representative Pinot Noir. It has extremely fine grained tannins, and a long and elegant finish. Very balanced.

The Mornington Peninsular, very near to Melbourne, is an area exposed to urbanisation by the city’s well-to-do.

Mornington sea muy elevado. Los vinos se presentan como ejemplo de un clima frío australiano, pero en honor a la verdad debo decir que a mí me parecen más cálidos que los de Yarra, con expresiones frutales más cercanas a la sobremadurez. La naturaleza volcánica de los suelos, así como los fuertes vientos, contribuyen a que se conserve una buena acidez en los pinots noirs de esta zona. Algunos vinos son muy buenos, aunque lejanos del patrón borgoñón. Pero los precios de los vinos reflejan más el coste de la tierra que la calidad intrínseca, siendo comparables a muchos premier cru borgoñones. Sandro Mosele hace uno de los mejores vinos, el ‘Ferrous 2010’ de Kooyong, muy finamente tramado, de final persistente y abierto, que ganará elegancia con los años. Otro buen ejemplo es el Block 6 de Yabby Lake, un vino cálido, concentrado, que necesita aireación y tiempo para abrirse y mostrar su refinamiento.

Yabby Lake es una empresa reciente, creada con unos medios financieros bastantes impresionantes con el objetivo de valorizar un terruño de grandes calidades vitícolas y estéticas.

Me dejo varios viñadores y muchos vinos sin mencionar. Estoy seguro que dentro de pocos años habrá bastantes más nombres a seguir. Por ahora constato un proceso de búsqueda y cambio, testimonio la construcción de una nueva región clásica en pleno siglo XXI, basada en desarrollar el concepto del terruño y de la persona que lo sublima. Australia, el país que inventó el vino varietal, que negó la existencia del terruño, ha parido una región llena de terruños. Sus mejores vinos se caracterizan por la finura y la personalidad. Se expresan con una serie infinita de matices, que reflejan tanto su origen como la visión de su creador. Y a nosotros nos dan mucho placer y materia para pensar y dialogar. Les recomiendo que conozcan esta nueva Australia, no les pesará. ■

cool climate Australian, but, to be perfectly honest, I have to say they seemed to me to be warmer than those from the Yarra, with fruit expression more like over-ripeness. The volcanic nature of the soils as well as the strong winds, contribute to good acidity being retained in this zone’s Pinot Noirs. Some wines are very good, although a far cry from the Burgundy mould. But the prices of the wines are more a reflection of the cost of the land than intrinsic quality, being comparable to many Burgundy Premier Crus. Sandro Mosele makes one of the best wines, ‘Ferrous 2010’ from Kooyong, very finely executed, with a persistent and open finish, which will gain in elegance over the years. Another example is Block 6 from Yabby Lake, a warm wine, concentrated, which needs some aeration and time to open up and reveal its refinement. Yabby Lake is a recently established company, set up with some pretty impressive financial backing with the purpose of increasing the value of a terroir boasting great vine-growing and aesthetic merits.

There are a number of grape growers and plenty of wines left to mention. I am sure that within a few years there will be rather more names to single out.

For now, I can confirm a process of enquiry and change exists, and I can bear witness to the emergence of a new classic wine country in the 21st Century, based on developing the concept of terroir and the person behind its elevated status.

Australia, the land that invented varietal wine, which denied the existence of terroir, has engendered a wine country full of terroirs. Its best wines are characterised by their fineness and personality.

They express themselves through a series of infinite nuances, which reflect both their origin and their creator’s vision.

And they give us much pleasure and food for thought and discussion. I suggest you get to know this new Australia - it won’t disappoint you. ●

Hay un prodigioso templo gastronómico en Cáceres que hace gala de su nombre: es el “atrio”, la entrada a la bodega paraíso, a la cripta divina donde vive feliz el gran genio de la botella, de todas las botellas de todos los vinos mejores del mundo. No hay otra igual en el país. Es la bodega sagrada.

There is a prodigious gastronomic temple in Caceres which glories in its name: it is the “Atrio”, entrance to a wine cellar paradise, to the divine crypt where happily resides the great genie of the bottle, of all the bottles of all the best wines in the world. There is no other like it in the country. This is the sacred wine cellar.

Polo es un gran coleccionista universal, pero como tiene gracia y sentido del humor, felizmente carece de las extravagancias típicas de los coleccionistas. Besa a sus botellas pero no duerme con ellas, ni tampoco se pasa el día encerrado en su cripta divina contemplándolas. Están en la carta “magna” de vinos de su restaurante -dos estrellas Michelin y Toño Pérez en los fogones- a disposición de todo aquel que quiera pedirlas. No le tiembla el pulso a la hora de abrirlas, ni tampoco le invade la melancolía cuando el genio sale de la botella. Disfruta cuando se da la circunstancia y comparte felicidad y emoción con el exquisito cliente que requiere una de sus joyas sobre la mesa.

El mismo me cuenta uno de estos momentos: “Me emocionó mucho abrir in Siglo Saco de 1939 y que el vino estuviera perfecto. Algo así es realmente una sensación única, pensé en lo que podía ser la España de ese año con una guerra a cuestas, casi sin hombres para recoger la uva… “ También disfruta cuando la botella sale de su cripta para pasar a manos de otro sin haber sido descorchada en la mesa y por tanto, sin haber podido asistir a ese momento mágico... Puede ocurrir. Las joyas de su colección son casi imposibles de ser encontradas

José Polo is a great world-wide collector, but since he has a sense of fun and humour, fortunately he lacks the eccentricities typical of collectors. He kisses his bottles but he doesn’t sleep with them, neither does he spend the day locked up in his divine crypt contemplating them.

They are on the “great” wine list in his restaurant – two Michelin stars and Toño Pérez in the kitchen – available to anyone who wants to ask for them. His hands do not shake as he opens them, nor is he overcome with sadness when the genie comes out of the bottle. He enjoys the occasion when it arises and shares in the happiness and excitement with the delightful customer who requests one of his treasures on the table.

He told me himself about one of these special moments: “I was very excited to be opening a 1939 Siglo Saco and finding the wine was perfect. Something like that feels really unique, and I thought about what Spain that year might have been like, with the weight of a war on its shoulders, with hardly any men to pick the grapes...”

He is also pleased when a bottle leaves his crypt to pass into other hands, without being uncorked at the table and therefore without it being possible for him to witness this magical moment... It can happen. The treasures in his collection are virtually impossible to find and – 33

Amar a Yquem apasionadamente

The sacred crypt’s history commenced at the beginning of the 1990s, when Atrio was in another location, much smaller and without the hotel... but already with a significant wine cellar. This is where it all started. “I began buying wine in the early 1990s. Among the great names, I started off with Chateau D´Yquem, Latour, Lafite, etc...”, but they didn’t have the setting they deserved.

They were lying in an apartment near the restaurant, very well appointed in fact, but in no way glamorous.

That was really getting to José Polo... Such treasures, yet so hidden away!! And he didn’t give up until he found what he wanted for his valuable glass assets... “Eventually in January 2004 we found a house in the Plaza de San Mateo, which was not under any special protection

encontramos una casa en la Plaza de San Mateo, que no tenía una especial protección en el plano artístico y eso nos permitía una intervención adecuada” La Plaza de San Mateo está en pleno corazón del Cáceres Histórico, un espacio renacimiento puro, casonas, palacios, callejuelas... la casa señorial había que convertirla en hotel bodega y restaurante, combinando el diseño de vanguardia con las piedras centenarias.

Un proyecto de gran calado y envergadura que tardó tiempo en hacerse realidad, unos siete años, y que hoy brilla rutilante y presumiendo de ser uno de Relais & Châteaux más hermosos de Europa, con nueve habitaciones y cinco suites, además del restaurante y, la bodega, que es la gran protagonista de la película Atrio. El edificio ha recibido el prestigioso premio FAD de Arquitectura en su última edición y la bodega el Best Award of Excellence, la máxima calificación de la prestigiosa revista estadounidense Wine Spectator.

La cripta embrujada está en el sótano pero más bien parece estar en el cielo. Luminosa, circular, suave, silenciosa donde los vinos reposan en círculos concéntricos mágicos, aunando energías, diseñada por

The Plaza de San Mateo is right in the heart of Historic Caceres, a truly Renaissance location, with large houses, mansions, narrow streets... the nobleman’s house needed to be converted into a hotel, wine cellar and restaurant, combining avant-garde design with centuries’ old stonework. It was a project on a grand scale and scope that took time to reach fruition, some seven years, and which nowadays shines brightly, purporting to be one of the most beautiful Relais & Châteaux in Europe, with nine bedrooms and five suites, apart from the restaurant and the wine cellar, which is the leading light in the Atrio story.

The building has received the prestigious FAD Architecture Award in the last edition and the wine cellar won the Best of Award of Excellence, the top classification given by the prestigious American magazine, the Wine Spectator.

The enchanted crypt is down in the cellar but it seems more like being up in the heavens. Illuminated, circular, even-textured, silent, this is where the wines lay resting in magic concentric circles, joining forces, designed by Carlos Martínez de Albornoz. Within, the holy of holies is the

No está orientado a la meca, pero sí a Francia, a Sauternes, a la meca de los grandes vinos, a los Châteaux d’Yquem, que son la gran pasión de José Polo. Es el espacio dedicado a ellos, cinco cosechas del siglo XIX (1806, 1883, 1884, 1891, 1899) sesenta y siete del siglo XX y cuatro del siglo XXI. En total setenta y seis cosechas diferentes del mítico vino. Con precios que oscilan entre los 150.000 euros del Yquem 1806, a los 360 euros del Yquem 2004, el más joven de la gran familia. No hay quien tenga nada igual, si no es en la propia bodega elaboradora de los mismos.

Una verdadera locura de amor la que siente José Polo por Château d’Yquem. Sólo él fue capaz de conducir toda una noche de Cáceres a Burdeos, custodiando una botella rota de Chateau d’Yquem de principios del siglo XIX, que acababan de comprar en una subasta en Londres y que se les cayó al colocarla en la bodega. La botella sobrevivió porque Jose Polo y su socio y chef Toño Pérez, se empeñaron en llevarla a su

highlight, a kind of mihrab of world oenology, adorned with gold leaf and precision carpentry. It is not facing towards Mecca, but actually faces France, towards Sauternes, towards the Mecca of great wines, the Château d’Yquem, which are José Polo’s grand passion. This spot is dedicated to them, five vintages from the 19th century (1806, 1883, 1884, 1891, 1899) sixty-seven from the 20th century and four from the 21st. In total, seventysix different vintages of the mythical wine. With prices ranging between 150,000 Euros for the 1806 Yquem and 360 Euros for the 2004 Yquem, the youngest member of the great family. Nobody at all has anything comparable to this, unless it belongs to the producer’s own wine cellar. It is a really crazy love that José Polo feels for Château d’Yquem. Only he could be capable of driving right through the night from Caceres to Bordeaux, guarding a broken bottle of Chateau d’Yquem from the early 19th century, which had just been bought at an auction in London and dropped whilst being placed in the wine cellar. The bottle survived because Jose Polo and his partner and chef Toño Pérez insisted on taking it to its birthplace in France, wrapped in cotton wool and ice, so that its con– 37

Iban a Château d’Yquem, donde su propietario a la sazón, el Conde Alexandre de Lur-Saluces, les esperaba alucinado el hombre. Le habían dicho que dos locos españoles, de Extremadura venían desde allí con una botella con el gollete roto, que querían reembotellar y reencorchar en origen. Nunca había visto tan bella historia de amor con uno de sus “hijos”.

Tres siglos de botellas

Del siglo XIX también un aristocrático y casi único Marqués de Riscal 1896, a 2.300 euros. Del siglo XX podemos decir que no falta nada de importancia que haya podido embotellarse. Los más históricos son franceses, por razones obvias. En los albores del siglo pasado, en España sólo embotellaban vinos algunas, muy pocas, bodegas de Rioja, en Vega Sicilia y en Jerez. Encontramos algún Murrieta del año 59 y bastantes cosechas de Cvne, entre Imperiales y Viñas Reales desde 1928, un españolísimo y casi cañí Siglo Saco Gran Reserva 1928, Bilbainas Gran Reserva 1955, un curiosísimo rioja, Viña Tondonia Plantación 1913, de López de Heredia, valorado en 1.700 €, y como no podía ser menos, una fastuosa colección de Vega Sicilia Únicos, desde el año 1918 a 1998. Treinta añadas desde 3100 a 480 euros.

En la bodega de Atrio está lo mejor del mundo entero del siglo XX. Un verdadero paseo difícil de poder trascribir: 23 cosechas de Petrus desde 1947; 25 de Château Margaux desde 1938; unas cuantas de Château Ducru-Beaucaillou desde 1929; de La Romanée Conti encontramos catorce cosechas diferentes, desde 1990 a 2004, de 7500 a 4900 euros y de la Romanée Saint Vivant doce años. De los voluptuosos La Tâche, doce añadas desde 1990, con precios desde 3100 a 1300 euros. Maravilloso espectáculo cromático el conformado por la colección de los Mouton Rothschild con las etiquetas pintadas por Braque, Dalí, Moore, Miró, Chagall, Kandinsky, Balthus, Picasso... De sus parientes los Lafite Rothschild, 24 añadas desde 1929 a 2003, desde 5300 a 710 euros... Del siglo XXI, exotismos como un Sula Sauvignon Blanc 2005, de Nashik, ceca de Bombay – sí, han leído bien; de la India- o un Ixsir Gran Reserva 2009 libanés, dos tintos uruguayos de tannat … Así hasta 40.000 botellas de 20 países diferentes. .

A todo coleccionista se le resiste alguna obra y José Polo no iba a ser menos… ¿Hay alguna botella que nunca conseguiste?, ¿qué botella te gustaría tener que no has podido conseguir? “Cuando compré el Yquem de 1806, compré además 23 botellas de diferentes añadas del mismo vino y sin embargo no pude conseguir el de 1921 y he tardado 10 años en encontrarlo” Es una de sus últimas adquisiciones que aún no ha podido reflejar-

tents would not deteriorate en route. They were on their way to Château d’Yquem, where the owner at the time, Count Alexandre de Lur-Saluces, was expecting them in total shock. He had been told that two mad Spaniards from Extremadura had set out from there with a bottle of wine that was broken, which they wanted rebottled and recorked at source. He had never come across such a beautiful love story involving one of his “offspring”.

Three centuries of bottles

From the 19th century as well, an aristocratic and virtually unique 1896 Marqués de Riscal, at 2,300 Euros.

From the 20th century, we may say there is nothing important missing that might have been bottled. The most historic are the French, for obvious reasons. At the turn of the last century in Spain, only some bodegas bottled their wines, but very few, in Rioja, at Vega Sicilia and in Jerez.

We found a Murrieta from 59 and a fair number of Cvne vintages, including their Imperial and Viña Real wines since 1928, from bygone Spain a 1928 Siglo Saco Gran Reserva, a 1955 Bilbainas Gran Reserva, a most unusual Rioja, a 1913 Viña Tondonia Plantación, from López de Heredia, valued at 1,700 €, and, as to be expected, a splendid collection of Vega Sicilia Únicos, from 1918 to 1998. Thirty vintages priced from 480 to 3,100 Euros.

In the Atrio wine cellar there are the 20th century’s best in the whole world. A veritable voyage, difficult to transcribe: 23 Petrus vintages since 1947; 25 Château Margaux from 1938 onwards; quite a few Château Ducru-Beaucaillou starting with the 1929; there are fourteen different vintages of La Romanée Conti, from 1990 to 2004, priced between 4,900 and 7,500 Euros and twelve years of Romanée Saint Vivant. Of the voluptuous La Tâche, twelve vintages since 1990, with prices ranging from 1,300 to 3,100 Euros. A wonderful spectacle of colour provided by the Mouton Rothschild collection, with their labels painted by Braque, Dalí, Moore, Miró, Chagall, Kandinsky, Balthus, Picasso... Representing their relatives the Lafite Rothschild, 24 vintages from 1929 to 2003, costing from 710 to 5,300 Euros... From the 21st Century, exoticisms such as a 2005 Sula Sauvignon Blanc, from Nashik, near Bombay – yes, you did read it right: from India - and a Lebanese 2009 Ixsir Gran Reserva, two Uruguayan Tannat reds… And so on up to 40,000 bottles from 20 different countries.

Every collector has one object that has proved elusive and José Polo was no different… Is there a bottle you have never managed to get hold of? Which bottle would you like to have that you haven’t been able to obtain? “When I bought the 1806 Yquem, I also bought 23 bottles of different vintages of the same wine, however I couldn’t get hold of the 1921 and it has taken me 10 years to find it”. It is one of his latest acquisitions and not yet made its way onto the wine list, which is hardly a list but a large book, a treatise almost, a work of art, a veritable collector’s catalogue.

Lo sabemos: el vino ya no es lo que era. Y el mundo, tampoco. Hoy, la información viaja más rápido que los propios vinos. Y como consecuencia de ello, la difusión de las técnicas vinícolas ha roto el monopolio de las regiones productoras tradicionales. La calidad ya no es privilegio exclusivo de nadie y vinos cada vez más correctos –e inevitablemente parecidos entre sí, qué remedio– afloran por todo el planeta como clones.

Para no aburrirnos, una de pocas alternativas que nos quedan es recuperar los sabores y aromas de los vinos históricos.

En el caso de los dulces de malvasía que se elaboran en las islas Canarias, la experiencia es aún más emocionante, porque estos vinos a punto han estado de extinguirse y hoy renacen con fuerza, exhibiendo todo su poder de seducción.

We know only too well: wine is not now what it used to be. Nor is the world, either. Today, information travels more rapidly than the wines themselves. As a consequence, the spreading of wine technology has broken the monopoly held by the traditional wine-producing regions.

Quality is no longer anyone’s exclusive privilege and wines which are increasingly more acceptable –but inevitably resemble one another, as to be expected - are cropping up all over the planet like clones.

To avoid becoming bored, one of the few options left to us is to revive the flavours and aromas of historic wines.

In the case of the sweet Malvasias that are made in the Canary Islands, the prospect is all the more exciting, because these wines have been near to extinction, but are now enjoying a strong revival, exhibiting all their powers of seduction.

La moda de los vinos griegos

To be perfectly honest, it must be said that the Canaries are not the only ones to have benefited from the virtues of the old Malvasia, one of the most ancient varieties known to us.

With its origins in some remote vineyard in Asia Minor – its name pays tribute to the port of Monemvasia, in the southern Peloponnese – it was cultivated in abundance on the island of Crete long before Venetian traders in the 13th century promoted the fashion for sweet and aromatic “Greek wines”. They were such a great success that the shops that were selling them even ended up by being called “malvasias”.

Thanks to this popularity, the grape’s vines spread all over the Mediterranean and also over the Atlantic dominions: Madeira and the Canaries.

En honor a la verdad, hay que decir que los canarios no son los únicos que se han beneficiado de las virtudes de la vieja malvasía, una de las variedades más antiguas de cuantas se conocen.

Nacida en algún recóndito viñedo del Asia Menor –su nombre hace honor al puerto de Monemvasía, en el sur del Peloponeso–, su cultivo fue abundante en la isla de Creta mucho antes de que los comerciantes venecianos del siglo XIII promovieran la moda de los “vinos griegos”, dulces y aromáticos. Su éxito fue tan grande que incluso las tiendas que los vendían acabaron por recibir el nombre de “malvasías”.

el Mediterráneo y también por los dominios del Atlántico: Madeira y Canarias.

El cénit de su fama llegó en el siglo XVI, cuando en los comercios de Londres crecía la demanda de Canary Sack –el histórico dulce producido en las islas Canarias con esta uva– así como de los nobles vinos de Madeira.

Amén de su querencia insular, la malvasía también se cultiva en los viñedos de la península: en el Levante, Rioja y Navarra, aún sobreviven algunas cepas de una uva que llaman malvasía, pero que nada tiene que ver con la de los vinos canarios. Lo mismo puede decirse de la subirat parent, tal como se conoce a la malvasía en algunas zonas de Cataluña. Por el contrario, la uva que ha dado fama a legendarios dulces de Sitges es la misma –según recientes estudios del ADN de la variedad– que crece en la isla de La Palma.

It reached its zenith of fame in the 16th century, when there was a growing demand in the London shops for Canary Sack – the historic sweet wine produced in the Canary Islands using this grape – as well as for fine Madeira wines.

Besides favouring islands haunts, Malvasia is also grown in vineyards on the mainland: in the Levante, Rioja and Navarra, there are still some vines surviving of a grape they call Malvasia, but which has no connection with the one used for making Canary wines. The same can be said for Subirat Parent, as Malvasia is known in some areas of Cataluña.

In contrast, the grape which has brought fame to the legendary sweet wines of Sitges is the same – according to recent DNA studies on the variety - as the one growing on the island of La Palma.

Apogeo y caída del Canary Sack Yendo por fin al grano (de uva), diré que la malvasía que aquí nos ocupa se cultiva en las islas Canarias desde que el portugués Fernando de Castro plantara las primeras cepas, a finales del siglo XV. El apogeo del Canary Sack –vino dulce envejecido en roble, de generosa acidez y final amargo– en los mercados británicos se produjo un siglo después, cuando tan sólo Tenerife exportaba más de cuatro millones y medio de litros de este vino. Pero a los viticultores de las islas no les dio tiempo a disfrutar del momento de esplendor, porque tras unas cuantas décadas de bonanza, los litigios entre las coronas de España e Inglaterra motivaron que los británicos prefirieran centrarse en el comercio de los vinos de Madeira.

Finally getting to the point, I believe that the Malvasia we are dealing with here has been grown in the Canary Islands since Fernando de Castro from Portugal planted the first grapevines at the end of the 15th century.

The peak of Canary Sack – a sweet wine aged in oak, with generous acidity and a bitter finish – on the British market occurred a century later, when Tenerife alone was exporting more than four and a half million litres of this wine. But the islands’ wine growers were given no time to enjoy this moment of glory, because after several bonanza decades, disputes between the royal crowns of Spain and England resulted in the British preferring to concentrate on the Madeira wine trade.

que se originaban arroyos en las calles, provocando una de las inundaciones más extrañas que se puedan leer en los anales del mundo”, según relata el historiador José de Vieira y Clavijo. ¿Serían aquellos vándalos unos antepasados de los hooligans? Pues no, más bien al contrario: a pesar de las restricciones, los canarios se las estaban apañando para seguir exportando sus vinos y por lo visto las autoridades españolas recurrieron a los “enmascarados” para darles una lección. En cualquier caso, el episodio enfadó tanto a Carlos II de Inglaterra como para que ordenara “ningunos vinos, ni otras manufacturas o mercancías (…) de las Islas de Canaria (…) entrarán de hoy en adelante en este nuestro Reino”.

Para colmo de males, a esa medida se sumaron los desastres naturales: una plaga de oídio, en 1852, y otra de mildiu, en 1878, se enzarzaron con los viñedos de las islas y el Canary Sack cayó en el cajón de los juguetes rotos.

During the crisis brought about by the decline in Canary Sack, an incident occurred which confirms the presence of saboteurs on the islands. In the village of Garachico in Tenerife, on the night of July 3rd 1666, “three or four hundred masked men forced open the doors of the wine cellars and wrecked the barrels, spilling the wine, so that streams started appearing in the streets, causing one of the strangest floods you could ever read about in the annals of the world”, according to an account by the historian José de Vieira y Clavijo.

Might those vandals be the forebears of hooligans? Well no, most likely the opposite: despite the limitations, the Canary islanders were still managing to continue exporting their wines and apparently the Spanish authorities went after the “masked men” to teach them a lesson. In any case, the incident angered Charles II of England so much that he gave the order that “no wines, nor other manufactured goods or merchandise (…) from the Canary Islands (…)

Una cata de ensueño Gracias al Dios Baco, con el resurgimiento de la viticultura canaria –a partir de los años 90 del pasado siglo–, la vieja malvasía ha tenido una nueva oportunidad. Los héroes de esta historia son las nuevas generaciones de viticultores de las islas, que han generado un gran dinamismo en las 11 denominaciones de origen que actualmente tiene esta comunidad.

Todos ellos rinden pleitesía a nuestra anciana dama, la malvasía, que vuelve a protagonizar vinos de toda clase y estirpe, no sólo los gloriosos dulces elaborados con técnicas ancestrales (o innovadoras, que también los hay), sino blancos secos, semidulces y hasta algún sorprendente espumoso, como el que elabora en Lanzarote la bodega El Grifo.

Sirvan estas cifras para comprobar que la malvasía vuelve a reinar en Canarias: en el año 2012, se contaron hasta 1347 vinos elaborados con esta variedad en las islas, firmados por 32 bodegas.

To make matters worse, in addition to these measures there were natural disasters: an outbreak of powdery mildew in 1852, and one of mildew in 1878, afflicted the islands’ vineyards and Canary Sack fell into the box of broken toys.

A dream tasting Thanks to the god Bacchus, with the resurgence in Canary viticulture – beginning last century in the 1990s – the old Malvasia has been given a new lease of life. The heroes of this story are the islands’ new generations of grape growers, who have generated considerable dynamism in the 11 denominations of origin that this community currently possesses.

They all show respect for our old lady, Malvasia, which is beginning to feature again in wines of every type and line, not only the glorious sweet wines made using age-old methods (or innovative ones, which also exist), but dry whites, semi-sweet and even surprisingly

Enopatías – Oenopathy canario Álvaro Prieto, que entonces ejercía como sumiller en el hotel Abama de Tenerife, me hizo tocar el cielo con el paladar ofreciéndome una cata de diversos vinos de malvasía en la terraza de uno de los restaurantes del hotel, coincidiendo con la puesta del sol.

Así, en un escenario de ensueño, pude comprobar que la rica diversidad de los viñedos de las diferentes islas, fundamentada en terruños y microclimas muy característicos, da lugar a una gama extraordinaria de vinos de malvasía.

Otro sumiller de origen canario, Javier Gila, me apunta un dato interesante respecto a esta diversidad: las últimas investigaciones relativas al ADN confirman que en Canarias conviven dos tipos de malvasía, la llamada “volcánica”, que crece en Lanzarote y es un cruce natural entre malvasía y la uva autóctona marmajuelo; y la *aromática”, que domina los viñedos de La Palma y el norte de Tenerife y es la auténtica descendiente de la malvasía Candía que se cultivaba en Creta.

Volviendo a mi cata en el hotel Abama, aún conservo en la memoria los que vinos que más me impresionaron en aquel mágico atardecer. Entre los tinerfeños, el Viñátigo Dulce de la D.O. Ycoden-Daute-Isora, maduro y con recuerdos especiados, y el Malvasía Domínguez, de Tacoronte, con un carácter fresco y balsámico. Muy distinto a estos es el Canari, con el que las bodegas El Grifo de Lanzarote quiere recuperar el estilo del antiguo Canary Sack, y que gracias a su paso por la barrica ofrece un perfil tostado, con recuerdos de ebanistería. Aunque mis favoritos son los de la isla de La Palma, como el Dulce Carballo, un vino complejo, con recuerdos de fruta escarchada y un final de boca ligeramente salino. O el Tamanca Dulce, denso y estructurado.

La dimensión de estas joyas se comprende cabalmente cuando se conocen las grandes dificultades que tienen los viticultores canarios para producir sus vinos. En Lanzarote, por ejemplo, se

These figures serve to prove that Malvasia is prevailing again in the Canaries: in 2012, there were as many as 1,347 wines produced using this variety on the islands, assigned to 32 wineries.

Some years ago, the young Canarian sommelier Álvaro Prieto, who at the time was working as sommelier at the Hotel Abama in Tenerife, helped me to reach palate heaven by holding a tasting for me of various Malvasia wines on the terrace of one of the hotel restaurants, just as the sun was setting.

Thus, in a dream setting, I was able to confirm that the rich diversity, founded on the very characteristic terrains and microclimates, of the different islands’ vineyards, gives rise to a remarkable range of Malvasia wines.

Another sommelier from the Canaries, Javier Gila, pointed out an interesting fact to me regarding this diversity: the latest DNA research confirms that in the Canaries two types of Malvasia coexist, the so-called “volcanic”, which grows in Lanzarote and is a natural cross between the Malvasia and the indigenous grape Marmajuelo; and the “aromatic”, which is predominant in the vineyards of La Palma and the north of Tenerife and is the genuine descendant of the Malvasia di Candia which used to be grown in Crete.

Heroes of diversity Returning to my tasting at the Hotel Abama, I still remember well the wines which impressed me most that magical evening. Among the Tenerife ones, the Viñátigo Dulce from the YcodenDaute-Isora D.O., mature and with spicy hints, and the Domínguez Malvasia, from Tacoronte, with a fresh, balsamic character. Very different from these is the Canari, made by the El Grifo winery in Lanzarote wanting to revive the style of the classic Canary Sack, and which, thanks to its time spent in barrel, exhibits a toasty facet, with hints of wood. However, my favourites come from the island of Palma, like Dulce Carballo, a complex wine, with touches

les llama “conejeros”, porque en busca de la tierra vegetal –en un paisaje dominado por las cenizas volcánicas– realizan unos hoyos en forma de embudo, que ha veces superan los dos metros de profundidad para plantar la vid. Luego, para proteger a las plantas del azote de los vientos del Levante, construyen uno muro semicircular de piedra, de 60/70 cm de altura. ¡Un fortaleza para cada cepa!

Y en La Palma no lo tienen más fácil, cultivando sus viñedos en bancales situados en pendientes pronunciadas, en parcelas minúsculas y de difícil acceso. Sin duda, allí la vendimia es un acto de valientes.

Benditos sean estos héroes de la malvasía, que han conseguido que podamos seguir disfrutando de unos vinos sin parangón en el ancho viñedo global.

The magnitude of these treasures is properly appreciated when we are made aware of the great difficulties which the Canary winegrowers face in order to produce their wines.

In Lanzarote, for example, they are known as “conejeros” or rabbit hunters, because in their search for some soil – in a landscape dominated by volcanic ash – they dig funnel-shaped holes, which have occasionally measured more than two metres deep, for planting the vines. Then, to protect the plants from the lashing Levante winds, they build semi-circular stone walls, about 60/70 cm high. A fortress for each grapevine!

And they have it no easier in La Palma, tending their vineyards on terraces lying on steep slopes, in tiny plots with difficult access. No doubt harvesting there is not for the feint-hearted.

May they be blessed, those Malvasia heroes, who have enabled us to continue enjoying wines that are unsurpassed throughout the vineyard world. ●

El mundo del vino – The world of wine

Recorriendo un Priorat de récords A trip round the record-breaking Priorat ramon francàs Pese a la enquistada recesión económica, la Denominación de Origen Calificada Priorat alcanzó en el último año cifras récord de ventas. La facturación se ha incrementado en un significativo 30% durante el 2011 (850.000 botellas más), y ha logrado la cifra récord de 3,78 millones de botellas, con el aumento más destacado de los últimos siete ejercicios.

Además, la DOCa Priorat continúa creciendo y ya llega a las 96 bodegas inscritas. También ha crecido el número de viticultores, hasta alcanzar los 637. Si bien es cierto que el precio mediano de los vinos ha decrecido en los últimos años, los vinos del Priorat siguen conquistando nuevos mercados internacionales. Ya se exporta a más de 60 países, manteniéndose Estados Unidos y Alemania como los principales feudos. Además, se ha empezado a abrir un incipiente mercado en China y en el sudeste asiático. El presidente del Consejo Regulador de la DOCa Priorat, Toni Alcover, destaca que las últimas cifras reflejan que “el esfuerzo orientado a la calidad y a la internacionalización se ha visto recompensado en un contexto de dificultades económicas”.

Los vinos del Priorat, además, siguen copando las preferencias en la última lista de la guía de vinos más alabada y criticada, a partes iguales, del mundo: The Wine Advocate, del gurú de Baltimore Robert Parker. Hasta seis Priorat, tres cavas y un Costers del Segre ocupan las diez primeras plazas de la lista Parker de Catalunya y Baleares, que ha elaborado por primera vez el catador británico Neal Martin. Si se analizan los 20 vinos mejor puntuados las preferencias de la guía norteamericana se muestran aún más

Despite the deep-seated economic recession, the Priorat Qualified Denomination of Origin achieved record sales figures for last year. Turnover increased by a significant 30% in the year 2011 (850,000 more bottles), and attained a record total of 3.78 million bottles, with the most notable rise in the last seven financial years. In addition, the Priorat DOQ is continuing to grow and now numbers 96 registered wineries. There has also been an increase in the number of vine growers, with the total up to 637. Although in truth the average price of wines has decreased in recent years, Priorat wines keep conquering new international markets. They are currently exported to more than 60 countries, with the United States and Germany retaining their status as the chief domains. Besides, an emerging market has begun to open up in China and South-East Asia. The President of the Priorat DOQ Regulatory Council, Toni Alcover, pointed out that the latest figures reflect that “the effort targeted on quality and internationalisation has been rewarded within a context of economic problems”.

Wines from the Priorat, moreover, continue to emerge as clear favourites in the latest ratings of, in equal measures, the most highly praised and criticised wine guide in the world: The Wine Advocate, of the Baltimore guru, Robert Parker. As many as six Priorats, three Cavas and a Costers del Segre occupy the ten top places in the Parker ratings for Catalunya and the Balearic Islands, which was drawn up for the first time by the British taster, Neal Martin. If an analysis is made of the 20 highest scoring wines, the American guide’s preferences appear all the more crystal clear: 12 are Priorats (from Mas Martinet, Clos Mogador, Álvaro

diáfanas: 12 son Priorat (de Mas Martinet, Clos Mogador, Álvaro Palacios, Terroir al Límit y Portal del Priorat).

Desde el Consejo Regulador de la DOCa Priorat se ha hecho una valoración positiva de las puntuaciones “en el contexto del reconocimiento que han alcanzado los Priorat en los últimos años por todo el mundo”. Se ha añadido que estos buenos resultados representan “un nuevo estímulo para bodegas y viticultores para seguir manteniendo los niveles de calidad y fidelidad al territorio a la hora de cultivar y elaborar sus vinos”.

Clos Mogador Este pasado verano he asistido a entusiastas actividades vitivinícolas y he recorrido alguno de los proyectos más significativos de este Priorat que, pese a las dificultades, mantiene un claro liderazgo entre los vinos más afamados del planeta. El periplo lo inicié a mediados de julio en Clos Mogador, visitando de la mano de René Barbier la viña de la que se obtiene buena parte de las uvas del sensacional blanco Nelin. El canto rechinante de cientos y cientos de cigarras a pleno sol, que se multiplicaba hasta convertirse en un zumbido atronador, nos recibió en Nelin (Gratallops). En esta finca, las plantas aromáticas y las flores invaden unas vides rebosantes de insectos.

René, que ya suma más de 30 años de viña y más de 20 de vino con su Clos Mogador, el portentoso vino de finca de su pizarroso anfiteatro, no ha perdido ni un ápice de entusiasmo. Sigue considerándose “más filósofo que vinatero”, y afirma que hace vino donde se ha enamorado del lugar. Continúa, además, siendo un ferviente defensor de la filosofía del terroir. Como afirma en su espectacular libro conmemorativo Clos Mogador: “es posible sentir y saborear los frutos que la tierra nos ofrece, capturar por la experiencia el ADN de un lugar. Clos Mogador Last summer, I witnessed at first hand some very dedicated wine-producing ventures and went round one of the most important projects in the Priorat region which, despite the difficult times, maintains its position as clear market leader among the most famous wines on the planet. I started off the tour in the middle of July with Clos Mogador, visiting in the company of René Barbier the vines which provide the majority of the grapes for the sensational white wine, Nelin. The strident song of hundreds and hundreds of cicadas in the blazing sunshine, growing so loud that it became a deafening whirr, greeted us at Nelin (Gratallops). También catamos el Nelin 2010, un

blanco con cierta madurez y notas a orejones y frutos secos. Es un blanco con mentalidad de tinto, un blanco que René recuerda que “no es para refrescarse”. Este mago del nuevo Priorat también nos ofreció una verdadera joya, el Clos Mogador del 2002, un tinto hedonista y maduro, balsámico y profundo que se muestra con mayor juventud de la que realmente tiene.

Ya en agosto visité Vall Llach de Porrera, donde preparan unos escasos rancio y un vino dulce natural elaborados siguiendo el estilo más tradicional y donde ultiman el lanzamiento de su último tinto, un singular Vi de Vila que llega al mercado de cara a la campaña de Navidad rondando los 60 euros. Salustià Álvarez, con su habitual apasionamiento, muestra un proyecto fundado por el notario Oriol Costa y por el cantautor Lluís Llach, que no ha dejado de apostar por la microproducción controlada de sus fincas y trossos “con el objetivo de que la calidad prevalga

He still looks upon himself as “more of a philosopher than a wine grower”, and declares that he makes wine where he has fallen in love with the location. He continues, as well, to be a fervent supporter of the philosophy of terroir. As he claims in his splendid book commemorating Clos Mogador: “It is possible to feel and taste the fruits the land provides us with, to capture the DNA of a place by experiencing it. Consequently, it is possible to love a terroir, give it help, work with it, and finally convey it in a bottle”.

Continuing in the company of René Barbier and the journalist and writer, Empar Moliner, we tasted the seductive Manyetes 2009 (90% Cariñena and 10% Garnacha), a balsamic and mineral Village Wine which, right from the very start, comes over as exuberant, with a strong fruit presence and some very well-defined menthol notes. We tasted too the Nelin 2010, a white with obvious maturity and notes of dried apricots, fruits and nuts. This is a white with the mindset of a red, a white as René informs us that “Is not one to cool you down”. This wizard of the new Priorat also presented us with a veritable jewel, the 2002 Clos Mogador, an utterly pleasurable, mature, balsamic and profound red wine which appears more youthful than it really is.

Vall Llach Then in August I visited Vall Llach in Porrera, where they were working on a few rancio types and a natural sweet wine which are made in keeping with a very traditional style. There they were making final preparations for the release of their latest red, a remarkable Village Wine which was going on the market ready for the Christmas campaign at around 60 Euros. Salustià Álvarez, with his usual enthusiasm, is showcasing a project set up by the notary Oriol Costa and the singer-songwriter Lluís Llach, totally committed to the controlled micro-production of the estates and old vineyards “with the objective of ensuring that quality always prevails over quantity”. Vall Llach maintains its well-defined

Ferrer Bobet Mi periplo veraniego en el Priorat también me condujo al gran proyecto de Ferrer Bobet (Sergi Ferrer-Salat y Raül Bobet con la colaboración de la enóloga Isabel Fortuny). Mantienen su filosofía de “respeto” por la tradición vitivinícola del Priorat pero apostando por vinos de extrema elegancia pese a su concentración y corpulencia. Buena muestra de ello son los dos tintos que nos ofreció Isabel Fortuny. Catamos el Ferrer Bobet 2010 (70% cariñena y 30% garnacha), un vino con mucha fruta (gominola que recuerda a frutas rojas como las fresas con nata), muy buena acidez, muy fresco (mentolado). Con una producción cercana a las 18.000 botellas, esta añada, según Isabel Fortuny, “tiene el frescor de la del 2008 y el cuerpo de la del 2009”. También nos ofrecieron el formidable (pese a que mejorará notablemente con el redondeamiento que experimentará en la botella) Selecció Especial 2010: frutas negras y notas florales (violetas) en un tinto de gran altura, muy complejo y mineral (punta de lápiz).

Viticultors Mas d’en Gil Todo pasión, el propietario de Viticultors Mas d’en Gil, Pere Rovira, me ofreció la enésima visita las 43 parcelas de su espectacular finca de 125 hectáreas en el término municipal de Bellmunt del Priorat. Mas d’en Gil, según Pere Rovira, representa mucho más que una bodega “comprometida en elaborar vinos de alta calidad”. Es un sueño hecho realidad. Ante todo, significa para su fundador la “inmensa gratificación personal de culminar una larga trayectoria en el mundo del

My summer tour round the Priorat also took me to the magnificent Ferrer Bobet project (Sergi Ferrer-Salat and Raül Bobet with the collaboration of the oenologist Isabel Fortuny). They maintain a philosophy of “respect” for the Priorat’s wine-making tradition whilst aiming for wines of extreme elegance despite their concentration and robustness. Prime examples of this are the two red wines shown to us by Isabel Fortuny. We tasted the Ferrer Bobet 2010 (70% Cariñena and 30% Garnacha), a wine with plenty of fruit (jelly beans reminiscent of red fruits, such as strawberries with cream), very good acidity, and very fresh (menthol).

With a production close to 18,000 bottles, this vintage, according to Isabel Fortuny, “has the freshness of the 2008 and the body of the 2009”. We were also offered the tremendous (in spite of the fact that it will improve considerably with the rounding-off it will undergo in bottle) Selecció Especial 2010: black fruits and floral notes (violets) in a really excellent red, very complex and mineral (pencil lead).

Ahora que caminan hacia la biodinámica y que acaban de incorporar una nueva mula, la Clara, también enfilan la recta final de su último gran proyecto: en su tradicional vinagrería están elaborando un concentradísimo

Viticultors Mas d’en Gil Totally passionate, the owner of Viticultors Mas d’en Gil, Pere Rovira, took me on the umpteenth visit of the 43 parcels comprising his spectacular 125 hectare estate in the municipal district of Bellmunt del Priorat. Mas d’en Gil, according to Pere Rovira, represents a lot more than a winery “engaged in producing top quality wines”. It is a dream come true. Above all, for its founder it means the “immense personal satisfaction of finishing off a long career in the wine world with the chance of making a dream come true: after a whole lifetime dedicated to acquiring knowledge about wine and land, it signifies an opportunity to carry out his most personal project and be able to participate in the whole process from the beginning, together with his family and an enthusiastic team, taking consummate care of every detail, from vineyard to wine presentation, as an expression of his dedication and expertise”.

Although they are heading along the biodynamic path and have just enlisted the services of a new mule, Clara, they are also entering the home stretch of their latest major project: at their traditional vinegar-making factory they are making a high quality, very concentrated vinegar which is set to become one of the best in the world despite the fact that they can only provide a very limited production of 6 litres a year. The visit, which lasted for four hours, came to an end with an informative tasting of his wines, capable of doing extremely well with a very good price-quality relationship. The tasting (taking place on a lovely day) started off with the white Coma Alta 2010 (Garnacha and Viognier with a touch of oak): a wine displaying clear notes of peaches, fennel and cocoa. On the palate it reveals a hint of bitter almonds and good acidity. It is a wine which year after year relies more heavily on fruit and gradually reduces the oak. Hard to believe that it is 15%. The tasting continued with the 2008 Coma Vella (a difficult year). This Coma Vella, however, is mature, rounded with red fruit notes due to the Garnacha and with definite

vinagre de altísima calidad que se situará entre los mejores del mundo a pesar de que sólo podrán ofrecer una escasísima producción de 6 litros anuales. La visita, que se prolongó por espacio de cuatro horas , finalizó con una ilustrativa cata de sus vinos capaces de trascender con una muy buena relación calidad-precio. La cata (realizada en un día fruta) se inició con el blanco Coma Alta 2010 (garnacha y viognier con un toque de madera): Se trata de un vino que ofrece notas francas a melocotón de agua, hinojo y cacao. En boca muestra almendra amarga y una buena acidez. Es un vino que añada tras añada profundiza en la fruta y va reduciendo madera.

No parece que tenga 15º. La cata prosiguió con el Coma Vella del 2008 (una añada difícil). Este Coma Vella, sin embargo, es maduro, redondo, con notas a frutas rojas producto de la garnacha y con marcadas notas a eucaliptos. El tercer vino, Clos Fontà del 2007, muestra una profundidad extraordinaria, una notable fuerza tánica y una increíble frescura mentolada. Es muy largo y enamoradizo.

Destaca por la elegancia y por notas de piel de naranja confitada y de olivas negras (60% cariñena y el resto garnacha). El repaso a la producción de Mas d’en Gil finalizó con el gran Nus 2009, un dulce natural que en nariz se muestra como un vino tranquilo pero que en boca presenta una dulzura nada empalagosa. Sus 18 gramos de azúcar por litro se integran en un vino memorable.

Scala Dei En la histórica bodega de Scala Dei conocí de primera mano gracias al enólogo Ricard Rofes y al director de comunicación y marketing del Grupo Codorníu, Diego Lo Prete, sus ambiciosos nuevos proyectos. La vieja y algo lúgubre tienda de Scala Dei, así como sus viejos porrones, han sido substituidos por un confortable y moderno centro ecoturístico centrado en el mundo de la degustación.

Pero su principal novedad tras el relevante giro dado a partir de la cosecha

hints of eucalyptus. The third wine, a Clos Fontà from 2007, showed remarkable depth, notable tannic strength and incredible menthol freshness. It is very long and thoroughly likeable. Worth highlighting are its elegance and notes of candied orange peel and black olives (60% Cariñena with the rest Garnacha). The review of the Mas d’en Gil product range concluded with the great Nus 2009, a natural sweet wine, which comes over on the nose like a still wine, but on the palate the sweetness is apparent but not at all cloying. The 18 grams of sugar per litre are well integrated into this memorable wine.

Scala Dei At the historic winery of Scala Dei, thanks to oenologist Ricard Rofes and Diego Lo Prete, director of communication and marketing for the Codorníu Group, I learned at first hand of their ambitious new projects. The old, rather gloomy shop at Scala Dei, along with the old wine jars, has been replaced by a comfortable, modern ecotourism centre focussing on the world of wine tasting.

But the main new element, following an important change of course after the 2007 harvest, coinciding with Rofes becoming involved, are the new, very top of the range wines which should start appearing on the market from this March. I tasted the wines in their original vineyards and it is their personality that Scala Dei really intends expressing through their great low-production Garnachas. The llicorella slate of the La Creueta parcel (with vines aged around 48 years old), the pebbles of Artigots (with 55 year-old Garnachas) and the clay at Sant Antoni, with vines also planted over half a century ago, have enabled production of three excellent Garnachas, which will be on sale together in the same box for around 180 Euros. They are wines from the 2010 vintage and what particularly caught my attention was the one made with grapes from La Creueta. It is a very mineral red wine, with black fruit (blackberries) and balsamic notes, and stands out especially because of its long and extremely fresh finish which makes

del 2007, coincidiendo con la incorporación de Rofes, son los nuevos vinos de la más alta gama que podrían empezar a comercializar a partir del próximo mes de marzo. Caté los vinos en los propios viñedos de los que nacen y con los que Scala Dei quiere intentar explicar su personalidad a través de sus grandes garnachas de baja producción. La llicorella de la parcela La Creueta (con vides de unos 48 años), los cantos rodados de Artigots (con garnachas de 55 años) y la arcilla de Sant Antoni, con vides también plantadas hace más de medio siglo, han permitido elaborar tres grandes garnachas, que se comercializarán conjuntamente en una misma caja que se ofrecerá por unos 180 euros. Son vinos de la añada 2010 de los que me ha apasionado especialmente el elaborado con uvas de La Creueta.

Es un tinto muy mineral, con notas a frutas negras (moras), balsámico y que destaca, muy especialmente, por un largo y fresquísimo final que lo hacen elegantísimo. Con estos tres grandes vinos nacidos en ancestrales viñas que cultivaron los monjes de La Cartuja de Scala Dei confían alcanzar la distinción de Vi de Finca, un honor que hoy por hoy solo ostenta Clos Mogador.

En Cellers Scala Dei han trabajado en los últimos años por trascender en calidad adaptando la bodega a sus 41 viñas diferentes. Cuentan con 66 hectáreas de viñedos propios, a las que suman 12 he4ctáreas de proveedores que controlan directamente. En el 2011 llegaron a realizar hasta 56 vinificaciones diferentes. Junto con Ricard Rofes y Diego Lo Petre, pude catar una amplia vertical de sus vinos y dos enormes joyas: los Cartoixa de 1974 y 1975 (me quedo con esta última histórica añada).

it very elegant indeed. With these three great wines originating in ancient vineyards that were cultivated by the monks of the Cartuja de Scala Dei they hope to obtain the distinction of Vi de Finca (Estate Wine), an honour which for the present only Clos Mogador possesses.

Over the last few years, they have been working at Cellers Scala Dei to make improvements in quality, adapting the winery to their 41 different vineyards.

They own 66 hectares of vineyards, to which they can add 12 hectares belonging to suppliers that are under their direct control. In 2011 they managed to carry out 56 different vinifications.

Along with Ricard Rofes and Diego Lo Petre, I was able to do an extensive vertical tasting of their wines and two magnificent gems: the 1974 and 1975 Cartoixa (the latter historic vintage was the one I preferred).

Saó del Coster I brought my Priorat tour to a close with a visit to the vineyards and small artisan winery of Saó del Coster, in Gratallops.

Fredi Torres from Galicia, quite a reference point for the new Priorat after ending his deejay days in Lausanne, has turned into an up-and-coming vine grower and wine producer. Without hesitation, he claims to prefer working the land with his mules, Morena and Pepe than with the tractor and now has around seventy hens too. Fredi Torres supports farming with animal traction so as to “respect, and not alter, the mountainous geography of the costers (terraced slopes) with the Priorat’s old vineyards”. Having animals, he maintains, allows them to make compost and continue working biodynamically in all their vineyards. For Fredi Torres it is a personal choice as well, since “I was born on a farm in Galicia and the Saó del Coster project is like returning to my roots where animals played a very obvious part”. Torres, in conjunction with various associates, has just extended his old vineyards with the old Canyarets coster: 8 hectares where Garnachas and Cariñenas up to 80 years old will be brought back into action to produce singular wines. We went up to the new

Para Fredi Torres también es una elección personal, puesto que “nací en una granja gallega y el proyecto de Saó del Coster es como un regreso a unos orígenes en la que los animales forman parte de manera clarísima”. Torres, con la colaboración de diversos socios, acaba de ampliar sus viejos viñedos con el viejo coster de Canyarets: 8 hectáreas donde garnachas y cariñenas de hasta 80 años serán recuperadas para la elaboración de singulares vinos. Subimos a la nueva finca con un desvencijado todoterreno para recibir con gran satisfacción las primeras gotas de lluvia de uno de los veranos más secos que se recuerdan en el Priorat.

Con una producción de poco más de 20.000 botellas, Saó del Coster, fundada en 2004, afrontará próximamente la construcción de una nueva bodega, en la que se ha anunciado que invertirán 400.000 euros. Fredi Torres es un ferviente seguidor de la ecología y la biodinámica pero nada quiere saber de sellos ni de corsés normativos.

Produce “S”, Terram y su escaso pero memorable cariñena Planassos. Con Fredi Torres y su colaborador Xavier Barrachina caté sus más que interesantes vinos, en botella y en barrica.

Una frescura digna de admirar pese a la gran concentración sobresale en sus vinos más jóvenes mientras que en las añadas más antiguas se constata una clara inspiración clásica, bordelesa, en la que la madurez y las notas de crianza (cueros) convierten en aterciopelados sus tánicos tintos.

Fredi Torres is an avid supporter of organic and biodynamic farming but wants nothing to do with official stamps or prescriptive straitjackets. He produces “S”, Terram and his limited but memorable Cariñena wine, Planassos. Along with Fredi Torres and his associate Xavier Barrachina, I tasted their extremely interesting wines, both from the bottle and barrel. A freshness worthy of admiration in spite of great concentration excels in the younger wines, while in the older vintages there is confirmation of a definite classic inspiration from Bordeaux, with maturity and ageing notes (leather) turning their tannic reds velvety. ●

Anteriormente, aquí, ya hemos tenido la oportunidad de catar otros sublimes vinos de la familia Eguren, de otras bodegas del grupo. La bodega está situada en San Vicente de la Sonsierra. Aquí se da la confluencia de los climas Atlántico, procedente del mar Cantábrico, Mediterráneo, que asciende por el valle del Ebro, y matices continentales procedentes de la meseta central. Todas estas influencias, conjuntamente con unos suelos pobres en materia orgánica, con abundantes cantos rodados y buen drenaje del subsuelo, hacen que la uva Tempranillo se manifieste aquí en su mayor esplendor.

Vista: Vistoso color cereza picota muy intenso, con reflejos violáceos. Limpio y brillante, con abundante y densa lágrima.

Nariz: Potente, con innumerable matices de fruta que recuerdan a ciruelas negras, pulpa madura y grosellas. Aromas constantes de la barrica nueva que aún no se muestra integrada del todo.

Boca: Desbordante pero muy elegante. Con mucho volumen y buena acidez. Aun marca el tanino por su extrema juventud. Las notas de fruta son muy evidentes y se funden con agradables recuerdos balsámicos y notas torrefactas que recuerdan al cacao. Es un vino que aun necesitará unos meses en botella para pulirse.

Comentario: Finca el Bosque nace de una pequeña viña de tan solo 1,48 hectáreas plantada a inicios de los años 70 del siglo pasado únicamente con Tempranillo. La vendimia está realizada con sumo cuidado a mano, de manera artesanal y posteriormente es criado en barrica bordelesa de roble francés y centro-europeo durante 18 meses.

Una joya por pulir que en estos momentos necesita reposar un tiempo en botella pues aún se muestra tímido, menguado de intensidad y ligeramente pausado. Un gran vino vestido con una magnifica botella bordelesa antigua con más de un kilogramo de peso, que guarda en su interior, de manera celosa, la excelente cosecha 2010 y que mantendrá la tenacidad de la añada durante mucho tiempo. Un vino para guardar y disfrutar con grandes ágapes festivos. ¡Viva la Tempranillo Riojana!

100 % Tempranillo

We have already had the opportunity to taste some of the superb wines produced by the Eguren family. The winery is located in San Vicente de la Sonsierra. Here we have a meeting of climates, Atlantic from the Bay of Biscay, Mediterranean, coming up through the Ebro Valley, and continental touches from the central plateau.

Because of these influences, combined with very pebbly soils low in organic matter, with good drainage of the sub-soil, the Tempranillo grape shows its very best in these vineyards.

Appearance: Appetizing, very intense dark cherry hue with purple highlights.

Clean and bright, with lots of thick legs.

Nose: Powerful, with countless fruit tones reminiscent of dark plums, ripe fruit pulp and red currants. Persistent new oak aromas which are not yet fully integrated in the whole.

Palate: Extremely full but very elegant.

Very big with good acidity. Marked by tannin due to the wine’s extreme youth. The fruit notes are very distinct and mingle with pleasant balsamic flavours and roasted notes reminiscent of cocoa. The wine still requires a few months’ rounding out in bottle.

Comment: Finca el Bosque comes from a small vineyard of only 1.48 hectares planted with Tempranillo in the early 70’s. Harvesting is carried out by hand with meticulous care, using traditional methods, and the wine is then aged in French and Central European oak barrels for 18 months. This wine is a real gem that requires further polishing and which, at the current time, needs further bottle aging as it is somewhat closed and slightly stalled with reduced intensity. A fine wine presented in a magnificent old Bordeaux style bottle weighing in at over a kilo, jealously protecting the excellent 2010 vintage, whose tenacity it will preserve for a very long time. A wine for laying down and serving on special occasions and banquets.

El Tinto The Red Wine Mariano García, creador de la bodega familiar Mauro (en honor a su padre), es una de las figuras enológicas más reconocidas y respetadas de España desde que fuera durante más de treinta años parte del equipo técnico responsable de Vega Sicilia. En 1978 compagina su labor en Valbuena de Duero con la creación de su bodega en los viñedos históricos de Tudela de Duero. Sus vinos rezuman carácter, fuerza y un estilo claramente definido que les imprime un sello personal inconfundible. Hoy en día, junto a sus dos hijos, Alberto y Eduardo, ha sido artífice de otras marcas que engloban el grupo como Bodegas MauroDos (en Toro), Leda, Astrales o Aalto entre otras.

Vista: Color rojo cereza picota con reflejos violáceos muy vivos y ribete granate intenso.

De capa muy alta. Totalmente opaco.

Nariz: De intensidad muy alta, con notas licorosas dulces muy evidentes, muestra mucha fruta negra madura ligeramente compotada. Sobresalen notas especiadas y un final ahumado muy elegante.

Boca: Con una entrada gruesa, muy redonda con presencia de fruta exuberante. Tiene un recorrido energético con notas medicinales que le aportan mucho frescor. Su final es dulce, cálido y muy largo. Eterno.

Comentario: Tremendo vino de estirpe y carácter, con un voluptuoso recorrido en boca, es igualmente elegante y muy refinado.

Nacido en una pequeña parcela de tan solo tres hectáreas, su producción se limita a menos de ocho mil botellas. Fue criado con mimo en barricas de roble francés durante 26 meses y es la quinta esencia de la uva tempranillo en tierras tudelanas. Crece a medida que se abre en copa y recela de los tragos largos. Necesitará un poco de tiempo aun en botella para manifestar todo su esplendor pero está llamado a ser uno de los grandes Terreus de la década. Con su inconmensurable estructura, es un torbellino de sensaciones que se asienta como un tótem en todas las mesas. La delicia de San Roque.

Mariano Garcia, creator of the Mauro family bodega (named after his father), is one of the most well known and respected winemaking figures in Spain as he was a member of the Vega Sicilia technical team for over thirty years. In 1978 he combined his work in Valbuena de Duero with the creation of his bodega in the historic Tudela de Duero. His wines exude character, strength and a clearly defined style which gives them an unmistakable personal stamp. Today Garcia, along with his two sons, Alberto and Eduardo, has been the architect of other brands within the Group such as Bodegas MauroDos (Toro), Leda, Astral or Aalto, among others.

Appearance: Dark cherry-red hue with very vivid purple reflections and an intense garnet rim. Very bright colour.

Completely opaque.

Nose: Very intense with salient sweet liquorice notes, it shows a great deal of ripe, slightly stewed, black fruit. Spicy notes jump out and the finish is very smoky and elegant.

Palate: Thick on entry, very smooth with lush fruit. It has a lively thread running through it with medicinal notes bringing a great deal of freshness. The finish is soft, warm and very long. It goes on forever.

Comment: Tremendous wine lineage and character with a voluptuous thread running through the wine on the palate, it is both elegant and refined. It hails from a small vineyard parcel of just three hectares and less than eight thousand bottles are produced. The wine has been gently aged in French oak barrels for 26 months and represents the quintessence of the Tempranillo grape grown in Tudela territory. It gets bigger and bigger as it opens up in the glass, and is best sipped.

It will need some time in bottle to show its best, but it is destined to be one of the great Terreus of the decade. With its big structure, it is a whirlwind of sensations, and will sit like a totem on every dining table. The delicacy of San Roque.

Descendientes de José Palacios nace en 1999 en el término leonés de Corullón de la mano de Álvaro Palacios y su sobrino Ricardo, alma mater del proyecto que rebosa energía por los cuatro costados. Cuenta con un total de 27 hectáreas y una selección de parcelas con cepas viejas de gran calidad que significan una constante en su búsqueda de la perfecta Mencía. Sus vinos se rigen por principios biodinámicos y logran así vinos frescos, con carácter y expresivos que demuestran la grandeza de la uva Mencía, imagen perfecta de la singularidad que nos muestra la comarca del Bierzo. Los viñedos están diseminados en pequeños parajes localizados en diferentes altitudes que reflejan la abrupta orografía formada por laderas con pronunciadas pendientes.

Vista: Color rojo cereza purpura con reflejos violáceos, muy limpio y brillante.

Nariz: Muy limpia y fresca, con enorme presencia de fruta roja. Notas balsámicas muy marcadas y finalmente aparecen notas ligeramente tostadas.

Boca: Con un tanino muy domado y armonioso en conjunto, es elegante y sedoso.

No tiene un peso excesivo en boca pero sigue siendo muy frutal. El final de boca es mineral, ligeramente especiado y con recuerdos torrefactos muy sutiles.

Comentario: Las Lamas 2010 nace del paraje que lleva su nombre y está formado por tres parcelas de viñas muy viejas con unos rendimientos ínfimos, sobre laderas vertiginosas donde se asientan los viñedos bercianos. Posteriormente es criado con suma delicadeza durante aproximadamente 14 meses en barrica de roble francés dando como resultado un vino de gran definición y enorme elegancia. Quizás huye un poco de la potencia que se otorga a su homologo Moncerbal, más opulento en todas sus facetas. Destaca la armonía y sutileza con una deliciosa fruta fresca muy evidente tanto en nariz como en boca. Aunque puede evolucionar favorablemente en los próximos años, sorprende lo amable y accesible que es ahora en esta añada 2010. Un maridaje especial puede ser llevarlo al límite con un lechazo deshuesado con cerezas.

100 % Mencía

Descendientes de J. Palacio was created in 1999 in the Corullón area of Leon by Alvaro Palacios and his nephew Ricardo, alma mater of the project who literally overflows with energy. It possesses a total of 27 hectares and a selection of parcels of high quality, old vines, a constant element in his quest for the perfect Mencia. His wine-making is governed by biodynamic principles resulting in fresh wines with character and expression that show the greatness of the Mencia grape variety, a perfect illustration of the unique character of wines from the Bierzo region. The vineyards are scattered in small parcels growing at different altitudes reflecting the rugged, hilly terrain of very steep slopes.

Appearance: Crimson cherry red hue with purple highlights, very clean and bright.

Nose: Very clean and fresh, packed with red fruit. Very marked balsamic notes with toasted notes coming through later.

Palate: Silky and elegant with smooth, harmonious tannins. Not too much weight on the palate but still very fruity. Mineral, slightly spicy aftertaste with very subtle hints of roasting.

Comment: Las Lamas 2010 is produced in a locality of the same name and is made up of three parcels of very old vines with tiny yields growing on the vertiginous slopes of the Bierzo vineyards. It is gently aged for about 14 months in French oak barrels and the result is a wine of great elegance and high definition. It perhaps lacks some of the power delivered to its counterpart Moncerbal, more opulent in all its facets. This wine is distinctive for its harmony and subtlety with delicious fresh fruit very evident on the nose and palate.

Although it should age well in the coming years, it is surprising how pleasant and approachable the 2010 is now. A special food pairing to really set it off would be boned lamb with cherries.

El Tinto The Red Wine Hablar de los vinos de Francesc Grimalt es ilustrar de manera muy exacta la historia de los vinos del archipiélago balear de los últimos veinte años, especialmente de los vinos mallorquines de la comarca del Migjorn, situada al sudeste de la isla. Es el responsable directo de poner en el punto de mira del gran público la desconocida “elegancia agreste” de la cepa balear Callet.

La bodega 4kilos es inaugurada oficialmente en 2008. Se encuentra situada en el pueblo de Felanitx. Trabajan viñas emplazadas en diferentes municipios de la isla pero suelen seguir un patrón bastante idéntico: viñas viejas, plantadas principalmente sobre suelos franco-arcillosos con abundante óxido férrico y cobertura vegetal autóctona practicando así una viticultura sostenible.

Vista: Bonito color rojo violáceo con ribete purpura. De capa media, tiene un color muy seductor.

Nariz: Muy expresivo, ligeramente cremoso con notas muy marcadas de especies destacando la pimienta blanca, las frutas negras y la flor de hibiscos. Poco a poco aparecen notas más minerales y grandes recuerdos terrosos.

Boca: De entrada amable y dulce. Con gran expresión. Especiado y cálido, tiene una fruta madura bien definida pero nada pesante.

Notas ligeramente minerales y recuerdos a incienso. Final muy largo y sabroso. Una delicia muy elegante.

Comentario: El vino que culmina el esfuerzo de Grimalt de ilustrar su visión de la uva Callet. Un “casi” monovarietal que nace de dos minúsculas parcelas situadas en el municipio de Felanitx. Es un vino de suma elegancia y enorme profundidad. Un vino mediterráneo que huye de la pesadez que nos otorgan las horas al sol. Es un “pequeño borgoña” a la mallorquina con carácter y personalidad aplastante. La variedad Callet, tan delicada, enfermiza, irregular y difícil de trabajar…sino se tiene la maestría de Grimalt, expone y da como resultado un vino de carácter en estado puro, con una enorme definición en todos los sentidos y que hace las delicias de quien lo prueba. Y serán pocos porque de esta primera añada tan solo se han elaborado mil botellas.

Aunque es un vino muy versátil a la hora de conjuntarlo, pruébenlo con un mero a la mallorquina con pasas y piñones. Irresistible.

When you talk about Francesc Grimalt’s wines you are effectively talking about the history of Balearic wines over the last twenty years, especially the Mallorcan wines from the Migjorn region in the southeast of the island. Grimalt is directly responsible for bringing the little known “rustic elegance” of the Callet Balearic grape variety to the public’s attention.

The 4kilos Bodega, located in the town of Felanitx, officially opened in 2008. The Bodega works vineyards located in different parts of the island but they generally follow the same format: old vines, planted mainly on clay loam soils with abundant iron oxide, native vegetation cover and the use of sustainable viticulture.

Appearance: Lovely purple red hue with a crimson rim. Very attractive medium depth colour.

Nose: Very expressive, slightly creamy with very marked spicy notes, particularly white pepper, dark fruit and hibiscus blossom.

More mineral notes gradually emerge, along with strong earthy-type aromas.

Palate: Pleasant and soft on entry. Great expression. Spicy and warm, with well defined ripe fruit but nothing heavy. Slight mineral notes and hints of incense. Very long, delicious finish. An elegant treat of a wine.

Comment: This wine represents the culmination of Grimalt’s work to illustrate his vision of the Callet grape. An “almost” mono-varietal produced in two tiny parcels in the Felanitx area. It is a wine of great elegance and tremendous depth. A Mediterranean wine, without any hint of heaviness, in which the sun shows through.

It is a “small burgundy”, Mallorcan-style, with character and a very big personality. The Callet variety, so delicate, sickly, irregular and tricky to work with… has benefited from Grimalt’s expertise. The result is a wine of character in its purest form, well defined in every way, and a delight to all those who taste it. And these will be a lucky few - only one thousand bottles have been produced of this first vintage. Although it goes well with many types of dishes, try it with a Mallorcastyle Grouper with raisins and pine nuts.

Situada en la famosa “milla de oro”, la finca de Abadía Retuerta cubre poco más de 700 hectáreas de bosque y viñedo que quedan bañadas por el río Duero, cerca de la población de Sardón de Duero. Desde el año 1996 fue refundada la finca como hotel y bodega que elabora vinos tintos no adscritos a la denominación de origen Ribera del Duero y que cultiva, en mayor parte, Tempranillo compartiendo espacio con parcelas de Cabernet Sauvignon, Merlot, Syrah y Petit Verdot. El tándem enológico formado por el consultor bordelés Pascal Delbeck y Ángel Anocibar ha dado como resultado vinos de extracción generosa, sabrosos, carnosos y mucha elegancia ganándose así el prestigio a nivel internacional.

Vista: Color rojo cereza picota muy cubierto con ribete violáceo, capa alta y una presente lágrima bien tintada. Realmente bonito.

Nariz: Intensidad muy alta, concentrado y sorprendentemente floral. Aparecen las notas de fruta negra madura acompañadas de recuerdos a brasas. Torrefactos evidentes muy elegantes seguidos de especies. Muy complejo y cambiante.

Boca: Con fuerza y volumen. Elegante sin duda y mucho más armonioso de lo que aparenta. Sabores frutales y balsámicos que terminan en picantes especiados. Delicioso.

Comentario: Para los aficionados a los varietales foráneos bien adaptados, a los vinos estructurados, con potencia y “nomenclatura enológica” rebosante por los cuatro costados, este es sin duda su Cabernet Sauvignon español de cabecera. Y vaya como se expresa… con carácter y fuerza. Es aun un potro por domar pero apunta una vida larga y completa para el futuro. Nacido en las parcelas de más altitud de la finca, ha sido criado en barrica de roble francés durante 22 meses. La carne de ternera estofada con setas o simplemente hecha a la brasa es una delicia para no perderse.

100 % Cabernet Sauvignon

Located in the famous “Golden Mile”, the Abadía Retuerta estate covers just over 700 hectares of woods and vineyards, watered by the river Douro, near the village of Sardon de Duero. Since 1996 the estate has been a hotel and bodega producing red wines that are not part of the Ribera del Duero DOC and cultivating mainly Tempranillo which shares space with parcels of Cabernet Sauvignon, Merlot, Syrah and Petit Verdot. The oenological duo formed of Bordeaux consultant, Pascal Delbeck, and Angel Anocibar has resulted in wines of generous extraction, delicious, meaty and with a great deal of elegance, gaining themselves international prestige.

Appearance: Dark cherry red hue, very covered, with a violet rim, very bright with noticeable, nice-coloured legs. Really nice.

Nose: Very high intensity, concentrated and surprisingly floral. Ripe black fruit notes come through along with hints of coal. Very obvious, elegant roasted notes followed by spice. Very complex and changing.

Palate: Shows strength and volume.

Certainly elegant, and much more harmonious than it appears. Fruit and balsamic flavours with a warm, spicy finish. Delicious.

Comment: For fans of well-adapted foreign grape varieties, structured wines, with power and “oenological nomenclature” bursting through, this is definitely a top Spanish Cabernet Sauvignon. And look how it expresses itself… with character and strength. It is still a pony that needs to be broken in, but it looks like it has a long, full life ahead of it. Hailing from plots higher up than the estate, it has been aged in French oak barrels for 22 months.

You should try it with veal braised with mushrooms or just plain grilled. A treat not to be missed.

El Tinto The Red Wine Álvaro Palacios aterrizó en el Priorat en aquel ya lejano 1989 para descubrir la mística que envuelven las tierras que los cartujos moraron durante siglos y que tan alejadas quedaban de su Alfaro natal. Quedo prendado de inmediato y se propuso el reto de producir vinos de calidad en una zona muy desarraigada de los grandes núcleos de población y que aparentemente estaba en retroceso. Las 30 hectáreas en propiedad que dirige junto a Oriol Castells están conformadas en terrazas y “costers”, forma de cultivo tradicional y autóctona del Priorat.

Su moderna y bella bodega se sitúa en el municipio de Gratallops y es donde ha ido adquiriendo una madurez y destreza que le ha llevado a posicionar sus vinos como referentes mundiales.

Vista: Color rojo rubí con ribete violáceo.

Muy limpio y brillante. Muestra una clara delgada lágrima tintada en copa de caída rápida.

Nariz: Inicialmente algo tímido, manifiesta notas terrosas. Desaparecen y dan paso a frutas rojas muy agradables. Las notas de barrica son muy sutiles y agradables.

Boca: Secante, con fuerza y con un volumen sorprendentemente delgado. Muy mineral y fresco, devuelve notas muy florales y frutales adornadas con chocolates negros.

Comentario: Finca Dofí nace de una propiedad de diez hectáreas donde la Garnacha es mayoritaria y se complementa con detalles de Cariñena y Syrah. Huye de manera muy evidente de los concentrados excesivos tan acusados en otros vinos de la región que ostentaban musculatura pero se manifestaban con un vacio evidente en el centro de la boca. Lo que encontramos aquí es todo lo contrario. Frescor a raudales, fruta roja mágica que se entrelaza con delicadas notas de chocolate con naranjas y que dejan una sensación muy placentera al beberlo.

Es un vino que te conquista desde el primer sorbo y que te retiene en el trago mientras tu alrededor cambia o como dirían los monjes “Stat Crux dum volvitur orbis”.

Alvaro Palacios landed in Priorat back in 1989 to explore the mysticism which shrouds the lands where the Carthusians dwelt for centuries, far from their native Alfaro. He immediately fell in love with the land and set about producing quality wines in an area far removed from large urban centres and which was apparently in recession. The 30 hectare property which he manages with Oriol Castells is set out on terraces and “costers”, a traditional, local Priorat method of growing. His beautiful, modern bodega is located in the Gratallops area and this is where he has grown in maturity and in skill, with the result that his wines are positioned as global references.

Appearance: Ruby red hue with a violet rim. Very clean and bright. Displays thin, clear-tinted legs which quickly run down the glass.

Nose: Somewhat shy at first, expresses earthy notes. These disappear and give way to very pleasant red fruit. The barrelageing notes are very subtle and pleasant.

Palate: Drying, with strength and surprisingly slender volume. Very mineral and fresh, it gives up very floral and fruity notes adorned with dark chocolates.

Comment: Finca Dofí comes from of a ten hectare property where the predominant Grenache is supplemented by a bit of Carignan and Syrah. We found this 2010 to be really attractive and very accessible. It very obviously rejects the excessive concentration often found in other wines from the region which tend to show a great deal of musculature but which are sadly lacking, mid-palate. What we find here is the opposite. Exuding freshness, magical red fruit that mingles with delicate notes of chocolate with orange, and a very pleasant drinking sensation. The wine is captivating from the first sip and keeps you drinking it while your surroundings change and, as the monks would say, “Stat Crux dum volvitur orbis”.

Aunque muchos no lo crean, existen albariños en el mercado (cada vez más) para nuestro gozo y placer que muestran con orgullo en su etiqueta que han cumplido más de doce meses en botella. Esta tendencia, no tan novedosa, resume la errónea idea preconcebida que los vinos elaborados en Rias Baixas han de consumirse al año siguiente de su embotellado. Por suerte, gente como Marisol Bueno han ayudado a que veamos realmente donde reside el carácter más sabroso de los albariños criados y reposados.

Iniciaron en Pazo Señorans este reto en la década de los 80 y hoy en día, muchos más les han seguido y pueden demostrar al mundo que con un cuidado meticuloso, trabajo serio y riguroso y tenacidad constante, sus vinos blancos tienen una gran personalidad y pueden ser “gratos y muy longevos”.

Vista: Amarillo pajizo con destellos verdosos, vivos y brillantes.

Boca: Con volumen. Acidez lateral muy marcada. Notas de lima y hervaceos muy marcados. Buen recorrido con sensación limpia. Muy largo.

Comentario: Uno de los vinos blancos más admirados en España. Un enorme ejemplo de vino blanco de guarda sin barrica. Más de treinta meses en contacto con sus lías para dar como resultado un vino elegante, con volumen, dotado de una gran personalidad que nos regala una agradable persistencia en boca. Un vino que evoca al pazo feudal de siglos pasados, que nos traslada a la Galicia rural de antaño, al encanto de un paisaje mojado por las influencias oceánicas, al color verde como tapiz de fondo. Un vino que puede acompañar a los menos arriesgados con una excelente parrillada de marisco fresco pero que si deciden ser más osados, unos callos a la gallega les parecerán más livianos con él a su lado.

100 % Albariño

Although many find it hard to believe, there are albariños on the market (an increasing number) for our drinking enjoyment and pleasure, which proudly display on their label the fact that they have spent over twelve months in bottle.

This trend, not so new, is in response to the misconception that wines made in Rias Baixas have to be drunk within one year of bottling. Luckily, men like Marisol Bueno have helped us get to know the delicious character of albariños that have been aged and left to rest. In Pazo Señorans work started in the 80’s and today, many more have followed, to show the world that with meticulous care and persistent, hard work, the white wines show great personality and can be “pleasant and very long-lived.”

Appearance: Straw yellow with greenish, bright, shiny tints.

Nose: Concentrated, needs to breathe.

Stone fruit, watermelon, floral fragrances.

Very nice on the finish.

Palate: Volume. Marked lateral acidity.

Very marked lime and grassy notes. Nice throughout with a clean sensation. Very long.

Comment: One of the most admired white wines in Spain. A great example of white wine that has not been barrel aged but can be laid down. Over thirty months’ contact with its lees has resulted in a big elegant wine, blessed with a big personality and leaving us with a pleasant lingering aftertaste. A wine that evokes the feudal Pazo of past centuries, taking us back to the rural Galicia of yesteryear, the charm of a landscape soaked by oceanic influences, wall-papered green. This wine would be a safe bet with excellent grilled seafood but for the more daring, Galician tripe would be nicely uplifted by this wine.

El Blanco TheWhite La joya blanca de Castilla León anduvo de enhorabuena el día en que Didier Belondrade quedó prendado de los encantos que la casta verdejo podía ofrecer al mundo del vino y se inició así una relación perenne que les ha llevado mutuamente a ser uno de los matrimonios más fructíferos en todo el territorio nacional en cuanto grandes blancos españoles se refiere. Ella, denostada en el pasado, nunca tuvo quien la cuidara, quien la mimara y quien le hiciera creer en todo el poder aromático, glicérico, sensorial y elegante que aunaba en su interior. Él, un francés nacido entre el Tart y el Garona quedó ensimismado de ella tras el primer sorbo, la imaginó vestida de un sutil roble elegante para convertirla en eterna y alzándose así como Reina de la tierras castellanas, le propuso de inmediato compromiso eterno.

Lo que ocurrió después de 1994 ya es historia en la región de Rueda.

Vista: Amarillo pajizo con destellos ligeramente dorados. Limpio y brillante.

Nariz: Muy franco, floral y ligeramente anisado y piel de cítrico. Sin notas evidentes de barrica nueva.

Boca: Ataque intenso, muy redondo y refrescante. Recuerdos de vainilla fresca, camamila y amargos suaves agradables.

Notas profundamente minerales escondidas al final de la copa. Buena acidez y aun con margen de mejora en botella.

Comentario: No nos cansaremos nunca de ver el progreso que imprime esta verdejo año tras año y es que lo más agradable de probar los vinos de Didier es descubrir su majestuosa destreza para crear un vino que se disfruta tanto siendo joven como su continuo gozo cuanto más tiempo la botella la encierra en su interior. Esta añada es soberbia y muy buena en todos los aspectos. No es necesario esperar ya mucho más si se quiere percibir la esencia de la uva verdejo magistralmente fermentada en barrica y criada durante diez meses, pero su evolución, marca de la casa, hará las delicias de los más pacientes si la tentación no se cruza en su camino.

Imagínenlo con unas gambas con dados de pie de cerdo. Sublime.

The white jewel of Castilla León got lucky the day Didier Belondrade fell for the charms that la Verdejo caste could bring to the wine world. So began an enduring relationship that has led to one of the most successful matches in Spain, as far as great white Spanish wines are concerned.

She, maligned in the past, never had had anyone to care for her, to pamper her or give her belief in her inner aromatic, glycerin, sensorial and elegant power. He, a Frenchman born between the Tart and the Garonne, enamoured from the first sip, imagined her clad in subtle, elegant oak enabling her to become eternal. So raising her up as the Queen of the lands of Castile, he immediately proposed his eternal commitment to her. What happened after 1994 is history in the Rueda region.

Appearance: Straw yellow with light golden glints. Clean and bright.

Nose: Very honest, floral with slight aniseed and citrus peel. No obvious new oak notes.

Palate: Intense, very smooth and refreshing on entry. Aromas reminiscent of fresh vanilla, camomile, and soft, pleasant bitters. Very deep mineral notes hidden at the end the glass. Good acidity, still room for improvement in bottle.

Comment: We never tire of seeing the progress made by this Verdejo year after year. But what is most pleasing about tasting Didier’s wines, is discovering the majestic skill he used to create a wine that can be appreciated when young yet offering continued enjoyment the longer it remains in bottle. This vintage is superb and very good in all its characteristics. No need to wait much longer to appreciate the essence of the Verdejo grape masterfully fermented in barrel and aged for ten months, but its development in bottle, the bodega’s trademark, will delight patient drinkers if temptation does not cross their path first. Imagine it with gambas with diced pigs trotters. Sublime.

Y si, reconozcámoslo, hemos llegado hasta aquí, unos u otros, gracias al trabajo que don Jaume Torres inició en 1870. Actualmente dirigida por la quinta generación, Torres elabora vinos de calidad más allá del territorio Español siendo una de las bodegas extranjeras pioneras en llegar a Chile en 1979 y desarrollar de manera notable el potencial vitivinícola del país andino, así como su desembarco en tierras californianas en la década de los 80 con Marimar Torres al frente de dicho proyecto.

Limpio y brillante Nariz: Aromas muy limpios algo tímidos.

Recuerdos de fruta blanca. Melón maduro, pera limonera y un fondo ligeramente amielado. Notas de barrica nueva bien integradas.

Boca: Cremoso al inicio con la presencia del vestido de madera al inicio. Notas avainilladas y toffe. Es fresco y floral con un final ligeramente amargo.

Comentario: Situado en el municipio de Vimbodí, en la comarca de la Conca de Barberà, nace uno de los vinos blancos más prestigiosos de nuestro país. El chardonnay más agradecido con el clima mediterráneo catalán. Sin estridencias, sin excesos, con muchos matices, elegancia y personalidad.

Un vino blanco fermentado y criado en barrica francesa que mejorará notablemente con algunos años más de botella. Un blanco merecidamente reconocido por la crítica año tras año. Sus combinaciones dependerán de la época del año que lo disfrutemos pero pescados blancos, crustáceos o carnes de ave ligeramente salseadas son una delicia con este blanco.

The Torres family winery has written the history of Catalan wine in the last century and reached every corner of the planet.

And yes, let’s admit it, we are where we are today thanks to the work started by Don Jaume Torres in 1870. Currently managed by the fifth generation, Torres produces quality wines both in Spain and abroad. It was one of the pioneering foreign wineries, setting up in Chile in 1979 and contributing significantly to developing the potential of this Andean country’s wine. Torres landed on Californian soil the 80’s with Marimar Torres at the helm.

Today Torres family wines are available in over 140 countries and, along with ten other wineries, is a member of the Primum Familiae Vini international association that admits only those family wineries which have defended and promoted winemaking traditions to future generations for many years, without any outside shareholders.

Appearance: Straw yellow with steely highlights. Clean and bright Nose: Very clean, somewhat shy. Hints of white fruits. Ripe melon, limonera pear and a slightly honeyed backdrop. Well integrated new oak notes.

Palate: Creamy with noticeably wood ageing aromas on entry. Toffee and vanilla notes. It is fresh and floral with a slightly bitter finish.

Comments: Located in the Vimbodí area in the Conca de Barberà region, this is where one of the most prestigious white wines in Spain comes from. The Chardonnay is more than at home in the Catalan Mediterranean climate. No fanfare, no excesses, but with elegance, personality and multiple nuances. A white wine fermented and aged in French oak which will improve dramatically with a few years bottle ageing. This white wine is deservedly recognized by wine critics year after year. The best food pairings will depend on the time of year, but generally speaking white fish, shellfish or poultry in a light sauce will be delicious with this white wine.

El Cava The Cava La aportación que la bodega familiar Agustí Torelló Mata ha hecho para el cava desde sus inicios es difícil de resumir en una sola página. Realmente, esta bodega nacida en 1950, es hoy en día una de las más reconocidas por el gran público por la enorme calidad final que ofrecen todos sus productos. Defensores de la singularidad varietal, siempre han apostado por mantener su identidad ligada a las variedades autóctonas, practicando una viticultura sostenible y “aliándose” con cepas viejas de las que extraen su mejor versión.

Vista: Amarillo pajizo muy brillante.

Burbuja fina y constante con formación de espuma muy blanca y compacta.

Nariz: Elegante y floral, con muy buena intensidad. Es realmente fresco. Recuerdos a manzana madura, grano de trigo tierno y flores blancas. Ligeras notas de crema inglesa muy agradables.

Boca: Envolvente, con muchos recuerdos vínicos, acidez pronunciada y elegancia final que lo convierten en un cava muy agradable.

El carbónico es amable y muy refrescante.

Comentario: La particularidad de las botellas de la bodega es reconocida a lo largo de todo el mundo. Siempre han sido elegantes y con acabados excelentes pero quizás Kripta sea la botella más singular que existe en el mundo del cava. Y es que su inconfundible forma de ánfora romana, obra del artista Rafael Bartolozzi, ha seducido y ha puesto a prueba nuestra destreza equilibrista a partes iguales, desde que vio la luz en 1979. Pero no solo el vestido enamora de este gran cava, su “alma”, su “esencia”, es notablemente superior. Un cava gran reserva con un mínimo de 48 meses de crianza con cierre de corcho natural, sin ningún tipo de maquillaje, que hace gala del cupage tradicional del cava, que se muestra siempre armónico, elegante, fresco y muy gastronómico. El centro de atención de una velada inolvidable.

The contribution that the Agusti Torello Mata family bodega has made to cava wine since its creation would be hard to sum up in just one page. In fact, this bodega established in 1950, is today one of the most well known to the general public due to the very great quality of all its products. Defenders of varietal uniqueness, they have always chosen to have their identity tied to native varieties, practicing sustainable viticulture and “partnering” with old vines from which they extract the very best.

Appearance: Brilliant straw yellow. Fine, constant bubbles with the formation of very white, compact foam.

Nose: Elegant and floral, with good intensity. It’s really fresh. Hints of ripe apple, soft wheat grain and white flowers. Light, very pleasant custard notes Palate: Enveloping, with many vinous aromas, pronounced acidity and elegance on the finish which make this a nice little cava. The carbon dioxide is pleasant and very refreshing.

Comment: The winery’s “special” bottles are recognized around the world. These have always been elegant with excellent detail, but Kripta perhaps boasts the most unique bottle in the world of cava. Its unmistakable Roman amphora shape, designed by artist Rafael Bartolozzi, has both seduced and challenged our senses in equal measure, since it first appeared in 1979. But it is not only the presentation that makes you fall for this great cava - its “soul”, or its “essence”, is notably superior.

A cava grand reserva with a minimum of 48 months of aging with a natural cork closure, without artifice, boasting the traditional cava coupage , always showing itself to be well-balanced, elegant, fresh and very gastronomic. Fundada en 1760 en Reims, cumplió recientemente su 250 aniversario, ha destacado siempre por el emplazamiento de sus vides en “el viñedo rey de la champaña”, el Grand Cru Le Mesnis sur Oger y por su incondicional “hermandad” desde 1988 con la prestigiosa maison Salon con la que comparte equipo técnico y propiedad. Aunque forma parte del mayor grupo familiar de Champagne, Delamotte sigue manteniendo su esencia inicial siendo un referente cualitativo en la región y muy apreciado en el mundo de los connaisseurs más avezados.

Boca: Voluminosa, muy contundente, con evidencias de fruta confitada y cítricos licorosos. El carbónico equilibra con frescor el final de boca. Muy limpio.

Comentario: Existen en el mercado cientos de espumosos que hacen gala de su singularidad para ser los elegidos en representar, en ciertas añadas, el estilo o la destreza de las casas de champagne. Desgraciadamente, algunas veces, ese honor se queda lejos o muy lejos de las pretensiones figuradas por ciertas firmas. En el caso de Delamotte, por suerte, no es así y su “Do de pecho” es magistral.

Proveniente de la magistral añada 2002, este “joven” champagne milesimado dará alegrías futuras muy apreciadas a los fans de los sabores intensos, cremosos y golosos. Es equilibrado y muy sabroso. Descaradamente robusto, es muy contundente cuando entra por primera vez en boca y su potencia incita a ser combinado forzosamente con algún festín que este a la altura. Unas vieiras frescas sobre parmentier de trufa, es un juego de niños para este gran champagne.

Founded in Reims in 1760, Delamotte recently celebrated its 250th anniversary.

It has always been best known for the location of its vineyards in the “the king of the champagne vineyards”, the Mesnis sur Oger Grand Cru, as well as for its enduring “fraternity” with the prestigious Maison Salon since 1988, with whom it shares a technical team and property.

Although part of the largest family group in Champagne, Delamotte retains its original essence as a quality reference in the region and much appreciated by the most seasoned of connoisseurs. Constantly and unconditionally promoting the virtues of the Chardonnay grape, its champagnes are elegant, very pleasant and made with consummate care. A real champagne that reaches every drinker without having sacrificed an ounce of quality.

Appearance: Bright coppery yellow hue.

Fine, constant bubbles with the formation of very white foam.

Nose: Abundantly creamy. Very distinct aromas of baked ripe fruit. Autolysis notes reminiscent of brioche, crême brulée, caramelized walnuts.

Palate: Very big and powerful, with noticeable candied fruit and liquor-like citrus. The carbon dioxide gives a fresh balance to the finish. Very clean.

Comment: There are hundreds of sparkling wines on the market that boast of their uniqueness to be chosen to represent the style or skill of the champagne houses, in certain vintages. Unfortunately, sometimes, that honour falls far or very far from the abstract claims of certain companies. Thankfully this is not the case of Delamotte, and its very best offering is masterful. From the excellent 2002 vintage, this “young” vintage champagne is bound to delight fans of intense, creamy, delicious flavours. It is well-balanced and absolutely delectable. Extremely robust, it is very powerful on entry to the palate and this potency cries out to be paired with some great celebration dish, on a par with it. Fresh scallops with truffle Parmentier is child’s play for this great champagne.

El Dulce Dessertt Wine “El vino de reyes; el rey de los vinos”. Así declaraba Luis XIV de Francia al vino dulce de Tokaj. Un vino de culto del que se afirma que hay que probar, al menos, una vez en la vida. La bodega Oremus fue adquirida por la familia Álvarez en 1993 con la noble intención de recuperar este delicioso vino histórico de origen Húngaro que se menciona incluso en el himno nacional del país. La labor de los Álvarez para recuperar las antiguas galerías de Oremus que datan del siglo XII y XIII ha sido titánica y ha devuelto el esplendor a una bodega que rezuma arquitectura clásica del imperio austrohúngaro por doquier.

Vista: Amarillo muy dorado con ribete pajizo, brillante y seductor.

Nariz: Con gran calidad aromática. Es melosa pero muy floral. Recuerdos de albaricoque, membrillo, mantequilla fundida y notas ahumadas muy ligeras.

Boca: Con un tacto muy graso es agradablemente frutal y exótico. Excelente acidez que lo convierte en excelso. Final eterno.

Comentario: Aunque en los últimos años han aparecido infinidad de vinos con el nombre de Tokaj en sus etiquetas, únicamente el que proviene de dicha región húngara puede presumir de ser un vino dulce inigualable. El caso del Oremus 6 Puttonyos es un claro ejemplo de la calidad asombrosa que aúnan estos vinos casi mágicos. Su dulzor extrema ligada a una excelente acidez lo convierten en un vino casi eterno en boca. Panal de abejas con frutas exóticas maduras fundido en la copa. Una experiencia que no deben dejar pasar y disfrutar ya sea simplemente a solas o acompañándolo de infinidad de postres. Es tan grande el abanico que les dejamos a su imaginación la combinación ideal.

“The wine of kings, the king of wines”. This is how King Louis XIV of France described the sweet wine of Tokaj. A cult wine that demands to be tasted at least once in a lifetime. The Oremus winery was acquired by the Alvarez family in 1993 with the noble intention of retrieving this delicious historic wine of Hungarian origin which is even mentioned in the country’s national anthem. The Alvarez family undertook the mammoth task of restoring Oremus’s ancient galleries dating from the 12th and 13th centuries. The winery, which features classical Austro-Hungarian Empire architecture throughout, has now been restored to its former glory.

Appearance: Very bright, alluring, golden yellow with a straw coloured rim.

Nose: Great aromatic quality. It is mellow but very floral. Hints of apricot, quince, melted butter and very light smoky notes.

Palate: Very fat, pleasantly fruity and exotic. Excellent acidity makes the wine absolutely sublime. Never-ending finish.

Comment: Although in recent years there have been countless wines displaying the Tokaj name on their labels, only wine which comes from the region can claim to be this unparalleled Hungarian sweet wine. The Oremus 6 Puttonyos is a shining example of the amazing quality of these almost magical wines. Its extreme sweetness combined with excellent acidity make it almost never-ending on the palate.

Honeycomb with ripe exotic fruit melted in the glass. An experience that should not be missed, enjoyed either on its own or accompanied by any number of desserts.

So great is the range that we will leave you to dream up the ideal food pairing.

Viña Pedrosa fue fundada en 1980 por tres hermanos unidos principalmente por el linaje Pérez Pascuas. Cultivan cerca de 135 hectáreas en propiedad, de las cuales más del 90% son de uva Tinta Fina y el resto Cabernet Sauvignon. Esta bodega ejemplar, de carácter familiar, goza de una enorme regularidad año tras año y sus vinos no tienen únicamente un carácter varietal de la zona burgalesa, sino que son elegantes y realmente muy longevos. Actualmente dos generaciones trabajan conjuntamente para continuar renovando el espíritu emprendedor con el que nacieron.

Vista: Sutil rojo picota con ribete amoratado y capa alta muy alta. Lágrima evidente y muy gruesa.

Nariz: Desbordante, con muchísima realidad de fruta negra y sobresaliendo notas de cuero y ahumados que realmente lo hacen atractivo. Muy en la línea de un ribera clásico.

Boca: Presencia evidente de tanino grueso bastante elegante. Muy sabroso. Sobresale el gusto a moras y cassís acompañado de recuerdos de barrica nueva, caja de puros y termina con un final enormemente largo y dulzón. Las especies aquí son una constante.

Envejecerá de manera muy digna.

Comentario: Las viejas vides del Pago de Valtarreña son el origen de este magnifico y genuino “vino de familia”. Con estas cepas retorcidas, cargadas de historia y fantásticamente conservadas hasta nuestros días, se logra un fruto complejo, concentrado y sabroso que nos da un vino de calidad suprema al que la barrica ha mimado durante 26 meses para dar como resultado un ejemplar carnoso, maduro y amplio con una vida muy larga por delante. Un lujo de vino que nos acerca a la Ribera del Duero más intimista, a los suelos arcillo calcáreos, al clima continental y a la razón por la cual estos vinos centraron la atención del mundo entero en la década de los noventa.

Aunque seamos muy previsibles, el lechazo castellano es el anillo al dedo de este gran representante de la Ribera del Duero.

Viña Pedrosa was founded in 1980 by three brothers descended from the Pérez Pascuas. They cultivate about 135 hectares of owned vineyards, of which over 90% are planted with the Tinta Fina grape variety and the rest with Cabernet Sauvignon. This model bodega with a family character boasts exceptionally consistent quality, year after year, and its wines do not only possess a varietal character from the Burgos area, they are also elegant and age very well.

Two generations currently work side by side, constantly renewing the entrepreneurial spirit with which they were born.

Appearance: Subtle dark cherry red with a purple trim and very bright colour.

Noticeable, very heavy legs.

Nose: Really overflowing with black fruit, salient leather and smoky notes making it very attractive. Very much in the mould of a classic Ribera.

Palate: Noticeable thick, fairly elegant tannin. Delicious. The taste of blackberries and blackcurrant leaps out, along with hints of new oak and cigar box, ending in an enormously long and sweetish finish.

Spices present throughout. Will age in a worthy fashion.

Comment: The old Pago de Valtarreña vines are at the origin of this magnificent, authentic “family wine”. The twisted vines, steeped in history and still beautifully preserved today, produce complex, concentrated and delicious fruit that gives us a wine of supreme quality, lovingly aged in barrel for 26 months, resulting in a meaty, ripe, big example with a long life ahead of it. A luxurious wine that takes us to the very heart of Ribera del Duero, to calcareous clay soils, a continental climate and to the reason why these wines captured the attention of the entire world in the nineties. Although we are being somewhat predictable, Castilian lamb is the perfect match for this great ambassador of the Ribera del Duero.

Los Extranjeros – The Foreigner

Francia France Situado en la denominación bordelesa de St-Estèphe, la más septentrional de Médoc, Chateau de Pez es una bonita finca que cuenta con algo más de 30 hectáreas de viñedo, asentadas sobre suelos arcillosos y roca caliza, conocidos específicamente como “calcaire de St-Estèphe”. Fue creado en el siglo XV y presume de ser, junto a Calon-Ségur, el más antiguo chateau de la denominación.

Clasificado como “Cru Bourgeois” desde 1932, sus viñas están básicamente compuestas por Merlot y Cabernet Sauvignon con una testimonial presencia de Cabernet Franc, Petit Verdot y Malbec.

Vista: Color rojo cereza, de capa media-alta, borde ligeramente evolucionado. Presencia de lágrima en copa.

Nariz: Fresco, con recuerdos de fruta negra. Presencia de la barrica muy elegante recordando a punta de clavo, cacao amargo, especies, torrefactos y regalices. Algo de cuero viejo sobresale lentamente del fondo.

Muy autóctono.

Boca: Intenso, muy pleno y equilibrado. En boca se confirman las complejas notas de frutas negras, en combinación con notas algo más balsámicas y las detectadas en nariz que evidencian su paso por madera.

No defrauda. Final elegante y especiado.

Comentario: Sin trampa ni cartón, así es este magnífico Cru Bourgeois. Franco, accesible, sabroso y muy bordelés. Es fácil percibir su origen por el estilo aromático principalmente por los recuerdos a cedro, especiados y cacaos finos. Ha sido criado durante unos 18 meses aproximadamente y en su composición se disputan el mayor porcentaje la Merlot y la Cabernet Sauvignon. Es un ejemplar muy reconocido por su enorme calidad y un ajustadísimo precio de salida. Un vino que muestra una notable madurez que suaviza su aparente dureza externa sin renunciar en ningún momento al frescor que le acompaña. Puede evolucionar algunos años más en botella pero ahora mismo ya se muestra muy hecho.

Platos de pluma como la perdiz estofada, pularda asada o confit de oca son perfectos para el estilo del vino.

Located in the Bordeaux appellation of St-Estèphe, the most northern in the Medoc, Chateau de Pez is a beautiful estate boasting over 30 hectares of vineyards seated on clay and limestone rock, referred to as “calcaire de St-Estèphe”. It was created in the 15th century and claims to be the oldest château in the appellation along with Calon-Ségur. Classified a “Cru Bourgeois” since 1932, its vineyards are basically made up of Merlot and Cabernet Sauvignon with a token presence of Cabernet Franc, Petit Verdot and Malbec.

Appearance: Cherry red, medium-high colour intensity, showing a bit of age on the rim and some legs in the glass.

Nose: Fresh, with hints of dark fruit. Very elegant oak reminiscent of nail heads, bitter cocoa, spices, roasted and liquorice notes. Hints of old leather slowly emerge from the background. Typical of its origins.

Palate: Intense, very full and well balanced. The wine repeats the complex dark fruit notes, combined with more balsamic type touches, and the other aromas detected on the nose, confirming the use of oak. It doesn’t disappoint. Elegant, spicy finish.

Comment: Absolutely no catches to this fine Cru Bourgeois. Honest, accessible, delicious and very Bordeaux. Its origin is easy to ascertain from the aromatic style and above all from the hints of cedar, spice and fine cocoas. It has been aged for around 18 months or so and the split between Merlot and Cabernet Sauvignon is fairly even. Chateau de Pez is often recognized for its sheer quality and its well honed price. It is a wine that shows remarkable maturity which softens the seemingly external hardness without sacrificing any of its freshness. It can benefit from a few more years in bottle but is looking good now. Poultry and feathered game dishes such as stewed partridge, roasted free range chicken or confit of goose are perfect for the style of wine.

Damos la bienvenida a una de las bodegas más icónicas del planeta a nuestra publicación, siendo referente mundial de los vinos Australianos. Esta magnífica bodega fue creada en 1844 en Australia del Sur, llegando actualmente a poseer significativos viñedos en Barossa, McLaren Vale, Eden Valley entre otros, por el Doctor británico Christopher Rawson Penfold y su esposa. La historia ha escrito muchos capítulos a favor de Penfolds y su diversificado portfolio no ha dejado de crecer, sobre todo desde la década de los noventa donde se aprecia un cambio mucho más internacional en sus productos.

Vista: Vino tinto de color negro con ribete violáceo. Opaco totalmente.

Nariz: Enormemente fragante. Muy concentrada, con notas de fruta negra muy madura cubiertas de notas oscuras que recuerdan a la soja, cola y café expresso. Aparecen las evidencias de barrica muy marcadas aun.

Festival de vainillas, moka, cedro y puntas de anís.

Boca: Accesible, de tanino grueso pero no agresivo. Se muestra fresco al inicio y manifiesta notas de fruta compotada. Sabores de barrica tostada con recuerdos cárnicos evidentes. Final largo con tacto amable.

Comentario: Un ejemplar único. Un vino de culto. Un clásico en las mejores cartas de vino del mundo, que nació tras una revelación en 1951 y que respondía a la obsesión de Schubert por crear un vino robusto, de gran equilibrio y soberbia longevidad. Este 2007 es todo lo que se puede esperar de un señor vino como tal. Aún en fase de letargo apunta maneras. Su golosidad es inconmensurable. Su musculatura es turbadora y es difícil de imaginar una shiraz con tanta clase en el mundo. Recorrerá aun muchos años hasta su final y solamente el tiempo dirá si estará a la altura de otros míticos Grange, pues la difícil añada que resultó ser 2007 no se lo pondrá fácil a priori. Fiel a su estilo, los 21 meses que pasó encerrado en roble nuevo americano son aun omnipresentes y los años de botella definirán si su actual enólogo, Peter Gago, ha creado un nuevo icono del siglo XXI. Rabo de buey con un salseado de frutas negras son el rival a batir.

We are pleased to welcome one of the planet’s most iconic wineries and world reference for Australian wines, to our publication. This magnificent South Australian winery, which currently owns important vineyards in Barossa, McLaren Vale and Eden Valley among others, was founded in 1844 by British doctor, Christopher Rawson Penfold and his wife. History has written many important chapters in the Penfolds’ story and its diversified portfolio has continued to grow, particularly since the nineties where one notices a much more international influence in their products.

Appearance: Red wine of black hue with a violet rim. Completely opaque.

Nose: Extremely fragrant. Very concentrated, with notes of very ripe black fruit covered with dark notes reminiscent of soy, cola and espresso. There then emerges evidence of barrel aging, still very marked.

A festival of vanillas, mocha, cedar and anise tips.

Palate: Accessible, thick tannin but not aggressive. It shows itself to be fresh at first and then displays notes of stewed fruit.

Flavours of toasted oak with noticeable meaty-type aromas. Long finish with a nice mouth feel.

Comment: A unique example. A cult wine. A classic on the world’s best wine lists, which came about after a revelation in 1951, the successful fruit of Schubert’s obsession with creating a robust wine of great balance and superb longevity. This 2007 is everything you would expect from a great wine such as this. Even in a dormant phase it already shows promise. It is delicious beyond measure. Its musculature is stunning and it is hard to imagine another Shiraz in the world of such class.

It will continue to develop for many years and only time will tell if it will live up to other legendary Granges because, as 2007 turned out to be a difficult year, it is not easy to predict. True to form, the 21 months it spent encased in new American oak can still be felt and years in bottle will determine whether its current winemaker, Peter Gago, has created a new icon of the 21st century. Oxtail with a black fruit sauce would be a winning combination.

El Desconocido – The Unknown

La joven bodega Pardas ha impactado de manera muy favorable en el público desde su primera añada, pasando a formar parte de los denominados Penedés de nueva ola que se articulan de manera muy tenaz alrededor de principios básicos como son la recuperación de uvas autóctonas, la practica de una viticultura sostenible y una enología poco intervencionista. Sellos de identidad que Ramón Parera junto a Jordi Arnan decidieron implementar en 1996 en la finca de Ca’n Comes, situada en el Alt Penedés.

Desde entonces, su gama de vinos no ha hecho más que crecer y la calidad de sus vinos ha ido a la par. Su singular y simpático emblema, un jabalí, sirve perfectamente como símbolo del territorio fértil y mediterráneo que es el Penedés y al mismo tiempo el carácter social y habitualmente nocturno ilustra el espíritu festivo de los pueblos nacidos a orillas del mare nostrum.

Vista: Amarillo pajizo de notable intensidad.

Limpio y brillante.

Nariz: Suave aromáticamente, necesita algo de aire para expresarse. Aromas de flor amarilla, cítricos y un carácter mineral muy elegante.

Boca: Ligero, con profundidad. Frutas de hueso amarillas. Notas de heno acompañan una acidez bien definida. Amargos sabrosos que culminan con un final medio largo. La botella pulirá a mejor el vino en los meses venideros.

Comentario: Nacido de la pequeña viña llamada La Lola de apenas 1,2 hectáreas, situada en la misma finca, es un magnifico ejemplo de vino blanco elaborado únicamente con la uva xarel·lo y que ha sido creado mediante la mezcla de mosto el cual una parte ha sido fermentada y criada en depósitos de cemento y otra en barricas de 300 litros. El resultado son apenas 1.300 botellas llenas se sabor, frescor y volumen que demuestran gran estructura y envergadura, pudiendo notablemente envejecer varios años para convertirse en un blanco criado de mucha autoridad. Con este espíritu tan característico y tratándose de un vino blanco singular, aprovechemos la fauna de la zona para enfrentarlo, sin miedo, a un delicioso estofado de jabalí.

The young Pardas bodega has been a hit with the general public since its first vintage, becoming part of what is referred to as the “Penedés New Wave” who talk with great persistence about basic principles such as the revival of native grape varieties, the practice of sustainable viticulture and minimum intervention winemaking.

Stamps of identity that Ramón Parera and Jordi Arnan decided to apply in 1996 in the Ca’n Comes estate in the Alt Penedès. Since then, the Bodega’s range of wines has grown and the quality of the wines along with it. Its very original and likeable emblem, a wild boar, is a fitting symbol for the fertile, Mediterranean territory of Penedes and at the same time, with its social and usually nocturnal character, it illustrates the festive spirit of the people born on the shores of the Mediterranean.

Appearance: Straw yellow with remarkable intensity. Clean and bright.

Nose: Aromatically soft, needs to breathe in order to express itself. Aromas of yellow flowers, citrus and a very elegant mineral character.

Palate: Light, with depth. Yellow stone fruits. Notes of hay accompany a well defined acidity. Delicious bitters culminating in a medium long finish. The wine will polish off nicely in bottle in the coming months.

Comment: Produced in a small vineyard of only 1.2 hectares known as La Lola, located on the same estate, it is a magnificent example of white wine made entirely from Xarel.lo grapes and which has been agreed by mixing together must, a proportion of which has been fermented and aged in cement tanks, and another proportion of which in 300 litre barrels. The result is just 1,300 bottles full of flavour, freshness and volume that show great structure and scale, which can mature for several years to become an aged white wine with a great deal of authority.

With this very characteristic spirit, and because it is such a unique white wine, we will take advantage of the area’s fauna and have the wine fearlessly confront a delicious wild boar stew.

Para la cuarta cata a ciegas no hemos tenido que ir muy lejos, ya que nos hemos quedado en la Ciudad Condal. En Barcelona, y de la mano del Presidente de la Asociación Catalana de Sumillers, el Sr. Xavier Ayala, nos fuimos hasta la antigua fábrica de cervezas de Moritz, donde hace aproximadamente medio año se ha abierto el Bar à Vins. Un lugar ideado para degustar, además de algunas delicatesen gastronómicas, grandes vinos a copas.

En el Bar à Vins se ha desarrollado un sistema revolucionario de conservación de los vinos que permite que se conserven, una vez abiertos, durante mucho más tiempo que los sistemas tradicionales que conocemos.

A esta innovación se le une también un sistema de servicio basado en balanzas de precisión que calculan exactamente lo que se sirve y factura por cada copa. De esta forma se pueden degustar grandísimos vinos (Vega Sicilia, Romaneé Conti, L´Ermita, Pingus, …) sin tener que pagar el coste de una botella entera.

Los participantes llegaron puntuales a su cita, y después de realizarles unas cuantas fotos para la posteridad, y para la revista, tomaron asiento y les explicamos en qué consistía la cata. Nuestro anfitrión iba dando pequeñas pistas para que los sumilleres se acercasen lo más posible a acertar los cavas que allí se probaron. Como en todas las catas que hemos realizado hasta ahora, el reloj parecía que corría más de la cuenta, dada la gran participación de todos los asistentes.

A continuación les explicamos las conclusiones y los maridajes que nos sugirieron para que, si ustedes lo desean, puedan probar los cavas que participaron en la cata y contrastar las opiniones y propuestas aquí expuestas.

For the fourth blind tasting we did not have far to travel as we stayed in Barcelona. Through the helping hand of the President of the Catalan Association of Sommeliers, Xavier Ayala, we were able to go to the old Moritz brewery in Barcelona, where the Bar à Vins opened about six months ago. This is an ideal venue for tasting, not just gastronomic delicacies, but some fine wines served by the glass.

The Bar à Vins has developed a revolutionary conservation system that allows wines to be preserved much longer after opening than the traditional systems we are familiar with. This innovation is also connected to a serving system which uses very precise scales to calculate exactly how much is served and charged for each glass of wine.

This way customers can enjoy some very fine wines (Vega Sicilia, Romanée Conti, L’Ermita, Pingus, etc) without having to buy a full bottle.

The tasting participants arrived on time for the event, and after we took a few photos for posterity, and for the magazine, they took their seats and we explained what we were going to taste. Our host was dropping more and more hints to help the sommeliers identify the cavas that were being tasted blind. As with all the tastings we’ve held so far, time seemed to whiz past because of the enthusiastic participation of all the attendees.

Below we set out the tasting notes and food pairing suggestions which were made so that you can, if you wish, try the cavas yourself and compare your opinions with the views and suggestions presented here.

Propuesta de maridaje: Pollo de pata azul del Prat de Llobregat a la catalana.

GRAN RESERVA VINTAGE LEOPARDI BRUT NATURE 2007 Frutos rojos, especiado con notes de chocolate y café. Buena estructura con taninos marcados, notas amables de la crianza, largo con notas de fruta roja en licor, con una acidez eléctrica.

Propuesta de maridaje: Liebre a la royal.
