SENECA RESORTS & CASINOS OPENS NEW SPORTS LOUNGES AS EXCLUSIVE SPORTSBOOK PARTNER OF THE BUFFALO SABRES® By Kat Corona-Pilgrim Photograph by Tucker Kohnen

If there’s one thing the local Western New York community shares, it’s their love for sports — particularly hockey. So it’s no wonder the recent news of Seneca Resorts & Casinos becoming the Exclusive Sportsbook Partner of the Buffalo Sabres® has been wildly received. To top off the exciting news, Seneca Gaming Corporation recently opened the Seneca Sports Lounge inside the KeyBank Center in Buffalo this past October. With club seating, 15 televisions, a large bar and a sports ticker, this new venue offers Sabres fans a place to interact, root for their home team and keep updated on the wider world of sports. And while the Seneca Sports Lounge debut has been a great success, it’s only a taste of what’s to come.

First market slots — meaning the first available and newest slot machines in the gaming industry — offer everything from extra bonus rounds to popular themes and special high-definition effects. Management at Seneca Resorts & Casinos takes pride in keeping up with the latest trends and customer preferences to give players the ultimate gaming experience.

Fresh off the newly renovated arrival experience at Seneca Niagara Resort & Casino is the most extensive and exciting gaming ambiance any player could ask for. With a 147,000 square-foot casino floor to explore, visitors will find slots that they can only play exclusively at Seneca Niagara as no other casinos in the region carry the selection. The slot machine variety is actively refreshed monthly across Seneca Resorts & Casinos — making them the ideal destinations for any traveler far or near. Just like the games themselves, competition within the corporate world of gaming is fierce. Penny Penilla Parayo, General Manager at Seneca Buffalo Creek Casino and Corporate VP of Slots, shares a peek inside the action: “The overall gaming market is extremely competitive but nothing can beat the brick and mortar physical experience casinos offer. The ambiance, energy from surrounding players, accessibility of various games, the food and beverages — everything plays a part in the entire experience and wins overall.” So what makes a truly great slot machine? The answer depends on the player. More nostalgic players are coming to the casino with a preference for stepper games, the old-fashioned mechanical slot machines with a pull handle. These guests come with time on their hands and with the intent to savor the gaming experience. The other half come to win big, feast on the adrenaline of the highs and lows, and look for slots that are tied with popular, licensed content. Farmville, “Game of Thrones” or “Wheel of Fortune,” anyone? Whether you’re interested in life-changing jackpots or simply in it for the thrill, Seneca Resorts & Casinos offers the best features, technology and availability the slot market has to offer. J

Juicy, tender and mouth-watering: the perfect burger is always close by at Seneca Resorts & Casinos. Whether you’re a chef at heart who likes to build a hamburger from scratch or a connoisseur looking for a flavorful meal, you’ll find something savory and memorable.

So what makes the perfect burger? According to Chef Montez, expert judge in matters of taste and the resorts’ Executive Sous Chef: “It’s a number of things. The bun, the quality of the meat, the add-ons, the presentation — they are all equally important. If any of the elements are missing, the quality changes.” With the understanding that each element is essential, below is a compilation in no particular order of some of the most unique, tasty and Instragrammable burgers only Seneca Resorts & Casinos can offer:

The Café Burger

This All-American delight outshines any classic cheeseburger option in town. Dig into an eight-ounce beef patty served on a Kaiser roll with the choice of American, Swiss, cheddar, pepperjack, provolone, or blue cheese. Add a side of fries and a shake to make this a true classic. GRAB A BITE AT: The Seneca Cafe, Seneca Allegany Resort & Casino

The House Burger

A mixture of red chili onion, goat cheese, Bibb lettuce and tomato jam served on a special Brioche roll is what makes this burger a house favorite. Top it off with some house-made gelato for dessert and your taste buds will thank you. BON APPETIT: Phillips WD Bar & Grille, Seneca Buffalo Creek Casino

STOCKSKY/KELLIE FRENCH

The Big Texan

The Impossible Burger

Vegan lovers unite! This increasingly popular vegetarian burger offers foodies a plant-based option of a patty that smells, tastes and looks like real beef. Not a vegan? Give it a try anyway and see why it’s ‘impossible’ to not ask for seconds. GRAB A BITE AT: Three Sisters Café, Seneca Niagara Resort & Casino

The CAB Burger

Comprised of local flavors and ingredients, the CAB (which stands for Certified Angus Beef) is the definitive WNY cheeseburger. Topped with Yancey’s Fancy’s maple cheddar (New York’s artisan cheese), cider-brined bacon, heirloom tomato, lettuce and onion rings, served on a Brioche bun then paired with hand-cut fries –this burger offers up a dynamite combination bursting with homegrown goodness. ORDER UP: The Western Door Steakhouse - Bistro, Seneca Niagara Resort & Casino •

This meaty Lone Star charmer is blended with an 80/20 ratio of ground chuck angus beef, house bourbon BBQ sauce, cheddar cheese and onion rings. This is one delicious ranch-style experience, inspired by the flavors of famously hot summers. DIG IN: The Creek, Seneca Buffalo Creek Casino

COMFORT FOOD ABOUNDS ACROSS SENECA RESORT & CASINO PROPERTIES By Charlotte Nauert

As the winter season winds to a close, there’s nothing like the warmth and flavor of delicious comfort food offerings to beat the final months of cold weather. We spoke with Chef Montez, Executive Sous Chef, for the inside scoop on everything including pastas to fill your stomach and soup to warm your heart.

A

Comfort foods — those mouthwatering meals that are particularly satisfying during these cold winter months — are bursting with the homemade flavors you know and love…and crave. “Indulging in comfort food items provides a feeling of well-being,” said Chef Montez. And food outlets across Seneca Resort & Casino properties offer an abundance to indulge in this season. “The flavors and ingredients are familiar,” Chef Montez continues. “When I enjoy comfort foods, I’m transported back in time. I have many memories tied to these menu items. When I was a child and felt ill, a bowl of hot chicken noodle soup is how my mom would nurse me back to health. My grandmother’s lasagna was legendary, and a turkey dinner with all the fixin’s is how we celebrated family holidays.” You’ll find these familiar offerings and more, across the resorts. At Seneca Niagara, consider French Onion Soup, Classic Spaghetti and Meatballs, a Turkey Dinner with Mashed Potatoes and Gravy, or Shepard’s Pie or Poutine. Seneca Allegany has robust offerings including Clam Chowder, Lasagna, Liver and Onions, and an Open-Faced Roast Beef Dinner with Mushroom Gravy. And at Seneca Buffalo Creek, you can warm your belly with Classic Fish & Chips or Braised Short Rib with Herb Demi-Glace, paired with Smashed Red Potatoes and Creamed Spinach. As with any beloved treat, everyone has their personal soft spot. For Chef Montez, it’s the Lasagna served at la Cascata, Seneca Niagara Resort & Casino. “As I mentioned, my grandmother made amazing lasagna. Although I will never match the experience of enjoying her lasagna in her dining room, savoring a plate of lasagna at la Cascata can come close — especially when it’s cold outside.”

Valentine MELODIES

BOYZ II MEN’S SMOOTH HARMONIES SET THE MOOD FOR LOVE By Kat Corona-Pilgrim

26

WINTER 2020 INSIDE SENECA

This Valentine’s Day weekend, turn up the heat and feel the love as you’re serenaded by one of the most iconic R&B groups in music history – Boyz II Men. With romantic ballads like “On Bended Knee” and “I’ll Make Love to You,” it’s no wonder their music still makes most wedding song lists to this day and is the ideal soundtrack for any date night.

V

Having met at the High School for Creative & Performing Arts (CAPA) in Philadelphia in the late 1980s, it took Nathan Morris, Michael McCary, Shawn Stockman and Wanya Morris just a few tries at practicing their harmonies to realize they had something special. Instant success was achieved from their very first single, “Motownphilly,” and album release in 1991 that mixed a fresh, unprecedented sound of a cappella, R&B, and hip hop — giving Boyz II Men their first of many pop and R&B hits. Now a trio, Boyz II Men continues to perform worldwide and rank high on the music charts. Their most recent album “Under The Streetlight” offers a tribute to the classic, harmony-driven sound that inspired the group — in addition to featuring personal selections of timeless songs like “Why Do Fools Fall in Love,” and “I Only Have Eyes for You.” Released in November 2017, the album reached third on the Billboard R&B charts, proving that fans still have a big desire to hear their soothing beats. Looking for a Boyz II Men landmark? Hop on a six-anda-half-hour road trip from Seneca Niagara Resort & Casino to “Boyz II Men Boulevard” in Philadelphia, Pennsylvania, where you can take a stroll along a section of the neighborhood that honors these beloved hometown celebrities. Renamed by the city council in June 2017, the boulevard includes CAPA, the high school where the boys first met.

Whether they’re featured on “Dancing With the Stars,” seen in the latest TV commercials, or heard in collaborations with the newest R&B artists, Boyz II Men continue to be in the spotlight and even joined the world of casino entertainment. Since 2013, Nathan Morris, Shawn Stockman and Wanya Morris have been performing their East Coast Philly swing at the Mirage Resort and Casino in Las Vegas, bringing their unstoppable energy and a cappella sounds to audiences far and near. After 28 years in the music industry and an astonishing 64-million albums sold, Boyz II Men continues to be the best-selling R&B group of all time. Ready to catch one of their soon-to-be sold-out performances? If you haven’t already, now’s your chance to see this legendary group up close and personal, plus add a little romance to your Valentine’s Day weekend plans. AARON LEWIS IS A TRUE COUNTRY BOY AT HEART By Kat Corona-Pilgrim

28

WINTER 2020 INSIDE SENECA

Spotlighting his outlaw Country roots, Country singer-songwriter Aaron Lewis is taking the stage at Seneca Allegany Event Center to share his newest, highly successful album “State I’m In.” Known as one of the most compelling performers and storytellers in the music industry, the artist prides himself on his love of the U. S. of A., the great outdoors and the taste of 100-proof whiskey. After releasing seven studio albums and selling more than 15 million records worldwide as a founding member and lead vocalist of rock group ‘Staind,’ Lewis ventured into his solo country act. Doing so came naturally, as much of his childhood was spent with his grandfather who introduced Lewis to old-fashioned country legends like Johnny Cash and Willie Nelson. In recent interviews Lewis has stated that his latest music reconnects him to childhood memories and his roots. Lewis’ full musical transformation from rockstar to country musician came with the release of his second solo album, “Sinner,” in 2016. The album debuted at No. 1 on the Top Country albums chart and fourth on the Billboard 200. The hit single “That Ain’t Country” gives an honest take for how Lewis feels about the current state of country music:

SO TELL ME, WHATEVER HAPPENED TO THE COUNTRY SONGS FULL OF TRUTH AND CONSEQUENCES, ALL THE THINGS GONE WRONG.

In other words, all sunshine and rainbows — no ups and downs. Lewis’ ability to write, sing and embrace life’s darkness and heartache is one of the main reasons his following is so strong. With the newest album release, Lewis continues to draw fans in with his brooding and relatable lyrics that explore the depth of the human experience. “State I’m In” is the follow-up album to “Sinner,” released in April 2019 peaking on Billboard’s Top Country Albums at No. 2 and selling 22,000 copies in the first week. Fans rave about the music, giving Lewis five-star reviews expressing how the album is an evolution of the artist and provides an even more genuine Country sound. In an interview with “Coffee and Die” Magazine in March 2019, the music veteran gave his sincere advice to aspiring musicians: “Be careful what you wish for. There is a cost to everything.” Lewis further explains, “There is a lot of truth to that old story about Robert Johnson meeting the devil at the crossroads and selling his soul. That is kind of what you are doing when you sign a record deal. The longer you survive having a record deal, the more your soul fades and pretty soon there is nothing left — because your feet never touched the ground and you never slowed down enough to see it all go away. So be careful what you wish for.” Looking for the real deal? Scroll through Lewis’ Instagram photos for a real snapshot of the authentic and noteworthy country boy that is Aaron Lewis. Or better yet, see him live at the Aaron Lewis’ State I’m In Tour: Acoustic Songs + Stories that’s coming to Seneca Allegany Event Center on Saturday, March 14, at 7 p.m. An authentic Country performance is guaranteed!

LEADER OF THE TREES Maple Season on Seneca Territory By Caleb G. Abrams

I

Gakwi:yo:h Farms is located on a 54-acre plot along the eastern boundary of the Seneca Nation’s Cattaraugus Territory and is the base of operations for the Seneca’s Agriculture Department. Its name, ‘Gakwi:yo:h’ means ‘good food’ in Onödowa’ga:’ gawë:nö’ (the Seneca language) - ‘Good Food Farms’. The department’s primary objectives include providing the Seneca people with access to healthy foods, revitalizing traditional methods of food preparation, preservation, and cultivation, and educating the community on ways to incorporate these practices into their daily lives. This time of year, the staff is preparing for the sap to run and maple season to officially begin. Department Director, Michael Snyder, explains the preparation process; “At the beginning of fall we start to cut firewood, lots of firewood. Then, in about a month, maybe late January, we’ll start to sanitize all of our tanks, our evaporators, anything that comes into contact with the sap. Then we wait. Once that snow lifts… that’s when we know it’s time.” The sugar maple is among the first trees to wake from their winter dormancy, usually sometime between mid-February and mid-March – that’s when the sap starts to run. “In the [Seneca] language they use this phrase that means, ‘the snow has lifted’, that’s when you know it’s time to start tapping,” says Snyder. He is referring to the fog that appears “on a good maple day” where the days are mild, maybe 45-degrees, and the nights see freezing temperatures. The return of the maple is celebrated as an important annual turning point among the Haudenosaunee (“People of the Longhouse”), earning the maple the title, “Leader of the Trees.”

36

WINTER 2020 INSIDE SENECA

“Some people think that means it’s the king or the president, but really it’s because it’s one of the first trees to come alive in the springtime and it signifies the end of winter. Just that natural occurrence in itself is a celebration — that we made it through another winter,” explains Snyder. Last year, the Gakwi:yo:h team collected roughly 2,800 gallons of sap, using 300 taps. That collection yielded more than 50 gallons of maple syrup and allowed the department to produce a variety of maple-based products including maple sugar, maple candies, and maple cream. Snyder says the farm sold over half their maple product stock at last year’s inaugural ‘Maple Weekend,’ a public event that offers the community a chance to see the maple syrup production process in action and get involved themselves — from cleaning the equipment to sampling the final products available for purchase. These kinds of demonstrations and workshops are a vital part of the department’s work. To Snyder and his team sharing this knowledge with the community is just as important as any other part of the process, if not more so: “We started this [Maple Weekend] as a way to show our community what trees to look for, how we tap, how we’re boiling and filtering and bottling and grading, just the whole process really,” Snyder says. This year, the team at Gakwi:yo:h Farms is expanding their maple efforts to the Seneca’s Allegany Territory, located near the New York-Pennsylvania border. Project Manager, Gordon Brown, is overseeing the expansion in Allegany. He sees the work as being a critical bridge between the ‘old ways’ and a successful future for the Seneca Nation, “Everything revolves around the land. These old practices are rooted in the wisdom of our ancestors. We have a responsibility to these younger generations, to the future generations, to pass this knowledge on. That’s why we do what we do.” By expanding their efforts to include sap collection in Allegany the department has set a new yield goal; “We’re trying to produce more syrup than we ever have before this time around – this year’s goal is to produce 100 gallons of syrup,” Synder says with a smile. “We’re always aiming high around here.”

It is a crisp December morning on the Seneca Cattaraugus Territory and the staff at Gakwi:yo:h Farms is hard at work splitting logs in the barn in preparation for the upcoming maple season. Thriving in Cold Weather

B R AD LE Y J I M E RSO N

An inside look at Seneca Artists of Western New York. By Maurice John, Jr

“The winter is when I get things done.” This

sentiment is shared by nearly all craft artisans who live in the brutally cold parts of the Northern Hemisphere. As all Western New Yorkers can attest, due to the oft sub-zero weather conditions, combined with daylight reduced from 15 hours during the summer to 9-11 hours in the winter months, a lot more time is spent indoors. Traditional Seneca arts and crafts primarily consist of handmade items that require time and focus, such as beadwork, pottery, wood-splint basketry, leatherwork, stone carving, and woodworking. Many contemporary artists also use media such as painting and photography. Naturally, wintertime lends itself to increased productivity for many of these artists. It is not unusual for the annual creative cycle of Haudenosaunee (Seneca, Cayuga, Onondaga, Oneida, Mohawk, and Tuscarora — commonly known as Iroquois or 6 Nations) artists to be seasonal — gathering supplies during the fall, working long hours in the winter on their craft, and showcasing their talent and creative outputs in the spring and summer months at powwows, festivals, and arts markets such as the world-renowned Santa Fe Indian Market. Seneca artist Bradley Jimerson uses his time during the winter to stay warm with ideas that have been floating around on potential projects. “During the winter I have time to think… I use the time to draw and paint,” says Jimerson. “It’s very relaxing, I use the time to complete my projects so I can participate in festivals and events throughout the year.” Penny Minner, a respected Seneca basket maker, plans her winter accordingly as well. “The winter months for me are a time to catch up on the work that I need to do for my basket making. I am able to slow down a bit and go at a more leisurely pace — as to getting

my splints prepared, cleaned, and gauged for the next projects for the spring and summer months. I use this time to think of the next creation that will come to me and will it be inspiring or a dedication? I reflect on what has been done before and look forward to the new year ahead. I’m always aware of the ones who came before us and I am always thinking of those faces we will not see. How can I leave my mark and legacy to inspire the next generation of artists?” Perhaps the most popular form of traditional Seneca art is beadwork. Using colorful intricate patterns that display stunning craftsmanship, contemporary artists make anything from earrings, necklaces, and bracelets to custom work sewn into anything from hats, shoes, and any article of attire that can be thought of. Tami Watt, a lifelong multimedia artist, likes to spend her winter evenings peacefully escaping the stress of the world through her beadwork. “There is something meditative and relaxing when I sit and bead…it is tedious but the reward when you have an idea, draw it out and then see it when its finally finished is that of great accomplishment and pride…it’s my escape!” As beadwork and basketry have always been thriving trades of Seneca matriarchs, some of the more unique, but increasingly popular Seneca artforms are antler carving and leatherwork. “Since antler carving is a long process for each piece, I do not waste any time during the winter,” says renowned carver Hayden Haynes “My work always reflects Seneca heritage whether it’s a work that represents a story or work that incorporates antiquated materials. Sometimes when I make intricate antler pendants, I will use antique beads or beads from 18th and 19th centuries. This blends the time periods not only in story sense, but also the physical sense. Other times I will make my own intricately carved beads which are made from antler. Anything I do with my work is

more familiar with my culture as well as be able to tell others the meaning behind it.”

Clifford Redeye, III has made a splash recently with his unique applications for leather tooling. “Leatherwork is something I enjoy and look forward to each project… I am always excited to get started on a project or when I get a request for something to make. I feel that what I do reflects my Seneca heritage because we have always had ties to leather whether it be for making clothes, art, instruments, or shelter … I feel like what I do utilizes leather in a unique way. Many times people will bring me an old leather piece and I can remake or repair it and give it new life. The art I do has a usually has a story connected to it or a meaning and before I do any project or start drawing it, I familiarize myself with the story behind it or its meaning.
