Happily Ever After9 KriSTEn griffin nEEDED A MirAclE. JuST 30 DAyS AwAy froM hEr wEDDing, with more than 150 people traveling to Niagara Falls from all parts of the country, the unthinkable happened for the bride-to-be: she learned her wedding reception location was mistakenly double-booked. Rather than settle for a different room that would require her to cut her guest list by nearly half, Griffin wondered if one of her favorite destinations in Niagara Falls – Seneca Niagara Casino & Hotel – might be able to provide wedding services. She was in for a pleasant surprise. riffin and her husband-to-be, Chris Karan, connected with Andrea Hoffman, a sales representative for Seneca Niagara’s banquet and catering teams, and learned that the hotel mezzanine was available. Soon after, Hoffman connected them with culinary sous chef Matt Crvelin, who worked with their original menu to have the foods match as much as possible. And the news kept getting better. “Andrea got us everything we needed in a day, when it would probably take more than a month anywhere else,” Griffin said. “She helped us secure a block of 10 hotel rooms for our outof-town guests, and the groom and I received a free room. We were able to have the steak and salmon we wanted – and it tasted even better than our original reception place.” The personalized touches continued through the wedding. When it poured outside and ruined the opportunity for photos at Niagara Falls, the banquet
and catering teams allowed the wedding party to instead take photos in front of the hotel’s indoor waterfall in the lobby. During the reception, team members continually checked in to make sure everything was running smoothly – and even helped bustle Griffin’s gown. Finally, “Chef Matt” visited the bride and groom after dinner, and delivered a surprise special dessert with strawberry syrup that read “I Do” on the plate. Behind the scenes, the banquet and catering teams began their evening with their traditional call-and-answer chant: “Who’s better than us?” “Nobody!” “What’s the most important part of your uniform?” “Your smile!” It’s this level of confidence and commitment to excellence that helps the nearly 100 team members deliver five-star results – whether for Griffin’s 155-person wedding, a 20-person business meeting lunch, or a major gala or fundraiser with more than 1,000 people. 9

ven Griffin’s wedding had “extra” entertainment she would have never imagined. Her wedding took place on october 29, 2011 – the same night as a sold-out concert by r&B legend patti laBelle in the nearby Seneca Niagara Events Center. When the show let out and show-goers headed to the lobby, music from Griffin’s mezzanine reception traveled below. Griffin’s photographer and dJ team – Marie and Matt Conta of Soundwave dJ and photo – noticed that masses of people were dancing along to the music, and what ensued was an impromptu joining-in by the wedding party. The perks of having a wedding at Seneca Niagara Casino & Hotel don’t stop there. Seneca players Club Members can pay for weddings using comp points, and there is also a five percent discount on food and beverage for Select Members and a 10 percent discount for Chairman’s Club Members. People know The Western Door: A Seneca Steakhouse as the place to go for a five-star meal at Seneca Niagara Casino & Hotel. But ask Frank Ryan, the restaurant’s senior bartender, and he’ll tell you it’s also a place for excitement and high energy. A bartender with more than 30 years of experience and a part of The Western Door since the restaurant’s beginning, Ryan aims to make the bar a point of destination. On any given night, guests will find him mixing different combinations to create the latest drink craze, keeping a watchful eye on his infused vodkas, and enjoying many a great conversation while serving up tasty martinis and other cocktails. He is quick to credit the apprentice bartenders, chefs, and the rest of his fellow team members for the fantastic service and atmosphere – but ask others throughout Seneca Niagara Casino & Hotel, and they point to Ryan as “legendary.” “The style and dedication that Frank brings to his position reminds me of a time that has passed us by,” SENECA TODAY
said Gary McHale, executive chef for Seneca Niagara Casino & Hotel. “Years ago, bartenders had more responsibility and were required to do more in terms of preparation, knowledge, and the level of service they delivered. Frank brings that attitude with him each and every shift he works. He has an eye for detail, takes great pride in his work, has excellent service skills, and is a great conversationalist. These are the characteristics that we look for in an exceptional bartender.” Away from Seneca Niagara Casino & Hotel, Ryan is continually perfecting his craft by attending trade shows in Las Vegas, reading up on the latest bartending trends, and contributing beverage articles both locally and nationally – including six published drinks in Bartender Magazine. In fact, an article published in a local newspaper somehow made its way in front of executives at Bacardi Rum. They were so impressed that they asked Ryan to be a consultant for all new Bacardi products. Upon sending him a case of Bacardi Grand Melón Rum, they made
one request: create a drink with the product. This was the beginning of the Seneca Sweet Heart – a mainstay drink at The Western Door and a favorite among guests. “Martinis are my favorite drink to make because the flavor options are unlimited,” Ryan said. “With the Seneca Sweet Heart, I tried to think about taste – but also kept a business-mind and thought about cost. So, I made it simple: just Bacardi Grand Melón Rum, DeKuyper Watermelon Squeeze Schnapps Liqueur, and Marco Polo’s Pomegranate Juice. Around the world, although more people drink vodka, Bacardi Rum is the No. 1 called-for spirit – so it felt like an honor to be asked to create a drink with the product.” Ryan is a big fan of the Seneca Sweet Heart but enjoys another one of his creations even more: a tangerinevodka martini he calls the Crystal Clementine. As for his favorite dish at the restaurant, Ryan has no hesitation or doubt about his choice. “It’s the Bone-In Rib eye, hands down,” he said. “I always recommend this when people ask, and they’re never disappointed.” Whether guests stop by for a drink, dinner, or both, Ryan thinks one particular element makes The Western Door uniquely special: the feeling of connection. “I think guests feel welcome the minute they walk through the door, thanks to our great team,” he said. “As for me, I just try to wait on people the way I’d want to be waited on.” Ryan said another reason he loves his job as senior bartender is that he never knows who might walk in. He spent most every night having great conversations with Frankie Avalon during a five-day stretch of holiday shows; has rubbed elbows with countless sports legends, and; recently felt humbled to hear comedian Bill engvall say he had the “best martini ever” at The Western Door. “I learned early in my career that a good bartender talks around things, not about things,” Ryan said. “I want to get conversations going and make people feel like The Western Door is their home. It’s all about making connections, and in a high-energy place like this, we really rock and roll here.”
Snickers® Peanut Butter Pie Frank Ryan says: “Save room for dessert when you’re at The Western Door!” But if you’re too full, try making one of the restaurant’s most popular desserts yourself: the Snickers® Peanut Butter Pie. Peanut Butter Crust 2 oz. butter 1/2 cup granulated sugar 1 cup flour 1 egg 1-1/4 cup peanut butter Beat butter, sugar, and peanut butter until smooth. Add egg and flour. Mix well. Roll out crust, put in pie pan, and bake at 275°F for 10 minutes. Cool. Peanut Butter Filling 1 pound butter 1-1/4 cup powdered sugar 1-1/4 cup peanut butter 1 teaspoon vanilla Beat butter and sugar until fluffy. Add peanut butter and vanilla. Mix well. Ganache 10 oz. dark chocolate 5 oz. heavy cream Simmer heavy cream in a pot. Take off heat and add chopped chocolate. Stir constantly until smooth. If chocolate is not completely melted, put back on stove on low heat and continue to stir constantly. Add peanut butter filling layer to the cool crust. Finally, spread the ganache in a thin layer over the top of the pie. Let cool until ganache hardens. Slice and enjoy.

ou gaze upon the table with thirty-eight numbers – one to 36, zero, and double-zero – and carefully place your bets. The round of betting stops and the dealer drops a ball into the spinning wheel. Around it goes as the crowd looks on, rooting for it to fall on their number. The ball slows down, and the winner is… This is the excitement of roulette – a game that began in France (the word roulette means “little wheel”) in the 1700s and remains immensely popular today at casinos worldwide. “Roulette is the easiest game for a first-time table games player, because he or she can participate by just selecting a number,” said Joseph Villagomez, director of table games at Seneca Niagara Casino & Hotel. “The excitement in roulette is that there can be multiple winners with every spin of the ball, and one of them could be you.”
How to Play In the game of roulette, there is a table with 38 single numbers (0, 00, and 1 through 36) that correspond to a roulette wheel with those same numbers. You can place 11 types of wagers – each one having different payouts. Bets may be placed until the dealer announces “no more bets.” The dealer spins the roulette wheel in one direction and a small ball in the opposite direction. When the ball comes to rest in one of the pockets of the roulette wheel, the dealer will announce the winning number and place a marker on the winning number. The table is then cleared of losing wagers and all the winners are paid. Do not remove winning wagers or place new bets until all winners have been paid and the dealer announces “place your bets.” In order to keep each player’s wagers separate from the others, the dealer assigns a color chip unique to each player. You may determine the value of your color chips when purchasing stack(s) of chips. There are 20 chips per stack, and the value of a color is indicated by a numerical button placed on your color. For example, a “20” would indicate $20 per stack. Your “color” chips are redeemed before you leave the table.

When the Falls Stopped! When you look at the mighty Horseshoe Falls, it’s difficult to imagine any force strong enough to stop this gigantic rush of water - yet it is on record that Mother Nature did stop the flow, back in 1848. In March of that year, local inhabitants, accustomed to the sound of the river, were greeted by a strange, eerie silence. Niagara had stopped! For thirty long, silent hours, the river dried up and those who were brave enough walked or rode horses over the rock floor of the channel. Then, with a roar that shook the foundations of the earth, a solid wall of water, cresting to a great height, curled down the channel and crashed over the brink of the precipice. Niagara was back in business to the immense relief of everyone. News traveled slowly in those days but the explanation finally came. High winds set the ice fields of Lake Erie in motion and millions of tons of ice became lodged at the source of the river, blocking the channel completely until finally a shift in the forces of nature released it and the pent up weight of water broke through. Lake Erie is the major producer of ice that flows down the Niagara River and is capable of producing 16,093 square kilometers (10,000 square miles) of ice. The ice is blown down the river and over the Falls, where it becomes caught as the river narrows near the Canadian Maid of the Mist Landing; some of the ice is pushed back upriver, which can build up to form an ice jam. Ice jams can be very erosive; ice grinds on the river bed, moves large boulders and alters the shoreline. When wind stops forcing water out of Lake Erie into the river, the water level drops – leaving the ice jam aloft like a bridge.

THE ICE BRIDGE The phenomenon of the ice bridge is a familiar occurence each winter. Usually in January, a mild spell followed by a strong southwest wind breaks up the ice on Lake Erie and sends it down the Niagara River and over the Falls. The wet ice forced up out of the water below the Falls freezes into a huge mass, growing into a structure of considerable size and strength, not unlike a glacier. As shown in this photo of photographers on the ice in the 1890s, visitors to the Falls would often venture out on the ice bridge vendors would even set up stalls to sell refreshments. Since a tragic event in 1912, when the ice suddenly broke up and two tourists were killed, going out on the ice bridge has been strictly prohibited.
Rainbows and Lunar Bows Niagara Falls is a great location for rainbows (or solar bows) as sunshine reflects off the mist from the Falls and delights our many visitors with a beautiful show of colours. More than one hundred years ago, Niagara Falls was also one of the best locations in the world to view night rainbows or lunar bows - a rainbow created by the light of the moon shining on the mist created by the Falls. When lunar bows were last reported in the mid-1860s, the phenomenon was described as pale in comparison to the daytime rainbows, consisting of just three ghostly arches. They were best seen when the moon was full and high and the sky clear of clouds. One of the best locations to view this phenomenon was Luna Island (apparently so named because of the lunar bow) on the American side of the river. Luna Island is accessible via a pedestrian bridge from Goat Island and divides the American and Bridal Veil Falls.
Another article written for the Niagara Gazette, July 16, 1856, stated: “the Maid of the Mist will make trips in the evening when the weather is suitable, for the purpose of taking those who wish to view the Lunar Bow.” Unfortunately, it is not likely a lunar bow will appear today, for a few different reasons. First, the Falls have been illuminated each night since 1925. Since the 1950s, less water has flown over the Falls during the evenings, as much of Niagara’s water is diverted to produce electricity, creating less mist for the moonlight’s reflection. And finally, the night skies over Niagara are not as dark as years ago, due to the bright lights of the cities of Niagara Falls Ontario and New York. Although lunar bows are no longer visible, rainbows make regular appearances throughout the year, in the late afternoon of sunny days.
A few references to early lunar bows are noteworthy. The Niagara Gazette, in describing the tightrope walk of Signor Farini, wrote: “it was worthy of note that during the trip over and back a beautiful Lunar Bow hung over him, its end reaching the water, some fifty feet each side of his cable. He may claim it was as a bow of promise - as a happy augury of success?”

The Seneca Nation began a statewide campaign this year to protect and preserve the exclusive gaming rights it was granted in the 2002 Gaming Compact, signed into law by the Pataki administration. The 2002 Compact granted the Seneca the exclusive right to offer gaming devices in a wide 16-county stretch of Western New York that extends west from State Route 14 in Geneva, over to Lake Erie and down to the Pennsylvania border.

Legislators in New York State are now considering introducing a constitutional amendment that would legalize commercial gambling in New York State. Seneca Nation officials have stated that they are not opposed to an amendment that would expand gaming, as long as NYS honors the valid 2002 Compact and preserves the Seneca’s “carve out” of its exclusivity zone that is central to the existing agreement.
Seneca Nation President Robert Odawi Porter has said that the Seneca have long called Western New York home with five sovereign territories peppered in the region—the Cattaraugus, Allegany, and Oil Spring territories in the southern tier, and the Niagara Falls and Buffalo Creek territories upon which two gaming facilities are built. “The Seneca Nation is rooted here in Western New York. We have both an interest and an obligation to investing in the area, creating partnerships and business opportunities and growth so that we all prosper. It is clear that a strong Seneca Nation helps Western New York’s economy.”
The Seneca Nation has embarked on a grassroots advocacy and media campaign to generate awareness among the public and the legislature about the economic contributions, business partnerships and the nearly 3500 jobs Seneca Gaming has created and the positive impact Seneca Casinos have had on the economy. Another favorite dish is duck poached in Icewine juice and then roasted until the Icewine caramelizes on the skin. Our most popular item is Icewine marshmallows, people return year after year to roast them over an open fire during the Icewine Festival.” In spite of Icewine’s reputation as ‘liquid gold’, what really makes Icewine so special? The consensus seems to be that Icewine is rare and difficult to produce. Very few countries have the proper conditions to produce Icewine, and none do it as well as Canada. This has been proven by all the medals that Canadian wineries have won at international competitions. Secondly, there is a lot of expense and risk involved in producing this unique product. The grapes are left to hang on the vine long past autumn, waiting for freezing temperatures. During this time, the grapes continue to ripen and dehydrate and develop a distinctive taste profile. If the
grape grower is really lucky, the weather will turn cold enough to allow harvest in early December. Unfortunately, nature isn’t always considerate and a lot of Icewine producers regularly miss Christmas dinner while picking grapes! Global warming hasn’t been a friend to the industry either. The temperature fluctuations are brutal on the berries, making them susceptible to rot. At least three days of consistently freezing temperatures of -8 degrees (Celsius) are needed to harvest the grapes. There may not be enough days at a stretch to get the entire crop off. Last year it froze for a few days in December and then not again until February. By that time the grapes had deteriorated in quality and produced very low yields. Icewine production is a very risky business with potential for high losses. When the perfect weather finally arrives, the grapes are picked at night to prevent melting and then taken in for crushing, hence the all-night picking marathons. Because the berries have to remain frozen, it usually means that the work has to be done outside. Icewine requires special hydraulic presses that are strong enough to crush the frozen berries. When the thick concentrated juices finally ooze out of the grape, barely more than two drops per grape is extracted; not a great return on your investment. Many
people consider Icewine to be too luxurious to be used for cooking, but Chef Parson says, “Icewine is seen as an expensive item, but it’s no more expensive than truffle oil or good balsamic vinegar, which all chefs have in their pantry. It takes two glasses of regular wine or just a splash of Icewine to make your food come to life!” The diverse flavours of Icewine come from the characteristics of each individual varietal. Icewine made from white grapes such as Vidal will smell like peaches, honey and lychee fruit. Riesling and Chardonnay will have hints of lemon drops and melon. Red Cabernet Franc Icewine offers scents of strawberry and rhubarb. Characteristic notes of black cherry and raspberry make Cabernet Sauvignon Icewine irresistible. Every year wine makers experiment with different grapes to see if they can produce something new and unusual. There are now several varieties from which to choose. You will find red, white, sparkling and blends of several varieties. Icewine is no longer a special occasion drink; this unique wine is used in desserts and main courses as well as in cocktails, martinis, and in sparkling wines.

Frogpond Farm Organic Winery The mission of the Seneca Nation Community Center is to support the social, spiritual, cultural, and physical well-being of our community. The Community Center fosters healthy lifestyles for our Seneca Community through socialization, recreation, and education. This April marks the one-year anniversary of the grand opening of the new center. They will be marking the occasion with some special events including a free month-long open to the public Maple Sugaring event and a Community Fair Week from April 9 to 13, open only to the Seneca Community. Come take part in a traditional event! Hosted by the Cattaraugus Community Center and ongoing for the rest of February into March, you’ll be able to see the Maple Sugaring process up close. Now is the time when sap was harvested traditionally and turned into the Maple Sugar Process. It was processed down, historically, to be used in various forms as a food source for long journeys. People would mix it with dry grains and berries and it would act as a complete protein. This event helps to reintroduce people to community traditions that have stopped being practical or that people don’t necessarily have the resources to execute it on a large scale. This event will take place in a Sugar Shack at the Cattaraugus Community Center located at 12767 Route 438. For more information call 716-532-8450.

This June, the Tribal Vocational Rehabilitation Program (TVR) will host the Annual Consortia of Administrators of Native American Rehabilitation (CANAR). This event will bring together more than 300 Native Americans, Federal and National Service Providers that are stakeholders in working with Native Americans with Disabilities. The TVR has been acknowledged in the past by CANAR with an award for the best in service provision for Native Americans with Disabilities on the Seneca Nation of Indians Territories. TVR has been in existence since 1998, when the first grant was awarded to the Seneca Nation of Indians. Since the initial award TVR has assisted more than 250 enrolled members of Seneca Nation of Indians and other members of federally recognized tribes. TVR’s goal is to assist Native Americans with disabilities that would like to return to work, need to maintain their job due to a disability, and/or obtain employment. In recent history, TVR has exceeded the State Vocational Rehabilitation in comparison to numbers of people served. The staff of five are all members of the Seneca Nation of Indians with vast experience in working with those with disabilities from 14 years old to retirement age. The services provided are varied and are individual based on the client needs. An upcoming conference in June marks the second time that TVR has hosted CANAR at Seneca Niagara Casino. There will be various workshops that are open to the public.

SNOWSNAKE Snowsnake is played on a track made of snow that has been piled high. It is approximately 3 ½ feet high at the beginning and gradually slopes downward to the end. The players place a log on top of the pile and drag it along to make a trough, or track. This process is repeated until the trough is five to six inches deep and icy. The men then stomp down that snow at the end designated as the starting point and scatter wood chips or ashes to help prevent slipping. Some tracks can be more than 1,600-feet in length. There have been reports of throwers throwing their snakes a mile or more in length. The shooters throw their snakes down the trough; the one who throws their stick the farthest wins. The winning team generally wins prizes and, more importantly, bragging rights until the next competition. What is a snowsnake? A snowsnake is actually a straight piece of wood or stick that has been shaped and smoothed. It has one flat side. It has a slight upturn at its head so that the snake can float along the trough without getting caught in the snow. Snowsnakes are made from various kinds of hardwood, as some woods are better adapted to certain types of snow conditions than others. The elders say that certain types of wood are better for throwing in light snow, others for crusty snow, other varieties for soft snow, and still others in icy conditions. Many snakes are made of maple, which is generally a clean wood (with only a few branches to cut and smooth) that can be easily worked and has a nice weight. Basswood also makes good sticks and is lightweight. Some men prefer snakes made from hickory, walnut, or ash. There is sometimes a lead or pewter tip at the head and a v-shaped notch at the other, which the shooter uses to help control the snake when he throws it. There are two sizes of snowsnakes. The long snake can be as long as six feet. The shorter snakes, called “mudcats”, are generally about three feet long. They generally taper from 1” at the head, about ½” in the middle and approximately ¼” at the tail. If made correctly, the finished snake is smooth, flexible and polished. Wax One final component for a good snowsnake throw is the “wax.” A good compound will help the snake go faster down the trough. Depending on the weather or snow conditions, throwers will rub gum, wax, tallow, oil, or other secret ingredients into the stick. This will make the snake as smooth as possible in order to overcome various types of friction caused by the different types of snow. Throwers will not give away their secret formulas and will use their experience and imagination to know which “wax” is the best for different types of conditions.
How is it played? The game may be played by two contestants or by organized teams. Generally, each team is allowed four throws per round. The team that reaches a set number of points wins. The snowsnake that travels the farthest receives two points; second farthest receives one point. If a thrower misses the track or if the snake jumps the track, the snowsnake cannot be thrown again and the player misses this turn. Each team has “Throwers” and “Shiners.” The Throwers score the points by throwing the snake down the trough. The Shiners’ roles are equally critical to a competition. They maintain the snakes and determine which snowsnake will be used in any particular throw. They base that decision on weather and snow conditions, track length, and a thrower’s ability. Did you know? Sports Illustrated clocked a snowsnake throw at 108 miles per hour? Some throws have gone one mile in less than three minutes? In traditional Hodinöhsö:ni communities, only men are allowed to touch snowsnakes or participate in a game? Women do not even attend a match. Snowsnake can be very dangerous for the spectator. A small piece of ice or snow, or even a bump in the track, can cause the snake to jump the track and fly uncontrollably. Please stand far enough away from the track so you will not get injured.
