Married dentists share building, Viera lifestyle BY WENDY SCHEURING They say that a family that plays together stays together. Doctors Yoshita Patel and Michael Hosking also work alongside each other. The couple met in dental school at the University of Michigan. As students, they spent hours studying together and, before they knew it, they started dating. The couple did their dental residencies in San Antonio, Texas, Patel in Pediatric Dentistry and Hosking in Endodontics. During this time, the couple got married. They had two marriage ceremonies, one in a Roman Catholic church in 2012, and the other a traditional Indian wedding in 2013 in Palm Coast.

“We spend a lot of our time riding bikes with the kids and just exploring the growth and development.” – Yoshita Patel

“Indian weddings can last up to seven days,” Patel said. We tried to incorporate some western culture into it. Ours was two and one-half days long.” After they finished their residencies, they were looking for a place to settle

down. Fifteen years ago, Patel’s parents relocated to Florida to escape the Cleveland, Ohio cold. Patel lived in Viera for six months with her parents before heading off to dental school, so Viera had started to feel like home. “The number one thing for us (in choosing to live in Viera) was being close to family,” said Hosking in reference to his in-laws. Of his family that still lives in Michigan and in Kentucky, he said, “It’s a lot easier for them to visit. We see them a lot more now that we’re here.” Of Viera, he said, “I like the slower pace a little bit better. It is a growing area and a great opportunity for us to have our practices.” Once the couple decided to establish their roots in Viera, Patel started Viera Pediatric Dentistry. Hosking began his practice, Space Coast Endodontics, one year ago in the same building, after working in the area for three years as an endodontist. “When we are at work, we don’t interact a lot,” Patel said. “We are both busy and have a lot to do. But we do bounce things off of each other. He may take a look. That’s how we met and that is our relationship. We respect each other as professionals and individuals. Our marriage is based upon mutual respect and admiration.” The couple have two

BBH is proud to show appreciation to local law enforcement, firefighters, dispatchers, EMT and Military.’’ The first two First Responder Appreciation Barbeques were held at Kiwanis Island Park. Last year’s attendance was 800. This year, Centore expects 1,500 to attend. “Food for First Responders and their families is free,’’ Centore said. “They just check in at our registration tent when they arrive to get food tickets. For members of the community, if they would like to eat, we do ask for a monetary donation. They can make a donation and get food tickets at the entrance to the event. All activities are free.” This year’s event will feature fire trucks on display as well as a demonstration of how the Jaws of Life is used to extract persons from vehicles that have been in accidents, according to Greg Cope, the chief of the Merritt Island Volunteer Fire Department, Station #41. “The response from the Brevard County community has been absolutely overwhelming,’’ Centore said. “Our community loves and supports our First Responders. They want to help; they believe in what we are doing and want to be a part of it.’’ The idea of thanking Brevard’s First Responders

through a community barbecue started in 2020 with a post on a community Facebook page. “When it started it was just a Thank You BBQ for our First Responders and it was supported and paid for by local small businesses in the community,” Centore said. “In 2021, myself, Kimberley Tucker and Tina Herman had the desire to do more than just the BBQ. We wanted to find other ways to show our appreciation and say thank you to our First Responders all year long. So, the three of us founded the nonprofit Back Brevard Heroes.” “In addition to the BBQ last year, we hosted a toy drive for military families in support of an organization called Warrior Misfits. We had about 25 small businesses help us and we collected over 1,000 toys,” Centore said. “We also do what we call Hero Appreciation Gifts,’’ Centore said. “These are baskets or individual bags filled with snacks and other items. Baskets are delivered to Brevard County Fire Stations. But, for the law enforcement, we do individual bags because their work keeps them out on the road. In the last year, we’ve delivered about 20 of the fire station baskets and handed out about 250 of the individual bags to our law enforcement. As we grow, we have plans for more ways for our community to show our First Responders how much we appreciate them.” Back Brevard Heroes is a tax-exempt public charity under Section 501 (c) 3 of the Internal Revenue Code. Holy Trinity tennis teams expect to challenge for district titles BY CARL KOTALA If there’s one thing you can always count on when it comes to the Holy Trinity boys and girls tennis programs, it’s that they will be good enough to challenge for a district title and make a run in the regional playoffs. This year is no different. Led by sophomore Alya Dzheneva, who has been playing on the No. 1 line since she was in seventh grade, the Holy Trinity girls could be ready to reclaim the district championship from Edgewood this season. On the boys side, the Tigers are led by a pair of seventhgraders — Shaan Prasad and Ryder Collins. “I think we have a good chance of winning the district title with the girls,” said James Clark, who coaches both Holy Trinity teams along with Mark Harrison. “The boys, I think we’re very young and strong. Our goal is to get better every match, every week. If we don’t contest for a district title this year, our guys will be knocking on the door the following year.” Dzheneva, who did not play in last year’s district tournament, said she has

gotten more power in her shots as she has gotten older and stronger. The Tigers were off to a 5-0 start. Senior Sedona Perron is Holy Trinity’s No. 2 player, followed by eighth-grader Elle Canlas and Thaila Wells. Kareena Mathews is at No. 5 with Ashlyn Borboroglu at No. 6.

team.” Prasad, who played at the No. 3 spot as a sixthgrader in last year’s district tournament, has worked very hard to work his way to the top of the boys ladder. “I’ve been playing every day,” he said. “Over the summer, I was playing five, six hours. I’ve just been training hard. … I’ve improved on my footwork, my forehand — everything.” With Collins playing on the No. 2 line, the Tigers would appear to be set up for a very promising future with a number of strong, younger players. Junior Anthony Zyren is at No. 3, followed by freshman Jake Barlow at No. 4 and eighth-grader Luke Rector at No. 5. Freshman Rohan Jain

Clark said the rest of the team is “right there” including Lani Watt, Sydney Borboroglu, Skye Godfrey, Reha Patel, Kate Schwinn, Julia Thessen and Julie Watt. “We do have good depth on our team,” Dzheneva said. “I feel like we don’t have a huge drop-off, or gap in level (of play). Young talent, leadership help push Viera lacrosse to success BY CARL KOTALA The Viera High boys and girls lacrosse teams are both leaning on some of their younger players for leadership and stressing teamwork this season. Sophomore Kyle Fischer, who was one of Viera’s top scorers last season, has taken on an even bigger role this year for a boys team that is trying to get back to the district title game — and win it — in 2022. Viera’s girls have their top two scorers back from last season in seniors Lexi Fischer and Lia Arbeeny, but they’re also getting strong leadership from sophomores Isabella DiSciascio, Averi Foster, Bella Wessel and Catherine Zeek as they try to push toward what they hope will be a successful season. “I think if we can keep the positive mentality that we’ve had throughout the season, we can definitely get further than we think we can,” DiSciascio said. “It’s all mental, honestly. I think if we doubt ourselves, we’ll stop short.” Viera already has had a big moment this season, coming back from a 7-1

deficit to beat Satellite 19-17. The Hawks have 13 seniors, including impact newcomers Reilly Cohick and Ava DiFranco. Zeek is also new to Viera and the Hawks have also added freshmen Addisen Fyrdenlund and goalie Camryn Wallace to the mix. Through six games, Viera had five players who had scored 10 or more goals and four with nine or more assists. “We’ve always had three or four good girls,” first-year coach Chad Vice said. “Well, now we have seven girls on the offensive side that can score at any point and time.” Senior Sophia Del Pozo leads the defense. Playing in a district that includes Vero Beach — ranked seventh in the nation by MaxPreps — won’t be easy, but Vice has been preaching teamwork, sharing the ball and always giving maximum effort. “I think what’s good with our team, this year especially, is that we have the ability to fail together and get better from it,” DiSciascio said. “We know how to bounce back.” Viera’s boys were off to a

5-4 start with Kyle Fischer leading the way with 24 goals — 15 more than anyone else on the team — and just 14 shy of last year’s total. “I like putting myself out there, trying to be a leader, trying to help out the team,” Kyle Fischer said. “It’s a team sport, so we have to work as a team to get everyone

playing. We’ve got to build each other up.” The Hawks are a young team with just five seniors — Jake Woodruff; Jack Hathaway; Josh Gore; Drew Mertins and Mark Adams. Sophomore Jacob Glick and junior Eli Menchetti anchor the defense in front of freshman goalie Jackson Lynch.

THE BLAKE AT VIERA IS Opening

“The future is bright,” coach Bo Bartlett said. “We’re really excited about it. We still have our goals set for districts. There’s no reason why we can’t get over the district hump and finally bring home a championship. It’s been six years. “… We can play with anyone in the state on a given night.” V V

Jack Combs, left, is a big reason why the Tigers could win their second straight district lacrosse title. Senior Bella Muniz is the goalie on an improving Holy Trinity girls team. Muniz has been a starter since the seventh grade.

BY CARL KOTALA The Holy Trinity boys and girls lacrosse teams are both building toward something special this season. The boys, coming off their first district title in program history, are still loaded with young talent — many of them juniors — that could see them challenge for supremacy again. “I think we’re a lot more talented and confident and the younger guys are stepping up,” junior defender Jack Combs said. “We’ve got a solid sophomore and junior class that we’re going to use to get deep into the playoffs this year. “… The goal is to be even better than last year.” Holy Trinity’s girls, meanwhile, have a new coach in Jeff Angermeier, two new impact players and for the first time in program history … a JV team. “We say this every year, but we have a really strong, young team,” senior goalie Bella Muniz said. “I think it’s pretty amazing this year because I started out in seventh grade and the program was pretty new. Some years, we could barely get enough for varsity. “It’s such an accomplishment this year that we can actually have a JV team, that we have enough girls. The sport’s spreading out.” Muniz will anchor the defense along with senior AK Harmon. Senior Nicole

Grillo, who has led the team in scoring the past two years, is also back and will get help from senior Mary Durkin and junior transfer Lindsey Angermeier, who was the top goal scorer at Edgewood last season. The team is loaded with midfielders including freshman Victoria Nelson; sophomore Shelby Reeve; freshman Alexa Grillo and junior Kiley Jensen. Freshman Rori Betten transferred in from New York and has an extensive lacrosse background that should make her an impact player. With 29 players in the program, the Tigers not only have a chance to build for the future, but there’s enough talent to try to compete with the county’s Class 1A favorites, Satellite and Edgewood. “I think we’re going to be very competitive this year,” Jeff Angermeier said. Holy Trinity’s boys, meanwhile, were off to a 7-1 start. With top scorer Guillermo Marr and defender Aaron Benhase lost to graduation, the Tigers are operating a little differently. “We are going to be a different team this year,” coach Eric Marr said. “Our offense will be much different. Last year, we were behind the X (the area behind the goal) with Guillermo and (had him) bring it around. This year, we’re relying much more on our middies.”

Coming off huge season, Tigers can’t wait for spring practice BY CARL KOTALA The Holy Trinity Tigers have a myriad of reasons to be excited about spring football practice starting up this month. The Tigers are coming off the first 10-win season in program history, and that was with 14 starters who were in the eighth or ninth grade. Under a realignment voted on and approved by the FHSAA earlier this year, the state has been split into Metro and Suburban classifications. Holy Trinity is set play in Class 1S, District 4 with MCC, Father Lopez and Halifax Academy. Although the schedule hasn’t been finalized, the Tigers plan to play a lot of Brevard County teams, which is why Hooks wants to ensure his team is ready to go. “I want us to be clicking on all cylinders in the spring, almost like we’re ready to go to the fall because the fall is going to be … we’re bumping that schedule up a little bit,” Hooks said. Shane Staples era at Viera begins April 25 with start of spring practice BY CARL KOTALA A lot has changed since the last time the Viera Hawks took the football field. And while we ultimately won’t know how it will all unfold until the fall, the first glimpse comes this month as the Hawks begin spring practice. Viera will have a new head coach and a number of players stepping into bigger roles when they hit the field for the beginning of spring ball on April 25. All that work will culminate with the spring game, which is scheduled for May 26, at Heritage. Shane Staples is Viera’s new coach. The 39-year-old Staples was named to the position on March 11, two days after Chad Raymond — the original choice to replace Derek Smith — stepped down due to family health concerns. Staples, who has been on the Viera staff since 2017, was a popular choice among players ever since Smith left to become the head coach at McIntosh High School in Georgia. “Shane was my preference from the beginning over any other coach,” Viera rising senior running back/defensive back Cameron Mills wrote in a Twitter message. “He understands football from a coach’s point, but also the player side. With Coach Meny coming back, the discipline is already there. Ready to play some football this year with them!” Coach Meny is DeMarkulus Menyfield, a long-time defensive backs coach at Viera who announced he was done

In addition to Mills, other key returners on defense for the Hawks will be rising junior defensive back Terrance Latner; rising senior linebacker Trevor Dunegon; rising junior linebacker Zane Humpke; rising junior defensive end Owen George and rising sophomore defensive end Isaac Hungerbuhler. “This spring will be good for us,” Staples wrote in a text message. “We are going to be young on defense, but I expect them to be very

Staples said the Hawks could be a little light on linemen this spring due to players involved in other sports, or recovering from injuries, but all are expected to be ready for the fall. VHS seeks money to buy new marching band uniforms BY ERNEST ARICO

VIERA VOICE Carl Kotala

Viera High School hopes to purchase 230 new band uniforms by 2024.

BCSG

B R E V A R D

The Viera High School music program will host a golf tournament to help raise money to buy new marching band uniforms. The tournament will be Saturday, May 7 at Duran Golf Club. VHS is seeking to raise $100,000 for the purchase of new uniforms. Dawn Light, one of the golf tournament co-chairs and a member of the Viera High School Instrumental Music Parent Organization (VIMPO), said the new uniforms are desperately needed. “While the average lifespan of a marching band uniform is six to 10 years, the VHS uniforms are 15 years old,” said Light and golf tournament co-chair Julie Albert in a letter to potential

band supporters. “For many students, their uniforms are older than they are and have been mended beyond repair.” Nick Eggen, VHS’ band director and a faculty member since 2008, said the school wants to buy 230 uniforms by 2024. The cost of each uniform is about $500, Eggen said. “The kids have used the same uniforms for 17 marching seasons,” Eggen said. The band director said the 230 uniforms are needed because he believes more students will participate in the marching band now that the COVID-19 pandemic is winding down. “Participation was down the last two years because of the pandemic,” Eggen explained. “We only had 160 kids. That was a 20 percent drop. That’s a pretty significant number. But with the pandemic ending and the continued growth of the Viera area, we’re definitely going to need more uniforms. We think 230 is a good number.” Although details about the golf tournament haven’t been finalized, Light said

the music program is asking community members to support the tournament through sponsorships, donation of services or goods, participation in the tournament and the purchase of raffle tickets. Preliminary sponsorship opportunities are divided into five groups: Platinum, $5,000; Gold, $2,500; Silver, $1,000; Table, $250; Hole, $150. “Your generous support would be greatly appreciated to help make this event a success,” the letter stated. “In return, VIMPO would be happy to acknowledge your business donation with visibility and advertising.” Eggen said the color scheme for the new uniforms will contain the school’s colors — green, gold and black — but with a unique style. “We’re going with a new design process, a more modern look. They’ll be visually very distinct,” he said. For more information, contact Dawn Light at 703999-5756 or budtdy@yahoo. com or Julie Albert at 321-795-1431 or falbert1@ cfl.rr.com. V V

Viera students working toward prestigious AP Capstone diplomas BY CARL KOTALA Elle Lazare wanted to study the Mohawk Indians because she wanted to know more about her family’s ancestry. Ryan Luciani decided to study disease prevention behaviors relating to COVID-19. Those are just two of the projects 58 students in Viera High School’s Advanced Placement Research class will be turning in at the end of the month as they work toward their AP Capstone diplomas. As Viera High AP Research teacher Meisje Connor explained, an AP Capstone diploma is one of distinction, much like a Cambridge diploma or the International Baccalaureate (IB) diploma program. “The idea is that the students take different advance placement classes throughout their high school career. Some of them might be in humanities, some might be in math and sciences — whatever it is they’re interested in,” Connor said. “Then, as they move into their junior and senior years, they start taking all that knowledge in those content areas and apply it to some piece of original research.” While some students may do studies on science or art, Lazare’s project really hit home. “My study is about the shift from a matrilineal to patrilineal society in Mohawk communities in Canada and New York,” the Viera High senior said. “I basically came up with this because my dad was born on a reserve in Canada. “That really inspired me to look into our ancestry and learn new things about why Mohawks are why they are,

how their society shifted from the past five centuries to what it is today.” Lazare used 42 different sources for her project, looking at Mohawk communities before and after the arrival of the colonists. “I came up with topics that changed how the community is today and ranked them from how significant I think they are and how they impacted the communities,” she said. “My biggest takeaway is that the arrival of the colonists definitely changed how the community interacts with others and how the creation of laws and acts — like the Indian Act — have definitely changed how the tribe functions. “It’s changed the roles women have among tribes. They used to be more of the caregivers. They would hunt and gather, too. They would be equal to men in the society, whereas now you’re seeing some of their roles have been taken away as time has changed. But they’re working toward reclaiming some of their old roles.” Luciani wanted to know how COVID literacy affects high schoolers’ disease prevention behaviors. “I chose that topic because in the beginning of the year COVID was really bad in high school and what we were doing … I personally didn’t think it was too effective,” Luciani said. “I noticed there were a lot of students who displayed certain characteristics, that would maybe wear their masks or socially distance or be conscientious about certain things. I wanted to see if there was a correlation between the two.” He chose to work with

students in Viera’s dental aid program because they all have a background in health science. “I found that there is a moderate correlation between COVID literacy and people’s behavior,” he said. “There’s definitely an association, but there’s definitely something else playing at it. High schoolers have the cognitive reasoning behind it, like they

understand what they do, but there’s a disconnect between what they know and what they do.” Students who score at least a 3 on four separate AP tests and pass both the AP Capstone Seminar test and their AP Capstone Research project will earn an AP Capstone diploma. Lazare and Luciani both said they have gotten a lot

out of taking Connor’s AP research class and that learning how to do the work on their projects has helped them prepare them for college. “Both of these students are very focused,” Connor said. “They have stayed on top of their work. They are not easily distracted. They’re really committed to their projects. V V

SPANISH FLAMENCO EGGS

This is Spain on a plate. Characteristically deriving from Seville, but served all over the Iberian Peninsula, it’s one of Spain’s quintessential dishes.

BY NANETTE HEBDIGE

2 eggs 1-2 cups of tomato sauce ½ cup of thawed, cooked peas 2 TBSP olive oil 1 small onion – chopped 2 garlic cloves – minced 1 15 oz. can of tomatoes or 1 jar of tomato sauce Pinch of sugar/salt/pepper 12 TSP Spanish smoked paprika 1 jar of roasted red bell peppers – sliced into strips Bread slices

The 'egg-ceptional' egg

Preheat oven — 400F Add chopped onions to a pan, add a pinch of salt and sauté for a few minutes, add garlic. Add jarred sauce or canned tomatoes. Cook 2 to 3 minutes. Add paprika, sugar, salt or pepper. Cook low for 10 minutes. Place the tomato sauce in a small cast-iron skillet or earthenware dish. Crack two eggs on top of tomato sauce. Top with chopped chorizo, peas, and pimento slices. Bake until the whites are cooked but the yolks are still runny — about 12 minutes. Sprinkle with parsley and serve with a bread. more than white. Brown-laying hens are larger and therefore eat more. Hence, they’re more expensive to maintain. The white stringy thing you get when you crack an egg denotes a fresh egg. It’s called chalazae and that’s the membranes that join the egg to the shell. It takes between 24 to 26 hours for an egg to develop. One hen equals five to seven eggs a week. American eggs must be refrigerated to prevent “blooming” and creating contamination. Wash eggs prior to using — the exterior of the shell still has excrement and washing prevents further bacterial impurities.

Test freshness by submerging eggs in a water glass — if it floats it’s old; if it sinks to the bottom, it’s fresh. Free range or cage free only means that hens are in a larger caged environment. Chef’s hats have pleats to equal the many ways you can cook an egg. Harriet, a United Kingdom hen, laid the largest egg in 2010 measuring almost 10 inches in diameter. Fried, poached, boiled or baked, everyone is totally down with eggs. They’re not just a breakfast mainstay but enjoyed as a lunch staple and often prepared as a full meal for dinner.. V V

With the dark news and disturbing images bombarding us daily, why are we even thinking of cooking? Because cooking brings us together for a few moments and it allows us to celebrate humanity rather than strive to extinguish it. Easter celebrations are around the corner. For every Christian, it represents the resurrection of Jesus, and the Easter Bunny will hide many brightly colored eggs to be hunted by little ones. There’s no egg-saggeration that we’re still debating what came first, the chicken or the egg. Even Charles Chickens couldn’t seem to come up with an answer in “Great EggSpectations”. We’re staying sunny side up when we say that eggs are all they’re cracked up to be and consumed almost daily practically in every household. Seriously, eggs are considered one of nature’s most perfect creations and should be celebrated as such. They’re egg-exeptional sources of protein and amino acids and, according to the FDA, the average American eats 19 pounds of eggs a year. Some egg-ceptional lesser-known egg facts The yolk has the same protein as the white and although clinical studies are still underway, eating eggs could raise your “good cholesterol” so you can eat an egg a day. In the 1950s, the FDA banned the use of hormones in poultry, so eggs will always be hormone-free. Egg color doesn’t provide additional nutritional value, although brown eggs cost

South Viera is a homebuilding hotbed. Pre-sales have begun at Pangea Park, a 676-home subdivision south of the Pineda Causeway extension in Viera. The Viera Company, Duda-owned developers of Viera’s master-planned community, is building Pangea Park on nearly 300 acres in the southern section of Addison Village west of Interstate 95 and just west of Brevard County’s first Costco store. The development will be Viera’s first multi-generational planned neighborhood, Eva Ray, director of community management, amenities, and communications with The Viera Company, said in a statement. Viera Builders, the developer's homebuilding arm, will construct the residences. The first four available lots already have been sold. “Customers will be able to choose from single family homes, attached villas and single family homes that include landscaping maintenance,” Ray stated. This is a rendering of The Learning Experience, a daycare center that is being built in Viera on Breslay Drive.

Early childhood education center opening in new office complex BY MIKE GAFFEY A growing early education and daycare company for children ages 6 weeks to 5 years will open a franchise in one of two commercial buildings under construction north of Viera Charter School. The Learning Experience will occupy a 10,000-squarefoot building on part of 2½ acres between Breslay Drive and Stadium Parkway, said John Tomlinson, a principal and consultant to Tampa-based commercial real estate developer ProJect International, which is overseeing the project and owns four other buildings with the company as a tenant. “It’s one of the nicer 0- to 5-year-old learning program

schools,” Tomlinson said. Based in Deerfield Beach, The Learning Experience is America’s fastest-growing daycare franchise with more than 450 centers open or under development. The company was named one of the “Best of the Best” in Franchise Business Review’s 2021 Top 200 Franchises list. The Learning Experience also was ranked among the top franchises in Entrepreneur Magazine's Franchise 500 for 2022, including No. 4 in the Child Services category. A 5,000 square-foot playground will be part of the Viera franchise, Tomlinson said. The center at 6106 Breslay Drive is expected to be completed in October or November, he said.

Pro-Ject International looked at a number of sites for the new child care center before settling on property north of Viera Charter School, Tomlinson said. “This is one that fit the best,” he said, adding that the Viera franchise is on a larger piece of land than Pro-Ject’s four other properties rented to The Learning Experience so that a second building could be added. The Learning Experience also is opening another center at 4470 Hollywood Blvd. in West Melbourne. Pro-Ject is not developing the West Melbourne center, Tomlinson said. Pro-Ject International doesn’t have a tenant yet for the second 10,000-square-

foot office building at 6156 Breslay Drive, Tomlinson said. “We’ve gotten a number of people calling us who are interested,” he said. “Because it's next to a charter school and across from (Viera High School) and around the

corner from some churches, it should be a fairly good setup for a pediatric office or for some other type of medical use.” For more information, call Tomlinson at 321-356-4714. VV

Business Scoop

Acosta leaves Viera Pizza, opens Mr. Delicious Pizzeria BY MIKE GAFFEY When Mike Acosta used to participate in corporate running events with his team from Viera Pizza, he earned the nickname “Mr. Delicious.” “That was always my tagline — something to do with delicious,” Acosta said. “I even had T-shirts printed saying ‘Mr. Delicious’ on the back.” Acosta’s moniker is now the name of his new pizza place, Mr. Delicious Pizzeria, which was scheduled to open this week at 1950 Viera Boulevard, No. 101, the former home of Gio’s Italian Ice & More, which moved to Rockledge. “It’s an old-school pizzeria,” said Acosta, who started out making pizzas at his family’s Christy’s Pizza restaurant in Cocoa

and spent 17 years at Viera Pizza inside a former Mobil service station at 5450 Stadium Parkway before opening his own restaurant. “Everything is made in house. Dough fresh, cheese shredded in house, sauce fresh, veggies cut fresh. We’re not afraid to do the work to make a better product.” As operating partner at Viera Pizza, Acosta became the face of the popular pizzeria known for its 24inch pies. But after 7-Eleven bought the service station from owner Naweed Akram in 2019 and kept Viera Pizza, Acosta stayed on for about nine months before deciding “it just wasn't where I wanted to be,” he said. Acosta’s new 1,460-square-foot pizzeria is basically a big kitchen that can handle large and small

orders, he said. There’s a small dining area, but the main focus at Mr. Delicious will be on takeout, delivery and catering, he said. Customers can enjoy all their favorite styles of pizza as well as pasta, wings, gyros, appetizers, salads and desserts. But Acosta is adding a few new items to the menu, including a New York chopped cheese sandwich and a pork patty sandwich called “Pigalicious.” “We have more delicious recipes,” Acosta said. “There will be plenty of options for everyone.” About a dozen employees will work at the restaurant, including Acosta’s son, sister and daughter-in-law who also worked with him at Viera Pizza, he said. “I think that was the key to Viera Pizza — the family-type environment, the love going into the food,” said Acosta, who graduated from Merritt Island High School in 1995 and from the University of Central Florida in 1999. “Because anybody can make a pizza. You can have the same exact

recipe and have two totally different pizzas. “We keep it familyoriented. Our team is like a fine mozzarella. We get hot and pulled apart, but the flavor stays intact. Then we cool down and come back together. We are delicious, hot or cold.” An avid runner, Acosta also will continue to help worthy causes by presenting local running events through his Power of Pizza Charities, aided by his co-chair and race director Brittany Streufert. The nonprofit has raised money for Viera High School's athletic department and organizations such as Special Olympics of Brevard County and Space Coast Early Steps. Power of Pizza’s next

event will be the Space Coast Classic 15K & 2 Mile on Sunday, April 10 at Quest Elementary School at 8751 Trafford Drive in Viera. The 15K starts at 6:30 a.m. and the 2 Mile begins at 7 a.m. The race will benefit Quest Elementary, The Florida Panther Project, and the M.O.R.G.A.N. Project. Acosta said he’s especially grateful to Akram for the opportunity to work at Viera Pizza. “My team and I are appreciative because we wouldn’t be where we’re at without that platform, the 17 years we had there,” he said. Although Acosta is opening his new restaurant close to several pizzaproducing competitors, he said other pizzeria owners are happy for him. “In the local pizza business, we’re all brothers,” Acosta said. “We’re all friends. We’re all here to support one another and help one another.” For more information or to place an order, go to MrDeliciousPizza.com or call 321-655-6555. V V

Ellison brings unique, San Francisco style to Viera BY ERNEST ARICO A unique and luxurious interior design store has opened in The Avenue Viera. BED by Harmony, the brainchild of interior designer Brian Scott Ellison, offers customers a large selection of luxury interior designs and luxury furniture. “Customers will see unusual furniture made in Brazil and Italy,” Ellison said. “We also offer custom wood tables, modern, large-scale furniture, lights, rugs and accessories.” Born in St. Petersburg, Ellison has strong ties to Brevard County. His parents were involved with the CITA Rescue Mission in Melbourne and he is a 1997 graduate of Titusville High School. Following graduation, Ellison attended several interior design trade schools in the San Francisco area and in other parts of California. Ellison, a multidisciplinary designer, began his career at Restoration Hardware corporate offices in San

Francisco as a lead designer working with the nation's taste makers. He also has worked with furniture designers and buyers for several years. He believes he brings this experience to Florida with his own brand of creativity and vision for all his projects. “I grew up making things look different,” Ellison said. “I started playing with Legos when I was 7 or 8 years old. I enjoy making things and telling stories in a different way. Our family was always in the building business.” Ellison also specializes in working with business owners to give their business a brand identity or to build brand equity through his designs. “I work with business owners utilizing 3D renderings, 3D models and video presentations to convey my concepts,” Ellison explained. ”I also have worked on the commercial end — hotels, restaurants, medical offices and shelters. Viera is site for Hughston Clinic’s first Brevard orthopaedics office BY MIKE GAFFEY Hughston Clinic Orthopaedics, a leader in orthopaedics and sports medicine, has opened its first Brevard County location in Viera. Dr. Pasquale Reino, a board-certified orthopaedic surgeon, will accept patients in the coming weeks at his new clinic at 8045 Spyglass Hill Road, Suite 104. “I’m very excited to come to this area,” said Reino, a specialist in general orthopaedics and total joint replacement. Reino practices advanced techniques in joint replacement, including direct anterior total hip replacement, computeraided total shoulder replacement, and roboticassisted knee and partial knee replacements. He focuses on outpatient total joints and minimally invasive approaches. “The most exciting thing in terms of hip replacement surgery is that about five years ago I combined using a direct anterior approach and computer navigation for hip replacements,” Reino said. “That allows a few really good things for my patients:

VIERA VOICE MIKE GAFFEY

Dr. Pasquale Reino, a boardcertified orthopaedic surgeon, is accepting patients at his new Viera clinic.

It lessens the dislocation risk and speeds up the recovery process. Usually my patients can go home the same day or after one night in the hospital with this newer technique.” Computer navigation allows Reino to match a patient's leg length during

surgery “so I know before leaving the operating room the surgery is done accurately,” he said. Reino also specializes in hand surgery, including endoscopic carpal tunnel surgery, plus shoulder and knee arthroscopy. “I consider myself a general orthopaedist. I really like treating a wide age range and a variety of injuries,” Reino said. “I treat patients’ issues from shoulder to finger-tip, as well as hip and knee complaints.” A graduate of Westminster College in Wilmington, Pennsylvania, Reino received his doctoral degree from Lake Erie College of Osteopathic Medicine in 2007. He completed his orthopaedic surgery residency at South Pointe Hospital in Warrensville Heights, Ohio, and was Chief Resident at the Cleveland Clinic Hospital in 2012. From 2012 to 2016, Reino served in the U.S. Navy as an orthopaedic surgeon. He worked at Walter Reed National Military Medical Center in Bethesda, Maryland treating injured service members returning from Afghanistan.

While stationed in Yokosuka, Japan for two years, Reino focused on hand surgery and complex arthroscopy. During his final tour of duty at the Naval Hospital in Jacksonville, he focused on hand surgery, arthroscopy and total joint replacement. Reino rose to the rank of Lieutenant Commander and was awarded two Navy and U.S. Marine Corps Achievement medals, and one Joint Service Commendation medal. Reino joined Hughston Clinic in Central Florida, then relocated to the Space Coast to be closer to his wife, Mona, a dentist who has lived in Brevard County for several years. “Viera was my choice,” Reino said. “ It is a growing area and will benefit from more highly skilled orthopaedic specialists. When I mentioned that I wanted to move my practice here, Hughston Clinic said we’d love to support you and build the practice around you.” Columbus, Georgiabased Hughston Clinic Orthopaedics has locations in Florida, Alabama, Georgia and Tennessee. Other Florida clinics are in Poinciana,

Lake Nona, Oviedo and Fort Walton Beach. The newly renovated 3,300-square-foot Suntree office has three employees and a new X-ray machine. Reino said most patients he treats are suffering from acute injuries, arthritis or overuse activities such as tendinitis. For tendinitis, Reino offers a spectrum of treatments ranging from activity modification to surgery. “Shoulder tendinitis can lead to tendon tears if not properly treated,” he said. Now living in the same county once more, the Reinos enjoy sunset walks on the beach and the area’s wide variety of food choices, he said. They also look forward to cruising from Port Canaveral and spending time on the water. “One thing I've noticed about the Space Coast area is people care more about relationships here,” Reino said. “There’s a strong sense of community I haven’t felt anywhere else in Florida.” For more information, call 321-344-9030. Patients will also be able to schedule appointments online at FL.Hughston.com. V V

restoration projects and against lax enforcement and sweetheart deals by special interests. Hundreds (no, thousands) of us must come together to Speak for The Lagoon. And, now the Lagoon Voices (HelpTheLagoon.org/ Voices) has been formed by the Brevard Indian River Lagoon Coalition to do just that. Yes, the Lagoon Voices advocacy group is open to all who value the Indian River Lagoon. Members will learn about current bills and regulations that will help or hurt the IRL. Members will be given specific messages they can use to promote the good and discourage the bad. We will identify who to contact, when and how. So, you can combine your voice with many others to hold our leaders accountable for the Indian River Lagoon. The Lagoon Voices is working with other organizations here in Brevard County and beyond to leverage our insights and our effectiveness in advocacy. We will hold special legislative briefings and monitor the votes of officials. You will know if they are delivering on their promises. What can you do to help the Indian River Lagoon? Learn to reduce your pollution footprint, help others by volunteering, and join the Lagoon Voices (HelpTheLagoon.org/Voices) today. VV

Viera Nature Festival will highlight eco-friendly nature, wildlife exhibits BY SUE DEWERFF With the official arrival of spring — there is no better time than to celebrate Brevard County’s bountiful gifts of nature. On April 9, the Viera Community Institute will host its annual family-friendly Viera Nature Festival. It will highlight eco-friendly and environmentally based exhibits offering an opportunity for the community to learn about multiple facets of wildlife, plants and sea life. From educational presentations, to conservation and recycling tips, children’s activities and more, festival attendees will be able to enjoy lunch from local food trucks and view and purchase art and crafts made by local artisans. In honor of the contributions by the late Charlie Corbeil, one of the first Viera Wetlands Rangers, an avid nature and wildlife photographer and Florida Master Naturalist, Viera Voice will once again display all entries from its annual Charlie Corbeil Youth Art, Photography and Writing contest. Satcom Direct, a business aviation solutions provider with its world headquarters in Suntree, celebrates its 25th anniversary this year. Founded by CEO Jim Jensen in 1997 in Satellite Beach, the company built a two-story, 43,000-squarefoot facility at 1050 Satcom Lane just south of Viera Boulevard. This consolidated its beachside headquarters operations into a single, larger, more efficient facility in anticipation of expected growth. Today, Satcom Direct, or SD, is the leading provider of satellite voice and broadband data solutions for flight deck and cabin communications serving business, military, government and heads of state aircraft. The company has 164 additional locations in 104 countries, including the United Kingdom, the United Arab Emirates, Switzerland, Singapore, Australia and Brazil and a hardware development and manufacturing base in Ottawa, Canada. “Jim Jensen took his innovation to get us to where we are today and led us to this great facility,” said Josh Wheeler, senior director, entry into service and client services at Satcom Direct. SD also provides global satellite communications to land mobile and maritime customers as well as land

mobile and handheld satellite equipment to emergency responders, media outlets, and recreational users traveling in remote locations. Designed to resemble an airplane with a central fuselage section and two angled wings, Satcom’s global headquarters has desk and office space for up to 200 employees. The building also houses Satcom Direct’s network operations center to aggregate, collate and analyze data generated by business aircraft activity. Manned 24 hours a day, the center features a 72- by 10foot digital wall displaying real-time global customer

connectivity activity, providing the network status of each customers’ aircraft globally and enabling support personnel to ensure customers always remain connected during flight. The new headquarters earned a Leadership in Energy & Environmental Design certification, the recognized standard for measuring building sustainability. The building is adjacent to the Satcom Direct Data Center, which secures SD customer data services. The 25,000-square-foot building

Groundbreaking signals start of Atlantis construction BY MIKE GAFFEY Officials broke ground March 23 on Atlantis Senior Tower, a seven-story assisted living facility that will connect to the existing Chateau Madeleine Senior Living & Memory Care in Suntree. Atlantis Senior Tower will add 90,000 square feet and 80 residential units to Chateau Madeleine’s existing 69,000 square feet and 84 units at 205 Hardoon Lane in Suntree. “As we got bigger and bigger we needed to do something different,” Eric Hardoon, the administrator and executive director of Chateau Madeleine, said while describing the tower during a groundbreaking after-party. Scheduled for a grand opening in 2023, the tower will offer residents bigger apartments with large storage areas throughout the building, Hardoon said. Some of the tower’s 5-star resort amenities include a high-ceiling lobby, a heated swimming pool with railings and tropical landscaping on the water, a 260-seat, glass-enclosed dining room

on the water, a full liquor underground bar with water views, outdoor seating with a waterside fire pit and a builtin barbecue, guest suites for out-of town family members, a stage and entertainment area, a private chapel area, a large sundry store, and a 3,000-square-foot banquet hall available for residents

and their family members. At the top of the tower, residents can view all rocket launches from the Rocket Launch Bar & Bistro, with a full restaurant, a full liquor bar and an observation deck. “All the drinks and food will be named after space themes,” he said. Chateau Madeleine had a pre-groundbreaking ceremony for the new tower on March 22, and the facility’s first 12 residents dug shovels into dirt to mark the occasion. “That’s why we're

building a tower, because you guys said how great this place is,” Hardoon told the “founder” residents. Located off Wickham Road in Brevard Medical City, Chateau Madeleine is a senior living and memory care assistance facility. The three-story building, which welcomed its first residents in October 2019, has 62 apartments dedicated to independent and assisted living along with 22 memory care studios. The complex is named after Hardoon’s grandmother, Madeleine. For more information, visit suntreeseniorliving.com or call 321-701-8000. VV
