Family of fencers, musicians love living, sharing, caring in Viera BY WENDY SCHEURING Daniel and Yana Bucur have been sharing their love of fencing and music with Viera area residents for the past 13 years. They bought a home in Viera in 2005 when Daniel Bucur was stationed at Patrick Air Force Base, (now Patrick Space Force Base) before moving to Minot, North Dakota with their two young daughters. Four years later, the family moved back to Viera. In 2011, Daniel started a fencing club called Sword Masters Club and Fencing Academy, which is located off of Viera Boulevard. Yana started giving piano lessons to area musicians on a baby grand piano at her home studio in Viera. The couple met in what Yana affectionately calls the Love Capital of the World, Little Rock, Arkansas. At the time, she was attending the University of Arkansas and he was in the Army Reserve. “He went on active duty right after we got married, Yana said. “We got married four days after 9/11.” She came to the United States from Ukraine when she was 18, and Daniel was 27. The couple will celebrate their 21st wedding anniversary in September. Their daughters, Rebekah and Naomi, are now 19 and 18 years old, respectively. Both daughters have been fencing for 13 years. also teaches at the club. Rebekah enjoys reading and playing the piano. The family attends the Church at Viera, where Naomi sings and plays the piano and guitar in the worship band, often accompanied by her dad, Daniel, who plays the bass guitar. Originally from Romania, Daniel was a member of the country’s Olympic fencing

team and went to the Olympics in 1980 but could not compete due to an injury. Daniel’s military career consisted of four years in the U.S. Army and eight years in the U.S. Air Force, all as a chaplain. Yana is a talented pianist who has been playing since age 4. Naomi, a homeschooled student, will soon graduate from the Abeka program

Rebekah is a sophomore at Liberty University in Virginia with a major in Exercise Science. “I really like the community,” Naomi Bucur said of Viera. “I also like how safe and clean everything is. It definitely is home.” “One thing I like about Viera is the small-town vibes,” said Rebekah Bucur. “Although it’s growing,

everyone knows each other.” Both young ladies enjoy shopping with their mom at The Avenue Viera. “I love how Viera is developing and that there are a lot of things to enjoy like the restaurants and the zoo,” Yana said. “We enjoy going on double dates, going to theme parks, the beach and deep sea fishing.” VV

BY LINDA JUMP Nancy, Mary and Sally don’t even have to order at Niki’s Family Restaurant — three long-time waitresses there have served the mostlyretired women breakfast and lunch nearly daily for more than two decades. “If they don’t know what

they want, we do. We have their drinks ready before they sit,” said Debbie Lund, a 26-year employee of the Suntree Plaza eatery. “They’re just like family, hilarious and fantastic.” Nancy Buzzard and her mother began dining there, and noticed Mary Cody, usually there at the same

time, eating alone. “I asked her to join us, and that started our group. We continued to eat together after my mother died,” Buzzard said. Sally King joined the group 20-plus years ago. “Table 10 is theirs, and we save it for them,” said Nikki Cashon, a 24-year server from

She said about 80 to 85 percent of their customers are regulars, so most customers are greeted by name, like on the sitcom "Cheers." “They know our families too, because we bring them here when they visit,” King said. “Our group gets larger and smaller. We get a bigger table in the other room when we need one. This restaurant is like home,” Buzzard said, displaying photos of various group get-togethers on her cell phone. “We get extralarge birthday cakes, eat a few pieces and leave the rest for the staff.” The women also give workers gifts such as Christmas cacti, poinsettias and Easter lilies. Cody brings them chocolate. Floyd Bradley, who opened the restaurant in April 1990, considers Buzzard, Cody and King his most loyal customers. “They were here for breakfast and they’ll be here at 12:25 for lunch,” he said. King is widowed; Cody never married, but sometimes, Buzzard’s husband joins the women for lunch. “He likes to sleep in, so he misses breakfast,” Buzzard said. King said the women talk about everything amicably and share daily concerns. “They’re great friends. You couldn’t ask for better. We come. We eat. We talk,” King explained between bites. VV

VHS Hawks finally old enough to hold first alumni weekend BY BRENDA EGGERT BRADER

The Viera High School Football Booster Club has plans for its first ever alumni weekend Sept. 23 and 24. “The thing is that Viera High School is not that old, so to have an alumni program we finally got more than 10 years under our belt to have a reunion,” said Scott Woodruff, president of the Viera Hawks Quarterback Club. “Viera is so young (opening in 2006), not like Melbourne or Palm Bay High Schools that have been around for years, the club membership decided it was about time to have an alumni night for football and the cheerleading program. “The Viera High School former head coach Kevin Mays who is the coach now

in Baker County will bring his team and play against the VHS Hawks,” Woodruff said. The teams played one another last year with VHS trekking to Baker County and bringing home a win. This year the Hawks will be playing that team on its own turf on Sept. 23 for a regularly scheduled football Friday night game beginning at 7 p.m. A postgame alumni event, open to the public, will be held at Beef ‘O’ Brady’s in Viera. “We have reached out to former player, Tre Nixon, currently a wide receiver with the New England Patriots, to see if he is able to attend, trying to see if the NFL schedule allows him to make it,” Woodruff shared. The boosters are planning unique things, still

in the works, on the sidelines for the former players and coaches who attend. The group also has reached out to college players who are not able to attend due to their own season team commitments. VSLL All-Star baseball, softball teams have another successful summer BY CARL KOTALA The softball programs were dominant, and the baseball programs showed plenty of promise. All in all, it was a pretty good summer for the Viera Suntree Little League AllStars as they took part in the District 2 tournaments held at Max K. Rodes Park in West Melbourne. Of the seven teams entered in the postseason by the VSLL, four of them went on to win district championships and two of them advanced all the way to the state tournament. “Viera Suntree Little League is very happy with that success,” VSLL president Nick Galluzzi said. “Four district titles and (two) sectionals … we can build on that.” Viera softball teams swept the three tournaments they played in this summer. The 8-10 team managed by Dan Smith won the District 2 title. Those players included: Jordynn Angier, Isla Clark; Jessalyn Jordan; Klara Latham; Cara Main; Morgan McNulty; Victoria Olson; Rachel Paul; Malorie Reilly; Colette Richardson; Bella Smith; Serafinna Worden and Shea Young. District title No. 2

belonged to the VSLL Majors softball team, which also won gold and advanced to the sectional round. Manager Kevin Vega’s squad included: Gracen Baker; Lydia Dexter; Allison Drake; Camryn Glennon; Evie Martin; Camilia McKenzie; Evelyn Peirce; Caleigh Schmoll; Olivia Smith; Arianna Vega and Alexandra Zgonc. The VSLL Juniors, meanwhile, not only won the district title, they won the Section 2 championship for manager Mike Worden as well. That put Viera into the state tournament, where it went 1-2. Members of that team included: Isabella Barrera; Lindsey Daly; Harlowe Doolittle; Sara Fentress; Aleecia Johnson; Addyson Maxwell; Kaitlyn Peedin; Molly Peters; Sophie Reilly; Haley Rogers and Valentinna Worden. “Our girl’s program is doing real well,” Galluzzi said. “Mike Worden, who’s heading that up, is doing a real good job. These girls want to come back and be stronger next year.” While VSLL softball was dominating, it was Galluzzi’s Juniors baseball team that won both district and section

Well, this is one time where that truly is the case. “A friend of mine coached when he was on the 14U team, so I knew what happened,” Viera High coach Shane Staples said. “He comes from a good family. There are people around him who care. “We’ve embraced him as a family, Viera football wise. And I think the community has surrounded him, stepped up and really treated him like family. That’s why he’s at Viera now.” Staples isn’t wrong. Despite the fact that he had played for the SVYFL since he was seven, Hungerbuhler was slated to go to Rockledge High, where his sister had graduated from. But in the wake of his father’s death, the decision was made to send Isaac to Viera. “After Jason died, I asked Isaac if he wanted to go to Viera to stay with his football family because at least that was one thing that was going to remain the same — the football team and their parents. Some of those parents, he’s known since he

All of them knew Jason because he would be at the games.” Although Isaac didn’t play that game on Oct. 10 in New Smyrna Beach, he was back on the field the following week when the SVYFL hosted Merritt Island. Those on hand for support included Derek Smith, who was still Viera’s varsity coach at the time. Whenever No. 10 made a big play that day — and he made a few of them — he pointed to the sky. He doesn’t really do that now, but that doesn’t mean his father isn’t

still on his mind. “We had a very close connection,” Isaac said. “We did everything together. We had all of our hobbies together, so we related on a lot of things. That was nice.” As a freshman last season, Hungerbuhler was able to get some valuable playing time against opposing offensive tackles who were bigger, stronger and faster than anything he was used to. Now, he’s ready to step

New classification system brings challenges for Viera, Holy Trinity BY CARL KOTALA Football across the state will have a new look this season thanks to a new format voted on by the Florida High School Athletic Association. Instead of having eight classes, each with a single state champion, Florida’s 67 counties have been split by population density to create metro and suburban classifications for at least the next two-year cycle. There will be four metro classifications consisting of teams from Broward; Duval; Hillsborough; Miami-Dade; Orange; Pinellas; Palm Beach and Seminole counties. The remaining 59 counties — with the exception of Class 1A rural programs — will be split into four suburban classes. The rationale for the change was an attempt to make things more competitive. Over the past 10 years, 89 percent of the state championships were won by teams who now fall into the metro classification. What does that mean for Brevard County teams — specifically Viera and Holy Trinity? If anything, things could be tougher for Viera, which played in Class 7A — the second-highest class in the state — last season. Now, the Hawks find themselves in Class 4S and in District 11 with Harmony,

Viera played in Class 7A last year, but under a new football classification system voted on by the FHSAA that split the state into metro and suburban classes, the Hawks will be in 4S for the next two seasons. Heritage and Melbourne. Vero Beach, Treasure Coast and KissimmeeOsceola — who all played in Class 8A last season — are all in Region 3 with Viera, while powerhouses like Lakeland and defending Class 8A champion Venice will be in 4S as well. Reaction to the split has been mixed to say the least, and it’s likely to stay that way, especially in the first year.

“Overall, I don’t think the Metro vs Suburban was the change that needed to be made,” Viera coach Shane Staples wrote in a text message. “The change that needs to be made is Private vs Public. I also feel that the FHSAA needs to come up with rules about transferring, whatever they are and allow all schools to be under the same rules. “The change really doesn’t change much for

Viera because 4S is arguably still the toughest division. If anything, our district got tougher and so did our region.” Holy Trinity, which dropped from Class 3A to 2A last season and hasn’t played in a district since 2018, will see a noticeable change this fall. Not only will the Tigers be in Class 1S in 2022 and 2023, but they will be in District 4 along with Melbourne

Central Catholic and two teams from Daytona Beach: Halifax and Father Lopez. The good news is that there are only three other teams in the region — P.K. Yonge, St. Joseph and Trinity Catholic — which could give the Tigers a chance to run their streak of reaching the semifinals to five consecutive seasons. How it will all play out will unfold during the next five months. VV

BPS students to see many changes this school year BY ERNEST ARICO

Brevard County public school students will see a lot of improvements and changes when they return to school on Wednesday, Aug. 10. Russell Bruhn, the chief strategic communications officer for the district’s government and community relations department, said in a letter that the summer was busy for Brevard Public Schools.

All these projects were funded by the half-cent sales surtax approved by voters in November 2021.” One of the technological

changes students will see this coming school year are for those riding school buses. “We are adding new technology to our school buses that is expected to streamline the process of getting our students on and off buses,” Bruhn said. “Each bus is now outfitted with a computer tablet that allows students to quickly check in and check out of their bus.” Jefferson Smith, a quality control supervisor with the district’s transportation department, said BPS is partnering with ReaXium, a technology service corporation that develops specialized cloud-based solutions. “We wanted to improve our transportation services,” Smith said. “This is a good venture for our students and their parents.” According to ReaXium’s website, the company will provide the district student ridership, GPS tracking, contact tracing, bus seating charts and mobile applications. “We started using it as a pilot program in May at several locations (Viera and Palm Bay) and found it very useful,” Smith said. “We hope to have the program fully integrated by the first day of school.” While district officials are excited about the new busing technology, many parents expressed concern that the district will not have enough bus drivers to transport students to school. “Last year, my son had

This means employees will see the

Pinecrest Academy to partner with NASA BY ERNEST ARICO Pinecrest Academy Space Coast will be partnering with NASA and join their Student Spaceflight Experiments Program this coming school year. The SSEP is a United States model STEM Education Initiative for fifth grade through college level grades to inspire the next generation of America's scientists and engineers The SSEP gives selected students the ability to design and propose real microgravity experiments to fly in low Earth orbit (experiments conducted in a “weightless” environment) aboard the International Space Station. The SSEP participating school garners extensive media coverage at local, regional and national levels. The participating school is provided a very real flight certified, straightforward to use microgravity research mini-laboratory and guaranteed launch services to transport the mini-laboratory to the International Space Station where it is operated by the astronauts. All Pinecrest fifththrough eighth-grade students will compete through formal submission of real (but grade level appropriate) research proposals by the student teams — as is standard practice for professional real-world researchers. Professional muralist Jesse Travis returned to Viera High School this summer to paint Hawk murals on the walls of the school where he was first inspired to become an artist.

Jesse Travis was looking for an easy class when the self-described student troublemaker signed up for Visual Design at Viera High School. “I was big into graffiti and just doodling all over my papers,” said Travis, who had been searching for a new outlet after injuries cut short his dreams of playing baseball. “I would often doze off in class because I was drawing all over everything.” Travis’ teacher David Peregrina saw potential in the then-15-year-old’s doodlings and urged him to get serious about art and draw things that interested him. Eight years later, Travis, now 23, has returned to the school where he was encouraged to pursue a career in art and has created large murals of the school’s fierce mascot that he hopes will inspire other students. Armed with spray paint, exterior wall paint, rollers and brushes, the Viera resident painted a huge hawk with a wide-open beak and outstretched wings on a 20-by10-foot section of outside wall at the campus courtyard, the site of student pep rallies. Created in less than five days during summer break, “Soaring Hawks,” in school colors of green and gold, is centered beneath a sign that says “Home of the Hawks.” “This has to be my best mural to date,” Travis said. For his next project, the VHS alumnus painted a hawk soaring toward the sun and clouds on a wall where previous graduating students have left their handprints. The mural includes space for future grads to add their prints, Travis said.

“It will represent all the Hawks leaving the nest and soaring into the rest of their lives,” said Travis, who expected to finish the second mural before school starts. Using walls for canvases has fascinated him since he got hooked on art. “I'm a big fan of big and loose,” said Travis, who took art classes at Eastern Florida State College and also found inspiration from street artists during a New York

City trip. “I don't work well with very small things and I struggled in the beginning with trying to draw on very small pieces of paper and small paintings. I enjoyed it more the bigger things got.” He got his start at muralmaking when a friend’s mother allowed him to paint a sunset scene on the family’s poolside

Viera High School graduate continues to succeed long after ‘Shark Tank’ BY WENDY SCHEURING Viera High School graduate Ben Stern continues to successfully grow his company nohbo, six years after making a deal with Mark Cuban on NBC’s Shark Tank. Stern made news during his junior year when he appeared on the well-known reality television series “Shark Tank” alongside his grandmother to garner entrepreneurial support for nohbo, a material packaging startup company. “We take existing products and create onetime usage products in podded form that are water soluble,” said Stern, a 2017 Viera High graduate who is the founder and CEO of nohbo. “We manufacture, produce and sell to our clients in these podded formats.” nohbo currently works with more than 60 personal care product companies according to Stern. On the show, Cuban, an investor and billionaire entrepreneur, offered to

invest $100,000 in nohbo for 25% of the company. Four years later, in 2020, Cuban traveled to Florida to film an update on Stern and his company. It’s 2022, and nohbo continues to grow. Now 23 years old, Stern is impressive. He has raised $5.5 million dollars, has obtained three patents, has hired 12 employees, including a director of hospitality, whose role is

almost 500 years to do so. His remedy to this problem is the creation of raindrop-shaped pods, composed of plant-based materials, to contain shampoo, conditioner or body wash for one-time use. For Stern, water is precious. “When there is no water, there is no life,” he said. He explained that many shampoos contain about 90% water. “We remove the water and add plant-based water-free substitutes mixed with your personal care ingredients. We add surfactants, conditioning agents, and fragrances, and test rigorously,” he added. The products do not pollute aquatic systems or adversely affect marine life. Stern did not attend college. Instead, he is the recipient of a coveted Thiel Fellowship and was awarded

The catch is that he cannot attend college during that time. “They only give the fellowship to 20 to 30 kids per year,” Stern said. “He (Thiel) actually pays you not to go to college and work on your company.” Stern also is a member of Melbourne’s Groundswell Startups, a local startup incubator, and uses it to host company events. “I am still a member and a believer and have friends that work out of there,” he said. Stern is a young man with big dreams, and he truly believes he can achieve them. “We’re going to get into every drug store, Target, etc. We’ll continue investing in new product innovation, a new packaging format that does not contribute to creating plastic waste.” VV

Before tackling the Viera High School project, Travis painted two big murals at Rockledge High School. One depicted a sea battle in which the Raiders’ pirate ship was sinking rival schools’ warships, including a Viera High School vessel. “I felt bad about including Viera in that, so that’s what made me send an email to Viera High about how I should paint here instead,” he said. VHS Principal Sarah Robinson said she’s incredibly proud of Travis’ mural. “When he first reached out to me a couple months ago saying he wanted to paint a mural and that he was a VHS alumni, I was super excited about the idea because I always want to bring school spirit to our campus and try

to make our campus showcase our Hawk pride,” Robinson said. “I think that mural is going to be a centerpiece and focus of our campus and a place where students can take pictures.” Travis’ story also serves as a reminder of the positive effect a teacher can have on a student, Robinson added. “You never know that one conversation you have with a student can go really far,” she said. Can we flush the Indian River Lagoon clean? The short answer is no. Flushing would take huge amounts of seawater, and that could destroy life in the lagoon. It would export lots of pollution to the ocean. It’s not realistic. However, scientists at the Florida Institute of Technology have been working on an idea for injecting limited amounts of ocean water into the lagoon to help clean up the pollution. They just received $920,000 from the Florida Legislature to begin work on a pilot project to test this approach. The plan is based on recent discoveries about the chemistry of the lagoon. The lagoon is polluted by too much total nitrogen (TN) and total potassium (PT) that acts like fertilizer for algae blooms. The lagoon’s water often has very little (or no)

Viera Hospital names Dustin Boring new VP of administration BY WENDY SCHEURING

Every six months for the past decade, Viera Hospital has received an A rating regarding the safety, wellbeing, and quality care of patients. As the new vice president of administration, Dustin Boring is determined to make Viera Hospital even better than it already is. He vows to be a proactive leader, providing the best care for the community, in addition to maintaining a positive culture for healthcare workers, which also benefits quality patient care. Boring resides in Viera with his wife, Danielle, and daughters, Ariana, 16, and Lilly, 3. “The Viera area is beautifully designed and offers a lot,” Boring said. “It is a community that I’m proud to be a part of and that reflects what we do at

the hospital. I plan to stay in Viera for a long time.” Originally from western Pennsylvania, he began his career working as a radiation therapist in oncology. “I was so blessed that was the direction my education took me,” he said. From there, he segued into hospital leadership to learn more about the healthcare system. In 2018, Boring began working for Health First in growth and development, providing him with the opportunity to see the inner workings of the entire health care system as well as to understand the total patient care experience. Then and now, his primary goal is “to meet with the changing health care climate as well as to offer the best services in technology and physician coverage.” Health First comprises Viera Hospital, Holmes

Construction also is continuing on The Luna, a $100 million, six-story apartment and office complex on Rodina Drive that will become Viera’s tallest building. In addition, work is expected to start next year on a lakefront park area west of The Luna that will feature an amphitheater across from Urban Prime, an open lawn with shade area, a covered refreshment area and space for food trucks. A planned extension of Town Center

Ekinci said Urban Prime will be lushly landscaped and its location will provide great photo opportunities. “It will be beautiful there with the amphitheater and beautiful sunsets every night,” he said. Melbourne-based MH Williams Construction Group is in charge of the construction. Groundbreaking was scheduled for Aug. 1. Urban Prime will have around 125 full-time and parttime employees, Ekinci said. “We are very happy to provide more than 100 jobs coming to Viera,” he said. “That’s great for the economy.” Tentative operating hours for the market will be 9 a.m. to 7 p.m. Monday through Saturday and 11 a.m. to 5 p.m. Sunday, Ekinci said. Restaurant hours likely will be 11 a.m to 9 p.m. Monday through Thursday, 11 a.m. to 11 p.m. Friday and Saturday and 11 a.m to 9 p.m. Sunday. Todd Pokrywa likes going back to visit his hometown of Toronto, especially during the summer. The president of the Viera Company, a wholly-owned subsidiary of A. Duda & Sons, Inc., was the top individual fundraiser for the 25th Hockey Helps the Homeless Bay Street Tournament in Toronto. Pokrywa raised $8,235 for Eva’s Initiatives, a local homeless agency in Toronto. Approximately $240,000 was raised in total. “I leveraged my personal and professional networks here in Florida as well as in and around my hometown of Toronto, Canada,” Pokrywa said. “I am very grateful for the tremendous support for a cause that is important to my family and me. It was a magical place,” Daniels said. Her daughter Parker, 12 and son Corbin, 10, were raised there.

Jacqueline’s Bakery and Café’s first location, which opened in 2016, is in Downtown Melbourne at 906 East New Haven Ave. The business was opened by Jacqueline Dittmore and her husband Christophe. “When we decided to open a second store, we took a look at the location in Suntree,” Jacqueline Dittmore said. “It was the perfect place to have our second bakery.” Originally from Ohio, Dittmore spent more than 20 years in France where she learned her extensive culinary

training and received the Grand Diploma (cuisine and pastry) from the prestigious Le Cordon Bleu in Paris in 2014, and a state certification in artisan bread baking at the renowned culinary school, Ferrandi in 2015. The couple’s dream of opening a French bakery in the United States was just a few steps away. “We are Brevard County’s original French bakery,” she said. “We serve a variety of breakfast and lunch options, as well as delicious and traditional French pastries, baked goods and ice cream. Everything is made from scratch. You can’t find anything

like this around here.” Dittmore said living in France made her appreciate food and the way its cooked and prepared. “It’s a whole different dimension,” she explained. “We use the highest quality ingredients — European-style butter, artisan flour (nonGMO), real vanilla beans and French chocolates. Everything is baked from scratch.” The company has about 20 employees at both sites and all foods are baked daily. The Suntree store hours are 7:30 a.m. to 8:30 p.m. seven days a week. East Coast Christian Center expects to open soon SPECIAL TO VIERA VOICE The permanent home of East Coast Christian Center Viera is in the final phase of construction and is expected to open soon. It has been 15 months since the groundbreaking for the new building that sits at 3475 Viera Blvd, across from Manatee Elementary School. After first launching in 2012 at the Rave movie theater and currently meeting at Viera High School, East Coast Christian Center Viera will be in its new building soon. A specific moving date has not been announced.

East Coast Christian Center is a non-denominational Christian church that includes a diverse and multigenerational congregation. The church is led by pastors Matt and Jessica Stallbaum. To East Coast Christian Center, the building project is not just about another building in the ever-

growing Viera community. The church is focused on building a life-giving church that lasts. “To us, this means that we’re not just building a building, we’re investing in people and relationships because that’s what God values most. When you invest in people, the impact echoes for generations to

come,” Matt Stallbaum said. The Viera campus has a 22,000 square-foot church with seating for about 600. There will be dedicated spaces for children and teens, a coffee bar, gatherings, events and more. The church plans to eventually add a pre-school to the new site. “We’ll have

free grand opening events when the Viera campus is officially open, and everyone is invited to come join us as we further our roots in Viera through this new building,” said Christian Hurston, the associate pastor and

The infallible French fry — loved by all According to statistics from the U.S. Department of Agriculture, Americans consume about 115 pounds of potatoes a year, mostly fried. They rank at the bottom of the veggie pile because they lack the nutrients and compounds of leafy greens and when fried they easily turn to a weapon of dietary destruction. Fries give off that appealing mouth feel of crispy-fried and salty-food taste that everyone craves. So, living fry-less is almost like saying stop eating chocolate. There’s an unknown global misnomer revolving around this crispy, golden wonder. An age-old conflict between the Belgians and French, as they both want accreditation in the fry department. Belgium maintains they gave birth to this fried spud in the 1600’s, when lower classes survived on fried potatoes during the winter. Arguably, pommes frites were sold along the Pont Neuf bridge in Paris, since the 1780s. The French claim the title, since the appellation French Fried Potatoes is in the annals of history and is not changing anytime soon. However, the Belgians are not throwing in the towel as they’re the first to have a French Fry Museum. Here we owe credit to Thomas Jefferson, who inaugurated fries making them the institution they

are today, with National French Fry Day being July 13. Jefferson, a true foodie, became captivated with French cuisine as American Minister in Paris from 1784 to 1789. He amassed more than 150 recipes and out of that repertoire we got vanilla ice cream and macaroni and cheese. Even so, fries didn’t become in-vogue here until the 1900s. There are many cultural variances around the globe concerning this fried spud. The Queen venerates her British fish and chips; in France a juicy steak cannot leave the kitchen without them; in Belgium they accompany the everpresent Mussels (Moules frites) and indubitably the Canucks have made quick work of their Poutine, as it’s Canada’s National dish: fries mounded with cheese curds and smothered in brown gravy! Germany and Belgium dunk theirs in mayo, the French use mustard, and the Brits douse them in malt vinegar. Where would they be in America without ketchup? You don’t have to give up fries altogether because they’re not that healthy. Exercise portion control, become aware of the dipping sauces and lastly be conscious of how they’re prepared. They can be made in the oven or in an air fryer, so they don’t have to be fried to become the crispy wonders everyone adores. V V

Decadent non-fried fries with rosemary and parmesan We don’t need another reason to cringe about the Freedom from Frying Era. Everything from a food standpoint is being redefined, renamed and re-created. Even old formats are reappearing everywhere because just like with everything else, retro is cool and old is nouveaux. For this simple recipe of non-fried fries, the key to crisp is to heat up a cookie sheet in a 400-degree oven for 5 minutes prior to baking. If you own an air fryer the result will be equally as notable. PREHEAT OVEN TO 400 DEGREES ½ pound of potatoes — peeled and cut into half-inch match sticks and dried very well Kosher salt and fresh cracked pepper 4 TBSP extra virgin olive oil 1 TSP fresh rosemary — chopped ½ TSP Spanish sweet paprika — not smoked Freshly grated parmesan Toss the potatoes with oil, salt/pepper and paprika (excluding the rosemary as it

burns easily in the oven) making sure they are generously coated with the seasonings. Heat up a cookie sheet lined with foil and sprayed with olive oil to prevent sticking at 400 degrees for about 7 minutes, until very hot. Lower the temperature to about 375 degrees. Spread the potatoes in a single layer on top of the hot cookie sheet (they will sizzle when you add them) and bake them for 12 minutes. Sprinkle the rosemary on top, tossing again and bake for an additional 10 to 12 minutes until golden brown and crispy. Place them in a bowl and toss generously with freshly grated parmesan.

Political thriller by local author is a timely summer read BY BETTY PORTER

Suntree resident and author Ernie Dorling’s newest book: ‘‘The Truth is Always Negotiable,’’ is a suspense-filled, pageturning, political thriller timely in today’s political climate. This, his first fictional work, is being touted as a great summer read in what many are calling 2022 — the summer of political discontent. In the story, first woman and first independent candidate is elected president of the United States. Its the result of the American people having become fed up with the political infighting between politicians on both sides of the aisle. Intrigue builds as the newly elected president and former governor of Connecticut tries to implement term limits and proposes ending the use of dark money in elections. This is met with great resistance from leaders of both parties, who plot to stop her. However, a deep secret that she has been harboring and which is discovered by members of the Russian underworld just weeks before her inauguration threatens the safety of her

lover and her presidency before it ever gets started. The entire plot takes place in the time period between the election and the inauguration. Dorling relies on his years in federal law enforcement and teaching to guide the reader through investigative techniques the public rarely experiences. He builds suspense throughout the book and delivers the most exciting and most anticipated part near the end, making it hard, if not impossible, to put down. The 354-page book is currently available in paperback on Amazon, at Barnes & Noble and on Kindle. Dorling is a retired federal agent and police officer with 27 years in law enforcement. He served as a special agent with the Bureau of Alcohol, Tobacco and Firearms as well as with the Defense Criminal Investigative Service. During his tenure as a treasury agent, Dorling was assigned to the security details of Presidents Jimmy Carter and Ronald Reagan, and presidential candidates John Glenn and Jessie Jackson. As a federal agent, he had assignments in Washington, D.C. and in Germany, where he earned

a master’s degree in public administration. After retiring in 2001, he taught criminal justice for 16 years at the University of New Haven in Connecticut. He wrote a widely used criminal investigation college textbook, and authored two true crime novels prior to this fictional political thriller. His true crime novels are “With Consciousness of Guilt: The Serial Predators Among Us,” and “Murder: A Family Affair.” The latter was featured on two shows on Investigation Discovery TV. “I started writing an academic piece that broke down the many social and economic issues that divided this country,” Dorling said. “As the writing took shape, I realized that the work was simply a dry approach to the many topics that divide us, when in fact, I believe we’re more in sync than many people care to admit. “I’m confident that there is a tremendous amount of middle ground that we can all get behind, if we would listen more to each other. But getting that message out in an academic book didn’t seem to be working. That’s when I came up with the idea of creating a fictional story that involves the country electing an independent candidate

who realizes that the majority of voters can think for themselves and don’t need to be swayed by the major news networks. So I built this political/murder thriller using a number of these same political topics as the backdrop for the story. I feel that “The Truth is Always Negotiable,” is my best work. “It is very current. The characters are strong enough that they can be further developed so as to have the story

adapted into a mini-series, that’s what I am hoping. However, getting the story in front of someone in the entertainment industry without the help of a producer, is extremely challenging. The reviews on Amazon have been great, so I’m happy that the people reading the book so far have found it both interesting and exciting even though I do attack the ideologues of both national parties with equal enthusiasm.” VV

Show brings classic cars and memories to residents BY MIKE GAFFEY A classic car show at Chateau Madeleine in Suntree took residents of the senior living facility on a drive down Memory Lane. Dozens of vehicles from the 1930s to today filled the parking lot outside the assisted living and memory care community at 205 Hardoon Lane on July 1 during the Red, White and Blue Classic Car Show. The pre-Independence Day event gave residents a chance to celebrate America’s 246th birthday and view, touch and even sit and ride in gleaming automobiles from their past. Helen Hutten, who will turn 100 in August, and a friend were drawn to a yellow 1931 Auburn with a rumble seat, an upholstered exterior seat that folds into a vehicle’s rear. Owned by Nick Bauer, the Auburn once belonged to actress and sex symbol Mae West.

“We sat in it and pretended we were going to get a malted milk,” said the Cincinnati native, a Chateau Madeleine resident for the past 15 months. “It was fun. I remember riding in a rumble seat when I was 14 years old. We would drive to visit a family member. My cousin was the same age I was and we would go and in the wintertime. We had to wear blankets because it was so cold. But we went all the time.”

Organized by Bill Antonetz of Indialantic, the show was open to the public and attracted about

250 car aficionados before a thunderstorm ended the festivities an hour early. “I feel honored,” said Antonetz, who hosts a beachside car show each month. “I’m glad to see these residents with smiles on their faces. It’s rewarding to bring a car show to people who can’t come to a car show.” Some residents enjoyed a short spin in front of the facility in a 1966 Cadillac Coupe de Ville convertible owned by Christy Murphy of Melbourne. “We wanted a show in which our residents not only got to see the cars but actually got to go for a ride,” said Eric Hardoon, Chateau Madeleine’s executive director. “These people who came here and volunteered their time enjoyed seeing these seniors really glow after seeing these cars and riding in them.” Hardoon hopes to have a

Fictional Klaatu's words from movie still resonate true today “The Day the Earth Stood Still,” a classic science fiction film from 1951, recognized as “one of the great science fiction films” ever produced, tells the story of alien Klaatu who descends with his spaceship in Washington, D.C. He represents all the planets in the universe and is here to save the Earth. “Save the Earth from what?” you may ask. Well, saving the planet from humans — yes, from us. The film, despite the age, includes timeless warnings about violence, war, pollution, our disregard for other species, the destruction of nature in name of pure profit and greed. Betting on behavior change, Ecochallenge.org was founded with the mission of “inspiring people to take responsibility for earth.” The site hosts personal challenges and offers discussion courses to make individual actions count and the flow of ideas organized. Anyone can participate in challenges and work on adopting positive behaviors to help the planet. There is one challenge going on right now: the Plastic Free July challenge. Recycle Brevard and the Natural Resources committee of the League of Women Voters of the Space Coast set up a team for the July challenge. The team, named Space Coast for the Environment (http://bit. ly/PlasticFreeSpaceCoast), currently has nine members and placed eighth in Florida and 133rd overall out of 299 teams. By the end of the challenge, we will find out how much impact we were able to make this month alone and hopefully be willing to carry on practicing the good habits acquired during the challenge. The group provides refurbished computers for low-income students of any grade or age, making a significant impact in Brevard County. Since 2005, CAEI, a nonprofit, has been making milestones, donating refurbished computer systems for schools and students across the region. Freemont Bassett — everyone calls him Freebie — said that 32% of students from underprivileged families don’t have the proper tools for success. “We give new life to old computers and we’re only able to succeed with donations. We’re thrilled to be able to change the lives of students in need and hopefully we are making an educational difference,” Bassett said. “Young or old, if you’re a

We don’t just provide equipment, but also offer classes for students and also have a wonderful computer program for seniors.” There’s always an exciting story behind each endeavor and, in 1997, Bassett was a project engineer at Kennedy Space Center. After recovering from a heart attack, he could no longer work and, at the insistence of his oldest son, they put the wheels in motion and started looking at computers. Bassett realized that being tech savvy makes you more marketable and builds self-esteem. And knowledge is power. The first computer they built was given away to a local

high school student whose father was working in Cairo, Egypt for a U.S. contractor. Before they knew it, their nonprofit was founded. They began working closely with the Brevard County School Board and got their first lab facility in Whispering Hills in Titusville. “Everyone that works on this 35-veteran operated program is a volunteer and we work only on Tuesdays from 9 a.m. to 5 p.m. Our motto is “supplying the tools for success,” Bassett said. “The journey has been long and extremely gratifying. We are blessed to have 35 amazing volunteers that devote their time to this endeavor. There’s no way we could do this without them.” Bassett said that if a

computer is not working right the group will repair it or provide another. “We have a 60-day warranty and, if anything goes wrong, we fix it or replace it. Additionally, every hard drive donated is wiped clean to preserve everyone’s privacy. If it can’t be scrubbed, it’s destroyed and recycled for parts.” Since the program started, the group has donated 11,000 computer systems. Its lab is now located at Riverview Elementary School in Titusville. Computers Advancing Education accepts donations from organizations and private individuals. Did you know? There's a little Scottish festivity alive in Viera. It's not the Highlands, but from 6:30 to 9:30 p.m. Monday night at the Springs of Suntree clubhouse at 8300 Holiday Springs Road feet are skipping to the beat of lively Scottish tunes. Scottish country dance is a social dance that is distinctively Scottish in form, with two or more groups of couples tracing through a pattern of dance steps. With a first visit to the Scottish Country Dancing gathering, a friendly, welcoming group of people invite you in to join the love of Scottish dance. Some have Scottish descent, some

just love to dance. Perfection is not required. After leading the dancers through gentle muscle-stretching exercises, James Kutzner teaches each dance, walking through every step before putting it to the music. Learning the names of the different steps is a learning process, but everyone smiles as they gently encourage the proper moves and direction up or down the dance floor So get up off the couch on Monday evenings and try something new.
