Viera couple made long-distance relationship work BY WENDY SCHEURING

and we were in love,” Edgar Cobos said. “I don’t think we knew what we were doing at first. At that age, you might date and it might last six months. After a year, things started to materialize.” Four years later, in 2011, Gloribel and her family closed the business in Tampa and moved to Viera to start another business, Thrifty Specialty Produce and Meats in Palm Bay. After five years of living apart, Edgar Cobos realized it was time to move to Viera. He started working for Viera Builders as a sales manager. Four years later, the couple got married on May 6, 2016, which also was the ninth anniversary of their first date. Gloribel Cobos said that she and Edgar both have large families so they decided to have a destination wedding at a Caribbean resort where they could relax and celebrate with the closest of family and friends. The couple now have two boys: Lorenzo, 5, and Landon, 3. Gloribel currently works for the family business as an accountant and in human resources. She describes herself and Edgar as being very family oriented. On Sundays, they often get together with her parents, sister, brother and their families, all who live in Viera. They also make time to have

Long-distance relationships can be difficult to maintain. The periods of time for visits are too short. Living apart is too long. And the periods of yearning for the other person can be too painful. It all worked out for the Cobos. Edgar and Gloribel Cobos met in high school in New Jersey and were good friends. After they graduated in 2005, Gloribel moved to Florida with her family. Her family had started a grocery business in Tampa, where she attended the University of Tampa. Back in New Jersey, Edgar went to community college and worked as a realtor. He came to Florida on a business trip a year later, and the two were reunited. They fell in love and officially became a couple. At the time, they were young, only 20 years old. Yet, they found themselves committed to a long-distance relationship, which involved monthly visits, late night chats on the phone, texting and video chats. Each time they visited, they flipped a coin. The loser would be the one to visit the other in a month or two. Both acknowledge that living apart was hard. It required “lots of communication,” Gloribel Cobos said. FAMILY “We were 20 years old continued to page 5

after a short stint with the Seminole County Sheriff’s Department. Inspired by her own relationship, one that led to her marriage nearly six years ago to Wayne Cobb, Cobb acknowledged that his encouragement and support to become a published author has been the catalyst to her success. The trilogy takes place in the present, with reference to many of her own adventures on both the Space Coast and Treasure Coast. A native of Massachusetts, she is the mother of four adult children. Cobb enjoys painting, sewing, re-upholstering antique furnishings and interior design. Within the first two months, two local book clubs approached her for readings. “When I was getting close to the end of book one, I quickly realized there was so much more I needed to tell,” she said. “Cassie’s Delicious Stranger” has been met with great enthusiasm. So much so, that I’m selling out of my second run.” This is a welcome dilemma as her readers

Passion and adversity often are themes in books written by Viera resident and author April Cobb. “When it comes to romance … there is something special about the natural sensual attraction that a man and a woman can have for one another,” Cobb said. In her first book, a trilogy entitled, “Cassie’s Delicious Stranger,” her characters (Cassandra and Neil) endure a journey together that revolves around passion and adversity. “My goal for the storyline was to engage readers to keep turning the pages quickly, and I am told it meets these requirements,” said Cobb, who added that she is touched by positive

Hawks have worked hard to prepare for another run at state title BY CARL KOTALA

this month, was a popular choice among Viera players after Coach Derek Smith took a job at McIntosh High School in Georgia. The school initially hired Chad Raymond to take over the program on Jan. 20, but Raymond resigned citing family health concerns on March 9. Two days later, Staples went from interim coach to the Hawks’ full-time head coach. In addition to Staples, the Hawks also will be bringing back DeMarkulus Menyfield to work with the team’s defensive backs and serve as defensive coordinator. Also returning are assistant coaches Chris Murphy (offensive line); Richard Zacke (running backs); Ryan Allen (defensive line) and Christian Fuller (linebackers). Staples said he would like to bring on one or two more assistants, but wants to make sure he finds the right fit. “Right now, I’m familiar with all of these guys,” Staples said. “We get along. The key is having fun. If we’re not having fun, then it’s going to be miserable for everybody. We’ve got a good group

If there’s one thing Shane Staples was good at in his five years as an assistant football coach at Viera High School, it was building relationships with players. Now that he’s the head coach, well, he really doesn’t see that changing too much. “There’s no doubt I’m a players' coach,” said Staples, who took over the program on March 11. “I get along with them. I can joke with them. But I think that really boils down to the relationship (I have) with them. I have a good relationship with the kids. We can talk about anything. But at the same time, if I tell them, ‘Hey, it’s go time,’ they respect me. “… The transition, as far as all that goes, has been pretty easy. I’ve always had a good connection with them. I think it’s trust. They trust that I’m going to do right by them. I trust that they’re going to listen and do right by me. As far as that goes, it’s been pretty good.” Staples, who will turn 40

VIERA VOICE Carl Kotala

Shane Staples grew up on Merritt Island, moved to Virginia when he was 13 and ended up playing basketball as a walk-on at George Mason before coming to Viera in 2004. Since then, he's coached youth football, baseball and basketball and was an assistant at Viera for five years before being named the new head coach of the Hawks.

coming back. The kids are familiar with them. They know what to expect.” One thing the players and Viera fans can expect to see is an offense much like the one run by former offensive coordinator Mike Degory. Staples, Viera’s wide receivers coach last season, said he learned a lot from working with Degory. “I return a lot of guys on

offense, so for me to scrap the offense and start something new wouldn’t be very smart,” said Staples, who will call the plays for Viera next season. “It’s worked. I think, if you look, we’re probably the top one or two in yards per game for the county. “I think a lot of it was we shot ourselves in the foot last year with turnovers or penalties.”

No game typified that more than a regular-season loss to eventual state runnerup Merritt Island, where the Hawks had bad snaps on two PAT attempts, missed another one and had another snap go through the back of the end zone for a safety in what turned out to be a one-point loss. Reducing those mistakes, along with personal fouls that hurt Viera at times last season, will be a point of emphasis. “I just want to do right by the kids,” Staples said. “I know that sounds kind of cliché. I think the one thing I’ve learned following Coach (Kevin) Mays and Coach Smith is that you can’t coach every group the same. They each take on their own identity and it’s kind of like, how do you get the best out of them and what does it take? “I think this group is going to be exciting this year. I think, and I hope, that we surprise a bunch of people. You can kind of tell there’s a new buzz with them, a new excitement. You can tell in how hard they work.” V V

Viera track teams on pace to send multiple athletes to state meet BY CARL KOTALA

They’ve been putting in hard work on the track all season long. Now, it’s time for it to pay off. “The goal is every week to get better and better and continue to make sure we’re setting these guys up for success,” Viera High School boys track and field coach Kerron Greaves said. “All that (means) is just putting in the work every week. We know this is a tough sport. It’s really hard. It’s hard on the body. “So far, we’ve competed. We’ve done well at some of these invitationals. Now, as

we’re heading into conference and districts, we’re going to see people start to get their personal bests. When the team scores come out, whether we’re 1, 2 or 3, as long as our guys try and do their best, that’s all I ask.” Viera took part in the Class 4A, District 10 meet last month with the Region 3 meet set for May 7 and the state meet on May 14 at the University of Florida’s Percy Beard Track. Among the boys in contention to qualify for Gainesville are senior distance runner Michael Toppi, who recently won the Cape Coast Conference 1,600-

Though he will be competing in four events at the district meet, Gentile’s best bet is in the javelin where his throw of 49.99 meters ranks first in the district and region. Gentile, who has experience playing quarterback in football, said that has helped him become a better javelin thrower through the past two years. “It’s basically the same fundamentals and technique,” he said. “It helps a lot.” Other top athletes on the boys team include junior Cameron Mills in the high

Holy Trinity track teams on pace to do well at state meet BY CARL KOTALA With all of the big meets coming up, things are lining up pretty well for the Holy Trinity boys and girls track teams. “We have some really high performers, some great athletes and some hard workers,” Tigers coach Marcus Bailey said. “And we have a young team. We have a very strong component, but then we have a young component that’s learning our traditions, our ways. “It’s kind of how we’ve built a lot of success here in track and field.” Senior Jonathan Bailey has set personal bests in three events this season, running a school record 10.65 in the 100 meters, a school-record 21.90 in the 200 and a long jump of 6.57 meters. All three marks are among the tops in the state in Class 1A. Sophomore Alinah Sarratt, who finished eighth in the state in the 400 last year, has switched to the 100 and 300 hurdles and her times (15.64 and 49.42) are also among the state’s best. Junior Evelyn VanZwieten was ranked No. 1 in the state in the javelin (39.64) with teammates Mable Mutumwa

events, but to also better his times and his distance. “It’s keeping me more mentally conscious to make sure I’m doing everything in my power with hydration, taking in electrolytes, making sure my nutrition is good and making sure I properly stretch myself,” Bailey said. “I’m just more mentally aware because, obviously, I want to do better.”

and Lilly McCarthy not far behind. Other top contenders for postseason success include Augustine Stehley in the boys 800; Skyler Jensen in the boys 1,600; Maya Collins in girls 100 and 200 and Dylan Collins in the 100 and 200. While all of those athletes are on a mission to get to the Class 1A state meet

and perform well, that’s especially true of Jonathan Bailey. Though he finished sixth in the state in the long jump last year, he failed to get out of the district meet in the sprints because he cramped up in the 100 and couldn’t finish the race. A Type 1 diabetic, Bailey is determined to not only get to the state meet in all three

“We have some really high performers, some great athletes and some hard workers.” —Marcus Bailey

A good showing at the state meet could land Bailey the Division I scholarship he’s been seeking. His father couldn’t be prouder. “His work ethic and his performances are a big inspiration for this team,” Marcus Bailey said. “But he’s earned it. It wasn’t given to him. He’s had to deal with more adversity than any athlete I’ve ever coached. And (I’m not saying that) just

because he’s my son. That’s just a fact. “He has to deal with more. He has to consider more things. And he never complained. He never whined. … He took his natural given talent and put it to work.” Sarratt, meanwhile, has adjusted to her new events quite well. “At first, I was a little nervous because, of course, there’s something in front of you when you’re running,” she said. “But I was also excited because (during) some of the weekend practices last year, I started hurdle training. So, I already had a base knowledge to it, so I was excited to compete this year. “I actually have been ranked higher in the hurdles this year than I was in the 400 last year coming into state. It’s really exciting.” The district meet was scheduled for April 21, while the regional and state meets take place this month. “We’ve got a strong, hard-working group here,” Marc Bailey said. “It will be exciting to see how our kids actually perform when it matters the most.” V V

Faculty Softball Challenge coming back for 16th year BY CARL KOTALA It’s been a family-friendly community tradition among local elementary schools for well over a decade and, after a two-year hiatus, it’s back. The 16th version of the Faculty Softball Challenge is scheduled for May 25 at the USSSA Space Coast Complex. This year’s doubleheader will mark the debut of a new team Viera Elementary — and the return of Suntree Elementary, which took part in the first eight years of the event, but has not played since 2011. The first game of the challenge, which matches faculty, administrators and custodial staff from each school, is set for 6 p.m. with Suntree taking on Quest. Viera Elementary will then take on Manatee at 7:15 p.m. In the event of a rainout, the games will be rescheduled for May 26. “People are looking for something to get back to

normal and this game, for us, is that get-back-to-normal game,” said Todd Zgonc, a Manatee teacher and the game’s organizer. “This has always been that thing that people have started their summers with. The neighborhoods come together and do their thing. I think all the players are looking forward to it.” Tickets for the event are $3 at the school and $5 for walkup sales. Proceeds from the games will go to cover costs with any extra money going into a discretionary fund for the school principals. In preparation for the game, some teams are making T-shirts, others are doing their traditional baseball cards and then there is Manatee, which is all but guaranteeing it will be a loud night at the park by giving out 800 kazoos. “We’re stepping it up on the noise thing,” Zgonc said. “We’re going to go with kazoos this year. It’s going to be obnoxiously loud, but you’ve

got to step your game up.” Zgonc estimates more than 3,000 people will show up for the two games, which will have concession stands. And because the games are scheduled to be played on the second-to-last day of the school year, there will be plenty of time to talk about what takes place on the field before school lets out for the summer. “Everyone’s antsy, chomping at the bit to get back into softball mode,” Zgonc said. “A lot of teachers have played in this game for many years. They just want to get back to that. I’m excited for all of them. “I know we’re facing a new competitor, but win or lose, it’s a success based on whether the community had a good time, came out in numbers and said, ‘Man, that was a fun event.’” V V

The 16th Faculty Softball Challenge is set for May 25 at the USSSA Space Coast Complex. Todd Zgonc, left, a fifth-grade teacher at Manatee; Jenn McMahan, a kindergarten teacher at Viera Elementary; Ashley Mathis, a second-grade teacher at Quest and Amy Cameron, a physical education teacher at Suntree Elementary will play for their schools.

Two freshmen to keep an eye on are Tyler Armstrong in the high jump and Jack Girard in the long distances. It’s already been a recordbreaking year for the Viera girls with junior Deznee Joseph setting a new school mark in the javelin with a throw of 29.94 meters. of Viera’s top newcomers. Another junior, Paris Jernigan, has been having a solid year in the hurdles. Junior Isabella Narvaez has been the team’s top runner in the 800 and 1,600 meters and is looking to break the school record in the latter event. Junior Brooke Gerritts is looking to get under 11 minutes in the 3,200 by the regional meet. Then there is junior Ciara Thomas, who wants to be a heptathlete in college. She has run the sprints, recently picked up the hurdles and has thrown the javelin and the shot put. She has also set a personal record in the long jump at 5.39 meters. “I’m stronger in the long jump and I’m getting stronger in the hurdles,” Thomas said. “I tried them for the first time three weeks ago and I ran it for the second time this week. I really fell in love with the hurdles recently, but the long jump, that’s what I really love and I’m excelling at it.” Viera girls coach Odeika Giscombe said she’s proud of Thomas for her leadership and hard work and said the Hawks have a chance to send several athletes to states. “It’s going to be very competitive, but we definitely have girls with the potential to get there,” Giscombe said. “It’s just a matter of executing on the day of the race.” V V

SCHOOL

Viera robotics team excels in regional competition BY CARL KOTALA There is something good brewing with the Hawk Robotics program. The team, known as Wingspan, had its most successful season in the four years since it was formed as an after-school program at Viera High despite having a largely new roster of students interested in robotics. “It was really a group of new people,” Viera freshman Jansen Joss said. “It was almost like starting over again. We had a few seniors who knew a lot and then it was a bunch of new people.” After not being able to compete in 2020 because of COVID, then having only a virtual event in 2021, the program had dwindled to six members. But as in-person competition returned this year, so did the students as this year’s team had a roster of 57, including three from West Shore. “We have our seasoned veterans. Most of them are graduating this year,” said Viera teacher Dave Formanek, who is a faculty co-sponsor along with Samantha Latta. “But it was very much a repeat of our rookie year. As always, they exceeded my expectations. I’m so proud of them.” Wingspan is affiliated with FIRST (For Inspiration and Recognition of Science and Technology), a youth robotics foundation aligned and dedicated to providing advanced STEM/STEAM core competency and career-

ready job skills. The team spent 855 combined hours working on operations, finance and manufacturing principles in preparation for two FRC (First Robotics Competition) regional competitions in Orlando and Tallahassee. At the Tallahassee event, Wingspan was the first pick of a captain’s alliance and reached the quarterfinals. Additionally, Wingspan was awarded the Safety All-Star Award in Orlando in recognition of how the team kept safety in mind during the competition. The team also received the Entrepreneurship Award at both regional events, which recognizes a team that has developed a comprehensive business plan to define, manage and achieve its ongoing objectives. This year’s game teams had to prepare for what was called Rapid React. “Basically, there’s a 9-foot

hub in the center and there’s 20 balls — 10 red balls and 10 blue balls — scattered around the field. Your robot has to go around the field and pick up the colored balls that it's assigned,” said Ritvik Varada, a junior at West Shore and the team’s software designer. “There are two hubs, a lower hub and an upper hub. If you shoot a ball into the upper hub, which is 9 feet high, you get two points. If you shoot one into the lower hub, which is 3 or 4-feet high, you score one point. For the first 15 seconds of the game, it’s called autonomous period so there’s no driver that’s controlling the robot. Your

robot has to pick up and score on its own.” Drivers take over for the next two minutes and in the final 30 seconds, the robot is given the option to climb any one of four rungs ranging in height. That’s quite a challenge, particularly for an inexperienced group. “This year, our biggest challenge was probably not knowing enough,” Varada said. “At the beginning of the year, we were a completely new team and many of us, we didn’t know too much about robotics. So, I would say our biggest problem was learning how to do more advanced software. We only started doing this near the last three

TIPS from the TOP

Space Coast leaders offer advice to graduating seniors BY ERNEST ARICO Now that the COVID-19 pandemic has eased up and graduation ceremonies, Grad Bash and other events have been scheduled, thousands of high school seniors across Brevard County will graduate

and receive their high school diplomas this month. If your son or daughter is graduating from high school this school year, you’ll know how bittersweet this milestone is. All the sacrifices you made through the years — driving your kids back

Eva Rey Eva M. Rey, vice president of Community Management and Communications, The Viera Company: “The further I get from my own high school graduation, the more I wish that I had sought out and listened to advice from those who had gone through it and come out on the other side a success. My professional success has been hard fought with a lot of missteps along the way. I thought I knew everything and I was convinced that the journey would be rosy and bright. So, my advice, first and foremost, would be — listen to those who have gone before you. Their experiences and insights are invaluable, even if you may not see that now. “My second piece of advice is to embrace authenticity. Be who you really are with no apologies. Speak and act from your heart, not from a fake or contrived persona that you feel you have to portray to the world. Trust me when I say that you will waste so much precious time trying to fit in or to be someone that you think everyone wants you to be. Just be yourself because that is the person that I want to know and is the person who has the ability to change the world.”

Ann Conroy-Baiter

Ann Conroy-Baiter, president of Junior Achievement of Space Coast: “My advice to seniors is that there is no straight path through life. Young people are under so much pressure to know now who and what they'll be in 10, in 15, in 20 years. But the reality is that people zig and they zag and they hit road bumps and can feel like failures if they don't stay on a perceived straight path. “A healthier way to look at progression is to maintain momentum, to seek education and to collect people. Keep moving, no matter what. Remain curious, and seek education or educate yourself. Collect people along the way and honor those relationships. “Because it's simply impossible to know who you are at 18. And really? The happiest people I know still don't know who they are at 30, 40, 50 and beyond. Satisfied and successful people

and forth to school, athletic practices and games, clubs, band and theater. You name it. You did it all. But what about advice for your children going to college? How about the military? What if he or she decides to join the workforce?

What words of wisdom do our graduates need to hear that will influence and encourage them to make the most out of the next phase of their lives? There are many words of wisdom that are available for parents to give to their

continually seek out transformation and are open to new directions. I'm not saying to be directionless — have goals, keep your eyes on the prize, make smart financial decisions and aim for success. But recognize that if you are turned sideways along the way, it very might be the most interesting and satisfying turn of your life.”

Jarin Eisenberg

Jarin Eisenberg, chief operating officer of Groundswell Startups: “Congratulations to the class of the 2022! There is so much opportunity ahead for you, take advantage of all of it. Wherever you are headed next, to college, a position in the trades, to your first job, look for ways you can jump on projects, show your range of skills. Start building your network — volunteer for organizations you care about, ask your professors or managers for projects you can help with. Invest time in being active on LinkedIn, look for ways to lend your voice and your expertise to whatever field you are most interested in — keep an open mind. “Be nice to everyone — remember to send thank you notes. Building relationships with your peers, professors and leaders around you is so important. Be good stewards of your community — take an active role in shaping the world around you. Most of all, be hungry for opportunity, be open to change and give yourself grace when things do not go as planned.”

Troy Stanley

Troy Stanley, retired Navy chief petty officer and pastor of First Christian Church of Cocoa Beach: “Congratulations, Class of 2022! You’ve worked hard and achieved a great accomplishment. However, it’s just the beginning. As you enter this next chapter, you'll face new challenges. Jesus told us the greatest commandment is to love God and love others. If you want to be truly successful, strive to live this out. Loving God isn’t

hard because He loves us, but loving others often is. Love them by helping them succeed. This is not what the world tells you, but the truth is this: successful people are surrounded by successful people. That’s a great place to be. God bless you.”

Wayne Justice

Wayne Justice, retired U.S. Coast Guard Rear Admiral and Canaveral Port Authority commissioner: “After 37 years of military service, from Cadet to twostar Admiral, the easy answer is to join the Coast Guard, a small service with a big job! “That said, my tips come from that answer. Being in the service means providing a service to our nation. I was taught the world is bigger than any one person, and working collectively toward a greater good can be immensely satisfying. “Another tip is to work hard at finding a career that you enjoy! I love the water, love boats and ships, and I spent decades in that environment! The hard work and effort that goes into success is much easier if it's fun. “We are blessed to live in a country that has endless opportunities. Take advantage of that by exploring career options!”

Dr. Michael A. Cadore Sr.

Dr. Michael A. Cadore Sr., Rockledge City Councilman and associate dean at Eastern Florida State College: “Congratulations. You have achieved a great milestone. As you celebrate, remember to thank those who've helped you along the way, especially your teachers, parents and close friends. As you move to the next chapter, remember to reach back to help others. If you don’t serve your community now, don't expect your community to serve you later. Lastly, in the book of Proverbs 3:5-6,” Trust in the Lord with all thine heart; and lean not unto thine own understanding. In all thy ways acknowledge him, and he shall direct thy paths! “Continued blessings and success. ”V V

take to give these pervasive round jewels their claim to fame. And the best part — meatballs are white canvasses for limitless potential. They’re a universal treat. In Spain, each province celebrates an Albondiga. Don’t think polpettes in Italy are served over spaghetti, although they’re famous in their Italian Wedding Soup. The French have their delicate Boulletes de viande, worshipped by Julia Child. Chi Zi Tao means Lion’s Head in China. In Turkey, it’s called Koftas. In India, meatballs are almost a daily staple. And let’s not forget the comforting Sopa de Albondigas consumed in every Mexican household. Each cuisine has gallant profiles and meatballs date back to the Romans appearing in a text from Apicius, a Roman gourmand of his times. Balls are almost

unsinkable. However, ensuring they remain juicy and tender is the biggest challenge because a dried meatball is sacrilege.

MEATBALLS 101

Several meats -— A variety of mince provides more flavor. Beef, pork and/ or veal are best. If using chicken, use thighs and grind your own, they will be less watery. Never overmix — Balls will become dense. Remember — juicy and tender. Seasonings — Season aggressively with authority. Flavor is the key. Breadcrumbs? — They will dry the mixture, unless soaked in some milk, wine or water. That’s called a panade and making your own breadcrumbs is always best. (Use older bread). Egg — Besides being a superb binding agent, they create a juicier ball. Beat

eggs well and season before adding to the mixture. Rolling — Wet your hands in some water so they don’t stick to your hands. Let them sit — The flavor is always enhanced if they rest about one to two hours prior to cooking; even better, prepare the mixture a day ahead. Size matters — One inch is ideal; same size to cook uniformly. Rule of thumb: smaller — less cooking; larger — longer. Cooking — Each recipe calls for a different method. Baking in the oven or flash sauteing prior to adding to a sauce provides more flavor and it ensures they won’t disintegrate while braising. Meatballs are a thing of beauty — a hygge in comfort food. Treat them with reverence and not only will they do your bidding but become irresistibly exceptional. V V

NEAPOLITAN MEATBALLS In America, the pairing of spaghetti with the axiomatic meatball is an everpresent classic. However, in Italy finding polpette al sugo over pasta will never be showcased on a menu. This dish kicks some serious culinary keister and here pasta is a frivolity. Add some crusty bread with a robust red and presto! 1 28-ounce can of whole San Marzano tomatoes in their juice 1 whole bunch of fresh basil 4 garlic cloves 2 shallots ½ TSP salt and sugar 1 TSP butter 3 TBSP of olive oil Pinch red pepper flakes

In a bowl, add tomatoes and crush by hand removing their center core, as they don’t cook. Sautee shallots/garlic in olive oil and butter for 5 minutes on low. Add tomatoes, pepper flakes, salt — cook on low for about 40 minutes — stirring often, adding the bunch basil whole halfway. ½ onion, chopped 2 garlic cloves, chopped ½ LB ground pork ½ LB of ground sirloin 2 slices of ground pancetta 2 slices of stale bread — soaked in milk 2 TBSP white wine 1 TSP fresh thyme 1 TSP fresh oregano 1 TBSP fresh parsley Small grating of nutmeg 1 beaten egg ¼ cup of ground fresh Parmesan Salt/pepper

Shutterstock

They’re truly the holy grail in the culinary arena. Who doesn’t love a meatball? They are sexy and wicked good. Every cuisine showcases an individualistic

Shutterstock

The iconoclastic meatball, loved, favored and devoured by everyone. No matter what part of the globe or culture you hail from, chances are that you’ve eaten one.

That's some meatball!

GARNISHES Fresh chopped parsley and basil Chopped pistachios Parmesan or Ricotta Salata Loaf of crusty bread

Sautee onions and garlic with a pinch of salt until translucent. Cool. Add meats to a bowl, vegetable mixture, the soaked bread with milk (having squeezed out some of the liquid), chopped herbs, white wine, Parmesan, salt/pepper. Add beaten egg with salt and nutmeg. Use hands and don’t overmix. Wet your hands and form to the size of golf balls. Place on cookie sheet and bake at 400 degrees for 20 minutes. Add them to sauce and simmer for an additional 10 minutes so they cook through. Add some sauce on the bottom of a bowl, pile a generous portion of meatballs and top with a flourish of garnishes. V V

Local artist’s display at library to highlight endangered species BY BETTY PORTER Rockledge artist Rose Marie Capasso will present her series of paintings of the most endangered species of animals and mammals from 1 to 4 p.m. Friday, May 20 at the Cocoa Public Library at 308 Forrest Ave. The showing is in advance of National Endangered Species Awareness Day, which is May 28. The animals and mammals that Capasso paints are listed as endangered by the World Wildlife Foundation. There are 17 critically endangered animals on the list. She will have at least 13 of them on canvas at the event. Capasso has painted the Red Panda and it will be on display. Native to the Eastern Himalayas and southwestern China, the Red Panda (sometimes referred to as the lesser Panda due to its size) is slightly larger than a house cat but with a big, bushy tail which is about 18 inches long. It uses its ringed tails as wraparound blankets to keep warm in the chilly mountains. It is classified by the WWF as endangered. Also featured will be the Viquita Dolphin, which is a shy member of the porpoise family and the most

endangered of the world’s marine mammals. They are found in the waters between California and Mexico. Less than 20 remain in the wild. Entanglement in illegal gill nets is driving the species toward extinction. She has also painted endangered animals such as the manatee and bottlenose dolphin, which are found in Brevard County waters. The Hawksbill Turtle can be found in the tropical waters of the southeastern United States. It primarily eats jellyfish and has been known to confuse plastic in the water for food, which is one of the reasons its numbers are on the decline to the point of making it critically endangered.

Capasso paints with acrylics as her painting medium and some mixed media. She captures on canvas not only the animal or mammal, but also often includes a depiction of the reason for its endangered status. Capasso has taken some art classes, but is mainly selftaught. “I started seriously painting in 2019 and am now obsessed,” she said. “I paint nearly everyday. During the COVID restrictions, I found it was a great outlet and stress reducer. “Since I love painting and I love animals, I thought people would enjoy seeing these beautiful animals, life size,” she said. Capasso wants to help educate others about conserving the world’s natural resources. “My goal is to create awareness of how we can all help in little ways everyday, with recycling, conserving resources and contacting our government officials asking them to support measures which help our environment,” she said. “Help save the world, help save the animals.” Aside from her paintings of wildlife and nature, she also paints pet portraits,

religious art and mandala art, which is a geometric design or pattern encompassing fine perfectionism. She said the

mandalas she creates are a meditative art form. She can be contacted at rosie. capasso@earthlink.net. V V

MOAACC held its annual luncheon April 10 to honor the cadets from ROTC, JROTC, Sea Cadet Units and Civil Air Patrol Squadron. The cadets were from most of Brevard County's high

schools, including Viera High School and Rockledge High School. Each of the cadets received a MOAA medal, a framed certificate and a $400 award from MOAACC’s JROTC medal grant program. The MOAA Medal was created by the Military Officers Association of America to recognize leadership and the academic achievements of ROTC and JROTC Cadets.

It is presented annually to selected individuals who have good academic standing; are of high moral character; and who have exhibited a high degree of loyalty to their unit, their school and their country. In addition, they have demonstrated exceptional potential for military leadership as a member of the Reserve Officers Training Corp or the Junior Officers Training Corp. VV

Publix Super Market rebuilding Melbourne, Rockledge locations BY MIKE GAFFEY

Shoppers who frequent the Publix Super Market at Wickham and Lake Washington roads in Melbourne will have to shop at another Publix for a while. Publix at Lake Washington Crossing, 3200 Lake Washington Road, closed April 2 so an upgraded store can be built at the site. The Lake Washington Publix is the second in Brevard County to close since October. A Publix at Rockledge Square, at 1880 U.S. 1, also shut its doors for an expected yearlong rebuild. Publix operates 20

locations in the county. “We are always evaluating our stores to provide our customers a pleasurable experience by having a store that meets their shopping needs for today and into the future,” Lindsey Wallace, a Publix media relations manager, stated in an email regarding the closings. The popular supermarket chain is in the midst of a major renovation effort across Florida, with stores being rebuilt in such cities as Royal Palm Beach, Plantation, Coral Springs and Jacksonville. according to the company’s website. With a workforce of 230,000, Publix is the largest employee-owned supermarket chain in the U.S. Sales for the previous fiscal year were $48 billion, a 7 percent increase from $44.9 billion in 2020. Wallace stated that Publix is proud that it has never had to lay off associates due to store remodels or closings. “Associates are relocated to a nearby store,” she noted. Shoppers posting comments on Facebook mostly were looking forward to the new Lake Washington Publix, but some complained about having to travel to other Publix locations during the rebuild. Others yearned for the original supermarket. “I’m gonna miss that old place,” wrote Susan Koenig of Melbourne. “I always loved the mosaic design on the outside wall.” V V

Zoo nearly halfway to $100 million fundraising goal for aquarium BY MIKE GAFFEY Five months after the Brevard Zoo launched an ambitious campaign to raise $100 million to build an aquarium and conservation campus along the Banana River near Port Canaveral, the zoo is nearly halfway to its goal. “We’re really excited because we’re about $45 million in and it’s only been a few months,” Brevard Zoo Executive Director Keith Winsten said April 19 after zoo officials and campaign cabinet members toured the undeveloped 14-acre site. The site is at the western end of George King Boulevard, just west of State Road 528. Fundraising efforts kicked off in early December after the Canaveral Port Authority Board of Commissioners voted unanimously in September to approve a development and lease agreement for the aquarium and campus. Some $34 million had been raised when the campaign began, with $21 million of that from private donations. A county grant provided another $10 million and the state kicked in $500,000 for design work.

VIERA VOICE Mike Gaffey

Brevard Zoo officials and members of the Legacy Cabinet gather April 19 at the site of a proposed aquarium and conservation campus on 14 acres near Port Canaveral. Jack Mollen, left, Michael Cerow, Linda May, Keith Winsten, Ellen Winter, Pat Northy, Stephanie Mosedale, Bill Penney, Beth Gitlin, Vince Lamb, Mia Shea, Brandy Bean, Lauren Brand and Duane De Freese gathered at the site.

With an Indian River Lagoon theme and a focus on ecology, the unique aquarium will provide interactive indoor and outdoor exhibits at pavilions connected by a covered walkway. Zoo officials plan to break ground in 2024 and hope to open the facility by early 2027. Melbourne resident Jack Mollen said he got involved as

a campaign cabinet member after working with the zoo on a successful oyster bed project seven years ago. “The zoo has really been at the forefront of taking people’s ideas and making them a reality, and they’ve done it for seagrass, they’ve done it for oysters and they’re doing it for clams now,” said Mollen, adding

PASQUALE REINO, DO

8045 Spyglass Hill Road, Suite 104 Melbourne, FL 32940

that the aquarium will have rescue and rehabilitation areas for sea turtles and manatees. “Living on the water, this is needed,” Mollen said. “This is the time we have to give back and this is why we’re calling it the Legacy Campaign.” Winsten noted that campaign members have a

few years to reach their lofty goal, but he’s encouraged by the early support. “This is a marathon not a sprint, but the community’s really excited,” he said. “We have hundreds of people involved already and we’re looking forward to bringing this to fruition.” Visit theaquariumproject. org for more information.VV

Business Scoop

Tractor Supply coming to busy intersection in Palm Shores BY MIKE GAFFEY Tractor Supply Co. is opening a fourth Brevard County store at Wickham Road and the Pineda Causeway. Construction is underway at a lot at the northwest corner of the intersection, across from the Wawa convenience store in Palm Shores. Tractor Supply has yet to release details about the new store, but the company’s website says a typical Tractor Supply store is about 15,500 square feet. According to Constructionjournal.com, the project calls for 45,000 to 50,000 square feet of new construction. With more than 2,000 stores, 46,000 employees in 49 states and $12.7 billion in revenue in 2021, the Brentwood, Tennessee-

based Tractor Supply Co. is the largest rural lifestyle retailer in the U.S. The chain carries a wide variety of agricultural and livestock supplies, including clothing, animal feed, pet food, tractor and trailer parts and accessories, sprinkler and irrigation parts, power tools, fencing, welding and pump supplies, propane and riding mowers. Launched in 1938 at its original location in Minot, North Dakota, Tractor Supply plans to open 75 to 80 new stores this year, according to a company news release. “While we are proud of our history and all that we have accomplished, we are even more excited about the future and the many ways we can continue to support our neighbors who share our passion for Life VIERA VOICE Steve Hollinger

Work is continuing on a Tractor Supply Co. store at the northwest corner of Wickham Road and the Pineda Causeway. Tractor Supply is a chain of stores that specializes in agricultural products, bird seed, dog food, irrigation parts, power tools, pump supplies and riding lawn mowers.

Out Here,” Tractor Supply President and CEO Hal Lawton stated in the news release. Tractor Supply already has locations at 3660 W. New Haven Ave. in Melbourne; inside Byrd Plaza at 801 Dixon Blvd., Suite 1100 in Cocoa, and at 2619 U.S. 1 in Mims.

Some commenters on Facebook said the new store would worsen traffic at the busy intersection. Others questioned why Tractor Supply chose Palm Shores for the store’s location. “Demographic data would suggest that these businesses have no place

in this residential section of Brevard County,” wrote Daniel Honaker of Melbourne. Several welcomed the new store. “I am happy to hear TSC is coming in there,” wrote Duane Charter of Melbourne. “I shop there often and this is a lot closer.” V V

Construction of new wine veranda to Viera’s Borrows West delayed BY ERNEST ARICO Construction of a new business that will cater to the wine connoisseur or a person who loves a good glass of wine while relaxing has been taking longer than expected. Richard Abbruscato, the chief executive officer of RNK Viera Inc., said original plans called for Venezia Wine Veranda to open earlier this year. However, start-up construction was delayed because site plan approval by Brevard County and The

Viera Company took longer than expected. “Progress has been slow,” said Abbruscato, who purchased 1.3 acres across from the newly opened Chick-fil-A restaurant on Hennessey Place in Borrows West. It is the newest residential, commercial and retail development project in Viera, immediately southwest of Viera Boulevard and Interstate 95. “It’s taken far, far longer than I expected. I really thought we would have broken ground by now. Now, we have to wait for the building permits.” Abbruscato said he doesn’t anticipate moving some dirt and starting construction until late June or early July. “I’m very anxious to get started,” he said. “I’m disappointed it’s taking this long, but we keep plugging away.” Preliminary plans call for a 6,000-square-foot, twostory building. The first floor will house the kitchen and wine and gift shop, while the second floor will have seating with more than 100 selfpouring wine dispensers.

To get a glass of wine, Abbruscato explained that patrons will slide their debit or credit card into the dispenser system to get a 1.5, 3- or 5-ounce drink. “Patrons will get a chance to do a lot of sampling from different countries, grades and prices,” he said. Abbruscato also said the building will be unique in that almost the entire second floor will be surrounded by glass, offering patrons a rooftop bar feeling. “There will be a lot of greenery, and patrons will be able to walk in the garden,” he said. “We want it to be visually attractive and appealing so people can relax and enjoy.” Abbruscato said he was able to purchase the property and finance the building’s construction after selling his telemedicine stethoscope company, RNK Products, in May 2021. “I think it’s going to be fun and profitable,” Abbruscato said. “All the demographics say it’s a great location, close to Interstate 95, and there is no competition at all from any of the surrounding counties.”V V

Workers clear land for planned American Legion post BY MIKE GAFFEY Work on a new American Legion post for the SuntreeViera area passed a major hurdle recently as workers

finished clearing a 2.46acre parcel north of Viera Boulevard. Michael M. Gardino Sr. American Legion Post 410 at 275 Paint St. would be

Brevard County’s 14th post, according to an American Legion post directory for District 12, which includes Brevard County. The proposed 6,500-square-foot facility would provide local veterans, their families and guests with a new operations center from which to offer support and community services, said Edward Butcherine Sr., a Rockledge resident who has spearheaded the project since he became an American Legion commander. He bought the land in 2016. “It’s going to be a familyfriendly post, an upscale post that will be a nice place to visit, so that will work out for the local area,” said Butcherine, a 33-year Air Force veteran. Some 30 veterans have expressed interest in becoming members, he said. Butcherine envisions a concrete block building with a brick or stone exterior, a kitchen and large dining/ reception room, and an outdoor gazebo and fountains. The windowless building could double as a storm shelter, he said. Plans also call for an outdoor gun range on the

property, said Butcherine, who added that he is an NRAcertified range safety officer. “We can do small-arms classes if they want,” he said. “We probably could be able to do concealed weapons classes.” The facility would be available for the public to rent for special occasions such as a graduation party or a wedding reception, Butcherine said. “We’ll work with everybody,” he said. The post would carry the name of the late Michael M. Gardino, a veteran and former member of American Legion Post 22 in Cocoa. Butcherine said Gardino’s daughters were pleased to have the post named after their father. Post 410’s number also has a special meaning for a veterans’ facility with a

planned outdoor gun range, as it stands for a .410-bore shotgun, Butcherine said. “Our newspaper’s going to be called The Shotgun,” he said. “We’re going to be known as The Shotgun Club.” Butcherine still faces a big obstacle of raising the estimated $1.6 million he’ll need to complete the facility. Currently, Butcherine hopes that an architect will provide him with blueprints of the post that he can present to county officials and potential donors. “If contractors, companies or organizations want to help, we’ll gladly accept any donations they want to give,” he said. The numbers tell the true story of Indian River Lagoon pollution Get ready for some numbers. That’s what it takes to get a perspective on pollution in the Indian River Lagoon. First, the IRL’s problems — dying manatees and fish, and the loss of seagrass and brown water, are largely the result of pollution; too much Total Nitrogen (TN) and total Phosphorous (TP) in the water. This pollution fertilizes the algae and the other problems cascade from there. So, how much TN is going into the IRL? How much has there been historically? How much are we cleaning up? Where do we go from here? From the 2022 Save Our Indian River Lagoon Plan (SOIRL), we learn the baseline amount of TN entering the IRL is 2.8 million pounds per year. The 371 projects scheduled in the plan will ultimately cut that by a million pounds per year or 36%. So far, 57 projects have been completed leading to 100,000 pounds per

Lagoon Straight Talk From the Brevard Indian River Lagoon Coalition year reductions. Notably, point sources (sewage plants) today contribute only 1% to the overall TN. This was not always the case. Before implementation of the 1990 Indian River Lagoon Act, sewage plants dumped an estimated 30 million gallons a day (MGD) of their effluent right into the IRL, accounting for about 800,000 pounds per year of TN. Thank goodness that ended in 1995. There have been some sewage spills since the December 2019 Titusville incident. That was the worst. It resulted in 7.2 million gallons of sewage flowing into a pond with some leaking into the IRL.

Too much Total Nitrogen (TN) and Total Phosphorous (TP) are part of the problem of the health of the Indian River Lagoon. Data from the Department of Environmental Protection (DEP) suggests that this could be 2,000 pounds as a one-time release. While everyone opposes spills, this represents a tiny addition to TN (0.1% of the annual total). The point is that the SOIRL half-cent trust fund is paying for major reductions in the pollution ACROSS 1 Steal from 4 Airgun ammo 7 Typewriter type 11 Plumbing bend 12 Stadium noise 14 Famed prep school 15 Boxing great 16 Wight or Capri 17 Dog chow brand 18 White water 20 Like some arches 22 Pop-up 23 Fury 24 Entertainer Della ______ 27 Omitted in speech 30 As well as 31 USC rival 32 Chart shape 34 Shoe-wiping place 35 Does it wrong 36 Lake dwellers 37 Bahamas' capital 39 Watch noises 40 Hosp. employee 41 Term of endearment 42 Swimsuit 45 Pulled hard 49 Roman poet 50 Depletes 52 Role for Madonna 53 Road division 54 ______ julep 55 Author's need 56 Goals 57 Set in place 58 Writing fluid

That first celebration came when Anna Jarvis decided to honor the humanistic contributions made by her mother, Ann Mary Jarvis. Her mother was an American nurse during the time of the American Civil War. Mother’s Day was given federal recognition in 1914. Today, Mother’s Day is celebrated everywhere. Here are just a few whose bond with their children are highlighted:

way of bonding.” “I love to SUP, it is fun and relaxing, though not so much when my coach, Fleda Caroll, is crabbing at me,” Riley said. Her father, Jon Reneau, younger sister Cassidy, (who volunteers to help with the Special Olympics team) and mom, Jennifer Reneau, are now SUP coaches for the team and VIERA VOICE Courtesy of often can be found padding Tracy McGrath together with the dolphins and Tracy McGrath has helped her manatees near Kiwanis Island. daughter, Ashley, reach her full

potential.

The best gift ever

West Viera mom Tricia Carrick Antonucci said her dual set of identical twins is in her words — pure luck. After her first son, Tedy, now 16, she had her first set of identical twin boys, Brady and Boston, (now 13) and never expected the miracle would happen again. In 2019, Ayden and Ashton, now 3, were born as a second set of identical boys. Having two sets of twins is rare. The odds of having identical twins are 1 in 250, according to verywellfamily.com, but the odds of having a second set are 1 in 70,000.

The Reneau family shares their love of Stand-Up-Paddle Boarding. “What I enjoy the most about my boys is that my 13-year-old boys always want to help their younger siblings, and continue to be role models for their younger brothers.” “Being a mom of five boys makes Mother’s Day the best gift ever.”

Special bond

Jennifer Reneau, a long-time surfer and nature lover, shares

her love of SUP (Stand-UpPaddle Boarding) with her daughters, Cassidy and Riley. Riley, 16, who was born with Down syndrome, got involved in the sport as an 8 year old. Now a member of Brevard’s first Special Olympics SUP team, one that connects local youth and adults with physical and mental challenges to participate in the sport. She

and her mom have bonded as paddlers always on an adventure. “Spending time on the river paddling has become Riley’s way of overcoming many of her adversities, and SUP paddling is definitely her outlet for exercise, expression, relaxation and her outlet for connecting with all nature,” Jennifer Reneau said. “We share all that, and are supportive as a family, it’s been our mom-daughter

Wherever Ashley McGrath is, her mother Tracy is never far behind. Tracy, 64, of Palm Bay ensures that Ashley, 36, reaches her full potential, despite campomelic dysplasia, a skeletal disorder that physicians expected to kill her as an infant. “When she was born, I quit my job to take care of her so she can live the life she wants. That’s what a mother does,” Tracy McGrath said. Ashley has never walked or driven, requires regimented daily care that her mother provides, and had 11 surgeries in several states. But Ashley earned her master’s degree, works as a quality analyst, published her memoir about living with disabilities and actively volunteers. “It’s been a pleasure to take care of her. She’s a gift,” Tracy McGrath said. VV

Suntree resident volunteers to educate public about Florida wildlife BY WENDY SCHEURING

When Suntree resident Ivan Green retired from FedEx as a fleet mechanic in 2010, he bought a camera and started snapping away. One of his favorite subjects was the plethora of Florida wildlife, especially birds. At the behest of the late, well-known, and award-winning wildlife photographer Charlie Corbeil, Green started taking classes via the Florida Master Natural Program, “an adult education program developed by the University of Florida. (The training benefits) any person interested in learning more about Florida’s environment

… wishing to increase their knowledge for use in education programs as volunteers, employees, ecotourism guides and others,” according to the website, masternaturalist. ifas.ufl.edu. “It's a fantastic program. It’s not only that you go to these classes for 40 hours. You go on field trips every week,” Green said. After completing the program, he began volunteering. Since 2016, Green has been educating the public about sea turtles at Playalinda Beach on the Canaveral National Seashore. “When you go onto that beach at night, it’s pitch black

County Commission commends three in Older Americans Month BY JILL BLUE AND R. NORMAN MOODY The Brevard County Commission recognized three seniors for their volunteer work and their contributions to the community. The commendation came in a resolution that also recognized May 2022 as Older Americans Month. Mary Helen Hyde, Marty Hindsley and Sandy Michelson were presented with framed copies of the resolution that was approved April 19. The resolution reads in part: “… we recognize Mary Helen Hyde, Sandy Michelson and Marty Hindsley for their dedication and active participation in their respective volunteer roles throughout the county, from serving on different boards and senior committees to service projects as well as still working as a dedicated employee.” Hyde was cited for her work in the community. She has been a nurse since 1967, starting in St. Louis, Missouri before moving in 1974 to the Melbourne Palm Bay area, where she continues her work. “I’ve been a nurse going on 55 years,” said Hyde, who at 76 still works full time as a registered nurse at West Melbourne Health and Rehabilitation. “This is my life and to have this recognized is beyond belief.” Hyde has dedicated her life to nursing, to educating her patients and teaching classes in nursing. She said it is a calling. “It’s joy,” she said. “This is pure joy.”

SENIOR LIFE Jill Blue

The Brevard County Commission singled out three local seniors to recognize for their volunteering efforts and work in the community. Hindsley, of Satellite Beach, is retired but is still an active volunteer with organizations such as the Kiwanis Club, the Aging Matters Retired Senior Volunteer Program and is the founder and president of the 55+ Club. He has served as a board member and volunteer for other organizations and continues to serve. “We need to support seniors,” he said after the commission recognition. “I plan to do that the rest of my life.” Michelson has been focused on advancing the status of women globally, nationally and locally through the Zonta Club of Melbourne, where she is an ambassador and past president. “I must admit, it took me by surprise, but I’m very honored and I guess to be setting an example of what the older population can contribute to our community,” Michelson said.

She also has served with the Greater Palm Bay Chamber, Melbourne Regional Chamber, West Melbourne Business Association, City of West Melbourne, Brevard Cultural Alliance, weVENTURE League of Extraordinary Investors, Junior

Achievement and Green Gables. Michelson was very appreciative of the recognition. “Thank you very much to the County Commission and the Commission on Aging,” she said. Every May, the

Administration for Community Living leads the nation’s observance of Older Americans Month. This year, it will focus on aging in place — how older adults can plan to stay in their homes and live independently in their communities for as long as possible. SL.

Neighbors of Suntree gives $12,000 to four charities SPECIAL TO VIERA VOICE

Solution, Puzzle page 28

Neighbors of Suntree recently awarded $12,000 to four Brevard County charitable organizations. The four charities selected were Wreaths Across America — Cape Canaveral National Cemetery; A Touch of Grey; Brevard Rescue Mission; and the Salvation Army Domestic Violence Program in Brevard County. Each organization received a $3,000 check during the Neighbors of Suntree’s Mardi Gras-themed luncheon held April 21 at the Suntree Country Club. Each year, Neighbors of Suntree raises money through fundraisers, luncheons, special events, raffles and activities. Wreaths Across America is an organization that provide wreaths to all veterans’ gravesites during December to honor our fallen heros. Volunteers provide their time to lay the wreaths. Touch of Grey is a rescue group that strives to prevent or remove as many senior dogs as possible from shelters, preventing them from being euthanized. These senior dogs are placed in loving foster homes until they can be placed in

permanent homes. Salvation Army Domestic Violence Program is a certified domestic violence center that serves both adult and child survivors of domestic violence through shelter and supportive services with the goal of obtaining independence. The goal of Brevard Rescue Mission is to transform families from dependency to financial independence. This is achieved through five phases: Stabilize, strategize, strengthen, send forth and support. Families that arrive in crisis are helped

by providing housing, food, medical care, clothing and transportation. Neighbors of Suntree members and its board of directors select several worthy charities each year. The board then votes on the four charities it selects in August and fundraising events take place to award money to the winning charities.
