Autumn events bring abundant laughter, joy

The team is based out of Viera. The Artisan at Viera sponsored the scarecrow. Jackie Cantrell’s Magical Mother Earth of Pinque Productions, which received the most votes out of the 278 people who voted, won the first-place prize of $300. She donated the money to Aging Matters, which was the beneficiary of the event. More than 1,500 people attended the event, which was held in conjunction with the Harvest Festival sponsored by the Viera Community Institute at Viera Regional Park. Glenda the Real Estate Witch, constructed by Dale Sorensen Realty, placed second. In the Minicrow category, Evan Scalia’s Tunes Crow finished first. Joseph Scalia’s Covid Crow placed second. Kelli and Mark Ragsdale believe that family and church are core values in their lives.

Pastor, his wife watch Viera grow in special way BY WENDY SCHEURING When Pastor Mark Ragsdale and his wife, Kelli, arrived in Viera 30 years ago, there was not much here but undeveloped land. “There were only 500 people here,” Mark Ragsdale said. “We have seen Viera grow, and we have grown with it.” In 1986, Kelli’s father, a

church consultant, had been helping churches in the area with their planning and vision. He met with a small group called Suntree Baptist Chapel that was struggling to grow its membership. When its pastor died, they started looking for a replacement. “We spent time with the core team, talking about our vision and (after six months)

that’s when we called ourselves the Church At Viera,” said Mark Ragsdale, who came from Texas to revive the church. “They called me to be the church planter,” he said, “and I became the lead pastor for it.” At the time, the Ragsdales had two young boys, Jonmark and Luke. About three years later, their

daughter, Jessica, was born. The family resided in East Viera, in the Hammock Lakes subdivision near the church on Murrell Road. In 2007, that church building was sold and a new church at 9005 N. Wickham was constructed. The Ragsdales then moved to West Viera in Arrivas Village. The Church at Viera

will celebrate its 30th anniversary in March 2022. Their children have now all grown, married, and are starting families of their own. The Ragsdales currently have three grandchildren, Ella, 7, Fin, 5, and Scarlet, 3 and are expecting four more in

The former Rockledge High School softball standout catcher, who survived a catastrophic, freak-accident injury while diving for a foul ball during her junior year at Flagler College is doing something she loves: Teaching. After colliding with her Flagler College first baseman while chasing a foul ball, catcher Jackie Mijuskovic thought she simply had a broken nose.

her brain was bleeding with cerebrospinal fluid coming from her nose. She was airlifted to the Carolina Medical Center where she underwent surgery. Doctors told her she would likely look a little different, act a little different and become forgetful. As tough as that was to hear, she was able to keep a positive attitude. “Honestly, I feel like I leaned on my faith a lot during that time,” Mijuskovic said. There were a lot of things going on that pushed me toward my faith, luckily, rather than pulled me away from it. “I have a lot of people … I still have a lot of people from that time … that rallied around me and supported me. Honestly, I saw it as, ‘OK, here’s what happened. This is the way it is. I can either wallow in it and it can suck, or I can do my best to make the best out of this situation and come out stronger.’” As it turned out, Mijuskovic did not sustain any long-term effect. She was working out again in 2½ months. Her facial bruises were gone in six months. That fall, she was back for her senior year. Her playing days were over, but she was at peace with that. She loves being a teacher and now she gets to stay close to the sport she still loves.

“That’s why I’m so grateful for the opportunity to coach now,” Mijuskovic said. “As much as I’m glad I had a cool, badass way to end my softball (career) … it was nice for me to be able to now have that more positive association with the game. “I do miss it, and I think my parents think I go out there and that’s all I’m thinking about, ‘Man, I wish that was me.’ But for me, I feel like that chapter’s closed. Now, it’s about giving to that next group coming in, whether it be in the classroom or on the field, just giving back in all the ways I’ve been lucky enough to get help and guidance as a younger athlete and person.” Sylvia Mijuskovic, who is the principal at Pinecrest Academy, said her daughter has always been a fighter. “Born six weeks early in an emergency delivery, I call her my miracle child,” Sylvia Mijuskovic wrote in a text message. “She was a fighter then and she’s always been able to overcome challenges through perseverance and her faith.” There’s no question the injury had an impact on her life, but from the looks of it, Jackie Mijuskovic has emerged a better, stronger person. “I definitely feel like it made me grow up a lot in ways I didn’t really realize I needed to grow up,” Jackie Mijuskovic said. “All in all, I’m grateful for all of it, the whole experience because it definitely made me a better, more well-rounded person.” “Once you go through something like that, whether it’s just by proxy or experiencing it yourself, I feel like you kind of view life differently. Being able to have a new outlook without any physical impairments or mental impairments, I feel super, super, super lucky.” VV

the coming months. Their daughter-in-law, Savannah, is expecting a girl, and their daughter is expecting triplets. “We were very surprised by the triplets,” Mark Ragsdale said. “Identical boys. It is one in a million to have identical triplets.” “It’s going to take a village,” Kelli Ragsdale said. “It is nice that everybody (in the family) is so close. We are all going to pitch in and help. We also have a good-sized church with people that will help out,” Mark Ragsdale added. For the Ragsdale family, the Church At Viera has always been their focal point. “My number one passion is music,” said Kelli, a vocalist on the worship team. “I’m also passionate about the women’s ministry.” “Jonmark was 5 years old when we arrived here and he is now our worship

pastor,” added Mark Ragsdale. The couple enjoys going on global impact trips with fellow church members to places such as Haiti, Costa Rica, Peru and New Mexico. “We help out with whatever is needed, construction, painting,” he said. When they are not at church, Mark Ragsdale enjoys running and scuba diving, and Kelli likes snorkeling and eating out at The Avenue’s many dining establishments. “I love that our family is here. The church is here. I love living across from The Avenue (Viera). The weather is beautiful. The beach is close by. All of the things that people think of when they dream of Florida,” she said. “Viera is the best kept secret in Florida,” Mark Ragsdale said. “The controlled growth in Viera is nice, not too overwhelming. It is still like a small town.” V V

ArtWorks returns after last year's cancellation BY ERNEST ARICO One of Brevard County’s premier art shows is returning this month. The 24th annual ArtWorks of Eau Gallie Fine Arts Festival will be held from 10 a.m. to 5 p.m. Nov. 20 and 21 along Highland Avenue in Melbourne’s Eau Gallie arts district. Last year’s event was canceled because of the COVID-19 pandemic. About 70 artists from around the county, state and nation will participate. Student artists from many county high schools also will participate. Live entertainment and a food court will be provided. Festival goers are encouraged to wear face masks and practice safety guidelines and protocols because of COVID-19. One of the featured artists at this year’s event is nationally-known pottery artist Charles Nalle. The 72-year-old Melbourne Beach artist has been coming to ArtWorks since 2003. “It’s one of my favorite art shows of the year. It’s laid-back, not a hype-big event,” said Nalle, who has been working with pottery since he took a ceramics class at the University of Delaware in the fall of 1969. “I like the event because of the proximity to my home, the ease in which the show is run, the friendliness of the people and the community spirit. It’s nice to see people in the community that you know. They also put on a nice dinner for the artists and award winners.”

Nalle, who taught pottery at Eastern Florida State College from 2007 to 2014, is looking forward to bringing several creative samples of his different kinds of vases. “I describe my work as creative abstract, contemporary work,” he said. Artists are encouraged to create new art or demonstrate their techniques as they exhibit. “ArtWorks provides a unique experience for the public to view artists painting outdoors, as well as other artistic craftsmen demonstrating their expertise,” she said. “ArtWorks values educating the public and instilling a deeper appreciation of art.” In addition to the awards given for excellence in various art forms displayed at the festival, the show also gives bonus awards for the best demonstrators. Nalle has won the demonstrating award three times. “I like to make something in front of people,” he said. “This year, I may demonstrate how to make clay masks. I want to show how you can bring people out emotionally through masks.” The festival draws about 20,000 visitors annually. ArtWorks owes its life to the late Link Johnsten, who owned Eau Gallie Florist. When two decades ago, Johnsten was invited to create floral arrangements for the Academy Awards in California, he visited Santa Monica where he discovered a working artist festival he believed would be perfect for Brevard County. With no seniors on the roster, the Viera girls bowling team's best days are ahead of it. The team has been showing marked improvement this season.

The Viera boys bowling team is hoping to make a return trip to the state tournament this season. The Hawks finished fourth in the state in 2018.

Viera bowling teams improving, boys eyeing trip to state tournament BY CARL KOTALA As freshmen, they were part of a senior-driven team that finished fourth in the state. Now, Viera High’s Colin Frost, Cameron Cox and Collin Cox are hoping they can help bring back some of the glory days for the Hawks boys bowling team. “Our team kind of died down since we lost all of our

seniors from freshman year, but now we’re the seniors that our freshman year had,” Frost said. “We’re trying to show them the same experience that we got.” The senior trio, who are all averaging over 200, have been happy with the way the season has gone so far. “It’s been better than what we could have imagined,” Cameron Cox said. “We came in with pretty new bowlers

and we’ve brought them up to a pretty good level of skill so far, which is amazing.” First-year coach Kimberly Cox credits assistant Michael Coffey — who tours professionally — with helping the team improve dramatically. “He’s helped a lot with the boys and their technique,” Kimberly Cox said. “They’re getting better and better.” Viera’s girls, meanwhile, are a young team with no seniors and three freshmen on the roster. The Hawks had won one match so far on the season. Sophomore Allanah Stepp said being on the team, “is great. I love all the girls. We all get along.” Brooke Fereday is the lone

junior on the team, followed by sophomores Stepp and Ashlynn Fereday. The three freshmen are Sadie Ballard, Kierra Vallie and Annabelle Duggan-Herheim. Stepp, who rolls anywhere from 90 to 120, believes the Hawks will only continue to get better the more they bowl. “Our freshmen are wonderful,” she said. “They range from a 90 to a 150. The more that we practice, the better we will get. The more coaching that we have, I can see us winning a lot more matches next year.” In addition to the three seniors, the Viera boys team features juniors Matthew Reynolds and Joshua Bonadio; sophomores Theo Anderson and Cael Hagy and freshmen

Viera had suffered just one loss in regular-season district play and the Hawks were confident they would be able to qualify out of the district tournament, which was set for Oct. 26 at Shore Lanes in Palm Bay. “I feel like we can make it all the way to states,” Cameron Cox said. “It comes down to how we’re doing and how a couple of the other teams are doing. I think we can make the first cut (at the state tournament), too, for sure. At the start, we were averaging the 800s (as a team) and now we’re up to 950. That’s what you need to make the cut at states.” V V

There might be a lot of youth on the Holy Trinity swimming and diving team this season, but as the Tigers have already shown, there’s a lot of talent, too. “It’s a strong group of fresh new swimmers (two from sixth grade) coupled along with our seniors and upperclassmen who are all putting in great swims and having a lot of fun as well,” Holy Trinity coach Tiffany DeAngelis said. “Everyone has been getting personal bests and pushing themselves. It’s been a very fun season so far and looking forward to districts and beyond.” It’s already been a record-breaking season for the Tigers, who have seen three long-standing school records fall. Freshman Natalie Doig’s time of 24.79 in the 50 freestyle broke a record that had existed since 2004. She also set a school record in the 500 free (5 minutes, 23 seconds), bettering the previous mark set in 2016.

Senior Alex Spies, meanwhile, broke a record that had been around since 2002 when he finished the 100 butterfly in 53.93. Doig and Spies are certainly strong contenders to get to the state meet. “The hard work and efforts of both Natalie Doig and Alex Spies are truly showing up,” DeAngelis said. “I don’t have a doubt that they will continue to break more school records and personal bests at districts and beyond.” Spies is one of seven seniors on this year’s team. He’s also a co-captain with seniors Cole Hewatt, Caroline Lacey and Ava Middlebrooks. Other seniors are Karrington Lawson and Keira Lee. Senior Mary Stallard is the dive captain. The district meet took place on Oct. 20 and the Tigers were expecting to have a good day. “I think districts will go very well, considering everyone has improved on time,” sophomore Adrianna Shanta said. “At the beginning of the season,

some kids were very new to the team, so they had slow, long times. Now, they’ve cut it down to really small times.” Shanta has seen her time in the 200 free go from three minutes to 2:30 this season and is eventually hoping to get it down to two minutes. Sophomore Luke LaGrone, who made it to regionals last year, has also seen improvement. “I’ve definitely dropped time from last year,” he said. “My first time last year in the 500 free was 7:15. Right now, I’m trying to get it under six minutes. That’s my goal. I’m at 6:09 right now.” While the Tigers have some strong swimmers now, their best days are clearly ahead of them as their youngsters gain more experience. “I’m really looking forward to the next ongoing years,” LaGrone said. “My senior year should be really exciting if all these people stick with it.” V V

scores of 72 and 75 to win, Ben Dickerson was given a plaque recognizing him as the club champion. He won the golf championship despite back injuries, back, shoulder and knee pain, and post-traumatic stress disorder. He certainly had enough to overcome, including multiple combat engagements in Iraq and two tours in Afghanistan. Dickerson was awarded the Purple Heart after an incident on Dec. 5, 2005 when he and several others were riding in a Humvee that ran over an IED, which exploded, flipping the Humvee on its side. A

second-lieutenant, who was riding in the front seat, could not feel his legs to get away from the Humvee. Dickerson and a fellow soldier pulled the secondlieutenant to safety while under fire, and went to a base that was more than a mile away. There are a lot more of these stories to tell, but the key point is how golf has helped him transition to civilian life while dealing with the mental pain and headaches from PTSD and helped keep him from abusing drugs and alcohol. Viera swimmers invite stronger competition BY CARL KOTALA The Viera High swimming and diving team might be in a tougher district and region this season, but that doesn’t mean the Hawks are shying away from the competition. “It will definitely make me stronger, and my mindset will be a lot better knowing this is the competition I’ll be going against,” senior cocaptain Wyatt Chou said. “I need to get to where they’re at and be better than them.” The Hawks, along with Melbourne and Heritage, were moved into Class 3A, District 10 and Region 4 for this season, which means they’ll be competing against tough teams from farther south. “We’ve got a great group of kids,” Viera coach Chris Beadle said. “They’ve really bonded over the last few weeks, so that’s nice to see. We’ve got kind of that family vibe. It’s a younger team. Two years ago, we lost 17 seniors. Last year, we lost 13.” “We’re kind of regrouping as the year goes on, but they’re getting better and better. They’re learning as we go along, so I can’t ask for more than that. Our times have been getting better every meet. They have the biggest hearts ever.” Senior co-captain Elena Limonta, who swims the 500 freestyle and 100 breaststroke has seen her time in the latter event go down to 1:34 this year and is trying to lower her time in the former to under 7 minutes. “I’m still working on it,” she said. “I’ve definitely made some improvement since last year, but I’m always aiming to make my times faster.” Facing tougher competition in the district meet, scheduled for Oct. 27, could bring that out of her.

Viera academic team plays high school version of ‘Jeopardy’ BY CARL KOTALA

It’s a little bit like the game show “Jeopardy” … the high school advanced placement class version. Every Monday, 11 members of the Viera High School Academic Team gather at the Brevard Public Schools office complex to square off with students from another school in a quiz-like game that tests their knowledge of various subjects. “Some people like to call it, ‘Quiz Bowl,’ ” Viera High senior Olivia Peters said. “We get together with a bunch of different schools and we go against each other to answer some challenging questions from AP classes. It’s almost like ‘Jeopardy’ except you don’t choose (the category). They kind of just ask a question and you have to buzz in and answer it.” Peters is one of 11 students on this year’s academic team. The others are seniors Kayla Beigh; Maya Sallade; Erek Dibbern; Sid Antoine; Jared Jones; Rayyan Jamil; Rachel More and Sophia Grieko along with juniors Esther Kao and Christy Anasa. “I put the team together every year,” said Ron Peters, who teaches AP Literature

and English Honors 3 at Viera. “My invitations are based on, really, their success in their AP classes. We do have two juniors this year, but it’s almost always seniors because they’ve taken the material. As Olivia mentioned, these questions come from their advanced placement classes. “So, it may seem like ‘Jeopardy’ but it’s really more

like multiple choice questions from the AP exams. There could be something from psychology, or government or English or physics or chemistry. It’s not a fun category like, ‘Movies that begin with Z’ or something like that. They’re all academic questions.” Dibbern, who has been one of Viera’s best competitors this season, said he likes the

challenge. “It’s fun,” he said. “It’s a good chance to get to show what you know. I’ve always liked ‘Jeopardy’ type trivia. It’s fun to pick stuff up and randomly get answers sometimes.” There are different pointvalue questions, ranging from 5 to 15 points. Teams lose points for wrong answers. One of the strengths of this year’s group has been its ability to handle the team questions. For someone like Olivia Peters, who has committed to playing softball at Carleton College, having experience being part of a team can pay off. “For a lot of questions, it’s not right away that you know the answer,” she said. “You

have to work through it. You can be like, ‘Oh, I know half of this one. Do you know the other half?’ ” The Hawks were ranked fifth in the county in the regular season, but that’s not the ultimate goal. The district tournament is scheduled for Nov. 15, after which an eight-person All-Star team will be selected. “They’re very competitive,” Ron Peters said. “They want Viera to be No. 1, but really what we want is to get some of our kids placed on that All-Star team that’s going to compete for Brevard County. They’re going to represent Brevard County in April at the Governor’s Cup. That’s the big one.” V V

VCS student council full of ideas to improve school, impact community BY CARL KOTALA Casey Taylor had a simple reason for wanting to run for vice president of Viera Charter School’s student council. “I’ve been here since the first year the school opened,” Taylor said. “It’s just a really cool opportunity to be able to represent the school and make it better.” Ari Camejo came to VCS last year, but he had a lot of friends telling him he should run for president because they thought he would be a good fit. “I just thought about all of the ideas that I had planned for the school to help improve it,” he said. “I just thought of it as a way I could get those ideas up to the school board.” Elected by their classmates in midSeptember, the eighth graders are two of six members of this year’s Viera Charter School Student Council. Victoria Wolfe is the class representative, Alexandra Guevara is the secretary, Katelyn Fackler is the historian and Sebastian Cordova is the council’s treasurer. “We’re a group of people who are basically representatives of the school — our eighth grade and pretty much all of middle school,” Camejo said. “We have meetings at least twice a month to discuss plans for the school.” Those plans can include helping to organize a school dance or helping to set up for graduation. “We design and organize fundraisers and events for the school,” Taylor said. “We have community service (projects). We’re planning on doing beach cleanups this year. And we’re going to have a basket brigade during Thanksgiving.” In addition to the basket brigade, which helps provide food for needy families in the community, the council also helped organize a trunk

or treat even for Halloween. The group often works with the school’s National Junior Honor Society, which has much bigger numbers, to help with the events. One thing Camejo did this year is to provide a

suggestion box for fellow students to submit ideas. “There are definitely a lot of good suggestions that people come up with that I bring up during meetings,” he said. One such suggestion

has already born fruit. The school now has a reading club that meets after school. “As the year goes on, something will pop up,” said VCS World Geography teacher Mary Rabun, who advises the student council.

“There will be an animal shelter drive, or something like that. I kind of let them come up with ideas as the year goes on and do service projects they’re interested in.” The student council has been around since the year after the school opened and Rabun has been the advisor every year. There is one aspect she always enjoys: “Watching them enjoy the community service work, mostly, and seeing them get a sense of responsibility, understanding that they’re now the spokesmen for their classes and they represent the entire eighth-grade class, if not the whole middle school,” she said. “That’s a big responsibility to take on, to know everyone’s looking up to you and you set the tone. The holidays are imminent, and it feels like the year flew by in a sneeze. Hard to believe we are being catapulted into Thanksgiving and we've been inundated ad-nauseam with Christmas decor before the trick-a-treaters have left our doorstep. No doubt a segue into the commercialized bombardment of Black Friday sales. Thank goodness for family gatherings, where we rejoice in togetherness and food continuously plays a significant, vital part on any occasion.

Hard to believe this year marks the 400th anniversary of this longstanding, venerated tradition. It’s been observed since 1621, when the first settlers and Wampanoag Indians gathered together by giving thanks for their plentiful, first autumn harvest. The expression food coma doesn’t even begin to describe the state of euphoria Thanksgiving brings to most Americans eagerly awaiting this holiday. It might well be about the proverbial plump, juicy turkey, buttery tater mash and

sumptuous pumpkin pie, surely because it brings cozy and comfortable recollections of family gatherings and the tantalizing aromas of epic cooking. However, no matter how eagerly awaited the culinary offerings are, we mustn’t lose sight of the message. It’s a time of reflection and truly being thankful for our many blessings; the everyday things we take for granted, which we should honor yearround. And of course, basking in the love and companionship of kinfolk and friends.

Elevated sides: The turkey might be the main protagonist, but we all salivate, waiting with bated breath for the side trappings presented at the table. However, kudos go to the brave culinary adventurers wanting to inject diversity and new mojo into their sides to pile alongside the cornucopia of food on the groaning family table. If you fall into that crowd, you’ll jump on this bandwagon to stray from the customary. Your guests and family will grovel for these recipes and they’ll be singing your accolades for decades to come. I guarantee you’ll be showcasing them not just at Thanksgiving, but year-round. V V

ORANGE/GINGER WHOLE BABY CARROTS

ROASTED BRUSSEL SPROUTS, BACON AND APPLES

This dish is outstanding anytime, as it’s a glamorous and colorful accompaniment to grilled meats, fish and chicken. The Thanksgiving table typically has the ubiquitous, orangecolored yams; however, this makes a nice departure from the customary take. Try not to omit the miso paste which is sold pretty much everywhere. It takes the flavor from good to extraordinary. Combined with the tangy, spicy flavor of the ginger and the sweetness of the honey is a match made in carrot heaven.

It serves about 8 but you can vary the quantities accordingly. The beauty of this dish is that it can be made the day before and reheated for the feast, which is perfect for when the kitchen is chaotic on the actual day. Sprouts with bacon and apples, oh my!

What are the holidays without a celebratory cocktail concoction? This is a fall fave, and everyone will think you’ve got a clandestine bartender parttime job.

2 Lbs of Brussels sprouts — trimmed and halved or whole if small 2 large, unpeeled apples — cored and medium diced 6 slices of applewood smoked bacon – cut up into medium sized bite pieces 2 Tbsp balsamic vinegar ¼ cup of EVOO (extra virgin olive oil) 2 Tbsp of maple syrup 3 sprigs of either fresh thyme or rosemary ¼ cup of low sodium chicken stock Kosher salt and fresh ground pepper

1 bottle of Sauvignon Blanc or Pinot Grigio

1 large bag whole baby carrots 1 TBSP of grated fresh ginger 1 TBSP unsalted butter 2 TBSP olive oil 1 heaped TSP of white miso paste 1 sprig of fresh thyme 1 large shallot — finely chopped 1 bay leaf Juice and zest of half an orange (keep some of the zest to serve) ½ cup of low sodium chicken broth 2 TBSP of wildflower honey (or any good honey) Chopped fresh chives or parsley Kosher salt and fresh cracked pepper After washing the carrots, make sure that they are all uniform in size, cut larger ones in half, so they cook evenly. In a large sauté pan, add the olive oil, butter and sweat the shallot with the ginger plus a pinch of salt and pepper. Go easy on the salt as the miso paste is already salty. Incorporate the carrots and add the chicken stock, thyme, bay leaf, honey, miso paste, orange juice and half the zest, bringing to a boil. Simmer on very low for about 12 minutes semi-covered and an additional 5 minutes uncovered to evaporate some of the liquid and allow them to caramelize. Be careful, as they burn very easily. Don’t overcook them, you want them tender but still with a bit of bite. To serve, sprinkle some chopped chives or fresh parsley with the rest of the orange zest.

Preheat oven to 425 degrees In a small mixing bowl whisk maple syrup, balsamic, EVOO, salt and fresh cracked pepper. Place the sprouts in a large bowl and add ¾ of the vinaigrette to coat them and invert on a cookie sheet lined with foil. Bake for about 15 to 20 minutes until tender, turning halfway through with some tongs to ensure even browning halfway through the cooking. Add the chicken stock to the remaining vinaigrette. In a skillet with high sides, add the cut bacon and start sweating to release some of the fat allowing it to crisp. Add the apple, the rest of the vinaigrette and herb of choice. Sauté until the apples are softened, but ensure they aren’t not too mushy and evaporate most of the liquid. Incorporate the roasted sprouts and toss to mix everything together.

FALL SANGRIA COCKTAIL

1 ½ cups of apple cider 1 apple — cored and sliced 1 pear — cored and sliced 4 to 5 fresh figs ½ cup of fresh cranberries 7 tbsp of Calvados 7 tbsp of Pear brandy ¼ cup of Cinnamon simple syrup 3 cinnamon sticks, 3 cloves and some orange peel 1 cup of white sugar ½ cup of pomegranate seeds or fresh cranberries ½ orange sliced into half moons ½ of the juice of the same orange Simple syrup: In a small saucepan add 1 cup of water with the cup of sugar. Bring to a boil to dissolve the sugar and remove from the fire. Add the cinnamon sticks, 3 cloves and some orange zest. Strain the syrup. In a large pitcher, add the chopped fruit and the cinnamon sticks from the syrup. Add the brandies, wine, orange juice, cider and as much of the simple syrup needed to sweeten to your taste. Refrigerate for 48 hours.

Long requested, Costco opening this month in Viera BY MIKE GAFFEY

Brevard County Costco fans can say goodbye to long trips west to their favorite membership warehouse. Costco is set to open a 148,000-square-foot warehouse Friday, Nov. 19 at 4305 Pineda Causeway, about a quarter-mile west of Interstate 95. A ribbon-cutting ceremony at 8 a.m. will precede Costco’s opening, Warehouse General Manager Mike Sinanian said. Prior to the Melbourne location’s opening, the closest Costco was about 60 miles away in Winter Park or in South Orlando. “We are thrilled to be bringing Costco’s low warehouse prices to the residents of Melbourne,” Sinanian said. “They have been asking us to open here for a long time, and we already have made an impact on the local job market. We look forward to contributing to the community in many ways.” Like other Costco locations, the Melbourne warehouse will offer quality, brand-name and privatelabel merchandise. Everest plans rehabilitation hospital for Viera BY HENRY A. STEPHENS A Dallas-based hospital company has announced plans for a 36-bed physicalrehabilitation facility in Viera in the near future. But details remain sketchy. Jay Quintana, the founder and chief executive officer of Everest Rehabilitation Hospitals Inc., this month announced plans to build a $24 million, 40,000-squarefoot, single-story hospital on 4.1 acres in the western part of Viera. Quintana estimated the new Viera facility would bring 100 jobs to Brevard County. His Oct. 1 announcement followed previous announcements to build similar hospitals in Kissimmee, Ocoee, Winter Haven, West Palm Beach and St. Petersburg. All would follow the same 36-bed

nursing facilities.” Everest would provide physical therapy on a one-toone basis, therapist to patient, five to seven days a week, daily visits by rehabilitation doctors and nurse attendance 24 hours a day, he said. The new Viera facility would serve patients recovering from strokes, brain injury and other neurological problems. It would include physical-therapy gyms for inpatient and outpatient use, aqua therapy, in-house dialysis, in-house pharmacy, family-gathering areas and an “extra large” dining hall and patio, Quintana said in his statement. Contacted for this report, Quintana said he is currently seeking Brevard County building permits. “Our start time is dependent on this,” he said, adding that the completion time would also depend on permitting. As of Oct. 20, Brevard County Planning and Development had not received a permit application for the Everest Rehabilitation Hospital project. Quintana says his project is

targeted for Viera’s “Medical District,” an area roughly centered on Stadium Parkway and North Wickham Road. But he didn’t specify the location further. Since all six proposed Florida hospitals are supposed to be the same design, at $24 million each, that means a construction cost of $144 million. Quintana said he’s prepared to start building all the hospitals at once, as soon as they’re all permitted by their cities. Everest’s Viera facility would be near the Viera Hospital, one of four hospitals owned by the Rockledgebased Health First Inc. But Quintana said he doesn’t plan to compete with Health First, but rather to complement its efforts. “We focus on short-term stays to get patients as independent and functional as possible,” he said. VECDD seeks to replace entire golf course irrigation system BY ERNEST ARICO The Board of Supervisors of the Viera East Community Development District is seeking bids to replace the irrigation system at the Viera East Golf Course in Rockledge. The VECDD released its request for proposals for construction services on Oct. 8. It is seeking the installation of a new, state-of-the art, two-wire irrigation system using Rainbird or Toro systems. Estimated cost of the project is $2 million. According to the project information package, companies desiring to provide services for the project must submit one original and eight copies of the required proposal no later than 2 p.m. Nov. 10 at the VECDD office at 219 E. Livingston St., Orlando. The bids also will be opened at that time. The bids will be considered for evaluation during the VECDD’s public meeting at 7 p.m. Nov. 18 at Faith Lutheran Church at 5550 Faith Drive in Viera. Timothy A. Melloh, the general manager and chief operating officer for the Viera East Golf Club and VECDD, said the new irrigation system is needed because the present one is 27 years old and its pipes and sprinkler heads badly need to be replaced. “What’s so unique about this two-wire irrigation system is that the (sprinkler) heads can talk back to the computer,” he said. “It’s the latest in state-of-the-art technology.” The total distance of the Viera East golf course is 6,669 yards. The present irrigation system only utilizes 1,000 heads. When installed, the new system will have 1,500 heads and will irrigate the tees, greens, fairways, roughs, driving range and surrounding driveways and parking lot. “We have 120 acres of land that needs to be irrigated,” Melloh said. “The piping will be made up of high

density polyurethane and will last more than 50 years.” Once the contract is awarded, Melloh said construction should start by May 15, 2022 and be completed by Sept. 30, 2022, just in time for the yearly snowbirds arriving to Brevard County. He also said that at no time will the golf course close during the irrigation system installation. “We’re going to do one hole at a time,” he explained. “If a golfer wants to play 18 holes, he or she may play one hole twice.” Once the project is completed, Melloh said the golf course will make Viera East “more environmentally” better. ”We will be pumping less water but it will make the golf course and its greens in much better condition.” Aqua Turf International is the VECDD’s consulting firm for the project. The company, headquartered in Tequesta, Florida, designed Viera East’s irrigation system and helped in the preparation of the request for proposals for construction services. VV

All young vendors submitted an application and were entered into a competition where their business concept, products or services and booth were reviewed by a panel of judges. “They had to tell us what they’re making in advance, how much it cost them and how much they’re going to charge, as well as where are they getting the funds for their business, how they intend to repay those funds and how are they going to measure success,” she said. “So it is an educational experience.” Items for sale included crafts, jewelry, clothing and tasty treats for people and pets. Youngsters made all the products themselves and sold their items without assistance from parents at the event. “Children are more experimental and more daring and they just come up with these unique things,” McFarland said. “And then we’re like, ‘Why didn’t an adult think of that and sell it at their farmer’s market?’ ” Amelia Dailey, 13, enjoyed a steady stream of visitors at her tent, where she displayed her macramé creations. Formerly of Vero Beach, Amanda and her family traveled from their new home in Texas to Viera for the fair. “I just saw it somewhere and I really liked it and I decided to try it,” Amanda said of macramé, which she’s been doing for three years. “I find a lot of teens like it because they’re moving out and they want home decor and I feel like this is perfect.” For more information, visit brevardcbf.org. In June, Viera Company President Todd Pokrywa celebrated the grand opening of an outdoor hockey rink at La Roca Park. On Sunday, Nov. 14, Pokrywa will appear at a much larger hockey rink inside Scotiabank Arena in Toronto, Canada. He’ll be an honorary coach at the Adidas Hockey Hall of Fame Legends Classic, part of the Hall’s Induction. Pokrywa will be behind the bench with Hockey Hall of Famer Lanny McDonald and Class of 2020 inductee Kevin Lowe for the World Legends team captained by Hockey Hall of Famer Mike Modano as it takes on a Canada Legends squad led by Hall of Famer Scott Niedermayer. Other hockey greats scheduled to play include Eric Lindros, Larry Murphy and Sergei Samsonov. “It is an experience of a

lifetime to get to be behind the bench with two Hall of Fame Hockey players I grew up cheering for and among so many hockey legends,” said Pokrywa, who joined the Viera Company in 2014 and became its president in 2018. Pokrywa was selected for the honor for his support of the Hockey Hall of Fame’s Legends Line fundraising initiative that has assisted in the Hall’s COVID-19 relief and recovery efforts. For Pokrywa, who played both street and ice hockey in his youth while living in Edmonton and Toronto, the chance to be surrounded by National Hockey League Hall of Famers is a boyhood dream come true. “For many years, the back of the Canadian five dollar note included a quote from the short story “The Hockey Sweater” which read, “The winters of my childhood were long, long seasons. We lived in three places — the school,

the church and the skating rink — but our real life was on the skating rink,” Pokrywa said. “That was certainly true during my childhood.” Pokrywa played hockey from the time he was 5 years old until college. “I learned to skate pushing a kitchen chair around the backyard during the winters when my dad would flood the backyard to create an outdoor rink for my two brothers and me to skate and play hockey,” he said. For Pokrywa, hockey was more than a game. It taught him the value of teamwork. “There is more to take away than mastering passing, shooting or stopping the puck,” he said. “There are invaluable lessons learned about working with others, time management, respect, sportsmanship, determination in striving toward a collective goal, and managing emotions.” V V

The gift of water comes from the ever-giving Everglades Due to ample rainfall and low, flat terrain, Florida is more than 31 percent wetlands. The largest subtropical wetland ecosystem in North America exists in southern Florida, namely the Everglades. It is a large region of sawgrass marshland with mostly freshwater. Native Americans referred to the Everglades as “grassy waters.” Presumably, it was named Everglades by cartographers — meaning grassy open spaces. The area is actually a slow-moving river up to 50 miles wide and more than 100 miles long. Cypress swamps and mangrove forests are also impressive. Since the 1800s, the flow of water in the Everglades has been altered to benefit urban and agricultural development. The modification has vastly decreased its size. In addition, polluted agricultural runoff has affected water quality. Marjory Stoneman Douglas, a conservationist, was dedicated to the preservation of the Everglades. Her book

The Everglades: River of Grass was written in 1947, the same year as the formal opening of Everglades National Park. The grass she referred to was sawgrass (actually not true grass, but sedge). When adversaries declared the area a “worthless swamp” to be drained for land development, she proclaimed the significance and beauty of the region. This ecosystem provides habitats for an abundance of creatures. There are 40 species of mammals, 360 species of birds, 23 species of snakes, and 200,000 alligators. One might observe golden orb spiders, lubber grasshoppers, whirligig beetles, and nearly 100 species of spectacular butterflies — all performing their ecological roles.

The ghost of spring training and minor league baseball still lingers at Space Coast Stadium, now a part of the United States Specialty Sports Association’s Space Coast Complex. Softball is the primary sport now, but there’s still plenty of baseball played from time to time. Senior Life will host the Grand Slam Boomer Bash from 9 a.m. to 1 p.m. Thursday, Nov. 18 at the complex on 5800 Stadium Parkway in Viera. For those willing to come early, a stadium stroll through the dugout and the warning track in the outfield will be offered at 8:30 a.m. This is the same dugout where 1997 World Series stars Gary Sheffield, Bobby Bonilla, Livan Hernandez, Moises Alou, Charles Johnson, Kevin Brown, Edgar Renteria, Jeff Conine, Alex Fernandez and Al Leiter sat during

Lights get ready to rumble BY JEFF NAVIN Getting into the Christmas spirit will be a little easier this year with the inaugural Viera Bright Lights Battle. “We went out around last year in the neighborhood and took video and photos of beautifully decorated homes,” said Jill Blue, the publisher of the Viera Voice. “We posted them on Facebook for everyone to see. People were asking, ‘where are these houses?’ So, they could see the beautiful lights.”

There also will be a business exterior category, which will allow local businesses to share the holiday spirit. “I thought it would be fun to bring the community together for a holiday lights battle,” Blue said. “I knew after last holiday that this was something I wanted to do for this year. The HOA

runs a Suntree contest, so we are going to do one in Viera.” Participants must reside in Viera, and houses must be registered for the contest with Viera Voice by Dec. 7. Judging will take place Dec. 11 to 15. “Let’s spread some holiday cheer and spirit,” Blue said. “Let’s create some holiday memories and make new friends.” All participants will

be required to have their lights and decorations in operation by Dec. 8. The public must be able to see the lights and decorations from 5 to 9:30 p.m. Decorations must be installed by the participant. Only decorations visible from the roadway will be subject to judging. Judges will determine the category which best suits the entry. Suggestions are encouraged.

Linda and Woody McDaniel have been helping residents in the city of La Paz, Honduras for the past 20 years. They started by visiting an orphanage in 2001, then by building an orphanage and chapel in 2003, followed by the refurbishment and building of seven schools beginning in 2008. Operation La Paz is a nonprofit organization created by Linda and Woody McDaniel to aid the health and education of the people of La Paz, a city of about 52,000. The Suntree Rotary Club is one organization that offers Operation La Paz a grant to help with the work there. “The town of La Paz has nothing to export,” said Linda McDaniel. “They are surrounded by mountains and agriculturally it is rich soil, but the benefits from the farming community do not trickle down to the people, except that they work in the fields making between seven and 10 dollars per day.” “Their groceries and their medicines are equivalent to ours (in cost) here, and their building materials have gone up like they have here as well.” The most recent construction

Volunteers with Operation La Paz paint a school building in Morazanico. project is the building of a tworoom school for the children residing in the INFOP area, also known as the town of Morazanico. “But residents only know it as INFOP,” said Linda McDaniel. INFOP is located about three miles northeast of the city of La Paz. The residents in INFOP are farm workers who reside in adobe huts with no electricity or running water. Construction began in April 2021 and will be completed in December 2021. Due to the pandemic, the children have not been attending school for the past two years. Thirty children, ranging from kindergarten to seventh grade will attend school in the new building once they have been given the green light. In September, the couple, along

with some friends, travelled to La Paz to work on the school. Although it rained every day, they were able to paint primer on both the interior and exterior walls. They also distributed hygiene and food bags to 100 local families. A local construction crew has continued the electrical work. “Faith Viera Lutheran Church hosts a fundraising golf tournament every year to raise funds,” Woody McDaniel said. The next golf fundraiser will take place at Viera East Golf Course on April 23. “We are also given a grant each year from the Suntree Rotary Club,” McDaniel said.
