The third annual Viera Bright Lights Battle, sponsored by Viera Voice, has already become a tradition in the community.

Homes light it up for bragging rights BY R. NORMAN MOODY A leisurely drive through Viera neighborhoods shows that this community knows how to celebrate Christmas — with bright lights and festive decorations. The Viera Bright Lights Battle has become a welcome holiday tradition in which residents participate by bringing out their best Christmas decorations and lights. Residents are invited to download a map from VieraVoice.com to drive around and check out the houses whose decorations are works of art. These are homes that celebrate with the Three Wise men, Santa’s sled and reindeer, Christmas trees adorned with lights of all colors, Frosty the Snowman and elves of all shapes and sizes with candy canes. Residents can register their homes to participate in five categories — Traditional, Best Theme, Clark Griswold, Best Small Display (condos and apartments) and a new category by homeowners' request, Neighborhood Spirit Battle. Ramirez family brings their ministries to Viera BY LINDA JUMP Their address is not in Viera, but Joy Ramirez, 42, said “our church is our home.” Their church is in Viera. A huge original abstract painting of the crucifixion printed on a background of family Bible pages done by a friend adorns the wall of their home and sets the tone for her family life. She, her stay-at-home husband Antonio (Tony), 43, and their four children ranging in age from 11 to 17 are active at St. John the Evangelist Catholic Community in Viera. They moved to Brevard County from Illinois two years ago. Joy was born in Puerto Rico and raised in South Florida, Tony in Chicago. “It’s a whole lot easier not to be a faithful Christian. The world is so selfish with a me culture,” she said. The active couple brought ministries from the Midwest to their parish, including Compass, a sixweek class about Christian financial stewardship. As the chief financial officer of a government-managed health plan based in midtown Manhattan, Joy suggests a fiscal system based on scripture. “We cover budgeting, needs versus wants, how to be faithful stewards and with abundance, how can we help others to be spiritually wealthy,” she said. Joy and Tony met at an interGreek event while attending adjoining Illinois colleges and married in 2007. “It was important for my spouse to be Catholic,” Joy said, since she was active as a child singing in the church choir and later conducting that group and at the college Catholic Center. Recently, Tony was in Orlando for Kairos Ministry, serving imprisoned teens. They were also involved in the separate men’s and women’s Christ Renews His Parish retreats at their church. As a family, they enjoy going on walks around the neighborhood with Yorkies Poppy and Foxy, Christian movies both at home and at a nearby theater, swimming at the clubhouse pool and frequent

vacations. The family mainly eats at home, cooking healthy meals together. They spent the summer in New York City, where Joy makes year-round monthly trips to her office. “We’re all very busy and involved in a lot of things,” said Alyssa, 17, a senior, before bounding off for ballroom dancing. Sofia, 14, said a recent trip to Puerto Rico gave her a chance to “learn more about my

culture, like dance.” Gabriel, 15, hopes to major in astrophysics. “I like everything space,” he said. Melia, 11, loves playing a Harry Potter trivia game with the family. “I also like to make snickerdoodles,” she said, and to groan at her father’s corny dad jokes. Hawks focused on making it back-to-back state titles BY CARL KOTALA

The Viera High School boys soccer team spent three years chasing the Class 6A state championship. Now that they’ve got it, they’re not looking back. They’re hungry for another. So much so that senior goalkeeper Alvey Kaufman, who proudly displayed the championship gold he won last season, has put it all away. “I don’t want to look at it,” Kaufman said. “Last year’s history. We’ve got to move onto what’s in front of us now. “Of course, we know we have the team and players to get back to where we were last year, but last year doesn’t mean anything right now. All the focus is on this year.” Having 15 seniors will certainly help in terms of maturity and experience. That’s especially true with this year’s group, which includes Kaufman and last year’s Gatorade Florida Boys Soccer Player of the Year Max May coming back.

There’s no question the Hawks are certainly loaded again despite having to replace four key starters from last year’s team. An impact transfer and several players returning from injury will certainly help. It all starts with Kaufman in goal and senior veterans Jake Brown and Jake Medina at center back. Matt Murtha,

who missed much of last season with an injury, is healthy again and playing right back. With Alex Canlas out until at least the Thanksgiving break, junior Xavier Jackson has been starting and, by all accounts, doing a solid job. Senior newcomer Aiden Gates is the center midfielder with Alex Bennett

and Gio Carneiro in front of him and May and Mikkel Jensen on the outside. Peyton Bala, who missed the early part of last season with an injury, is up top and already having success. Viera was off to a 3-0 start and had outscored its opponents 16-0. Three years ago, Viera made it to the state

semifinals. Two years ago, the Hawks made the state final and lost. Then came last year’s magical 20-0-1 season. Winning another title won’t be easy by any stretch, but the Hawks have definitely not lost their taste for gold. “I think it’s the hunger to continue to pursue greatness,” Viera coach Nick Robinson said. “We want to make sure that hunger and desire is always there to get better. I think going back-to-back sometimes is harder than doing it the first time for that reason you’ve always got that target on your back. … Teams want to beat the state champ every game. “That’s the challenge. We want to continue creating history. I always place that challenge on the group. No (Brevard County) boys side has ever gone back-to-back. “We have that opportunity now to do something no other boys team has done before.” VV

Holy Trinity making adjustments that will pay off down the road BY CARL KOTALA Holy Trinity Episcopal Academy may not be the biggest school in Brevard County, but just taking a look at the Tigers’ girls soccer schedule tells you they’re not afraid to take on the bigger schools. “We’re a big little school,” coach Taylor Pitts said. “We may not win every game, but we can certainly go and compete with anybody on any given night. “It’s good for us. It helps in the rankings, with the way they do districts and things like that.” It was after playing a preseason game against Viera that the Tigers realized

they needed to switch to a new formation to adjust to the players they have on this year’s team. “The new shape is a 5-3-1. We’re a lot more defensive,” senior Kaleigh Smith said. “Ava Knight and I are on the outside, so we have to do a lot of running up and down. Once we win it, we try to play it up through the middle and then up and out wide for me and Ava to run onto and try to get a cross to counter on.” That’s not the only thing that’s new for the Tigers, who are also relying on players in new spots or responsibilities following the graduation of key players like Averie Schweitzer and Erin Sherden, who walked on at Clemson.

Lani Watt has taken on more of a leadership role on defense, while Catherine McCarthy has moved from defender to midfield. Smith and Knight are being asked to cover plenty of ground on the wings with Greer Reynolds and Cailyn Easton also providing offense. Other key players include Charna Black; Julianna Balda; Evie Flickinger; Julianna Pedicini; Annabel Walter and Virginia Lacey. One of the biggest changes is in goal, where the Tigers now have three keepers they can rely on — Brooke Ellingson; Adeline Eggers and

Seven Viera students receive prestigious All-State Band selections BY CARL KOTALA

When Nick Grey decided to pick up a musical instrument, there was no question which one he would choose. “I have been playing the French horn since seventh grade,” the Viera High School senior wrote in an email. “I began playing the French horn because my father plays it, and I have always loved its sound.” The judges who select students for Florida’s All-State Band must like it, too. At least, the way Grey plays it. For the fourth straight year, Grey has been selected to represent Viera as part of the All-State Ensemble which is scheduled to perform at the Florida Music Educators Association Conference, which runs from Jan. 11 to 13 at the Tampa Convention Center. Grey, who is also Viera’s band captain, was selected to play in the 11-12 (grades) Symphonic Band along with Matthew Brandt (percussion); Deven Miller (trombone) and

Marcus Palermo (bassoon). Neil Ghosh was selected for the Honors String Orchestra while Cody Hale (clarinet) and Jack Marden (percussion) will play in the 11-12 Symphonic Orchestra. “I am ecstatic to have won the opportunity to participate in the prestigious All-State Conference again this year,” Grey wrote. “… The fact that Viera High School has seven students attending this year is a tribute to our outstanding instrumental music program under the direction of Mr. (Nick) Eggen and Ms. (Maria) Dix.” The audition process to be selected for All-State Band is an arduous, months-long process. As Grey described, students from across the state try out via live recorded auditions that are comprised of preassigned lyrical and technical etudes, scales and sight readings. Those performances are then adjudicated by university professors and other

professional musicians. “We cannot speak highly enough of the work ethic and commitment all our students have made, especially these students. We wish them all

Additionally, Grey said Viera’s Wind Ensemble auditioned and won an invitation to perform as one of the featured bands at this year’s FMEA Conference. Grey can’t wait to perform in Tampa again. “Participating in an All-State Ensemble is an incredible experience because some of the most dedicated and talented students from across the state come together to perform challenging and fulfilling literature under the skillful leadership of renowned clinicians/ conductors in the United States,” he wrote. “Three days of intense rehearsals culminate in powerful concerts, which always leave a lasting impression on both the audience and musicians.” Grey plans to study music in college. “Ultimately, music will always be a part of my life as I will continue to play my French horn in any ensemble that will welcome me,” he wrote. Named to All-State Choir ‘truly an honor’ for Viera students BY CARL KOTALA It’s not the first time Viera High School’s Anderson Law has been selected to Florida’s AllState Choir, but this time, it has a little extra meaning. “Having gone twice before, it is really special to me that I get to go my senior year,” Law wrote in an email. “The process to get into All-State is a long and difficult process, so to be able to pass and go for one last time it is truly an honor. “Also, to be one of (Viera Choral director) Mr. (Michael) Coppola’s first students to go as he starts at VHS is a huge honor.” Law and Sofia Kendall were both selected as part of the All-State concert choir. Other Hawks who were honored include Sophia Brandt and Lauren Orr, who were named to the All-State Women’s choir. Beau Mattessich was chosen for the All-State Men’s choir. “After a very rigorous three-step audition process, these outstanding vocal

musicians were ranked and selected to perform with the top choir students from across the state,” Coppola wrote in an email. “Their dedication and talent is noteworthy and will result in one of the best experiences of their high school career.” Law, who was named All-State in eighth grade and as a junior, described a multi-pronged selection process that begins with a music theory test requiring students to get a score of at least 70 percent. That is followed by five sight reading exercises that get increasingly harder. To pass that level, one must get 10 measures correct in terms of notes and tempo. In the final part of the audition, students receive music and sing certain excerpts. Those selected to the AllState Choir will perform at the Florida Music Educators Conference, which is set for Jan. 11 to 14 at the Tampa Convention Center. “I love the All-State experience,” Law wrote. “To

Book helps children deal with the loss of a parent “I was so sad and angry after her passing. I kept saying to myself, what can I do to honor my mother?”

BY NANETTE HEBDIGE The journey dealing with the pain of losing a loved one was a long one for Kris Nulf. It inspired her to write her first children’s book in which she took a sensitive approach to help children cope with the loss of a parent by addressing their emotions and offering a message of hope. “Above The Clouds” focuses on her own experience of losing her mom, who battled a rare blood cancer and passed away in June of last year. Aimed at ages 5 to 7 years and written in poetry format with 23 illustrated pages, the book also includes some healthy options in her epilogue that children can explore to help get through the challenging process. “I was so sad and angry

By luck, I walked into one of my favorite stores at The Avenue and carried on a conversation with the clerk who said that she had graphic (art) experience,” Nulf said. “I was blessed to find Carrie Knox, because her illustrations are amazing and bring my book to life.” Originally from Maryland, Nulf has been in Brevard County since 1997 and lives with her husband Michael in Rockledge. “Above the Clouds” will be available on Dec. 21 through Amazon, Barnes and Noble and BooksA-Million, among other vendors. BY JASMINE BALL Children ranging from age 6 to 17 showcased their unique skills at the Brevard Children’s Business Fair in The Avenue Viera. The fair, sponsored by Holy Trinity Episcopal Academy, featured about 100 children-owned businesses lined up in a parking lot on Nov. 18. Passersby were greeted by various displays of handcrafted jewelry, homemade sweets, colorful artwork and in one tent, a live harmonica performance. The children proudly showed off their original creations and ideas while handling their own sales and marketing. One of the vendors, William, 10, sells tie-dyed T-shirts and original drill point paintings through his business, Tank Enterprises. He said he was inspired after he saw other similar clothes and interesting patterns. Also at 10 years old, Brooklyn sells key chains, bags, stuffed animals and other handmade creations through her business, Brooklyn's Crochet & More. Two years ago, she taught herself how to crochet by watching YouTube videos. Now, she can create her own patterns and has sold her creations at other craft fairs. “I will have a successful fair if I see people happy with my products,” Brooklyn said. Brooklyn is not the only one hoping to put a smile on people’s faces. Another

Another baker, Anjelina, 9, owns a business called Paw ‘Mazing Treats, where she sells homemade dog treats. “I learned what it takes to own my first business, and I had fun doing it,” Anjelina Garcia said. The fair helped teach these children to explore their creative talent and gain hands-on experience in a fun, challenging environment. At the end of the event, the organizers of the fair announced the winners. The Most Passionate Entrepreneur Award went to Youth Founders Network, a business that teaches

entrepreneurship. Florida Flamingo Floss won the Highest Business Potential Award, while NOeLECTRO won the Most Original Business Idea Award. For the grand prize, The Bohemian Cowgirl won the Best in Show Award. The Bohemian cowgirl is owned by Amelia, 16, who creates macrame key chains, bags, wall hangers and more. “I saw a pic one day that was so cool and I thought I should pick it up,” Amelia said. She has never won at the business fair before, but her hard work has finally paid off. From tiedyed T-shirts to homemade sweets, these young minds displayed creativity, passion and dedication. The fair not only celebrated their accomplishments, but also underscored the power of youth innovation. VV

Twelve children have homes for the holidays — and forever BY BETTY PORTER Brevard Family Partnership, a foster care and adoption agency, in cooperation with other local agencies hosted a Celebration of Adoption ceremony at the USSSA Space Coast Complex Nov. 13 at which 12 children were adopted into 10 Brevard County family homes. This was the fourth consecutive year that adoptions in November were formalized and celebrated at USSSA Space Coast Complex. “Adoptions take place every month at the courthouse, but to bring recognition to November being National Adoption Month nationwide, we celebrated by having the November adoptions take place in a public setting, and Space Coast Stadium is such a perfect place for it,” said Phil Scarpelli, the president and CEO of Brevard Family Partnership. At the end of the ceremony at which families have formalized the adoption of their children, they run the bases at the USSSA Space Coast Complex and a former Major League Baseball spring training stadium to signify a forever home run. Among the families participating were Neal Julien and Valerie Ryan of Merritt Island, who adopted Oakley Patrick Ryan, who

will be 2 years old this month. “As we ran the bases, our emotions were high that the adoption was finalized. We were relieved that the adoption process was over, and felt joy that Oakley is now fully and permanently in our care,” Neal Julien said. “We have so much gratitude to all of the agencies involved. "Oakley is the first and only child in our home. We got Oakley when he was six days old, and we worked with the Brevard Family Partnership and the Guardian ad Litem program from the beginning with the intention of doing what was best for him. When it became clear that adoption was the best path forward, we embraced the idea and did everything required to make it happen.” The first step was becoming registered as a Level 1 foster care home, which involved background checks and home inspections. This was renewed a year later, at which time adoption was in the picture. Another series

Once this was completed, the adoption application was submitted to the court and approved in about 90 days at the ceremony at the stadium on Nov. 13. “Throughout the process, we were visited at least monthly by DCF caseworkers and the Guardian ad Litem, and both looked out for his welfare. This is our first child and assistance from all of the agencies involved in his care was invaluable. It was a very positive experience,” Julien said “Oakley is a very good boy. We had no idea of what to expect when we got him home from the hospital, but once the first few months were under our belt and we got our work and sleep schedules in order, it was pretty easy. Everyone is amazed that at about 6 months old he was sleeping through the night. "He loves to eat. We cook almost all our meals and I am happy to say he eats almost everything we present to him — oatmeal, scrambled eggs, curried

chicken, broccoli, chickpeas, pancakes, anything. And he loves fresh fruit — blueberries, apple, banana, mango, raspberries, whatever is in season.” Palm Bay residents Ray and Bonnie Ferguson have adopted six times, a total of seven adopted children (one set of twins). At the Nov. 13 ceremony, they officially added 18-month-old Hazel to their family. “We adopted our first two, Oliver and Evelyn, in 2017. Evelyn (Evie) had a life-limiting condition and passed away soon after her adoption. We adopted our twins, Aaron and Ada, in 2018, then Michael in 2019, Jireh (Jerry) in 2022, and Hazel this past Monday,” Bonnie said. “Hazel is little, but her personality is starting to really shine through. She is happiest when someone is playing with her, and there is no shortage of siblings for her to play with. They argue over who gets to play with her next.” Ray and Bonnie Ferguson have been married for almost 27 years and have six

biological and seven adopted children. They have been foster parents for about a decade, and have fostered more than 30 children — primarily children who are medically fragile. The family recently moved to a house in Palm Bay with an acre of land that they hope to fill with a garden and chickens, if they can find the time, they said. “The Ferguson’s are a ray of sunshine in my journey,” Scarpelli said. “In addition to their biological children, they welcome foster children into their home and have adopted seven.” Significant at this year’s ceremony was the double adoptions by two families. “It’s not uncommon for sibling groups to be adopted into a single family,” Scarpelli said. “However, those interested in adopting sibling groups remain much in need. It’s such an honor to celebrate the unification of children with forever families.” Brevard Family Partnership is on track to have 165 adoptions finalized this fiscal year. Originally called Community Based Care of Brevard, the nonprofit will celebrate its 20th year of serving in Brevard next year. More information can be found on its website brevardfp.org. VV

Family, faith and dedication led to new medical practice BY R. NORMAN MOODY

A medical practice that involves all family members, including the extended family, deserves a name that reflects those values — Ohana. Katie and Victor Shouppe said they chose the name Ohana Family Practice for their new venture because “Ohana means family … family means nobody gets left behind.” Ohana, at 8255 N. Wickham Road, Suite 100, will hold its ribbon cutting from 11 a.m. to 1 p.m. Saturday, Dec. 2. The practice will begin receiving patients on Dec. 12.

“Our whole journey has been based on faith,” said Katie Shouppe, the co-owner of the practice with her husband Victor. Shouppe said they chose to open the practice in Viera in part because they learned that Viera derives from Slavic and means faith. Shouppe is a nurse practitioner and has worked for several years with Denise

Marburger, who will join the new practice. “We saw the continuing need of patients coming in,” Katie Shouppe said. “It all came together. We wanted something different.” Other staff will include Shouppe’s daughters Jasmine, who is studying nursing, and Isabella, who will work in the front office. Victor Shouppe, an electrical engineer, is the practice manager. “It’s been a lot of work to get here,” Victor Shouppe said. “We’re excited that we’re about to open.” Katie Shouppe is a family nurse practitioner, who completed her graduate studies with honors in 2017 at Florida Atlantic University’s Christine Lynn College of Nursing. She has provided humanitarian medical care on trips to Guatemala and Honduras. The family has lived in Brevard County for more than 35 years. The hours of operation for Ohana Family Practice will be 7 a.m. to 7 p.m. Monday through Friday and 8 a.m. to 5 p.m. on Saturday. It is closed on Sunday. A new small business cafe will open its doors this month in Rockledge, aiming to create a social space for every member of the family. Gather Play Cafe is an indoor play space for children up to 6 years old. It includes a small cafe and an event room. Owner Camille Geoghgen said that it will be a space for parents to relax and socialize with one another while their children freely use the play space. She described her cafe as an inside park. “It’s always so hot outside, so this will be another option for parents,” Geoghgen said. After seeing a similar cafe concept on Instagram, Geoghgen was inspired to start her own business in the local area. With two children of her own, Geoghgen

This motivated her to start one in Brevard County. She has been working for the past four years to bring her vision to life. “I’m excited to open this cafe with my family because it will be a space for mothers to hang out,” Geoghgen said. The cafe will offer hot and cold coffee, pastries, chips, fruit and other baked goods. Geoghgen expressed how she would love to partner with local bakeries as well. The normal business hours will be 10 a.m. to 4 p.m. from Tuesday to Saturday, and 12 p.m. to 4 p.m. on Sunday. On weekends, she hopes to use the event room to host birthday parties and other celebrations. VV

Piesanos expands, brings popular Italian fare to Viera BY NANETTE HEBDIGE

Eager pizza foodies should enjoy the new Piesanos Stone Fired Pizza restaurant scheduled to open in Viera in 2024. Piesanos offers specialty pizzas, calzones and pastas served with hot-baked rolls to start. And for those with a sweet tooth, there is plenty

of spumoni and cannoli, which are its most popular choices. The restaurants have dine-in and its takeout has a dedicated entrance for easy pick-up orders. “Guests and friends had been asking us to find a location in (Viera) and we are very excited that we can continue our growth of Piesanos Stone Fired

Pizza in (Viera),” said Jerry Roberts, a co-owner of Piesanos. In 2024, it will celebrate 15 years since the brand was founded. Its new restaurant in Viera will be 4,800 square feet inside plus a covered patio. It will offer the typical décor with a few new added touches. Roberts and other founding partners came together with experience to start Piesanos. Joel Mills and his wife Rebecca moved to Florida in 1994 and opened Gator Pizza in 2000, offering it by the slice at the University of Florida, where Mills honed his skills as a pizza maker. The groundwork was laid when restaurateurs Michael and Melissa Akey joined the team, bringing their fullservice restaurant skills. It all created the framework and their flagship Piesanos Stone Fired Pizza opened in

Gainesville in 2009. “We believe that quality is at the heart of great experiences and at Piesanos, you’ll taste the passion and pride that makes that possible,” Roberts said. Piesanos is also involved in giving back and to being committed in its communities. It raised $2,500 for the Manatee County Habitat for Humanity during a grand opening in Bradenton this year. They have also been providing support for the construction of affordable housing for families in need. Since its inaugural opening in 2009, Piesanos has become a popular Italian franchise in Florida with 11 locations throughout the state. Its new location will be at 7655 Stadium Parkway in Addison Center. VV

Business Scoop Down syndrome’s Buddy Walk hailed a success BY R. NORMAN MOODY

The Down Syndrome Association of Brevard’s 21st Buddy Walk brought together 1,200 people to the event last month to celebrate, educate and include those with Down syndrome. The Association called the event a monumental success, raising more than

$146,000, which is its biggest fundraiser of the year. The funds got to help individuals with Down syndrome to rise to their full potential by providing them with support, resources and connection to the community. The Buddy Walk, held Nov. 4 on the grounds of Calvary Chapel in Viera, had the support of 81

sponsors, 50 volunteers and 60 teams, in addition to the hundreds of families and supporters. There also was entertainment, a bounce house and a festive atmosphere. The Association’s Buddy Walks have been held nationwide since 1995. It started in Brevard County in 2002. VV

Christmas ham — an ancient Yuletide tradition The Christmas ham, a prototypical Dickensian Yuletide entrée, has been a part of Christmas tradition as old as time. It’s been around for more that 15 centuries, before Christian times and it’s said to have its roots in ancient pagan rituals, as wild boar was a popular choice for feasts

during Yuletide celebrations — a festival honoring the mythical wild hunt. While modern-day pork is a far cry from wild boar, the tradition evolved over the centuries to the current incarnation of hams, whether it be a brined ham, a dry-cured ham or an uncooked ham, it's safe to say it’s a holiday

favorite. In fact, much of the ancient Yuletide tradition is reflected in modern Christmas celebrations. With the 12 Days of Christmas, Yuletide was a 12-day, midwinter feast associated with the winter solstice. Even the Yule Log cake reflects the original Yule

Log, a giant log that burned for the entire 12 days of Yuletide. And it’s even mentioned in the classic carol, “Deck the Halls?” Its lyrics read, “Troll the ancient Yuletide carol,” and “See the blazing Yule before us.” Americans buy about 318 million pounds of ham for the holidays because it feels

Bring out the ham from the refrigerator 1 hour before cooking. Preheat the oven to 325 degrees. Coat a baking pan with cooking spray. Add the butter, brown sugar, maple syrup, apple cider and spices to a pot. Bring to a simmer and cook for five to seven minutes or until the glaze is syrupy. Place the ham in the pan and pour half of the glaze over it. Cover the ham with foil. Reserve the remaining glaze for later use. Bake the ham for 2½ hours. Uncover the ham. Pour the remaining glaze over the ham. If the glaze has started to harden, you can microwave it for a few seconds to loosen it back up. Increase the oven temperature to 400 degrees. Place the ham, uncovered, in the oven. Bake for another 15 to 20 minutes or until the glaze is caramelized and browned. Transfer the ham to a serving platter and garnish with fresh herbs, orange slices and cranberries. Spoon pan drippings over the ham and serve.

Tumpeng Nasi Kuning — traditional Indonesian dish

BY FIBRIANI MULYANINGSIH Tumpeng yellow rice is a mandatory menu item at every Indonesian traditional event or religious ceremony and as a special dish in celebrations such as birthdays and promotions. Tumpeng is shaped like a mountain with yellow, which symbolizes a pile or mountain of gold. It is expected to bring a lot of blessings, wealth and prosperity. Tumpeng usually can feed 10 to 50 people with a minimum of seven side dishes. The top tier cut of tumpeng is usually given to the honorable/senior person in the community as a token of respect. Serves four people

Mountain of yellow rice 1 pound rice 600 ml water 200 ml coconut cream (1 box of KARA @200ml) 3 pieces Kaffir limes 5 grams turmeric powder 1 cm smashed galangal 2 pcs smashed lemon grass 1 piece Pandan leaves 3 bay leaves ½ cm smashed fresh ginger ½ tsp. salt to taste.

Bring to a boil: water, coconut cream, kaffir lime leaves, turmeric, galangal, lemon grass, pandan leaves, bay leaf, ginger and salt. Mix the rice and boiled coconut cream into the pot. Ratio 1 to 2. Cook in a rice cooker/pot until fluffy.

Fried egg noodle 1 bag boiled egg noodle 2 tbsp sweet soy sauce 1 tbsp oil

Coquito

1 egg (scrambled) 200 grams of chicken cut into cubes 10 pieces baby carrot cut like matches. Grinding seasoning 3 cloves garlic 5 pieces shallot 2 pieces candlenut ½ tsp pepper 1 tsp salt

Boil egg noodle, drain and soak with 2 tbsp sweet soy sauce and 1 tbsp oil. Sautee all the mashed seasoning until it smells good, add cubes of chicken until cooked and add vegetables. Add scrambled eggs and noodles and stir it for a few minutes. Garnish with fried onion.

1 can 15 oz. cream of coconut 1 can 13.5 oz. coconut milk 1 can 14 oz. condensed milk 2 cans 12 oz evaporated milk 16 oz. white rum — preferably Puerto Rican rum

In a big pot mix all the ingredients, except the rum. Mix well with a mixer. Let it rest for about five minutes then add the rum. Mix the 16 ounces of rum with a whisker. Pour into a bottle and refrigerate for six to eight hours. You can add cinnamon if you like. This recipe makes 2.5 liters of coquito.

This cake was our family's favorite dessert. My mother baked it in a jelly roll pan to feed our large family. She passed the pan and recipe down to me, and both have been used many times. My daughter and granddaughters often request this cake. The jelly roll pan is about 50 years old and has been used to make many cakes and more importantly, many memories. VV

MOM'S CHOCOLATE CAKE 2 cups self-rising flour 1/4 cup cocoa 2 cups sugar To the cake batter add: 1/2 tsp baking soda 1/2 cup buttermilk 1 cup water 2 eggs, slightly beaten 2 sticks butter 1 tsp vanilla flavoring, then beat lightly Mix flour, sugar, baking soda together in a bowl. Put water, butter and cocoa in a saucepan. Over medium heat, stir until butter is melted and mixture is smooth. Remove from heat just as it starts to boil. Pour this hot liquid over the dry ingredients and beat until smooth. Pour into a large, greased baking pan. I use a jelly roll pan (15 ½ inches by 10 1/2 inches). Bake at 350 degrees for about 20 minutes or until the top springs back when lightly touched. Make the frosting and immediately pour over the hot cake. FROSTING 1/4 cup cocoa 1 stick butter 1 tsp vanilla flavoring 1/4 cup + 2 Tbsp. milk Powdered sugar, up to 1 lb. Put butter, milk, cocoa and vanilla flavoring in a saucepan. Heat until melted while stirring constantly. Just when it begins to boil, remove from the heat. Add about half of the powdered sugar and beat with a mixer. Add more powdered sugar as needed to make a thick, pourable frosting. Immediately pour over the cake in the pan. It will set up as it cools.

Creative Group Doctor gave legendary support to Space Coast Volunteers Bluewater in Medicine

Dr. David Lane Jones has put away his stethoscope after helping Space Coast Volunteers in Medicine for the past 10 years when most physicians already would have long retired. The University of Michigan Medical School graduate donated more than 20,000 hours of patient care and numerous hours off the clock from home during his final stint. “In medicine, you’re not just treating the patient in front of you,’’ Jones said. “Often, you are treating the entire family. That is the true definition of family medicine.’’

Retirement isn’t for everyone, but it does allow a little more flexibility. After two years at The Florida Department of Health, a large need blossomed next door at Space Coast Volunteers in Medicine. “The brightest stars are those who shine for the benefit of others and Dr. David Jones was truly one of the brightest stars in Brevard County,” said Laurie Stoeckert, the executive director at SCVIM. “He would go to the ends of the earth for his patients, even giving money out of his own pocket to those that needed a meal. He’s truly the kindest and most compassionate man.”

Space Coast Volunteers in Medicine, a free primary and gynecology healthcare clinic located inside of the Florida Department of Health in Viera, was created in 2011. It helps individuals who do not have health insurance, Medicare or Medicaid. “We have about 64 volunteers who provide their time and services without wages, which is wonderful for the clinic and for our patients because without them we wouldn’t be able to treat our patients,” Stoeckert said. After a 20-year career in family and emergency medicine, Jones traveled and worked in the

'Tis the season to rethink, reuse, minimize waste Cinnamon, pumpkins and casseroles signal the start of the holiday season. Fall decorations begin to make their way out of the attic while we prepare for one of the best times of the year when family and friends gather, communities unite to benefit causes and we look back to reminisce about events from a year that is coming to a close. Despite the heartwarming sentiment that the season unfolds, the holidays also reveal an ugly side: a 25% increase in waste sent to landfills. But this trend can be broken if you rethink what you do and the way you do them. Waste affects not only our communities but also our wildlife and the habitat they need to survive, as the Center for Biological Diversity points out. Minimize the impact on wildlife during the holidays by switching to alternative gifts and Earth-friendly traditions. For gifts, switch to giving the gift of time, experiences or skills; buying second-hand, sustainable or made-from-recycling gifts; buying from small, local businesses; making handmade gifts; and donating to a nonprofit in the name of others. If buying gifts, make the wrapping part of the gift itself since wrapping paper is not recyclable. Some options to consider are reusable bags, tote bags, baskets, mason jars, old maps, newspaper, brown packing paper, music sheets, magazine pages, fabric, kitchen towels, reusable boxes, clay pots, tins or even an old T-shirt. There are so many great ideas out there that, besides being eco-friendly, they can change your gift wrapping from a chore to a fun activity for the family. That is also true for decorations. Pine cones and branches combined with homemade wreaths and LED lights make a good combination. Toilet paper rolls can be made into snowflakes, scrap paper and old ribbons into bows, and old holiday cards mosaicked into a festive panel or tree ornaments.

U.S.1 in Rockledge. Pumpkins can be added to your compost bin if you have one, or cut into small pieces and buried in your yard to enrich the soil. Real trees without decorations or lights can be placed at the curb with your yard waste — they will become mulch.
