Couples will renew their vows at Expo BY JEFF NAVIN Couples, all married for more than 25 years, will renew their vows on Valentine’s Day, Feb. 14, at the All You Need Is Love Senior Expo and Valentine’s Day Party at the Nyami Nyami River Lodge in front of the Brevard Zoo. Entrance to the Zoo is not included. The free event includes exhibits of interest for boomers and seniors, whether single or a couple, entertainment and, of course, a wedding vow renewal and celebration with cake, a champagne toast and digital photos for the couples renewing their vows. Always known for his sense of humor, it was quick thinking on his feet that led to Steven Marinaro meeting his future wife, Marguerite. “He came up to me and pretended that he knew me,’’ said Marinaro, who recalled the night at Cheers nightclub on Dec. 26, 1978 in North Babylon, Long Island as if it was yesterday. “I was out with another gentleman that night. We went over to talk by the (pay) telephones and exchanged numbers. I broke up with the other gentleman. I hated that he always wanted to take me out with all of his other friends.’’

Rough first date fails to derail eventual romance BY WENDY SCHEURING A fun boat ride on the Indian River Lagoon seemed like a perfect first date. Liane Rensing had never been on a boat and suddenly became seasick to the point where she couldn’t see. This could have nipped the potential romance in the bud, but her future husband Chris Rensing took care of her. “Her sea legs weren’t working,” Chris Rensing said. “So, the trip ended short. And since we were too far
away, I dropped her off on my family’s patio on Lansing Island with a note that said, ‘I left a lady on your patio and I’ll be back soon to get her.’ ” When he returned with the car, she seemed more stable and said she’d like to see him again. Liane Rensing said she had already taken a liking to Chris before their first date. “We met through a mutual friend,” she said. “I had a crush on Chris for a long time.” A native New Yorker,

She also prides herself in being a stay-athome mom to daughter Mila, 9, and son Miles, 7. Since Mila loves animals, the family often frequents the Brevard Zoo. They also have a map of all the community parks in Suntree and Viera, making it a point to visit a different park for
each outing. Every Christmas, the family decorates its home in order to raise funds for Nemours Children’s Hospital’s craniofacial team as daughter Mila was born with cleft palate. The family enjoys the Suntree/Viera area because it’s close to Disney and the airport. “We love to travel and to cruise,” Liane said. Over time, she was able to combat her seasickness for a cruise to the Bahamas where they were married in 2013. “I still have to take Dramamine,” she said. VV

His reactions aren’t spoken, but they’re visible. The fellowship and pure joy shows,” said his mother, Luann Malark of Titusville. At 6 p.m. Feb. 17, the equine therapy site in rural Cocoa will host the Buckaroo Ball, hoping to raise $35,000 to expand its services. There are currently 35 people, most of them children, on a waiting list. The event at the Space Coast Convention Center in Cocoa will feature cocktails,

Six local celebrities in inflatable costumes bid and race for bragging rights and trophies, including “horses’ behind” trophies for losers. Sheriff Wayne Ivey is the announcer. The cost is $75 per person. “We started 32 years ago in Grant, using a stall in someone’s backyard, two borrowed horses and six volunteers. Now, at our third location, we average 50 riders a week with four certified instructors,” said founder and executive director Pamela Rogan. She said riders from preschool to aging can improve cognitive, physical and emotional handicapping conditions. A member of the Professional Association of Therapeutic Horsemanship International, Harmony Farms can increase movement, muscle tone, verbalization and attention span with weekly lessons. Her students come privately or in groups from schools, adult facilities and programs. Rogan said riders use muscles they can’t use in wheelchairs and for autistic children in particular, riding

Lessons are from 9 a.m. to noon Monday, Wednesday and Saturday and from 4 to 6 p.m. Thursday. A 30-minute ride is generally with a lead trainer and volunteer on each side. Harmony operates year-round with summer camps in June and July. Private horse boarding also provides income. “We rely on volunteers, and since COVID, we’re down to 25. We need 35 or 40,” Rogan said. In addition to walking beside handicapped riders, volunteers give barn tours, clean stalls and groom, saddle and exercise the quarter horses. “It’s win-win for the horses and riders. You can see the smiles on the faces of not only the riders, but the trainers and volunteers,” Rogan said. Urban Prime’s beverage director has a talent for picking finest wines BY MIKE GAFFEY Jillian Jeffrey wanted to be a chef, but her talent in selecting top wines led her to another fulfilling career. As beverage director at Urban Prime Marketplace & Restaurant at 2435 Metfield Drive in Viera, the Suntree resident is in charge of selecting the new 300seat gourmet restaurant’s wine list for diners and keeping the wine cellar in its adjacent 4,500-square-foot marketplace stocked with fine wines from around the world. “I’ve been doing it for longer than I probably should say, like 20 years,” Jeffrey said. An Atlanta native who started her career in the hospitality industry with a small staffing business, Jeffrey landed a job with the Atlanta Fish Market in Buckhead, Georgia. Part of her intensive training program included a wine class. After a few shifts as a cook, Jeffrey realized she was more suited to be a wine steward, or sommelier. “I have a really good palate,” Jeffrey said. “So essentially to get on the floor full time back then you had to pass this really intense multi-week wine course that ended with a blind tasting. I got certified. I was good at it and it’s just what I’ve done ever since.” After moving to Brevard County 11 years ago, Jeffrey worked at several restaurants, including
Amici’s Italian Restaurant & Pizzeria and The Chef’s Table, before applying at Urban Prime in May. Owner and noted Brevard chef Ercan Ekinci hired her after a short interview. “He’s super passionate,” Jeffrey said of Ekinci. “The project is so intense and based on his lifelong dream. You just get swept up in it.” Ekinci said Jeffrey is a “very dedicated, very special person.” “I’ve been in the business for 41 years and there are a handful of people like her,” he said. “She’s always willing to do more. She’s been outstanding for us and she’s created a lot of new business, too. She’s very personable.” Since the $10 million restaurant and gourmet market opened in October, Jeffrey has hand picked nearly 900 brands of wine that fill Urban Prime’s 7,000-bottle wine cellar. “We have wine from Macedonia; I have wine from Baja, from really interesting places and it's great to be able to offer that,” she said. “Of course, we do have representations of brands that you can find in other places. But we work on being very competitive with those stores and keeping it to the same price or getting a better price when we can.” Urban Prime also offers 32 selections on its state-ofthe-art Enomatic machines, which are accessed by a prepaid card. And that would probably carry me through.” Reaction from the

Viera’s Hoppe sets sights on winning state wrestling championship BY CARL KOTALA Emma Hoppe may only be in her second year of wrestling, but the Viera High School junior already has her eyes on the ultimate prize. “Emma’s goal is the state championship,” Viera coach Jason Custer said. “She hasn’t minced words on that.” Given her dedication and success in her new-found sport, there’s no reason to think Hoppe can’t pull it off. Kissimmee, it’s already been quite a year for the Viera girls wrestling team as a whole. After having just four girls on last year’s roster — one of whom was injured and missed the entire season — the Hawks have 12 girls out for wrestling this season. They also recently competed in what Custer said was the first-ever girls dual meet in Brevard County
history. Viera beat Space Coast 40-32. “It means a lot, especially because we got the win,” Hoppe said. “It’s setting the tone for what we want to see for our program in the future; getting more of those dual meets, getting more girls interested in wrestling. “It’s pretty cool to see that there’s that many girls interested in doing it.” Hoppe, who is ranked

Viera High School junior Emma Hoppe has only been wrestling for two years, but she is 24-1 this season and ranked No. 5 in the state at 135 pounds. She has made it clear her goal this season is to win a state title.

Other wrestlers for Viera this season include freshman Zahar Zouaki (100 pounds); senior Tyara Pinela (100); sophomore Jadyn Delos Santos (100); senior Jahnaya Roman (115); sophomore Lillian Straessley (130); junior Hailey Cullingford (140) and sophomore Kodibeth Bates (145). “The girls we have are really engaged,” Custer said. “We’re looking good there.” Hoppe, who finished fifth
in the state last season, has surprised herself in how quickly she has taken to the sport. “I would have never thought I’d be wrestling right now,” Hoppe said. “At all. Viera football to play in new district, classification next season BY CARL KOTALA The Viera High football team will be playing in a new district and classification for the next two seasons. And there will definitely be some new challenges ahead. The FHSAA announced the 2024-25 and 2025-26 classifications in December, and, in doing so, returned to a more traditional format. Under the previous two seasons, there were four classifications split into two factions — Suburban and Metro — that produced two different state champions for each class. Starting next season, the format will once again return to seven single classifications based on student enrollment
numbers. Viera, which competed in Class 4S the past two years with Heritage, Melbourne and Harmony, will now be in Class 6A, District 5. The Hawks’ new district opponents are Melbourne, Osceola (Kissimmee) and St. Cloud. Of those four teams, Osceola was the only one that made the playoffs last season. The Kowboys, traditionally one of the top teams in Central Florida, would have to be considered one of the favorites to win the district, although with Viera returning a large number of seniors that already have two years of varsity experience, the Hawks shouldn’t be counted out, either. “I think we’re going to be

We feel our program’s being built and moving in the right direction.” While the Hawks are fine with the new district setup, not every school in the state was happy with the initial proposal, particularly given that some teams will be playing in districts out of their area. Freedom High from Orlando was originally put into Viera’s district, but petitioned the FHSAA to change classifications and moved up to Class 7A, where it will be in a district with other Orlando teams. Still, there were some puzzling changes, such as in Class 2A, District 6 which now consists of defending state champion Cocoa, Astronaut and … well, that’s it. The FHSAA was also

Viera is coming off a 5-4 season, its first winning campaign since 2020, and will be looking to get back into the postseason. “The kids are excited,” Gulla said. “They know the district got re-done. NORMAN MOODY Students at Ralph Williams Elementary School in Rockledge gathered on the lawn as the Cocoa Rockledge Garden Club and city officials dedicated a hickory tree in celebration of Florida Arbor Day. “We heard you guys needed some shade on your playground,” CocoaRockledge Garden Club President Cindy Griswold said to the students. She told the students, who helped to spread mulch around the tree, that 1 million trees were planted on the first Arbor Day in 1872 in Nebraska. In 1972, the Arbor Day Foundation was formed to celebrate the 100th anniversary of Arbor Day and to continue the mission of the treeplanters’ holiday. The hickory tree is native to Florida, which makes it easy to grow and it will eventually provide lots of shade on the
school’s playground. “Bugs don’t like to eat the wood,” said Laura Ennis, the Arbor Day chair for the Cocoa-Rockledge Garden Club. “This tree is easy to take care of.” The Cocoa-Rockledge Garden Club, established in March 1927, is one of more than 150 garden clubs in Florida totaling 10,000 members. All the Florida clubs planted trees on or around Florida Arbor Day, Jan. 19. The Cocoa-Rockledge Club has planted trees elsewhere during Arbor Day, but this was the first time at a local school — Ralph Williams Elementary School. “It was great,” Ennis said. “I give a lot of credit to the principal.” Principal Susan Schroeder embraced the idea of planting the tree at the school. Rockledge Mayor Thomas Price issued a proclamation declaring Jan. 19 as Florida Arbor Day in Rockledge. VV

Viera High School senior running for school board in District 4 BY CARL KOTALA Max Madl believes he has a unique insight into the Brevard County School Board and how its decisions, actions and inactions affect the lives of real students. That’s why the 18-year-old Viera High School senior has decided to run for a seat on the board, representing District 4. “Being a current student has given me the advantage of knowing the issues firsthand,” Madl wrote in an email. “I walk the halls of Viera High School five days a week. I've seen what our students are struggling with inside and outside of the classroom and I know where they need support.” Madl, who has been attending school board meetings for the past two years, didn’t make this decision on a whim. He has been thinking about it for a while. “There were many different factors that prompted me to run,” Madl wrote. “For starters, the board never looks at how much students are affected by the policies they pass. “Another factor was the lack of mental health resources in our county. The majority of our schools are currently looking for social workers, but we are not paying a competitive salary for the position. Not having an individual on campus to handle mental health concerns prevents our students and staff from getting the support they may need.” Madl said he consulted with teachers, family and friends — even
those who disagree with him on some issues — before deciding to file. “To say the least, people were not shocked,” he wrote. “… The vast majority of those I told before I filed were thrilled because they knew that I know what is really going on inside of our schools today.” Madl, who is dual-enrolled at Eastern Florida State College, has not decided on where he will be attending college, but added if elected, “I can assure you I will be in the area and enrolled in college.” In addition to addressing mental health issues facing students, Madl believes the school board should spend less time bickering and more time doing its job. “In my opinion, the biggest challenge facing the school board right now is their reputation,” Madl wrote. “The board has become too political. I try to go to all of the meetings, or at least watch them online, and the one thing I will say is that they spend so much time arguing with each other that they lose sight of why they are there in the first place. “Our students and staff should not be political issues. The fighting over who is right and who is wrong is leaving a lasting impact on them. We need to do what is best for our students and faculty so they can grow and prosper.” VV

Construction on the $2.7 million project, funded by the federal American Rescue Plan Act, could be delayed because of an accumulation of rain in January. The cleanup work includes muck dredging and removal of dead vegetation to address environmental concerns and make the area safer for the public. There was no word about when the public would be able to enjoy the entire Wetlands. The partial opening and the full opening later will be for pedestrian and bicycle traffic only. The berm roads will remain closed to vehicle traffic, including golf carts. The roads were closed in 2021. For updated information, call the Viera Wetlands hotline at 321-255-4488. Anita Ingram, who created the Viera Wetlands Facebook Group, said she was pleased with the way things were progressing with the Wetlands. “We are so happy that the county is attentive and is accommodating the desires of the public to get this open,” Ingram said. New and different, Mochinut opening first store in Viera BY WENDY SCHEURING
Area residents were saddened when Maggie’s Ice Cream Shop closed its doors, but soon there will be a unique food establishment coming to the same location. Mochinut (pronounced Moe-Key-Nut) is scheduled to open Feb. 10 in the Shoppes at Baytree, with Mochi donuts, Boba Tea, and Korean-style hot dogs on the menu. Originated in Hawaii, it is a combination of American doughnuts and Japanese mochi.

The donuts are colorful fried rice flour concoctions, consisting of eight connected donut balls, the dough stretchy and chewy. Six to nine different flavors are available each week. “People are excited to see the Churro, Ube and Nutella flavors,” co-owner Joanna Moffatt said. Boba teas are made to order in clear can containers, spun in a machine that seals the lids. The brown sugar
and milk tea flavors are very popular right now, according to Moffatt. The Korean-style hot dogs served on a stick, cheese optional, are covered with “ramen, potato, hot Cheetos, takis, or crunch cereal,” savory or sweet. “I love everything Mochinut,” Suntree resident Maru Gonzalez wrote. “The donuts are delicious and different than regular donuts. The hot dogs are savory and awesome, and you can’t go wrong with milk tea bobas.” The Suntree location is family-owned and operated by Mary Castelli, her daughter Joanna Moffatt, and her nephew, Joseph Castelli, all originally from Rochester, New York. “Our family has always been entrepreneurs,” said Moffatt, who moved to Viera six years ago with her husband and children. “My mom was a snowbird and moved here this past year, wanting to bring our entrepreneurship skills to Florida. “We wanted to have a business that was new and different and fun, and we wanted to do it together. My mom’s goal is to continue her legacy and have something that her kids and grandkids can take over.”

Gonzalez said she was ecstatic about Mochinut coming to the Viera area. “First of all, I don’t need to drive an hour away,” she said. “It’s now five minutes away from my house. I also love the fact that it adds

Chefs bring their specialties to Viera food scene Passion for cooking often stems from the family.

path to preparing culinary delights for diners in Viera.
JAMEY THOMPSON Jamey Thompson, the executive chef and assistant food and beverage director at Hook and Eagle Tavern on the Viera East Golf Course, was inspired by his father, a NASA engineer, who competed in chili and gumbo cooking contests. Sadly, his father passed away when he was only 17 years old. Thompson went to college to study sound engineering, but reverted to his passion for cooking. His career began in Rockledge at Ruby Tuesday’s.

Business Scoop Anticipation building for The Crossings, the new Viera marketplace BY WENDY SCHEURING
The Crossings at Viera shopping center’s opening is still months away, but buildings will begin taking shape within weeks and should be seeing its first tenants by late 2024. Located at the intersection of Viera Boulevard and Star Rush Drive, the 20-plus acre marketplace will offer lots of green space with shady outdoor patio seating and tropical landscaping. “It provides a beautiful way to have lunch with a friend,” said Jeff Garrison, a principal partner in SJC Ventures, the developer based in Atlanta.

Now, when you drive past, you’ll see that the site has been cleared.
In about 45 days, buildings will be appearing around the project,” Garrison said. “It was a challenging time in commercial real estate. Lending was down 90% because of the federal interest rates,” he said. However, close proximity to the I-95 interchange was what clinched the deal for The Crossings. “Viera Boulevard provides easy access to the whole region. That was the real
turning point,” Garrison said. The center will feature several popular restaurants, such as Chicken Salad Chick, a fast-growing Southern-style chicken salad restaurant founded by stayat-home mom Stacy Brown, and Miller’s Ale House, established in 1988 in Jupiter, is a restaurant and sports bar. Other restaurants include Another Broken Egg Café, which offers Southern-style
breakfast, brunch and lunch fare. Perhaps more well-known are the fast food Panda Express, “a casual Chinese restaurant” and Jeremiah’s Italian Ice. Hand & Stone massage and facial spa is also set to be one of the plaza’s tenants. “We’re thrilled to be a part of the community and the growth of the Space Coast,” Garrison said. VV

Michelle Bork, a native of Ohio, has always been fascinated with Florida.
Love for Disney, passion for travel easily blends BY BETTY PORTER
Michelle Bork, a new resident of Viera, turned her passion for travel into a business. Bork moved in August to Viera from Ohio. “In 2017, I lost my husband to a heart attack,” she said. “In April 2022, I hired a private matchmaking service to find a boyfriend. They set me up on a blind date in Orlando and we hit it off. Then, in August 2023, after dropping off my youngest child at college, I moved in with my new boyfriend, whom I had met on that date.” The pair settled in Viera and are building a house here. “I absolutely love being so close to Disney World and to Port Canaveral,” said Bork, who has been a travel agent since 2013. During the past 11 years in the travel business, Bork has been on more than 20 cruises with various cruise lines, visited several countries at all-inclusive resorts with several different brands, taken an Amtrak train from Ohio to Colorado and conquered her fear of flying. “It all began for me in 2013, when the restaurant I owned was ready to close after being open for 10 years. I was looking for a new career path and happened to read a Facebook post from a former server who had worked at my restaurant in 2003 while he was in college. The Facebook post read: ‘Let me book your Disney travel.’ Since I am an avid Disney fan, I responded. Turns out the young man who had worked at my restaurant years ago, Adam Duckworth, was starting a travel agency called Travelmation (based on the word animation). He signed me as an agent in
January of 2013.” “When I started with Travelmation, I was more passionate about Walt Disney World than anyone I knew. I jumped into the travel agent role with a month-long trip to Florida, where I stayed in Orlando with my oldest daughter and her husband who themselves had been married at Disney World. I visited Walt Disney World daily, learning everything there was to know about the parks and resorts.” Bork had been a fan of Disney World since first visiting it in 1981 as a child when an aunt took her and her sister for their first trip there. “When I got married in 1989, Walt Disney World was the only place I wanted to go for my honeymoon,” she said. “On that trip, my husband and I committed to visit every year and did so for the next 27 years. We brought our kids, many friends and family with us over the years. We became Disney Vacation Club members in 1995 and watched as our kids got jobs and worked there. We had the most amazing wedding for our daughter right there at the Grand Floridian.” Bork said that since 2013, Travelmation has grown to more than 1,700 agents. Travelmation is an Earmarked Diamond producer with Disney Destinations; Diamond U-Preferred partner with Universal Parks and Resorts; and Partner of the Year with Royal Caribbean and Celebrity Cruise Lines. “Although our company is large, we keep a small, close-knit feel with much support, encouragement and positivity with our agents and clients. We focus on customer service and detail,” said Bork, who

Sea shells in all shapes, colors and sizes — some crafted into intricate figurines and large figures — were a big draw for the Space Coast Seashell Festival. The 44th annual festival, held Jan. 20 and 21 at the Eau Gallie Civic Center sponsored by the Astronaut Trail Seashell Club, brought in a reported record crowd. Volunteer greeter for the event, Dave Thornton, said he had never seen so many visitors to one of the festivals. “I was the greeter last year as well and the total was about 200 for both days,” he said. “This year, there were over 1,600 that came in the door by 11 a.m. Sunday and they are still pouring in.” Thornton and his wife, Elaine, were exhibitors at the event and have been since moving to Brevard County four years ago. “We love participating,” Dave Thonton said. “We’re among the folks that don’t want to be couch potatoes in retirement.” Thornton told visitors entering the exhibit about the distinct areas of the show, which included collectors with displays, vendors with items for sale, a middle
section of the room with members' displays and tables displaying awardwinning shell art. Sea shells from around the world in all shapes, sizes and colors were on display through the many scientific and artistic displays. The many vendor displays included sea shell jewelry and collectibles as well as shell art for home décor. Artist, illustrator and muralist Andrea Castaneda Castro of Indialantic painted a picture of a large shell on canvas as festival goers looked on. There were a large number of intricately made pieces of shell art, including a 6-foot tall representation of a man made entirely of shells. The first-place winning piece was a mermaid made with dazzling shells. The event included a table for children to decorate provided sea shells with watercolor markers. Brothers Rion Vickers, 7, and Riker Vickers, 5, of St. Cloud colored their shells as their father looked on. The Astronaut Trail Seashell Club was founded in 1966 by a group of beachcombers, educators and marine scientists. Its mission is to perpetuate the

TMS treatment stimulates hope for the severely depressed BY MIKE GAFFEY A local psychiatric practice provides a noninvasive treatment that shows promising results for patients suffering from severe depression. Atlantic Psychiatric Center offers Transcranial Magnetic Stimulation (TMS) technology at its offices at 1351 Bedford Drive in Melbourne and at 2123 Franklin Drive NE in Palm Bay. TMS uses magnetic fields to stimulate nerve cells in the brain to improve symptoms of treatment-resistant depression. The FDA-approved procedure is done without using surgery or cutting the skin. “We’ve now been using it at Atlantic Psychiatric Centers for about five years and it’s grown dramatically,” said Dr. James Jacobson, who has been practicing psychiatry in Brevard County for 20 years. “A lot of people are starting to hear about it.” During a TMS session for depression, a patient sits in a chair as a device is placed against the left side of the patient’s head. The device delivers mild magnetic pulses that stimulate nerve cells in areas of the brain thought to regulate mood, activating regions that have reduced
activity during depression. “When that current hits neurons, it depolarizes them,” said Jacobson, a Satellite Beach resident. “And when neurons in the brain get depolarized, it’s like tickling them and waking them up and they start producing neurohormones that make them want to grow. And they start growing and they start working better and then they wake up deeper structures in the brain.” A patient receives halfhour treatments spanning 36 days. The patient is fully awake and alert during the sessions. The device makes a clicking sound when delivering magnetic pulses, and the patient may feel a light tapping sensation on the scalp. That feeling usually is temporary and subsides with subsequent treatments. The most common side effect is pain or discomfort at or near the treatment site. A patient often notices improvements in energy and focus after 11 to 25 treatments, according to Neuronetics Inc., a Malvern, Pennsylvania-based company that manufactures NeuroStar systems available at Atlantic Psychiatric Center’s two locations. More than 5.6 million NeuroStar Advanced

Marguerite was 17; Steven was 21. Back then, the drinking age was 18. “Cheers had live bands back in the day,’’ Marguerite said. “That’s why we went there all the time. I loved the bands. I probably shouldn’t have even been there. I didn’t have a fake ID; they just weren’t strict about carding back then.’’ She grew up in Lindenhurst and he was from Deer Park. The towns were about 15 minutes apart. “Steve had an outgoing personality and he made me laugh,’’ Marguerite said. “He still makes me laugh after all these years. I was meant to meet my husband. He’s always kidding around, but people think he’s serious when he’s not. He’s very comical.’’ The couple dated for seven years and were engaged for two years before they married on Sept. 15, 1985. The Marinaros will renew their vows Feb. 14 during the All You Need Is Love Senior Expo and Valentine’s Day Party at the Nyami Nyami River Lodge at the Brevard Zoo. “I am very excited about the vow renewal and my husband is as well,” Marinaro said. “I'm psyched. It's something we should have done a long time ago.” This June will mark two years in Suntree for the couple, who have two children — Kristina, who got married this past July, and Steven. Both still live on Long Island. Marguerite emphasized that her son is not a junior. “He’s Steven Francis — after my dad. My husband’s middle name is Peter.’’ Steven Marinaro was
a successful advertising artist, who drew on a drafting table before technology changed the business. He sketched, created figurines and designed wine labels, including Pindar, a white wine. He also drew labels for the soft drink, Snapple. The sports figurines were the precursor to the popular bobbleheads. Meeting former New York Yankees standout Mickey Mantle and creating his figurine was a highlight. Marinaro’s business eventually closed and he became a car salesman for nine years before moving to Florida. Marguerite Marinaro was a bookkeeper for approximately 25 years before finding her true calling as a teacher’s assistant for special needs children. “I loved doing that; it was so rewarding,’’ she said. According to Marguerite Marinaro, who will turn 63 in August, trust can't be overemphasized in a marriage. Her husband will turn 67 in August. “We confide in each other,’’ Marguerite said. “We don’t do anything without each other’s input. That included the move to Florida. I love Florida, but I’m still heartbroken that my kids still live up there.’’ The Expo, sponsored by Health First and VIPcare, will have exhibit booths that will include: health, medical research, healthcare, volunteer opportunities, finance, hospice, West Volusia Tourism and others. Wild-caught salmon teams up well with red potatoes BY ELAINE MOODY I like the mild flavor of wild salmon. When broiled, it is very savory and tender. Sour cream mashed red potatoes and fresh vegetables complement the fish nicely. This pairs great with a glass of white wine. Whenever I go to the grocery store to purchase fish, I always look for my favorite — wild-caught salmon. If I can't find salmon, then I will buy sea trout. I used to not think about where the fish came from, but it has become very important to me. If it’s already packaged, I always check the label for several things. First, is it caught in the open ocean or has it been farm raised? Next, is it fresh or previously frozen and what is the expiration date? I have found that the Atlantic salmon is less expensive than the Pacific salmon and tends to be lighter in color and a milder flavor. The Pacific salmon is a deeper pink and has a stronger, more robust flavor. There is some Atlantic salmon that is farm raised, so be sure to check the label.
Most recently, I found some wild-caught Norwegian Atlantic salmon that was very good. Here is my favorite recipe for preparing salmon and it works well on sea trout, too.

Two small filets of Atlantic Salmon: Fresh lemon Lemon pepper seasoning Onion Tomato Olive oil Red skin potatoes: Sour cream Butter Milk Salt and pepper Fresh vegetables: Carrots Zucchini White onion

Wash and cut into strips, one large carrot and one zucchini. Slice up 1/4 white onion. In a skillet, add one tablespoon of olive oil and heat, add onion and saute until glazed, add carrots and zucchini, sprinkle with a little salt and pepper, add one tablespoon water, stir and then cover. Cook on medium low heat until tender. You can substitute other types of vegetables, depending on your taste.

Turn fish over and remove skin, squeeze lemon juice on and sprinkle with lemon pepper seasoning. By this time, the other side of the fish has cooked sufficiently. Drizzle a little olive oil on each filet and squeeze some lemon juice on top, place thinly sliced white onion and tomato slices on top of the filets. Place under a high broiler setting until filets turn a golden brown or until onions and tomatoes are cooked. Serve with your favorite beverage and enjoy. V V

Indian River Lagoon's value is priceless for quality of life Why should we really care about the Indian River Lagoon? Some of us live on the water, but most don’t. Some boat or fish regularly, but not all of us. So why should we care? There are at least two big reasons: economic impact and quality of life. Let’s dive in — so to speak. Let’s look at economics. Not everyone, but a lot of people do live on the Indian River Lagoon, boat on it, visit it and use it. In 2016, a detailed study put the total economic contribution of the IRL at $7.6 billion, with Brevard’s share at $5.5 billion. Then we had an estimated 7.4 million visitors a year to the region supporting some 40,000 jobs. It is also estimated that the value added to our real estate by the IRL was $1 billion. That’s a lot of value

coming from the IRL and we know these numbers have only ballooned since. Without it, or if we fail to maintain it, our economy would be much less vibrant, so clearly the economy is a big reason to care! But there is also the quality of life side, and this has several parts. One is ecological. The IRL has long been recognized as being perhaps the most ecologically diverse environment in the United States. It boasts some 2,000 plants, 600 fish and 300 bird species. This is one of the main reasons for our very successful tourism economy. Additionally, the IRL is a nursery for many species of

fish and other sea animals that ultimately migrate to the ocean. Another, and maybe the most important reason to care, is the simple fact that we get to enjoy a piece of paradise by living near the IRL. We get to see the amazing sunrises, watch
dolphins and see lovable manatees moving slowly through the canals. We get to share the IRL with herons, storks, ospreys and other birds. We may even go on the water and experience that freedom and see the fluorescent algae at night. These are the reasons our

Recycling hard-to-recycle materials becomes easier, closer to home In line with its mission to reduce waste and help the community recycle more effectively, Recycle Brevard now has two drop-off locations accepting hard-to-recycle materials. The first is in partnership with Mrs. Mango & Co (mrsmangoandcompany. com) at 3500 South U.S. 1 in Rockledge. Mrs. Mango is open from 10 a.m. to 4 p.m. Tuesday through Saturday. It offers natural products and herbal preparations of all sorts. The property sits on a beautiful garden, which is open to visitors and accommodates parking. Recycle Brevard’s box is on the north side of the building, right underneath Recycle Brevard’s sign. The second one, which was just set up Jan. 21, is in partnership with Salty Bean (Facebook: thesaltybeanmachine) at 4555 North Courtenay Parkway on Merritt Island. Salty Bean is open from 9 a..m to 3 p.m. Tuesday and Saturday and from 9 a.m. to 5 p.m. Wednesday, Thursday and Friday. It offers fresh coffee and home-cooked meals. Other programs also are conducted on the property.
