Choc Chip and Pecan Nut Banana Bread for High Tea in Spring for Two

Ingredients:

• 1 cup cake flour • ½ cup castor sugar or plain sugar • 70g melted butter • 2 eggs • 3 bananas • 1 tsp vanilla essence • 1 tsp bicarbonate of soda • 2 tsp baking powder • ¼ cup choc chips • ¼ cup finely chopped pecan nuts

Method:

1. In a bowl, cream the butter and sugar. 2. Add the eggs one at a time and beat at medium speed, then add the vanilla essence. 3. In a separate bowl, mash the bananas. 4. In the dry bowl with measured flour, add the bicarb and baking powder. 5. Pour the wet ingredients, butter, sugar and vanilla essence into the dry ingredients. 6. Add the mashed bananas, choc chips and nuts. 7. Mix well by hand, then spoon into a loaf pan that has been greased and lined with baking paper, into a 190oC pre-heated oven for 40 to 45 minutes. 8. Insert a skewer into the loaf to test if it is ready. If it comes out clean, it is ready to enjoy with lots of butter and a cup of tea.
