hat did you find were the main differences between opening Bon Appetit in 2006 and opening Cleaver East last year?
I’ll put it simply; back then our world was a different place, it was booming. We all thought we were invincible. Bon Appetit is one of the most expensive stand-alone restaurants that has ever opened in Ireland, in terms of set up cost, building and its interior. The preparation and the budget were huge, there was no expense spared. For example, the chairs in the restaurant are custom-made Italian, worth €860 each. The set-up of Bon Appetit was in the millions! So what was the difference between then and now? The difference is huge! Has marketing a restaurant changed since then too, with the advent of Facebook, Twitter and the likes? I think social media is fine, because it relatively free and it’s a good tool to get your name out, but I also think sometimes that it’s a load of nonsense! Marketers nowadays have a tendency to put all their eggs in the social media basket, but I think the majority of us just flick through social media and it just blends into obscurity. Don’t get me wrong it has it benefits, however there’s far too much emphasis on it these days. Yourself and your brother Graham manage both of your restaurants. Was it always planned that he would be general manager in Cleaver East too?

When we first opened Cleaver East, I had a manager in place, who I hired for the prelaunch and the official opening. However it didn’t work out. I have a philosophy in business that once you recognise a problem, no matter what or who it is; you need to address it head on, because in the end it will damage your bottom line. As with me, the running of both restaurants is not just a job for him it’s a major part of his life. Would it be fair to say you might be a harsh taskmaster? Very much so, I admit that. When I interview someone for a job my exact words are the managers should lead by example, I firmly believe that and it’s something I adhere to. If there’s a job to be done, I like to think I’ll do it quicker and better than anyone else and that’s the attitude I expect my staff, and especially a manger, to have too.

Do you think you’re equal parts an entrepreneur and a chef?
restaurants can survive; the real question is, can the old ones survive? If a restaurant has rested on its laurels too long, become stagnant and haven’t reinvested into their business, then as cruel as this may sound, so be it, a business has to move with the times otherwise they’ll be left behind. My attitude has always been, if people deserve to succeed then there will be people who deserve to fail. It’s vital in this industry to be constantly evolving.
It’s sort of evolved like that naturally. With each passing year, I always look back at the year before and think “I didn’t have a clue”, which is very progressive. In the past I always felt that wherever I worked my main job was to make my employer money, the food was a by-product of that. I don’t know why I think like that. I look out for little things to help a business and some people think I’m mad because of it.
You worked in London in some top restaurants; do you think it’s necessary for ambitious chefs to work abroad?
“
I always say to my staff that when you walk in here (Cleaver East) and you think it’s 99% perfect, it’s not your job to pat yourself on the back, it’s your job to find out the 1% that’s wrong.
”
Do you have a favourite moment since opening Cleaver East? I’d like to say I have one, but I don’t and maybe that says something about me, it’s certainly not a reflection on the restaurant. I find it hard to live in one particular moment. You would think that after we opened Cleaver East that I would have been overjoyed, but in reality that’s not what I’m like. I tend to look at the negative instead of the positive, but in many ways I think that attitude helps me get my business to a standard I want them to be. I always say to my staff that when you walk in here (Cleaver East) and you think it’s 99% perfect, it’s not your job to pat yourself on the back, it’s your job to find out the 1% that’s wrong. You’ve had a lot of famous faces here in Cleaver East…
It’s not a necessity, but it certainly helps. The main difference is that the level of ambition from your colleagues is higher when you’re working in a Michelin Star restaurant in London. Those kitchens can be such a huge learning curve as everyone is driving for the same goal, sharing ideas about food, reading books, working together. You find yourself constantly immersed in a cocoon of food. The people you work with there have purposely targeted restaurants they want to work for whether it be Gordon Ramsey’s or The Fat Duck, not just because it’s in close proximity to their house. What are your aspirations for the future? I’m hoping to obviously keep the focus on Bon App and Cleaver East and I’m hoping to open a new restaurant in Malahide which is going to be something different to what people are used to. It’s a project I’m really excited about and very confident of. It’s a concept that’s been on my mind for a long time and it’s something Ireland doesn’t have. It will have the same mantra as Cleaver East, a super cool place that people can go to eat amazing food and enjoy themselves.

Robert Plant from Led Zeppelin was here too, which was cool. There’s been an influx of new restaurants opening across the country, especially in Dublin, can they all survive? Absolutely, because when a new restaurant opens people just stop going to the older ones. The new

This is all then tossed together with pancetta and pine nuts to add a little extra distinction to the already enticing taste.

Beginning with an outer shell of potato skins, these are then filled with deliciously crispy bacon. Caramelized onions are mixed in amongst the bacon to draw out a honey taste. Brie is then cooked over it, faultlessly uniting all the elements of the dish.
Nice cosy place with lots of little alcoves and seperate areas to sit, relax and dine. The waitstaff were very nice.

Jervis Shopping Centre, 125 Upper Abbey Street, It might seem like an odd location for a haunting manifestation but the shopping centre was formally the site of the old Jervis Street Hospital. Staff in the centre have reported seeing a nurse in period uniform, “people” disappearing before their eyes, children crying, voices and a general sense of not being welcome in storerooms. Shoppers have reported feeling uneasy, light headed and hot while fruit has been known to mysteriously leap away from a smoothie shop located on the level at night and caught on CCTV.

St. Audoen’s Church, 14 High Street, Dublin 8 One of the oldest surviving medieval churches left in Ireland, St Audoen’s Church is said to be haunted by the “Green Lady”, regularly spotted around the church grounds. The ghost is said to be Darky Kelly, a lady of the night who was executed for the murder of her unborn child by the Sheriff of Dublin, Simon Luttrell. Luttrell was supposedly the child’s father and a member of a group of Satanists known as the Hellfire Club. Green orbs commonly show up on photos taken in the grounds if you dare to visit after dark. Appropriately enough, the church is located in an area formally known as “Hell”.

Demolished in the 1960s, numbers 7 and 8 Hendrick Street were said to be the most haunted residences in Ireland. Inhabitants were born here, lived here, raised families here and died here. While 7 and 8 are known as the most haunted areas, the whole street has an air of unease, from the funeral home at the corner to the long abandoned Edmunson Electrical building, where security guards and a young girl have been spotted before vanishing. Definitely not one to visit on your own at night, even in a group this is one of the spookiest places in Dublin.

Olympia Theatre, 72 Dame Street, Dublin 2 One of the most beautiful theatres in the city and also one of the most haunted. The dressing rooms of the historic theatre are said to be roamed by a poltergeist that was apparently responsible for almost destroying a dressing room. Footsteps are also often heard in corridors while doors and windows have been known to rattle.
1 Shelbourne Hotel, 27 St Stephen’s Green, Dublin 2 A certain room on the sixth floor of Dublin’s exquisite Shelbourne Hotel is said to be haunted by a young girl known as Mary Masters. Mary’s former family home is believed to have been on the site of the hotel when the young girl died of a cholera outbreak in 1846. Mary has been heard crying in the room and asking for her sister but also playing and laughing in corridors.

Boned Aromatic Peking Duck The duck is marinated in sherry, ginger, soya, honey & spices, then is steamed, which softens and renders most of the fat while keeping the flesh moist and tender. Johnnie Fox’s is renowned for being the highest pub in Ireland. Its location amongst the Dublin mountains accounts for this accolade. A mere glimpse out the window will capture your imagination, as you are immersed in the stunning view. During the 1916 Rising, Rebellion leaders are rumoured to have used Johnnie Foxes as a meeting point to discuss strategy. It’s rare to find a spot outside of the city centre associated with the Rising, and yet this Glencullen pub harboured some of Ireland’s greatest heroes. Ireland’s Great Liberator Daniel O’Connell is alleged to have been a great patron of Johnnie Fox’s. O’Connell lived in Glencullen, and so would regularly frequent the hugely popular pub.
Johnnie Fox’s Hooley Show is known throughout the country. Patrons are invited to have a meal before they are wowed by a live music session, with Irish acts belting out well loved traditional and folk tunes. This is followed by a dazzling performance by some incredibly talented Irish dancers. The Hooley Show has been hailed as one of the best cultural shows in Ireland!
