6 large eggs, beaten ¼ teaspoon salt ¼ teaspoon pepper 2 tablespoons cooking fat (melted ghee, clarified butter, or coconut oil; or extra-virgin olive oil) ½ onion, diced 1 cup diced tomato 1 bag baby spinach (organic if possible), roughly chopped Grated zest and juice of ¼ lemon
If you don’t have an oven-safe skillet, you can cook the frittata in a regular pan on the stovetop, then transfer the frittata to a Pyrex dish to broil—just grease the bottom and sides of the dish with coconut oil or ghee. Feel free to double this recipe, as your frittata will reheat beautifully the next day. Or enjoy it cold! A slice is a really easy and delicious on-the-go breakfast or lunch.

SET the oven to broil (or preheat to 500°F). IN a mixing bowl, whisk the eggs with the salt and pepper. HEAT a large oven-safe skillet over medium heat. Add the cooking fat to the pan and swirl to coat the bottom. When the fat is hot, add the onion and tomato and cook, stirring, for 2 to 3 minutes, until softened. Add the spinach and let it wilt for 30 seconds. Add the eggs and fold them into the vegetables with a rubber spatula. Cook, without stirring to let the eggs set on the bottom and sides of the pan, for 3 to 4 minutes, until the eggs are set but still appear wet. Sprinkle the lemon juice and lemon zest over the top. TRANSFER the pan with the eggs to the oven and broil 6 inches from the heat (or bake in the preheated oven) for 3 to 5 minutes, until the top is golden brown. Cut into slices and serve hot out of the pan. VARIATIONS Mix and match vegetables and meat to vary the flavors of your frittatas. Try making it Mexican (spiced cooked ground beef, thinly sliced jalapeños, diced tomato, and cilantro), Italian (cooked sausage, red peppers, onions, and basil), Greek (cooked chicken, sun-dried tomatoes, black olives, and artichoke hearts), or use any leftover meat and vegetables you happen to have in your fridge for a kitchen sink frittata.

MAKE THE RUB: Mix the oregano, mustard powder, onion powder, garlic powder, paprika, cumin, salt, and pepper in a small bowl. Set the ribs flesh-side up on a large piece of foil and coat evenly with the rub. Marinate in the refrigerator for 3 to 24 hours (the longer the better).
Steak salad with Cilantro LIme Mayo
PREHEAT the oven to 300°F. PLACE the ribs in a casserole or glass baking dish. Pour the chicken broth or water into the dish and cover with foil. Bake for 1 hour, or until the meat pulls back from the rib bones. PREHEAT a grill to medium heat (350wF). Place the ribs directly over the heat and grill for 6 to 8 minutes on each side, until nicely charred. If you don’t have a grill, increase the oven temperature to 475°F and cook the ribs for 10 minutes on each side. REMOVE the ribs from the grill or oven and immediately baste with about 1 cup of the BBQ sauce. Serve with the remaining sauce. MAKE IT A MEAL: This recipe goes great with a serving of Butternut Squash with Kale and Swiss Chard (page 000), Green Cabbage Slaw (page 000), or Roasted Sweet Potatoes (page 000). WHEN ARE THE RIBS DONE? While you should cook ribs to 180 to 190°F, a meat thermometer is not much help here: It is very hard to get an accurate measurement because the bones get in the way of measuring the temperature. A few ways to test whether your ribs are done: Pick up the slab with a pair of tongs and bounce them slightly. If they are ready, the slab will bow and be close to breaking. You can also poke a toothpick into the meat between the bones. When it slides in with little or no resistance (like with baked goods) your ribs are ready.

The word ombre in French translates to “shaded.”
And that is what you get with this fun approach where you vary the shading of a cake’s color from dark to light. You can choose to vary the colors of the layers, the filling or the frosting or all three.
• For cake batter, divide batter among as many bowls as the layers you are baking. Then add different amounts of food color to each one until it is the color you want. Gel or paste color works best because it provides more intense color and does not dilute or change the consistency of the batter. Then bake the cakes as directed in the recipe.
• To frost, layer the cake as desired (you can use plain or shaded filling too). Frost the whole cake with a thin layer of plain frosting to seal in the crumbs.
• To make the ombre frosting, divide the remaining frosting among the number of bowls desired. Add different amounts of food color to each one to achieve the shade you want. • Start with the darkest shade of frosting color on the bottom— spread around the cake. Then progressively work up the cake, spreading each shade of colored frosting separately until you get to the top. Frost the top of the cake with a shade of the colored frosting.

MAKE CAKE AND FROSTING
Heat oven to 350°F (325°F for dark or nonstick pans). Spray 4 (8-inch) round pans with cooking spray. Make and bake white cake mix as directed on box using water, oil and egg whites. Make and bake devil’s food cake as directed on box using water, oil and eggs. Cool in pans 10 minutes; remove from pans to cooling racks. Cool 20 minutes. Refrigerate layers about 45 minutes for easier handling.
ASSEMBLE AND DECORATE
Using serrated knife, cut rounded top off cakes to make a level surface. Cut each layer in half horizontally to make 8 layers total. Alternate chocolate and white layers, filling each layer with 1/2 cup of the frosting. Thinly spread top and side of cake with 1 cup frosting to seal in crumbs. Refrigerate 30 minutes. Frost cake with remaining frosting.

Asparagus Vinaigrette Salad Asparagus is a sure sign of spring, and this is a taste of it! 2 pounds fresh asparagus, rinsed and trimmed (see box) 3 or 4 large handfuls fresh baby spinach handful fresh Italian parsley salt and freshly ground black pepper, to taste Mustard Vinaigrette (page 000), divided 1 hard-boiled egg, finely chopped shavings of fresh Parmesan cheese 1 cup herb-flavored croutons (whole, if small, otherwise partially crushed)

Put two dinner plates into the freezer.
■ Lay the asparagus in a steamer basket. Put ½ inch of water into a large pot and bring to a boil. Carefully put the steamer basket into the boiling water, cover, and steam for 3 minutes, or until the spears are bright green in color. (Pencil-thin spears cook quickly; thumb-thick ones require 1 to 2 minutes more. Avoid wilting the spears.)
Look for firm spears— between pinky- and forefinger-diameter— with tight, unblemished tips and fresh (not dry or woody) white to light green bottoms. Use as soon as possible after purchasing. Asparagus grows in sandy soil, so always rinse it well. Snap off and discard the pale, woody, lower third or quarter of each spear.
Remove the plates from the freezer and immediately transfer the asparagus onto them, spreading the spears so that they do not overlap. Set aside to cool. (Do not plunge the asparagus into cold water; this often leaves it waterlogged.) Or cover and refrigerate for 1 to 2 hours before serving. ■
■ Mix the spinach and parsley and arrange in a bed on a large platter. Season with salt and pepper. Lay the asparagus spears over the greens. Drizzle with 1⁄4 cup of the vinaigrette and top with the egg, Parmesan cheese, and croutons. Pass the remaining vinaigrette at the table.

1 tablespoon canola oil 1 cup low-sodium beef stock (or beer!) HASH 4 slices bacon, chopped 1 sweet yellow onion, diced 1⁄2
green bell pepper, diced
2 garlic cloves, minced 4 Yukon gold potatoes, chopped 1⁄4
teaspoon salt
1⁄4
teaspoon freshly ground black pepper
4 to 8 large eggs 1⁄4
teaspoon crushed red pepper flakes
1 tablespoon chopped fresh herbs (basil, parsley, oregano, or your choice)

Gah. Hello, beautiful. Okay, okay. Short ribs may be anything but beautiful. This breakfast, though? Off the hook. It’s another one of those recipes that was inspired by brunch at a local restaurant and oh, man . . . short ribs for breakfast are worth the hype. It’s sort of crazy because I’ve always only desired them in tacos. On a whim I ordered the breakfast hash one morning and was completely sold. Within seconds. This is quite possibly one of the richest, most decadent savory breakfasts I’ve ever had. The poached eggs combined with the pulled short ribs—I don’t even have words.
I really don’t. For the ribs, season the ribs with the salt, pepper, onion powder, 1 and garlic powder. Heat a large skillet over high heat and add the oil. Add the ribs to the skillet and sear until golden on all sides, 1 to 2 minutes per side. Remove the ribs from the skillet and add them to a 7-quart slow cooker. Add the stock and cook the ribs on low for 8 hours, turning once or twice if you can. Once the ribs are finished, remove from the slow cooker and place them on a plate. Allow them to cool to the touch, then shred the beef and discard the bones and fat. For the hash, heat a large skillet over medium heat and add 2 the bacon. Cook until it’s crispy and the fat has rendered, then remove the bacon with a slotted spoon and allow it to drain on a paper towel. Add the onions and peppers to the same skillet and toss to coat. Cook, stirring, until the onions begin to soften, 5 minutes. Add the garlic, potatoes, salt, and pepper and stir. Cover the skillet and cook until the potatoes are tender and slightly crispy, 10 minutes, tossing once or twice while cooking. Once the potatoes are tender, add the bacon and beef to the skillet and toss to mix. Turn the heat down to low and cover. Cook the eggs to your liking and sprinkle them with the 3 crushed red pepper flakes. To serve the hash, spoon the beef and potatoes onto a plate and add an egg on top. Garnish with a bit of chopped herbs.

1 teaspoon black pepper 1 teaspoon dried sage 2 1 ⁄2 sticks butter 8 slices thick-cut peppered bacon
When I first saw a game hen, I thought someone must have picked her a little too early. Cornish hens sure are succulent when cooked right. Cover them with a little broth, bacon, and butter, and they’ll be fork-tender and juicy. 1. Preheat the oven to 325°F. Lightly grease an 11-x-13inch casserole dish. 2. In a large bowl, whisk together the chicken broth and concentrate until smooth. Pour into the casserole dish and set aside. 3. Rinse the hens thoroughly inside and out with water. Coat each hen generously with olive oil. 4. In a small bowl, combine the seasoned salt, lemon pepper, black pepper, and sage. Reserve about 4 teaspoons of the seasoning mixture and rub the remaining seasoning over each hen. 5. Place 1/2 stick of the butter in the cavity of each hen. Cut the remaining 1/2 stick of butter into small chunks and place in the prepared casserole dish. 6. Lay the hens in the dish, breast side up. Lay 2 slices of bacon in a cross over each hen. Sprinkle the reserved seasoning over the tops. 7. Cover with foil and bake for 11/2 hours, or until the internal temperature of the hens is about 165°F and they are

cooked through. Five to 10 minutes before the hens have finished cooking, remove the foil and let the skin brown. Let sit for 5 minutes. Serve with the pan juices.
