This dish was prepared by our restaurant chef Paul Sigler and chosen for its seasonal suitability, quality, and locality of the produce. We are delighted to work with the following suppliers on this dish. Ring of Kerry Quality Lamb- A group of 25 sheep farmers who live around the ring of Kerry and market their produce together. Our lamb came from the farm of Mr Gottstein. www.ringofkerryqualitylamb.ie Castlegregory Parsnips- Grown locally by Michael Ferriter who has been growing vegetables in the Maharee area of the Dingle peninsula for over 30 years
