Melissa's Mayo Made with light olive oil instead of vegetable oil

YIELD 1.5 cups CATEGORIES condiment

INGREDIENTS

1 egg 2 tablespoons lemon juice @ room temp 1/2 teaspoon dry mustard 1/2 teaspoon salt 1/4 cup plus 1 cup olive oil (light, not extra virgin) @ room temp (can use less until desired consistency is had) INSTRUCTIONS

1. Place the egg and lemon juice in a deep bowl. Let them come to room temperature together, about 30-60 minutes. 2. Add the dry mustard, salt, and 1/4 cup of the oil. 3. Mix with a hand or standing mixer until well mixed – about 20 to 30 seconds. 4. Using the finest stream of oil, incorporate the remaining 1 cup oil into the mixture as slowly as possible. NOTES
