Socializing at the social

Area residents are invited to relax and enjoy the evening at Saturday’s Homestead Festival lawn social from 5 to 7 p.m. at the Owen Lovejoy Homestead in Princeton.

The evening will include music and appetizers from various local vendors, complimentary tours of the Lovejoy Homestead, and displays of past Homestead Festival photographs and parade float memorabilia. Tickets for Saturday’s social are $30 each and can be purchased at the Princeton Chamber office, Princeton Insurance Group or Bead Buzz Jewelry Designs. Donations are also welcome to support this year’s 42nd annual Homestead Festival.

Firin’ it up – It’s grilling time Local chef gives some grilling tips

The first true warmer weather have finally arrived.

It’s not robins or the first flowers blooming; it’s the smell of charcoal wafting from the grill on a weekend afternoon.

Summer is the perfect time of year to clean up the grill, stock up on briquettes and make sure you’ve got lots of grill-ables in the kitchen.

Grills and smokers are popular items with more than 14.3 million sold during 2012, according to the Hearth, Patio and Barbecue Association. Gas grills have become the most popular type of grill with just over eight million purchased, outselling the traditional charcoal units at just under six million sales. Electric grills are starting to gain acceptance with sales last year of 280,000 units.

If you do own a grill, you’re in good company.

Eighty-six percent of households own an outdoor barbecue, grill or smoker, and most grill owners use their grills year-round (62 percent). In most ways, grillers are still traditionalists, with the most popular foods to grill are still meats, especially burgers, steak, hot dogs and chicken.

While most grill owners see themselves as wellversed in grilling techniques, there is an agreement that there’s always more to learn; so who best to turn to for some grilling suggestions than a chef? Tim Freed is chef at the Peru Hy-Vee and looks forward to grilling as one of his favorite leisure time activities.

Freed has several recommendations on making your grill session go smoothly.

“Using charcoal briquettes for your grill’s heat?

Then light the coals about 30 minutes before cooking. If you’re using lighter fluid, make sure the fire is

completely out before slapping the meat on the grill, or else you’ll have the nasty fuel taste. At this time, the charcoal should be mostly an ash-gray color with a little bit of glowing red underneath,” Freed said.

“Using a smoker? Light the charcoal with a chimney starter,” he said. “It’s relatively quick to get some hot coals going, and you won’t have to fret about getting nasty lighter fluid fumes in your smoker. If using a smoker, minimize the amount of times you open it.

I know you’re anxious to see how the meat is doing, but opening it frequently will keep the smoker below the necessary heat levels.”

It’s best to clean your grill grate with a stiff wire brush or a piece of crumpled-up foil, followed by a touch-up with a clean dry paper towel. Charcoal absorbs moisture easily, so store it in a dry place.

Freed also recommends not to pierce meat with a fork or prongs. The juices will escape, making the meat drier and less flavorful. Instead, use a spatula or tongs to move and flip the food. Don’t press the burgers down with a spatula as they cook unless you like a dry hamburger.

Flavor is one of the main reasons people use a grill, but Freed recommends getting outside that “comfort zone” of BBQ sauce.

“Experiment with different types of marinades, seasonings and rubs to give your food unique and delicious tastes. Marinades tenderize meat in addition to giving them some wild flavoring,” said Freed. “If at all possible, marinade overnight; but if you can’t, try to give at least an hour of the meat soaking in the marinade sauce. The resealable plastic bag was made for marinating.”

Meats are perfect for grilling, and by now almost everyone has heard of grilling a pizza. But why stop there?

“There is no fruit you can’t grill. Pineapples, peaches are my favorite – slice or cut in half, brush with melted butter and, if you want, brown sugar, and grill.

There are few tastier desserts than grilled fruit, and somehow, it always surprises people,” said Freed.

SPRINGFIELD – Before clearing out their desks for the summer, teachers and principals should mark Sept. 1 on their calendars.

That’s the deadline for schools to apply for a field trip grant to visit the Abraham Lincoln Presidential Library and Museum.

The Winnick Family Foundation is offering field trip grants through the Abraham Lincoln Presidential Library Foundation.

They’re for Grades 4 through 12 in public and private schools nation-

wide that have a low-income enrollment above 30 percent.

The grants help defray the cost of transportation to the presidential library and museum. Groups receiving a grant are also exempt from the museum admission fee.

A total of $20,500 is available to distribute this year.

KidneyMobile coming to IVCH PERU – Free screenings for chronic kidney disease will be available when the National Kidney Foundation of Illinois’ KidneyMobile comes to Illinois Valley Community Hospital June 14 from 10 a.m. until 2 p.m.

The screenings, which will be held in IVCH Conference Room A, include blood pressure, blood sugar, weight and body mass index checks. A urine sample will also be taken.

People who have diabetes may be asked to have blood drawn (at no charge) depending upon their

blood sugar readings. IVCH nurses will be available for counseling about what the test results mean.

The National Kidney Foundation of Illinois says the KidneyMobile’s mission is to educate high-risk individuals on kidney disease prevention and provide educational information for successfully managing diabetes and hypertension — the two leading causes of kidney disease.

Book fair, bake sale PRINCETON — The Perry Memorial Hospital Auxiliary will sponsor a book fair from 7 a.m. to 4 p.m. Thursday, June 20, and Friday, June 21.

A bake sale will be from 7 a.m. to noon Friday, June 21. Both events will be held in the Medical Office Building lobby at Perry. Each year the Auxiliary hosts a variety of events to raise money to purchase equipment for the hospital. Food court With all the ball games and other activities going on this summer, how about some breads that are easy to fix and also a few quick fix desserts to go along with your quick fix meals? Seems like there’s not enough time for everything that’s going on.

Cheddar Drop Biscuits 2 cups all-purpose baking mix 1/2 cup shredded sharp cheddar cheese 3/4 cup milk 2 tablespoons butter, melted 1/2 teaspoon dried parsley, crushed 1/2 teaspoon garlic powder Preheat oven to 450°. Combine baking mix and cheese; make a well in center of mixture. Add milk, stirring just until moistened. Drop dough by rounded tablespoonfuls, 2 inches apart, onto a baking sheet coated with cooking spray.

Bake at 450° for 8 minutes or until golden. Combine butter, parsley and garlic powder, brush over warm biscuits.

Cinnamon Toast Roll-ups 1/4 cup granulated sugar 1/4 cup firmly packed light brown sugar 1/2 teaspoon ground cinnamon 1 8-ounce can refrigerated original crescent rolls 2 tablespoons butter, melted Preheat oven to 375°. Stir together first three ingredients. Unroll crescent roll dough onto a parchment paper-lined work surface. Separate dough into triangles. Brush with melted butter and sprinkle evenly with sugar mixture. Roll up each triangle, starting with shortest side, place on a parchment paper-lined baking sheet. Bake at 375° for 10 to 12 minutes or until golden brown. Cool 1 minute on pan. Remove to wire rack to cool.

Caramel-Nut Pull Apart Bread 1 cup plus 2 tablespoons firmly packed brown sugar 1 cup chopped walnuts 3/4 cup butter, melted 3 10-ounce cans refrigerated cinnamon and sugar biscuits Preheat oven to 350°. Combine brown sugar and walnuts in a small bowl. Stir in butter. Spoon half of sugar mixture in bottom of a lightly greased bundt

pan. Cut each biscuit in half. Place half of biscuit halves alternately over sugar mixture. Spoon remaining sugar mixture evenly over biscuits in pan and top with remaining biscuit halves. Bake at 350° for 30 to 35 minutes or until browned.

Invert bread onto a serving platter immediately, spooning any brown sugar sauce left in pan over bread. I used Pillsbury Hungry Jack Refrigerated Cinnamon and Sugar Biscuits.

Peanut Butter Brownie Bites 1 19.27-ounce package milk chocolate brownie mix 1/2 teaspoon vanilla extract 1 3-ounce package cream cheese 1/4 cup creamy peanut butter 1 cup chocolate coated peanut butter candies Preheat oven to 350°. Line bottom and sides of an 8-inch square pan with aluminum foil, allowing 2 to 3 inches to extend over the sides. Lightly grease foil. Prepare brownie batter according to package directions for fudgy brownies, stirring vanilla into batter.

Pour batter into prepared pan. Place cream cheese in a microwave-safe bowl.

Microwave on high for 15 seconds. Add peanut butter and stir until smooth and blended. Drop peanut butter mixture by 16 rounded teaspoonfuls onto batter. Sprinkle candies over batter. Bake at 350° for 50 to 53 minutes or until a toothpick comes out with a few moist crumbs. Cool completely on a wire rack about 1 hour. Lift brownies from pan using foil side as handles. Place on a cutting board. And cut into 16 squares.

Cinnamon Streusel Muffins 1 15.2-ounce package cinnamon streusel muffin mix 1/2 cup dried apple pieces, roughly chopped 1/2 cup golden raisins Prepare cinnamon streusel muffin mix according to package directions, stirring dried apple pieces and golden raisins into batter. Place paper baking cups in muffins pans. Spoon batter into cups, filling two-thirds full. Bake and cool muffins according to package directions.

Use Betty Crocker Cinnamon Streusel Premium Muffin Mix. To chop dried fruit use scissors coated with cooking spray.

Cinnamon-Apple Breakfast Buns 1 12.4-ounce can refrigerated cinnamon rolls 1 1.62-ounce package instant cinnamon and spice oatmeal 1/4 cup firmly packed brown sugar 1/4 cup chopped pecans 1/4 teaspoon ground cinnamon Dash of ground nutmeg 1 tablespoon butter, melted 1 Granny Smith apple, peeled, cored and cut into 8 rings Preheat oven to 400°. Separate cinnamon rolls and place in a lightly greased 8- or 9-inch round cake pan, set icing aside. Bake rolls according to package directions. Meanwhile, stir together oatmeal and next five ingredients. Place 1 apple ring on each cinnamon roll, sprinkle mixture evenly over cinnamon rolls. Bake at 400° for 20 to 22 minutes.

Remove top to icing. Microwave icing at low for 20 seconds, drizzle evenly over rolls.

Brownie Buttons 1 16.5-ounce refrigerated roll triple chocolate chunk brownie batter 1 bag of assorted miniature peanut butter cup candies and chocolate coated caramels Preheat oven to 350°. Spray miniature (1 3/4 inch) muffin pans with cooking spray or line pans with paper liners and spray liners with cooking spray. Spoon brownie batter evenly into each cup, filling almost full. Bake at 350° for 19 to 20 minutes. Cool in pans 3 to 4 minutes, and then gently press a miniature candy into each baked brownie until the top of candy is level with top of brownie. Cool 10 minutes in pan. Gently twist each brownie to remove from pan. Cool on a wire rack.

Preheat oven to 325°. Combine pecans, butter, 1 egg and cake mix, stirring until well blended. Press into bottom of a lightly greased 13-by-9-inch pan. Beat remaining 2 eggs, cream cheese and powdered sugar at medium speed with an electric mixer until smooth. Pour over cake mix layer. Bake at 325° for 40 minutes or until set. Cool in pan on a wire rack. Cut into squares.

Store in refrigerator.

Sour Cream Corn Sticks 3 large eggs, lightly beaten 1 cup self-rising cornmeal mix 1 8 3/4-ounce can cream style corn 1 8-ounce carton sour cream 1/4 cup vegetable oil Preheat oven to 400°. Heat lightly greased cast iron corn stick pans in oven for 5 minutes. Combine all ingredients, stirring just until cornmeal is moistened.

Remove cast iron pans from oven and spoon batter into hot pans. Bake at 400° for 16 to 18 minutes or until golden.

Raisin-Oatmeal Cookies 1/2 cup golden raisins 1/3 cup hot water 1 17.5-ounce package oatmeal cookie mix 1/3 cup butter, softened 1 large egg 1 tablespoon vanilla extract Preheat oven to 375°. Combine raisins and 1/3 cup hot water. Let stand 5 minutes. Drain. Stir together, cookie mix and next 3 ingredients. Add raisins and stir until blended. Dough will be stiff. Drop dough by tablespoonfuls 2 inches apart onto lightly greased baking sheets. Bake in batches at 375° for 10 minutes or until golden brown. Cool on baking sheets on wire rack 1 minute.

SHEFFIELD – The Sheffield Public Library is hosting its summer reading program, “Sheffield’s Got Talent” during the month of July. The participants will meet some of Sheffield’s most talented people who will demonstrate their expertise and share their stories. The children will also have the opportunity to listen to stories, discover their hidden talents, play games, win prizes, read and participate in a talent show.

Themed events include special guest speakers, learning more about railroads, airplanes and more.

Many Illinois historic sites extend hours Carl Sandburg site open for season SPRINGFIELD – Six Illinois sites operated by the Illinois Historic Preservation Agency have extended their schedules for the convenience of travelers taking advantage of spring and summer weather.

The sites now open seven days a week are: • Cahokia Mounds in Collinsville (through October) • Lewis and Clark in Hartford (through Labor Day) • Lincoln-Herndon Law Office in Springfield (through Labor Day) • Lincoln Tomb and War Memorials in Springfield (through September)

• Lincoln’s New Salem near Petersburg (through September) • Old State Capitol in Springfield (through Labor Day) In addition, two sites are opening for the season are the Carl Sandburg site in Galesburg and the Pierre Menard Home in Ellis Grove. Both will be open 9 a.m. to 5 p.m. until the end of October. The Menard Home will be open Wednesday through Sunday, while Sandburg will operate Thursday through Sunday.

All historic sites and monuments run by the Illinois Historic Preservation Agency are free for visitors, although donations are accepted.

Briefs Bus trip to Amana Colonies PRINCETON — The Perry Memorial Hospital 60 Plus Program is planning a bus trip.

On July 17, the group will travel to the Amana Colonies in Iowa. The trip will feature lunch at the Ox Yoke Inn and a performance by The Bretts at The Old Creamery Theatre.

The Bretts, a Branson favorite, have appeared on television and in more than 3,000 live performances around the globe. The Bretts deliver high energy, high caliber professional entertainment to audiences of all ages.

There will be time before lunch and after the show to shop and browse around Amana. The cost for the trip

Upcoming events at Starved Rock UTICA — The Starved Rock Lodge and Conference Center has announced upcoming events.

The summer season will kick off at the Lodge with the annual Storytelling Festival on June 7-9 with telling sessions on Friday and Saturday at 7 p.m. and on Sunday at 11 a.m. This festival welcomes storytellers from all over Illinois. There is a Storytelling Workshop on Saturday from 1 to 3 p.m. for

children in kindergarten through sixth grade. Saturday Night Storytelling will continue every Saturday night at 7 p.m. through October.

The Lodge will continue Wilderness Wednesdays which take place every Wednesday at 3 p.m. Each week brings a different nature education topic for visitors. The full Wilderness Wednesday schedule can be found on the Lodge’s website.

Sunday afternoons at the Lodge will feature the Music and Wines Under the Pines concert series. Guests will be able to listen to live music and taste and purchase a variety of Starved Rock wines.

Twice a month on Sundays visitors can enjoy a Chuck Wagon Dinner

with Randy Erwin, a nationally known cowboy yodeler, storyteller and rope trickster. The dinner is $45 for adults and $32 for children ten and under. A full list of dates can be found on the Lodge’s website.

Craft and flea market MENDOTA — The Crafters Market Place and Flea Market will again be featured at Mendota’s annual Sweet Corn Festival on Aug. 10 and 11.

Education Animal kingdom The Bradford Junior High seventh-grade science classes have been studying the animal kingdom. Landen Hoffert is pictured with his model of a 13-lined ground squirrel. Students researched three different animals and then selected one to create a model. The animal model was to be to scale. The animals they researched were to live in prairies of Illinois. Some of the animals studied were a sand piper, eastern meadowlark, several snakes, squirrels, coyote and many others. On May 3 they held an open house to display their animal models and research.
