Lunch in the Park Folks out for lunch grab a quick sandwich before relaxing a bit on picnic tables during Lunch in the Park in Princeton. The Princeton Chamber of Commerce kicked off its annual Lunch in the Park event in May at Soldiers and Sailors Park on South Main Street in Princeton.

Lunch in the Park is held from 11 a.m. to 1 p.m. most every Friday with a variety of organizations using the event as a fundraiser. The menu for Lunch in the Park varies slightly each week, but mostly consists of picnicstyle foods. Event-goers can grab a hot sandwich, bag of chips, a treat and drink, browse the weekly bake sale — all while they sit outside and enjoy the summer breeze on their lunch break.

Adopting a shelter cat?

It’s that time of year again. June is national AdoptA-Shelter-Cat Month, as litters of spring babies were recently born and are now in need of a forever home.

Before you go running out to your local shelter to pick your new furry best friend, a shelter veterinarian gives some tips on what people should keep in mind before adopting an animal.

Dr. Bob Weedon is a shelter veterinarian at the Champaign County Humane Society as well as the faculty member who oversees the shelter medicine program at the University of Illinois College of Veterinary Medicine in Urbana. He says before adopting an animal, you should thoroughly think through the ramifications of adoption.

“Adopting a pet is not an impulse decision. Irresponsible acquisition of a pet contributes to the number of animals being relinquished to shelters,” Weedon said.

“Proper planning will significantly improve the chances that an adopted pet will become a lifelong member of its new household.”

He advises setting up an appointment with a veterinarian before the adoption, so that you can have your new pet examined within the first week of getting it.

The American Society for the Prevention of Cruelty to Animals (ASPCA) estimates in the first year, the costs of adopting a cat average $1,000 while adopting a dog costs between $1,300 and $1,800 or more, depending on its size. These estimates factor in the cost of high quality food, medical attention, toys, treats, pet health insurance, spay/neuter surgery, and all of the start-up costs associated with owning a pet, such as training classes, a litter box, or a dog bed. (Details can be found online at aspca.org/adoption/pet-care-costs.aspx.) That price may vary depending on what services the shelter offers. In

some cases, pets are already spayed/neutered prior to the adoption.

Since dogs have an average lifespan of 10 to 15 years and cats 15 to 20 years, the cost of ownership is something to heavily consider before adopting any pet.

Another consideration is how the pets you already have at home will react to a new kitten or cat. Weedon says most shelters allow a potential adopter to bring current pets to meet a potential new member of the family.

Are you ready to make the commitment to adopt a cat or a kitten, but unsure which animal may make the best fit for your family best?

“Similar to the planning that goes into ensuring that an adoption goes smoothly, adopting the right animal requires some forethought,” Weedon said. “Things like lifestyle, including amount of time to spend with the animal, and the amount of space an adopter has to provide for the new pet or pets are important considerations.”

If the adopter is older or less active, adopting an older “lap” animal — an older cat that loves to cuddle and be petted — would be the more appropriate choice.

Weedon says if someone is considering adopting a kitten, then perhaps adopting two kittens, so the new addition has a playmate, would make sense. An older, less active dog could benefit from a younger, more active, playmate.

Just be sure to introduce the two in advance to ensure they get along.

“All of these considerations are important to ensure that a new pet fits in and remains a member of the family for life,” Weedon said.

Is travel insurance right for you?

Before you finalize your vacation plans, be sure you have given careful thought to whether you need to purchase travel insurance. There are circumstances that could cause you to cancel your trip, return home early or force you to seek emergency medical treatment while traveling.

Travel insurance may provide the extra protection you need. Better Business Bureau is advising travelers to weigh the pros and cons of travel insurance before going on an extensive trip.

Before you purchase coverage, check your homeowner’s or medical insurance policies to avoid any overlap. For instance, expensive items such as your camcorder, laptop computer or jewelry may be covered by your homeowner’s insurance should they be stolen while you are traveling. If the airline loses your checked luggage, they are required to reimburse you for your bags (up to a certain dollar amount). Or, if you become sick or injured while traveling, your personal medical insurance may pick up the cost of your medical bills.

Some of the different types of insurance available include: Trip Cancellation/Interruption (TCI): If your plans suddenly change and you have to cancel or end your

trip early, TCI will cover you for this.

But it will only reimburse you for reasons on the insurer’s acceptable list, such as injury, sickness or death of yourself, a family member, traveling companion or business partner.

Some policies will cover only medical reasons and some will not cover pre-existing medical conditions. It’s important to read the fine print.

Emergency Medical Evacuation: If you are going on an adventure vacation or to an area that is far from modern medical facilities, it may be a good idea to buy this coverage. If adequate treatment is not available at a local hospital, you would be transferred to the nearest acceptable medical faculty.

Baggage Loss: This coverage reimburses you for lost, stolen or damaged bags. As you are packing, make a list of everything you are taking with you. If your bag is lost, you may be reimbursed for some contents, but not all. Baggage-loss protection is only necessary if you are carrying more than $2,500 worth of items in your bags. Be sure to check your homeowner’s policy.

BBB recommends travelers take the following into consideration: • Read the fine print. Know exactly what coverage you are getting and what is covered. Policies and insur-

ance firms differ in what they cover.

• You may not need to buy it right away. Travel insurance can be purchased days before your trip. Check to see if the policy you are considering requires you to purchase within a set time period after you’ve booked your travel. For trip cancellation insurance, you won’t be covered if you buy the policy after you’ve become ill or natural disaster has wiped out your vacation destination.

• Not every trip needs travel insurance. If your total trip is a couple hundred dollars in airfare, travel insurance probably isn’t worth it.

But if you’re taking the trip of a lifetime and spending thousands, travel insurance is a good consideration.

• Don’t fall for high pressure sales tactics. Don’t let someone pressure you into buying travel insurance right away. You are the only one who can decide if you truly need it.

• Pay with a credit card. Protect yourself further by paying for travel related expenditures, including insurance, with a credit card. Ask your credit card issuer if there are additional protections that come with your credit card. Some travel insurance may be built in to your credit purchases.

Briefs Health screenings PRINCETON ­— Health screenings will be offered July 28 from 6:30 to 9:30 a.m. in the White Oak Classroom at Perry Memorial Hospital. A lipid profile test, which includes total cholesterol, HDL, LDL and triglycerides will be offered at $25. The following other tests will also be offered: Chemistry Profile for $31, Thyroid-TSH for $23 and Hemgram for $9. All tests except the Hemogram and ThyroidTSH require 12 hour fasting. Book fair, bake sale PRINCETON — The Perry Memorial Hospital Auxiliary will sponsor a book fair from 7 a.m. to 4 p.m. Thursday, June 20, and Friday, June 21. A bake sale will be from 7 a.m. to noon Friday, June 21. Both events will be held in the Medical Office Building lobby at Perry. Each year the Auxiliary hosts a variety of events to raise money to purchase equipment for the hospital.

In addition to various fundraisers, the Auxiliary operate the gift shop in the hospital’s main lobby.

Engine, tractor show SANDWICH — The 42nd annual Sandwich Early Day Engine and Tractor Club show will be from 9 a.m. to 4 p.m. Saturday and Sunday, June 29-30. This year’s feature is International Harvester equipment. The consignment auction is 9 a.m. Saturday followed by parades on the grounds at 2 p.m. and on Main Street at 5 p.m.

On Sunday, the 8:30 a.m. church service will be followed by the Rock County Pullers at 10 a.m. The new 23-mile tractor ride will be Sunday, leaving the fairgrounds at 8:30 a.m. On both days are horse-drawn wagon rides, engines display, all makes of tractors and machinery, a working sawmill, toy show, antique truck display, corn shellers, food and flea market vendors. Food court How about some simple ideas for easy breakfasts that are easy to fix and quick on a hot summer day — especially when you’d rather be with your family and friends instead of in the kitchen.

Flaky Ham and Egg Bake 1 8-ounce tube refrigerated crescent rolls 6 eggs, beaten 1/2 cup mushrooms, chopped 1 cup cooked ham, chopped 1 1/2 cups chopped cheddar cheese Lightly spray a 9-inch pie plate with non-stick vegetable spray. In a single layer, arrange unrolled crescents in pie plate, pressing seams together. Pour eggs over top. Sprinkle with mushrooms, ham and cheese.

Bake, uncovered, at 375° for 15 to 18 minutes, until golden. Serves 6.

Use one tablespoon of butter to grease a 13-by9-inch baking pan. In a large bowl, combine remaining butter with eggs, onion powder, baking mix, milk and cheeses. Pour into pan. Bake, uncovered, at 325° for 40 to 45 minutes or until lightly golden Serve over biscuits. Serves 8.

Quick Quiche Lorraine 1 9-inch pie crust 6 thick slices bacon, halved and crisply cooked 12 slices Swiss cheese halved 4 eggs 2 cups light cream 1 tablespoon all-purpose flour Nutmeg, cayenne pepper and black pepper to taste Line a 9-inch pie plate with crust. Over lap bacon and cheese slices to cover bottom of crust. In a bowl, combine eggs, cream, flour and seasonings to taste, beat well. Pour over bacon and cheese. Bake, uncovered, at 400 degrees for 15 minutes. Reduce heat to 325°. Bake for an additional 30 minutes. Serves 6.

Add onion, sauté until tender. Add sausage, stir until browned. Add tomato, cook until heated through. Add eggs, scramble as desired. Season with salt and pepper. Wrap tortillas in a damp tea towel, microwave 30 seconds until heated. To serve, spoon egg mixture into tortillas top with salsa and roll up. Makes 4 to 6.

Rabbit Scones

4 cups shredded Italian blend cheese 1 cup pepperoni, diced 10 eggs, beaten 1 1/2 cups milk 1/4 teaspoon dried basil 1/4 teaspoon dried parsley Spread cheese in a greased 13-by-9-inch baking pan, sprinkle with pepperoni. In a large bowl, whisk eggs with milk and seasonings. Pour mixture over cheese and pepperoni. Bake, uncovered, at 400° for 20 to 25 minutes or until a knife tip inserted in the center comes out clean. Let stand for 10 to 15 minutes before serving. Serves 12 to 14.

1 8-ounce package cream cheese, softened 1 8 1/4-ounce package carrot cake mix 1/3 cup half and half 1 egg, beaten 1/2 teaspoon cinnamon 1/4 cup chopped walnuts 1/2 cup raisins 1/2 cup cream cheese frosting, warmed In a large bowl, cut cream cheese into dry cake mix using a fork or a pastry blender until mixture resembles fine crumbs. Stir in half and half, egg, cinnamon, walnuts and raisins until stiff dough forms. On a floured surface, knead dough 6 times. Divide dough in half, form each half into a ball. Press each dough ball into a circle about 3/4-inch thick and 6 inches in diameter. Cut each circle into 6 wedges. Place one inch apart on a lightly greased baking sheet. Bake at 375° for 18 to 22 minutes or until edges begin to turn golden. Move to a wire rack; cool for 10 to 15 minutes.

In a small microwave-safe bowl, melt frosting. Drizzle over scones. Makes one dozen.

Breakfast Apple Sandwiches

Hearty Sausage Squares

1 16.3-ounce tube refrigerated jumbo biscuits 1 8-ounce package shredded Cheddar cheese, divided 2 apples, cored and sliced into 16 rings 2 tablespoons cinnamon 1/4 cup brown sugar, packed 1/4 cup butter, melted Split biscuits. Lay each biscuit half on an ungreased baking sheet. Sprinkle about 2 tablespoons of cheese on each biscuit. Top with an apple slice. In a bowl, mix together cinnamon and brown sugar. Spoon some cinnamon sugar on top of each apple slice. Top with a small amount of butter. Bake, uncovered, at 400° for 15 to 20 minutes or until golden. Makes 16.

1 pound ground pork sausage 1/2 cup onion chopped 1/4 cup grated Parmesan cheese 1/2 cup shredded Swiss cheese 1/4 teaspoon hot pepper sauce 1 1/2 teaspoons salt 1 tablespoon dried parsley 2 cups baking mix 2/3 cup milk 1/4 to 1/2 cup mayonnaise 1 egg yolk, beaten In a skillet, cook sausage and onion over low heat until sausage is browned; drain. Add cheeses, egg, hot sauce, salt and parsley. Stir until blended and cheeses are melted. In a bowl, stir together baking mix, milk and mayonnaise until dough forms. Spread half the dough in a greased 8-by-8-inch baking pan. Cover with sausage mixture. Spread remaining dough over top. Brush with egg yolk. Bake, uncovered, for 25 to 30 minutes at 400° until golden. Cut into squares.

Serves 4 to 6.

Homemade Granola Bars

Sour Cream Coffee Cake 1 18 1/2-ounce package yellow cake mix 1 3.4-ounce package instant coconut pudding mix 4 eggs, beaten 1/2 cup oil 1 cup sour cream 1 1/2 tablespoons lemon extract 3/4 cup sugar 1 1/2 teaspoons cinnamon 1 teaspoon nutmeg 1/2 cup chopped walnuts Stir together dry cake mix, dry pudding mix, eggs, oil, sour cream and lemon extract in a large bowl. In a separate bowl, mix together remaining ingredients.

Stir sugar mixture into cake mix mixture, pour into a greased and floured Bundt pan. Bake at 350° for 1 hour or until a toothpick comes out clean. Serves 10 to 12.

Breakfast Pizza 2 6-ounce tubes refrigerated crescent rolls 1/2 pound ground pork sausage, browned and drained 1 1/2 cups frozen shredded potatoes, thawed 5 eggs 1/2 cup milk Salt and pepper to taste 2 cups shredded mozzarella cheese 1/2 cup shredded cheddar cheese Press crescent rolls into an ungreased pizza pan or a 13-by-9-inch baking pan, sealing all seams. Sprinkle sausage and potatoes over top. In a bowl, beat eggs, milk, salt and pepper. Pour egg mixture over sausage and potatoes. Sprinkle with cheeses. Bake, uncovered, at 425° for 25 minutes or until golden. Serves 10 to 12.

Overnight Caramel Rolls 1 25-ounce package frozen dinner rolls 1 3-ounce package cook and serve butterscotch pudding mix 1/2 cup brown sugar, packed 1/2 cup butter, melted Evenly space rolls in two greased 13-by-9-inch baking pans. Sprinkle dry pudding mix and brown sugar over rolls, drizzle with melted butter. Cover with a tea towel, let rise at room temperature over night. Bake, uncovered, at 350° for 25 minutes or until golden Makes 20.

A Little Bite of Heaven Breakfast Bake 1/2 cup butter, melted and divided 6 eggs, beaten 1 teaspoon onion powder 1 cup biscuit baking mix 1 cup milk 2 cups small curd cottage cheese 2 cups shredded Monterey Jack Cheese 8 biscuits

Pepperoni Pizza Egg Casserole

Sweet Jam Muffins 2 cups biscuit baking mix 2 1/2 tablespoons sugar 1/4 cup cold butter 2/3 cup milk 1/4 cup jam, any flavor, divided In a bowl, combine baking mix and sugar. Cut in butter until mixture resembles coarse crumbs. Stir in milk just until moistened. Mixture will be thick.

Spoon one tablespoon batter into each of 9 greased muffin cups. Top each one with one teaspoon jam.

Spoon remaining batter equally into muffin cups.

Bake at 425° for 12 to 14 minutes or until muffin tops are lightly golden. Cool in tin for 5 minutes. Remove to a wire rack. Drizzle with orange glaze (recipe follows). Makes 9.

Orange Glaze 1/2 cup powdered sugar 2 teaspoons orange juice In a small bowl, whisk together ingredients until smooth.

Smoked Sausage Breakfast Burritos 1 to 2 tablespoons olive oil 1 onion, diced 14 ounces smoked pork sausage ring, diced 1 tomato, diced 6 eggs, beaten Salt and pepper to taste 4 to 6 flour or corn tortillas Garnish: salsa Heat oil in a large skillet over medium high heat.

2 cups quick cooking oats, uncooked 1/2 cup chopped nuts 1/2 cup raisins 1/2 cup unsweetened flaked coconut 1 cup brown sugar, packed 1 egg, beaten 1 teaspoon baking powder In a bowl, combine all ingredients. Press into a greased 9-by-9-inch baking pan. Bake, uncovered, at 350° for 20 to 25 minutes. Score bars while still warm.

Cool. Store in an airtight container. Makes 1 dozen.

Library Corner reading program, Have Book-Will Travel, with a celebration complete with pizza. Awards for reading during the month of June will be presented. The staff encourages students to continue reading during the summer to help retain more from last year’s studies.

TISKILWA – The Tiskilwa Public Library will kick-off its summer reading program, Have Book-Will Travel, on June 24. A special program will be held on this day from 4 to 5 p.m. “The Galena Trail” presented by Patricia Goitein from Peoria will feature what it would be like for children growing up along the pioneer trail. A log cabin craft and treats will be provided. Children are encouraged to read and complete reading logs in order to redeem them for unique and fun prizes.

BUDA – The Mason Memorial Library is gearing up for its summer reading program, Have Book-Will Travel, for children in grades kindergarten to fifth grade. Stories, crafts and games will be provided. Programs will be held on Tuesdays in July from 1 to 2:15 p.m. The first program is July 9.

DEPUE – Work crews are hard at work making repairs to the Selby Township Library building as a result of a grant through the Illinois State Library. The library will remain open during construction.

The summer reading program continues. All kids who complete the program will receive a bag of school supplies at the end of summer.

SHEFFIELD – The Sheffield Public Library is hosting its summer reading program, “Sheffield’s Got Talent” during the month of July. Participants will meet some of Sheffield’s most talented people who will demonstrate their expertise and share their stories. The children will also have the opportunity to listen to stories, discover their hidden talents, play games, win prizes, read and participate in a talent show. Children ages 5 to 7 will meet on Tuesday mornings from 9:30 to 11 a.m. beginning July 9. Children ages 8 to 11 will meet on Wednesdays from 9:30 to 11 a.m. beginning July 10.

The library staff is also gearing up for its 100-year celebration of the Carnegie library.

LADD – The Ladd Library is now accepting registrations for its summer reading program, Have Book-Will Travel.

The whole family is invited to explore the Jurassic period.

Wednesdays are wild at Starved Rock Lodge Z Tour bike ride returns to Princeton PRINCETON — On July 20, the Zearing Child Enrichment Center will again sponsor the “Z Tour Bike Ride,” a bicycle road ride originating in Princeton and including surrounding communities.

The event will begin at Zearing Park in Princeton and will include the registrant’s choice of a 10-mile, 29-mile, 40-mile, 50-mile, 62-mile or 100mile ride on specified routes throughout Bureau County.

The event will feature themed refreshment stops, mobile emergency first aid, water, air and bike transportation. At the conclusion of the ride, each rider will be provided a complimentary lunch at Zearing Park.

Additionally, a limited quantity of Z Tour Bike Ride dri-fit sport T-shirts and cycling socks will be available for purchase. A commemorative Z Tour

Bike Ride jersey will also be made available for purchase.

Brian Church, Z Tour director, remarked, “We are really looking forward to continue to build on the success of the first two events. This year, we are hoping to host at least 400 riders. 60th anniversary Korean War National Museum events begin Saturday SPRINGFIELD – Illinois veterans have been providing their accounts and histories of the Korean War through the Korean War National Museum (KWNM) in Springfield’s speaker series. The museum’s fourth event featuring veterans and others from “The Forgotten War” is at 2 p.m.

June 22 at 9 Old State Capitol Plaza in Springfield when Maija Rhee Devine, wife of former Illinois Historic Preservation Agency Director Michael J. Devine, will relate her experiences in the conflict.

Guests will have a chance to meet Devine and listen to her experiences and ask questions. Students, educators, and media are welcome and encouraged to attend. Visitors may also review the museum’s memorabilia, uniforms and artifacts.

Devine was a child in Korea when war broke out. She will read from her novel, “The Voices of Heaven,” set during the Korean War and relate her experiences, particularly of South Koreans’ gratitude toward the United Nations and U.S. intervention during the war and appreciation for the U.S.-Korea alliance.

Other events are planned to honor the July 27, 1953, armistice and the men and women who served in the conflict. Speakers currently scheduled to talk at the Korean War National Museum include Edmund Wehrle, PhD. Aug. 31 and Floyd Cooper, Marine (Ret.) Sept. 14, both at 2 p.m.

Additionally, the movie “Chosin” will be shown at the Illinois State Museum’s Thorne Deuel Auditorium July 27 at 7 p.m. The Brian Iglesias documentary is about the Chosin Reservoir Campaign, a decisive battle in the Korean War, a brutal 17-day encounter in sub-zero weather in the winter of 1950 in which United Nations troops nicknamed the “The Chosin Few” including U.S. soldiers and Marines were encircled and outnumbered by Chinese troops.

Decorating the maypole at Bishop Hill.

A summer solstice rich in Swedish tradition BISHOP HILL – Bishop Hill’s Midsommar Music Festival will celebrate the summer solstice in true Swedish fashion on Saturday, June 22.

A traditional maypole decoration and procession, live music and a festive barn dance are highlights of the all-day event.

The celebration begins at 11 a.m. with the Black Hawk Pipes and Drums kicking off a full lineup of musical acts on the festival’s main stage.

The park gazebo in the center the village square will host these performances.

The music will continue with Jansson 5 at noon, Lewis Knudsen and the Bandits at 1 p.m. and The Hollands at 2 p.m. The Bob Burns Duo will conclude the main stage lineup with a performance at 3 p.m.

Activities centered on the maypole, a tradition rooted in Swedish history, will carry the festival into the evening.

The decoration and dressing of the maypole begin at 4 p.m. in the park before accordionist Ernie Sandquist leads a public procession to the Colony School. Dancing and refreshments will accompany the arrival of the maypole.
