Batavia residents displays art at local shop BATAVIA – Limestone Coffee and Tea Shop, 8 W. Wilson St., Batavia, is promoting local artists with photography by D Walz and original art by Kevin Hoepper. Walz, a Batavia resident, offers framed local and national landscapes. Hoepper offers framed, acrylic paintings of seascapes and city scapes from around the world. The exhibit will continue through December. Batavia celebrates new year, birthday
BATAVIA – All Batavians are invited to ring in the new year on the Riverwalk in downtown Batavia from 9 to 9:30 p.m. Tuesday, Dec. 31. The Riverwalk is at 100 N. Island Ave., Batavia. The Fireworks Committee, the city of Batavia, and the Batavia Park District are kicking off Batavia’s 180th birthday with a performance of the Batavia Community Band, a luminaria display, and a mini fireworks show on the Riverwalk. Hickory Knolls Winter Olympics set for Jan. 5
ST. CHARLES – The Hickory Knolls Discovery Center’s third annual Winter Olympics will take place from 1 to 2:30 p.m. Sunday, Jan. 5, at the center, 3795 Campton Hills Road, St. Charles. The event is for those ages 6 and older, who will compete in snowshoe relays and other games, then toast the “closing ceremonies” with hot chocolate. If the weather does not permit outdoor activities, program will be held indoors with ice cubes, cotton balls and marshmallows substituting for nature’s snow and ice. Light finders supports those affected by suicide GENEVA – Light Finders, a support group for survivors of suicide loss, is being offered by Fox Valley Volunteer Hospice. The group meets from 6:30 to 8 p.m. Thursdays, Jan. 9 to Feb. 16, at FVVH, 200 Whitfield Drive, in Geneva. The program

Student artist event holding auditions
ST. CHARLES – The inaugural Charlie’s Center for the Arts – Student Artist Event will run from Friday, Feb. 14, through Sunday, Feb. 16. Students are invited to participate in the event audition and submit visual artwork for jurying. Breisch on Dec. 19 announced his resignation as executive director. His resignation is effective Friday, Jan. 31, the same day the Batavia Chamber of Commerce will present its annual Batavia Citizen of the Year award and Ole business awards. Breisch has been with the chamber since July 2004. “It’s just time,” he said. “For a whole lot of reasons. Chambers constantly need to be reinvented, and I’m not sure I’m the right guy for that. So I’m giving the board the opportunity to cast the net, and see who is out there that might have a new vision.”

Batavia Chamber of Commerce Executive Director Roger Breisch announced his resignation from the chamber Dec. 19, effective Friday, Jan. 31. Breisch said chambers of commerce need to constantly ask the question, “what does it mean to be the voice of business?” “I think we’ve reinvented the chamber here over the
last 10 years,” Breisch said. “It’s a very different organization now than it was 10 years ago. But you can’t stop reinventing yourself.” Breisch said he is proud of the fact that member-
ship in the chamber has increased in his tenure. “Owners of very large businesses and owners in general now regularly participate in the chamber,” Breisch said. “And from the
industrial park, we have very senior business leaders now who give credence and credibility to the Batavia Chamber of Commerce. It is an organization that does have a strong voice in the community.” The chamber currently has about 300 members, he said. Breisch has been getting involved in Batavia ever since he moved to the city in 1989. His other activities have included being the chairman of the Batavia Fireworks Committee for 17 years. Batavia Mayor Jeff Schielke lauded Breisch’s contributions to the city. “He’s brought a visionary drive to the job,” Schielke said. “He has been a driving force on the whole idea of downtown redevelopment and strengthening the city’s industrial base. He has helped us see wider horizons.”

The holiday season is a busy time – the hustle and bustle of shopping for that perfect gift, family parties, school concerts, prepping your house for out-of-town guests, and the list goes on. It’s so easy to get wrapped up in the stress of it all, but one local business owner wants Batavians to slow down and take a moment to think peaceful thoughts. Craig Foltos, owner of Foltos Tonsorial Parlor, wanted to bring a little peace to downtown Batavia. He came up with an idea to add a piece of art to the pedestrian bridge that would also have a positive message. “I see the bridge every day, and it needed some art work,” Foltos said. “I wanted it to be something that would help put good thoughts in people’s heads. What better message than peace?” Years ago, Foltos approached Chris Behmer, former Batavia Park District
District Board of Commissioners in April 2011 officially named the bridge Peace Bridge. Every year since, the park district’s parks department has undertaken the great effort of installing the letters. It takes three staff members a total of eight hours to install the 12-foot-tall letters in “Peace” and “Earth” and the 8-foot-tall letters in “On.” But the effect the sign has had on the community has been well worth the effort. “I can’t tell you the number of people who tell me they love the sign,” Foltos said. “People use it on their Christmas cards, and you can regularly see people taking pictures of it.” Earlier this year, Foltos spearheaded efforts in cooperation with the park district and city of Batavia, to light the sign. Key players began brainstorming fundraising opportunities when an anonymous donor came forward to provide the lighting. The “Peace on Earth” sign was officially dedicat-

DIXON – Shaw Media announced Dec. 23 that it has agreed to acquire the assets of The Herald-News in Joliet from Sun-Times Media. The purchase is expected to close during the first week of January. Terms of the deal were not disclosed. The Herald-News has been serving Joliet, Will County and Grundy County communities for more than 150 years and will continue as part of Shaw Media’s newspaper group. “We are excited to bring The Herald-News into our established, and growing, family-owned media portfolio,” Shaw Media President John Rung said. “We expect to maintain the storied tradition of serving the Joliet region with a high-quality, community-oriented newspaper.” “We have found a great buyer for The Herald-News in Shaw Media,” said Tim
Knight, president of SunTimes Media. “This sale will allow the Sun-Times to focus its resources on transforming its core products.” Shaw Media, based in Dixon, is the third oldest continuously owned and operated family media company in the nation. It is the parent company of the Kane County Chronicle and The Republicans. The purchase of The Herald-News adds to Shaw Media’s growing portfolio of publications in the Chicago suburbs. BATAVIA – Mary Kay Longwell was not surprised to hear about U.S. Air Force Captain David Bergeron helping save the life of a soldier who was suffering from respiratory failure. Longwell knew the Batavia native when he was a member of Boy Scout Troop 21 with her two sons, who were younger than Bergeron. At the time, Longwell was an assistant scoutmaster with Troop 21. “He was a real good role model,” Longwell said. “My own son is a captain in the Army as well.” Earlier this month, Bergeron, a 379th Expeditionary Aeromedical Evacuation Squadron flight nurse, was part of an eightman team that saved the life of a soldier who was suffering from respiratory failure. The mission took place in southwest Asia.
He is based out of Pope Army Airfield in North Carolina, and his unit is regularly called on to perform such missions. His mother, Rita Bergeron, is proud of her son. She read about his latest mission and saw his photo in a story published by the military. “My son works very hard and is very committed to his mission there,” she said. “We are glad that he and his team do such a good job.” David Bergeron, 28, is a 2003 graduate of Marmion Academy in Aurora. “He has always loved the military,” Rita Bergeron said. “It’s been a nice fit for him.” Because he is often away on missions, he doesn’t get home on a regular basis. But he keeps in contact with his family. “We Skyped on Thanksgiving,” Bergeron said. “He will probably be home in February.”

ELGIN – The Elgin Community College District 509 Board this week approved a $55.5 million levy for 2013, a 1 percent increase over last year’s request of $55 million, officials said. The increase will raise property taxes on a house valued at $250,000 by $21, said Sharon Konny, the college’s treasurer. Taxing bodies in Illinois make their levy requests to the county based on what they need and the equalized assessed value of property within the district. The
board acted to accept the levy in a 6-0 vote with one absent after a levy hearing. The college could have levied a maximum of 1.7 percent, the consumer price index, but Konny said levying to the max was not necessary. “We have a calculation we go through that helps us determine what our levy is,” Konny said. “The purpose of levying more than what we collect is to make sure we are capturing enough, primarily from new property that comes on the tax rolls. There is not a lot of new property coming on the rolls. We feel a 1 percent increase … will

Rosati’s to celebrate 50th anniversary By NICOLE WESKERNA nweskerna@shawmedia.com Fifty years ago, Rosati’s Pizza found its niche in delivering pizzas when that concept still seemed foreign to many restaurants, said Marla Topliff, president of the restaurant franchise. In 2014, Rosati’s Pizza will celebrate a half-century since opening its first restaurant in a Chicago suburb in 1964. But the restaurant’s roots actually go back to 1927, when Ferdinand Rosati traveled to the United States from Naples, Italy. He opened a restaurant on Taylor Street in Chicago called Rosati’s Restaurant, Topliff said. She said the restaurant became known for serving flatbread with garlic and olive oil, which is how the pizza restaurant got started. “He started expanding and started making more and more pizza pies,” Topliff said. “Sam [his son] came into the business with him as the chief cook and bottle washer, and took over when Ferdinand decided to go back to Italy.” Sam Rosati had 11 children, four of whom opened a Rosati’s Pizza restaurant in 1964, Topliff said. However, all 11 siblings and their spouses worked in the restaurant at some point, she said. “They had such a passion for the business, and they loved it,” Topliff said. “That passion has been passed down to the kids.” Back when the restaurant first opened in 1964, Rosati’s was delivering pizzas when few, if any, other restaurants were at the time, Topliff said. “That’s what we’re famous for,” she said. “It was such a new idea when they started delivering, people had a hard time wrapping their heads around that. We were one of the pio-

neers in that field. Pizza was actually the father of it all.” Five decades later, almost 200 Rosati’s Pizza restaurants now stand in 14 states. Several Rosati’s Pizza restaurants are located in the Kane County area, including Batavia, St. Charles, Elburn, Aurora and Elgin. Imran Kanchwala, manager of the Rosati’s Pizza on Kirk Road in St. Charles, said even though the restaurant is a fran-
chise, it still has a mom-and-pop feel. “My dad’s been with the franchise for 30 years, and my dad’s been in St. Charles for more than 30 years. We’re definitely part of the community,” Kanchwala said. “We’re still family-owned. My sister works here.” He said the restaurant often does fundraising and offers discounts to area schools. He said what sets Rosati’s apart from some other restaurant is the fact that the franchise owners and managers actually work on site and see their customers every day. “We get a lot of customer interaction,” he said. “Plus, it’s a
great product. It’s a great pizza, and that’s really what has gotten us so popular in this area.” Topliff said the Rosati family’s pizza recipe dates back about 100 years. She said the restaurant’s tomato sauce is blended specifically for them; they only purchase their flour from Winona, Minn.; their cheese all comes from one dairy farm in Wisconsin; and their sausage is made specifically for the restaurant. “Our pies have great flavor, and our customer service is great,” Topliff said. “People want a pizza place to call their own, and we want it to be Rosati’s.”
The restaurant continues to expand with its latest concept – pizza pub additions that are styled more like a family dine-in with televisions, a bar and family-friendly menu items. Two of those restaurants are located in Montgomery and Yorkville. Topliff said the franchise will likely be offering several specials throughout the next year, many of which will likely have to do with the number 50. “Rosati’s is very excited to be hitting this milestone,” Topliff said of the 50th anniversary. “We’re looking forward to having our children’s children’s children carrying it on another 100 years.”

Bien Trucha’s entire food and drink menu will be available at its neighboring sister restaurant, A Toda Madre. Bien Trucha specializes in Mexico City street food and has a margarita and tequila bar. The mimicking menu will take effect in January, but A Toda Madre’s seasonal menu – along with its full bar – will still be available. “It’s incredible how many times people tell us that they haven’t tried Bien Trucha because of the long waiting list, because they don’t have the time during lunch to wait for a table or simply because we don’t take reservations,” said owner Ricardo Garcia-Rubio in a news release. “ ... Many of them don’t even know the name of the restaurant and just referred to us as the place in Geneva with the long lines.” In the release, Garcia-Rubio said that both concepts have been successful, but they needed a way to accommodate the people who are discouraged by the long wait at Bien Trucha.

CHARLES – The Fine Line Creative Arts Center’s upcoming art exhibition, “Molten,” will be a nationally juried glass and metals show running from Saturday, Jan. 11, through Saturday, Feb. 15. “Molten” will take place in the Kavanagh Gallery on the Fine Line campus, and will feature wearable, decorative and functional creations formed of glass and/or metals. The Hawks, a co-op high school hockey club team that includes players from Batavia, Geneva, St. Charles East, St. Charles North, Kaneland and Aurora Central Catholic, were downgraded by the Hayes Suburban league from varsity-level status to JV status eight games into their rocky season. After losing their first game at the JV level, the Hawks swept a pair of games Dec. 15 for a sorely needed morale boost. Senior winger Mike Potvin, a Kaneland student, said the team has a much better chance to succeed playing other JV teams. “We have a couple guys who can play up there, and a lot of guys who can’t,” Potvin said. “So we did get tiered down, and that’s going to be pretty good for us because we could hold our own a little bit in varsity, so we should be able to rip it up in JV.” First-year Hawks coach Dan Bednarek said the Hawks have only four seniors and 17 players overall, a disappointment especially considering the number of schools from which the Hawks draw in their second year of the current arrangement. “It is surprising because based on the past levels I’ve played at, there have been a lot more kids my age on the team,” said Hawks center and St. Charles East senior Billy Petersen, one of the team’s top scoring threats. “This year we have got a young team, but we’re just making the best out of it. We’re just doing what we can.”

I like it better.” The Dec. 15 wins against the South Elgin-based Rampage injected new optimism as the team prepared for a practice this week at Fox Valley Ice Arena.
Sugar Grove resident Mike Hill, a senior at ACC and Hawks winger, said the wins lifted a burden from the Hawks. “Especially all in one day, 5-2 and then 6-0, it was a great feeling after losing all those games, finally winning,” Hill said. For the program’s many underclassmen, a season of JV hockey provides opportu-
nities to gain game experience without being overwhelmed by the opposition. The program’s veterans don’t look at the demotion the same way, but Potvin said he plans to make the best of the season. “It’s not much fun in your senior year playing JV hockey, but it’s high school hockey, so it’s fun anyways,” Potvin said.

Don’t peel it When you remove the peel or skin from fruits and vegetables, you lose a lot of nutrition — it’s a concentrated source of fiber, vitamins, minerals and potentially beneficial phytochemicals. Here are some facts you might not know about peels, from the University of California, Berkeley Wellness Letter: 1. Vegetable peels or skins are particularly good sources of insoluble fiber, which helps prevent constipation. Some peels, notably apple, are rich in pectin, a soluble fiber that helps lower blood cholesterol and control blood sugar. 2. Apple peels may help prevent cancer. Lab research has found that whole apples have a much greater effect on cancer cells than peeled ones, probably because of the antioxidants in the skin. 3. Potato skins have far more fiber, iron, potassium and B vitamins than the flesh. Potato skins are also rich in antioxidants. 4. You don’t need to wash fruits and vegetables in soap — plain water is fine. It will remove nearly all dirt, as well as bacteria and some pesticide residues, if any are present, on the surface. Scrub firmer produce like potatoes with a vegetable brush. The wax on fruits and veggies is harmless.

Onion Crumb Brussels Sprouts Casserole Serves 12. • 1/2 cup Country Crock Spread, divided • 2 cups chopped onions • 3/4 cup panko bread crumbs • 8 cups cooked Brussels sprouts (or thawed frozen), halved • 1 cup fat-free half and half Preheat oven to 375 F. Melt 4 tablespoons Country Crock Spread over medium-high heat in large nonstick skillet and cook onion, stirring occasionally, until golden brown, about 8 minutes. Add crumbs; cook, stirring until lightly toasted, about 2 minutes; remove to bowl. Melt remaining spread in same skillet. Add Brussels sprouts; toss. Stir in half and half and 1/2 the crumb mixture. Pour into shallow 2-quart baking dish. Sprinkle with remaining crumb mixture. Bake 25 to 30 minutes or until bubbly around edges.

Holidays are often stuffed with our favorite foods of all time. However, when you rely on old standbys just because they are familiar, it lessens the potential pizzazz. The ideas that follow — they each take just seconds to read and are almost that quick to prepare — prove that virtually any winter holiday staple (like potatoes, stuffing or pumpkin) can be twisted and turned into a new holiday masterpiece on demand. Better yet, rather than starting from scratch, they can improve the meal for just pennies per serving. Food preparation — even for holiday guests — can be easy, nutritious, inexpensive, fun and fast, as the following split-second sensations prove. The dishes are delicious evidence that everyone — including you and your kid helpers — has time for tasty home cooking and more importantly, the family time in the kitchen that goes along with it! Another benefit: You effortlessly become a better cook, even when preparing holiday specialties, since there are no right or wrong amounts. These are virtually-can’t-go-wrong combinations, so whatever you choose to use can’t help but
Stuffed muffins: Stuffing doesn’t always need to be stuffed into something. It can make quite a statement on its own. Fill either regular-sized or minimuffin trays with cooked stuffing and bake or form it into loaves. Or stuff the stuffing, by placing a surprise, like a prune or a green olive, in the middle of a stuffing muffin. Main course: Stuffing can function as a surprising course, rather than its usual side dish status. Substitute seasoned, dry stuffing mix for the bread, or along with it, in your favorite bread pudding recipe for a kick.
Ham or turkey New glaze: Give your glaze a fresh outlook, and create an innovative meal theme at the same time. For Hawaiian flair, for instance, glaze with a syrup you’ve created as it reduces while you are stirring on the stovetop from coconut milk, pineapple juice, freshly ground black pepper and cayenne pepper. Turn it into a theme by adding chopped macadamia nuts and fresh pineapple chunks to your side dishes and a drizzle of bottled guava, papaya or mango nectar to your pumpkin or apple dessert pie before baking. Then, top it with sprinkles of sweet-
ened coconut flakes just before serving. Gravy upgrade: As good as they are, gravies and sauces are often bland. Why not perk them up a bit as they heat. Consider adding just a dash of strategic flavor, like cayenne and chopped jalapenos (experts recommend wearing latex gloves and not touching your eyes during or after handling peppers); finely diced garlic and pumpkin pie spice; or peach jam or allfruit, no-sugar spread (also available in the jam aisles of most supermarkets) and curry powder.
Sweet potatoes Baked buffet: Instead of a casserole, consider baking sweet potatoes to serve to guests individually, along with a buffet of toppings, such as honey, pure maple syrup, mini marshmallows, composed butters (like those to which you’ve added freshly chopped herbs or spices) or a mixture of diced dried fruit like cranberries, golden raisins, apricots and figs. Standout substitute: Mix in or substitute sweet potatoes for pumpkin in a dessert pie or muffins. Sweeten a sweet potato puree (made from the flesh of peeled sweet potatoes) with honey or brown sugar, warm it and use as a dessert topping for vanilla ice cream that you then top with
browned, melting mini marshmallows and toasted walnuts.
Pumpkin or apple Cozy cocktail: Consider a toast with mini pumpkin or apple smoothies (or a combination of both) during appetizer time or to start off the meal. In a blender, to vanilla soymilk, add a dash of canned pumpkin pie filling or apple pie filling, banana, pumpkin seeds, candied pecans and ice. Blend until smooth. Side surprise: Add minced, unpeeled pumpkin or apple to your stuffing or green bean casserole before cooking, as well as a sprinkling of pumpkin pie spice or cinnamon and crushed graham cracker crumbs. The same additions can be made to a mixed green or spinach salad if you cube and roast the pumpkin first. (Apples, of course, can be used raw.) You can serve it warm on top of the salad for a wilted effect, or let it cool first. Drizzle with roasted pumpkin seeds and poppy seed-based salad dressing, or raspberry vinaigrette.
