Vernie’s

balances home, valance style

For 50 years, Vernie’s Drapery Shop has been spicing up windows in Creston. Located at 701 W. Townline St., Vernie’s makes custom window treatments of all styles.

Current popular styles are flat fashions, not ones that pop out, and geometrical and straight lines, while popular treatments have changed through the years. Gray is a current popular color.

Brother and sister duo John Spriggs and Jeanette Gildsig currently own Vernie’s. Their parents, Vernie and Alice Spriggs, opened the drapery shop in 1962 on Adams Street next to the Strand Theater. In 1963, the shop moved to its current location.

“Over the years, things have changed from drapery to blinds,” said Gildsig. “Then there was verticals. Now, the hottest things that are going are sunscreens.”

“My mother still comes out and watches the store every once in a while,” Gildsig said.

Options Vernie’s offers many different kinds of window decorations. The store carries high-end drapes, blinds, wood blinds, faux wood blinds, mini blinds, plantation shutters, verticals, sunscreens, roller shades, roman shades and top treatments, as well as other designs.

“Anything that has to do with windows, we do,” said Gildsig.

Process The custom window treatments are made in the back of the store after Gildsig and Spriggs look at the style of house and discuss with customers what they want. Gildsig said she and Spriggs measure the windows, assemble the treatment and install the window treatments.

“We have two work rooms where we do the drapery, and make it,” said Gildsig. “So, we change hats a lot. We do free measuring, (and) free installation. ... What we make, we install.”

The custom treatments have a range of costs, while name-brand products such as Kirsch and Hunter Douglas are available, and cost more.

“You know what I tell my customers?” Gildsig said. “If you like red, you put red in. If red is not the style, and you like it, you use red. Your decorating ideas are your decorating ideas. Not what is in style.”

Local work Vernie’s Drapery Shop has done work at the Iowana Hotel and Greater Regional Medical Center, as well as Green Valley Manor after the April 14, 2012, tornado.

“My brother has done several home shows in Des Moines,” Gildsig said. “Using his eye for color and design. And, he would start out with a house, ... and he had to do the window treatments in the house.”

Windy Acres Antiques

by Sarah Brown On a pasture — just on the edge of

Creston — sits an antique emporium, which features a slew of curious collectibles and uncommon objects.

Windy Acres Antiques was opened November 2005 by Rex and Lois Daub, who began seriously collecting items for their store in 1994.

When talking with the Daubs, it’s apparent Windy Acres Antiques is more than a store — it’s a lifestyle.

The store, which is set up in a series of themed alcoves, ranging from vintage linens and decorative dishes to apothecary bottles and cast iron banks, will amaze and surprise you. Despite the organization, it is easy to walk through the store numerous times and discover something you missed on the previous pass through.

What you’ll find

“I try to have a variety of things,” said Lois Daub. “Sometimes, someone wants a pretty dish, or someone wants furniture. Some of it is collectibles. Not all of it is antique.”

In a corner, a chalkware doll — also known as a “Kewpie” — smiles coyly on a shelf.

Kewpies were one of many carnival chalkware figurines from the 1930s through 1950s, which could be won at carnival, boardwalk and resort-game booths. Some people may even remember having a chalkware coin bank, which had to be broken to cash out.

Hall China was designed to emulate the dishware made in China during the Ming Dynasty. Hall China’s durable and nonporous quality was made possible by a single fire process developed by Robert Taggert Hall.

Racks of pristine vintage linens, which were carefully sewn and embroidered by hand, are sure to bring a bit of nostalgia for any woman who had a grandmother who made a custom cotton nightgown for them as a young girl.

For years, Rex Daub offered refinishing and painting services for old and new furniture, frames and other objects. Inside Windy Acre Antiques, Rex’s work can be seen in every

painting services for old and new furniture, frames and other objects. Inside Windy Acre Antiques, Rex’s work can be seen in every corner, from the shabby chic furniture for sale to the custom displays upon which Lois’ collectibles sit.

Daub said she is always looking for new items for Windy Acres Antiques and will frequent Junk Jubilee in Des Moines or find estate sales in neighboring towns.

“We go almost every weekend,” said Daub.

“Sometimes we will go to two in a weekend, or a day.”

Upper Crust sticks to natural ingredients

You don’t usually think healthy living when you think chocolate cupcakes and pumpkin donut holes. But, of the different facets Upper Crust Culinary Creations shows off, one is clean eating when it comes to meals.

Healthy

Upper Crust, owned by Christy Whited and Cynthia Wolf at 201 W. Adams St., takes a clean approach to food. They offer sugar-free, low-fat and gluten-free bakery items, and vegetarian lunch options.

One thing the shop prides itself on is offering fresh fast food, where it’s quick to buy, but nothing is fried.

“We’re doing fast food, but it’s not junk fast food,” said Wolf. “It’s fast food fresh. ... For starters, nothing is fried.

And, we’re going to be using a lot more (food) from the Farmers’ Market, so we’re excited about that opening.”

Whited and Wolf also repurposed bread pans to grow herbs, such as basil, in a window sill garden.

Bakery goods

One facet Upper Crust is known for is its baked goods.

Whited and Wolf offer an assortment of bakery bars, breakfast bars, cheesecake, cookies, donuts, cakes and cupcakes.

“We try to have a gluten-free item regularly. We do sugar-free cookies and cakes, gluten-free cakes (and) gluten-free brownies,” said Wolf.

available. There is a variety of cookies, such as chocolate chip Butterfinger, and cupcakes, like red velvet with cream cheese icing and chocolate with chocolate icing.

Upper Crust’s cheesecake is an original recipe, and different flavors are offered.

“Cheesecake is always in the case. We make our own cheesecake,” said Whited. “It’s a recipe that I created through trial and error of about five or six different (ones). It’s kind of a hodge-podge of cheesecake recipes.”

The shop also offers wedding cakes, cupcakes and decorated cakes in flavors such as pina colada, key lime or fresh strawberry, but do all kinds of sugary treats.

Meals

Upper Crust offers different items for lunch, such as salads, paninis, quiche and braids. The newest item on the menu is the mediterranean chicken panini.

The newest meal option available is frozen meals to go. This option is aimed at busy small-business owners. The meals are partially cooked, and can be popped in the oven for a quick dinner. Some meals available are chicken pesto penne, lasagna and different soups.

Catering is also a facet of what Upper Crust offers. The shop does large-scale, small-scale and in-house catering. Their space can be rented for sit-down dinners, cupcake-decorating parties or baking classes.

air-conditioning, farmhouses would often have a separate building where they would cook meals, preserve garden-fresh produce, and bake goodies. Having a separate building meant the cook would not have to heat the main house while the food was being prepared. This building was known as the Summer Kitchen, a cozy place where family and friends would gather for conversation and good food.

So, let’s move to the Summer Kitchen (outside), and get to grilling! Smakelijk eten!

GRILLED CHICKEN Rub: 1 teaspoon kosher salt or sea salt 1/2 teaspoon garlic powder 1/3 teaspoon onion powder 1/2 teaspoon parika 1 Tablespoon dried parsley 1/4 teaspoon freshly ground black pepper In small bowl, mix the rub ingredients crushing the dried parsley Chicken: 1 whole chicken, about 5 pounds, excess fat removed 1 cup of your favorite BBQ sauce, optional Place chicken, breast side down, on a cutting board. Using a knife or poultry shears, cut along the backbone or have your butcher butterfly a whole chicken. Open the chicken like a book; cut and discard wing tips (optional). Season the chicken with the rub. You can even put some of the rub under the skin. Good flavor!

Place the chicken, bone side down, on the grill.

Grill until golden brown, about 1 1/4 to 1 1/2

hours with the internal temperature reaching 165 degrees.

Transfer chicken to cutting board and let rest 5-10 minutes before serving. Cut chicken into serving pieces and serve with BBQ sauce if desired.

GRILLED SWEET POTATO AND VEGETABLE SKEWERS Ingredients: sweet potatoes, bell peppers (red, green, orange, etc.), red onion, zucchini and/or yellow squash, portobello or cremini mushrooms extra virgin olive oil kosher salt and freshly ground black pepper smoked paprika garlic powder dried basil dried oregano Scrub and dry sweet potatoes. Pierce several times with a fork. Bake or microwave until just knife-tender. (You don’t want them too soft or they’ll fall apart on the grill.) Cool before slicing into cubes.

Chop remaining vegetables into bite-size cubes. Thread sweet potatoes and vegetables onto skewers. Drizzle with olive oil and season with kosher salt and freshly ground black pepper. In a small bowl, combine a spoonful each of smoked paprika, garlic powder, basil, and oregano.

Sprinkle over each side of the skewers.

Preheat outdoor grill. Grill skewers until the vegetables are tender and slightly charred. Serve immediately.

PARADISE PINEAPPLE Glaze: 3/4 cup fresh squeezed orange juice 1 Tablespoon honey 1 Tablespoon fresh lime juice 2 teaspoons cornstarch 4 slices fresh pineapple, each about 1/2 inch thick 1 teaspoon cracked green or black peppercorns or coarse black pepper 4 scoops vanilla bean ice cream

In a small saucepan combine the glaze ingredients and whisk until smooth.

Bring to a boil over medium-high heat and cook until thickened, 1 to 2 minutes. Keep the glaze warm or reheat when ready to serve.

Prepare the grill for indirect cooking over medium heat.

Season both sides of the pineapple slices with the peppercorns/pepper.

(I know what you are thinking. I did, too. Just try it!) Brush the cooking grates clean. Grill the pineapple over indirect medium heat, with the lid closed as much as possible, until well marked, 6 to 8 minutes, turning once. Remove from the grill and serve each pineapple slice with a scoop of ice cream and some of the glaze drizzled over the top.

For more than 30 years Joyce Franklin has been a woman of the cloth — fabric that is.

Franklin opened her shop Knits and Other Notions in 1982 in a 200-square-foot building.

Today, with a new name, 6,400 square feet of space and 8,000 bolts of fabric, Franklin and her crew specialize in every phase of quilting.

The name was changed to Quilts and Other Notions to reflect what the business has become.

In addition to every color, kind and pattern of fabric imaginable, Quilts and Other Notions, 209 W. Montgomery St., offers quilting classes, specialty workshops, quilting retreats and hosts statewide bus tours and shop hops.

Franklin said quilting retreats have become popular. Groups of quilters get together, bring sewing machines, fabric and work on their projects in a social setting.

“They will last as long as whoever is the last one to leave, I go with them,” she said. “One from Ames can last until 1 (a.m.). Some of the others can’t last that long.”

Several years ago, Franklin expanded her businesses into an adjacent building, which she fondly refers to as the Creative Center.

Retreats are usually held over a weekend starting Friday until Sunday.

The Creative Center is where workshops are held and has opensewing times every Monday and the first Friday of each month.

Local quilting guilds have reserved times at the Creative Corner to work on their quilts.

“On Mondays, they can come and get help on anything they want,” said Franklin. “Some people stop in for software questions or embroidery questions or just sewing, serging.”

“They just sew for three days,” said Franklin.

Quilts and Other Notions also sells sewing machines, sergers and quilting machines.

The store is on the map for tours of quilters who travel statewide to shops featuring quilting supplies — called shop hops.

“We have the All Iowa Shop Hop (June 1-20),” said Franklin. “I’m trying to work up a bus trip for that for our southwest Iowa corner of the state.”

“We sell and service Husqvarna sewing machines and sergers,” said Franklin. “We do the service for the machines right here in the building, which you don’t find in the cities too often. That’s why we get people from Des Moines, Omaha and Kansas City bring their machines here for service.”

Franklin said the business does not offer quilting for others.

“There are plenty of ‘long-armers’ out there with home businesses,” she said. “We certainly don’t want to step on their toes.

We sell them big machines, but we don’t do quilting.”

Franklin said she has eight or nine employees.

“We are all quilters who want to be in the mix, but none of us wants to work full time,” said Parrish. “So, we come here and run our legs off at least a couple days a week.”

Quilts and Other Notions is open 9 a.m. until 8 p.m. on Mondays and Thursdays and 9 a.m. to 5:30 p.m. Tuesdays, Wednesdays, Fridays and Saturdays. The store is closed on Sundays. CL

Carroll Family Chiropractic patients getting serious pain relief from acupuncture sessions

by Kyle Wilson Gabe and Linda Carroll started their business Carroll Family Chiropractic in May 2009 mostly offering adjustments and massage therapy.

Since then, they found a niche, though and now offer something locals can’t get unless you drive at least 30 minutes in any direction.

That something is acupuncture.

“We were noticing some common complaints from our patients including neck pain, headaches and joint pain, and the more research we did — it all pointed to acupuncture,” said Dr. Linda Carroll.

So, Linda Carroll took the steps necessary to offer the service receiving certification to practice acupuncture by Acupuncture Society of America in Kansas City, Mo., in June 2010.

Carroll had almost immediate response in the summer of 2010 for the service as several were driving out of town for acupuncture treatments anyway.

Today, almost three years later, Carroll said more than half of her weekly patients are acupuncture patients.

“I think the reason we are getting more and more acupuncture patients is that it works,” Carroll said. “Our patients are getting results. They are getting improvement in their level of pain, and

then they tell their friends.”

Carroll said many people are apprehensive about trying acupuncture because they don’t like needles. However, Carroll said the needles are very small — about 2 inches long — and insertion is typically painless.

After meeting with new patients, Carroll determines which points need to be stimulated. Needles are then inserted and left in 15 to 20 minutes allowing patients to relax. Length of appointments average 45 minutes.

Carroll said acupuncture helps younger patients by relieving pain for acute injuries to knees, backs and ankles. Older patients use acupuncture to minimize chronic pain like arthritis and swelling.

“Mostly the needles are placed in the arms or legs. Acupuncture is just a way to stimulate the natural healing process. Some people have relief in one session and others it takes six to eight sessions to get prolonged relief.”

Acupuncture is used worldwide. In the United States, more than 8.2 million adults have used acupuncture, according to a National Health Interview Survey. It’s one of the oldest forms of natural medicine.

Carroll Family Chiropractic, 224 N. Pine St., offers acupuncture as well as chiropractic adjustments and massage therapy. The initial acupuncture session costs $45 and each addition session costs $40.

Carroll said some insurance companies are starting to cover acupuncture treatments, however, they are not covered under Medicare or Medicaid.

More than books

It’s called The Bookstore, but that doesn’t tell the whole story. It really is more than books.

The Uptown business, 210 N. Maple St., has evolved over the years to include antiques, an art gallery and coffee bar, as well as the usual array of books.

“We’re moving away from new books quite a bit,” said owner Jim Stalker. “Just because I can’t stand the competition. We do special orders (for new). We get calls for new. We just aren’t carrying a lot of them.”

MSM Logistics offers yarn, knitting needles, art supplies, cake decorating and candy making items and hundreds of other arts and crafts items.

Chaney said MSM Logistics currently does about 100 to 200 online orders per day. They ship internationally with many of their buyers in Australia, Canada and United Kingdom.

“A lot of our business is international because we can offer these items at a reduced price,” Chaney said. “These items are very expensive in other countries.”

But, Chaney said MSM Logistics is not just an online company. Local consumers can come inside, look around and purchase

items from MSM Logistics.

“All you have to do is ring the doorbell, and we’ll let you in. You can look around,” Chaney said.

MSM Logistics is now in its summer hours, which are 9 a.m. to early afternoon.

Coenen said between Maple Street Memories and MSM Logistics you should be able to find what you want, but if you don’t, she will send you to Quilts and Other Notions, She-Nae’s, Wishing Well or Plentiful Harvest.

“I don’t know how it ever happened, but we have so much creative stuff going on in uptown Creston,” Coenen said. “If I can’t help them, I send my customers to those stores because I love Creston. I think many people really underestimate what Creston has to offer.” CL

Chuck Henry said, when he first started tae kwon do training at age 20 in 1985, the idea of being an instructor was far from his mind — let alone, starting a business.

“When I got into it, I enjoyed the process,” said Henry. “It’s not what rank you have, it’s the process of the training.”

Henry, who is a fifth-degree black belt, said he has always been interested in martial arts since he was a child, but wasn’t always an athletic guy.

“Once I got into it, the athlete took over,” he said.

Tae kwon do Tae kwon do, one of the world’s most

popular martial arts, is not only famous for its range of kicks and brick-breaking power, but it is also a highly respected, nonaggressive and ethical form of self-defense.

“One of the greatest things about our traditional tae kwon do training is that it gives families the opportunity to work out together,” said Henry.

Henry said, practitioners of tae kwon do, which is a self-paced sport, benefit from its physical and mental discipline and fitness.

Training involves a variety of forms and techniques, such as punching, kicking, blocking, dodging and jumping.

“At first you’re just trying not to fall down,” said second-year student David Miller, who holds a green belt. “Before too long, you’re starting to think about physics and leverage, mechanical strength and your problem-solving skills improve. At the same time, your balance becomes better.”

Master Dan Fulton, who instructs the “Little Dragons,” — a group of 4- to 5year olds — said tae kwon do offers a fun workout that is “not as stringent” as the adult program.

For young students, tae kwon do teaches discipline and self control.

Mixed martial arts, or MMA, is a sport which combines two or more martial arts, such as Brazilian jiu-jitsu, boxing, wrestling, Thai boxing, Muay Thai, kickboxing, karate, judo and tae kwon do.

While some students take Josh Henry’s MMA classes for the intense workout, many local Crestonians are training for professional competitions.

Chuck Henry said only certain people can deal with the fighter lifestyle.

“A lot of what the traditional martial arts do is it’s more a matter of training to improve yourself — physically and mentally,” said Chuck Henry. “The fighters do that as well, but take it to the next level, because they actually test what they train.”

Chuck Henry said, for the competitive MMA fighters — those who make full-contact with their opponent in an octagon-shaped cage — there is “that time” when the cage is first locked, which tests their mental strength.

“That is probably the biggest test,” said Chuck Henry.

“It’s normal people getting together who share a passion,” said Chuck Henry. “They go out and compete, and they clap each other on the back when it’s done.

For those who have become black belts, Chuck Henry said it is not because they are the most athletic or gifted.

“We’re the ones that just keep at it,” he said.

Chuck Henry’s training philosophy is to “be better than we were yesterday, and to be better tomorrow than we are today.”

Classes and training
