when they were children. Grocery stores are not only bigger today than they were years ago, but they’re also stocked with items that weren’t available until relatively recently. One stroll through the produce section reveals just how different modern grocery stores are from those of yesteryear. Organic fruits and vegetables now take up ample real estate in grocery store produce sections. Many shoppers may wonder if they’re better off choosing organic versus traditional products, and research suggests they are. n Organic foods contain less pesticides and toxic materials. A 2014 meta-analysis published in the British Journal of Nutrition found that organically grown crops were less likely than conventionally grown crops to contain detectable levels of pesticides. The analysis also found that organically grown crops were 48 percent less likely to contain cadmium than conventionally grown crops. Cadmium is a toxic heavy metal that can accumulate in the liver and kidneys, which the Global Healing Center says can affect blood pressure, induce bone damage and affect renal and dopamingeric systems in children. n Organic crops contain more antioxidants than conventional crops. The same analysis also found that organic crops had significantly higher levels of antioxidants, which promote strong immune systems, than conventionally grown crops. Organic crops were found to contain 69 percent higher levels of flavanones and 51 percent higher levels of anthocyanins than their conventional counterparts. The extra antioxidants in organic foods is nothing to scoff at, as the National Cancer Institute notes that antioxidants neutralize free
radicals, excess levels of which can potentially lead to the formation of various types of cancer and other diseases. n Organic products cannot contain synthetic hormones. Conventionally raised animals are sometimes injected with synthetic growth hormones so they will gain weight more quickly and produce more milk. Residue from those substances, which cannot be used in the production of organic meat and dairy products, is believed to contribute to widespread antibiotic resistance, according to the Biodesign Center for Environmental Security at Arizona State University. In addition, some studies have suggested a strong connection between the hormones given to cattle and cancer in humans. n Organic dairy products can promote cardiovascular health. A 2013 study from researchers affiliated with the Center for Sustaining Agriculture and Natural Resources found that organic milk contained 25 percent less omega-6 fatty acids and 62 percent more omega-3 fatty acids than conventional milk. The Organic Center notes that’s a considerable benefit, as higher amounts of omega-3 and lower amounts of omega-6 fatty acids helps promote cardiovascular health and support the immune system. When choosing organic products at the grocery store, consumers may be benefitting their overall health in various ways. DE19B415

Protecting private drinking water sources Many people do not give much thought to their drinking water or where it comes from, only paying mind if the color, taste or pressure is unusual or if warnings are issued in the event of a water main break or flood. Water for homes and businesses is often sourced from municipal water sources, but private wells also provide water. According to the U.S. Census Housing Survey 2015, 13 million households in the United States rely on private wells to supply their water. Many of these homes are located in hard-to-reach or rural areas where municipal water pipes do not travel. Public water supplies are typically overseen by a governing body, such as the United States Environmental Protection Agency. However, these organizations may not regulate private wells, nor will they provide recommended criteria or standards for individual wells. As a result, it is up to individuals to make sure their well water is safe for consumption. Private well owners may be surprised to learn that, according to the U.S. Geological Survey, at least 20 percent of private wells contain contaminants, of which 23 percent have levels high enough to be a potential health concern. Well water is groundwater found in subterranean
aquifers. This groundwater comes from rainfall that is absorbed in the soil and slowly seeps downward through the dirt, rock and various underground spaces. Along this path it can pick up contaminants. Common sources of contaminants include farm waste, fertilizers and pesticides, chemical spills, poorly maintained septic systems, and seepage from landfills. Arsenic is also naturally occurring in groundwater, and in some areas the levels are above the EPA threshold for safety. Unfortunately, many contaminants are undetectable to the eyes, nose and mouth. And unlike public drinking water systems, people with wells typically do not test their water as often as they should. The EPA says that well water should be tested annually for bacteria and nitrates. The environmental medicine experts at Robert Wood Johnson Medical School in New Jersey suggest testing for lead, arsenic, radon, uranium, and other heavy metals every three to five years. The National Groundwater Association says county health departments can conduct water tests for bacteria and nitrates. Those who want to test for other substances can get a list of state-certified drinking water testing labs. TF188236

Explore and assess your seeds this winter URBANA, Ill. – While there may still be snow on the ground outside, it is never too early to start planning your garden for the spring. Begin by digging through your old seed packet stashes to find those still viable to plant. Seeds are considered viable when they are capable of germination under suitable conditions. If stored properly, some seeds may remain viable for several years, while others are only viable for a short time. For example, parsley and onion seeds have a short viability time, while melons, cucumbers, and cabbage can last five or more years. A package of seed will be labeled with the year it was packaged. Most seeds should be used within three years. “Performing a simple seed viability test to check the germination rate may save you from purchasing new seeds year after year,” says Brittnay Haag, horticulture educator with University of Illinois Extension. “Place 10 seeds on a damp (but not soaking wet) paper towel. Roll up the paper towel and store it in a closed plastic bag, labeled with the seed type and date, and place it in a warm (above 70 degrees Fahrenheit) location, like a sunny windowsill.” Haag suggests checking every few days to see if any seeds have germinated. Once they begin to grow, count how many seeds have germinated to find the germination rate. If all the seeds have germinated, follow the seeding directions on the packet. If the germination rate is 70-90%, you will need to plant more than the recommended rate to replace those that may not germinate. If the germination rate is below 70%, Haag recommends purchasing new seeds. Another way to test the seed viability of larger seeds
like peas, beans, and corn is to place them in a bowl of water. “If they sink, they are still viable; if they float, they are garbage,” Haag says. If stored properly, some seeds can last many years. Seeds need a cool (between 32 and 41 degrees), dry place, like a refrigerator. Seeds can be stored in paper envelopes or glass containers. Once you test the viability of your seeds, enjoy flipping through seed catalogs to find new varieties to try this spring. Haag also suggests hosting a “seed swap” with friends (who also tested their seed viability) to share different varieties amongst each other. After selecting your seeds, it is time to start thinking about a planting schedule. As a general rule of thumb, most annual plants should be started in flats indoors about six weeks before the last frost in your area. Do not start your seeds too early (especially tomatoes) or you run the risk of plants becoming too leggy before they can be planted outside. Check your seed packets for suggested planting methods. Plants started indoors will need six to eight hours of direct sunlight. Grow lights can be used to supplement sunlight, if needed. About two weeks before planting outside, place the plants outdoors in a shady, wind-protected area during the day and bring them in at night. This will allow plants to get acclimated to the environment before being planted.
