FROZEN RASPBERRY MILKSHAKE By: Audrey Gentile

The great thing about smoothie milkshakes is that all you have to do is blend! Take all the ingredients and mix it together in a blending machine. Adjust the Chambord Liqueur and Agave Nectar accordingly to taste. When you are ready to serve, pour into cups or jars and top it off with fresh raspberries and whipped cream for a simple, and deliciously refreshing drink. Wasn’t that easy!

MINT CHOCOLATE S’MORES DIP

WHAT YOU NEED SERVINGS: 8

300g of 70% Dark Chocolate 300ml Double Cream

Drops of Mint Extract 50g Sugar 150g Vanilla Marshmallows 1 Loaf of Brioche

Crystallized Mint Leaves: Sprigs of Mint Leaves 1 large Egg White 100g Sugar

THE RECIPE 1. Prepare the mint leaves in

advance by taking a medium sized bowl and lightly whisking the egg white. When foamy, pour in the sugar. Brush the mint leaves with the egg white and sprinkle sugar evenly. Place the leaves on a rack and leave to dry.

2. To make the ganache, finely chop

the chocolate and place into a bowl. Taking a small pan, gently heat the double cream over medium-low heat until it becomes hot, but not boiling. Pour the cream into the bowl of chocolate and let it sit for a minute before gently stirring.

3. Stir in the mint extract and sugar.

Taking the mixture, pour into a skillet or wide cast-iron dish and leave to set. Refrigerate if needed.

4. Once you are ready to bake,

preheat the oven to 220째C. Slice your brioche and toast on a hot grill until both sides are golden brown.

5.

Cover the skillet of ganache with marshmallows and place into the oven for 7 - 8 minutes until the marshmallow begins to brown and melt. Top it off with your crystallized mint leaves and serve with a side of toasted brioche to dip.

THE RECIPE Indulging throughout the holidays is inevitable, but healthy whole food indulgences like these bite-size pumpkin pie squares come with nothing but positive side effects! When our meals and even desserts contain an abundance of vitamins, minerals, phytochemicals, fibre, and good fats, we feel satisfied sooner and less inclined to overeat. Our cells receive the nourishment they need, and our immune system can do its job. This variation of pumpkin pie uses nuts and the gluten-free “pseudograin” (it is technically a seed) buckwheat as the “pastry” base. It is nutty and flavourful, while the filling is wonderfully light, smooth, and free of dairy. If you would like to use canned pumpkin in the filling, try the Eden Organics brand, their pumpkin is organic and the can is BPA-free. If you decide to truly bake this pie from scratch, I would encourage you to use a pumpkin with pale blue or grey skin as those generally taste better - and don’t throw away the seeds! Pumpkin seeds are also nutrient-dense, high in protein, fibre and tryptophan, which is an amino acid that triggers happiness and reduces stress. I like mine coated with grapeseed oil, tamari, and cayenne, and baked until golden and crispy.

1. Preheat oven to 350° F. In a

large food processor, blend the walnuts and pecans until powdery. Add the almond and buckwheat flour and pulse until blended. Finally, add the remainder of ingredients and blend. Store in the fridge until filling is prepared.

2. In a large bowl, whisk 3 eggs

together. Add coconut milk, honey, spices and salt. Incorporate sugar, and then pumpkin.

3. Lightly grease the bottom layer

of a tart tin with coconut oil or ghee. Press the crust dough into the tart tin, making the base no more than 1 cm thick. Pour filling into the pan. Bake for 45 minutes or until fully set in the middle. Cool for 5 - 10 minutes and then place into fridge for at least 2 hours or until ready to eat.

4. Slice into little squares and

serve each square with a small dollop of coconut cream, organic whipped cream, coconut milk ice cream, vanilla goat milk ice cream, or organic vanilla ice cream.

BERRYGLOWING

The Perfect Look for Any Party this Holiday By: Haley Bogaert & Nechia Brazeau

1. Apply foundation all over face

with a damp blending sponge. Follow with a concealer stick for under and above the eye to brighten and prep for shadow.

2. With a firm contour brush,

stipple a powdered highlight from the top of the temple to under the eye and top of cheekbones. Dip into a cream blush and buff into apple of cheeks. Blend entire face with a blending sponge to create a soft, dewy finish.

3. Use Nars Dual Intensity Eye

Shadow all over lid with your finger. Apply a fine liquid liner along upper lash line and run a black liquid eye liner along bottom water line.

4. Use black mascara to make sure

cream products do not attract any black residue under the eye.

5.

For those with a heavier brow, simply apply a tinted brow gel for a natural, yet defined finish. If you have finer brows, fill them with a soft ash shadow before adding brow gel.

6. Dab stick concealer on lips to

create an even base. Line and fill in entire lip with a deep berry tone lip liner. Apply a similar shade mattefinish lipstick and blot lips. For maximum staying power, apply another layer.

Holiday Sultry Eye The Perfect Day Look

1. Mix Cover Glow 2 in 1 custom

blended primer and foundation. Smooth over the entire face with a flat top kabuki brush for a flawless finish, followed with liquid illuminating concealer under and above the eye.

2. Create a palette with your

bronzer, blush and highlighting powder. Dust top of cheek bones, arch of eyebrow, and centre of face with your highlight. Contour below cheekbones, along jawline and top of forehead with bronzer. Add a soft pop of colour with blush on the apples of cheeks and blend into contour and highlight.

3. Dust a soft sheer apricot shade

all over eyelid with a plush blending shadow brush. In the creases, add definition with a warm copper tone, making sure to blend to the outer lower lash line with a rounded crease brush. Smudge a black illuminating shadow along lash line for a fuller smokey finish and smudge a chocolate shadow into bottom lash line.

4. Load up on the mascara with

2 - 3 coats. A lash extended primer in between coats really helps create length and fullness.

5.

Brows are the most important finishing touch to this look. Frame the brow with an ash tone brow shadow and angled liner brush and smudge the remainder of the product into the centre of the brows so that they do not look too dark. Use a clear brow gel to hold them in place, brushing in an up and out diagonal direction.

6. Apply a sheer satin peachy pink

lipstick with no liner for a soft, natural touch of colour to balance out your more dramatic eye.

HOLIDAY FOR THE KIDS By: Melissa Picken

One of my passions lie in kids fashion, so it’s no surprise that I love to dress up my own! I certainly don’t believe in making outfit decisions for them, but I do only buy pieces that I like. I think it’s important for them to experiment with their own style, plus it makes them more independent. But don’t be fooled, you don’t have to spend a fortune! Kids outgrow their clothes so fast that it’s unnecessary to spend a lot, especially if they only get to wear them a few times. I am also all about layering pieces and accessories like hats, scarves and suspenders.

THE SWEETEST GIFT

The holidays are a great time to get together with friends. My girlfriend Michelle and I are both working moms, so when we get together for the holiday, we also do some gifting! This year we decided to jar some sweet cookies. Instead of spending hours baking from scratch, we got some of our favourite store bought cookies, dipped them in fine chocolate and added yummy toppings like pistachio, coconut, toffee bites, candy cane and lots more. We also made some delicious s’mores with melted chocolate wafers and fluff, which is whipped marshmallow that you can grab at any grocery store. Not only do they look amazing, but they taste even better. Each jar along with the personalized decorations should cost no more than $10, but no price can be put on the time you spent and that is what makes it special! So laugh, have a few drinks and gift at the same time! Now that’s a productive get-together!

EGG CUPS

This particular recipe is a favourite amongst the boys in my family and is my go-to for brunch. Who wouldn’t like bacon, eggs and some yummy aged cheddar or goat cheese all wrapped into one sweet, little, buttery toast cup! Photography: Jerald Bezener

WHAT YOU NEED Servings: 8

3 tbsp Unsalted Butter, melted 8 slices of your favourite type of Toast 8 slices Bison Bacon 8 large Eggs Generous serving of Aged Cheddar or Goat Cheese per cup Coarse Salt and Ground Pepper

THE RECIPE 1. Preheat the oven to 375째F.

Lightly butter 8 muffin cups.

2. Flatten the bread slices with a

rolling pin and cut into 8 rounds with a cookie cutter. Cut each round in half and place 2 halves into each cup, making sure they are slightly overlapping and coming up the edge of the cup. Patch up any gaps with extra bread and brush with butter.

3. On medium heat, take a large

skillet and cook the bacon until crisp at approximately 4 minutes, and flip.

4. Lay one bacon slice into each

bread cup and crack an egg on top. Season to taste with salt and pepper. Bake for 20-25 minutes until the egg whites are set. With a small knife, loosen up the toasts by running it around the edges. Serve immediately.

CAKE BAR Last summer I stumbled across a very talented young lady. Her work to me, as my daughter would say, is “on fleek”! My new obsession is beautiful buttercream cakes embellished with lots of goodies that are not only beautiful to the eye, but super tasty. Joyti from The Purple Cupcake has captured all of that and then some. Taking very simple recipes and turning them into art pieces,

believe it or not, you can do it too! Her artistic and natural approach has really captured everyone’s attention. So for me, going to Joyti to do a cake bar for the holiday was a no-brainer. Who doesn’t like a yummy, moist buttercream cake! So get in the kitchen and show your family just what you can do with some help from Jyoti!

DIY GOLD FOIL PAINTED WINE BAG By: Lorrie Everitt

MATERIALS

A cotton wine bag Gold transfer foil Foil transfer adhesive Small paintbrush Fine black marker Disappearing ink fabric marker Scissors Circle template (optional) Iron A sheet of paper

HOW-TO STEPS

1

On the silver side of the gold foil, trace out circles to create the dots for your bag. The size and number of dots is up to you. My dots were about 1 in diameter. Don’t have a circle template? Use a bottle cap or similar round object as a template. Cut the circles out of the gold foil and set aside.

2

Using the same size circle template, trace your dot pattern onto the cotton wine bag using a disappearing ink fabric pen. Paint each dot with a thin layer of foil adhesive and allow to dry for about 30 minutes until it is crystal clear. Warning: DO NOT touch the adhesive to check if it is dry.

3

Carefully place each of the gold foil dots on top of the glue dots with the silver side down. Firmly press down on each gold foil dot with your finger to make sure that the glue and foil have bonded completely. Tip: You cannot move the foil once it touches the adhesive, so take your time on this step.

52

PETITEANDSWEET.CA

Winter 2015

4

Set your dry iron to the wool setting with no steam. When your iron is ready to use, lay a folded piece of paper towel or a plain sheet of paper over the gold foil and firmly iron each dot using the tip of the iron for about 20 seconds. Tip: Do not iron directly onto gold foil.

5

Wait about 15 minutes (or longer) to allow the gold foil to cool completely before you peel away the clear coating on the gold foil. The gold foil will not be perfect and you will see some of the brush strokes from adhesive on each of the dots, which adds to the handmade look of the project.

6

Allow the gold foil to cure completely for 72 hours before use. Optional: Add gold glitter tape to the drawstrings as shown. I recommend using a dab of glue on the ends of the glitter tape so it does not fall off.

Supplies: cotton wine bag and gold glitter tape, Creative Bag; gold transfer foil and foil transfer adhesive, Michaels Craft Store or any fine art store

This same technique can also be used to add gold foil dots to wood slices to create coasters, except I did not remove the clear gold foil layer on the coasters. Spray a few coats of clear spray lacquer to waterproof the coasters. 53

BALI:

Spiritual Adventure By: Audrey Gentile

“Be it. Own it. Command it.” The inner mantras each of us chant – we are all goddesses. If I could have the pleasure of teaching you in one of my yoga classes, you know I would. However, the pace of North American life sabotages us with its demands on time. How much? Read on. My husband Rob and I travelled to Bali, often called “the island of the Gods”, for our honeymoon last winter. We’ve been married for over a year and finally got time to reconnect with each other and our spirituality. As we slowly decompressed and breathed in the timeless magic of the island, I was overwhelmed by the gentle gratitude exuded by the Balinese people. They don’t just practice yoga, they live it. I watched a young girl perform a traditional dance with each intricate hand movement capturing the essence of simply being present in the moment.

Two young men sat beside a pond, deep in conversation, content to just connect with each other. The pace of life slowed down and the world ceased to exist. “Just breathe”, the ancient structures seemed to whisper to my over-extended soul. As a yogi, I was nothing compared to them. The humility left me open for more lessons. The lotus flower is magnificent in its beauty. Did you know it grows in mud? As Rob and I participated in the purification water rituals, our layers of North American attitude slipped off and left us with gratitude. My gift to you from Bali? Keep yourself open. To my surprise, the best healer for me on the trip was also my taxi driver. His advice: “be light with yourself.” As “go-getters”, we often take ourselves too seriously. Lightness brings a softer focus that allows us to be more accepting of ourselves.

58

PETITEANDSWEET.CA

Winter 2015

As 2015 draws to an end, I leave you with these thoughts. Be more present in your daily chores. Don’t rush so much. The next time I see you in my class, don’t worry about succeeding in the pose, just be willing to open the door to a far richer life. Do a Bali - “be light with yourself.”
