Ingredients
Salmon Sticks
• 1lb (450g) salmon fillets, skinless
• 1 cup all-purpose flour
• 2 tablespoons lemon pepper seasoning
• 1 teaspoon salt
• 2 eggs, beaten
• Vegetable oil, for frying
Directions
For the Old Bay Blue Cheese Sauce:
• 1/2 cup blue cheese, crumbled
• 1/2 cup mayonnaise
• 1 tablespoon lemon juice
• 1/2 teaspoon Old Bay seasoning
• 1/4 teaspoon black pepper
1. Cut the salmon fillets into long, thin strips resembling fish sticks.
2. In a shallow dish, combine the flour, lemon pepper seasoning, and salt.
3. Dip each salmon strip into the beaten eggs, ensuring it is fully coated.
4. Roll the egg-coated salmon strip in the seasoned flour mixture, pressing gently to adhere. Repeat with the remaining salmon strips.
5. Heat vegetable oil in a deep pan or skillet over medium-high heat. The oil should be about 2 inches deep.
6. Carefully add the coated salmon strips to the hot oil, working in batches to avoid overcrowding the pan. Fry for about 3-4 minutes or until golden brown and crispy. Flip half..

I used to love hearing stories my Granddaddy, Negro League Hall of Famer Will “Bill” Blair Jr., would tell me about, Josh Gibson, Cool Papa, Ernie Banks, Leroy Satchel Paige, and Buck O'Neill along with many others when I was a kid in the 80’s and 90’s. They were cool stories to me. At the time I never questioned whether they were true or not because my granddaddy told them, I believed them. Once he told me, “Casey J, if Major League Baseball added the stats of Negro League players the whole stat records would change, and Josh Gibson will probably be at the top of most of them.”
In 2020 Commissioner of Baseball Robert D. Manfred, Jr. announced that Major League Baseball would be correcting a longtime oversight in the game’s history by officially elevating the Negro Leagues to “Major League” status. During the 2020 centennial celebration of the founding of the Negro Leagues, MLB highlighted the contributions of the pioneers who played in the seven distinct leagues from 1920-1948. MLB wanted to ensure that future gener-
ations would remember the approximately 3,400 players of the Negro Leagues, including my Granddaddy the late William “Bill Skinny Legs” Blair Jr., who was a left-handed pitcher in the Negro Leagues from 1947-1951, who played during this time period as Major League-caliber ballplayers. Accordingly, the statistics and records of these players will become a part of Major League Baseball’s history.
In 1920 an eight-team Negro National League, founded by Andrew “Rube” Foster was formed because they were unable to play in the segregated Major League Baseball. The seven leagues that comprised the Negro Leagues from 1920-1948 were the Negro National League (I) (1920–1931); the Eastern Colored League (1923–1928); the American Negro League (1929); the East-West League (1932); the Negro Southern League (1932); the Negro National League (II) (1933–1948); and the Negro American League (1937–1948).
Now, four years later, Major League Baseball officially decided to add the stats of Negro League players to the record books. With doing this many MLB Greats like Babe Ruth and Ty Cobb have been knocked off the top of the stats list.
Hall of Fame catcher Josh Gibson has SHATTERED the record book. Gibson now officially holds the greatest batting average, slugging percentage, and OPS of ALL TIME, after MLB’s move to integrate Negro League statistics. Gibson officially unseats Ty Cobb for AVG, and Babe Ruth for both SLG and OPS. He also took the top spot for single-season AVG with .446 in 1943 — for perspective, Ted Williams’ well-known mark in 1941 was .406. Barry Bonds’ former top spot of .863 SLG in 2001 was shattered, dropping from 1st to 5th.
