STRANGE STOP Grey Gardens, once inhabited by Jackie Kennedy Onassis’ kooky aunt and cousin, has been rented by American Express. The nine bedroom, 1897-built mansion, restored by the Washington Post’s Ben Bradlee and Sally Quinn 30 years ago, is a fabulous location for events. And acclaimed restaurant Eleven Madison Park will host such fetes. (The elite eatery has a popup nearby in East Hampton where reservations are exclusive to American Express cardholders.) Trouble is East Hampton Town has already put the kibosh on one event, a Jennifer Fisher jewelry sale. Such a commercial undertaking is verboten in residential areas. While no rental fee was divulged, it was listed at $275,000 for the summer. Still for sale, the ask is $17.99M, down from $19.99M earlier this year. HOLLYWOOD LEGEND The home of renowned literary agent Rosalind Paige Cole, who died of cancer in 2014, has been put back on the market at $10.25M, up from its $9.9M ask as recently as March. TOP BROKERS The Real Deal has released its list of June’s Hamptons top brokers by volume of listings. Zachary and Cody Vichinsky, the duo behind Bespoke, claimed the number one spot with an impressive $969.335M (just shy of a billion!). Susan Breitenbach and Tim Davis, both of Corcoran, came in at second and third places with slightly more than half of the Vichinsky siblings’ haul: $571.477M and $526.484M respectively. “It doesn’t hurt that the two brothers have their sights trained exclusively on the priciest properties, with 36 listings accounting for a total of just over $969 million,” crowed the publication. Bespoke only reps properties valued at $10 M and up. They have even snagged the coveted Villa Maria listing in Water Mill, which has been repped by the best of the top agents.

SPRINGS HAS SPRUNG Much maligned Springs is experiencing a long deserved comeuppance in the real estate market. Consider the recent sale of a bare bones, stripped down cottage built in 1975. It listed this spring at $425,000 and went into contract within two weeks for $10,000 above the ask. The undistinguished 1,600 square-foot home presides over a wooded half-acre, creatively dubbed as “mature landscaping.” Springs may never be considered as tony a location as properties located south of the highway, but longterm fans, like Jackson Pollack and Lee Krasner preferred the more rustic, natural beauty the area offers. CONDOMANIA The condominium explosion has just been reignited. Southampton Pointe, a 50-unit complex off Tuckahoe Lane just south of County Road 39, has reached completion. A slew of proposed additions -10 rooms, six bathrooms and an L-shaped connecting wing encompassing a four-car garage and living space -- will make the relatively modest summer cottage on Lake Agawam virtually unrecognizable. According to architect Anne Surchin in 27east, the structure “has remained relatively intact over 135 years.” Built by patent lawyer Frederic Henry Betts, it remained in the Betts family till 1969. The National Register Historic District home is highly visible from Gin Lane. “What’s really at stake here is maintaining the visual historic equity of the community and that’s priceless,” writes Surchin.

NORTHWEST WOODS RETREAT MASCULINE STREAMLINED INTERIORS ABOUND IN DESIGNER KERRY DELROSE’S OWN HOUSE BY ALLY HENDERSON

t’s always interesting when an acclaimed interior designer works with an equally renowned architect. In the case of designer Kerry Delrose, and architect Alfredo De Vido, the “collaboration” occurred 30 years after the latter built the house. The architect’s wood and glass boxes were “very modern and Asian influenced. He was very progressive for the time.” Delrose, who is also known for his clean modern lines, moved from Sag Harbor into the East Hampton house in 2005. “I wanted the privacy and serenity of woods,” he says of the property that was built in a grove of rare white pines. The exquisite gardens surrounding the house were another selling point. First, a bit about Delrose. Principal of the Delrose Design Group, the designer has “worked internationally in Australia, Europe and Dubai as well as every corner of the U.S.” His residential clients include hedge fund managers while his corporate clients have included hotels such as the Mandarin Oriental and Baccarat. His work has been featured in House & Garden, Elle Décor, LUXE and House Beautiful. There had been multiple additions on the house, throughout the decades. Most notably was what is now the living room, a grand affair with a super high pitched ceiling, tall windows and a big stone fireplace at one end. In his typical fashion, Delrose hung large-scale pieces over the fireplace: a ninefoot tall mirror and, above that, gigantic resin deer antlers.

The room, which he uses mostly for entertaining, is separated into three sitting areas. Upon entry, down three steps and onto the leather floor, is an enclave with a pair of Barcelona chairs and a vintage Hermes coffee table. Near the fireplace are a pair of handsome Billy Baldwin slipper chairs covered in caramel Madagascar cloth. Beyond that, then rest of the living room “is a Ralph Lauren

explosion,” says the designer. From that brand’s Modern Penthouse collection there are two sofas, two chaises, a half dozen nickel floor lamps and leather table lamps. One aspect that is decidedly not RL, is a pair of Japanese linen panels framed in bronze. “Unusual objects and innovative applications are a signature of my work.”

TV producer Frank Valentini, whose East Hampton home Delrose designed. But it is the sunroom that is the designer’s favorite space. With its pickled pine walls and oodles of glass, he says, “In winter it looks like a snow globe.” He has furnished it with an original Saarinen table and a Bielecky Brothers sofa. A Moroccan lantern hangs from the pitched glass ceiling. He spends many an evening in front of the room’s fireplace, glass of red wine in hand. While it might seem that the house is formal, that

is decidedly not the case. “My litmus test is that everyone should be able to sit everywhere in bathing suits.Your home shouldn’t be like a Fabergé egg. Delrose is currently working with a client building a house on a glorious piece of waterfront in North Haven. “Maybe this will be the next place I’ll live,” he says. delrosedesigngroup.com

His biggest change took place in the downstairs master suite, in which he both sleeps and uses as an office. “It was heavy,” he says. “Velvet curtains and Roman busts.” He stripped the wallpaper, darkened the floors to a matte ebony and gutted the dated bathroom, which is now “a limestone box.” A hallway provides a gallery for his favorite artistic medium: photographs. Especially black and white images that reflect his love of a palette of blacks, whites and grays. Among the pictures displayed are a Montauk surfer by Peter Beard and a shot of revelers on a boat by Howard Roffman. In the dining room, with its 30-foot ceilings, he covered the walls in a heavy beige Madagascar cloth from Donghia. He abhorred the yellow brick fireplace, so painted it a chic black. A “spectacular four-feet-wide photo of horses in Iceland” dominates the room. It is the work of Emmy-Award winning 72

ummertime in the Hamptons brings some of the best opportunities on the planet for celebrity sightings.Whether they’re visiting for the first time, are high-profile second home owners who come out for the weekends and holidays, or the prominent people who have chosen to hunker down here year-round, the East End does not disappoint when it comes to those in the limelight. Frequent visitor Lady Gaga was snapped tiptoeing through the tulips here back in June. Actually it was the trails at Montauk but you get the gist. Enjoying some much needed downtime, Mother Monster and her beau, Christian Carino, took to the hills during a brief vacation out east where she was photographed hiking in nude stilettos, an ankle-length skirt and flouncy designer crop top. Athleisure is apparently not in the “Star is Born” lead’s extensive fashion vocabulary. Rumored to be considering purchasing a place in Montauk (and perhaps even getting hitched), Gaga is currently deep in rehearsals for her upcoming Joanne World Tour, which kicks off in August. Eldest Former First Daughter Malia Obama was also spotted out in Montauk recently. Celebrating her 19th birthday, which just happens to have been the Fourth of July, the Harvard-bound lovely and her pals spent a low-key evening dining and dancing at The Surf Lodge.

Award-winning actor Robert Downey Jr. has added Hamptons homeowner to his considerable list of accomplishments. The “Iron Man,” “Spider Man” and “Avengers” series star—who shared the screen in his first outing as Tony Stark with Amagansett 80

gal Gwyneth Paltrow as Pepper Pots in 2008 and again in “Spider Man: Homecoming” this summer— closed on the famous Edward DeRose Windmill Cottage in East Hampton early in the season. Since, he’s been dropping hints that he’ll hang up his superhero suit before it gets “embarrassing.” In the meantime, he’s got at least one more shot at it, with “Avengers: Infinity War” coming out next year. Also on his plate: a just-announced triple dip as Sherlock Holmes with Rachel McAdams and Jude Law, the lead role in “The Voyage of Dr. Doolittle,” slated for a 2019 release, and a turn as scheming huckster John Brinkley in a Richard Linklater-directed biopic.

Lastly, what’s better than a hot summer romance? Not much. Especially when it’s between two sizzling East Enders such as Scarlett Johannson and Colin Jost. The two performers—she’s got a crash pad in Amagansett and he’s got one in Montauk— apparently met in NYC during filming at “Saturday Night Live” and have allegedly been an item since. It’s been reported that they’ve been caught canoodling (best word ever) out east at The Palm in East Hampton and Ditch Plains Beach in Montauk. Cheers to that!

Food Network star Katie Lee has put her Water Mill home on the market but she’s staying put here in the Hamptons, she says. “The Kitchen” host is an enthusiast of East End bounty, which she’s featured aplenty in her cookbooks, including “Endless Summer” and “The Comfort Table.” Plus, she’s an avid surfer and has just bought a new Boston Whaler. Now she’s just got to find a property where she can put it to use.

Tennis player John McEnroe sold his Southampton estate in May but don’t count him out for the East End yet either. He and his wife Patty Smyth, as well as exhibition doubles partner and brother, Patrick, and his family, have spent many a summer here. veryone knows that Nancy Atlas is a serious rocker. But there’s more to this mistress of music than meets the ear. And the eye too.

After attending one of her sold-out summer shows at the Surf Lodge, winter Fireside Sessions at Bay Street Theater or annual free Concerts in the Park at Agawam Park, courtesy the Southampton Cultural Center, it’s easy to see that Ms. Atlas is a serious crowd drawer. What might not be so evident at first glance is that the stage commanding Montauk-based Nancy Atlas Project singer, songwriter and guitarist has another deep well of creativity of a totally different sort—a background in fine art.

It is as good as it gets with lobsters, clams and crabs that were probably caught that day, boiling away with sweet corn and live music flowing” After graduating from high school in Commack, New York, the young woman headed across the pond to follow her dream attend art classes at Cambridge University in England and Richmond College in London and Florence. After college, instead of taking the pre-planned advertising route she had assumed she would follow, Ms. Atlas opted to pursue a career in music. After plunking down 60 quid for a guitar. She’s never looked back. She doesn’t get the time during her hectic summer touring season to do much more with her art than draw cartoons for her kids or lazily trace tour maps of Europe on rainy days, she reports. But the busy pro-musician, wife and mother of three has still got a special place in her heart, and her Montauk home, for her first love.

An “art history major at heart,” Atlas is an avid collector. Art fills the beachside house—a short walk to the beach and town—that she shares with her family. Her favorites pieces? Works by East End-based artists and friends Paton Miller, Randall Rosenthal and Eric Ernst. It’s a tough choice, she says, but the one that strikes the most resonant chord for her is the Ernst, which was custom-made for her. A strong supporter of her fellow creative types of all stripes, Ms. Atlas—who has played with everyone from Elvis Costello; Lucinda Williams; Toots and the Maytals; Jimmy Buffett; and Crosby, Stills and Nash—recently released a new album, “Cut & Run,” with her band mates of 21 years Johnny Blood, Brett King, Richard Rosch and Neil Surreal. Other talents and local music makers Clark Gayton, Inda Eaton, Annie Morgan Rosch, Barrett Rehm Gerdes, Thomas Bradley Muse and G.E. Smith were also featured on the CD, as was friend and frequent collaborator-slash-stage sharer Chad Smith of the Red Hot Chili Peppers. Other things most cherished are not objects at all but instead time with her family and friends, and the joys that can be found nearby, says the performer. Even better when those things are combined, she reports. “I love when there is a local party on the beach. It is as good as it gets with lobsters, clams and crabs that were probably caught that day, boiling away with sweet corn and live music flowing,” she says. “Kids running around and scruffy old guys cooking in cut-off sleeves on their giant custom welded grills. Anyone can do rose and salmon pants but this is where the real stuff goes down.” Of course there’s also her home away from home. On the stage and jamming with her pals, she adds. “Playing at the Surf Lodge on a Wednesday with kids running around, everyone tan and a light southwest wind blowing. Fireworks and bonfires don’t hurt either.”

ugust is an underrated time to visit Paris. In that month, it seems as though half the city has decamped to the beach. The streets are quiet, the blare of traffic having given way to a kind of Sunday-morning hush. And speaking of mornings, one of the nicest ways to spend it is with a stroll around the Marais in the third and fourth arrondissements. Once home to one of the city’s largest Jewish communities, the neighborhood has in recent years been a center of gay life, and, more recently, the favored haunt of the fashion crowd. There’s great shopping, good food, atmospheric cafés, and cobbled streets. Here are our favorite local spots: 1. Place des Vosges (Metro: Bastille) Admire the vast arcaded square with blue slate roof tiles, which was commissioned by Henri IV in 1605 and inaugurated in 1612. Visit the Victor Hugo Museum at number 6. The building was once home to the great novelist. A few doors down, at number 11, is the former home of the successful courtesan Marion Delorme (1613 –1650) who kept company with some of the leading lights of the era, including George Villiers, 2nd Duke of Buckingham, Cardinal Richelieu, and Louis II de Bourbon.

hen Jake Rajs published his 2008 book, These United States, with an introduction by Walter Cronkite, Reader’s Digest wrote: “Not since Ansel Adams turned his lens on the Snake River has a photographer so glorified the American landscape.” Well-deserved kudos indeed. “When I photograph a landscape,” he says. “I try to capture the miracle that there is nothing more beautiful and perfect than what is created by nature.” Born in Poland in 1952, the photographer arrived in New York by boat at age eight where he was awed by the city sunrise that welcomed him to the “land of magic.” Known for his architectural and landscape imagery in which he aims to “capture the spirit of a place,” the award-winning photographer’s works have been featured in countless magazines including, Time, Life, Newsweek, National Geographic and Reader’s Digest (in which he was voted Best American Photographer). 94

His fine art prints are in numerous museums and private collections worldwide. The prolific shutterbug, who lives in Westhampton Beach, has published 18 books thus far including three on the East End. He was lured originally to the North Fork by Monacelli Press, a publishing house that wanted him for a book on that area. Once he “fell in love with the light of the East End and its farming and rural quality,” he moved there to Orient, then Southold. The resulting tome was Between Sea and Sky: Landscapes of Long Island’s North Fork. His book on the South Fork, Beyond the Dunes: A Portrait of the Hamptons, boasts an introduction by Pulitzer-prize winning journalist Paul Goldberger. His third book on the East End is a combination of the two earlier ones: Portrait of Long Island: The North Fork and the Hamptons. In his 40-year career Rajs has compiled an archive of more than half a million images. When focusing his

camera – he switched to a digital Nikon in 2006 – he looks for several factors: first the “quality of the light,” he says. “Light talks to you; it has a consciousness. It almost sings, if it’s right it’s a symphony.” He also looks for form, a sense of “balance and harmony in the space.” And of course, he looks for color. As a former painter, he can gauge the emotional impact of various hues. Putting all the elements together he hopes to create a “piece of art that moves the spirit.” Besides his fine art photography, which he sells, he does commercial work. In the past he worked on national ad campaigns for companies such as American Express, AT&T, Nike and Citicorp. He also works for New York City real estate developers. On the East End he has made a name for himself shooting houses for landscape architects and top real estate brokers including Tim Davis, Beata Moore, and Ed Petrie. He has shot the homes of Christie

ave you ever wished you could peek into a nutritionist’s fridge? See what she (or he) really eats in a single day? Rather than make choices, wouldn’t it be simpler if you could just befriend a nutritionist, adopt that person’s style of eating, and be done with all thoughts of food? Not forever, of course, but maybe for a couple of weeks? Now’s your chance. Stefanie Sacks, a Montaukbased culinary nutritionist whose fans include Donna Karan, Jean-Georges Vongerichten, and Dr. Oz, has just launched Reboot Food, a business that unites healthy cooking with good eating.

After teaching and lecturing around the country for three decades, Sacks, MS, CNS, CDN, the author of What the Fork Are You Eating? An Action Plan for Your Pantry and Plate (Tarcher/Penguin) has created a special line-up of programs for the East End community. To this end, in addition to the pantry rehab, dietary consultations, and private cooking classes that are the mainstays of her practice, she’s added bespoke food tours with a strong educational component, introducing clients to local environmentally-minded farmers, chefs, and food producers. Also on the Reboot Food calendar are cooking classes for adults and children at A Kitchen 4 Liam, a recently inaugurated

community kitchen in Scoville Hall, the parish house of the Amagansett Presbyterian Church. Equal parts lecture, discussion, and hands-on food prep, each three-hour-class culminates with a shared meal. In this convivial way, Sacks teaches students not only to make better food choices but to create the habits that will help them to sustain those choices. Spa weekends and health-oriented cooking retreats are also in the pipeline. “People say to me, “I love your new mission,” says Sacks, a lithe blonde who is a Natural Gourmet Institute alum and has a Masters of Science in nutrition from Teachers College, Columbia University. “Well, this is exactly what I’ve been doing for years. It’s just that now I’m doing it closer to home.” Part of what makes Sacks such an effective agent for change is her reluctance to hand out fiats. Which is to say, she’s no food bully. Instead, she deals in what she tactfully calls “gentle edible awakening.” At a recent class devoted to breakfast, for example, Sacks acknowledged that although breakfast really does set the tone for the day, not everyone feels like eating first thing in the morning. For the breakfast-averse, she whizzed up a food-based smoothie made with protein-rich whole foods and healthy fats rather instead of protein powder. She then talked students through a more filling breakfast

Sacks, who emits an air of well-being, is her own best advertisement for the benefits and pleasures of healthy eating. Naturally, we wanted to know how she does it. On a typical day, Sacks has a green smoothie for breakfast. Lunch might be a sardine salad and a piece of gluten-free flatbread. Because she has an auto-immune condition—successfully managed through diet— she avoids foods with gluten. An afternoon snack is a piece of fruit or vegetables with hummus. When asparagus are in season, her idea of a nice dinner is asparagus risotto and a big green salad. To keep the risotto dairy-free, she likes to whisk a spoonful of miso into the arborio rice just before serving. (The miso, she says, adds loads of umami, which is also present in parmesan cheese.) Though she’s not big on sweets, she’ll sometimes have a few dark chocolate almonds or a piece of perfectly ripe fruit or kimchi with glutenfree crackers after dinner. All very simple. Or not? The truth is, before you can eat like a nutritionist, you need to learn to cook like one. And with the birth of Reboot Food, now you can do both.

WATER’S EDGE THE PERFECT PLANTS FOR WET PLACES

f you have a wet place on your property, maybe alongside a pond or a small stream, or just a place where the soil never seems to dry out, you probably know that the roses and hydrangeas found in so many East End landscapes don’t thrive there. The standard directive for many plants is to give them soil that is “moist but well drained.” But what do you do if your moist soil is decidedly not well drained? Luckily, a host of special---and quite beautiful—plants like it wet. Here are some candidates for your landscape. If you’re looking for a tree, one to consider is the shadbush or serviceberry. A native that can be seen growing wild on the East End, shadbush covers itself in white flowers in spring, which are followed later on by small fruits attractive to birds (and reportedly delicious in pies for people, too). In fall the leaves turn orange, gold and red. Another native that likes moist conditions is the stately red maple or swamp maple (not to be confused with the widely planted red-leaved Japanese maples), which is found in moist forest areas across Long Island and sports glowing fall foliage that can be greenish yellow to bright scarlet to deep red. An especially beautiful tree is the Heritage river birch, which often grows as a clump of slender trunks, featuring beautiful shaggy bark that peels to reveal smooth, creamy beige bark underneath. A good shrub for a damp place is easy-to-grow clethra, also called summersweet and sweet pepperbush, which sends out wands of lightly fragrant white or

pink flowers in late summer. Clethra will form a clump of stems over time. The flowers attract bees and other pollinator insects, performing an important service since bees have become endangered. Two bushes in the holly family –winterberry and inkberry—also appreciate moisture. Inkberry produces black berries, and winterberry lines its stems with brilliant red fruits in fall. Neither has the prickly leaves of the holly we use in Christmas wreaths and decorations. Pussy willow is another good candidate for a wet spot, and welcomes spring with its soft, fuzzy catkins. And, of course, you need flowers for added color and texture. Some traditional flower garden favorites do just fine in a very moist bed or border. If you have a large space, big beautiful rose mallow, a type of hibiscus, is a showstopper. Taking the form of a clump of tall, thick stems, in midsummer the plant decks itself out in huge saucer-shaped flowers of delicious rosy pink. At the end of the growing season you may need lopping shears to cut back the stems for winter, but the flowers are worth the effort. The elegant calla lily, sometimes seen in florist bouquets or given as gift plants, can grow in wet soil or even at the edge of a pond or garden pool. The flowers take the form of a spathe, a white leaflike structure that wraps around a vertical column of minute yellow flowers, called a spadix. You can dig up the bulb in fall and store it in a cool place indoors to plant again next year. For dramatic, bold texture, plant elephant’s ear, a tropical plant with huge heartshaped leaves. This plant also grows from a bulb and

you can find bulbs in spring or plants in summer at many local nurseries. For a shot of fiery color try the water-loving Longwood varieties of the canna lilies that ignite East End gardens in summer with their tall, sturdy spikes of large lily-like flowers in hot shades of red, orange and yellow. Some more traditional and familiar garden flowers that appreciate plenty of moisture include astilbe, with its branched, lacy clusters of tiny pink, red, lavender or white blossoms in early to midsummer. New England aster is another good choice. An American native plant that was widely hybridized by English plant breeders, you can have their daisy flowers in shades of pink, rose, purple, red and violet, along with white. Beebalm, or bergamot, an herb garden favorite that lends its flavor to Earl Grey tea, bears shaggy flowers of red, pink, purple or white in mid to late summer. Clip off the old flowers when they fade and the plant will produce more. Good varieties include Cambridge Scarlet, Croftway Pink and Violet Queen. A smaller plant, cardinal flower, packs a visual punch with its brilliant red flowers contrasted against deep green foliage. A tall plant for the back of the garden is filipendula, or meadowsweet, which can grow as high as 4 feet and has dense clusters of tiny white flowers in summer. Plant some of these water-lovers in your wet spot, and be glad that you don’t have to worry about watering the garden!

FOOD WITH A SENSE OF PLACE WE TALK TO CHEF ALEX APPARU AT TUTTO IL GIORNO

rowing up in Corsica, Alex Apparu, the chef at Southampton’s Tutto il Giorno, waited tables from an early age at his parents’ restaurants. His dad’s place was in the mountains, and it presented the young waiter with no particular challenges. His mother’s place was a different story. Located within the walls of a thirteenth century citadel with views across the Mediterranean, that restaurant’s dining room was in the courtyard and the kitchen was on the third floor. Whenever he and his two sisters took an order, they would call up to their mother, who was stationed within earshot of the open-doored balcony, Ecoute!’ “Hey!” And then, from memory--they never wrote orders down--”We need one tagliatelle with pesto and a whole roast daurade!” His mother stuffed the daurade, or gilt-head bream, with wild lavender from the hillside and brocciu--a typically Corsican goat cheese with a mild tang and a ricotta-like texture. The tagliatelle was made fresh every morning with local chestnut flour. No one banged on about local ingredients because it wouldn’t have occurred to anyone to cook with anything else. When the food was ready, Apparu would walk three flights up a narrow unlit staircase. “On the way down,” he recalled, “I’d have to try really hard not to get distracted by all the wonderful cooking smells wafting off the plates so that I wouldn’t drop anything.” That formative lesson in self-restraint is apparent in Apparu’s style at Tutto il Giorno (which is owned by Gabby Karan and her husband Gianpaolo de Felice). He brings to the fundamentally Italian menu his own sensibility, which draws on the intermingled culinary cultures of the Mediterranean basin. A lamb

loin carpaccio, for example, is finished with a tahini vinaigrette and a scatter of lightly-dressed herbs. The traditional pollo al mattone, chicken cooked under a brick, is actually a butterflied cornish hen, and it arrives at the table with a pan sauce flavored with star anise and harissa. New potatoes might be spiked with the preserved lemons that always made an appearance on his mother’s table.

“The way I cook has everything to do with how I was raised,” notes Apparu who was born into a family of restauranteurs and inspired cooks with culinary roots in France, Italy, and colonial Tunisia. Though Apparu and his mother and siblings moved to New

BY ISABELLA JENKINS York in the mid-eighties--where his mother, Martine Abitbol, opened a restaurant on the Lower East Side called La Poème--they continued to spend summers on Corsica, catering to the tourist trade. During the colder months, “people hunt and pick chestnuts and that’s about it,” he says, drawing a parallel to the East End of Long Island, which turns in on itself in the winter. “I spent my childhood traveling back and forth, not just between countries, but between two profoundly different ways of life. It wasn’t a bad way to grow up.” In his early twenties, Apparu attended the storied Lycée des Métiers de l’Hôtellerie et de la Restauration Jean Drouant in Paris, a school so formal that male students were required to attend lectures on classical technique wearing a suit and tie. He later trained at a Franco-Italian restaurant called Le Tournesol (“run by a couple of hip young Frenchmen”) before returning to New York. After the attacks on the World Trade Center in 2011, he and his family moved to eastern Long Island. Six years ago, when Karan and de Felice opened an outpost of Tutto il Giorno in Southampton, Apparu took over the kitchen. (The original Tutto il Giorno, in Sag Harbor, has different owners and a new name. In 2014, Karan and de Felice opened a second location in New York City’s Tribeca.) With that being said, what I’ve found, from both my own pool house and outdoor kitchen area, and also from becoming friends with the clients I’ve built outdoor spaces for; is that it keeps any mess from entertaining and company outdoors. Guests and guests’ children aren’t schlepping into the house to use the bathroom, the blender explosion didn’t happen in the kitchen, but rather on the outdoor countertop, and the margarita doesn’t stain the sofa but rather outdoor fabrics! We can hose it all down at the end of the night and do it again tomorrow! HRES: What features do you consider most important in an outdoor kitchen? DK: It certainly depends on the client and the type of entertaining. In a formal entertaining environment with staff, then ambiance exceeds actual usage; lighting, furnishings and audio/video. But in an informal setting (which is more of my customers), refrigerated storage,

NURTURING BLISS IN DIFFERENT WAYS REIKI AND THAI MASSAGE BALANCE BODY AND MIND BY Reiki Master and Teacher Terri-Marie Sag Harbor Within a minute of my head being softly cradled in Terri-Marie’s (T-M) hands a reservoir of tears welled in my eyes, one sliding down a cheek. How to describe the feeling that had overcome me? This might sound weird, but let’s just say that I felt a rush of love and gratitude coming from somewhere not necessarily on this plane. Okay, even if you don’t believe in presences communicating from beyond the veil, there is nothing quite like the deep relaxation you get from the nurturing touch of Reiki, an energy system that originated in Japan. While in acupuncture it is needles that are a conduit between a universal energy and the patient, in Reiki it is hands that channel the energy. The increasingly popular system is used to relieve stress and activate healing by treating the whole being: body, emotions, mind and spirit. According to the International Center for Reiki Training, “A treatment feels like a wonderful glowing radiance that flows through and around you.” I’ll second that. T-M, who practices in Sag Harbor and New York, often uses the procedure to do her “angel readings.” Yes, you read that right. Though it sounds woo-woo, I can attest that her readings (at least the one she gave me) are highly valuable. M-T says that she channels a lot from the other side, but doesn’t share that info unless her client wants it. Otherwise she will simply

relate what’s going on in the body. “Your people wanted you here,” she announces when the session is over. “A very strong feminine energy is worried about you.” My grandmother, no doubt. After telling me about the concerns, M-T says, “She wants you to know that you are supremely loved and are not alone.” Talk about tears flowing. My “guides” go on to tell me that I’m “playing small. The universe needs you.” It seems that I’m meant to help “heal many generations of feminine suppression.” I’m onboard.

Gilles Baudin, a handsome Frenchman, leads me into a small room where layers of bedding are spread on the floor – first an organic “Thai mat” filled with kapok, a cotton-like fluff, next a BioMat, filled with crushed tourmaline and amethyst gemstones to conduct far infrared rays and negative ions. The mat, which heats up to 152 degrees Fahrenheit, is used in hospitals to combat cancer, according to Baudin. “The heat is very healing and goes deep,” he says. “Cancer cells can’t exist at that temperature.”

The top layer is a print sarong and surrounding it are a cluster of colorful pillows. Along with the New Age flute music I am transported back to my hippie boyfriend’s bedroom. Imagine being pulled and stretched and twisted into poses beyond any you have experienced in yoga. In fact, Thai massage, which was developed some 2,500 years ago by an Ayurvedic physician, “shares the same roots as yoga,” says Baudin. Unlike traditional massage, the Thai practitioner uses not just hands, but his own body as leverage: elbows, knees, forearms, shoulders and feet to create traction. “It creates space in the joints,” he says. “Creating mobility in the hips gives the upper body ease.” He also applies pressures to chakras. “It’s choreography,” he says. “Like a dance.” Baudin was a ski instructor in Aspen when he discovered the technique on a biking trip in Thailand. “I never went back to skiing.” Most of his business is in-home where he treats clients such as fashion designer Norma Kamali. I flop blissfully around like a rag doll, as he alternates walking on my back and gently rocking my head. While there are moments of discomfort, this is the deepest, most thorough massage I’ve ever had. When it’s over I feel as if every sinew in my body has been caressed.
