On the heels of the June listing of her Tower Hill property in Bridgehampton for $29.5M, the supermodel has placed her 4.5-acre North Haven property on the market for $25M.The grand three-story plantation-style abode built in 1843, which she bought in 2004 for $7.45M, fronts 327 feet of beach.The 5,500-square-foot abode maintains much of its original character from the imposing twostory porch columns to the wide-plank pine floors. The second-floor master bedroom features a sitting room and panoramic suite with its own sitting room and secluded terrace for the panoramic harbor views. Christie listed it for $15.75 million in 2010, but took it off the market to renovate. Alas, it still needs more work, listing broker Enzo Morabito told Town & Country. “If it didn’t, I would list it for around $40 million.”

Preservation Coup In a coup for preservationists, Southampton Town has purchased approximately 86 acres of sensitive East Quogue woodlands in the town’s Aquifer Protection Overlay District and Suffolk Special Groundwater Protection Area. The East End’s largest land transaction in more than a decade was facilitated by Compass agents Scott Strough and Christian Lipp and was funded through the Community Preservation Fund. “Groundwater protection is priceless,” says Scott Strough, who made the deal with Christian Lipp, both of Compass.

Wolfie’s, a tavern that has served the local Bonackers for generations (under various owners) has stopped pouring for good. Max Krasniqi, the current proprietor of Café Max, a 25-year-old fish house serving estate section regulars, also could not come to terms with his landlord. After owning several eateries here, the restaurateur has no intention of setting up shop in these parts again. “If I try it again, it would definitely be on the North Fork,” he told 27east.

Happy Ending Once upon a time, when Jonathan Pearlroth inherited a tiny dilapidated house from his father, his first thought was to replace it with a larger one to accommodate his family. After all, the oceanfront Westhampton Beach lot could accommodate a much larger structure. After his offer to gift the house, which was designed by acclaimed midcentury modernist architect Andrew Geller in 1959, to Southampton Town fell through, he hired

architect Rick Cook to restore the box-kite-like beach house known as Double Diamond. Cook moved it 40 feet inland, then built a bigger house on its footprint with a pool separating the two edifices. The salvaged icon has been reborn as a pool house. A happy ending to be sure.

GUILT-FREE FIREPLACES SOOTHE YOUR SPIRIT THIS WINTER WITH A WARM FIRE

A

h, what could be better in winter than gathering the family around a cozy woodburning fire? According to the folks at the Wood Heat Organization (WHO), a fire is “soothing to the spirit.” Alas, that autumn-scented smoke curling from the chimney is a sign that your hearth is burning “dirty.” So what are the guilt-free fireplaces?

Wood Firewood can be harvested poorly, burned dirty and its heat wasted. Not to worry. The new technologically advanced fireplaces that are certified low emission by the EPA can burn with no visible smoke and generate 90 percent less pollution than those of yore. Believe it or not: “Wood is the most accessible and affordable renewable energy resource for home heating in much of North America whose use can help reduce greenhouse gas emissions because its net carbon dioxide emissions are far below those of all other fuels,” according to WHO. Proprietor of Sag Harbor Fireplace, Michael Scanlon, recommends the Phenix Green series from Wittus: “high-efficiency fireplaces that maximize the heat output.”These are what he calls “prefab” fireplaces – factory built of lightweight metal, as opposed to

the traditional masonry built right into the home. “Demand for the newer prefab fireplace is picking up.” These newfangled versions “are designed to work like a wood stove where it takes less air to burn the fire and takes less hot air from your house.” In traditional fireplaces, he says, “all the air in the house goes up the chimney in a couple of hours.” But the new highefficiency fireplaces have catalytic combustors and baffle systems “to re-burn the smoke and unburned gasses before they escape up the chimney.” While it might soothe our souls, “all that great smelling smoke is unburned carbon, wasted energy.” Not only do such fireplaces as the Phenix burn clean, they also generate a lot of heat: up to 3,000 square feet of toasty air. Scanlon is also a fan of Renaissance Fireplaces. The Linear 50 model allows for a beautiful wall-to-wall fire and has an air wash system that keeps the glass doors from becoming blackened.

Gas Today’s gas fireplaces truly resemble their woodburning cousins from their glowing embers and dancing flames to their realistic looking charred logs. Not only do they look pretty they also provide lots of warm air and radiant heat. “Most gas fireplaces are state of the art,” says Scanlon. And natural gas emits less toxic material than even the cleanest wood stoves.

Town & Country’s gas fireplaces include 10 fireplace models made with such stylish ersatz fuel sources as ceramic logs, river rock or glass. The Novus nXt gas fireplace by Heatilator combines contemporary style with traditional brick panels, and can be customized with different styles and finishes. The bad news about gas is that chances are about one in three that it has been fracked.

Ethanol Ethanol fireplaces burn very cleanly, producing primarily water vapor and a little bit of CO2.They also produce a flame without any flue or chimney, keeping the heat from escaping. hen do one and one equal more than two? This is not a trick question. There is a synergy created when pairing wine and food. To drag out an old maxim from math class (or was it science?): the sum is equal to more than its parts. Food is great, and wine even better. But when combined in knowing and inspired ways together they ascend to ethereal heights. Think of foie gras and sauternes or beef and cabernet. As my dining (and drinking) partner keeps exclaiming on a recent North Fork food and wine pairing adventure: “It’s all about the combo!”

The pear and cheese tortellini with its asparagus and parmesan cream, proclaimed “amazing” by my friend, is elevated even further by the 2014 Dos Aguas Table White from Macari Vineyards with its complex blend of chardonnay, riesling, sauvignon blanc and viognier grapes.

Jedediah Hawkins Inn Jamesport Our expert of the evening is general manager Colin Keillor who earned his cred as a sommelier by toiling at various wineries and restaurants after leaving a career as a trial lawyer. We leave the ordering to him

A 2013 Riesling from Jamesport Vineyards arrives. Keillor explains that the sweet notes of this delicate wine will complement the baby arugula salad with its luscious layer of prosciutto, slivers of red onion, Gorgonzola and two types of fig (tiger and black mission). My companion, an avowed red wine imbiber, declares it “too sweet” until she drinks it with the salad. She then labels it “perfect.” Amen.

A 2013 Viognier from Bedell Cellars is magic with the caramelized sea scallops on a tasty tide of carrot

puree. Viognier grapes grow well here, according to our host, the ocean breezes and early morning dews moistening them on the vine. “This is soooo good,” my erstwhile red wine lover keeps repeating. We dig into a beautifully executed duck breast with wild rice, black currants and a sour cherry sauce. To the delight of my pal a red wine arrives: a 2007 Sidor Reserve from Jamesport Vineyards. The fullbodied blend (syrah, cabernet, merlot, cabernet franc, petit Bordeaux) is a stand-in for the pinot noir that Keillor would have recommended, if only that grape thrived on the North Fork. The “notes of fig and maraschino cherry cut through the gaminess of the duck,” as he promised. Chef Kasia Dabrowska delivers the dessert herself. She waxes eloquent on the bounty of fare available locally: the produce from Seps Farm in East Marion, the ducks from Crescent Farm in Aquebogue (the last remaining duck farm on Long Island), and the ice cream we are about to

savor from Magic Fountain, an old-fashioned ice cream parlor in Mattituck. Their ambrosial fig and honey concoction goes beautifully with the intense flourless chocolate torte. The conversation moves to Escargot Peconic, the country’s first snail farm located in Cutchogue. The chef is looking forward to the first arrival of the gastropods. We can’t wait to see how she will prepare them.

The smaller portions give us just enough to swirl around in our mouths and to taste each course, allowing us to sample more varieties. We start with a trio of “Tastes,” Noah’s in Greenport tiny starters, all of which are considered signature dishes: earthy House Marinated Olives, tasty Beer A series of “Small Plates” arrive next. The spiciness of & Bacon Glazed Almonds and Crab Stuffed Deviled the Thai-influenced Crispy Calamari Salad, a winner, Eggs – surprisingly bright due to a generous dose is grounded with the stone fruit notes of a 2015 of citrus. My companion, who considers herself a Viognier from Greenport’s Kontokosta Winery. Our deviled egg aficionado, deems this version “one of the favorite dish was the scrumptious Crescent Farm best I’ve ever tasted.” Chef-owner Noah Schwartz Duck BBQ with a brilliant pomegranate molasses pulls the recipe out of his toque whenever he has a and chipotle adobe sauce melded with a comforting large event to cater. “It’s a real crowd pleaser,” says the cheddar-flecked polenta – and elevated by the jammy native Long Islander. All nibbles go down nicely with flavors of a 2010 Meritage from Coffee Pot Cellars a mineral-rich 2015 Sauvignon Blanc from Castello in Cutchogue. A 2013 Merlot from Bedell with hints di Borghese in Cutchogue. of anise brought our decadent Filet Mignon Slider — THANKSGIVING 2016

on toasted brioche and lathered in a truffle-scented hollandaise — to new heights. Alas, we couldn’t try everything at our Thursday evening outing, but next time we’re going to try a sampling of oysters sourced locally from Shelter Island to the Long Island Sound. Each cove delivers bivalves with differing flavor nuances according to Noah. We’re thinking of pairing the Peconic Gold oysters with the creamy oak and vanilla tinges characteristic of a 2014 Bedell Chardonnay.

A LOOK AT THE LATEST TRENDS IN WALL COVERINGS

orget about your grandmother’s wallpaper festooned with giant cabbage roses or tiny Laura Ashley-style print. Today’s wallpaper is edgy, gorgeous and chic. And it ain’t just paper any more. Wall coverings come in materials as diverse as fabric (wool, silk, linen) and metal (aluminum, copper). At Chicago’s Maya Romanoff, the country’s largest manufacturer of handcrafted wall coverings, their products are called “extraordinary surfacing materials.” And extraordinary they are, often festooned with such wall jewelry as glass beads, gold leaf and seashells. “Wall coverings have become all about texture and offer a way to create added visual interest,” says East Hampton interior designer Debra Geller. “Natural materials such as grass cloth combined with metallics add glamour and excitement to a room.” In a surprising recommendation she advises using wall coverings even on ceilings, “the forgotten wall.” Maya Romanoff, who founded his company in 1969, had a vision of combining ancient artistic techniques with the latest production technologies.The company’s fall collection features a half dozen artisan-executed coverings. Inspired by Japanese crushing techniques,

Mesa is a testament to the interaction of dye with the peaks and valleys of creased paper. The Weathered Metals line might be blended with metallic pigments for a shimmering finish, but its subtle design resembles stone. In the True Metals Collection aluminum or copper tiles are inlaid on paper backing and finished with beeswax to retain their appearance over time. Bravado is hand painted in a subtle crosshatch pattern. Back home in East Hampton artist/designer Elizabeth Dow employs ten artisans in the wall coverings studio behind her eponymous home décor shop. It is here that they toil away designing and manufacturing dozens of collections in a wide range of materials from paperbacked silk to grass cloth. Known for her neutral palettes, Dow notes that grays, earth tones, lavenders and “unusual blues” are in strong demand. While she acknowledges that “metallic continues to be a constant in fashion and decoration,” she notes that current tastes eschew anything “bright, shiny or brassy.” Instead, her metallic coverings tend toward the blue-greens of “rich patinas.” As in the Maya Romanoff coverings, Dow’s are also trending toward an organic feel. Among her new patterns is one called Urban Zen, which comes in

eight subtle colorways and features wiggly vertical lines that resemble rain streaming down a window. This effect was first generated by snapping a paintlathered string on paper. That process reflects Dow’s artistic background – she was a painter for many years. “We approach coverings as if building a painting,” she says. “It’s all about line and surface and texture.” Another new pattern, Jacquard, “has a water color aspect,” while Strata, with its horizontal lines reminiscent of a “shale bank,” is heavily textured – an effect achieved by combing. “That’s what we’re really about: texture, depth and color.” Texture, which is produced by layering mixed media to result in a raised surface, is what gives depth as the light plays off its nooks and crannies. Dow is quite excited to announce a new eco-friendly high-performance covering that incorporates a highend residential aesthetic. It is durable enough for commercial applications and beautiful enough to go in the hallway of a typical Hamptons home. It is so new that samples are not yet available in the many showrooms that rep her products worldwide. For now you can only get it at her East Hampton store. n 1978, Debra Gildersleeve’s parents first opened a small boutique called RENEE’S in Mattituck, named after her mother. She spent much time in the store growing up, and after a career in fashion eventually decided her true calling was to return to the East End to take over the family business with her husband William Gildersleeve as her partner. “We kind of fell into the furniture business by accident,” says Debra of the store’s transition into a luxury department store. “We used different pieces to display jewelry and clothing, and customers began asking if

they could buy the displays.” The store expanded to include home furnishings and accessories, with Debra as the chief buyer. “The concept for fashion design and interior design is the same to me.You have to take into consideration balance, color, and personal style. Every job is a problem solver – the goal is to make a room not only beautiful and functional, but also meet the client’s design needs,” says Debra of her venture into the design aspect of home furnishings offering design consultations and

custom work for clients, choosing everything from grout colors to lighting fixtures.
