studios on the North Fork. I find yoga helps me remain calm and balanced under stressful situations, and working in real estate is certainly challenging. I am not much of a cook, so I enjoy eating out at the local restaurants and socializing and boating in Greenport during the summer. I have lived in several cities in different states throughout the country, and I have found the North Fork community to be the most inviting and friendly place.
NFRES: The North Fork is a unique market, would you agree and why? KN: Absolutely! Today’s market is much more affordable as compared to the South Fork and

buyers get so much more for their money. Many of my sales have been people who could afford the Hampton’s, but chose the North Fork because they found it more peaceful and less congested. That said, now is a great time to buy as more and more people are discovering the charm and beauty the North Fork has to offer.
NFRES: How would you describe your selling style?
KN: Real estate is about relationships. It really depends on whom I am representing. In any case, I determine what is most important to my clients and customers and adapt my style to their personality. In some cases, I am very aggressive, while in other situations I am subtle. My goal is always the same, to negotiate the best deal for whomever I am representing and always work honestly and with integrity.
NFRES: What is the most personally satisfying part of your work?
KN: I have created an incredible sphere of influence through Elliman events and getting involved with community activities and organizations. Most rewarding are the lasting relationships that I’ve built with the people I work with. I have received so many wonderful and humbling testimonials and it’s an incredible feeling knowing that I have been able to achieve my client’s goals. Being awarded Douglas Elliman’s 2014 Rookie of the Year was one of my proudest moments! I look forward to continuing to grow my business in 2015!

eonies. Maybe you’ve never heard of them. Maybe your grandmother grew them. But if you don’t have them in your landscape or flower garden, take another look. They bloom for just a few weeks in spring, but oh, what flowers! Big, round, sumptuous balls of wide petals in so many shades of red, rose, pink and white, with a beguiling sweet fragrance. They rule the garden, and they make wonderful cut flowers, too. Perhaps best of all, deer don’t bother them. And peonies are beautiful plants when they’re not in bloom—their bushy form and masses of rich green leaves make an elegant backdrop for other flowers. Although peonies die back to the ground each fall, during the growing season they have the presence of compact shrubs in the garden. There is a woody-stemmed form called the tree peony—it produces truly massive, show-stopping
blossoms—but the more common type is easier to grow and use in flower gardens and landscapes, and very beautiful. Some peonies have many-petaled ball-like flowers; others have a single row of wide petals that form a bowl with a cluster of golden stamens in the center. Still others are flatter and saucer shaped. But all of them are lovely. Besides their beauty and deer resistance, peonies are really easy to grow. They adapt to many kinds of soil, they’re seldom bothered by pests and they don’t need to be fussed over. At the end of the season, when the plants start to brown, just cut the stems back to a few inches from the ground. Peonies live a long time; you will probably have to plant them only once. The key to success with peonies is to not plant

them too deeply. The crown of the plant, where the roots meet the stem, should be no more than 1 or 2 inches below the soil surface. If you plant too deep they probably won’t bloom, even when the plants appear perfectly healthy. Once in place, peonies can stay there for years…or generations. They don’t like to be moved, so plant them where you’ll want them to stay. The only care peonies need is a spring feeding of all-purpose plant food—ideally organic—and some compost gently worked into the soil around them in spring. The large flowerheads are heavy and may weigh down the stems, especially during rain, so it’s wise to stake the stems. Better yet, set a peony support (it looks like a metal grid on legs) over them as they begin to grow; the stems will grow through the grid and be held up by it. To use peonies as cut flowers, cut the stems when the buds are just beginning to open, and let them unfold in the vase. They are beautiful in the garden, but even more delightful close up. If you notice ants crawling over your peonies don’t worry—they’re not doing any damage.They are attracted by a syrupy liquid on the buds. Just shake off the ants before bringing the cut flowers indoors. And then enjoy these most beautiful and carefree of flowers.

BRIX AND RYE IN GREENPORT COCKTAILS FOR CONNOISSEURS, HOLD THE ANCHOVIES
T
he North Fork has no shortage of bars-restaurant bars, wine bars, shot-anda-beer bars--but only Brix and Rye, on Stirling Square in Greenport, serves classic cocktails and fantastic wood-fired pizza. Cocktails and pizza might seem like strange bedfellows, but as it happens, the two are a perfect match. ‘Cocktails stand up amazingly well to the big salty flavors of pizza,’ resident mixologist Evan Bucholz said the other day. If you were to ask the Jamesport native (previously of The Frisky Oyster, Fort Defiance, and Collicchio & Sons) to suggest a drink that would complement a pie topped with zucchini blossoms and fresh mozzarella, he might recommend an ultra-fresh medium dry sherry such as an amontillado or a stirred cocktail with a citrus component. He’s especially partial to a concoction he calls the Backsliding Presbyterian: Bourbon, housemade ginger syrup, lemon juice, Campari, club soda. (‘The dryness of the Campari cuts through the richness of the cheese in a pleasing way,’ he explained.) A beer with a high hops content would work just as well. (‘Same effect. It rounds

out the pie’s saltiness, prompting you to take another bite.’) And about that pizza. It comes from co-owner Matt Michel’s 1943 Pizza Bar. Michel has been a force in the world of proper pizza ever since he established Rolling in Dough, a catering company that operates out of a vintage fire truck with an oven imported from Italy. His restaurant is across the square from Brix and Rye, but the two establishments occupy the same building and are connected by a staircase--a convenient arrangement for running food into the grottolike bar, which at one time may have been a speakeasy. When Michel opened 1943 last year, the locale he rented included the rustic exposedbrick space that would become Brix and Rye. He used to visit that space every time he visited the downstairs storage room, and think, This would make the perfect bar. ‘Even in its raw unfinished state, it was an enchanting space,’ he recalled. ‘Dark and cozy, it was the kind of place where I would want to have a drink and settle in for the evening if

I didn’t know anyone in town.’ In fact, Michel knows everyone in town. In search of a partner for his new enterprise, he was mentally reviewing his roster of acquaintances when he thought of Bucholz, whom he’d met while were both working at The Jediah Hawkins Inn. (‘For, like, five minutes.’) Bucholz and his wife, Kyla, a veteran of New York City’s Prune, realized at once that this was the bar they’d been waiting for. Bucholz said the three partners very quickly decided to ‘make it the kind of place where even the most sophisticated cocktail connoisseur would feel at home.’ In celebration of spring, Michel has been replicating empanadas that he tasted on a recent trip to Mexico. Bucholz, for his part, is working on a cocktail that involves snap peas, dry sherry, blanc vermouth, and verijus from Jamesport Vineyards. But neither item will be available for public consumption until they’re exactly right. As Michel noted,‘Experience has taught us that once we put something on the menu, our customers won’t let us take it off.’

PECONIC LAND TRUST PROTECTING WHAT WE KNOW AND LOVE ON THE NORTH FORK BY JOHN
F
ounded in 1983, the Peconic Land Trust conserves Long Island’s working farms, natural lands, and heritage for our communities now and in the future. As such, farmland protection is an important part of the Trust’s mission. Since its inception, over half of the 11,000 acres that the Trust has protected with its many partners has been farmland. The Trust’s Agricultural Center at Charnews Farm, located on Youngs Avenue just north of Southold hamlet, is the North Fork hub of our Farms for the Future Initiative. Farming, gardening and educational programs are taking place on almost 100 acres of farmland, woods and meadows. Most of the acreage is leased to farmers, a diverse mix of operations from vegetables to livestock. The Ag Center also welcomes community gardeners who choose from over 40 plots of varying sizes to grow their own food as well as 4th and 5th graders from Southold Elementary School who learn about agriculture on the East End in our Learning Garden.
In 2009, the Trust began leasing land at the Ag Center, with Sang Lee Farms, Browder’s Birds and Invincible Summer Farms among

the first farm operations: For Sang Lee Farms, operating in Peconic since the late 1980s, the center has provided the opportunity to lease additional acreage. For Invincible Summer Farms, which has continuously leased at the Ag Center since 2010, it is providing land to expand. For Browder’s Birds, which leased at the Ag Center from 2010 through 2013, it provided a launching pad for its operations which have since moved to farmland it purchased from the Trust in Mattituck in 2014. In 2015, farmers at the Agricultural Center will include Sang Lee Farms and Invincible Summer Farms plus a new mix of early stage farmers including Akio Soji, KLM Mushrooms, From Scratch Farm, The Growing Seed, and WildFeast Foods. Giving farmers the opportunity to own farmland is a key element of the Farms for the Future Initiative. While the Ag Center provides leasing opportunities for farmers of all types (on the South Fork, we lease farmland in Bridgehampton and in the North Amagansett area near our Quail Hill Farm), the Trust also has purchased threatened
