SUSTAINABLE AGRICULTURE ON THE NORTH FORK
8 HANDS FARM IS CHANGING THE LOCAL FOOD SYSTEM
W
hat exactly is “sustainable agriculture”? The official definition: the ability of agriculture to meet society’s food and textile needs in the present without compromising the ability of future generations to meet their own needs.

Well, that’s what 8 Hands Farm owners Tom Geppel and Carol Festa were seeking when they began farming in Peconic in 2009. After having viewed the documentary movie Food, Inc.,, which highlights the negative impact of Inc. industrialized food production in the United States, the married couple decided to try their hands – and with their 2 children they have “8 Hands” – to grow their own food with a focus on changing the local food system. With absolutely no farming experience but a strong desire to make a difference in their North Fork community, Tom and Carol leased a fallow field from Pindar in Peconic, bought some Icelandic sheep, and started their family farm. Later came the heritage chickens and then the Tamworth pigs – a heritage breed from the central region of England and imported to this country in the latter part of the 19th century. According to the Livestock Conservancy website, the Tamworth was bred for forage with strong legs, sound feet and ginger red coats that make the pigs adaptable to a variety of climates as well as protected from sunburn. Sounds like a perfect breed for 8 Hands, which is based

on the premise that animals should exist as nature intended: in an environment that is natural to their species and eat what their bodies were developed to process. As the fundamental 8 Hand belief goes, happier animals result in healthier food. The animals of 8 Hands Farm all serve multiple purposes. Icelandic sheep, which are hardy, docile, and intelligent, are considered a “triple-purpose” breed — renowned for meat production, milk production and fiber. The Tamworth was traditionally considered a “bacon” breed, meaning that they thrive on low-energy foods, producing meat and bacon that is lean and fine-grained. More than a decade later, 8 Hands Farm is now located on 28 acres on bucolic Cox Lane in Cutchogue, purchased in concert with the Peconic Land Trust. A renovated and converted 1940s potato barn now serves as a commercial kitchen, farm store and butcher shop. The farm store includes seasonal produce grown according to organic practices on the farm, prepared food, baked goods,

ESTEFANY MOLINA TAKES A DEEP DIVE INTO THE SOUL her beginning this series, and you have a winning combination. “This is a very imperfect series,” explains Molina, “These are not perfect pictures, and I did not intend to make perfect pictures. I shot medium format film in extremely low lighting situations. Some of the images have had to be pushed digitally in order to get a shadow of an image. The lightboxes are weatherproof, but these pictures are grainy, hazy and glitchy. Connection is glitchy. Sometimes the beauty is in the glitch, in the grain, in the haze.”

A
rtist Estefany Molina has a very deep, soulful connection to her work, a profound understanding at age 31 of the human condition, and an ability through her own intuition to capture that on film. She describes the nature of photography as “writing with light, through time, with our subconscious mind.” A Latin American lens based artist with a BFA in Photography from the School of Visual Arts, Molina has found a vibrant life in Greenport where she grew up. Her most recent project Nightswimming is “a meditation on transience and connection through the vulnerability of the subject. Using the night, the sea, and time the images become intimate glimpses into something sacred.” For Molina, her creative process is a life process and several points of connection inspired the series: a favorite song of the same name, a distinct visual and emotional memory of a summer of love jumping off a dock at night, and a chance meeting with a three-year- old boy and his father teaching him how to use a Hasselblad camera which she ultimately borrowed to shoot the series. Add in the video artist Thomas Halaczinsky, who documented

Using the special camera, Molina captured her subjects through the darkness. She then printed a 3’ x 3’ image on polycarbonate material. Each is mounted within a lightbox powered by LED lights, creating a weatherproof piece of art. Her life-long friend and local carpenter Stephen Klipp carefully crafted each of the lightboxes. She comments, “He is not only just a carpenter, but a super talented musician and artist. After hearing what I was trying to do, he offered his help with no strings attached. Similar to the same guts you need to leap off the dock at 2 am, it was the energy I needed for the integrity of the project. He is now working on designing and building custom guitars.”

capture the authentic emotion. She recounts, “The only way for my subjects to have felt safe with me in their own vulnerability is having been vulnerable myself and willing to share. These were very intimate, confessional moments. That is a totally scary position to be in. I have had several other people flake on me because the scenario was too intimate. You can’t force anything. It’s like Google Maps; the universe can only point so much. But if you keep fighting against the path, you’ll be rerouting endlessly. You just have to follow the momentum of your life, and let it flow.” At a time when many of the younger generations are fleeing the East End of Long Island for more affordable options, it is refreshing to see artistic voices here getting an opportunity to connect with the public and sell their work. As Molina says, we should embrace those moments, “where we have had to learn, again, how to swim, how to trust, how to be in the world. It’s a re-wilding.”
The resulting exhibition was a sensory voyage of light, sound and spirits (of the drinking kind) when it debuted at the Matchbook Distilling Company in Greenport. The upcoming shows will be held there on Saturday July 9th and August 27th from 3 to 8pm at 230 Corwin Street. The viewer is left with an almost haunting, ethereal feeling from the works. “Each of my chosen subjects were in the midst of some kind of becoming or transition,” explains Molina, “Whether it was the falling in love or the loss of it; the start of a new era or the end of an old; an oscillation; a change in trajectory; or selfrealization.” Molina had to earn their trust to

ello, summer. It’s nice to have you back. On the North Fork, there’s no better way to greet this best of seasons than with a meal (or two, or three) with a view. Luckily, there’s no shortage of waterfront dining on the North Fork. Grab dinner and a cocktail at Crabby Jerry’s or Claudio’s Waterfront while the weather is still hot. At Greenport’s Crabby Jerry’s, a 180-degree view of the water is paired with casual food and a convivial vibe. Fresh seafood is the name of the game here, and you’ll find the local, fresh North Fork oysters just as exciting as the impeccable view. Across the street, a more upscale dining experience — with a still-unparalleled water view — awaits at Claudio’s Waterfront. Start with the steamed clams with garlic and white wine and head directly to the lobster bake, with fresh lobster, mussels, clams, shrimp, potatoes, and, naturally, cole slaw. Seasonal PORT Waterfront Bar & Grill is open again for the season for lunch and dinner. The restaurant’s incomparable view of the water makes it a Greenport staple. This year’s streamlined platter includes dishes for seafood

devotees and land lovers alike. Try the appetizer of Japanese fried chicken with sweet chili sauce, or the tender mussels cooked with chorizo and local Lenz rosé to start. And don’t skip the daily selection of local oysters and littleneck clams on the half shell, or the iconic New England lobster roll, served with a Dijonnaise. A pitcher of the Rum Punch in the Face is enough to serve five, and you can top it with a little extra coconut or banana rum for some extra punch. Down the road, at the Halyard Halyard,, the seasonal menu is usurped only by the view of the water. Indoor and outdoor seating is complemented by the Shinnecock sea scallops, served over asparagus risotto, with a Parmesan mousse. A 15-day dry-aged duck breast — from Long Island, of course — comes with white asparagus, rhubarb, and a duck jus. And local Oyster Ponds oysters, shucked to order, are always a perfect way to enjoy a sundowner over the water at this waterfront retreat.

Don’t overlook Orient Point, the idyllic, verdant and easternmost town on the North Fork when looking for waterfront places to
dine this summer. Duryea’s Orient Point, which sits adjacent to the hulking Cross Sound Ferry (it runs a regular route between Orient and New London, Connecticut) has reopened for the 2022 season, offering outdoor seating and a seafood-heavy menu for diners looking to indulge at the beach this summer. Specialties include Spanish octopus with roasted tomato and garbanzo beans, a Greek melon salad, and a three-pound local bass with a Green-Thai salad and flat bread. It may be hard to decide, from Duryea’s vantage point, which is more stunning: the food or the unobstructed view of the water. In June, Duryea’s also launched their Beach Club,, another waterfront oasis, with views Club of Gardiners Bay. Located a few feet from the restaurant, this smaller, more casual outpost is for lounging, kicking back, and taking full advantage of the water views. A raw bar, Asado-style barbecue, and Duryea’s signature crudités platters and Mediterranean spreads will all be available, along with plenty of icecold rosé. And while you can get there by car, both restaurants also offer transient boat slips, for the ultimate in waterfront dining.

he real estate market of the past three years has been ferocious across the United States. On the North Fork, the interest has been endless. This year, Douglas Elliman reported that the median sales price on the North Fork surged 86 percent between 2012 and 2021, rising from $430,000 to $830,000 and outpacing the Hamptons in home appreciation. Inventory is at a historic low, and home values are at an historic high. Is this the time to invest in waterfront property on the North Fork? The North Fork, with its sizzling hot market, still offers opportunities to buyers in the know, says Marianne Collins, Collins, Licensed Real Estate Salesperson with Brown Harris Stevens. ummer is here and it’s time to start enjoying outdoor living and entertaining on our decks and patios. When the outdoor furniture is in place and the grill or outdoor kitchen is ready to go, adding some plants to your deck or patio will bring delightful color and texture to the scene — turn that deck or patio into your own private Shangri-La.
elephant’s ear — and its relative, alocasia, will have a big presence. Another option for shade is caladiums; these foliage plants can have white leaves with green veins or pink leaves with red veining. Rex begonia can also enliven a shady bed or pot.
Trees will bring height and movement to the scene as their leaves sway in the breeze. Bring in some potted palms and you can pretend you’re in a tropical paradise. Local nurseries and garden centers stock these kinds of plants for summer — get yours while you can. Palms aren’t the only option. The fiddle-leaf fig has bold leaves that might remind you of the musical instrument for which it’s named. They add a lush note. Or, how about an olive tree? A real conversation starter, you can find them at Marders in Bridgehampton.
Vines are artists in the garden — their twining stems can climb a trellis, ramble across the top of an arbor, spill from an arch. There are exotic passionflowers, and two of my favorites — the aptly named Heavenly Blue morning glory that welcomes the dawn and closes as the afternoon fades. Its night-blooming relative, the fragrant white moonflower, opens its petals as the sun goes down (to attract the moths that pollinate it) and is over by morning. Mandevilla sends out lots of trumpet-shaped flowers in pink or white, to climb a trellis or spill from an arbor. Jasmine is loved for its intoxicating fragrance — look for it in hanging baskets.
Other big tropical plants will add volume and color to the scene. In a shady spot, the bold leaves of colocasia — nicknamed

show-stopping color all season long, dahlias provide it all summer into fall. The flowers come in 11 different flower forms and warm shades from pastels to hot pink, rose, oranges and reds; they’re outstanding in containers. There are different flower forms, too — some have might rounded flowerheads, others have spiky-edged, pointed petals; there are double-flowered forms with lots of petals, and single-flowered varieties with just a single row of petals arranged around a center. Clip off old flowers when they fade and these plants will keep sending out more until the weather turns cold. Or, how about sunflowers? They come in a range of warm colors. The classic browncentered golden ones are everywhere as cut flowers in farmstands in summer, but you can grow them in pots, too. Whatever your pleasure, be sure to decorate your outdoor living space this summer with colorful plants and flowers!

I
f the kitchen is the heart of the home, the range is most certainly the heart of the kitchen. Ranges, once a stainless steel, black, or white force of nature responsible for food — if not necessarily design — are taking over the look and feel of the kitchen. The range can be a showstopper. And it may be time to consider making it the focal point of your kitchen remodel. One of the premier appliance makers at the center of the tack toward design-oriented, colorful kitchens is ILVE USA, a company founded in 1952 with a manufacturing headquarters in Venice, Italy and a distribution headquarters in Brooklyn, New

York. “The iconic look and feel has always been ‘country-style,’ as even some of the first ranges were glossy black with brass trim,” says Hannah Pregont, brand manager for ILVE USA. Ten years ago, Pregont says, custom colors were introduced, providing consumers with an astounding 213 color options, which, she says, “was really a first in the industry.” The company’s ranges also come in nine standard colors, like blue gray, emerald green, and burgundy. In recent years, consumers have moved toward bolder colors and hardware, placing the range at the center of the kitchen. “Blue gray with brass trim has quickly become one

STEPS: • Forage your flowers • Squeeze your lemons into a separate dish making sure to discard any seeds • Fill your ice cube trays first with flowers • Zest your lemon into your tray next • Pour a splash of lemon juice into each cell • Fill the remainder with water You can make countless different varieties of these ice cubes to have on hand to dress your favorite drink. Sometimes I substitute in lime for lemon or fresh berries rather than flowers. Whatever combination you choose will add that extra note of freshness and flavor.
