ew Year, new everything. There are the usual resolutions made every year, and sometimes a fun one you actually want to keep. On the North Fork, we take pride in our farms and food, craft vineyards, breweries, and distilleries, and everything that comes out of it. Luckily, the North Fork is community driven, and local chefs and vintners are willing to share their own tips and tricks, allowing you to recreate delicious meals celebrating the area’s bounty. Here are some limited-edition cooking demonstrations and classes going on this month. COOKING CLASSES AT LOVE LANE KITCHEN Perhaps you want to learn some new skills, or maybe you just want to take a fun class to break up the dead of winter on the North Fork. Regardless of your reasons, the winter cooking classes at Love Lane Kitchen in Mattituck are a favorite way to get out of the house. These hands-on classes guided by the restaurant’s own chef teach participants basic knife skills and safety while they prepare a fresh dish, and later enjoy as well. Think vegetable risotto, fresh pasta, crab risotto, and mushroom crepes. Classes are Thursday nights, $70 per person, and include a complimentary glass of wine or beer. Space is limited, so call for details and sign up asap!

COUPLES COOK AT SANG LEE FARMS Eating healthy can be a challenge, and in the New Year this very well may be one of your resolutions. Eating is a good thing – you need to do it to survive! So, give your body a healthy boost and nourish it with fresh, certified organic produce from Sang Lee Farms in Peconic. Not sure where to start? Join them for a couples cooking class on Tuesday, February 13.You’ll learn and make something that is not only delicious, but good for you with culinary nutritionist Stefanie Sacks. Local wine is available for those who wish. After you and your sweetheart finish the evening, all couples will enjoy a community meal and educational and inspiring conversation. Class is $250 per couple and registration is required. CHEF’S TABLE AT THE HALYARD Chef Glen Zamarra exemplifies living the best of both worlds in NewYork.The chef and owner of Mas (farmhouse) in Manhattan recently set up shop in Greenport with the opening of The Halyard at the Sound View, featuring local fish, produce, and wines from the North Fork and surrounding regions. Coupling food, wine, and education, Chef Zamarra is hosting cooking demonstrations and classes called Chef ’s Table. On Saturday, February 10 the class will focus on oysters, with a conversation about these beloved bivalves and tasting of local varieties and various preparations. This will be part of a larger Valentine’s Day event, which is definitely worth checking out. On Sunday, February 25, Chef ’s Table will feature a demo with braised short ribs with butternut risotto. Tickets are $35 per person, and includes a glass of wine. Reservations are recommended.

SUNDAYS WITH GRANDMA When the world seems to shine like you’ve had too much wine, that’s amore. This is just one of many songs you’re guaranteed to hear winemaker Salvatore Diliberto sing at Diliberto Winery in Jamesport during their February and March pasta demonstration and wine pairing dinners. Sundays with Grandma features a four-course homemade meal paired with select vintages the winery produces. While Mr. Diliberto demonstrates how to make homemade pasta, just like grandma, guests will enjoy various homemade Italian dishes. It will make you feel like you’re back in your childhood sitting in Grandma’s kitchen. Dinners are $85 per person, plus tax and gratuity. Reservations are required.

BUILDERS ON THE NORTH FORK WHAT’S NEW AND HERE TO STAY IN CONSTRUCTION TRENDS

A
s in every market, the style of homes on the East End are unique to their respective areas. The same is true in a hyper local sense between the North Fork and the Hamptons. Both embody the out east beach lifestyle that has attracted first and second homeowners from various parts of western Long Island, into the five boroughs, and beyond. Contractors have found themselves busy year-round, updating existing homes in time for summer, renovating before the holidays, and building from the ground up. Four North Fork builders are sharing what they see for 2018 in terms of new and old trends. Patrick Miceli of Miceli Builders in Wading River shares that his signature style is representative of the East End, which he describes as the cedar shake beach house look. “It is a house that breaks in and weathers without compromising overall integrity,” Miceli explains. “If you travel up the island you never see some of the materials used out east. Everything is maintenance-free, plastic, vinyl materials.” Listing open floor plans, curbless and frameless showers, and two-tone kitchens as popular trends, Miceli says there has also been an influx of homeowners renovating existing homes and adding additions to primary residences for elderly family members as well as for apartment rental income. There has also been a resurgence in subway tiles in construction. Miceli also feels people will be spending more in 2018, as purchasing decisions are reflective of the economy.

A difference between North Fork and Hamptons homes are the owners, according to Miceli. Younger families from places like Brooklyn and Queens are choosing the North Fork. “They build in a manner that is personal to themselves, whereas South Shore clients make every building decision based on what everybody considers to be the best or what will impress their weekend guests,” he explains. “Those are strictly with investment and resale in mind, whereas the North Forker makes a purchase decision based on a house where they want to retire in.” Bosworth and Edgett Construction Corp.

Construction Corp. is based out of Laurel and works on both forks. He shares that the influx of European clients over the last five or six years has led to an increase in contemporary homes, something he says hasn’t be seen on the East End since the 1990s. “There is a sense of redundancy to a point as they are very prone to keeping the same theme throughout, but with some interesting finishes that are a culmination of old and new,” Bosworth says. “We have built many traditional homes, but it seems that the contemporary model is coming back in a big way. It is challenging to build this way, as it is completely untraditional in that we are basically building in a reverse order to attain the ‘modern’ look.” Sharing a typical home consists of framing the structure, then insulating, installing drywall, and the trim, Bosworth explains that with the contemporary style, the trim is first installed with little or no trim work. “This attains a cleaner, more utilitarian look throughout,” he says. “Although the finishes are mostly the same, it creates a fluidity throughout the home and a more simplistic look, although it is anything but.” Fourth generation builder Ken Heidtmann’s family has been working with their hands for as long as he can remember, which is the aspect of his own career he enjoys most. “I’ve always had a
passion for building, but it was for a different kind of structure,” he says, sharing that he moved off of Long Island years ago to pursue a career in boat building. “For the last 10 years, I’ve worked with some of the best boat builders in New England, whom I still consider great friends. I’ve decided to come home to not only work with my family, but to build my own path where I’ve grown up and my family will grow up.” Popular trends on the North Fork are nautical, modern, and rustic, Heidtmann says, with metal and a lot of white. For what’s new in 2018, exteriors are beginning to change. “The exteriors of homes are changing to composite materials, which are less costly for the homeowners in the long run,” Heidtmann, who is based in Southold and owns Ken Heidtmann Construction, explains. “Think of features such as decks, siding, window and door trim, etc.” Robert Gabrielsen also comes from a long line of contractors. He began working in the industry at the age of 17 with his family at Gabrielsen Builders on the North Fork. Changes over the decades his family have noticed have been permitting processes, codes, energy efficiency, and design. He agrees there has been an increase in modern homes being built, yet there are still many of the traditional style homes reflective of the area that are popping up as well. Gabrielsen says this style will continue remain timeless if P R E S I D E N T S ’ D AY 2 0 1 8

done with authenticity. For what’s new, Gabrielsen says hybrid homes, which typically have a traditional feel with modern features such as cable rails, cable strung lighting, and industrial fixtures, seem to be on trend. “For 2018 I can see more modern homes being built,” he says. “These homes typically have large curtain walls of glazing with steel framing, flush recessed gliding doors, frameless flat panel cabinetry and minimal interior trims. Hybrid homes will incorporate ideas from these modern homes.” As energy conservation concerns grow, building efficient homes have become a necessity as well Gabrielsen says. Luckily, there are building techniques to match. “There is spray foam insulation which is the first step in making your home energy efficient,” he explains. “From there you move into high efficiency equipment, solar panels and in some cases geothermal systems. Some of the homes we do are fossil free (less a gas stove) which requires a perfect calculation of insulation, solar and geothermal systems.” Whether it be the traditional cedar shake beach house, or contemporary energy efficient abodes, new construction and renovation trends and classic takes will continue to draw those looking to put down roots or find their second home on the North Fork.

PECONIC LAND TRUST PROMOTING CONSERVATION OF LAND ON THE EAST END
T
hreats to farmland on the East End are nothing new. The value of land saw a significant increase in the 1970s on Long Island, which soon resulted in generational families having to sell their land in order to satisfy taxes. In the early 1980s when John v.H. Halsey was visiting home from the west coast, he noticed the 10th generation farm next door had a for sale sign. There were few organizations on Long Island to advise landowners on options that could protect their land and the character of an area that has long been a draw.With this in mind, Halsey founded the Peconic Land Trust in 1983 to help preserve and protect farms, natural land, and historic resources on the East End. Now ready to celebrate 35 years, Peconic Land Trust looks forward to continuing and expanding more than 12,000 acres already conserved on the East End. Sharing that the increasing value of land continues to pose a huge threat to conservation in general, and farmland preservation in particular, Halsey says the value of protected farmland has skyrocketed on the South Fork, and will likely impact the North Fork as well over time. “Non-farmers are purchasing and leasing protected farmland for equestrian and other purposes including as amenities to adjacent development at prices that few farmers can match, especially those who grow food,” Halsey says. “As a consequence, the average value of protected farmland on the South Fork is as high as $185,000 per acre. This has led to the acquisition of additional restrictions on farmland to assure that at least a portion of the remaining farmland is accessible and affordable to 18

farmers for food production.” Though there are many other threats, there is hope for land on the East End. Peconic Land Trust hosts a number of events, community conservation campaigns, supports various farm programs, and more in an effort to raise awareness and achieve its conservation goals. In Orient, the organization worked with the local community, Town of Southold, and the Edwards Family to purchase and protect 21 acres of farmland, woodlands, and wetlands that belonged to the Edward, Latham, and Terry families since the early 19th century. The area is now protected, and joins 600+ acres of protected land between Narrow River Road and the Cross Sound Ferry Terminal. A plaque was recently installed on the property in honor of former board member and conservation support Joe Townsend. “Partnerships are an important part of the work of the (Peconic Land) Trust,” says Halsey. “From our partners in government, to many nonprofits and educational institutions, to local, regional and national organizations, we partner on conservation initiatives, educational and recreational programming, public policy initiatives, as well as programs that support our local working farms.” Halsey says they have partnered with around 100 different organizations over the years. Partners with the Farms for the Future Initiative for example include Long Island Farm Bureau, Farm Credit East, Cornell Cooperative Extension of Suffolk County, Cornell University’s Long Island Horticultural Research and Extension

He takes commissioned portraits of vessels for shipping companies, boat builders, fishing charter companies, marinas, as well as owners of private yachts and sailboats. But there’s more to his work than glamour shots. Because his day job involves towing oil barges, he often finds himself rubbing sails, so to speak, with the kinds of ships most of us have only ever have seen in picture books. And, unlike laymen, he knows at once what he’s looking at and how best to capture it on film. “A lot of the boats that interest me are hidden

from the general public,” he says on a break between trips. “If you’re standing on the shore in, say, Brooklyn, you’re usually too far away to see much.” Rose started photographing boats after a career change from working on large ships to hauling inland oil barges. He grew up in the Long Island town of Blue Point, and after graduating New York Maritime College eight years ago, he spent a year at sea, in transit between the U.S. and Europe.With not much to look at but open water, he soon grew bored. The only bright spot was when the ship on which he worked pulled into harbor.

coordination,” he says. “And the photographic opportunities are better.” For example, one day, not long ago, he was anchored down in front of the Statue of Liberty when the sun start to set. He happened to look out the window when he noticed a ship passing in front of him. Rose knew right away that it was The Eagle – the great, great U.S. Coast Guard Academy training ship–coming in. He grabbed his camera, walked out on to the bow, and took some fantastic shots in crepuscular light. But the one he’ll never forget was The Peking, a four-masted merchant ship that he spotted near the Brooklyn Bridge, where it had been sitting “for a crazy long time.” During World War II, the U.S. seized the vessel from the Germans and used to ship cargo and lumber to and from South America. Rose recognized it because his greatgrandfather was the captain of The Peking’s sister ship. PANTONE COLOR OF THE YEAR THE CELESTIAL ULTRA VIOLET BRINGS COSMIC VIBES TO EAST END INTERIORS
C
ome the end of the year, interior designers hold their breath in anticipation of an announcement that sets the tone for the year ahead: Pantone’s Color of the Year. For 2018, it is the celestial Ultra Violet. While 2017’s color, Greenery, was an earthy complement to much of the East End’s beauty, this year’s cosmic shade lends itself to the sophisticated and inimitable style of the Hamptons and the North Fork. Bold and thought provoking, ultra violet’s endless opportunities are reminiscent of the galaxy it imitates. Color of the year is selected by the Pantone Color Institute, which offers color trend forecasting, brand color development, custom color solutions, and a bevy of other colorful offerings to businesses worldwide. Selecting one color to set the trends and tones for the year is no easy task, and one that is as thoughtfully planned out as the unique color strategies the organization provides to their clients. “We are living in a time that requires inventiveness and imagination,” said Leatrice 28
Eiseman, executive director of the Pantone Color Institute, when Ultra Violet was announced last December. “It is this kind of creative inspiration that is indigenous to Pantone 18-3838 Ultra Violet, a blue-based purple that takes our awareness and potential to a higher level. From exploring new technologies and the greater galaxy, to artistic expression and spiritual reflection, intuitive Ultra Violet lights the way to what is yet to come.” For local East End designers, like Norine Pennacchia who owns touchGOODS in Southold, Pantone’s Color of the Year promises to be exciting in terms of design. Indoor, outdoor, and in between, ultra violet has more potential than one may think. “I love that the color of the year is ultra violet,” Pennacchia says. “It’s mysterious and bold, and I think it’s more versatile than people think and can easily pair with modern color palettes, but most especially with its reliable complementary counterpart - a color often used in mid-century design - yellow. Opposites do attract, and for those decorating with mid-century color palettes, it’s a no-brainer

that warm shades of yellow can be jazzed up and live harmoniously with bold violets.” With her store specializing in midcentury and modern furnishings and accessories, Pennacchia shares brands her store carries typically offer pieces in a number of these colors. Her personal favorite, Bend Goods, stocks indoor and outdoor versions of the classic peacock chair in gold wire with ultra violet and gold accented pillows. “Ultra violet is the perfect accent to the gold metallic element tones here on this Bend Goods Peacock Lounge Chair,” she says. “It’s a take on the iconic design that was made famous in the 1970s. The geometric pattern in this indoor/outdoor chair is made completely from wire.” Debra Gildersleeve’s design aesthetic leans toward modern, beach-inspired décor with cool, clean lines. No stranger to mixing colors, materials, and styles, she says ultra violet can be thoughtfully blended into an already-designed space in a cohesive manner. “Ultra violet will do well in sophisticated settings with metallic

accents like silver and gold,” she shares. “It’s bold enough to make a statement without being overpowering. Think of a beautiful oriental style rug in a bright shade of ultra violet beneath a silver metallic table, with linen tufted chairs in neutral shades like cream or gray. Creatively paired with a striking chandelier and a mix of ceramic canisters in tones of ultra violet, this space can be both beautiful and functional.” Noting that she has noticed a trend in people leaning away from more traditional furnishings, Gildersleeve says homeowners are going for a more casual, non-cluttered look. “An eclectic yet tasteful mixture highlighting ultra violet could again be a bold rug in a living room with a leather sofa, purple accent pillows, and modern furnishings,” she says. “Blending different pieces that aren’t necessarily matchy-matchy but make sense together is a great and fun way to tell your own story.”

“Bold colors are embedded with a great deal of energy and it’s up to you to harness this energy accordingly,” explains Del Piero. “Our environments impact our feelings and emotions, so it’s important to think about how you want a space to feel, and about how you can further these intentions through the use of exciting and unique colors. Colors like ultra violet can be used to turn up the volume just a little, through small accents and accessories, or really make a room shout – think violet upholstery on a major piece of furniture, paint or wallcovering.”
Gildersleeve, who designs interiors on the North Fork, in the Hamptons, Manhattan, and beyond, has two showrooms and a design center in Mattituck at her store, Renee’s. She recommends brands they carry like Surya, Uttermost, and Loloi for home décor products like rugs, lighting, accent pillows, and other accessories in this bold color, many of which can be custom ordered. Wall art is another way to incorporate ultra violet into an existing space, and is another opportunity to make design reflective of one’s personality.
Del Piero goes on to say that a little goes a long way, and ultra violet can be incorporated into a space without overpowering it. For the Hamptons Designer Showhouse in 2017, she designed a dining room with a mix of whites, greys, and black, and a single violet orchid that gave the perfect pop of color into the space. In the case of a guest bedroom Del Piero designed, a rug in a guest room is an example of using ultra violet in a sparingly yet powerful way, allowing it to shine as the focal point. “In designing a space to spotlight this color, we would still use it as an accent in concert with dense textures and earthy natural tones,” she says. “This would ensure that the bold color not be overpowering.”
