RELIVING HISTORY THROUGH A 1940’S WORLD’S FAIR HUNTING CABIN BY RACHEL BOSWORTH

T

he centuries-old practice of farming has seen a decline across the country within the last few decades. There are 2.1 million farms now found across America’s rural landscape, and just 2% of the U.S. population consists of farming families. On the North Fork, the evolution of agriculture has gone from a means of survival for families and feeding a

population to include a new industry known locally as agritainment. Pumpkin picking and wine tasting are the first that come to mind, but there’s also an opportunity for an important educational aspect.This new wave of interest is lending itself to tourism while still honoring the area’s history.

“The North Fork has a legacy in agriculture, and it is rewarding to see how the region has adapted over the decades,” says Jerry Cibulski, a licensed associate broker with Century 21 Albertson Realty in Southold. “Mr. Sidor is producing North Fork Potato Chips from his farm in Mattituck. The wineries have brought a new focus and visitors to the area, and that has developed the farm to table offerings with organic farming options.There are chickens, eggs, pork, beef, blueberries and vegetable farms that have raised the bar in terms of food quality. Know your farmer!” Understated but equally important is the expansion of beer, wine, and cocktail culture on the North Fork. Just within the last decade, micro and craft breweries have been opening, the first being Greenport Brewing Co. in 2009. There are just over a half-dozen breweries and cider houses now, including the newly opened Jamesport Brewery. Bars focusing on unique and craft cocktails have been increasing in popularity, and Long Island has become an award-winning wine region. For Mr. Cibulski, there’s a home that is representative of this culture with a history appealing to what it is that draws people to life on the North Fork. At the 1939 – 1940 World’s Fair in Queens, Beverwyck Brewing Company created an English-style hunting lodge that was authentic in every detail to be used as a beer and food pavilion. Founded in 1878, the Albany-based brewery was one of few that survived Prohibition thanks to a license to produce non-alcoholic beer during that 13-year period. They reopened with six products including brews like Beverwyck India Ale, Bock, and Irish Cream Ale. At the fair, guests could get a meal for under $1 and a beer at the going rate, according to a 1940 Kingston Daily Freeman newspaper article Mr. Cibulski found when researching the home. He also found that

the lesser known Beverwyck was purchased by the popular F&M Schaefer Brewing Company in 1950, though it later closed in 1972. Also debuting at that same World’s Fair was The Zombie cocktail with a mix of rums, liqueurs, and fruit juices. It was invented in 1934, just after the end of Prohibition by Donn Beach, the founding father of tiki bars and owner of Don the Beachcomber restaurant in Hollywood. Mr. Cibulski shares the same newspaper article explaining that the cocktail was brought to the East Coast by Monte Proser for the fair. Though it had been a couple of years since Prohibition ended, the World’s Fair had brought something new yet authentic to the American lifestyle.

Prohibition is glamorized in the modern day as a time of beauty and thrill; the roaring 20’s being a favorited theme for celebrations. In Greenport alone, you’ll find an underground bar with a speakeasy vibe, called Brix and Rye, stirring and shaking cocktails from all periods. First and South hosts its annual Prohibition Party in December, inviting flappers, gangsters, and the like to celebrate the end of an era. Greenport Brewery itself is housed in an old firehouse next to the small brick Greenport jail that is now used as a museum. bedroom, two bathroom home. It has a log cabin look made of Oregon timber and a deep red trim, with a 70-foot dock leading to a lake with freshwater lilies. Still, there’s an evident North Fork vibe. “The North Fork spoke to those who were looking for rest and relaxation with a focus on family experiences, fishing, sailing, food, and nature back in the 1940’s, and those desires are still attractive to today’s home buyers who are exploring these homes as they arrive on the market,” says Mr. Cibulski, the home’s listing agent. “It is nice to see as the world seems to change, some values seem to remain the same.” Well maintained, there were some add-ons to the original structure once it moved to Laurel, including a kitchen, bathroom, and a master bedroom, which has a wall of windows facing the water in a mountain-like setting. Outside, there is a tiki lounge that ties into the significance of the introduction of the Zombie Cocktail at the same World’s Fair in which this lodge was used. The home is listed for $769,999. What draws Mr. Cibulski to his work on the East End is how the North Fork has grown without losing its history, and how it has adapted to have relevant businesses to support the economy today. “The housing, the food, and the region all interconnect off of that,” he shares, noting how businesses are taking what was, reinventing it and bringing it back in the modern day. There’s a familiarity of the Laurel Lake home’s history. Beer and cocktails were served here less than a decade after Prohibition ended, while today the North Fork prides itself on their breweries, wineries, cocktail bars, and soon, their distilleries. Farming was an important source of employment then, just as it is today. Past and present are intertwined here, and fundamentally significant. As Mr. Cibulski says, “modern farming meets modern families.”

AT KON TIKI, THE KITCHEN TRAVELS ACROSS ASIA WITHOUT LEAVING GREENPORT

A

t Kon Tiki, a tiny restaurant attached to the wonderfully quirky Gallery Hotel in Greenport, the only Polynesian elements are the Seventies-era tiki bar, the bamboo wall-covering, the great big rubber trees, and the cotton candy-colored throw pillows on the banquets. Named after Thor Heyerdahl’s 1947 expedition, the Polynesia theme is a metaphor that hints at good fun, unaccustomed flavors and distant lands. The chef, José “Cheo” Avila is a former architecture student from Peru. An alum of Miami’s Canyon Ranch, Spanish chef José Andrés’s Oyamel Cocina Mexicana in Washington, DC and R.J. Cooper’s Gypy Soul in Northern Virginia, Avila cooks pan-Asian food with flair and brio. He was working at Surf Lodge in Montauk when he was invited to take over the kitchen at the recently-opened Kon Tiki, which has fast become a local hangout. In the summer of 2016, Carolyn Rusin hosted a pan-Asian pop-up restaurant that was a big hit. Emboldened by that establishment’s positive reception, she decided to open her own place that would specialize, like its predecessor, in eclectic Asian food. With the confidence of a novice restaurateur, she thought it would be easy. She’d

use good ingredients and import her adult sons’ restaurant-savvy young friends from New York City to deal with the front of the house. (Her current manager is a veteran of the WaldorfAstoria and the Four Seasons, and it shows.) As it turned out, Rusin’s instincts were right on the money. On a recent Sunday evening, the restaurant was packed and parties were turned away. The bar was doing a brisk trade in fresh young coconuts with pineapple while the kitchen turned out plate after plate of excellent Asian eclectica.There were Korean short ribs arrayed on dramatic slabs of pink sea salt; prawn curry; and the addictively delicious kimchi fried rice. Avila’s food is carefully prepared and has clean flavors. “It’s Asian comfort food,” he says. “But it’s not fusion. Our curries are curries. We like to respect the origins of a dish and the integrity of its raw ingredients.” What’s remarkable about Avila is that before taking over the kitchen at Kon Tiki, he had never cooked Asian food before. A quick study, he embarked on a cook’s tour of Flushing, Queens with side trips to Elmhurst, and ate his way around the borough, tasting iconic dishes of China and Korea. “It’s possible to cook anything well if you understand flavor and taste,” he says. One afternoon, not long

after he arrived at Kon Tiki, Avila looked around the kitchen to see what he could throw together for staff meal. His eye lit on a jar of kimchi and in that improvisational manner kimchi fried rice was born. “At the time, a Korean-American was working here and his reaction to it was, Wow! This guy really understands Korean flavors!” Soon after, Avila put the dish on the menu and it’s been a best-seller ever since. Lollipop chicken wings have just the right amount of sweetness, salt, and spice, and arrive at the table perfectly crisp and redolent of Korean red pepper paste. Grilled local sweet corn marinated in miso paste has a whisper of miso that lets the natural flavor of the corn come through. He cooks with a light hand and never resorts to gloppy sauces. This winter, when the restaurant closes for the season, Avila plans to continue his explorations in Asian cuisine. He has a trip to India on the horizon and he’d like to experiment with Malaysian flavors. “For me,” he says, “good cooking requires a sense of adventure and a willingness to go where you’ve never been before.” Kon Tiki, 437 Main St, Greenport, NY 11944

ith summer long gone and winter on the way, now is a good time to plan for some early flowers in your landscape next spring. It’s also time to plant bulbs that will wake up your spring landscape year after year. Daffodils and narcissus are classics, and there are many varieties of them besides the classic bright yellow ones. You can find them in shades of pale yellow, apricot, creamy white and rich red-orange, with petals that are narrow or wide, a central cup that’s small or large. They come in different heights, too, from miniatures just a few inches high to taller ones reaching a foot and a half. Tulips are another beloved spring bulb, though if you have deer on the premises, the flowers will be devoured before they bloom. If there are voles underground, the bulbs will be eaten before they can send out flowers or leaves. Buy bunches of tulips from the florist instead.

The charming little flowers of Siberian squill are just a few inches high, but they inject shots of brilliant blue into early spring gardens. They’re easy to grow and will self-sow and spread themselves around a bit, but they’re never a problem. If you like a little serendipity in your garden, plant some of these – they’re delightful with small early daffodils such as February Gold, Jack Snipe or Little Gem. They’ll thrive in sun or light shade, in any average soil. Deer have never bothered them in my garden.

Beyond these two perennial favorites, the world of bulbs is large, so why not expand your early spring color palette and try some new ones? Here are some less common—and enchanting—bulbs to plant now for flowers next spring when you really need to see some color as winter loosens its grip.

Many gardeners are familiar with the grape hyacinths in the genus Muscari, with their coneshaped clusters of tiny, tightly packed bells of blue-violet. They come in light blue and white, too. The beguiling feather hyacinth (Muscari comosum ‘Plumosum’) has its bells split wide open, making the flower resemble a tiny ostrich feather on a stem. Give it a sunny to partly shady spot and moist but well-drained soil.

If you crave the very earliest flowers, look for species crocuses (more commonly grown are Dutch hybrid crocuses, which have somewhat larger flowers but bloom later). The petite species crocuses can be golden yellow, white or purple, and pop up in March, even poking up through snow. 26

These three kinds of bulbs are small and take forever to plant one at a time. An easier way to get the job done is to excavate patches of the garden a few inches deep where you want to plant them

and scatter a handful of bulbs in each spot, then cover them up. If you’d like to add drama to the early summer display in your garden, ornamental onions, or alliums, can fill the bill. These relatives of the onions we eat send up big, round heads of tiny flowers, in shades of pink, rich purple or white. Deer won’t touch them – a big plus for many of us. Globemaster and Gladiator are two popular varieties, each with globe-shaped heads of purple florets. In the more delicate-looking Persian allium (Allium christophii) the florets are on longer, thinner stems that give them an airy appearance – each flower looks like a ball of stars. For a late season surprise, let magic lily cast its spell in your landscape. Not a true lily, this plant is related to amaryllis, the popular Christmas gift plant that comes as a potted bulb from which grows a tall stem topped with a cluster of big lilylike flowers. Unlike amaryllis, magic lily is hardy in outdoor gardens here. The bulbs send out a clump of strap-shaped leaves in spring. They die back in summer and the plant disappears. Then in late summer, like magic, clusters of lovely, fragrant, pale rosy pink trumpet flowers bloom atop 2 to 3-foot stalks. You can plant these bulbs until the soil starts to freeze, so spend a little time now and reward yourself next spring with some early color when it seems like warm weather will never come again.
