December 2017/January 2018

A word from our Chair I would like to express my sincere gratitude to all our SILC volunteers and shoppers, Sponsors and Vendors for their generosity, enthusiasm, time and support at our recent Bazaar. I would also like to extend a special word of thanks to Tesco Lotus and AB Foods for sponsoring our Beverage tables, and of course Bangkok Patana School for hosting us. Everyone’s hard work made the Bazaar successful and memorable. Monies raised will go towards our ongoing Community Projects including support of ‘our’ pre-schools, education and teacher sponsorships. We are also researching other community-based projects that we can support over the coming year. We will keep you posted on these.. December will be a relatively short month for us in terms of activities due to school holidays, but we do have the pre-school Christmas parties to look forward to, a trip to a big Christmas export factory and of course the SILC Christmas lunch. Come January, we are straight back into it, with talks on juicing (to

compliment your New Year's resolutions!), an Egyptian-themed week with a cooking demonstration and Belly Dancing workshop, and for a fun night out we are heading to the ‘Flying Chicken’ – If you have never been, then this legendary Bangkok restaurant with its own ‘unique’ themed entertainment is not to be missed. I look forward to seeing you all very soon. Hope you have a very merry Christmas and I wish you health and happiness in 2018.

COMMUNITY PROJECTS: Teenage sponsorship By Chris Rajakarier In 2016, SILC was eager to find a project sponsoring teenagers, as we felt this segment was potentially overlooked by other charity ventures. So on my trip to Mae Sot in January, I went with a mission to find some suitable teenagers and young adults who may need support. It only costs 1,000B a month to sponsor a teenager. This provides education, accommodation and meals. It only takes 12,000 B for the whole year to see this child through school. If you are interested in educating a teenager please contact me on silcwelfare1@gmail.com. This month, we are delighted to introduce to you one of the students that SILC has sponsored: Saw Poe Ray Doh (means: important son), aged 17 (Grade: 6). Poe Ray Doh is the second youngest child in a family of eight children. His keen interest in education is what convinced his parents to let him attend school and currently he is the only member of his family studying. His parents are both rice farmers in a mountain village in Burma and his brothers and sisters work alongside them

Poe Ray Doh completed Grade 3 at the small school in his village, but in 2013 the only teacher moved to another village so it closed. Poe Ray Doh’s uncle took him to a mission school to complete Grade 4 and then in 2014 he began Grade 5 at Noh Bo Academy. He has been a boarder there for three years now. Poe Ray Doh enjoys attending NBA, as he can focus on his study without needing to work and always has enough food to eat. He tries hard in his classes and particularly enjoys learning English. In his free time, he likes to play football, read books and practice the guitar (whenever he can borrow one). When he finishes school, he wants to be a medic and help his people in Burma.

SILC MEMBERS: Chocolate & raspberry tart Ingredients 300 g Digestive biscuits 100 g unsalted butter 1 tsp ginger 1 tsp cinnamon 1 Tbsp caster sugar 250 g fresh/defrosted frozen raspberries For the ganache: 150 g dark chocolate 150 g good quality milk chocolate 250 g fresh cream 1 Tbsp vanilla extract

Method

This recipe comes from SILC’s bilingual cookbook silccookbook@gmail.com In aid of community projects

Heat the oven to 160C. Line a 23cm tart tray with parchment paper (use one with a removable base). Melt the butter gently in a saucepan. Blitz the biscuits in a processor until they resemble fine crumbs, add the ginger, cinnamon and caster sugar and mix thoroughly. Add the melted butter and mix thoroughly ensuring all the mix is coated with butter. Press it into the tin ensuring that it is evenly covered. Put the tin on a baking sheet before placing into the oven for 7 minutes. Allow to cool thoroughly. Once cooled, place the raspberries on the biscuit base ensuring that they are evenly dispersed. (If using defrosted raspberries, drain any excess liquid before placing on the base) To make the ganache roughly chop up the chocolate and place in a bowl. Gently heat the cream in a saucepan - remove it once it begins to gently bubble. Pour the heated cream into the bowl with the chocolate. Allow the chocolate to melt before gently stirring the mixture. Ensure the chocolate is completely melted before added the vanilla. Very gently spoon the mixture into the base, taking care not to dislodge the raspberries. Then place the tart into the fridge for at least 4 hours or ideally overnight. Serve with fresh cream. 24
