hile many hearts and minds turn to thoughts of patriotism during the month of July, the Plateau is a veritable celebration of all that freedom brings far beyond Independence Day, from food and wine to music and culture; from nature and gardens to friends, family, and of course, fireworks! Summer is a wonderful time of year to escape the sweltering heat found at lower elevations, partake in riveting musical performances courtesy of the Highlands-Cashiers Chamber Music Festival, enjoy a game of croquet or golf, and tour some of the area's most stunning homes and gardens during the Joy Garden Tour. In this issue of NC Living magazine, we celebrate our growing, prospering community. With the Performing Arts Center in Highlands and The Village Green in Cashiers expanding, as well as businesses all over town getting makeovers, seasonal residents have returned to find the Plateau alive and well. Silver Creek’s team and our community are both thriving. We are so fortunate to call the Plateau home, and we love introducing visitors to the area. We hope to see you and your family on the Plateau this summer, where the average high temperature in July is 78 degrees!

Cashiers and Saturdays on Pine in Highlands attract an incredible roster of regional bands that entertain relaxed crowds. The sense of community is palpable and hearts warm at the sight of young and old toe-tapping, sipping and supping together while musical sounds of various genres such as folk, rock, and bluegrass music ring through the mountains. Carefully turn over and cook on second side until fish is opaque all the way through, about 4 minutes. Transfer to reserved platter with tomatoes and top with oregano sprigs. Season with more salt and pepper. Pour reserved marinade over and let sit at least 15 minutes and up to

½ cup plus 2 Tbsp. EVOO 2 Tbsp. pine nuts
Vegetable oil
2 12-oz. swordfish steaks, about 1” thick
2 Tbsp. fresh lime juice
Kosher salt, freshly ground pepper
¾ tsp. hot sauce
¼ cup red wine vinegar
Kosher salt
2 Tbsp. drained capers, finely chopped
4 ears of corn, in husk
1 Tbsp. finely chopped oregano, plus 2 sprigs for serving
2 small poblano chiles
½ tsp. honey
3 Tbsp. unsalted butter
2 large ripe heirloom tomatoes, halved and thickly sliced
2 scallions, chopped
Preparation: Set your grill to medium-high; lightly oil the grate. Toast pine nuts in a dry small skillet over medium heat, shaking often, until golden, about 4 minutes. Let them cool and set aside. Pat swordfish dry and season all over with salt and pepper. Place on a rimmed baking sheet and let sit at room temperature for 15 minutes. Meanwhile, whisk vinegar, capers, oregano, honey and ½ cup of oil in a small bowl to combine; set marinade aside. Arrange tomatoes on a rimmed platter, overlapping slightly and set aside.
Preparation: Prepare your grill for medium heat; oil grate. Whisk lime juice and hot sauce in a medium bowl; season with salt. Set dressing aside. Grill corn (still in husks) and chiles, turning occasionally, until cornhusks and chiles are nicely charred and blackened in spots and crisp-tender, 10-12 minutes for corn and 8-10 minutes for chiles. Transfer to a platter and let corn cool before shucking. Slather corn with butter, then cut kernels from cobs into bowl with reserved dressing. Remove seeds from chiles and chop. Add to the corn along with the scallions. Toss to combine; season with salt.

and grilled meats. Early on in the season and as part of my research of finding my new favorite, I host a rosé tasting with friends, asking each guest to bring a different bottle. It is a great way to liven up a barbeque and learn what is new on the market. It is always an educational treat to learn what rosé appeals to all of our palettes, how the color of the wine relates to the flavor, and how the price relates to its taste. I always look for rosé from the Provence region of France since they are known for making excellent dry rosés, however there are many qualified choices emerging from other regions around the world, including from the U.S.

Paul Schmitt studied various theater buildings across the country. One inspiration for his design was Wofford College’s Center for the Arts in Spartanburg, SC. Like the Wofford Theater, Paul’s design for the entrance hall brings in the beauty of the outdoors with walls of glass. The interior boasts texture with elements of wood and stone, while the exterior blends nicely into its wooded surroundings with natural materials, warm tones, clean lines, and shapes. “My challenge has been to incorporate the uniqueness of the Plateau while fulfilling the multiple needs of the performing arts community and providing a state-of-the-art facility,” says Paul Schmitt.

The beloved Highlands-Cashiers Players and the ever-popular Chamber Music Festival will return this season and, in its eleventh year, the PAC Youth Theater, directed by Megan Greenlee Potts. The PAC Youth Theater inspires and trains local kids in all aspects of theater production from the front of the house to the back, culminating in at least one production. Grants provide paid internships and no-cost participation for students, giving the community one more reason to love the opportunities the PAC provides.

from local residents and businesses. Luckily, there is a dedicated force that wants to bring this complex to fruition. Angel investors, anonymous donors, individual and corporate contributions, PAC members, and seed investors like Jane Woodruff have all stepped forward to pledge over 90% of the funding. “This new facility is 100% community grown,” says Cindy Trevathan. “Not only will it be a great sense of pride for the community, but also it will be a powerful tool to attract people to the area.” Mary Adair states that continued fundraising is one of the biggest tasks on hand, but “we are almost there.” To complete the venture, more community funding is needed, which they hope to achieve with a $1 million dollar theater naming opportunity. “Who wouldn’t want a theater such as this named after them?” asks Cindy. The good news is that since the PAC operates as a 5013 501(c)(3) organization, donations are tax-deductible. The PAC’s mission will continue to promote and encourage the performing arts with a first class, low-cost facility. With the expansion, its Board of Directors sees a great future ahead with many more performance opportunities including comedians, motivational speakers, business leaders, festivals and musical acts. The first thing you should know about Gary Wein, according to Gary Wein, is that he hires really good people and he likes to talk. Luckily for those who love the natural beauty of this area, Gary is the executive director of the Highlands-Cashiers Land Trust and has built a staff of passionate environmentalists. Within moments of meeting someone, this human force of nature can engagingly describe the important work they do and, in the process, spread a reverence for this land like a beautiful creeping phlox. Our land trust, it turns out, is the oldest one in North Carolina and among the first 20 established in the United States. Its early aspirations, as long ago as 1909, included such things as saving the top of Satulah Mountain from hotel builders by buying the pertinent 60 acres for $500. Until 1980 or so, the land trust was mostly focused on beautification. But the 1980s brought a new tax deduction for conservation easements. In 1990, about the time increased development was beginning to pressure the landscape, the Highlands Land Trust was incorporated, later including Cashiers, and today protects more than 100 different properties on 3,400 acres. The Land Trust, Gary explains, conserves land in three ways. First, owners can deed the development rights to the Trust, while still owning their land. For example, if you owned a 100-acre property, you could legally create a conservation easement specifying precisely how many, if any, houses could be built on it, and whether it could be used to harvest timber, for hunting or fishing, or for building hiking trails. There is a significant tax advantage available to such donors, all the while protecting the acreage from the development of condominiums, hotels or other dense alternatives. Second, the Land Trust can buy a property outright. This is harder to accomplish because of the need for cash, but some property has been purchased with money provided by the Natural Heritage Trust Fund, an environmental agency. And, finally, donors may give the property to the Land Trust, unencumbered, when

hen a child younger than the age of ten displays extraordinary talents in one domain, this child is called a prodigy. Architect Mark Paullin, a partner in the architectural firm of Meyer Greeson Paullin Benson (MGPB) based out of Charlotte, North Carolina, was drawing and sketching before he could write, suggesting his own prodigious talent. For those familiar with his body of work in the Cashiers area, you might know that Mark is one of those rare individuals who can see with his mind’s eye a three-dimensional architectural plan in its natural setting before it is even put to paper. Like his architectural hero Eero Saarinen, the Finnish-American architect made famous for his work of the Gateway Arch National Park (including The Arch) in St. Louis, MO and the main terminal at Washington Dulles International Airport in D.C., Mark is an accomplished woodworker and sketch artist who believes in the finer details and timeless design. He received his undergraduate degree from North Carolina State University School of Design followed by a master's degree in architecture with an emphasis on urban design and historical preservation from Washington University in St. Louis. His vision for his designs is to not only have form and function but a unique character representative of its owner, as well as its surroundings. “Design styles are a language, and we work to be fluent, whether it is Spanish colonial, eighteenth-century New England, or the early twentieth-century regional vernacular of the Appalachians,” says Mark. 34 SILVER CREEK REAL ESTATE GROUP
You may have heard of a private club called The Chattooga Club, another one called Mountaintop Golf and Lake Club, and a third exclusive development in the area called Lonesome Valley—all jaw-droppingly beautiful clubs that Mark designed in the Appalachian Mountain style of the early 1900s. Born in Montana and later raised in Charlotte, North Carolina, Mark’s love for Western North Carolina and its architectural roots began as a teenager when he and his family visited friends one summer. Fast forward to 1988 when Mark was introduced to John and Kathleen Rivers, recent purchasers of the land on which to build The Chattooga Club, who smartly hired him as their architect to develop the first cottages on the 200+ acre property. He was later hired to design the fitness center and spa, the Lodge, and the Pavilion that eventually became the Clubhouse and the “calling card” for the property, as well as Mark’s. “There is something special about this area that I love more than others,” enthuses Mark. “It is a combination of the great topography, plant material, and the people.” From that time on, Mark’s talents were further discovered and he continued to make his design mark on the Cashiers area with residential and commercial properties. His impressive curriculum vitae, which includes fifty or more homes, country clubs, and businesses, follows the MGPB mission, “With our holistic vision of design, we strive to create a synthesis of classic style, regional character, and personal needs.”
With the unique culture and topography of the Cashiers area, he and his team work closely with residential clients to design a home that fits their distinctive character “like a glove.” Mark shares the story of newly married clients (second marriage) who hired MGPB to design a home to reflect their retired lifestyle … one that was modest in size, compact in certain areas, and expansive in the most used spaces. “This couple knew I place emphasis on good daylight and room size when designing, and they were great at prioritizing their list of wants and needs. I think [their home] is the essence of what is the future for second homes,” explains Mark. He goes on to speak of their design collaboration and the importance of making it a fun and explorative process. “We know custom homes are so personal and we make the house your house, not a modification or something already done - either by us or someone else.” For this particular home, it became an extension of the couple’s personalities with niches, lounges, a great kitchen, lots of natural light, and a garden terrace with a 360-degree view. “There are two types of second homeowner clients,” Mark describes. “Those who live for extended periods in the home and those who just want a weekend retreat, and the design trends depend on the type of client.” One chief request he receives is a central and open kitchen since most clients want to enjoy life around food. However, second homeowners who come up on weekends might be willing to forgo a kitchen outfitted with all of the highend appliances, but put more of an emphasis on comfortable indoor spaces for the family to play board games, big dining and lounge spaces for the family to gather, and very easily maintained outdoor areas. For second homeowners living in the home seasonally or even year round, the design requests usually call for one-level living

made with fine materials like plaster walls and hand-scraped, French style oak floors. Additional trends on their list might include outdoor infrared heat on porches, a master bathroom with a soaking tub and sauna, decked out kitchens with a butler’s pantry, and a well-appointed bar with drink drawers and wine storage. These types of clients also ask for the home to have the ability to adapt to circumstances related to aging. “And surprisingly, they are almost all thinking about the future of artificial intelligence and asking for electric car charging stations and a 'smart' home,” says Mark. “When hiring an architect to build your custom home versus buying a non-custom architectural plan, you get exactly what you want and create an environment that is comfortable and personal,” promotes Mark, “We do architecture for how people live.” Mark’s talents extend beyond his enthusiasm and knowledge of architecture because he also specializes in getting to know and understand his clients, most of whom become good friends in the end. n just a few weeks, croquet players from around the world will converge at The Chattooga Club in Cashiers, North Carolina, for a ProAm Tournament to raise money for the United States Croquet Association. The event, slated for the weekend of August 23-25, will offer opportunities to view some of the best players in the world and to participate in skills clinics as well. It's not surprising that this event has come to the Plateau, as croquet has burgeoned as a popular sport here. Michael Albert, Western Carolina's district president for the United States Croquet Association, says the numbers of area players have bounced from approximately 300 people ten years ago, to over 1,500 players today, with programs at twelve different clubs. He is a member of Cedar Creek Club and presently enjoys a ranking of tenth in the country. (As a testament to croquet's appeal to all age groups, Albert acknowledges he was knocked from ninth to tenth place last month by a 12-year-old from Rancho Mirage, California!) While it is often assumed that the popularity of the sport is due to its relative ease for older players, Albert says that many of the highest nationally ranked players are in their 30s and 40s. As such, they find it harder than older players to finance championship tournaments in faraway places like New Zealand, Australia, and Great Britain, and that is where the Chattooga ProAm Tournament comes in. (Note: the word “professional” is used to denote the most accomplished players, but there is rarely a purse in a croquet tournament). The three-day event will benefit the USCA's Lee Olsen Fund, which is set up to defray travel expenses for the world's best players. Lee Olsen, appropriately enough, was a passionate proponent of the game who served for a time on the Board of Directors of the Cro-

A co-founder of the Palm Beach International Croquet Ball, she was inducted into the United States Croquet Hall of Fame last year. Indeed, it is apparent that croquet has come a long, long way from the game we used to play in our backyards. There is, in fact, a National Croquet Center in West Palm Beach, Florida, offering professional instruction for all levels, there are international events all over the world and there are thousands of players who take the game very seriously. Each winter, several clubs in our area take groups of members for skills clinics and friendly competition in warm weather climates But this is not “our father's croquet game”, the old nine-wicket version of family cook-outs that we remember. The game that is catching fire has just six wickets and is called “golf-croquet” because a player may only hit the ball one time a turn, similar to golf. But like the traditional version, which has roots in 19th century England, golf-croquet is played on manicured lawns of uniform measurements (84 feet wide by 105 feet long), and players wear the traditional white with soft-soled shoes. Sponsored by Silver Creek Real Estate Group, the upcoming ProAm event begins at 9 a.m. on Friday, August 23 and promises great spectator opportunities. Admission is free, though donations are gratefully accepted, and will afford the chance to see some of the finest talents in the world, including Alison Sharpe, the recent winner of the Australian national championship and Cheryl Bromley, the highest ranked woman in America. All of the pros participating, in fact, are ranked among the top ten nationally. There are still a few spaces available for amateurs who wish to compete at a cost of $1,500. This event is a sanctioned tournament, and, as such, will count toward players' ranking

in national and international standings. And, thanks to Silver Creek's sponsorship, a cash purse will be paid to the top three players.

Saturday kicks off with a morning clinic with these same pros, many of whom are teaching pros at clubs all over the world. The clinics will each last one hour, with just four people per clinic. The cost is $200 per person and includes lunch at the Chattooga Club.
Its followers have been diverse, from Winston Churchill, who claimed he wanted to be buried in his croquet lawn, to Sean 'Diddy' Combs, who once hosted an elaborate croquet party to celebrate his receiving a star on the Hollywood Walk of Fame. In 2005, American scientists took the game to the South Pole when they played a game in the snow outside of the Pole's observatory.
Another great spectator opportunity begins at 1 p.m. on Saturday with a round robin played by the pros. The competition will continue from 9 a.m. to 3 p.m. on Sunday to round out the weekend. This 21st-century take on the game is rich in history. Croquet has been around since about 1852, when it was introduced in Ireland, and then in London as a game called “crooky”. At the time, it was considered a bit “cutting-edge” as a sport that women were encouraged to play, albeit in white ladylike dresses, without participating in a contact sport. Croquet has been played in places like Oxford and Cambridge, where students enjoyed it in its earliest days. It was an Olympic sport, 46 SILVER CREEK REAL ESTATE GROUP
Perhaps it is the varied facets of croquet that make it so widely appealing. It can be as laid-back as a lazy Sunday afternoon game, or intensely competitive, strategic, and stimulating. There is a reason croquet has been called “chess on grass”! The ProAm Tournament at Chattooga promises wonderful entertainment for spectators of all levels. your body quivers to the sounds, sights, and smells of the French island of St. Barthelemy, or simply called St. Barth (and often St. Barts). Yes, the reason could be your legs are a bit liquefied after the daring landing onto the teeny-tiny runway, especially if it’s your first time, but unlike other Caribbean islands, St. Barth is different. There is a supreme sense about it, a vibe, not easily felt elsewhere. Some might say it is the smell of money, since it is known for luring the rich and famous to play, especially during high season (December to March). For me, it is something more grounding, perhaps since I’ve come to know this island well over the last twenty years with almost annual visits. There is no airport welcoming committee handing out Pirate’s Punch with steel drums lulling you into vacation mode. There is just the soothing sound of waves hitting the pure white sand on the beach of St. Jean adjacent to the airport (in fact, the runway ends on the beach). This combined with sounds of Vespas and Mini Coopers zipping by the airport on the bustling main ring road brings you immediately back to island life, as if you had never left. Carried by the gentle trade winds are the fresh smells of sea salt, butter from the nearby bakery (no doubt with bakers pulling fresh croissants and baguettes from the oven), and the seductive scent of the native flower frangipani. The eye-catching turquoise waters beckon me to float, frolic, and swim, and the swaying palms calm my frazzled energy and convert it into sheer bliss. And although I departed Atlanta in wintery conditions, I am greeted by brilliant sunshine and dry 85-degree
heat, reminding me why I dressed in white linen (the preferred island attire) and donned my fedora. Despite the extreme damage that Hurricane Irma did to the island when it swept through in September 2017, destroying vegetation, homes, businesses, hotels, and restaurants, the island and its people seem to have not missed a beat and even appear stronger for weathering the storm. Unlike other islands that were pummeled by Irma, St. Barth did not wait for assistance from the French government and instead immediately launched into recovery mode with all hands, shovels, and bulldozers on deck. The islanders knew they only had three months until the high season to get the island back to tourist conditions, and private money poured in to spur the community effort to renew life here. And once December arrived, frequent visitors flocked to support their little island to capture the joie de vivre that only St. Barth imparts. This little 9.7-square-mile island packs a punch with much to do (or not). The volcanic terrain is rugged and mountainous, yet there is lush vegetation like graceful palms, brightly colored bougainvillea, and yellow tulip vines. With fourteen quiet and beautiful beaches, each with their own unique character, the island views are dominated by the calm Caribbean waters on the exterior while the interior is dotted with hotels, private villa rentals, restaurants, and shops. Two busy commercial centers, the village of St. Jean and the bigger main port of Gustavia, provide ample entertainment while the latter offers even more, from live music to small local museums, historical monuments, fes-

TRAVEL tivals, events, and, of course, mega-yachts. The island inhabitants mostly work to support the tourism industry and vacationers come for different reasons. Some come to party like rock stars (and sometimes with rock stars), some to honeymoon, and some just want to take it all in from sunrise to sundown and maybe sit awhile on the beach and read. The experience is totally up to you. My day looks a lot like the “take it all in” approach with an early morning bakery run, yoga, a swim in the crystalline blue waters, a daily trip to the market, an hour sunbathing at the beach, a leisurely lunch with a glass or two of rosé, followed by some afternoon reading by the pool. The day ends with cocktails with friends followed by an excellent dinner at any one of the numerous world-class restaurants (it’s a French island, after all) and maybe some stargazing thereafter. There are hundreds of private villas from which to choose, but some prefer to stay at a hotel. Private villas usually come with a pool, ample lounge and living space, a well-equipped kitchen, views, and lots of privacy. On the other hand, hotels provide a high level of service, all day pampering and plenty of action. One favorite hotel is the beloved Eden Rock, part of the Oetker Collection, which reopens this fall after being destroyed by Irma. Situated high on a rocky point and surrounded by white sand and water on three sides, it is tucked into the village of St. Jean with easy walking distance to shops and restaurants. Voted ‘Best Hotel in the World’ by Condé Nast Traveler in 2016, Eden Rock’s glamorous style is supported by restaurant and cuisine concepts by renowned Chef Jean-Georges Vongerichten.
