INGREDIENTS 6 – 8, 2-INCH Center cut veal shanks [ask your butcher] 1 LARGE Yellow or sweet onion, medium diced 2 LARGE Carrots, medium diced 4 STA L KS Celery, medium diced 3 CLOVES Garlic, minced 4 TA B L E S P O O N S Tomato Paste 1 LARGE Red ripe tomato, large diced 3 CUPS Red wine [preferably a decadent French Pinot Noir] 1 QUART Veal or beef stock 2 Bay leaves ½ CUP Olive oil FRESH Italian flat-leaf parsley, chopped COUPLE Sprigs of fresh thyme and rosemary TO SEASON Use kosher salt and freshly cracked black pepper

THE METHOD 1. Preheat your oven to 325 degrees, and make sure to pat dry your veal shanks thoroughly. 2. In a large Dutch oven on medium-high heat, add ½ of the olive oil and allow to heat up to a slight smoking point. Carefully and lovingly brown your shanks completely on both sides. (About 5 minutes per side) then remove and set aside on another dish. 3. Wipe out any excess oil and fat from the pan and add the other ½ of the olive oil. Add the onion, carrots, celery, and garlic. Season your vegetables with salt and pepper. Sauté the vegetables until tender (about 5-7 minutes), stirring occasionally. Add the tomato paste and mix it thoroughly with the vegetables. 4. Add the veal shanks back into the pan, making sure not to stack them on top of each other. 5. Add the good red wine and allow it to come to a boil for 2-3 minutes. 6. Add the veal or beef stock and let it come to a boil. 7. Turn off the heat! Add your diced tomatoes, bay leaves, fresh parsley, thyme, and rosemary. 8. Cover with a lid or aluminum foil and bake at 325 degrees for 3 Hours, or until the bone pulls out and the meat is fork tender. 9. Remove the shanks and place them on an attractive serving platter. Return the pot to medium-high heat and reduce the braising liquid by about half. 10. Ladle the reduced liquid over the veal shanks and garnish with fresh herb sprigs. 11. Serve with your favorite sides. The Chef suggests classic mashed potatoes, creamy parmesan risotto or plain steamed white rice, and buttered broccoli or asparagus.

For the past 25 years, the Cashiers Historical Society and the Cashiers Designer Showhouse have brought renowned interior designers’ inspired creations and distinctive touches to the Plateau. This popular tradition began with the family home of local designer Lynn Monday, whose parents purchased their 1930s summer cottage nestled along the shores of Cashiers Lake in 1960. Each year a home is chosen in one of our esteemed communities to become the focal point of a group of designers who conceptualize and execute each of their visions in one

room of the home. The result is a remarkable showcase of the creativity, ingenuity, and imagination of devoted interior design professionals. This event benefits the Cashiers Historical Society and the many educational opportunities it provides to the local community and its visitors. Silver Creek Real Estate Group broker Parker Anderson, who serves on the Board of the Cashiers Historical Society as Treasurer, remarked, “Over the years, I have found that the Cashiers Designer Showhouse provides invaluable insight into the beautiful minds of design professionals in our

The winter holiday season is a time to take a break from the bustle of everyday life. Christkindlmarkts in Austria and Germany turn back the clock, welcoming visitors to a story book atmosphere of timber stalls, artisan goods and the comforting aroma of cinnamon and spices.

Recipes, says that glühwein’s origins at the markets are rooted in practicality.

During the late 13th century, Vienna, Austria, was one of the first cities to introduce the Christkindlmarkt’s predecessor, a Krippenmarkt, or “nativity market.”

The glühwein was traditionally heated using a hot iron or hot stones placed within the mugs themselves. Spicing, meanwhile, originated from ancient Greeks and Romans.

“These markets were not originally intended as being part of the Christmas celebrations,” notes the Austrian National Tourist Office. “Instead, they were places where people could stock up on food and clothes for the winter season, get their shoes fixed and, in later years, buy gifts from local toy makers. They were meeting hotspots for traders and their customers, buskers and people seeking out the latest talk of towns.”

“They started to spice the wine, mostly because the wine back then didn’t taste very good — it was very sour, and it also tended to go bad very fast,” Ms. Shneeble says.

Since the beginning, food and drink were important elements of the markets. In Vienna, one could often find cookies, Maroni (roasted chestnuts), Kletzenbrot (Austrian fruit bread), Bratkartoffel (roasted potato wedges), Ofenkartoffel (baked potatoes), Christmas punch and glühwein (mulled wine). “When you have glühwein in your hand, it’s going to warm your hands and it’s also warming you from the inside,” she says.

For an added experience, visitors can opt to arrive at the market via a torchlit, 1.6-mile (2.5-kilometer) hike. The event is notably sustainable, powered entirely by hydroelectric energy, illuminated by LED lamps, and its goods and foods are sourced locally. This year, I have been working to grow my portfolio of clients and transactions as I continue to expand my reach further into the Lake Toxaway and Highlands communities. Both are such special areas in their own right, Toxaway offering a unique opportunity to be a part of an entirely private lake community, and Highlands offering a plethora of social memberships, dining, and entertainment options.

I would tell them to sit tight, be patient and wait for the right property. Finding the perfect fit for your lifestyle is of the utmost importance, and new homes are coming on the market every day. There are several restaurants on the Plateau that I enjoy visiting. I love Oak Steakhouse in Highlands because of its location and ambiance, and Cornucopia is a wonderful spot for lunch if you’re out and about in Cashiers.

Hailing from Northwest Georgia, Parker is a third-generation Realtor who is passionate about creating bonds with his clients. Denizens and regular visitors of the HighlandsCashiers Plateau recognize Chris’ voice the second they speak with him. That’s not surprising, as Chris was the voice of the Plateau for a number of years as the morning show host on WHLC FM 104.5. Once you meet Chris, you’ll certainly never miss him again, as his 6’9 stature literally makes him stand above the crowd. Chris was born in Germany and grew up in Washington, D.C. After studying at Georgia Tech and graduating from the University of Maryland, Chris moved to Ottawa, Ontario, Canada, where he lived for 22 years. In Canada, Chris worked as an on-air talent on numerous radio stations. He moved to Highlands in 2017 to take the job at WHLC. “I moved to the mountains to become the voice of Highlands, little did I know how much the Highlands-Cashiers Plateau would speak to me.” An avid cook, Chris attended Le Cordon Bleu, receiving a Certificat de Traiteur, and loves sampling all the culinary delights the Highlands-

Debby decorated the first building and then moved on to the lodge which was laying in a pile on our property. She worked with the engineer, builder and I to get the antique barn we were reconstructing on paper and then she laid out the floor plan to include an addition. Our 5 bedroom, 3-story barn lodge is now a showpiece, thanks in part to Debby’s creativity. We get compliments on the Lodge every time we show it. It is warm, inviting, unique and beautiful. Her keen eye and expertise in space planning and design led to her decision to shift to the real estate profession, which allows her to help sellers position their homes for the highest sale and walk buyers through spaces and point out opportunities that most do not see. Since the mid-90s, Rick and his family knew that one day they would like to own a second home where they could escape the heat and bustle of Atlanta. “We had been searching for a summer home in the Cashiers/Highlands area for three years. During our search, we found only one home that met most of our needs and requirements. Unfortunately, the negotiations on that home proved to be unsuccessful. That was a huge disappointment for us. After enduring numerous long and frigid winters, the allure of his boyhood summer home proved too strong and they moved permanently to the Highlands-Cashiers area a few months later.

When not advocating for the Plateau lifestyle with his clients, Kevin is an avid outdoorsman and can be found hiking with his beautiful wife, playing a round of golf or tennis, and enjoying phenomenal food at one of the area’s local restaurants. Kevin is also a member of the Trillium Links & Lake Club and enjoys playing with the Men’s Tennis group and has recently begun dabbling in the increasingly popular sport of croquet. Ray Trine’s passion for all things real estate blossomed early in his life. By 1982, the Trine family included five children, five dogs, and four cats. Scotch Whisky’s flavor is intimately tied to the land of its origin a taste of terroir in every wee dram

Rising from the sea mist off the craggy, windswept coast of Scotland is a mossy rock loaded with precious peat: “Whisky Island.” Every sip of its signature tipple is a taste of the island’s history and its earth. The Isle of Islay, one of the Hebrides off the United Kingdom’s northwest coast, stands out for its whisky in a country where it is already renowned. Throughout Scotland, storied distillers take just three things that happen to appear in abundance on the northern third of Great Britain — water, barley and, most importantly, peat — and turn them into Scotch, the flavors of each bottle unique to the land from which its simple beginnings came.

“The cool maritime climate that permeates the air and infuses the peat that covers most of the island lends a ‘salted smoke’ character derived from Islay’s unique terroir,” says Ewan Morgan, national luxury ambassador for Diageo, parent company to Lagavulin, one of the distilleries on Islay. “That same gulf stream climate is also perfect for growing barley, which is one of the basic raw ingredients for producing Scotch Whisky,” he said. DISTILLED WISDOM

Like all whisky, Scotch is made from water, grain and yeast, its difference in taste drawn from the malting process unique to the form. Barley, mostly locally grown, is allowed to germinate up until a certain perfect point at which it is stopped using the heat from burning peat.

“The abundance of water in the form of rain that feeds its rivers and lochans — small lakes — along with the prevalence of peat that smokes Scotch malts, gives the whisky the wonderful smoky aromas and flavors that the region is renowned for,” Mr. Morgan says. Peat forms in wetlands and bogs, where organic material only partially decomposes over hundreds of thousands of years into the precursor to coal due to waterlogging, high acidity and a lack of oxygen. Scotland’s peat is heavy in sphagnum moss, and it covers about one fifth of its land. Burning peat creates a powerful aroma and flavor that comes from the carbon-based phenols released — some smoky, some medicinal and some even fruity and floral. While it can be mixed with other whiskies to become a blended Scotch, single malt Scotch comes from just one place, praised for the distinctive flavors unique to its distillery’s style. And while malt whisky can be produced anywhere, it must be made wholly in Scotland to carry its name on the bottle. SEE TO SEA

Whisky first made its way to Scotland via Ireland, where Scottish King Henry II found monasteries making the “water of life” upon his invasion of the other island in 1170. The practice made its way across the Irish Sea over the next few centuries, with the first written mention of Scotch Whisky in the famous Exchequer Rolls in 1494 — Scotland’s King James IV purchased some from a friar. By the 17th century, nearly every Scottish farm had its own still. “Historically, it was farmers who were distilling, so all spare grain was used for producing whisky,” Mr. Morgan says. An excise tax in 1660 caused many distillers to go underground, making Scotch illegally. Some of these farmhouse operations went legit and turned into major distilleries that are still around, such as Lagavulin and Bowmore, which is the oldest distillery on Islay that dates to 1779. Glenturret, dating to 1775, is officially the oldest in Scotland. There are currently more than 130 distilleries throughout Scotland, making it the highest

concentration of whisky production in the world. The nation exports 44 bottles of Scotch per second, according to the Scotch Whisky Association. The organization is charged with protecting the liquor’s eponymous good name, which by U.K. law must be made in-country and contain no added flavors or sweeteners. “Just like Champagne, it’s a hallmark of a product made with meticulous attention to quality,” Mr. Morgan says of the Scotch moniker. Scotch Whisky is the largest food and drink export of the U.K., earning the country $175 every second in 2021 for a total of more than $5.5 billion. So, it is unsurprising that the industry and country are highly protective of the drink’s name and reputation. ISLE TALK

Scotland is divided into five main whisky regions, each with its own ecosystem that imparts its beverages with a unique flavor: the Highlands, with vanilla and fruit notes from distilleries such as Glenturret and Glenmorangie; Lowland, a lighter taste from the likes of Daftmill and Glenkinchie; Speyside, a small valley of rivers home to half of all Scottish distilleries including Glenfiddich, Glenlivet and Macallan; Campbeltown, a small region with distilleries Glengyle and Glen Scotia; and Islay, land of maritime smokiness and Lagavulin, Bowmore, Laphroaig and six others. Islay, dubbed ‘whisky island,’ has just 3,000 permanent residents and nine distilleries to its 239 windy, seawater-sprayed square miles — renowned for their peaty, smoky, salty, sometimes medicinal single malts, thanks to Islay’s extramossy peat. Lagavulin’s 16-year single malt Scotch is often called the perfect expression of the island’s whisky. “Sweet smoke is the character they produce at Lagavulin,” Mr. Morgan says. “I always describe Lagavulin 16-year-old as a beach bonfire with fruit cake thrown into it.” All of Lagavulin’s peat is procured on Islay, where the distillery holds court on the southern bay of the same name, the 12th-century Dunyvaig Castle visible in the distance. Robert the Bruce, King of Scots, is rumored to have hidden there after fleeing a mainland rife with civil war in the 1300s.

fruit and sweetness are allowed to shine through,” Mr. Morgan says. Finally, the liquid must be matured. To be called Scotch, it rests for a minimum of three years in oak casks, which add their own touch to the flavor profile by soaking up immature elements such as sulfur and adding new notes from the wood.

The bay was later overtaken by illegal whisky makers until a distillery was officially founded at Lagavulin as Mackie & Co., destined to be run by the family’s infamous nephew, Sir Peter Mackie, an eccentric Scotch Whisky advocate. SCOTCH BROTH

For such a celebrated spirit, the process of making Scotch is relatively simple, each distillery injecting it with its own special tweaks. First, and most important for flavor-injection, is malting. “Malting is the process of controlled germination of the barley that is then arrested with heat once the perfect amount of starch is present in the grain,” Mr. Morgan explains. “This starch is what we convert into sugar and by proxy into alcohol. “What Islay and its distilleries are famous for is the smoke, which comes from drying our malt in a kiln to arrest this germination process,” he says. “[At Lagavulin] we also smoke our barley for around 12 hours to attach all those wonderful rich flavors and aromas to the malt.” Next, the smoke-fueled barley is mashed — ground into powdery grist and mixed with hot water to produce a sugary liquid called wort. In the third step, yeast is added to the wort and fermented into an alcohol called wash. After that, the wash is distilled two or three times in copper pot stills, heating it into a vapor and then cooling it back into a liquid to remove any impurities. “Lagavulin has one of the longest distillation times — nine hours — in Scotland because we want a lot of copper interaction to purify the spirit, so the

“I frequently compare this metamorphosis to that of a butterfly, the cask being the chrysalis,” Mr. Morgan says. “The end product is this mellow, beautiful golden or dark liquid that entered that cask clear, aggressive and fiery. What happens over time within the cask is organic chemistry, albeit very delicious organic chemistry.” EVERY STEP ALONG the way to whisky is infused with the flavors and history of its respective distillery, region and, of course, Scotland itself. “In addition to the natural flavors provided by the location, it’s the time-honored methods of producing the whisky, with generation after generation working in the same distilleries, passing on the skills and craft to the next in line,” Mr. Morgan says. Community Players and the Town of Highlands to purchase and renovate what was formerly home to the Community Bible Church on Chestnut Street. Initially, the building was intended as a home for the Summer Music Festival and other events; however, the partnership and venue would later transform into the first iteration of what is now The Highlands Performing Arts Center. Later in 1999, the PAC was established as a 501(c) (3) nonprofit to provide the Highlands community with a first-class, low-cost venue where local nonprofit organizations could host performances. After almost two years of planning, the building opened its doors to the community on June 16th, 2001. For nearly two decades, the PAC has been charming residents and visitors with exciting performances from blues and bluegrass to Broadway, Motown, storytelling, and more. With shows for theatergoers of all ages, a night at The PAC is something many families look forward to and cherish. Over the years, the original facility has undergone several renovations, including the 2006 addition of a backstage building that housed dressing rooms, restrooms, a lift for scenery and instruments, an area for building sets and storage, and an updated reception area. Another significant change came for the organization in 2007 when the Board of Directors hired its first full-time Administrative Director - moving the PAC from a primarily volunteer-based organization to a staffed, professional one. As the PAC continued to

grow as an organization and as a hub for creative expression and performing arts, so did the desire to expand its reach and impact further. Today, community members can enjoy wonderful performances in the center’s brand-new stateof-the-art theater, which features 300 seats, incredible acoustics, and top-of-the-line equipment such as a fly system which will allow for dynamic movement of stage elements- something the previous facility could not accommodate. The designers and architects brought the project to life by blending modern elements with the distinct mountain feel of Highlands to create a structure complementary to its surrounding landscape. Adding to the complexity of the initiative was the goal of making the facility seamlessly connected on all fronts. From the dressing rooms to the gathering areas, total Wi-Fi connectivity will allow live streaming of shows to any space in the new building - which means you don’t have to miss your favorite scene when you get up to grab a drink. Since 2012 the PAC has brought 438 performers and over 717 performances to the stage for the enjoyment of its patrons. With this new theater, they will be able to welcome an even wider variety of shows and performers for the further enrichment of the community. As exciting as this all is, the PAC is just getting started. With plans in the works for a “Black Box” theater and a Park Theater, opportunities to enjoy artful entertainment will become even more abundantly available in the future. CASHIERS words by delaney asbury As U.S. Highway 64 winds its way up the Blue Ridge Mountains towards the village of Cashiers, the changes are both noticeable and refreshing. The hot, sticky air of lower elevations breaks away, the cool mountain breeze kicks in, and you are welcomed by scenic expanses of low-lying clouds, sheer rock faces, and gently rolling hills that give way to miles of lush forest. For decades, people have been coming here to escape the noise of the city, finding refuge amidst the woodsy charm of what we consider to be one of the bestkept secrets in the country. While we don’t want to say that the secret is out, each year, more and more seasonal residents hang their hats on the Highlands-Cashiers Plateau full-time. According to 2020 U.S. Census Data, the population of Cashiers grew from 137 residents to 728 residents between the years 2019 and 2020 - a 431% increase. As our population continues to grow, so does the need to keep up with its demands.

The mission of Vision Cashiers, a volunteerbased non-profit organization comprised of passionate community members, is to foster and encourage sustainable growth within the Cashiers area so that it will prosper as both a year-round residential and seasonal destination economy. Vision Cashiers recognizes that change is inevitable. Rather than fighting change, they are working to promote the integrity of Cashiers’ scenic beauty and the preservation of our town’s heritage while forming a plan to meet the needs of the future. “When we began in 2016, we identified at least ten areas that needed significant help,” said Paul Robshaw, President and Board Member of Vision Cashiers. “We deliberately created task forces as a commitment to action, not just discussion, and we have since expanded to thirteen different task forces, all focusing on accomplishing plans within the community.” These task forces and their dedicated members collaborate on initiatives spanning education, workforce development, community housing, environmental preservation, art, culture, and more.

With many plans in store for the future, Vision Cashiers is focusing its support on easing traffic congestion, bolstering pedestrian access, and promoting sustainable development while maintaining the traditional village scale of Cashiers and keeping pace with our water supply and quality. Through their thoughtful and transparent planning process, which encourages participation from the public, Vision Cashiers has brought about many significant improvements to the community. These accomplishments include but are certainly not limited to establishing a “Cashiers Connect” Wi-Fi district that expanded internet access through 11 hotspots in the area, as well as the fundraising of $65,000 for the Boys & Girls Club of the Plateau to support foodinsecure residents. Vision Cashiers also fundraised $63,000 for the construction of the Cashiers Dog Park in between the ball fields at the Cashiers Recreation Center. As part of their pedestrian safety initiative, they also fundraised over $100,000 to construct sidewalks on the Village Green property on Routes 64 and 107. PA R K S A N D PAT H WAY S

To improve our parks and pathways around town, Vision Cashiers has partnered with consulting firm Equinox Environmental to shape Cashiers into a “walkable community.” “We hired Equinox because of their experience in doing studies on Cashiers and felt that they would be the right group to help bring this project to life,” said Robshaw. While this multi-phased plan is still in its early stages, small parks, boardwalks, trails, paths, sidewalks, and public art installations are all under consideration. When the project is complete, we can ramble along a 2-3 mile loop, circling Cashiers and connecting to the Village Green. Vision Cashiers is dedicated to meeting its goal of promoting healthy living, strengthening community relationships, reducing traffic in the Village core, and above all, preserving the character that makes Cashiers unique. COMMUNITY HOUSING

Vision Cashiers is dedicated to creating affordable rental and homeownership opportunities that meet the needs of our area’s essential full-time workers, such as teachers, nurses, medical staff, first responders, and food service providers. Through a survey of major employers in the area, Vision Cashiers has determined demand for over one hundred affordable housing units. These units would be built and dedicated to Cashiers’ full-time workforce within a structure that allows and encourages local employers to participate financially on behalf of their employees.

EDUCATION

Devoting themselves to making an educational impact on the Plateau, the Education Task Force has spearheaded several initiatives to support and celebrate our local students, teachers, and staff. This year, they’ve worked diligently to bolster the Tools for Schools program through the Ingles Advantage Card. This annual drive benefits five schools in our area: Blue Ridge School and Early College, Summit Charter School, Hampton PreSchool and Early Learning, Cashiers Valley PreSchool, and Highlands School. For those enrolled

local middle schoolers, an event Robshaw felt was an outstanding success. “It was great to gather all of the kids and watch them get excited thinking about the possibilities ahead of them,” he said, “now we plan on hosting another event for high school students to help them realize their higher education and career opportunities.” In the future, Vision Cashiers hopes to grow the Education Fund so that it may also be a resource for sending our local kids to college and improving the employment experience of those working in Cashiers.
