AS WE WELCOME A NEW YEAR, THERE IS SOMETHING WE CAN ALL AGREE ON. YES, CASHIERS NEEDS MORE SIDEWALKS, BUT LET’S FOCUS ON SOMETHING A BIT MORE SIGNIFICANT: MOST OF US WANT TO NOT ONLY LIVE A LONG LIFE BUT ALSO AGE WELL.
One hundred twenty-five million people in the U.S. are over 50 years old. Many will enjoy the privilege of aging, but aging well takes some preparation, and it’s never too late to start, no matter what your age is.
This year, NC Living is devoting one story in each issue to exploring the lifestyle factors that contribute to aging boldly. Those factors range from fitness and nutrition to handling life’s transitions, building social connections, discovering new passions, and taking care of our mental health. We’ll talk with local experts and share what they’ve learned about aging, both firsthand and through their interactions with people over 50 in our community.
We’ll kick off this series with two factors that are often at the top of our minds when we think of aging boldly — fitness and nutrition.
THE BEST EXERCISE ROUTINE IS THE ONE YOU’LL STICK WITH When it comes to working out, many people look for an exercise that will help ensure their health extends well into their eighth decade. But experts say the best exercise routine is simply the one you’ll stick with, several times a week, week after week, and year after year — and that may change as your body, interests, and abilities evolve. Regular exercise, like walking, biking, hiking, and swimming, can reduce the decline in musculoskeletal function that comes with aging. There comes a time when doing hours of punishing cardio day after day is no longer optimal; breaking workouts into manageable sessions is far more sustainable and better for aging muscles and joints.
In our community, you can practice yoga, take Pilates, join classes on stretching, and get advice and training from an exercise physiologist on high-intensity strength training.
If you’re new to exercise, our experts recommend checking with your doctor before starting any new program.

CONSIDERING YOGA
Mary Abranyi of Fusion Yoga & Wellness says, “There’s so much value in finding moments of stillness, but movement is such an integral part of longevity.” Trained and certified in various yoga styles, she developed a passion helping people grow and heal, which inspired her to begin teaching in 2002. Abranyi’s long-time love of yoga eventually led to the opening of Fusion in 2012. Since then, her teaching style has become a combination of breathwork and effective movement that focuses on balance, strength, flexibility, and alignment.
“Balance, strength, flexibility and alignment –we are prone to lose these elements of the body when we stop moving,” she explains. Abranyi feels her style of teaching has changed over the years due to age, and her personal practice was an absolute game-changer for her when she entered her 50s. She feels that making time for the practice has never been more important. Even when she travels, she looks for a studio wherever she goes, embracing the opportunity to be a student, ready to receive. Recently, while in Florida, the only yoga class that fit her schedule was Yoga for Osteoporosis. Although she doesn’t have that condition, she took the class and enjoyed it so much that she has decided to offer it at her studio in Cashiers.
“You don’t have to be suffering from bone loss to reap yoga’s benefits for better bone health,” she explains. “In fact, you may be able to help prevent the onset of osteoporosis or osteopenia with a regular yoga practice.”
ACCORDING TO ABRANYI, “YOGA ALSO HELPS WITH STRESS, ANXIETY, AND SLEEP, AS CERTAIN POSES CAN CALM THE CENTRAL NERVOUS SYSTEM WHICH CAN CENTER AND RELAX PARTICIPANTS. YOGA REALLY MEETS YOU WHERE YOU ARE AND EXTENDS WELL BEYOND THE MAT AND INTO DAILY LIFE. WITH SO MANY AMAZING BENEFITS, IT’S NO WONDER YOGA HAS BEEN IN EXISTENCE FOR MORE THAN 5,000 YEARS.”
CONSIDERING HIGH-INTENSITY STRENGTH TRAINING
For certified Clinical Exercise Physiologist Chuck Bixby, the name of the exercise game is highintensity strength training. Through slow, controlled, intense 20-minute training sessions just twice a week, “Muscle strength, health, and performance can be improved, even into our 80s. I’ve seen it!” says Bixby.
In 1989, while training on MedX rehabilitative exercise equipment at the University of Florida, Bixby met his mentor, Roger Schwab, a strength training pioneer who instilled in him the value of safe, sensible, and meaningful exercise known as high-intensity training. For more than 30 years, Bixby has promoted this efficient, slow-motion, and evidence-based strength training in its various forms. At 65, Bixby can still train like he did in his 30s, and the strongest medication he takes is Flonase.
“The benefits of this type of training extend way beyond the gym and support an active mountain lifestyle. People can continue hiking, skiing, wakeboarding, keeping up with grandchildren, and doing all the activities they love instead of spending hours in the gym every week,” says Bixby.
JUST ONE TO TWO INTENSE WHOLEBODY RESISTANCE TRAINING SESSIONS PER WEEK INCREASE CARDIO FITNESS, ENHANCE FLEXIBILITY, AND IMPROVE BODY COMPOSITION. THIS, IN TURN, REDUCES YOUR RISK OF DIABETES AND CANCER, IMPROVES YOUR LIPID PROFILE, ALLEVIATES THE NEGATIVE EFFECTS OF FIBROMYALGIA AND OSTEOARTHRITIS, AND EVEN OFFERS COGNITIVE AND MOOD-LIFTING BENEFITS.
Bixby trained a 40-year-old woman whose frozen shoulder did not allow her to lift her arm at all. After working on an overhead press machine just twice a week for several years, she was able to extend her arm all the way above her head. “So many people throw in the towel too early or don’t make fitness a commitment,” says Bixby.
Key to this type of training is slow and controlled movement. “Moving a weight fast exposes you to injury. I like to remind people that speed kills!” Bixby says with a laugh.
CONSIDERING PILATES
Pilates was developed in the early 20th century by German physical trainer Joseph Pilates. For studio owner Alexandra (Alex) Warren, Pilates is the exercise of choice. She earned her Pilates certification through Power Pilates, a 600+ hours comprehensive education program.
PILATES IS A SYSTEM OF CONTROLLED MOVEMENTS, AND EACH EXERCISE CAN BE ADAPTED FOR THOSE WHO SUFFER FROM ARTHRITIS, HAVE UNDERGONE KNEE REPLACEMENT, OR HAVE OTHER ISSUES THAT MIGHT LIMIT THEIR RANGE OF MOVEMENT. “ONE OF MY BIGGEST GOALS IS TO KEEP PEOPLE SAFE AND KEEP THEM MOVING AND DOING ACTIVITIES THEY LOVE, LIKE WALKING, HIKING, AND PLAYING WITH THEIR GRANDCHILDREN,” SAYS WARREN. A REGULAR 50-MINUTE BEGINNER, INTERMEDIATE, OR ADVANCED PILATES SESSION SEVERAL TIMES A WEEK CAN HELP PEOPLE FEEL MORE ALIGNED (HOW THE HEAD, SHOULDERS, SPINE, HIPS, KNEES, AND ANKLES LINE UP) AND LIMBER.
Pilates is built on six principles: breathing, concentration, control, precision, centering, and flow. The exercises strengthen your core — a group of muscles in the abdomen, glutes, and inner thighs — enhancing control and freedom of movement of the arms and legs.
The exercises also focus on strengthening the shoulder girdle, which can often be weak, particularly in women. Pilates increases flexibility and balance, thus enabling you to brace yourself better if you do fall.
“Pilates is one of the few things that you can do if you have any physical limitations. You can do the workouts until you’re 100!” enthuses Warren. “Incorporating Pilates into your fitness routine allows you to do life’s activities more efficiently and effortlessly.”
YOU CAN’T OUT-EXERCISE A BAD DIET
All this talk of exercise may be making you hungry, so let’s shift to nutrition. It’s a vast topic with an abundance of often confusing information. Nutritionist Lee Cotton shared some basic practices we should all follow when it comes to nutrition.
“I take a holistic approach to everything in life,” explains Cotton. “Nutrition is not about the number on the scale. To me, diet is a four-letter word. We need to change our thinking around food and limiting ourselves.
I BELIEVE IN A FOOD-FIRST PHILOSOPHY. EAT A VARIETY OF FOODS AND FOOD GROUPS. OUR BODIES CHANGE AT DIFFERENT STAGES IN LIFE. I SEE MANY WOMEN DECIDE TO GO ON EXTREME DIETS OR BEGIN FAD EATING PATTERNS DURING MIDLIFE. THAT IS COUNTERPRODUCTIVE AND COULD BE HARMFUL TO YOUR HEALTH. IT IS IMPORTANT TO CONCENTRATE ON THE KEY INGREDIENTS FOR OVERALL HEALTH:
ALEX WARREN OF PILATES OF CASHIERS WORKS WITH A CLIENT
PILATES OF CASHIERS STUDIO
CONSUMING ADEQUATE CALCIUM-RICH FOODS, GETTING ENOUGH VITAMIN D AND FIBER, BEING MINDFUL OF HEART DISEASE, CONSUMING NUTRIENT-DENSE FOODS, AND LIMITING SATURATED FATS.” ALSO, FOR WOMEN, REDUCING CAFFEINE AND ALCOHOL CAN HELP MANAGE HOT FLASHES DURING PERIMENOPAUSE AND MENOPAUSE.
Cotton says that with every life stage — childhood, adolescence, pregnancy, middle age, menopause — come new nutritional needs. “As we age, our bodies need nutrition for preventative and restorative needs. What we put in our bodies affects how they function and their ability to protect us from diseases.”
We should all choose meals with a balance of macronutrients — protein, fat, and carbohydrates — and focus on an eating pattern with nutrientdense whole foods. Incorporating both plantbased and animal-based protein can provide a variety of nutrients. Cotton advises talking to your doctor before considering adding vitamins or supplements to your diet.
IT TAKES A COMMUNITY
Even community leaders are recognizing the benefits of a healthy lifestyle for all citizens. Last year, the Highlands Cashiers Health Foundation created the Healthy Plateau initiative for all ages. According to the Foundation, Healthy Plateau is an exciting and engaging initiative designed to bring the Health Foundation’s vision and mission directly to the community. The program’s focus on overall well-being and community involvement sets it apart as an innovative approach to improving health outcomes. Some of their goals include promoting regular checkups and screenings, encouraging physical activity, advocating for proper nutrition, fostering participation in community programs, and supporting positive lifestyle choices.

LUXE BAG SPA

WHEN YOUR CHANEL BAG’S HARDWARE FADES OVER TIME, OR YOUR ROLEX STRAP DETERIORATES, IT’S TIME FOR SOME SOS TREATMENT. OF COURSE, THE TRUE CHARM OF LUXURY ISN’T JUST ABOUT FLAUNTING A LOGO BUT ABOUT OWNING A PIECE OF ARTISANRY AND HERITAGE THAT ENDURES DECADE AFTER DECADE. WHEN TIME TAKES ITS TOLL, THAT’S WHERE THE MARVELOUS ART OF RESTORATION COMES IN.
TIME EQUALS VALUE
First, why invest in luxury at all? Enter the Hermès Birkin bag. It takes 48 hours for a single artisan to handmake just one. It’s practically a living creation by the time it leaves the workshop. A Birkin doesn’t just “hold your stuff” — it holds its value. It’s a legacy ready to be passed down and a shrewd investment piece that can double its value in five years.
Similarly, a Patek Phillipe timepiece, Nautilus 5711/1A, originally retailed for £25,000 in 2006. It can now command over £70,000 on the secondhand market.
If you are buying to invest, you’re in luck. The luxury resale market is booming. Not only has it doubled in size in four years, but it’s also now worth an eye-popping $50 billion. With a wealth of auction houses and preloved luxury platforms to sell from, preserving and restoring your goods is even more important when you’re finally ready to wave goodbye.
THE SCIENCE OF RESTORATION: WHERE ALCHEMY MEETS ART
Of course, even the most well-loved luxury items are prone to wear. When this happens, it’s frustrating and heartbreaking in equal measure. But here’s the kicker; alarming few brands are willing to fix the issue. A 2022 survey revealed that just over one-third of luxury brands were open to the idea of repairs, while over 40% of brands did not advertise any such service.
That’s when expert repair services enter the stage. From handbag spas and watch clinics to antique restorers, there’s no shortage of skilled artisans to primp, prime, and buff your battered bag or scuffedup timepiece and return it as if it’s just emerged from a showroom.
BE IT POLISHING, PATINA-LIGHTENING, OR GOLD REPLATING, CALGARY-BASED LUXE BAG SPA OFFERS PAINSTAKINGLY METICULOUS CARE THAT REVIVES YOUR PRECIOUS HANDBAGS. HOW DOES THEIR RESTORATION PROCESS WORK? ARTISAN ERIN EXPLAINS: “WE BEGIN WITH A DETAILED ASSESSMENT TO IDENTIFY SPECIFIC DAMAGE LIKE SCRATCHES OR STAINS UNIQUE TO EACH PIECE. NEXT, WE CAREFULLY CLEAN THE LEATHER AND HARDWARE, REMOVING DIRT WHILE PRESERVING THE MATERIAL’S INTEGRITY. CONDITIONING FOLLOWS TO KEEP THE LEATHER SUPPLE AND PROTECTED. FOR DAMAGE REPAIR, WE FILL SCRATCHES OR
CRACKS WITH COLOR-MATCHED FILLERS. IF COLOR RESTORATION IS NEEDED, PRECISE DYEING BRINGS BACK THE ORIGINAL HUE. FINALLY, A PROTECTIVE TOPCOAT IS APPLIED TO SEAL IN THE RESTORATION, LEAVING THE BAG BOTH BEAUTIFUL AND READY FOR CONTINUED USE.”
Seeing a leather restorer at work is more like watching a sculptor than a scuff cleaner. Every scratch is meticulously buffed away, and every tear is invisibly stitched. For Philadelphia’s Leather Surgeons, the most exacting part goes beyond the actual techniques involved. From crafting a briefcase with hidden compartments for an FBI demonstration to restoring moccasins for the American Museum of Natural History, the Leather Surgeons have a 30-year history of painstaking leather artisanry and restoration.
“For us, it’s about understanding the brand etiquette behind each piece, knowing the right type of hardware or weight of thread that’s appropriate to use, and restoring a handbag while maintaining its original spirit and authenticity,” explains Hunter Gallagher, whose father Gerry founded the company. “That’s why experience and expertise matter so much in this kind of work. It’s not about reinventing the bag; it’s about bringing the bag back to the best version of itself. That’s the difference between a repair and a restoration.”
THE LEGACY OF LUXURY
Naturally, sustainability is a great reason to give your bag a new lease on life. However, restorers find that another “S” is their clients’ main motivation: sentimentality. “One client brought in her late mother’s vintage Chanel — a cherished, well-loved bag from her childhood,” says Erin. “She was hesitant to restore it,
fearing it might lose its character. We created a plan to gently clean and repair it, preserving its original charm. Seeing the finished piece, she was overjoyed; the bag looked beautiful and still felt like a piece of her mother was with her. Moments like that are why I love what I do.”
INDEED, PRESERVING YOUR TREASURES ENSURES THEY BECOME HEIRLOOMS. “WE HAVE CUSTOMERS WHO WERE GIFTED A HANDBAG FOR AN ANNIVERSARY OR OTHER SPECIAL OCCASION, AND NOW THEY’RE PASSING IT ON TO THEIR DAUGHTER AS A GRADUATION GIFT,” REMARKS HUNTER. “THEN WE’LL SEE THE SAME HANDBAG AGAIN IN A FEW YEARS AND HEAR FROM THE DAUGHTER HOW EVERY TIME SHE LOOKS AT IT, IT REMINDS HER OF HER MOTHER. WE’VE BEEN BLESSED TO PLAY A SMALL ROLE IN SOME AMAZING STORIES OVER THE YEARS, AND IT’S TRULY BEEN AN HONOR.”
What other remarkable gems have been stumbled upon over the years? “We once restored and reshaped a 1950s Hermès Kelly,” enthuses Hunter. “When we opened the bag to work on the internals, we found that the original craftsman used newspaper to create the stays. It felt like opening a time capsule — you could read the same French newspaper the craftsman must have browsed the morning the bag was made.”
Maybe you’re ready to sell. Perhaps you want to pass on an heirloom, or you just want to hold onto your luxury assets for a little longer. With the right care, your pieces can continue to tell their stories and shine brightly for generations to come.
LUXE BAG SPA’S TOP LEATHER MAINTENANCE TIPS REGULAR CLEANING
Keep your handbag pristine with regular, gentle cleanings, using a soft cloth to remove dust and dirt. Use appropriate cleaners for your leather type. Don’t forget to clean the hardware to prevent tarnish that can transfer color onto your bag. A little polishing keeps the hardware shiny.
CONDITIONING
Use a quality conditioner on leather bags to keep them supple and prevent cracks, especially in dry climates. We recommend our Luxe Bag Spa moisturizer, available on the Luxe Du Jour website.
PROPER STORAGE
Store bags in dust bags away from direct sunlight and avoid overstuffing them to maintain their shape. A misshapen bag can be challenging, if not impossible, to fix.
BE WARY OF COLOR TRANSFER
Avoid wearing dark jeans or clothing with light-colored bags to prevent color transfer. Keeping your light bags away from darker fabrics will save you headaches later.
DIY TOUCH-UPS
For quick fixes, try our black touch-up pen for minor imperfections like corner wear. The sponge applicator makes it easy to use at home.
ODOR MANAGEMENT
Keep odors at bay with our Luxe Bag Spa deodorizer. Staying proactive is key. It’s much easier to prevent bad smells than to eliminate them after they’ve settled in.
HAUTE bedding MEETS the art of TIMELESS comfort
IN A WORLD THAT MOVES FASTER BY THE SECOND, THERE EXISTS AN OASIS WHERE TIME APPEARS TO STAND STILL — A PLACE WHERE COMFORT ISN’T MERELY EXPERIENCED BUT CELEBRATED. FOR OVER A CENTURY, THE DUMAS PARIS BRAND HAS BEEN PERFECTING THE FINE ART OF SLEEP. FOUNDED IN 1910 IN BURGUNDY, FRANCE, THE FAMILY-OWNED COMPANY MAISON DUMAS HAS GROWN GRACEFULLY, MAINTAINING ITS SOUL IN THE PURSUIT OF EXCELLENCE AS IT AIMS TO PERFECT THE SLEEPING ENVIRONMENT. EVERY PILLOW, DUVET, AND MATTRESS TOPPER CRAFTED BY DUMAS PARIS IS A PERSONAL INVITATION TO EXPERIENCE TRUE LUXURY, NIGHT AFTER NIGHT.
THE EVOLUTION OF DUMAS PARIS
The heart of Dumas Paris beats in Tonnerre, Burgundy, a charming town where history, landscape, and tradition come together in quiet harmony. It was here, in 1910, that the Dumas family found their home and began what has become a multi-generational journey inspired by Burgundy’s artisans and timeless way of life.
Originally working with leather and fur, the Dumas family embraced Tonnerre’s artisanal history, drawing inspiration from the expert craftsmanship that was — and still is — the backbone of the region. Over time, as other industries changed, so did Maison Dumas, shifting from haute couture to luxury bedding, finding new purpose in a quest for excellence.
Dumas Paris remains steeped in heritage, as every pillow, duvet, and mattress topper is made using skills and techniques that have been passed down like heirlooms. There’s a sense of belonging in each piece, a connection you can feel with every night’s sleep, as though Burgundy itself has wrapped its arms around you.

A FAMILY LEGACY ROOTED IN PASSION AND PURPOSE
At the helm of Dumas Paris today is Édouard Dumas, a third-generation heir with a visionary spirit who is determined to preserve the family legacy while shaping a new era of luxury. Leaning on the wisdom of past generations, Édouard carries forward the passion for honing and perfecting skills. “My earliest memories,” Édouard reflects, “are of wandering through our workshops in Burgundy. I grew up watching artisans bring pillows and duvets to life with precision and care. Their hands told stories, and each stitch felt like a promise to uphold the integrity of our work.” Today, that childhood fascination fuels his dedication to detail, inspiring him to ensure that every Dumas Paris product reflects not only fine craftsmanship but also the history and values woven into it. For Édouard, Dumas Paris is more than a brand. It is the expression of a lifelong connection to family, craft, and tradition.
ENTREPRISE DU PATRIMOINE VIVANT: A TESTAMENT TO LEGACY
The Entreprise du Patrimoine Vivant label is an accolade reserved for companies that embody French artisanal excellence. Awarded by the French state, this rare distinction celebrates those who have excelled in their craft while maintaining a legacy of know-how, tradition, and innovation. For Dumas Paris, it is more than a recognition of craftsmanship, it’s an acknowledgment of the devotion to techniques passed down through generations, such as hand-stitching and the careful art of manual filling.
To the discerning eye, the EPV label is a promise that each Dumas Paris creation is a result of mastery and care, incorporating techniques that reflect both a tribute to the past and a vision of the future. It links Dumas Paris to a select community who have committed their lives to excellence and installs the brand as a piece of France’s living heritage.
RARE MATERIALS AND EXCEPTIONAL SOURCING
Dumas Paris’ commitment to luxury begins long before a product reaches your home. It starts with the individual materials that will be combined during the manufacturing process. 90% of the goose and duck feathers are sourced from France, while rare down comes from birds on remote Nordic shores, chosen for their exceptional softness and resilience.
At the pinnacle of this commitment to exceptional materials is the Eider Millésime duvet, made with eiderdown. This rare material is harvested from Iceland’s windswept shoreline, where local farmers respectfully gather down from abandoned eider duck nests each summer. This painstaking, century-old tradition yields only around four tons of eiderdown annually — just enough to create a few thousand duvets worldwide.
Eiderdown’s unmatched qualities elevate each duvet to an experience of pure indulgence. Lighter than air yet incredibly insulating, the feather structure traps warmth naturally, creating a cocoon of softness that responds to body temperature for unparalleled comfort. The framework resists compression, ensuring that the duvet remains sumptuously fluffy over time. The Eider Millésime duvet exemplifies Dumas Paris’ strive for quality and comfort.
NUIT IDÉALE: ELEVATING SLEEP TO AN ART FORM
Dumas Paris offers a bespoke bedding service. The Nuit Idéale, or perfect night’s sleep, reflects a deeper understanding of rest, treating each night as an opportunity to experience something extraordinary. More than just sleep, it’s about achieving a state of complete relaxation — a moment when body and mind find harmony. With collections designed to foster this state of well-being, Nuit Idéale allows clients to create custom pillows, duvets, and mattress toppers that suit their unique preferences and desires. This level of personalization ensures that every customer receives bedding crafted specifically for them, transforming the art of sleeping into a sacred ritual.
PARTNERS IN EXCELLENCE: REDEFINING SLEEP WITH LUXURY HOTELS
Recognizing a gap in luxury bedding standards, Dumas Paris introduced the Haute Literie label as a means of guiding hotels in providing superior bedding quality. This initiative not only enhances the guest experience but also showcases a hotel’s dedication to excellence with a meticulous
approach to bedding quality and material sourcing. Exclusively available to 4- and 5-star hotels that incorporate at least 75% of Dumas Paris products, the Haute Literie label guarantees the essentials for an ideal night’s sleep, ensuring each guest finds their perfect level of comfort. Through these exclusive collaborations, Dumas Paris crafts moments of rest that feel deeply personal, as every detail is designed to connect with the sleeper and be tailored to fit the rhythm of each guest’s night.
FROM BURGUNDY TO PALM BEACH
Dumas Paris has set its sights on new horizons and, beginning in 2025, will make its U.S. debut at Oetker Collection’s Vineta Hotel in Palm Beach. This landmark collaboration will create a fusion of French craftsmanship and American luxury. Known for its iconic pink façade and Mediterranean Revival architecture, the Vineta Hotel will be reborn under renowned designer Tino Zervudachi’s touch, offering a refined retreat with spacious, reimagined interiors, where Dumas Paris’s Haute Literie bedding promises a sleep experience like no other. Custom pillows, duvets, and
bedding will be crafted with the same dedication to comfort and refinement that has defined Dumas Paris since 1910. This partnership highlights the joy of welcoming guests into spaces where every detail matters. For Édouard Dumas, it also represents the fulfillment of a dream: “We want to bring our heritage across borders, not just as a product, but as an experience that transforms the way people think about sleep; it’s about creating experiences that linger in the heart.” With Dumas Paris bedding, there’s an invitation to a nightly retreat into a world where dreams are touched by beauty, and sleep becomes a treasured ritual.

HAVEN OF ENTERTAINMENT
WHERE RELAXATION MEETS ENJOYMENT
IMAGINE A WELCOMING SPACE CRAFTED JUST FOR YOU — A RETREAT WHERE EACH DETAIL INVITES YOU TO INDULGE IN YOUR DREAM LIFESTYLE, WHETHER ALONE OR WITH CHERISHED FRIENDS AND FAMILY. THIS IS THE REALITY OF TODAY’S ENTERTAINMENT HAVENS, WHICH HAVE BECOME INDULGENT, EXPERIENTIAL CANVASES RATHER THAN SIMPLY AREAS WITHIN A HOME.
Gone are the days of simple TV rooms or isolated game corners. The modern entertainment room is now a richly layered space designed to meet a variety of desires. Indoor golf simulators, resortinspired wellness corners, and multisensory wine rooms transform your surroundings into a captivating playground. These spaces are filled with enjoyable features to make every moment memorable.
A NEW LEVEL OF LEISURE
Picture an evening with friends, surrounded by floor-to-ceiling screens that bring worldfamous golf courses into your home. With each swing, you’re transported to a dreamy location, adjusting for wind and slope as if you’re standing on the actual fairway. Just a few steps away, an indoor putting green awaits, designed with professional precision so that you can perfect your short game year-round. Beside the green, a custom shuffleboard pool table — crafted from rich walnut and finished with brass inlays — beckons, offering a luxurious take on classic fun.
TECHNOLOGY TAKES CENTER STAGE WITH A HIGH-TECH GAMING INSTALLATION THAT ALLOWS YOU AND YOUR FELLOW PLAYERS TO COMPETE IN HIGH DEFINITION, SEATED ON ERGONOMIC CHAIRS THAT CRADLE YOU THROUGH INTENSE GAMEPLAY SESSIONS. WITH LIGHTING THAT RESPONDS TO EACH MOVE AND SYSTEMS TAILORED TO CASUAL AND COMPETITIVE GAMERS ALIKE, EVERY FEATURE IS MEANT TO THRILL.
Immersive sound systems are also a staple in these havens. The aim here, according to French sound processing company StormAudio , is for

the homeowner to hear the room rather than the speakers. “More precisely, they hear sound that’s colored and influenced by the room’s shape, size, configuration, design, and construction,” the company elaborated.
A CINEMATIC EXPERIENCE
Home theaters have come along way over the past several years, creating a remarkably immersive experience. Hidden projectors and tailored lighting merge seamlessly with plush, custom seating, while velvet-lined walls and artisanal snack bars make each viewing resemble a private screening at an exclusive venue.
The technology behind the scenes is equally impressive. With systems like Crestron or Control4 , every aspect of the room’s ambiance is at your command. One touch of your device dims the lights, lowers the blinds, and lets ambient sound cascade through the space, shifting the atmosphere from lively gathering to serene sanctuary in an instant.
A PLACE TO SIP AND SAVOR
In an entertainment haven, a wine room, or a fully realized wine cellar, is more than just a wine cooler; it’s an entirely new experience — a space designed to not only preserve but also to celebrate wine as an art form. Behind towering glass walls, this climate-controlled oasis reveals row upon row of rare vintages, each bottle presented in ideal conditions and illuminated by stunning lighting that enhances the depth and richness of each hue.
The glass-enclosed structure separates the cool interior from the room beyond, creating an alluring contrast that becomes a centerpiece in its own right. The subtle glow of LED lights casts a reverent aura around each bottle, creating a striking display. Every vintage tells a story, meticulously arranged to showcase labels that span continents and decades.

A BESPOKE BAR SETUP
The luxury bar has evolved into a vital focal point of the entertainment space — creating an environment of refinement, complete with custom-crafted details. DESIGN IDEAS FOR A VERSATILE SPACE
ZONE WITH INTENTION
Thoughtful zoning ensures each area serves a distinct purpose. Plush rugs can anchor seating for viewing nights, while sleek hardwood floors set the stage for yoga or meditation. Dimmable lights over the entertainment zone and soft lighting in the wellness area create a graceful flow between different activities.
FURNISH FLEXIBLY
Modular furniture keeps the space dynamic.
Sectional sofas can be rearranged for intimate conversations or expanded for large gatherings. Convertible coffee tables or multipurpose ottomans with hidden storage promote flexibility. Additionally, retractable walls and movable dividers offer privacy and define different areas of the entertainment space.
CREATE A GALLERY
Statement light fixtures, paired with modern sculptures and personalized art collections, mimic a private art gallery. Custom furniture, designed to fit the space perfectly, ensures that every inch of the entertainment room fuses beauty with function. For an authentic gallery experience, consider commissioning custom artwork or tastefully showcasing family heirlooms.
INTEGRATE STORAGE
Subtle storage keeps even multipurpose entertainment rooms organized and clutterfree. Concealed shelves or cabinetry can store everything from tech equipment to wellness accessories, while high-end materials like walnut or polished lacquer add sophistication. Hidden storage allows the room to shift from entertainment hub to relaxing retreat with minimal effort.
PRIORITIZE SUSTAINABILITY
Incorporating eco-friendly materials, such as reclaimed wood, organic fabrics, and non-toxic paints, adds a natural, regional appeal. Locally sourced materials from here in Western North Carolina support the community and bring a
lovely character to your home. Energy-efficient lighting and smart thermostats further reduce your environmental footprint.
EMBRACE INDOOROUTDOOR LIVING
As indoor-outdoor living continues to gain momentum, homeowners are bringing their entertainment space outdoors. Large sliding or bifold doors create a smooth flow between interior and exterior areas. Firepits and outdoor screens expand the usability of the space, while outdoor furnishings that mirror your interior design can deliver a stunning yet cohesive aesthetic. Outdoor kitchens or wet bars can further enhance the entertainment value of your home, making your space the perfect place for any occasion.
INTRODUCE A FINAL TOUCH
No haven is complete without details that reflect your personal lifestyle. Handcrafted cabinetry and elements such as rare materials or custom upholstery truly make bonus rooms come alive. Incorporating heritage pieces will thoughtfully curate the space into something deeply personal — making it not only beautiful but uniquely yours. These details are the hallmark of entertainment, helping to craft spaces that are as functional and versatile as they are artfully designed.

WITH PAUL ROBSHAW AND VISION CASHIERS
A GRASSROOTS MOVEMENT IS BREATHING NEW LIFE INTO CHARMING CASHIERS, NORTH CAROLINA. VISION CASHIERS, FOUNDED BY PAUL ROBSHAW, IS A TESTAMENT TO THE POWER OF COMMUNITY SPIRIT AND SHARED DREAMS. ROBSHAW, A SEASONED ENTREPRENEUR WITH A HEART FOR SERVICE, FELL IN LOVE WITH CASHIERS WHEN HE STARTED VISITING A DECADE AGO. BUT AMID THE AREA’S NATURAL BEAUTY, HE SAW UNTAPPED POTENTIAL AND UNADDRESSED NEEDS. THIS SPARK OF RECOGNITION IGNITED A PASSION THAT WOULD SOON SPREAD THROUGHOUT THE COMMUNITY.
“Improving Tomorrow...Today” isn’t just a motto for Vision Cashiers — it’s a rallying cry that has united over 200 volunteers. Together, they’re weaving a tapestry of change, thread by thread. From bringing health care to doorsteps through telemedicine, to lighting up the digital landscape with free Wi-Fi, to street clean-up and affordable housing initiatives, Vision Cashiers’ projects touch every facet of community life.
We sat down with Paul Robshaw to get his take on the past, present, and future of Cashiers.
AS A TRANSPLANT, WHAT IS IT ABOUT CASHIERS THAT MADE YOU WANT TO CALL IT HOME?
I started coming here in 2013, and just kind of fell in love with the place. I would tell people, “Boy, if heaven is any better than this, I can’t wait to get there.” It’s green, lush, mountainous, and it has a lot of lakes, and the weather is just great. It’s a delightful place, and we just love it.
WHAT INSPIRED YOU TO GET INVOLVED WITH COMMUNITY DEVELOPMENT IN CASHIERS?
Cashiers is an unincorporated area, so it has no government. And the government it does have
is the county, which is located about 35 minutes away. So, after being here part time for four or five years, I went to some of the people who had been here a long time, and I asked them, “Who’s doing anything to take care of this place? What are the defining problems that exist here in Cashiers? And who’s willing to work on doing something about them?” Pretty quickly, I got 10 passionate founders together, and we formed Vision Cashiers.
WHAT WERE SOME OF THE MAJOR HURDLES TO GETTING STARTED?
Often enough, you go to a place, you live there, and there are problems, but those problems are just a part of living there. But it doesn’t have to be that way. Problems are meant to be solved. You just have to be willing to do the work.
WE WERE NOT INTERESTED IN FORMING COMMITTEES TO DISCUSS THINGS. WE WERE ONLY INTERESTED IN FORMING TASK FORCES THAT WOULD ACTUALLY DO THINGS. ONE OF THE BIG PROBLEMS THAT EXISTED HERE WAS A LACK OF SIDEWALKS. CASHIERS DIDN’T HAVE ANY, SO IT WAS VERY DIFFICULT TO GET AROUND. WE SAID TO THE COUNTY, “LOOK, IF WE RAISE THE MONEY TO BUILD SIDEWALKS OR GET OWNERS TO DO IT, WILL YOU TAKE ON LIABILITY AND MAINTENANCE?” THEY EVENTUALLY SAID YES, AND WE WOUND UP GETTING SOME SIDEWALKS BUILT. THAT WAS THE BEGINNING OF OUR FRIENDSHIP WITH THE COUNTY GOVERNMENT.
We did the same thing when we realized there were no dog parks or reliable Wi-Fi in Cashiers. We put together community initiatives to raise the money to build the park and a Wi-Fi system. The county backed our efforts, and all of a sudden, people had a safe place to play with their dogs and better access to the internet.
WHAT LEVEL OF INVOLVEMENT DO YOU HAVE FROM YOUR FELLOW RESIDENTS?
Like I said, we don’t have any committees. You join a task force, and you’re going to work. We have a health and wellness task force with 35 people on it. We have an education task force with about the same number of people. We have a public art task force putting up sculptures in the community to make it warmer. We have a housing task force focused on building affordable housing
for the young professionals that are so essential to our community’s survival. Our pathways and preservation task force of about 50 workers is entirely focused on making the town or the community more walkable. At any given time, we have about 200 volunteers working on improving Cashiers. It’s all about doing things.
ARE THERE ANY RECENT PROJECTS THAT
YOU’RE PARTICULARLY PROUD OF?
Yes, one that our health and wellness task force came up with. After attending a CPR course, we learned that if you have a sudden cardiac event, you’ve got four minutes before the lack of a heartbeat causes brain damage, and you’ve got eight minutes to remain alive. In case the worst should happen, having a defibrillator at home is critical to your survival. So we contacted a distributor, negotiated a nearly half-off discount, and made a community-wide effort to get people to buy defibrillators.
Hopefully, nobody will have a use for it, but having one could save a life. That’s one of the things we feel really good about. And it’s not profiting us anything. We’re just coordinating everything, passing it through, and giving cheaper, easier access to lifesaving equipment.
WHAT DOES THE FUTURE HOLD FOR VISION CASHIERS?
We’re really focused on an effort called “Walk Cashiers,” which is making our community more walkable. Sidewalks and walking paths make a community feel like a home, bring customers to businesses, and keep residents connected. So far, we’ve raised $2 million to make Cashiers more walkable.
IS THERE ANY WISDOM THAT YOU’D LIKE TO LEAVE US WITH?
I’m 82 years old. I’m in good shape. I’ve had really difficult times in my life and really good times in my life. So I feel fortunate that I got here, but it’s more than just being here. It’s much more about having a purpose in life. I wake up every morning with two words on my mind: “Do good.” Find your words, know your purpose, wake up, and do the work.

WITH BROKER LAURIN EVANS
Laurin wants you to find what you’re looking for and to join her in this beautiful place she calls home. Her life’s work has been bringing clients to where they want to be, showing them what’s possible and what could be theirs. Service-minded, detail-oriented, and unerringly dedicated, Laurin Evans is the neighbor everyone wants and the real estate agent everyone needs.
TELL US ABOUT YOUR BACKGROUND AND WHAT LED YOU TO WORK IN REAL ESTATE.
After graduating from Mississippi State University with a degree in accounting, I attended law school at Ole Miss. I practiced in several areas of law, but I fell in love with real estate law. I’ve always thought real estate is fun, and I enjoy helping people find their perfect home. So, in addition to practicing law, I earned my real estate license so that I could experience that field, too. In 2013, I co-founded a title company in Florida and gained another perspective on the buying and selling processes. I’ve experienced this business from every angle, and I feel like I’ve found my passion as a real estate broker.
HOW LONG HAVE YOU BEEN A REAL ESTATE BROKER?
I earned my real estate license in 2001 and previously sold real estate in Florida, where I was consistently named a top producer in my office and the #1 sales agent in 2020. With over 20 years of experience negotiating for clients, I found that those skills transferred quite seamlessly to North Carolina.
WHY DID YOU CHOOSE TO WORK WITH SILVER CREEK REAL ESTATE GROUP?
When I moved here from Florida, I worked with a Silver Creek broker to find my perfect home. I was impressed with my broker’s expertise and level of commitment to the process, and the overall experience was top-tier. The company’s philosophy and involvement in the community are inspiring and provide a positive work environment. And, of course, Silver Creek’s marketing is simply unparalleled in the area. I knew right away that I wanted to work with them.
WHEN YOU’RE NOT SELLING REAL ESTATE, HOW DO YOU ENJOY SPENDING YOUR TIME?
I’m working on mastering the art of sourdough bread. While recovering from a challenging medical condition and surgery last year, I needed something to keep my mind engaged. Sourdough is a highly scientific process, but also very artistic and personal. I bake a lot, because it is so therapeutic, but also because my friends and family enjoy it so much! Sourdough isn’t gluten-free, but many people with gluten issues have no trouble eating it because of the special process of fermentation. I give away many of the loaves I bake, because it gives me so much joy to share sourdough with others, and I even ship bread to my friends in other states. Everywhere I go, the subject of sourdough comes up somehow, and I keep a note on my phone of people I meet who will be getting a delivery of fresh sourdough bread soon!
My newest passion is pickleball. I’d been wanting to try it out for a while, and once I did, I was hooked. I’m finding that pickleball is such a social sport and a great way to meet new people.
I’ve also been enjoying all of the live music opportunities in the area, like the Cashiers Live series on the Village Green. And, of course, there are outdoor concerts all over the Plateau in the summertime. We can always get out and find something to do.
WHAT GOALS ARE YOU WORKING TOWARD IN 2025?
I attended the volunteer expo when I first moved here, and several area organizations appealed to me. I’m looking forward to getting more involved in the community and making a difference with local charities. This is an incredibly generous community that truly cares about every member, and we have so many opportunities to give back.
WHAT IS YOUR FAVORITE SEASON ON THE PLATEAU?
I always look forward to the leaves changing in the fall. The vibrant colors truly transform our landscapes, and it’s easy to see why visitors flock here from all over to experience autumn. As a Mississippi native, I appreciate having four seasons, which I missed while living in Florida. To me, the Plateau truly has a “Goldilocks” climate.
WHAT ARE YOUR FAVORITE EVENTS OR FESTIVALS ON THE PLATEAU?
The Highlands Food and Wine Festival is a can’t-miss for me! The Bear Shadow Festival is an incredible event for music as is Highlands Porchfest. Cashiers Live this year was incredible as well. For what feels like a small-town environment, the number of opportunities to enjoy live music is fantastic. And, of course, we often get to enjoy these events in our beautiful outdoor settings.
WHAT ARE YOUR CLIENTS’ FAVORITE THINGS ABOUT LIFE ON THE PLATEAU?
Apart from all of the outdoor activities, the number of fun events here means there’s always something to do! The Plateau can feel like the perfect place for different people for very different reasons. If you enjoy live music or performing arts, there are plenty of events for you. And if you’re a social butterfly, our clubs and community organizations always have something going on. Some people are simply in awe of our natural beauty here, from the mountain views to the lakes and hiking trails. And, of course, there’s the climate. Many of our residents from farther south discovered our cool, comfortable summers and never wanted to leave.
OUTSIDE OF THE PLATEAU, WHERE IS YOUR FAVORITE PLACE TO TRAVEL?
Italy is one of my favorite places in the world, and I’m looking forward to returning at some point in the future. We have also been going to the Bahamas for years. The nature there really relaxes and rejuvenates me, providing a nice counterpoint to life in the mountains and a refreshing break from a busy career.
WHAT ADVICE WOULD YOU GIVE SOMEONE STARTING THEIR SEARCH FOR A HOME ON THE PLATEAU?
Choose your real estate broker carefully. You’re going to be spending a lot of time with this person, so you should feel comfortable with them. And because this is such a unique area with many different communities, you want to find someone who knows the area and understands what you’re looking for. You also want to feel confident that your broker will go to bat for you during negotiations and ultimately help you win
the home of your dreams. The Silver Creek brokers are highly informed, professional, and passionate about what they do.
WHAT IS THE MOST VALUABLE THING YOU’VE LEARNED WHILE WORKING AS A BROKER?
No matter what stage of life my clients are in, purchasing a home is a huge decision. Nothing matters more to me than getting it right for them. That means understanding their lifestyle goals, identifying their top priorities, and locating the perfect home in a community that matches their dreams.
THE
HIGHLANDS-CASHIERS PLATEAU IS A UNIQUE PLACE TO LIVE AND VISIT. WHAT DO YOU FEEL IS OUR GREATEST RESOURCE?
Undoubtedly, the people. My family and I felt very welcomed to the Plateau from day one. Everyone I have met cares about this community deeply and wants to not only preserve the unique characteristics of the Plateau, but also to improve the quality of life for all members. And, obviously, the natural resources here are incredibly special. With the love and care of all its residents, the Plateau environment should remain pristine and beautiful for many generations to come.

EVERY WEEKDAY AFTERNOON, HUNDREDS OF LOCAL YOUNG PEOPLE FIND THEIR PASSION, PURPOSE, AND POTENTIAL AT THE BOYS & GIRLS CLUB OF THE PLATEAU (BGCP). FOUNDED BY 10 LOCAL FAMILIES AND MOUNTAIN YOUTH CHARITIES IN 2014, BGCP HAS BECOME THE AREA’S ONLY DAILY AFTER-SCHOOL ENRICHMENT PROGRAM, SERVING STUDENTS THROUGHOUT SOUTHERN JACKSON COUNTY. THESE AREN’T UNTESTED PROGRAMS — THEY’RE PROVEN THROUGH GENERATIONS OF YOUNG LIVES TRANSFORMED AND BUILT ON A FOUNDATION OF SUCCESS DATING BACK TO 1860, WHEN THE FIRST BOYS & GIRLS CLUB WAS FOUNDED IN HARTFORD, CONNECTICUT.

AT THE BOYS & GIRLS CLUB OF THE PLATEAU
“We work very hard and are very aware of who the kids are and what they’re bringing to the club on a daily basis,” says Ron Keller, BGCP board member and safety committee chair. “When the kids arrive at 3:15, everything that’s been boiling under the surface from their long day at school can be addressed with understanding and support.” Through physical activities, oneon-one tutoring, art classes, and theatrical performances, the club’s program focuses on three core areas: character skills, socialemotional development, and academics.
With free programming for all K-12 students and locations in both Cashiers and Highlands, BGCP is a one-stop shop for socially invigorating after-school care, as well as long-term individual growth. The Cashiers facility includes the Keller Pavilion, donated by Ron and his wife, Kaye. It’s a 7,500-square-foot covered space where kids can “play basketball, pickleball, and knock the tennis ball around in a safe,
supervised, motivational environment.” Even in winter, the balls keep bouncing and the energy keeps flowing thanks to hurricane shutters and space heaters.
One of the BGCP’s most popular programs is headed by a retired aerospace engineer, John Godbold, who is lovingly dubbed “Rocket Man” by excited students. Not only has he introduced them to coding and circuitry, but he recently led them in building and launching their own rockets. “Kaye and I were brought in to judge the rocket contest,” Keller recalls fondly, “and we thought it would be these little launches. Boy, were we wrong. These rockets shot up into the clouds, their parachutes all deploying hundreds of feet up. One of them landed half a mile away.”
The club’s life-changing educational impact is proven in stories like that of Gonzalez, one of the first participants in BGCP’s Read to Learn program. Working one-on-one with a mentor twice weekly, Gonzalez advanced two grade levels in reading in just six months. When asked how he felt at his celebration party, Gonzalez said just one word: “smart.” It’s these moments that motivate the
program’s eight dedicated reading mentors. It’s kids like Gonzalez who make it all worth it.
Teens have similarly found their own special home at BGCP. From just five registered teenagers in 2022, the program has exploded to 100 registered young folks with 40 daily attendees. The new Teen Club, opening in 2025, will give them an exclusive space to grow. “They need their own dedicated place,” Keller emphasizes. “They’re a few years away from entering the workforce, going to college, starting real life. They want their own space to grow.”
The Teen Club goes beyond just providing that space — it’s about preparing young people for their futures. In its educational kitchen, what started as hamburger flipping quickly evolved into teens crafting their own sauces under the experienced guidance of a brilliant local caterer. They’re even growing their own ingredients in the club’s garden and learning about healthy eating from seed to plate. Financial literacy programs help them become comfortable with realworld money management, while professional development workshops teach essential skills. It
all starts with “how to look someone in the eyes when you’re shaking their hand,” as Keller puts it. The club’s approach recognizes that trade careers can be just as valuable as traditional college paths, offering teens exposure to various career possibilities, as well as guidance on how best to pursue their dreams.
BGCP’s community impact extends far beyond its daily programs. During COVID-19, when local restaurants struggled, the club became a hub for meal distribution, keeping families fed and businesses active. During Hurricane Helene, it transformed into a community command center, coordinating with helicopters bringing emergency supplies.
Getting to the club is easy. The Cashiers location runs Monday through Friday from 2:30 to 6:30 p.m., with transportation provided for Blue Ridge School and Summit Charter School students. Highlands students can ride to their local facility, which operates from 3:30 to 7:30 p.m.
Behind the scenes, 10 paid staff members, volunteer educators, and dozens of interns from Western Carolina University keep programs running smoothly.
WHAT STARTED IN 2014 HAS GROWN INTO SOMETHING EXTRAORDINARY. BGCP ISN’T JUST ABOUT KEEPING KIDS BUSY; IT’S ABOUT BUILDING FUTURES. FROM READING BREAKTHROUGHS TO ROCKET LAUNCHES AND FROM TEEN CHEFS TO COMMUNITY EMERGENCY RESPONSES, THE CLUB CREATES SPACES WHERE YOUNG PEOPLE DISCOVER WHO THEY CAN BECOME.
Registration for ages 5-18 is now open through the BGCP Parent Portal. As the only five-day-aweek after-school program serving students in Jackson and Macon Counties, BGCP continues shaping our community’s future, one young person at a time.

DISCOVERING the Joys of SOURDOUGH
word S by brad bartlett
FAR FROM JUST A PANDEMICERA STAPLE HOBBY, SOURDOUGH BREADMAKING HAS SEEN QUITE A RESURGENCE IN RECENT YEARS. THIS ANCIENT PRACTICE — WHICH TRACES ITS GASTRONOMIC ROOTS TO THE DAWN OF CIVILIZATION — HAS ONCE AGAIN RISEN IN POPULARITY AMONG BOTH ARTISANAL CRAFTSMEN AND HOME BAKERS.
Cultivating a starter — much like caring for a pet or plant — and then enjoying the fruits of that effort has elevated sourdough baking into the spotlight. But when you delve into history and see how sourdough has resonated with communities for thousands of years, you’ll gain a new appreciation for the hands-on, human-first art of sourdough baking.
THE HISTORY OF SOURDOUGH
What’s most interesting about sourdough is that exploring its history takes you
back through the pages of time — to the earliest evidence of human baking.
Archaeological findings have revealed that early bakers in Switzerland were experimenting with the transformative process of sourdough baking as early as 3500 BCE. The ancient Egyptians were the first to take the baking process from a means of survival to a form of artistic expression.
In the Nile Valley’s warm climate, bakers discovered that leaving the dough to rest in the desert air initiated a natural fermentation process, giving the dough a unique flavor and texture. The results were so impressive (some might say miraculous) that, as evidence shows, Egyptian bakers created nearly 30 varieties of sourdough bread, which were used as gifts, for worship, and as offerings to the dead.
As humanity spread across the Mediterranean, so did the knowledge of sourdough. Roman soldiers carried their sourdough starters with them on military campaigns, leading to the fermented bread being shared across the known world. The
joy and passion of baking left a mark on countless cultures. Medieval monks baked sourdough in their dimly lit monasteries, near the spots where amateur bakers now continue the tradition hundreds of years later!
Perhaps what’s most intriguing about sourdough baking is that though life may change drastically, the simple yet mysterious processes of baking still call us back time and again. The interaction of yeast and bacteria, the development of unique sourdough flavors, and the naturally slow baking process remind us of the rich heritage we all carry within us!
THE ARTISTRY OF SOURDOUGH
The history of sourdough is fascinating in itself — but it’s the act of creating the sourdough that brings us to the table!
At the heart of sourdough baking lies a surprisingly simple process: mixing flour and water. “ Sounds like any other baking process ,” you might say. Yet
it’s the sourdough starter that makes this process truly unique.
NURTURING THE SOURDOUGH STARTER
The sourdough starter is a living culture of wild yeast and beneficial bacteria, each contributing unique characteristics to every loaf of sourdough bread. When properly nurtured, the starter becomes a baker’s signature, offering a distinctive blend of microflora within the bread.
Typically, creating and maintaining a sourdough starter follows four steps:
1. Mix equal parts flour and water into a clean, sanitized jar or container (or borrow some starter from a friend.)
2. Let the mixture rest at room temperature (74-86°F) for 12-24 hours.
3. Discard a portion of the starter mixture and feed it fresh flour and water daily.
4. Repeat this process for several days until the starter begins to bubble with life.
It’s a process that requires technical knowledge and a touch of intuition. You must learn to notice subtle changes in aroma, shifts in texture, and the perfect amount of rise that signals the starter’s vitality.
Perhaps this is why sourdough bakers find the process so enthralling. Not only are you baking something to be cherished by others but you are also cherishing a small living organism that offers you its gift of ancient wisdom with every bake.
THE FERMENTATION PROCESS
With the starter in place, the baker begins the process of fermentation. This interplay of time, temperature, hydration, and technique requires a steady hand and focus — much like how a musician reads and follows a score. The notes guide the musician, but it’s their job to bring the piece to life.
As the yeast produces carbon dioxide, the bread begins to leaven. The leavening process allows lactic acid bacteria to create organic acids, which are the foundation of the tangy sourdough flavor. Enzymes then break down the complex carbohydrates in the dough, improving digestibility.
ARTISANAL BAKING
With the starter just right, it’s time to begin baking! At this point, the baker may premix the dough in an autolyze process, which makes it easier to stretch and fold. During the proofing stage, many bakers stretch and fold the dough slowly instead of kneading it in a traditional way. This method helps preserve the gases produced during fermentation.
Bakers then shape the dough and score it to enhance the rise and texture. A common practice is to place the dough in a Dutch oven to bake it for 20 minutes before removing the lid and allowing it to bake for an additional 30
The result is a batch of sourdough that is as unique as the baker who created and nurtured the starter. It’s an amazing process that truly shows how much artisanal care goes into this craft!
THE SOURDOUGH RENAISSANCE
The COVID-19 pandemic renewed interest in home baking, with sourdough becoming the new luxury bake for many at-home bakers. This rise in interest wasn’t just a hobby, though. For many, a greater focus on health, wellness, and purpose-made products helped bring the sourdough baking process back into the limelight.
Many saw sourdough baking as a way to create something unique and healthy for themselves and their families, viewing it as a healthier alternative to conventional, store-bought bread. The digestive benefits of the starter, as well as the high levels of nutrient absorption, were bonuses.
Perhaps more than health and hobby, it was the pull back to the simpler times – when hours of care and cultivation could lead to creating something special and flavorful.
Much like the Egyptians who offered their handmade bread to the gods or the Roman soldiers who carried their sourdough starters with them as a reminder of the home they fought for, sourdough offers bakers a chance to get back to nature and find peace in the slow process of simple baking.
GET INVOLVED IN THE SOURDOUGH COMMUNITY
Perhaps the best part of the sourdough renaissance has been the community that has grown with it! Sharing your sourdough creations with others is a wonderful way to enjoy the practice — and discover new ways to perfect your craft.
By embracing the art of sourdough-making, homeowners on the Plateau can create a personal, enriching experience that connects them to culinary traditions while expressing their appreciation for craftsmanship and quality.
The process of nurturing a sourdough starter, shaping each loaf by hand, and sharing the fruits of one’s labor embodies a commitment to slow living and artisanal values — a perfect complement to the refined lifestyle of the Plateau.
TIPS FOR THE NEW SOURDOUGH BAKER
Are you looking to bring sourdough to life in your own home? Here are a few tips to help you get started:
CREATE A DEDICATED BAKING SPACE
Sourdough baking requires some space where you can cultivate your starter and knead your dough. Setting a dedicated space for your baking can elevate the process to an art form — much like an artist’s canvas corner or a writer’s nook.
INVEST IN THE RIGHT TOOLS
Artisanal baking requires the right tools, so invest in handcrafted items that help you bake well and that could be passed down to the next generation!
EXPERIMENT WITH STARTERS AND FLAVORS
Like any hobby, you’ll want to find the process that works for you. Take the time to get to know the ingredients you work with, and try your hand at different methods to create your starter. Over time, you’ll find the perfect option for you.
A HOT PLUNGE
word S by brad bartlett
THEY SAY HOME IS WHERE THE HEART IS, BUT IN 2025, IT MIGHT ALSO BE WHERE WE NEED HEALING THE MOST.
We don’t need to tell you that we live in a stressful world. If you’re feeling extra overwhelmed today, you’re not alone. Recent studies show that 43% of adults feel more stressed than ever, and 82% put physical, mental, and emotional well-being at the top of their list of priorities.
The wellness industry has responded to this growing concern with high-end spas, relaxation retreats, and other health-focused businesses. But who says you need a membership to a local wellness center or retreat to access modern healing technologies?
Welcome to the new era of home wellness, where your post-exercise recovery routine might include a session in an infrared sauna followed by a dip in your cold plunge pool — all without leaving your property.
In the North Carolina mountains — where nature provides its own special brand of therapy — homeowners are taking wellness to new levels by bringing the latest health and relaxation technology into their personal spaces.
THE HOT AND COLD REVOLUTION
While there are plenty of ways to enjoy the benefits of personal wellness technology, few techniques are getting as much attention as contrast therapy.
THIS PRACTICE OF ALTERNATING BETWEEN HEAT AND COLD EXPOSURE ISN’T JUST A TREND; IT’S A SCIENCE-BACKED APPROACH TO RECOVERY AND REJUVENATION THAT IS
MAKING ITS WAY INTO HOMES WITH HIGHEND PRODUCTS DESIGNED FOR HEALING.
The home wellness revolution starts with the sauna, which has evolved far beyond the traditional wood-lined boxes you may remember.
The Sunlighten Signature I has a distinctly modern form. These in-house saunas are designed with advanced SoloCarbon heating technology, which promises to deliver therapeutic benefits at lower, more comfortable temperatures than traditional saunas.
The result? An enjoyable and effective healing experience that fits into your home’s design.
But the treatment doesn’t stop with heat. In many homes, the high-tech heat chamber is installed right next to a cold plunge pool. Cold immersion systems have become extremely popular because they reduce inflammation, boost immune function, and increase energy levels after just a few uses.
The Sun Home Cold Plunge Pro represents the pinnacle of cold therapy technology. It comes equipped with a powerful chiller system that can cool water down to 32 F. And for those worried about sanitation, the system’s UV + ozone sterilization chambers and 20-micron filtration technology keep the water crystal clear. Plus, it’s weather-resistant, so it can be placed outside.
Imagine waking up to a morning routine of stretching, followed by a session in the heat chamber and a dip in the cold plunge. That sounds a lot better than a quick coffee, processed breakfast, and a scroll session on your phone, right?
LIGHT AND SOUND TECHNOLOGY
While the concept of heat and cold therapy takes us back to ancient wellness traditions, the healing powers of light and sound are the focus of newer wellness technologies.
Red light therapy, once only found in professional clinics, has made its way into mountain homes with sleek and sophisticated devices like the SHINE Red Light system
These high-end units combine red and infrared wavelengths to deliver a range of benefits — from skin health to cellular recovery. Imagine ending your day bathed in therapeutic light while watching the sunset behind the Blue Ridge Mountains — a double dose of natural healing.
But the most interesting development in home wellness technology is the rise of dedicated meditation spaces with targeted sound therapy.
The OpenSeed Iris Meditation Pod is the epitome of this trend, a personal sanctuary that looks like it was transported from the future. These beautiful pods combine guided meditations, aromatherapy, and specifically designed lighting to make daily meditation practice not only accessible but irresistible.
Taking sound therapy to the next level, the SAVA Sound Pod uses artificial intelligence to select frequencies that boost mood and deep relaxation.
It’s like having a personal sound therapist on call to help you get ready for a
big meeting or unwind after a long day of work. In our mountain communities, where peace is a luxury, these technologies allow us periods of complete tranquility.
BUILDING YOUR PERSONAL WELLNESS SANCTUARY
The art of incorporating wellness features into your mountain home is all about balancing functionality with design. These health devices don’t have to be hidden away in a spare room; they’re statement pieces that will not only enhance your well-being but also your home’s style.
It all comes down to integration. When placed correctly, a cold plunge pool can be a stunning water feature that complements your outdoor living space.
A meditation pod with mountain views creates a natural harmony between technology and landscape. An infrared sauna with floor-
to-ceiling windows turns a recovery session into a scenic escape.
In our mountain homes, where indoor-outdoor living is a way of life, these wellness features become a natural part of the environment. A dedicated wellness suite might open onto a private garden, allowing you to transition from high-tech healing to nature’s embrace.
HOME WELLNESS TECHNOLOGY CAN NOT ONLY IMPROVE YOUR PERSONAL HEALTH, BUT IT CAN ALSO ADD VALUE TO YOUR MOUNTAIN PROPERTY. AS OUR AREA ATTRACTS MORE PEOPLE SEEKING NATURAL BEAUTY AND MODERN AMENITIES, HOMES WITH FULL WELLNESS FEATURES STAND OUT IN AN ALREADY AMAZING MARKET.
WHAT DOES THE FUTURE OF HOME WELLNESS HOLD?
While many of these in-home wellness products may feel somewhat futuristic, we’re just getting started. Artificial intelligence and wellness features will bring even more personalization.
A wellness suite that knows your preferences anticipates your needs and adjusts automatically — warming up the sauna as you finish your mountain bike ride or loading your meditation pod with the perfect soundtrack for your mood.
But even as technology advances, it’s our mountain setting that makes our wellness spaces truly unique. The fresh mountain air and the play of natural light through the seasons work harmoniously with modern wellness features to create experiences that can’t be replicated elsewhere.
In our mountain communities, home wellness isn’t about more technology; it’s about smarter, more seamless spaces that connect us to the natural world. It helps us find that sweet spot between high-tech healing and the timeless healing of mountain living.

SIMS VALLEY
At the turn of the 20th century, Willis and Laura Sims settled in a high valley with clear 40-mile vistas of the Great Smoky Mountains in the west. They built a rustic mountain home, lived off the land, and raised their six children here. Today, the valley is home to Sims Valley — a unique mountain community built in the same spirit as the Sims family homestead. It is a place of beauty, a place for families, and a place where residents live in harmony with the nature that surrounds them.
Located between the historic towns of Cullowhee and Cashiers, Sims Valley provides its homeowners with the feeling of living within a national park, rather than a resort community. Intersected by winding nature trails, designed by Trail Dynamics (who often designs for the National Park Service), Sims Valley offers many opportunities to let their residents’ spirits soar with the natural splendor that is housed within this oneof-a-kind property. The peaceful sound of cascading waterfalls, the exotic fragrance of mountain laurel
and native wildflowers, and the awe-inspiring sight of the Smokies blend together for an exceptional outdoor experience. Go shopping or dining in Cashiers or Highlands, explore Nantahala National Forest, take a boat ride on Lake Glenville, or enjoy the many amenities that Sims Valley has to offer.
The Sims family homestead still stands and now serves as a community gathering place. In fact, there is no shortage of places for the community to gather together at Sims Valley. The Mountain Clubhouse contains a fitness center and spa, swimming pool, large great room with fireplace, caterer’s kitchen, outdoor grill, and two outdoor fireplaces, paired with some of the most amazing views available at the property. The Mountain Chapel — located at the north end of the property — offers an open-air gathering place for Sims Valley residents to enjoy a picnic, a roaring fire in the outdoor fireplace, or a breathtaking vista of the valley and the mountains beyond.

A CULTURE THAT IS ALWAYS ON HAS PROVEN HARD TO TURN OFF. THIS IS WILDLY DETRIMENTAL TO SLEEP, AN IMPORTANT PART OF OUR HEALTH AND WELL-BEING. TO ACHIEVE BETTER SLEEP AND ENJOY THE MANY BENEFITS OF GETTING ENOUGH OF THE QUALITY KIND, THE DESIGN OF ONE’S BEDROOM IS A PERFECT STARTING POINT. IT IS WHERE EACH DAY BEGINS AND FINISHES — ITS BOOKENDS. ESPECIALLY AT THE END OF THE DAY, IT IS ESSENTIAL TO BE ABLE TO RETREAT TO A SANCTUARY THAT CLOUDS THE NOISE OF THE WORLD.
“Creating a peaceful and calming sleep environment helps to quiet your mind and makes it easier to make the transition from sleep to wakefulness,” says Dr. Angela Holliday-Bell, an Illinois-based physician and sleep specialist. “It also helps you to get that deeper, more quality sleep that we all strive for.”
Sleep deprivation has adverse effects on the body, which can range from weight gain to anxiety to serious conditions such as high blood pressure, cardiovascular disease and Alzheimer’s.
“The bedroom is the most sacred place to address and adjust physical and emotional health issues,” adds Julia Sarasola, an interior decorator and feng shui practitioner in the New York area. “On average, we spend 30 percent of our time in our bedrooms. It is our sanctuary, where we go to rest, recharge and revitalize. Our bedroom is vital to our health.”
Feng shui is one of many global wellness-oriented belief systems that can enhance one’s home. These ancient Chinese principles call for specific spatial arrangement to maximize the flow of energy. Feng shui literally translates to “windwater,” and seeks to harmonize the five elements: earth, metal, water, wood and fire.
“The fundamentals of feng shui remind us that we are deeply connected to our environment in noticeable as well as invisible ways,” Ms. Sarasola says. “When we are supported and nurtured in our home and workspaces, our mental, emotional and physical bodies function at their best.”
Yin and yang energy are a core part of feng shui design. “Yin is soft, quiet, nurturing, and what you want to align with most in your bedroom — think natural textiles, stable furniture, peaceful artwork and significant items that hold meaning and fill your heart with joy,” Ms. Sarasola explains.
“The whole point of sleep is for your body to rejuvenate and replenish itself for the following day; if we are surrounded by things that stimulate us — yang energy — then we don’t truly allow ourselves to rest,” she adds. “Busy colors, patterns,
shapes, items connected to work, television and Wi-Fi, exercise equipment and clutter all represent energy that is counterintuitive in fostering deep sleep and rest.”
She also places importance on the positioning of the bed itself. Beds should face, but not sit in line with, the bedroom door. “Known as the ‘mouth of qi,’ the doorway symbolizes life force, bringing forth all available opportunities and experiences,” she explains. “By aligning your bed to face the door, you position yourself to confront life directly, welcoming in vital energy and abundance.”
Another school of thought, vastu shastra, also takes into consideration the positioning of objects and how they affect the energy of a living space. The architectural and design philosophy originates from ancient India and is based on traditional Hindu practices.
Along the lines of vastu shastra, interior designer Shalini Misra, who has offices in Delhi, Dubai, London and New York, recommends that the head of the bed is positioned toward the south, noting that this is most congruent with the natural flow of Earth’s energy, which moves from
northeast to southwest. She also recommends avoiding positioning mirrors directly towards a bed, which disrupts proper energy flow.
Ms. Misra further utilizes wabi sabi principles in her designs. The Japanese belief system is based on Zen Buddhist ideals that embrace simplicity and the imperfections of the natural world. Accordingly, she avoids “true symmetry” to make the space feel more “in step with the world.”
She also suggests avoiding clutter, as that, too, can interrupt energy flow. “Bear in mind that minimum need not mean minimalist,” Ms. Misra says. “To feel connected to a space, we must surround ourselves with objects of meaning.”
Beyond global practices, there are plenty of other rules of thumb to consider in designing the perfect bedroom. It is a mix of art and science, aligning medical study and aesthetically pleasing design. Comfort and regulating circadian rhythm are the first considerations.
“The mattress that you sleep on can play a big role in the quality of your sleep,” Dr. Holliday-Bell says. “When it comes to picking the right mattress, there is no one-size-fits-all. One big factor that should play a role in your mattress purchase is the position that you lie in when you’re asleep.”
A firmer mattress for stomach sleepers, medium firm for back sleepers and medium soft for side sleepers are best for relieving pressure points.
Light exposure needs are twofold: We need it first thing in the morning, but it hinders sleep at night. Dr. Carleara Weiss, a geriatric nurse and sleep specialist in Buffalo, New York, recommends blackout curtains, which can be opened first thing in the morning to wake the body up. Smart homes can even be set to do this automatically. Light therapy devices are another tech-assisted way to regulate the biological clock in the bedroom.
Turning towards artificial light, interior designer Kasia Kronberger, founder of Berlin-based Studio Bosko, recommends to “think of light in a layered way,” incorporating bedside and floor lamps in strategic positions around the room rather than a bright, light-flooding ceiling fixture for a more ambient feel.
Color is another essential sensory consideration. There is no need to limit color selection — it is the tonality that is important. Pastels are great, but so are comforting dark greens or browns. “Lighter tones are calming for walls in the bedroom, but I don’t steer away from color altogether,” Ms. Misra says. “Character, as long as it feels personal, can be grounding.”
Ms. Kronberger suggests that hues should not be too bright or saturated and should be complementary of each other, rather than contrasting and competing; too much contrast is jarring rather than relaxing.
THE IMPACT OF good rest can be life-changing — mentally, physically and spiritually. The bedroom is the most intimate and personal space one inhabits and can do wonders for rejuvenation and recharging when designed thoughtfully.
“Just as a person has the aspects of body, mind and spirit, so, too, does your home,” Ms. Sarasola says. “Its body is its form, its shape. Its intelligence is in the way it functions. Its spirit lies in its vitality, humanity and beauty.
“When these areas are in alignment, a sense of joy can be felt. Our goal is to harmonize the home to nurture and inspire those who dwell inside.”
IN THE GARAGES AND WORKSHOPS OF WESTERN NORTH CAROLINA, SKILLED ARTISANS ARE BREATHING NEW LIFE INTO CLASSIC AUTOMOBILES, TRANSFORMING RUSTED RELICS INTO GLEAMING MASTERPIECES.
AMONG THESE ARTISANS IS JASON LEVESQUE, OWNER OF PASSION PERFORMANCE IN CASHIERS, NC. HIS SHOP IS RENOWNED FOR ITS UNIQUE APPROACH TO VINTAGE CAR RESTORATION AND CUSTOM BUILDS, WHERE PASSION MEETS PRECISION AND HISTORY ROARS BACK TO LIFE ON FOUR WHEELS.
Vintage car restoration is a meticulous art form that requires a unique blend of skills. A restorer must be part mechanic, part detective, and part artist as they blend mechanical expertise with an eye for historical accuracy. Every classic car has a story. Imagine peeling back layers of old paint to reveal original factory colors or decoding worn VIN plates to trace a car’s lineage. Each discovery adds to the rich tapestry of the vehicle’s history.
VINTAGE CAR RESTORATION WITH PASSION PERFORMANCE
CRAFTING PERFECTION
Before their work begins, restorers examine every nook and cranny of a vehicle. From the front bumper to the taillights, each car requires a thorough assessment of its parts. Only then are dented fenders smoothed, engines rebuilt to purr like new, and interiors meticulously recreated. Every step demands attention to detail and a deep respect for the car’s original design and engineering. By making an old car look new, restorers preserve a piece of automotive history for future generations to enjoy.
WHILE MANY ENTHUSIASTS SEEK TO RESTORE CARS TO THEIR ORIGINAL GLORY, OTHERS SEE VINTAGE VEHICLES AS A CANVAS FOR CREATIVITY. THIS IS WHERE CUSTOM BUILDS COME INTO PLAY, BLENDING CLASSIC STYLE WITH MODERN PERFORMANCE. LEVESQUE EXPLAINS, “THE OUTSIDE IS ALL OLD, BUT ALL THE UNDERSIDE IS VERY MODERN,” HIGHLIGHTING THE GROWING TREND OF RESTORED AND MODIFIED RESTOMODS. THESE BUILDS COMBINE THE BEST OF BOTH WORLDS, UNITING THE TIMELESS AESTHETICS OF VINTAGE DESIGN WITH THE PERFORMANCE AND COMFORT OF CONTEMPORARY ENGINEERING.
“Here’s one we’re doing in the shop right now. It’s a ‘69 Dodge Charger, but it’s going down the lines of a restomod. So we’ve installed a Hellcat engine, but it’s painted as the General Lee. Looks identical, but it’s got a 700-horsepower engine,” shares Levesque.
Passion Performance stands out in this vibrant scene as a distinguished auto tuning shop known for its expertise in vintage and highperformance vehicles. As Levesque describes, “It’s a very unique thing that we do here,” catering to a diverse range of vehicles from Ferraris to vintage Corvettes. In addition to restomods, they offer everything from high-performance upgrades to meticulous car servicing. Passion Performance plays a vital role in the local car culture, adding value to the thriving automotive community in western North Carolina.
DRIVING PASSION
What drives the enduring fascination with vintage cars? For many, it’s the chance to relive the glory days of American automotive design. For others, it’s the appreciation of craftsmanship from an era when cars were built to last and style was king. Vintage cars have a personality that many feel is missing from modern vehicles. Each creak and rumble tells a story, and the lack of computer assistance makes driving a more engaging, visceral experience. Plus, let’s face it — nothing turns heads quite like a beautifully restored classic cruising down Main Street.
Western North Carolina has emerged as a hotbed for vintage car restoration and custom builds. The region’s rich automotive history, combined with a strong tradition of craftsmanship, has created the perfect environment for this industry to thrive. There’s a deep pool of talent where mechanics are truly artists whose medium happens to be metal and rubber.
THE REGION IS HOME TO SEVERAL STANDOUT RESTORATION BUSINESSES THAT EXEMPLIFY ITS EXPERTISE, WITH PASSION PERFORMANCE’S UNIQUE OFFERINGS HIGHLIGHTING THE AREA’S DIVERSITY. “THERE’S SUCH AN OBSCURE AMOUNT OF VEHICLES — HIGH-END, EXOTIC, OLD — JUST ALL OVER THE PLACE. CARS THAT WOULDN’T EVEN COME TO THE UNITED STATES.” LEVESQUE SAYS, EMPHASIZING HIS ABILITY TO CATER TO THE NEEDS OF CAR ENTHUSIASTS.
The success of these businesses showcases the depth of expertise and resources available in western North Carolina for car enthusiasts and collectors. But it’s not just about the professionals. The region’s strong car culture creates a supportive community for hobbyists and weekend warriors alike. Automotive enthusiasts can choose from a calendar full of car shows and events or simply enjoy a Sunday drive on a scenic mountain road. The proximity to motorsports hubs, like Charlotte and Mooresville, adds another layer of excitement to the mix.
THE ANNUAL HIGHLANDS MOTORING FESTIVAL FURTHER ILLUSTRATES THIS THRIVING CAR CULTURE. FOR FOUR GLORIOUS DAYS, THE PICTURESQUE TOWN OF HIGHLANDS TRANSFORMS INTO A PARADISE FOR CLASSIC CAR ENTHUSIASTS. CAR LOVERS CAN JOIN CURATED DRIVING TOURS THROUGH THE MOUNTAINS, WHILE VINTAGE CAR OWNERS CAN SHOWCASE THEIR RESTORED VEHICLES IN THE MAIN STREET PARADE OF CLASSIC
CARS. THE FESTIVAL CULMINATES IN TWO SPECTACULAR CAR SHOWS IN KELSEYHUTCHINSON FOUNDERS PARK.
Supporting this vibrant scene is a well-developed network of suppliers and salvage yards specializing in vintage parts. Whether you need a carburetor for a 1957 Chevy or a door handle for a 1965 Mustang, there’s a good chance someone in the area can help you find it.
SHAPING TOMORROW
Of course, keeping classics on the road isn’t without its challenges. As original parts become scarcer, restorers have had to get creative.
“Because you can’t order parts for a ‘61 Mercedes just anywhere,” Levesque quips. Thankfully, modern technology has been a game-changer, with 3D printing allowing shops to recreate rare or obsolete parts with incredible accuracy. It’s like having a time machine for auto parts.
Sadly, we can’t go back in time and take advantage of the low fuel prices of yesteryear, but our longing for cheaper gas has spurred innovation. Many restoration shops now
offer green options, converting classic cars to electric power or implementing more efficient fuel systems. Imagine the double takes when a 1960s muscle car silently glides by, powered by electricity!
As we cruise into the future, the vintage car restoration industry in western North Carolina continues to evolve. While staying true to the spirit of classic automobiles, restorers and custom builders are embracing new technologies and techniques to keep these rolling pieces of history on the road. For car enthusiasts and collectors, western North Carolina offers a unique opportunity to experience classic style with a modern twist. It’s a place where the past and future of automotive culture collide, ensuring the golden age of automobiles continues with each restoration.

Buettner and his colleagues identified a perfect storm of lifestyle, diet, and community engagement that contributes to the astonishing lifespans of blue zone inhabitants.
From their unique cultures to luxurious retreats offering ultimate relaxation and rejuvenation, these blue zones beckon not just with the promise of a longer life, but a richer, better-lived one.
IKARIA, GREECE
Move over, Mykonos. See ya, Santorini. Ikaria is the Greek island to know. In the east of the Aegean, Ikaria is known as the “island of longevity.” One in three of its residents live to their 90s, and rates of dementia, depression, and heart disease are very low. Like their neighboring Greek islanders, Ikarians enjoy a healthy Mediterranean diet, but there’s more to their longevity. The island’s inland communities live closely knit — a tradition born from centuries of banding together against invading forces.
Ikaria has a handful of hotels off Greece’s main tourist trail. Forget mega-resorts, we’re talking low-key, authentic Greece. Toxotis Villas is spread over four acres and boasts seven villas crafted in local stone with private saltwater pools. While floating, see if you can spot the islands of Chios, Samos, and Mykonos in the distance.
