Moroccan Lamb Tagine Using Leggo’s Tomato Puree
Instructions 1) Heat oil in a large saucepan add paprika, cumin, coriander and cinnamon. Cook over a low heat for 1-2 minutes or until fragrant. Add Edgell Onions, garlic and diced lamb and cook for 4-5 minutes or until is meat browned. 2) Stir in stock, Leggo’s Tomato Puree and dates, simmer covered for 1 hour, stirring occasionally. 3) Add frozen Edgell Carrot and Beans and simmer uncovered for a further 20 minutes or until lamb is tender. Serve in large bowls and garnish with coriander.

Chilli Mussels Using Leggo’s Tomato Paste & Crushed Tomatoes
Instructions 1) Heat oil in a deep saucepan, add onion and cook until soft. Add garlic and chillies and cook for a further 2 minutes. 2) Add Leggo’s Tomato Paste and Crushed Tomatoes, cook for 2 minutes before adding wine and stock. Simmer for 10 minutes to intensify flavours and reduce liquid. 3) Add mussels, cover and simmer for 7 minutes. Turn heat off and allow mussels to remain covered in pot for 15 minutes to continue cooking. (Discard any unopened mussels). 4) Before serving, mix through half of the basil and parsley. Serve mussels in deep bowls sprinkled with remaining basil and parsley.

Our commitment to authentic and simple Italian food dates back to our founder Henry Madren Leggo. In 1882 at the tender age of 13, Henry took a job with a local grocer in the Victorian gold mining town of Bendigo. Outside work, he also sold his mother’s own bottled tomato sauce and pickles direct to the hungry miners in their camps. With an appetite for hard work, 6 years later Henry bought the grocery business and began producing vinegar, pickles, sauces, cordials and other grocery goods based on his mother’s traditional recipes. Henry’s quest to source only the freshest and best quality ingredients saw Leggo’s awarded first, second and third prizes and Champion gold medals for his Tomato sauces at the Bendigo Show in 1925 and 1926. This pursuit for excellence underpins our approach today and is the reason why Leggo’s has set the standard by which tomato produce is still judged. Our Tomato Paste is at the heart of everything we do and is the source of our most admired recipes. Today the majority of our products are proudly made in our Echuca factory by a close-knit team of over 100 dedicated and highly-trained staff.
