AROUND TOWN There is no doubt that spending a few hours of your day giving back to the community is a great feeling. But, perhaps surprisingly, many of these community kitchens don’t need you on Thanksgiving. They already have boosted their staff and rely on dedicated groups that help year after year. Instead, the kitchens desperately need volunteers every single day. These organizations need help spreading out that spirit of service — offering hot meals to the homeless and the working poor — year-round. Food insecurity is a huge problem in the U.S., and is on the rise in the metro area. One in seven Kansas City metro residents don’t have enough to eat, according to the Greater Kansas City Food Policy Coalition (FPC). Although Missouri has the fifth-highest rate of child food insecurity in the U.S., 20 percent of Kansas children under the age of five live in food-insecure households. style insider Have you ever experienced something you thought you’d only read about?

I can definitely say the last 10 days took me for a magic carpet ride of unexplainable euphoria. The house lights dimmed, the music thumped, the stage lights blazed, and I giddy with excitement as the first girl walked out at Givenchy’s show at Paris Fashion Week. Ten minutes in, I couldn’t figure out whether I was nervous or my arms were exhausted from holding up 12 pounds of camera equipment. I’d just been five feet from Rosie Huntington-Whiteley, Kendall, and Cara Delevingne — all the ladies who adorn the top fashion magazines. Once the show ended, another surge of adrenaline left me wanting more. To quote Jay-Z, “On to the next one!” Three weeks prior, I had found out my best girl friend of 10 years, Desirae Cherie, style director at Mane Addicts, who lives in LA and works under celebrity hairstylist Jen Atkin, was given the opportunity to travel to Paris for fashion week at the end of September to cover the shows for the three blogs they run. Green with envy, I texted her and she replied, “Come with me!” With the weather change and little tinge of hell yes that makes me jump at things like this, I hopped on the Internet and booked the flight. Who’s up for a game of sardines? Our cramped hotel room featured two twin beds pushed together and a tiny bathroom. But it’s all in the name of fashion — in this case, Paris Fashion Week SS15. That was our constant reminder — well, that, and an extreme case of adrenaline that got us through the 10-hour days on our feet. Not only did I partner with Contributing Fashion Editor Erica Pelosini from Harper’s Bazaar for a style.com feature, but Desirae and I worked two to three shows a day, documenting street style, back stage, and the runway. Then we’d run back to the hotel, upload, edit, and email all the images so the blogs could immediately post them in the U.S. Ever wonder how the morning paper you’re reading or the magazines blog site gets its content? This is it, people. They were long workdays, but we did it for the love of fashion and thrill of it all.

What started as a not-so-simple quest to provide a first-grader with birthday treats that he could safely eat — and that his classmates would actually want to eat — has turned into a story of passion and reinvention for Angela Resch, owner of Mama Resch’s – A Gluten-Free Bakery. Five years ago, Resch’s oldest son, who was in first grade at the time, started having health issues related to numerous foods with a variety of symptoms. After much research and persistence, doctors determined Resch’s son has an extreme intolerance to gluten, the protein found in wheat, as well as about 75 other foods. Because of her son’s other intolerances and allergies, Resch cannot buy commercial gluten-free baked goods or convenience foods.

Out of desperation, Resch, who by this time had left the corporate world to stay home and care for her three children, started doing extensive research in an effort to find ingredients her son could tolerate. She wanted him to be able to enjoy the same foods other kids were eating so she began developing her own f lour blends and recipes, learning by trial and error, and was pleased with her results. “As it turned out, my blends were really good, unlike many of the store-bought brands, and healthier,” Resch says. After seeing success with cupcakes and cookies, she began asking her kids and their friends what they missed most. “They were my focus group,” she says, proudly. During this journey, Resch says she discovered an entire community that was struggling with the same issues. As she shared her tasty creations with family and friends, she started getting requests to bake for others. Soon, she was getting so many orders that she could not continue to work out of her home. This led to the birth of Mama Resch’s – A Gluten-Free Bakery. Mama Resch’s, which opened for business last December, specializes in hand-crafted small-batch breads and gourmet sweets baked from scratch daily. The breads, buns, pizza

crust, cookies, cupcakes, baked donuts, cakes, snacks and specialty items are made from all-natural ingredients that do not include gluten, wheat, corn, soy, casein, dairy, preservatives, peanuts, tree nuts, artificial colors, and artificial f lavors. Although not all items are baked in-store every day, the menu is always available through pre-order for pick-up 48 hours later with the exception of cakes, which have a four- to five-day lead time, Resch says. Vegan options are also available. One of the most unique attributes of the bakery is that “it’s not only a gluten-free facility,” she explains. “Mama Resch’s is a dedicated gluten-, dairy-, soy-, corn-, and nut-free facility, it is allergen-friendly. It’s really about being inclusive of the allergen community.”

Resch has made it her mission to serve the gluten-free and allergen community by providing the best-tasting, most high-quality products. “Being able to create the convenience I didn’t have is also important to me,” she says. She also aims to educate and bring awareness to the greater community. Resch is passionate about making sure no child or adult ever feels left out by not having the same foods as everyone else. She aspires to work with schools, daycares, hospitals, and corporations to introduce gluten-free and allergen-friendly foods to their menus.

The holiday season tends to bring out the best in people, and that’s no exception for The French Maker Vintage Boutique’s owner Kathy Allen. This year marks the second annual Harvester’s Food Drive that Allen will be hosting out of her Overland Park store, and she couldn’t be more thrilled to share her sense of giving with the community and her customers. “Running the food drive means that I can do my little part, with the help of others, to feed people in our community who don’t have enough to eat,” Allen says. “It makes me feel like I have helped, which is always a good feeling.”

The food drive, to take place from Dec. 12 to 13, will allow customers to bring in at least three items for the Kansas City community food network, Harvesters, to receive 20 percent off any one regular-priced item in the store. Acceptable items to bring in for the drive include: canned vegetables, fruit and meat, boxed meals, peanut butter, canned soup, and cereal, as well as various household items like soap, deodorant, and toilet paper. Last year’s drive was a thriving success, with customers bringing in more than the three items. Allen is hoping this year’s drive will bring in even more donators and customers. “Participation in the food drive says our customers are aware of the problem of hunger in our community, and they are willing to be generous and help out,” Allen says. “I’m looking forward to doing this on an annual basis.” Allen’s holiday season doesn’t end with the food drive, however. She also will be stocking her shelves with an assortment of new and vintage Thanksgiving and Christmas items. Last year, some of her favorite Christmas items included a plethora of 1950s figurines, she says. Late winter is one of Allen’s favorite times of the year.


“I love the holiday season because there’s excitement in the air and energy all about,” she explains. “People are busy getting ready for the season, but seem to be happy about that kind of busy. The decorations are always lovely to look at as well.” Since the store’s inception in 2012, Allen has used her keen sense of style to pick out new and vintage items that either have a French f lair, or are authentic pieces from France. Allen often plans trips to France to explore and purchase these items, and will be traveling to France in January. “I don’t go to France with something particular in mind,” Allen says. “I simply go, and if I find something I like, I will buy it.”

Cooking: From Must-Do to Love-To By Andrea Darr

What to make for dinner has plagued many time-crunched individuals in this busy, modern era, but preparing a meal for yourself, family, and friends shouldn’t have to be looked upon as simply another task. It can be an enjoyable, communal event in which everyone works together to bring nourishment to the body and soul. Cooking a meal with others is a great way to not only cut down on your own work, but converse and learn from others. Cooking clubs provide an opportunity to educate yourself and make new friends. Several cooking clubs have already been organized. Which one you join — or start — depends on what interests you. Do you want to save money? Learn new cuisines or techniques? Or delve into a specialty? Amy Bates, organizer of the Overland Park Gluten-Free and Paleo Lifestyle, was waiting for something like it to start up when she realized she would have to be the one to put out the invitation. “We had quite a few people join the group right away, as they were like me, waiting for a group to start,” she says. Now with 129 members, she alternates teaching a Paleo 101 class for beginners and organizing a potluck meeting using

a public Google document for members to post what they are bringing and link to the recipe. The group typically meets at Optimal Health Center in Overland Park, where Bates is a chiropractor and internal health specialist, but it also has participated in a demo at a paleo catering company, picnicked in the park, and barbecued at Bates’ house. “I am hoping to plan a ‘shop and chop’ day, when we get together and prep Crockpot meals,” she adds. You typically can find cooking clubs through your work, school, and church circles. Another resource through which to meet new people is MeetUp, where Bates and numerous other groups advertise themselves. If your cooking goal is to simply get a meal on the table during a busy week, your dinnertime solution might be found at


a meal-prep store such as Dream Dinners (dreamdinners.com), located at 119th and Metcalf in Overland Park, where recipe ingredients are chopped and ready for you to assemble and cook at home or freeze. Jana and Dan Day opened the national franchise nine years ago to help people of all ages, from moms to empty-nesters, prepare healthful meals to serve at home. “We’re not here just to help you solve what’s for dinner tonight, but what’s for dinner next week?” Jana says. Most people make 6 to 12 meals at a time in about 45 to 75 minutes. You can sign up with a group of girlfriends and take your time or whip up everything yourself and get on home.

Jana calls it “clean eating” because of the fresh ingredients and limited preservatives. It also keeps something else clean: your kitchen. “Our whole goal is to serve and clean up. It’s one less thing you have to worry about,” she says.

That homemade quality helps those in charge of dinner feel as though they’re doing something bigger for their loved ones other than just feeding them. “It’s revolutionized my family,” she says. “We linger around the table now, talking about our days and making precious memories.”

Head lice. Did you scratch your head? The mere thought of the harmless parasite tends to send most people into panic mode. Cherie Parker and Susan Truluck of Olathe-based Heartland Healthy Heads don’t want you scratching your head at the thought of head lice. Their mission is to decrease the stigma of head lice to the public through education. The education they provide is priceless. They want to help everyone get past head lice safely. “We don’t want to instill panic in people,” Truluck says. “We joke around that our 24-hour hotline is there to talk the parents off the ledge at 4 in the morning.” Lice have been lining parents along the ledge for a long time — since before the black plague. And they are not going away anytime soon. There is a growing concern that the bugs are becoming genetically resistant to the chemicals in products sold over the counter and prescriptions.

What are these blood-sucking parasites? Parker and Truluck want to make sure you know the facts of head lice. Lice are not a health hazard or a sign of poor hygiene. They do not spread disease. They only feed on the human scalp. Lice cannot jump or f ly. They typically are spread by hair-to-hair contact — a hug or children playing closely together. Clothing or a couch can spread lice, too, but it’s rare. Lice cannot live off the human head for more than 24 hours. That is something to keep in mind when you clean your home. Even though the bugs are not harmful to your health, you still need to get rid of them. Some of the worst cases Parker and Truluck have seen are from middle-school girls, who are at an age when they start doing their own hair. Because moms are not brushing and styling their daughters’ hair anymore, lice tends to go unnoticed. By the time the girl notices the itching, she has had lice for two weeks or longer. “It’s our mission to decrease the stigma,” Parker says. “Check often and treat early. Be aware of your child’s head whenever they change social circles.” It is best to check for lice once a week, as this can keep heavy infestations from happening. The only 100-percent effective way to remove lice is to shave the head, but it shouldn’t have to be this drastic. Here’s to Your Health: Living With Diabetes By Deborah Eakin Osborne

With diabetes being the leading cause of blindness and kidney failure as well as a critical risk factor for heart disease, stroke, and foot or leg amputations, knowing how to manage and or prevent this disease goes a long way toward increasing the odds of a healthier life for ourselves and our children. According to the Centers for Disease Control and Prevention (CDC), nearly 10 percent of the American population over the age of 20 has some form of diabetes. The two most common forms are type 1, previously called juvenile-onset or insulin-dependent diabetes, and type 2, previously called adult-onset or noninsulin-dependent diabetes.

Between 5 percent and 10 percent of people with diabetes have type 1, in which the pancreas produces little or no insulin. Without insulin, cells cannot absorb sugar (glucose), which is needed to produce energy. For this reason, type 1 diabetics will always need to take insulin, either through injections or through an insulin pump. The remaining 90 percent to 95 percent of those with diabetes have type 2, in which the pancreas is either unable to use insulin correctly (insulin insufficiency) or does not produce enough insulin to maintain a normal blood glucose level (insulin deficiency). Type 2 diabetes most commonly appears during adulthood, although the CDC reports an increasing number of

children and adolescents have been diagnosed over the past 20 years. Many people with type 2 diabetes are able to control their blood glucose levels with healthy eating, staying active, and losing excess weight. For others, a healthy diet and exercise may not be enough. In such cases, oral or injectable medications may be needed to lower blood sugar level to a satisfactory range. Many people with diabetes also need to take medications to control their blood pressure and their cholesterol. Reducing tobacco use is another crucial component of diabetes management.


The American Diabetes Association (ADA) suggests that eating well with diabetes means simply applying the basic principles of healthful eating for all Americans. Need ideas on how to get started? Try some of these: • Divide and conquer. Fill half your plate with vegetables, a quarter with starch or grain, and the remaining quarter with a lean protein source. Include a serving of fruit and low-fat milk or yogurt with most of your meals, and choose whole grains instead of refined varieties. • Less is more. Practice portion control. A smaller plate can make smaller servings look bigger. • Get the skinny on fats. Research shows that eating more monounsaturated and polyunsaturated sources is more important than eating less total fat. Limit unhealthful saturated fats (including trans fats), which is known to increase insulin resistance. • Find a new, guilt-free sweet spot. Swap the added sugars found in regular sodas, fruit drinks, sports beverages,

pastries, and other sweet treats for a small square of dark chocolate daily. • Eat in instead of dining out. Eating healthful meals at home more often than dining in restaurants increases your chances for success. When you do venture out, choose your main dish from sides, soups, salads, or small appetizers. Another alternative is to split and share a full-size entrée, or take half home to enjoy another day. Making the effort Finding motivation and then making time for regular exercise can be tough. But the payoff is definitely worth it since exercise is one of the most powerful antidotes for insulin resistance. In fact, regular exercise coupled with healthful eating can quickly improve insulin sensitivity. This change produces additional health benefits such as lower blood-glucose levels, lower blood pressure, and satisfactory lipid levels. Keep things interesting by trying a variety of activities. And don’t feel as though you need an elaborate plan for your efforts to be effective; just 30 minutes of walking most

days is not only recommended, but one of the easiest activities to incorporate into your daily routine. When a healthy diet and exercise are not enough to lower your blood sugar to satisfactory levels, you may need an oral or injectable medication. Thanks to the advances in medicine, medications specifically for type 2 diabetes target insulin resistance or post-meal high blood glucose. Both the ADA and the American Association of Clinical Endocrinologists suggest that these medications are usually more appropriate for patients at the time of diagnosis rather than dietary modifications alone to bring glucose levels under control. Most importantly, the associations recommend that you partner with your health care provider to determine your best course of action in managing your type 2 diabetes, whether through diet and exercise alone, or with appropriate medications and blood glucose testing.

There is no “right answer” for how to do it all. Most of us achieve a balance and accomplish what we need to through trial and error and constant re-prioritizing. Because I get my best ideas from sharing notes with other people, I wanted to know some of my friends’ secrets of success. And now I’m sharing with you! I chatted with several savvy, successful working moms — these ladies have challenging careers, active kids, and super-hectic lives — and they do it in style. Note to readers: I believe that working inside the home as a mom and running a household is challenging and important, but for this article I was specifically interested in how women strike a balance between a career outside the home along with being a mom. (Let’s all support each other, ladies!) So, here is some insider

Accept help Almost everyone I spoke with mentioned that accepting help from others is a must, whether that be carpools with friends to get kids where they need to be or relying on help from family if you’re lucky enough to have in-town relatives.

Housekeeping help Some of the moms I talked with mentioned that, if you can afford it, hiring a cleaning service can be helpful. “One of the best things we did is hire a cleaning lady,” says Kristen Worden, a pharmaceutical research project data manager. “So much of our weekend was spent cleaning and not hanging out with family. I know that is not always an option for all, but we made it work.”

Childcare There are many childcare options available. Consider what makes the most sense for your family’s schedule and your children’s ages. “Hiring a nanny versus doing after-school care has been a lifesaver,” says Cheryl Skram, a marketing executive. “It’s only a few extra dollars a day but has cut down on my stress tremendously, eliminating


the time it takes to race out of work and pick kids up from two different schools. It also allows the kids to get home, unwind, do homework, and relax.”

The term “sandwich generation” is real enough that, in 2006, Merriam Webster officially added it to the dictionary. Carol Abaya, a leading expert and publisher, of The Sandwich Generation magazine, also coined a “club sandwich,” for those in their 50s or 60s sandwiched between aging parents, adult children, and grandchildren; or those in their 30s and 40s with young children, aging parents, and grandparents. Kansas is ranked as the second best wind resource across the nation, according to the AWEA, the wind power is capable of meeting more than 90 times the state’s current electricity needs.

Wind has become a renewable resource that so many different energy companies are putting research and time into developing — especially Kansas. According to the American Wind Energy Association (AWEA), Kansas has the second highest wind potential in the U.S.

This wind power is spreading over the state line and into Missouri. Kansas City Power & Light is making leaps towards harnessing this wind power by purchasing 400 megawatts of power from two new wind-turbine projects. One of these projects will be built in Holt County, Mo., and the other in Coffey County, Kan.

Kansas has 1,729 wind turbines that are putting out astounding amounts of energy. Because

Physical and mental well-being is not usually what’s on your mind when you decide to have sex, but perhaps it should be. The perks of steaming up the sheets extend well beyond the bedroom: “Having sex regularly can do more than make you feel closer to your partner — it can actually make you physically healthier,” says Hilda Hutcherson, MD, a clinical professor of obstetrics and gynecology at Columbia University and author of Pleasure: A Woman’s Guide to Getting the Sex You Want, Need, and Deserve. According to Women’s Health Magazine and WebMD, here are 10 surprising perks women could reap from a regular roll in the hay.

1. Less stress. Sex can boost your self-esteem, happiness, en-

The same endorphins that help you de-stress also can prepare you for bed. “After orgasm, the hormone prolactin is released, which is responsible for the feelings of relaxation and sleepiness” after sex, says Sheenie Ambardar, MD, a psychiatrist in West Hollywood, Calif. But beware: Highly active sex can have the opposite effect, leaving you feeling more energized than sleepy. 3. Minimized pain. The Headache Clinic at Southern Illinois University recently found that half of female migraine sufferers reported headache relief after climaxing. “The endorphins that are released during an orgasm closely resemble morphine, and they effectively relieve pain,” says Cindy M. Meston, PhD, director of


the Sexual Psychophysiology Laboratory at the University of Texas at Austin. Additionally, Barry R. Komisaruk, PhD, a professor at Rutgers, says that while “orgasm can block pain” by releasing a hormone that helps raise your pain threshold, stimulation without orgasm and masturbation can accomplish pain relief, too. “Vaginal stimulation can block chronic back and leg pain, and many women have told us that genital self-stimulation can reduce menstrual cramps and arthritic pain.”

4. Fewer colds. Researchers at Wilkes University in Pennsylvania found that college students who had sex once or twice a week had higher levels of an antibody called immunoblobulin A (IgA), compared to students who had sex less often. Conclusion: Sexually active people take fewer sick days.

5. Boosted libido. “Having sex will make sex better and will improve your libido,” says Lauren Streicher, MD, assistant clinical professor of obstetrics and gynecology at Northwestern University’s Feinberg School of Medicine in Chicago. For women, having sex increases vaginal lubrication, elasticity, and blood flow, she says, all of which makes it feel better and help you crave more of it.

Pinzone, MD, CEO, and medical director of Santa Monica, Calif.-based Amai Wellness, says there is a good amount of research that suggests a link between sex and lower blood pressure. “One landmark study,” he says, “found that sexual intercourse specifically (not masturbation) lowered systolic blood pressure,” which is the first number on your bloodpressure test.

9. A youthful glow. Regular sex promotes the release of testosterone and estrogen, in addition to other hormones, which can keep the body looking young and promote desirable attributes like soft skin and shiny hair. The Royal Edinburgh Hospital in Scotland conducted an interesting study with this idea in mind: They had a panel of judges view participants through a one-way mirror and guess their ages. The participants who had sex frequently — four times a week, on average — were uniformly perceived to be seven to 12 years younger than their actual ages.

It won’t replace your daily routine, but it burns about five calories per minute, which is four more calories per minute than you burn watching TV. Make this a day ahead (minus the whipped cream) and refrigerate overnight. Add fresh whipped cream on top just before serving. Don’t be tempted to add more sugar to the whipped cream. The caramel is very sweet, so the cream should be not as sweet.

Preheat the oven to 350°F. Combine the graham cracker crumbs and brown sugar. Add the melted butter and stir until the crumbs are moistened. Press the crumbs evenly into a 9-inch glass or metal pie plate. Bake for about 10 minutes, just until lightly browned. Let the crust cool. Increase the oven temperature to 425°.

Ingredients 1-1/4 c ups graham cracker crumbs (about 5 ounces) 4 tablespoons unsalted butter, melted 2 tablespoons light brown sugar 2 (14- o unce) cans of sweetened condensed milk Flaky sea salt, such as Maldon 2 cups of heavy whipping cream 2 tablespoons of confectioners’ sugar

Pour the condensed milk into a 9-by-13inch glass baking dish and sprinkle with a 1/2 teaspoon of flaky sea salt. Cover the dish with foil (don’t forget this or it will be ruined) and place the dish in a larger roasting pan. Add enough hot water to the roasting pan to reach one-third of the way up the side of the baking dish. Bake, lifting the foil to stir 2 or 3 times, until the condensed milk is golden and thickened, about 2 hours; add more water to the

roasting pan as necessary. (Don’t forget to check the water level several times because it will decrease. I usually have to add 1 or 2 times.) The consistency of the caramel should be thick and creamy. Don’t worry if it is lumpy; it will smooth out as it chills. Scrape the caramel filling into the pie crust, smoothing the top. Spray a sheet of plastic wrap with vegetable oil spray and cover the pie. Refrigerate until the filling is chilled and set, at least 4 hours. In a bowl, using an electric mixer, beat the cream with the confectioners’ sugar until firm. Remove the plastic. Mound the whipped cream on top of the pie and sprinkle with flaky sea salt. Cut into wedges and serve.
