She’s the definition of a great mom. So give her the definition of great care. Should the time come when Mom requires a higher level of care, turn to Tallgrass Creek in Overland Park for compassionate assisted living and memory care. We treat your mom like she’s our mom. Call 913-752-9551 to request a brochure. Your loved one doesn’t have to be a resident of Tallgrass Creek to receive care here.

mom (mŏm) noun 1. Baker of world’s best cookies. 2. Healer of boo-boos. 3. Giver of unconditional love.

What happens when Mom needs extra care? How to find the right alzheimer’s or dementia care for your senior parent. She cared for you with patience and love, and you want to return her gift. But what happens if Mom requires a higher level of care? Where should you turn? Here are the most important questions to ask when weighing your options for memory care, courtesy of the senior health specialists at Tallgrass Creek retirement community in Overland Park.

How much attention will Mom receive?

You don’t want caregivers who simply “check in” now and then. You want a skilled team of experts who are here 24 hours a day, 7 days a week. At Tallgrass Creek, caregivers take the time to get to know each guest on a personal level. Because of this close relationship, they can coordinate Mom’s care, address her unique needs,

and celebrate her successes —no matter how small.

Will she retain her independence?

The right memory care will enhance Mom’s sense of independence, not diminish it. Ask this important question when considering the options: “How specifically will Mom stay engaged and independent here?” For example, Tallgrass Creek offers a wide range of programming and activities to keep your loved one active and involved. And because caregivers develop a personal interest in each guest, they know and respect Mom’s interests, talents, and preferences.

Will she receive the best, most experienced care?

It’s essential to find a memory care option that specializes in senior care and backs up their promises

with solid experience. As part of the Erickson Living® family of continuing care retirement communities, Tallgrass Creek is backed by 30-plus years of expertise in the field of senior health. The Overland Park community employs fulltime doctors and a team of health care professionals who understand the unique needs of older adults.

Is this a good fit for Mom?

When it comes to Mom, “one size fits all” simply won’t do. She’s 100% unique, and deserves a team who will treat her that way. Tallgrass Creek recognizes that each guest is an exceptional individual with their own interests, backgrounds, and abilities. That’s why the dedicated team develops a customized and holistic care plan to treat Mom as a whole person, not just a patient.

Overland Park EricksonLiving.com

The philosophy of care at Tallgrass Creek is simple: “We treat your mom like we would treat our mom.” To learn more about memory care in Overland Park, call 913-752-9551 for your FREE Tallgrass Creek brochure, or schedule a tour. Your loved one doesn’t have to be a current resident to receive care here.

Are you taking care of YOU? All caregivers experience moments of stress, sadness, and anxiety. How can you keep these feelings from affecting your own health and well-being? Follow these 6 tips: 1. Take time for you. Schedule some time to read, walk, or watch a favorite show. 2. Try laughter therapy. Watch a comedy or call a friend who makes you laugh. 3. Eat, sleep, exercise. Don’t neglect your own health and fitness. 4. Join a support group. Share your feelings with people who understand. 5. Ask for help. It’s okay to lean on family, friends, and professional caregivers. 6. Know your options today, so you won’t have to make snap decisions tomorrow.

craft-beer festivals, here’s your chance to taste some rare beers and traditional favorites from New Belgium. “Clips is touring with a new elixir that will only be served to guests at Clips,” says New Belgium National Special Events Manager Christie Catania. But come early, she warns, as there is just one keg. All of the proceeds from beer sales ($1.25 for a 3-ounce pour, $5 for 12 ounces) will benefit BikeWalk KC. The traveling Clips Beer & Film Tour also features 15 fan-made short films, local food vendors, games, and more.

CULTIVATE FESTIVAL KC July 18 • Penn Valley Park • How much: No cost chipotlecultivate.com Why go: Free food, free tunes. Although the Chipotle Cultivate

Festival is in its fifth year, this is its first time in KC. This festival is all about sustainable food practices. For example, learn about the reality of processed meats or find out how to make the restaurant’s killer guacamole. In addition to food and music (from Portugal. The Man, with more bands to be announced), the festival will offer cooking demonstrations from both local and celebrity chefs, and a signature, exclusive farmhouse ale.

IN FOCUS her job. But the people walking in just to say hi shows that she can make you feel good, too. Konyalioglu is the owner of Fatma’s Alterations, a small shop nestled in downtown Overland Park, Kansas. She has been altering clothes in the same location for 20 years. Her presence is well-known in Kansas City. In fact, you’ve probably seen her work on Sporting KC players, local news anchors, or even on the bride at the last wedding you attended. And that perfectly fit blouse on the woman at the grocery store? There’s a chance Konyalioglu worked on it. “If you do a good job, they will find you. My work is my advertisement,” Konyalioglu says. “I take pride in what I do. Like I’m going to wear it myself.” Ready-to-wear clothing is not always ready to wear. Many stores label clothing based off their own sizing preferences. Online shopping may not result in a perfect fit. Straps break. Buttons pop off. The secret to that good fit is not a return policy — it’s a good seamstress. And if there’s one group of people that knows how important alterations are, it’s brides. Fatma Konyalioglu, of Fatma’s Alterations, has fixed clothing for Sporting KC players and local news anchors.

FATMA’S ALTERATIONS: KANSAS CITY-MADE BY JULIE BURTON Photos / Samantha Levi

She’s been called “the dress doctor that makes miracles happen” and “the best in the Midwest.” And the compliments don’t stop there.

14

| SIMPLYKCMAG.COM

Fatma Konyalioglu’s job is to make sure you look good. Her desk, scattered with pictures and thank-you notes, shows just how talented she is at

A BRIDE’S SECRET For many, after the dress is chosen, alterations must follow. Handing someone your wedding gown to take apart and put back together again takes a great deal of trust. One local bride discovered that not every seamstress would do certain requests. Konyalioglu remembers the distraught bride bringing in her wedding gown to be altered. The problem: Other seamstresses refused to work on the dress due to its intricate, scalloped lace at the bottom. Konyalioglu altered it without hesitation. “I told her, ‘Sure. I

can do that. There is more work involved but this is what I do. I will alter the dress. No problem,’” Konyalioglu recalls. The happy bride walked out of Fatma’s Alterations later that year with her altered wedding gown with the scalloped lace, and walked down the aisle with the trust of Konyalioglu sweeping along behind her.

And in return, her friends are well-dressed. Fatma’s Alterations is located at 7305 W. 80th St. in Overland Park, Kansas. She can be reached at 913.341.1855. Fatma’s Alterations is also on Facebook.

“You bring me a problem with your clothes and I will fix it,” she explains. “I won’t turn down anyone. When I sit at the sewing machine, I can’t explain it — my mind just knows what to do. I put your clothes back together again.”

“ M y work is my advertisement. I take pride in what I do. Like I’m going to wear it myself.” — Fatma Konyalioglu A DREAM OF HER OWN Growing up in Turkey, Konyalioglu learned the art of reconstructing clothes from her mother, also a seamstress. When Konyalioglu arrived in the U.S. with her husband in 1971, she was pregnant, jobless, and did not speak English. But she dreamed of starting her own business. Soon, her humble beginning turned into a successful business career, thanks to her regular clients. “I don’t consider anyone a client. I consider them a friend. They are my family,” Konyalioglu remarks. Her “friends” have been supporting her for more than 30 years. They have seen her go through hard times throughout the years, both personally and professionally. They have seen her go through happy times as well. Their support overwhelms Konyalioglu to the point of tears. Those friendships are paramount to thriving in the smallbusiness world, and Konyalioglu nurtures them all. You cheer her on and she will cheer you on. Konyalioglu will tell you she loves coming into work at Fatma’s Alterations every day. She loves working with the technology that has changed very little since she began learning how to sew in Turkey.

And, she is happy to have realized that dreams really do come true. May 7, 2015, marks Fatma’s Alterations’ 20th anniversary. Still, Konyalioglu reserves her toast for her clients. “I would like for my friends to know that I have been here for 20 years because of their loyalty,” she shares. “I cannot thank you enough.” PHOTOS By AngelA C. Debbie Jansen (at right) and her daughter, Taylor, opened Mango Moon earlier this year.

THE GIFT OF GIFT-GIVING

Debbie Jansen spends her days putting thought into gift-giving.

You can see the Southern trends sprinkled throughout Mango Moon. About a quarter of the selection is from local stores in Mississippi and the South. Jansen likes looking for products from companies that have a stories behind them. Products include Jennifer Thames original handmade jewelry; Hydra’s Chill Pill, a moisturizing bath bomb; and the World’s Softest Socks.

Life’s biggest celebrations usually come bearing gifts. Mango Moon gifts offer just that — gifts for every celebration. But it gets better — Mango Moon brings the “Where did you find this?!” factor that so many people search for.

“It’s so funny. In Kansas City, the people here love socks,” Taylor says. “But I understand why. It is much cooler here than down south. We can’t keep The World’s Softest Socks on our shelves long.”

Jansen opened Mango Moon gifts in the Rosana Square shopping center in Overland Park earlier this year, bringing with her the hot trends from the South.

Jansen just knew that socks would be popular. Sometimes, popular items can be discovered by trial and error, but, for the most part, it’s old-fashioned research and hard work, she says.

Jansen and her daughter, Taylor, moved back to the Overland Park area after living in Jackson, Mississippi, where Jansen held a job as the retail buyer and director for a local hospital. “It was my responsibility to buy for a gift shop and two large medical spas. I was also fortunate enough to open a cancer boutique to help the needs of cancer patients in the surrounding area.”

“It seems like I’m constantly reading retail or industry magazines,” she shares. “I attend the Atlanta Mart & New York Gift Show each year. They both display the current trending merchandise for the upcoming seasons. I also consider the local demographic and what specific items my customers would like to see in the store. We’re always watching the buying habits of others.”

After living in Mississippi for three years, Jansen moved back to assist her mother in caring for her father who is living with mid-

And, once an item is gone — it’s gone. But if there is a certain item that can’t stay on shelves, Jansen says she will try to keep it around longer. Mango Moon is tailored to what people want but in small quantities of select items. “This store changes week by week,” she says. “We want new and fresh items because gifts should be one-of-a kind.”

“ T his store changes week by week. We want new and fresh items because gifts should be one-of-a kind.” — Debbie Jansen Mango Moon also makes custom gift baskets, which are great presents for practically anyone. The shopping and custom wrapping is done within your price range. And, Mango Moon will even make basket deliveries to businesses or homes, if needed. “People come in here and say, ‘Oh, I need you to make me a basket of things for a mommy-to-be,’” Taylor explains. “Or, one time, we had a realtor come in and ask for a bath and spa basket under a certain price point. We will pull some fun items and make a basket of gifts. It works out well for people who don’t have time to shop or need something for someone who is hard to shop for.” And with that kind of easy shopping, Mango Moon makes gift-giv-

KC Gardens: Sustainability on the Rise Spring is a seasonal favorite for many reasons. It comes with pretty colors and eyecatching plants, allows us to get back out into nature, and brings pleasant weather. But with its upgrade in temperatures also come upgrades in the yard. that she often would not recognize them. Downsizing gave her the opportunity to “start fresh” and get back to the boutiquestyle personal service she favors.

BY DEBORAH EAKIN OSBORNE

Not only did Black’s top employees and loyal, longtime clients make the move with her, but she also rediscovered her passion. “I am there every day and love being at work again,” she says. “I enjoy seeing everyone and performing all of the services and the day-to-day operations.”

Laurie Black, owner of You… Only Better, understands that sometimes you just need to get back to the basics. After experiencing rapid growth several years ago in her previous location, Black says she “completely downsized and kind of started over” in August, last year. “Growing so big so quickly changed the concept and the feel of my business,” she explains. “I pride myself on giving everyone special attention and knowing and retaining my clients, most of whom have been coming for 10 to 15 years — several as many as 20 years.” Yet, she confesses, there were days before the move when she saw so many clients each day 32

| SIMPLYKCMAG.COM

Human chorionic gonadotropin, or HCG (a weight-loss solution), endermologie (cellulite reduction therapy), and colonic hydrotherapy (colon cleansing) are the mainstays available at You… Only Better. Each of these services — whether completed individually or in combination — brings great results that “make people feel terrific,” she says. She also offers packages combining endermologie, the Sudatonic Slimming System (body wraps for weight loss), colonic hydrotherapy, ultrasonic cavitation (nonsurgical fat-removal procedure), and now VelaShape, which helps with skin tightening, body sculpting, and inch loss.

You… Only Better offers several types of weight-loss treatments. The clinic was one of the first in the country to offer HCG, and continues to be one of the biggest HCG providers around. Black believes the success of her clients and the clinic in those early days inf luenced the rapid expansion of HCG use in the metro. Several of her clients swear it works better for them than anything else they’ve tried. While taking HCG, it’s not uncommon for women to lose as much as 20 to 25 pounds a month. Men report losing 30 to 40 pounds a month — all without hunger or cravings.

“ I pride myself on giving everyone special attention and knowing and retaining my clients, most of whom have been coming for 10 to 15 years — several as many as 20 years.” — Laurie Black Another weight-loss solution is the Sudatonic Far Infrared Sauna treatments, which use patented lotions that form a barrier over your skin, preventing your body from sweating. This causes you to release fatty acids and burn fat and energy in order to release the sweat. A single sauna session will burn up to 1,800 calories, leaving you feeling invigorated, energized, and tighter everywhere. People are losing weight, finding help with their digestion and immune system, as well as relief from stress. For people who are significantly overweight and have been unable to shed pounds with diet and exercise alone, You… Only Better’s staff physician, Dr. James Dickie, may prescribe phentermine to help with appetite suppression. Clients taking phentermine follow a reduced-calorie diet, exercise, and behaviorchange program to help them lose the weight, and come in for regular check-ins and optional B12 shots. In addition to weight loss, You… Only Better provides cellulite reduction, antiaging remedies and help with other health issues. Black says endermologie is currently making a huge comeback in Europe and now also in the U.S. “Twenty years ago it was the thing for cellulite, before Velashape and other similar treatments came around,” she explains. ”Now people are rediscovering endermologie, which I have always known works.” Clients wishing to quickly and effectively reverse the signs of aging may want to ask Dr. Dickie about sermorelin, which spurs the pituitary gland to produce more human growth hormones naturally in waves best used by the body. People taking sermorelin notice increased elasticity in their skin, better hair and nails, toned muscles, weight loss, better sleep, and joints that don’t ache.

Kim is relaxing with an Endermologie massage.

Finally, over the last nine years, Black has observed that increasing numbers of men and women fighting problems with bloating, constipation, irritable bowel syndrome (IBS), and fatigue have found colonic hydrotherapy changes their lives. Immediately after finishing a treatment, most people report feeling better than ever. “And those are usually the ones who come in scared to death!” Black says, laughing. You… Only Better is located at 600 W. 103rd St., Suite 104, in Kansas City, Missouri, just off I-435 and Wornall across from Dahmer Chevrolet. Do You Have Enough Home Insurance? BY BRIDGET MASON HESS

Imagine this horrible scenario: Your house catches on fire, and the damage is devastating. What if the house is burnt to the ground, furniture and belongings trashed, memories up in smoke. Would you be prepared to handle this? Do you have the insurance coverage to get your life back in order without burning through your financial assets, too? When is the last time you took a close look at your homeowner’s insurance policy and took stock of what the belongings inside your home are worth?

Understand your policy

For example, Bo Govea of Community Insurance Consultants in Overland Park, says that for his metro-area clients, the most common claims they make after wind and hail damage are those due to sump pump or sewer back-ups. Both water back-up and mold coverage don’t usually come standard but are optional or add-on coverage. He makes sure his clients have this coverage — it’s a small price to pay considering the potential repair costs.

Typical homeowner’s insurance covers damage or loss due to fire, theft, accidents, wind, ice, lightning, and other disasters. However,

It’s worth mentioning that a standard policy doesn’t include flood or earthquake cover-

there are limits to what is covered and for how much. That said, it’s important to understand your policy. Make sure you have the coverage you may need, or you could end up with a frustrating and expensive situation.

age. While both seem unimportant to those of us not living on the coast, Midwesterners shouldn’t be too quick to rule them out. There is a difference between flood damage versus sewer back-up damage, Govea says. While sewer back-ups happen more often in our area, he has had clients with flooding issues from groundwater. He also has clients in southeast Missouri who do consider earthquake insurance due to their proximity to the New Madrid fault line.

Make sure you’re covered A common mistake is not having enough insurance to cover the cost of rebuilding your house if it is destroyed. There is likely a difference between your appraised home value and the full cost of rebuilding it — including building supplies and labor. Make sure your replacement cost is accurate by getting more than one opinion. The two

agents I spoke with are independent and represented multiple insurance companies, and both say that when they give a client a quote on a new policy, they already gather more than one replacement-cost opinion. If your agent represents a specific insurance company, ask how your replacement cost was formulated. If you’re unsure whether the number is high enough, get a second opinion. Andrew Zebley of Olathe-based Absolute Insurance Group Inc. says he sees discrepancies in replacement costs from one insurance company to the next, with some being lower than they should be.

“Once the replacement cost is determined, the belongings will be 70 percent or 75 percent of that number, which is typically found to be plenty of coverage,” Zebley says.

Take stock of your stuff

“If you have specialty items that are over and above the norm, I would always take a video or picture of items and the receipts,” Govea says. “I even recommend taking a quick twominute video of your home. Now that we have a video camera on our phone it is fairly easy to do and put in your cloud-based storage. This will help you to remember all of the

After the replacement cost of your house, your policy also should have enough coverage to replace its contents — appliances, furniture, electronics, clothing, and decorations. Insurance agents like to use the analogy of, “What would fall out of my house if it was turned upside down?”

This percentage is enough for many people, but if you own special antiques, expensive jewelry, or pricey art, you may want extra insurance. It’s also smart to document your house and valuables with photos or video. The Insurance Information Institute offers an app and suggestions for doing this at KnowYourStuff.org.

items in your home. At the time of loss, you are under abnormal stress and typically do not remember all of the items in your home.” Zebley also recommends that you update your house inventory video annually to capture any new purchases made throughout the year.

Know your deductible Finally, be familiar with your deductible. Don’t assume that it’s always a flat rate, because some policies might alter it to a percentage of your coverage for certain circumstances. For example, many rooftops across KC were replaced after the wind and hail damage in 2011. Govea says he has noticed that some insurance companies have reacted to the many claims filed then by raising deductibles. He advises that people should be aware of what their deductible is so there are no surprises.

PARENTING

BY ASHLEY PUDERBAUGH

Mom

Knows Best

Growing up, my mom seemed to have an uncanny ability to know everything that was going on with me without me saying a word … and have a great solution to any problem I might have been having. I thought — in honor of Mother’s Day — I would ask prominent Kansas City business owners and community leaders to share the bits of wisdom from their moms that they hold dear. Here are stories from six KC residents about their own moms. (And keep an eye out for June’s issue, which features quotes from others about their dads!) “My mother was a teacher in the Omaha public schools for more than 40 years. She was full of wisdom and wit and the coolest mom ever, always willing to do anything fun, spur of the moment. The best advice she shared with me was when I was 14,

36

and I asked her: ‘What do you think I will be when I grow up — a teacher like you?’ She said: ‘If you find something you love and have passion for, you will never work a day in your life!’ I have never forgotten those words full of wisdom and am truly fortunate that I love what I do, getting to help others be their best.” — Kim Hoffman, president of Hoffman International Model and Talent Agency, which will celebrate its 30th anniversary next year. “The best advice my mom gave me, with both her words and her actions, was to be comfortable in following my own path, to look for direction and validation within and not around me, to figure out who I am and what it is that I want to become and to honor that who I was created to be. She also role-modeled for me to live every day to the fullest, make the best of whatever situation life brings my way and to truly treasure the best thing in life — those relationships that are most important. All of these things have truly shaped who I am and how I approach life.” — Susana Eshleman, president of Children International, an organization that transforms lives by personally connecting people who want to make a difference with children in need to break the cycle of poverty.

“I grew up really poor in Independence, Missouri. My mother’s approach to life was to always do the best you can and help others along the way. Do what you can to bring improvement to humanity in any way. Those are the basic core values of honesty and love for humanity. Those have driven everything I’ve done.” — Judy Akers, executive vice president of the Della Lamb Community Services, which provides a variety of services to KC low-income families and those being resettled into KC from persecuted countries such as Somalia and Sudan. “She always had a bunch of phrases. One is ‘Be wary of fast money.’ Because when you make a decision to get paid right away, it doesn’t mean it’s always the best decision for longterm success. She would give me those one-off lessons while we were playing dominoes … Inopportune times for me but opportunistic times for her because she had a captive audience.” — Greg Carroll, accomplished vibraphonist and CEO of the American Jazz Museum. “Make sure the seams match. She was kind of a fashionista. I knew what a bound button was when I was 4. This advice has helped guide me in paying attention to detail.” — Jayne Torline, co-owner of 3 Women and an Oven, which offers delicious, made-from-scratch goodies. “Don’t ever compare yourself to anyone, positive or negative. OUR WORLD

BY MARY EDWARDS

COMMUNITY IMPACT IS BIGGER IN GROUPS Although they say one person can change the world, making a real difference is much easier in a group. Here are a few ways a community can make a larger impact on environmental consciousness: 1. A community garden — whether in a neighborhood or at a school — helps bring together groups of people for a greater cause. Not only does it teach children how to cultivate their own plants, it shows them how easy it is to eat local.

38

| SIMPLYKCMAG.COM

2. T hrowing a go-green party can help bring attention to environmental impact while also having fun. Have recycling bins all around the party, use reusable plates, and hand out sustainable items like potted plants as party favors. Even using upcycled or recyclable decorations can make a huge difference. 3. V olunteer, volunteer, volunteer! Even if it’s just a couple of hours on the weekend. Clean up the side of roads, for example, or help at a

recycling center. Make a group outing out of it. Not only will you feel great that you gave back, but you’ll feel better knowing you’re living in a cleaner, healthier environment. Making a bigger impact on environmental awareness is much easier than one would think. Grabbing a group of friends and making a conscious effort to create change can easily turn into a ripple effect that spreads throughout the rest of the community.

do all these things have in common? Fear. It’s that unpleas-

out there. All people have their own fears, but where we differ is in how we deal with them.

So, how does one start the process of overcoming fear and worry?

Fear can be a great motivator. Many times, success is driven by

1. FOCUS YOUR MIND ON THE PRESENT

fear. But, for many, fear also can be a crippling element in life. According to Holly Klein, LSCSW, fear inhibits our complete human experience and can keep us from achieving greatness. Some people obsess over their own uncontrolled intuition and imagination. They misuse these tools, hit the override button, and become paralyzed. They get into a cycle of fear and inaction and ultimately experience unhappiness.

40

| SIMPLYKCMAG.COM

We, as human beings, think behind us or in front of us. It is rare for us to live in the moment. People worry about the future as a regular practice. What if people don’t like me at my new school? What if I never find a spouse? What if I never have children? What if I never make enough money? What if there is a tornado? What if I have a heart attack?

To minimize feelings of fear, it is critical to stay in the present moment and focus on the realities you can experience now. Being on the fulcrum of the teeter-totter between the past and the future takes practice. Remind yourself of the present reality. An easy way to do this is to say “I am” statements to squash your fears. I am a likeable person who has always had many friends. I am a key player at my company and make a good salary. I take care of my body to keep myself healthy. Reminding yourself of the facts today can diminish worries about the “what ifs” of tomorrow. According to Klein, a simple way to practice staying present is to use nature to help you. She suggests simply starting in your own backyard. Notice the earth, the bark mulch, the pebbles, the bushes or shrubs. Pick a tree and travel up the trunk, the branches, and examine the detail, shades, curves, knobby points and splits, peeling, and dampness. Notice the tiny buds that push out new life. Touch the leaves and notice their veins and scalloped edges. Look and experience with a sense of wonderment. As you visit the tree on different days, notice the change in color, the deep breaths it seems to take in with warm days and how its leaves retreat when winter is near. Simply observe. Use your eyes to feel things and see them as if you are experiencing them for the first time.

2. SPEND TIME WITH ANIMALS Animals are frequently used in calming fears, says Lucy Sikes, advanced practice RN and Jungian psychotherapist. Traditionally, dogs are used. But, recently, horse therapy has gained popularity. Spending time with animals can ease feelings of stress, anxiety, depression, and loneliness because it encourages social interaction, tenderness, and affection. If you have a pet, simply spend more time with it or volunteer at a local animal shelter.

Experience the calm. Midwest Myofacial Release Center empowers you to heal at your own pace and return to a pain-free, active lifestyle through individualized treatment provided by a supportive, healing team.

3. BREATHE Deep slow breathing can ameliorate the damaging effect of stress and worry. Klein suggests you pause in a freeze-frame of time and breathe deep breaths out (down to your toes) and in (all the way in to the full expansion of your lungs). In this space, fear cannot reach you. Deep breathing triggers a physical state of deep relaxation that reduces heart rate, blood pressure, and muscle tension, thereby decreasing the body’s stress response. Although deep breathing alone

will suffice, other modalities such as meditation, yoga, and tai chi also will assist you in navigating toward that remarkable space. There is no quick fix or pill that will help you conquer your fears. Whether you do so is up to you. But, because overcoming fear and anxiety will give you the space in life to determine and achieve what you really want to be and do, it is well worth the effort.

Th e Sweet

Potato — It Plays Well With Others

42

| SIMPLYKCMAG.COM

Yes, it’s true! Sweet potatoes pair wonderfully with many of your existing pantry items. When I ran across this recipe, I loved the thought of using sweet potatoes in a breakfast recipe in which chili seasoning and eggs were coupled for a “to-go” option for those busy mornings. It was the perfect solution to health, fantastic flavor, and ease rolled up into one delicious burrito. Be sure to invite this vitamin-rich, orange-fleshed vegetable into your breakfast routine!

Sweet Potato Breakfast Burritos Makes 4 burritos

Ingredients 2 teaspoons olive oil 1 small sweet potato, peeled and diced 1 small yellow onion, chopped 3/4 cup tri-color bell peppers, diced 2 cups of packed baby spinach, roughly chopped 1 tsp chili powder 2 large eggs, beaten 2 large egg whites, beaten 4 tortillas Shredded cheddar cheese

Place wrapped burritos in a large zip-top freezer bag and freeze for up to 3 months. To serve, preheat oven to 400 degrees. Place a burrito, still wrapped, on a baking sheet and bake for 35 minutes. Use tongs to transfer wrapped burrito to a paper bag and take on the go. (Note: Baked burritos will stay warm for 15 to 20 minutes; you can eat them on the go or when you get to work. If you are reheating in the microwave, make sure to remove the foil first.) Recipe source: blog.myfitnesspal.com/sweet-potato-breakfast-burritos

Directions In a medium-sized skillet on medium heat, warm the oil. Add the potato, onion, and bell peppers, and sauté for about 8 minutes, stirring occasionally, until potatoes are tender and onions are translucent. Add the spinach and chili powder and sauté for 2 minutes more. Increase heat to medium high. Add eggs and egg whites. Cook for 3 minutes, stirring frequently, until eggs are cooked through. Divide the egg mixture evenly into center of tortillas. Sprinkle evenly with shredded cheese. To wrap and serve, fold edges in, and then roll forward tightly. Option to freeze for breakfast on the go

Let egg mixture cool for about 10 minutes. Tear off four rectangles of nonstick foil and lay 1 tortilla on top of each. Divide the egg mixture evenly into the center of each. Sprinkle evenly with cheese. To wrap, fold edges in, and then roll forward tightly. Wrap the burrito tightly in foil.

Meet Lesli Lundquist: A passion for cooking? Nope, not really! However, when I was diagnosed with food allergies nearly five years ago, my eyes were opened to all of the wonderful dishes that can be created day to day by simply following a recipe. I have been told that I am a “cook from the pantry” type of food guru. I love to keep my pantry stocked and to cook with the seasons, give my tastes buds a challenge, and of course feed my family delicious, home-cooked meals.

This nighttime race features multiple black-light zones and thousands of runners decked out in glow gear. Get creative — there are prizes for the craziest costumes and most spirited teams.

This unique run boasts elaborate yet fun inflatable obstacles that will remind you of the American Ninja Warrior challenges. The 5K is untimed, so you can walk between obstacles to conserve energy if you need to.

Run, walk … or even dance across three miles while getting soaked with colored bubbles. You’ll encounter foam bogs of the colored suds at each kilometer along the course. Once you’ve finished the race, stick around for live music, dance-off contests, foam cannons, and more.

Relive childhood by having water-balloon and water-gun fights, running through blasts from fire hoses, playing at foam stations, and going down the ultimate water slide at this fun 5K.

Like the Color Run, you wear white and are doused with colors as you complete the course. But because the event takes place at night, the green, pink, and orange will glow under the black lights along the course. At the finish line is the Foam Glow Party.

More like a rave than a run, the Electric Run features immersive “lands” of light and sound that transport you into an electric wonderland. Dress the part with glow sticks, LED lights, and colorful clothing. Once you’ve finished the three miles, gather at the main stage for an epic dance party.
