A new kind of menu: ‘You decide’ The other day I was in a local fast food place enjoying a meal of empty calories and arteryclogging cholesterol when I noticed a family enjoying similar fare. There was a mother, father and two small children. As I watched them, I thought back Terry Turner tturner174@longlines.com to my own childhood and quickly realized I never went out to eat when I was a kid.

Never. Back then, we ate at home, in the dining room. And the menu was always the same. I don’t remember each menu, but I do remember Sunday was fried chicken, complete with mashed potatoes, gravy and a vegetable.

On other nights, it was either pork chops, hamburgers or maybe something exotic like spaghetti.

Everything was fried in lard, and the left-over grease was not

thrown away. It was saved in a container on the stove to be reused in another meal. It may not have been healthy by today’s standards but it sure was good.

My favorite was that crispy fried chicken and that delicious white gravy. It may have been my dad who taught me the best way to top off a meal like that was to take a piece of bread and cover it with gravy. There was nothing better.

Deserts were few and far between at our house. I’m not sure if it was because my mother didn’t like to bake or desert was an expensive extravagance we couldn’t afford. I think the latter was true. Most of the time if I had desert it was a piece of bread with milk and sugar on it. But it was a different story when we went to visit my grandparents in Glasco, Kansas.

My grandmother was a great cook and she loved baking. Her favorite and mine too was apple pie. And the great thing about her pies was the leftover crust.

After baking her pies she would always have some pie crust dough left over. She would take

that and make small pieces of crust and then cover them with cinnamon and sugar then bake those and give them to me and my cousins. Simple but delicious.

Today my wife and I go out to eat a lot. When there’s only two, it’s just as cheap to go out and a whole lot simpler. But where to go is always a problem. Sioux City and the surrounding area have a lot of choices in dining – from the very simple fast-food joints to more fancy dining-in places.

But choosing one can prove to be as daunting as it is for Congress to agree on anything.

To this end, I’ve decided to open a couple of restaurants of my own and I think they’ll be pretty popular. One will be called “I don’t care” and the other will be “You Decide.” I figure every husband will be taking their wives to one or the other after they ask the question, “Where do you want to go to eat?”

The challenge’s grassroots origins and selfiebased technology added to its appeal. “Social proofing” – a kind of peer pressure – also inspired people to get involved in something their friends are doing, Kanter added.

But timing was key.

In a summer filled with seemingly relentless bad news at home and abroad, people may have been looking for “something that makes us feel good while doing good and something silly,” Kanter said.

Girl’s rare transplant gives second chance at life

PALO ALTO, Calif. | Without warning, Katie Grace Groebner kicked up her right foot and bolted down the white, bright hallway back to her exam room. Just before she got to the door, she slowed to a walk, a smile twitching on her lips.

Though it was but a few feet, a sprint she has rarely before been able to do perfectly punctuates the 12-year-old’s recovery.

“Good. I feel good,” she said in her quiet, wispy voice.

Two months ago, Katie Grace was lying in a hospital bed, painfully fighting for each breath as she waited for new lungs and a new heart.

In June, she became one of fewer than 10 U.S. pediatric patients a year to receive a heart-lung transplant.

Her surgery took place at Lucile Packard Children’s Hospital Stanford, one of 34 facilities in the country that perform such transplants on children, according to the United Network for Organ Sharing.

“She’s a completely different kid from when I saw her a month ago,” said Dr. Jeffrey Feinstein, Katie Grace’s transplant surgeon.

“She’s pink where she once was gray, she has energy when she once was tired. I can only imagine what she must feel like being able to breathe

again.”

Since her birth in Minnesota, Katie Grace suffered from idiopathic pulmonary arterial hypertension, which causes increased blood pressure in the pulmonary arteries and in the right side of the heart. It can cause heart failure if left untreated.

The first clue that something was wrong came when she was a baby and started having fainting spells.

Her mom, Kathy Groebner, pleaded with doctors to check her daughter’s heart.

But Groebner said they insisted the baby might have asthma or was stubborn because she had a hard time breast-feeding.

By the time Katie Grace was 5 and a clear diagnosis was made, the news was the worst imaginable: They were told their daughter wouldn’t live to the end of that year, even with treatment.

Her only hope was to have a heart and lung transplant.

Groebner said they found the right hospital at Lucile Packard, where consultants explained their services without pressuring them, respecting that she and her husband were the only people who could determine what was best for their daughter.

a long pink scar down her sternum, and she’ll have to live in an approved hotel room near the hospital with her mother for at least another month.

Doctors then will determine whether it is safe enough and she is strong enough to go home.

But her fight won’t end there.

Along with taking more than a dozen medications, Katie Grace must find ways to strengthen her lungs, like blowing up balloons.

And she’ll be on at least three medications, including a medicinal steroid, for the rest of her life.

AKRON, Ohio | As divas go, Miss Piggy’s got nothing on this porcine princess. A natural ham, the piglet poses for pictures as she munches on pears in her positively pink bedroom.

But her favorite food is, of course, pizza.

Penelopi lives with Mindi and Brett Reinbolt in Akron, Ohio. The petite porker gained celebrity status recently when the United Kingdom newspaper Daily Mail featured a photo spread of her that would be the envy of any Hollywood starlet. A German magazine also planned to publish a story about her, Mindi Reinbolt.

“A reporter tracked [Penelopi] down on Facebook and contacted me in June,” Reinbolt said. The “Penelopi the Pig Reinbolt” Facebook page has more than 1,540 “likes,” and on Instagram, “Penelopipig” has more than 900 followers.

On a day in August, Penelopi was dressed as an Ohio State University fan in a scarlet and black tutu and a red-knit sweater. Stylish silverpolished toenails peeked out from under sparse white fur on her legs.

Brett Reinbolt, a firefighter-paramedic, customized a bedroom in the family’s home with a Dutch door so Penelopi doesn’t feel closed off while the couple are at work. The pampered piggy’s bedroom is a vision

The litter-trained piglet is currently learning to play a miniature piano.

Mindi’s husband was skeptical when she told him she wanted to buy the tiny pig, she said.

“That’s his little princess now,” Mindi said.

To keep her warm on chilly nights, Brett installed a small electric fireplace that flickers cheerily beside a pink princess playhouse that holds her bed. She snuggles in – what else?

Store brands just won’t do for this diva, said Mindi.

“She doesn’t like cheap Walmart blankets and she won’t eat [offbrand] Cheerios,” she said.

The Reinbolts purchased the 15-monthold Juliana and Mini

mixed-breed pig from Ledge Life Farms in Medina, Ohio, in May for $600. The breed will live 15 to 20 years, said Mindi. Penelopi is almost grown and currently weighs just over 13 pounds.

“She’s so darn smart, it’s like having a 3-yearold, 24/7,” she said.

Penelopi is much smarter than her best friend, Bailey, the couple’s schnoodle (schnauzer/poodle), Mindi says.

“But we don’t tell him that,” she said.

The piglet squeaks along happily when she’s content, but is capable of throwing a temper tantrum that can rival any toddler when she doesn’t get her way.

A sign serves as a warning to unsuspecting would-be pig owners and hangs on Penelopi’s bedroom door.

It reads: “I’m a luxury few can afford.”

Painter takes WWII vets back in time with traveling portrait exhibit

PALM SPRINGS, Calif. | Inside an airconditioned hangar in the Sonoran Desert, a man in a red and black kilt sat in the shadow of a Supermarine Spitfire and painted.

Midmorning, visitors to the Palm Springs Air Museum shuffled past shined-up war relics, peering into cockpits or getting lost staring across the big, bright box of a room.

Distracted by wings or tail fins, they tended not to notice Chris Demarest until they nearly bumped into him and his long table of paint vials, water jugs and solvent cans.

He looked into his canvas, very closely.

A small, folded, blackand-white photocopy of a portrait sat next to him. As he glanced over at it, he painted light brown streaks that would form the beginning of a face.

He had a steady hand.

Behind him was an entire wall of portraits – young servicemen and women in coveralls or pilot uniforms, leaning against planes, embracing or hard at work.

He’s painted all 70 of them.

As Demarest talked about his work, a docent stopped to join him.

“This – this is really important,” the man

‘More trains than you can keep track of’ Bailey Yard in North Platte, Neb., covers more than 2,800 acres

NORTH PLATTE, Neb. | Ever since railroads began crisscrossing our nation in the 1800s, North Platte has been a hub for rail traffic.

When the transcontinental railroad was completed from Omaha to Sacramento on May 10, 1869, North Platte was halfway between, making it a perfect location for a repair facility. And in 1867, the Union Pacific Railroad took advantage of the location and built shops to repair engines and rail cars in North Platte.

Early steam engines were repaired and serviced in a facility known as a roundhouse so named because of its circular or semicircular shape. The roundhouse had a turntable that could rotate

the huge engines to get them pointed in the right direction. They needed the roundhouse because those early steam engines didn’t have reverse. Today’s modern diesel engines can move in either direction eliminating the need for a turntable.

est railroad classification yard in the world, where cars are separated and assembled into trains according to their destination.

Before entering the yard cars are sorted as to direction, either eastbound or westbound. The destination is recorded on a bar code on the side of the

car and then scanned and entered into the computer.

The yard has two “humps,” one for cars going east and one for those going west. The humps are small hills where cars are pushed up and then released and pulled by gravity down the other side where they travel

to the correct track through a series of 985 switches all controlled by computer.

Bailey Yard also has one of Union Pacific’s largest facilities for refueling and servicing locomotives. The shop’s 180 employees process more than 8,500 engines per month.

On an average day

300 locomotives pass through the facility.

When a locomotive needs repair it can be done in the L-shaped repair shop in Bailey Yard. The shop is large enough to easily contain three football fields. The 600 employees at the shop can repair 750 locomotives each month. Eleven

tracks lead in and out of the facility.

The yard is named for Edd H. Bailey, who at 17 went to work for the Union Pacific Railroad in Cheyenne, Wyoming, as a helper in the car department.

Over the next 20 plus years Bailey advanced through various departments and locations with Union Pacific until Jan. 1, 1965, when he was named President of Union Pacific. Bailey retired in 1971 but continued as a member of the board of directors until 1974. He died in 1988 in Cheyenne, Wyoming, at the age of 83.

There has been a viewing platform at the

yard for several years but it was in desperate need of repair. The idea to replace the aging viewing platform at Bailey Yard began in the mid-1990s when North Platte community leaders decided to construct a tower to allow visitors a better view.

The new tower also has displays depicting the history of the yard and a gift shop.

The Golden Spike Tower and Visitor Center opened June 26, 2008. Visitors can now view the yard from the eight story tower.

Surrounding the tower are flags from each of the 23 states in which Union Pacific operates.

Near the entrance to the tower is a vintage dining car in the process of renovation.

Once complete visitors will be able to experience dining as it was back in the heyday of railroading.

Entering the tower on the main floor visitors can purchase tickets then walk through the historic displays and photographs to the elevator where they can go to either the enclosed viewing area on the seventh floor or to the eighth floor open viewing area.

There visitors can experience the Golden Spike Tower’s motto of, “More trains than you can keep track of.”

BALTIMORE | Charlotte Rollenhagen still remembers the first time she saw Dorothy Hutchins at Johns Hopkins Hospital.

It was 1940, and the 10-year-old girl had been badly burned when her dress caught fire on the kitchen stove in her family’s Baltimore home. Her entire back was burned, as well as part of her left leg and her left arm, which she flapped in vain to put the flames out.

“The picture of this little girl is indelibly placed in my mind,” said Rollenhagen, who at the time was a rookie 21-year-old nurse. “My heart went out to her.

Her burns were second- and third-degree.

She needed such special care.”

The girl was in great pain, lying face-down on a hospital bed with saline compresses draped across her burns.

Touching the compresses caused even more pain. Rollenhagen – then known as Charlotte Osgood – was the only nurse Hutchins would allow to change the bandages. Her recovery took nine weeks.

“She did something different. How she knew how to do it, I don’t know,” Hutchins said. “Here’s a person who made me comfortable instead of miserable.

“The next (nurse) came and I said, ‘No. Wait for Miss Osgood,’” she recalled.

Rollenhagen, 95, and Hutchins, 84, ascribe their meeting 74 years ago as divine intervention.

They’ve maintained a special bond ever since, through marriages, careers, children and Rollenhagen’s relocation across the country to Washington state. Now that they are growing older, both feel they may not have many more chances to spend time together. So Hutchins’ son helped book a trip for Rollenhagen to come to Baltimore recently. It’s the first time the women have been together in person in 13 years. As they sat on the sofa in Hutchins’ home and recounted their meeting and friendship, the smiles came easily for

the former patient and caregiver.

In 1940, Rollenhagen was a young woman from Iowa who had moved to Maryland for nursing training at what is now Washington Adventist Hospital in Takoma Park, Md. The hospital had few surgical patients, so Rollenhagen was sent to Hopkins for three months – a move Hutchins feels changed her life.

“I felt like God sent her to me. I would say, ‘Thank you, God.’” Rollenhagen was impressed by her patient’s ability to endure the pain of such severe burns without pitying herself or asking why.

Hutchins was impressed by her nurse’s compassion.

The two exchanged addresses before Rollenhagen returned to Takoma Park.
