ESCAPE THE ORDINARY

We eat to live, but we also love to eat. From fast food French fries at Wendy’s (dipped in a classic Frosty®, of course) to fancy double-fried duck fat frites, and everything in between. We love our sweet and our savory, our meals and our snacks, our fruits and our vegetables, our meats and our mac and cheese. We have food phases, fetishes, favorites and follies. All things in moderation, if moderation wasn’t so boring. We balance indulgent with healthy. Cheat a little when we enter calories into our Fitbit app. Add another spin class and order the dessert with dinner, especially when we get it with two spoons to share the love. Food is as much for the soul as it is for the body. Bless those gifted with the talent to create beautiful meals, for they are gods and goddesses among us. It is our moral obligation to eat what they serve, so go forth armed with fork and knife, go with a spirit of adventure and a lack of restraint. Savor, relish, delight, taste and consume. Food is love.

A Relationship with the Noodles Tiffany Whitehead

Saint George isn’t the end of the world, but you can see it from there,” were the silkscreened words I read on a souvenir t-shirt at the local gas station. “Somebody got that right,” I joked with my friends as I paid for my Snickers bar. At 16, all I wanted was to get out and see the world because I knew that the world would never come to my hometown in the extreme southwestern corner of Utah. Settled by hardy pioneers who came in the 1860s and eked out a living here at the geographical convergence of the Colorado Plateau, Great Basin and the Mojave Desert, they toiled through excruciatingly hot summers with no air conditioning, motorized transportation or indoor plumbing and having only brackish water to quench their thirst. The arid climate persuaded these early arrivers to try growing cotton but “Utah’s Dixie,” as it came to be called, was too harsh of an environment for cotton production. Summertime here is hot. Really hot. When I was a kid, the heat and remote location made Saint George merely a pit stop for travelers headed north to Salt Lake or south to California. The remoteness, stifling heat and small townish feel instigated undeniable wanderlust during my young adult years. Cruising Main on that summer night, I made a mental note of our town’s haute cuisine options: McDonald’s, Burger King and Larsen’s Frostop Drive-In. In that moment, I equated limited food options with limited life options and determined that the only way to experience the world would be to leave my hometown the first chance I got. So the day after high school graduation, I boarded a plane to Sweden to spend the summer with a girl who had lived with my family as an exchange student. After I got back to the States, I did not return to Saint George to live for 15 years. In that decade and a half, I grew up, and so did my hometown. The growth really skyrocketed at the turn of the new millennium. Almost overnight entrepreneurs from all over the world engaged landlords to lease old buildings they renovated into upscale restaurants. One of these newcomers was Benja, a spunky 50-something mother of four from Lopburi, Thailand, who opened Benja Thai and Sushi downtown. By that time, I’d mellowed and found small town life appealing. My husband David and I and moved back to Saint George with our children. Despite my longing for an expanded list of food options, I never actually considered dining at Benja’s until my friend who had lived the expat life in Asia for nearly a decade invited me to join her there. “Benja’s is about as authentic as Asian food gets,” she coaxed me. After that first visit, I was hooked. The restaurant’s scarlet walls, gold Buddhas and authentic Thai music enhanced the experience of eating Benja’s exquisite cuisine. Somehow a visit to

her place temporarily satisfied remnants of my wanderlust that surfaced from time to time. Benja attained minor celebrity status in our home as we talked about her eclectic food and her propensity to wander the restaurant chatting with her guests. She delighted us with her fluent English peppered with staccato remnants of her native Thai tongue. She omitted prepositions, or used singular nouns when a plural would be correct. And she always mingled past and present verb tenses mid sentence. “Ah, honey,” she’d begin, “How you like my food? You need anything else? What you order tonight?” One night over dinner, David spotted Benja by the sushi bar and motioned her over to us. “Benja,” he said, “the Pad-See-U is exceptionally delicious tonight.” Leaning in to our table, she crooned, “Ah yes, honey. My chef—I have two of them. My one chef been with me for three month, but she been cooking for long time—at least 20 year and she know how to read the noodles. She have a relationship with the noodles.” “Really, Benja?” I asked, “A relationship with the noodles?” “Yes, honey. When it come to cooking Thai,” she explained, “you must have a relationship with the noodles.” Not long after our Pad-See-U conversation, I asked Benja about her reverence for the food she serves and this noodle “relationship” idea. She began by sharing her story with me. She was born the 10th of 12 children and clearly fought to find her place in the world. Her search for the meaning of life led her to become a Buddhist nun at age 18. “We shave our hair and eyebrows,” she reminisced, “because we can’t look too beautiful. Every day we wake at 4 a.m. to chant for one hour. At 6 a.m. we cook breakfast for monks, who,” she quipped, “never do anything.” Benja and the nuns chanted at prescribed intervals during each day with the sole intent of finding meaning in life. She left the monastery after only nine months, but maintained the practice of chanting and developed a keen ability to tap into stillness amidst chaos. I asked her about the noodles. “Ah,” she said, “when you have a relationship with the noodles, you are present with them. You watch them. You sense when they are at their best and you take care of them. You notice them. You do that with everything in your life. You pay attention. Then you know what is needed.” The gas station that was selling that souvenir t-shirt back in high school is long gone. I only bought the candy bar, but not the small-minded thinking that one could see the end of the world from my hometown. During the mere two decades from the night that I cruised the main drag with my friends, the ends of the world arrived on St. George Boulevard bringing Benja and others like her who are present, take risks and introduce all that is good from their experiences to others. Benja’s commitment to living in the present is teaching me to take risks, to explore and to share with others the things I have to offer the world. Doing so requires that you have a metaphorical “relationship with the noodles.”

What the heck were you thinking, bringing a BBQ beef brisket to your menu? Stick to scones and cookies and leave the beef to the Southern smokehouses. Have you stopped incinerating your Pike Place roast yet? I’d almost prefer the dirt feel of Folger’s instant coffee over that burnt taste. Almost. Will you promise to one day spell my name right on my coffee cup? I do love the occasional have a nice day, stay dry or smiley face. And it’s nonetheless fun to see what you do decide to name me. I’m thrilled that you’re getting into the spirit of fall and everything, but don’t you think Pumpkin Spice Latte seekers should queue up in a separate line? They need a safe space to overdose on pumpkin when they add pumpkin cookies, pumpkin bread, pumpkin cream cheese muffins and pumpkin scones to their order. While you’re at it, wouldn’t it be nice if said latte in a Grande serving with skim milk had a lot fewer than 260 calories in it? That’s half of the lunchtime allotment right there. Have you thought about switching up your ambiance lately? A little mood lighting, funky local art and fresh flowers on the tables can go a long way. The independent coffee shops are winning this race. Also, let’s bring it down a notch with the AC. I’m here for a Southern vibe, not Arctic tundra. Do you think you could consider slowing down your viral spread across America a bit? (22,500 retail stores in 67 countries.) You have a location everywhere I turn. Play a little harder to get. Creating art with food that I then get to see in print or motion. I love the fact that no job is ever the same. Your favorite type of food to style? I love styling anything that connects me to a lifestyle moment and brings in the human element (i.e. big overhead shots of tables with lots of props and food elements). Favorite cocktail? I am a surfer and a beach girl, so hands down a spicy margarita and even better if I am enjoying it in California. Your guilty food pleasure? My go-to when I need some comfort would be French fries with sea salt and fresh lemon (with mayonnaise of course). Your favorite autumn food? On Sundays, I love to make vegetarian chili with homemade pimento cheese.

If the amazing piece of art covering the side of Mira Winery’s building at 68½ Queen looks familiar, it could be because local artist David Boatwright created the mural, “Renoir Redux: Exceptional Pairings,” featuring the likenesses of 14 members of the Charleston food scene including Gullah Cuisine’s chef and owner Charlotte Jenkins, chef and writer Nathalie Dupree, GrowFood Carolina’s Sara Clow, restaurateur Karalee Nielsen Fallert and everyone’s favorite maître d’, Mickey Bakst of Charleston Grill, plus several other well-known Charleston foodies. Boatwright’s murals can be found throughout the Lowcountry, with many painted in (or on) well-known eateries. His mural for Mira Winery is a take on Pierre-Auguste Renoir’s “Luncheon of the Boating Party.” Signed poster versions are for sale at Mira Winery for $20 each.

I got hooked on “Good Eats” years ago and I loved that he explained the science behind food. He made food much more interesting and approachable for me. Your favorite seasonal autumn food? Autumn is all about apples for me. One of my favorite apple desserts is called piggy pie. It’s simply shredded apples tossed with spices, sugar, and butter and then spread out thinly over pie dough. The dough is rolled up like a cinnamon roll and baked. It’s so simple but delicious. I subscribe to:

Art of the Artichoke Marisa Mangani

Food is love,” my mom used to say. And even though her cooking skills were limited, she prepared meals to the best of her ability and enjoyed a day in the kitchen with her trusty Joy of Cooking and some specially purchased ingredients. The great insult to her was my stepdad’s refusal to eat these meals she so lovingly prepared. If it wasn’t beef something or potato something, from his black Naugahyde lounger he would place the dish on the floor for our herd of dogs and cats to fight over. Later, during the commercial break, he’d get up to fortify himself with a large bowl of ice cream. His actions on these nights were grounds for murder. In contrast, my mom and I enjoyed a food ritual together that started when I was very young. Many gold-flecked Formica tables backdrop this repeated event, this thing we shared without my grandmother or stepdad or anyone else. This ritual involved a curious looking steaming green crown, an earthy aroma emanating from it, elegantly perched on a dinner plate between us as we took turns peeling off the leaves, dipping each into a soup cup of hot lemon butter and scraping little bites of meat from the inside edge with our lower teeth. The closer to the inside of the flowery crown we got, the sweeter the meat became. The young me asks, “Mommy, why are the leaves sweeter on the inside?” Mom answers, “Because we’re getting closer to the heart.” This made sense to me, for I’d learned in Sunday School that God was large enough to fill the world and small enough to fit into your heart. Surely God was inside the artichoke’s heart too. We’d eventually get to the heart, the leaves very thin and meaty around the edge of the flower’s center jewel. Here, Mom takes over, lifting the stemmed base and scraping the fibrous thorns from its cup with a spoon, careful not to puncture it. She drops it into the soup cup of butter, slices it into smiles and we take turns slowly savoring each buttery bite. A few times a year we shared an artichoke and each time I savored not only the sweet meat of nature’s bounty, but the time alone spent with Mom, this opportunity to be near her at the table, a rare moment of being on the same level. Excitement for this built in me whenever I spotted an artichoke in the kitchen, or she told me she bought one at the store on sale that day. She wanted to be with me and the artichoke was her excuse. When the artichoke had been reduced to a pile of spent leaves marked by the imprints of our teeth, a little sadness followed. Mom would stand, her aura disappearing into that smoky space of adultness, and clear the dishes. I was alone again. When I got older, Mom prepared two artichokes and with a large salad bowl between us for the stripped leaves, we’d talk and talk as we ate, catching up on things since I was on the

go so much. These artichokes and their God-filled hearts briefly bringing us together again. When I left home, I encountered artichokes at some of the restaurants where I cooked. At Longhi’s on Maui, artichokes were an appetizer on the menu, served chilled and stuffed with an olive dressing. I thought that was somehow wrong, the artichoke so delicate, the olives so pungent, how could that be good? At a restaurant in Portland, the chef showed me how to pare down a fresh choke to the heart with a sharp knife, a technique I never mastered, my focus instead on all that good stuff—the leaves— going into the trash. At the Columns Hotel in New Orleans, the artichoke made the leap from childhood ritual to culinary extravaganza. When artichokes were in season in California, we’d steam up two cases, and everyone in the kitchen painstakingly scraped the meat from the leaves with paring knives. Once both cases had been reduced to a bain marie of leaf and heart meat, a puree of artichoke soup was made up, finished with cream, whole butter and a hint of nutmeg or mace. And that wonderful sensation in the mouth, all that tender artichoke flavor melting in your mouth without the work of peeling down the flower. Which never bothered me, the “work” of eating a choke, called such by many men in my life who refused to go through the steps to eat an artichoke. Like eating artichokes is a girl thing? If I ever ate an artichoke myself before my daughter was born, I certainly don’t remember it. Naturally the most important part of the ritual was missing. With mom gone and me working in restaurants most nights, it probably did not happen. But when I became a mother, a few things began to happen. I found myself saying, like my mother, “Food is love,” as I placed in front of my wiggling daughter a plate of over-easy egg on toast. Then when she was three, I steamed an artichoke and placed the mysterious delicacy between us. I’m certain there was a huge smile on my face. My mom had only been gone a few years, and now I’d experience the artichoke ritual from another viewpoint. I believe there is always room for improvement, so on nights my daughter and I sat down to partake, I didn’t rush off like my mom had. I didn’t want my girl to feel sadness or any loss after our shared time. I only wanted the good things for her. But I could only control so much, for while the two of us were in the dining room, eating, laughing, talking about school and such, her dad was out in the Florida room drinking Old Milwaukee and smoking cigarettes, shortening his life, as we would find out in a few years. SCARLET LETTERS PROTEST GENDER BIAS IN SCHOOL DRESS CODE

In September, Charleston County School of the Arts students began wearing scarlet letters to protest unfair and disrespectful enforcement of the school’s dress code. Reese Fischer, a junior creative writing student at the school who helped organize the protest, said that, based on her experience, faculty members enforce the dress code more strictly against girls than boys—and against heavier girls than slimmer ones. They’re joining the ranks of high school kids across the country who have also been protesting gender-biased dress codes. We’re proud of the young women for speaking out!
