NOVEMBER

CHARLESTON, SC

ESCAPE THE ORDINARY

You know that feeling after spending hours on the road or miles in the air, when you arrive home, drop your suitcases on the porch, and walk into a house that smells like warm apple pie and roasted butternut squash? The hugs that make you feel like you’re 16 again? That’s November. Whether you create your own family or return to the one that created you, the holidays officially begin this month and that means family, fun, fall, and—best of all—#food. It’s drowse on the couch while the game is on and the turkey has been in the oven since 6 a.m. and no-one’s slammed a door or cried all day. Some of us hold hands at the table before a meal and share what we’re thankful for. Some of us fight for the drumsticks. No matter how you do it, it’s all #delicious. A little wine with dinner and you might even get your sister to tell that story about the year she ruined Thanksgiving because she baked a pie from scratch with salt instead of sugar. We’re not all naturals in the kitchen, but #goodgravy, we do love to eat. We all have days where we want to change our relationship with food to “it’s complicated,” but this is the season of simple pleasures. Pumpkins, pears, sweets, treats and the #yummiest eats. Calories be damned. Say yes to extra helpings, you angels. We’ll keep the leftovers warm for you.

Dating Leaving You

Confused? That’s certainly what happened to me. I was married for many years and for one reason or another I ended up single in my mid 40s. I had moved back to Charleston for many reasons and thought I could take up my old dating life of 14 years ago. BOY was I wrong!!! Being single and in my mid 40s I soon realized the dating scene can be difficult. Just getting out with my friends that are busy with careers, spouses or children is a true challenge. I was not prepared for this. Then I found South Carolina Matchmakers, a professional boutique style matchmaking firm, right here in Charleston. What I discovered is South Carolina Matchmakers is not a dating service but instead a selective service for busy professionals over 40. People like me that don’t need someone in their life to be complete but would really like to meet someone to build a long lasting, loving relationship with. - Carolyn, 48

So if meeting someone special is important to you and you don’t want the games of the internet or the bar scene, then call South Carolina Matchmakers today at 843-310-0201 or visit us online at southcarolinamatchmakers.com 12

HE'S SO ORIGINAL

Jason Guerra STRATEGIC GROUP

#champagneeverydamnday

Photo by Arielle Simmons on location at Bottles, Mt. Pleasant

Jason became a wine fanatic while working at Fish and Wentworth Mansion’s Circa 1886 Restaurant. “I became super excited and knowledgeable about wine,” he said, and was nudged by two coworkers to focus on wine studies. “I realized that there’s this whole world out there with all these different varietals… I just wanted to taste and try everything.” Now he works as Moet Hennessy Portfolio Specialist for Strategic Group and on any given day, you can find him anywhere from Charleston to Myrtle Beach working with retail accounts and restaurants. “The thing I love about this job is no day is ever the same,” he said. While he represents a variety of products, his favorite is Dom Pérignon P2 1998, the Second Plénitude of the champagne. “It’s really zippy and vibrant and fresh.” If you catch him at a Champagne 101 event or wine tasting like at Crushed or Bottles, you’ll get all the juicy details of each drink. “I’m out there to share the story.” He also facilitates placements on restaurant menus and holds staff trainings to educate servers about their beverages. He works by a “Champagne-first philosophy,” meaning the belief that a server should always ask a table about starting off dinner with a glass of champagne. His social media hashtag is even “#champagneeverydamnday.” And he wants all customers to feel one thing: Joy. “I want people to experience the joyfulness of our products and celebrating.”

One taste he can't live without?

“Krug Grande Cuvée.”

NAOMI ULSTED

Naomi Ulsted is a memoir and fiction writer from Portland, Oregon, where she works as the director of a Job Corps Center vocational training program for underprivileged youth. Her writing has been published in Salon and LUNA LUNA.

POPCORN: A LONG TERM R E L AT I O N S H I P “ T h a t w a s n ’ t n e a r e n o u g h , a n d m i c r o w a v e p o p c o r n t a s t e d w e i r d .”

I’ve sworn off popcorn twice in my life. Once I made the unfortunate decision to detox, having purchased $250 worth of protein shakes from my sister. I didn’t have popcorn for a month. Nor did I have much of anything else except for the protein shakes that tasted like my shoe. The second time I swore off popcorn was when a tiny popcorn shell lodged in the back of my throat. The sharp flake stuck in my uvula, like a sliver in an elephant’s foot. I ate peanut butter and bread, hoping the sticky wads would drag it out. I stuck my finger down my throat and gagged. Eventually, after several days, I blasted it out with a water pic. I posted on Facebook that my relationship with popcorn was over. I didn’t eat it for three months, which is a pretty serious separation for me and popcorn. When I was growing up, my family never went out to movies. With five kids, we couldn’t afford to visit the theater and buy movie popcorn. Instead, a couple times a month my dad would come home with a rented videotape of Peter Sellers in The Pink Panther and a two liter bottle of Coke. We opened the hideaway couch into a bed and piled on, my mother holding the baby and the rest of us squished together among the cushions. The hard metal frame of the bed jabbed into our ribs or elbows, so the best place to be was in the sagging middle. Since we didn’t all quite fit, the two kids on the outside had to deal with the frame. Quit kicking me! Move over. I’m getting squished! My dad bring us giant bowls of popcorn and tall glasses of Coke over ice and we’d be quiet, give each other space, and watch our movie. On those Friday nights, my mother would stop glaring at my dad, my dad would stop hiding in his room pretending we didn’t exist, and it felt like we were a normal family who had some fun sometimes. Now that I have children, our Friday nights echo those of my childhood. I come home from work with a DVD from Redbox and my kids look forward to “movie parties” with popcorn and a “special drink” of Root Beer. I pour myself a healthy glass of my own special drink, generally merlot. When I was in my ‘20s, I liked to imagine myself as spontaneous and unpredictable. A

32

vagabond. But now I find comfort in my routines. While I can hear the beginning dialogue of Ice Age: The Meltdown, which I could recite in my sleep, I turn on the air popper. When I had only my first boy, I made the popcorn in a well-worn pan, holding him on my hip while I shook the pan over the burner. He giggled as my movements jostled him back and forth, and I tried to think of it as getting some exercise. Once I had two children eating popcorn, however, we had to upgrade. While the air popper heats up, I pour the drinks. While it’s popping, I melt the butter. We have three bowls of popcorn so we can all have our own and there’s no fighting. If I try to share with my little one, he admonishes me for eating more than my share. “Mama!” he wails, “eat your own popcorn,” and places his hands over his bowl. I have a system of pouring the butter, then shaking the salt, and then hefting the bowl slightly several times, so the salt is mixed in. Then repeat. I have the procedure down pat. If popcorn making were an Olympic event, I’d be a strong competitor. My kids and I once visited some friends and we all sat on their floor and watched Star Wars projected up on their wall. They brought out two bags of microwave popcorn to share between the six of us. My kids looked up at me, stricken. That wasn’t near enough, and microwave popcorn tasted weird. On the way home, my kids and I scoffed at these popcorn amateurs with their paltry offerings. On our movie nights, the three of us sit together on the sofa where we all fit. My husband pauses his video game to snag handfuls of popcorn from the boys, generating shrieks of protest. The flow of the evening is soft and easy. None of us ever, on any night, pretend like the others don’t exist. My husband and I don’t hide in our bedrooms reading while our children grow up. The other night I watched my boys as they burst out laughing during Despicable Me. It might have been the second glass of merlot, or the exhaustion I feel after a tough week at work, but I had one of those moments where you know you’ve got something good. You did something right. Movie nights with my boys aren’t going to last forever, but those times will morph into something else. Which will probably involve popcorn.

Ann Belden Read BOOP BABY

Ann Belden Read wants to build children’s palates to crave the same foods adults enjoy. That’s why she launched Boop Baby, her jarred baby food delivery service, to the public in June. A woman who grew up with Southern cooking, Ann noticed when she started introducing solids to her own baby that expiration dates were years away. She said of baby food jars, “They just looked all the same color and just didn’t seem all that appealing.” She named the company to honor her late mother’s nickname for her, Annie Boop, and she categorizes her products by stages, based on a child’s age. Now, she is offering a lot of winter fruits and vegetables like pears, apples, butternut and carnival squash, eggplant and butter beans, depending on availability. She starts with single purees as an introduction for babies, then goes into more combinations, like sweet potato and blueberry, or butter bean and butternut squash. “I try to do sweet and savory together,” said Ann, who works out of a DHECapproved kitchen. For babies, she incorporates spices like cinnamon and cardamom, then moves into chunkier, more complex items and starts to bring in grains from Anson Mills and Lavington Plantation, and more complex herbs like cumin.“It’s very seasonal,” she said. “…A lot of the flavor profiles are based on adult food. I just kind of re-engineer it.” What’s next: a toddler finger food line is her vision. “I certainly want to be able to accommodate as many mothers as who want the product.”

One taste she can't live without?

“Basil or stinky cheese.”

Pat has manned the drive-through window at Jim 'N Nick's Bar-B-Q in North Charleston for eight years. She wouldn’t have it any other way. “I just love working for them and the concept of having fresh food made from scratch, that’s what we do,” she said. “And I love the people I work with.” She takes pride in knowing her customers by name, and she’s known some of them long enough that she gives them Christmas cards with coupons. At the very least, she’ll hand out a biscuit and bring an order out to a customer who has to wait a little longer. “I’m a big person on quality service and accurate orders,” she said. She’s also big on trying to increase sales for the business, and on going the extra mile, whether she helps set up the back lines, tops the pies or organizes the to-go orders into bags. When she’s not at Jim ‘N Nick’s, Pat can be found singing in the choir or working on the culinary committee at Lovely Mountain Baptist Church for occasions like catered anniversaries. “I love going on cruises, I love going to the movies and I love spending time with my grandson, my daughter and my sister.” She also loves reality shows. But no matter where the day takes her, she said, “I always want to do something better than I did yesterday, today. How can I put a shine in somebody’s life?”

Charleston wine food crew #chswff

The five delectable days of Charleston Wine + Food weekend may not be coming until March, but some events have already sold out. Not a surprise for an event showcasing what Laura Kate Whitney, director of marketing and communications, calls the “explosive culinary destination that is Charleston.” The festival has raised more than $383,000 for local charities and hospitality and culinaryrelated scholarship programs, and the 12th year of the event is only going to grow that. The 2017 Charleston Wine + Food weekend is bursting with more than 100 events scheduled and more than 250 local and guest chefs, plus 150 beverage professionals, coming to town. Laura Kate and her team are busy getting the information out about everything people can experience. “We want to continue to promote the incredible experiences and all the talent we have.” When you go, don’t overlook the heart and soul of the weekend, the Culinary Village. This three-day setup can be found in Marion Square, featuring chef demos, live music and, of course, tastings. Dig in.

Germaine Jenkins FRESH FUTURE FARM

#healthiswealth

Germaine Jenkins appreciated food stamps when she went back to college at Johnson & Wales as a single mother to finish her degree. “Having food be one thing we didn’t have to worry about was very good,” she said. Other experiences like working at the Lowcountry Food Bank and earning a Master Gardener certification led her to become CEO and Farm & Market Director of Fresh Future Farm, an urban farm and recently opened grocery store in the Chicora-Cherokee neighborhood making food accessible to neighbors. The business operates on .81 acres of land and the surrounding space within a two-mile radius is a food desert, she said. She’s working on a business model to offer customers rides home with their bags of food. Customers get to shop a full selection of seasonal produce from the farm at the store, plus affordable items from local stores like Publix and Harris Teeter. As for the business name, Germaine said, “We wanted it to be two things: close to the top of the alphabet and descriptive of what we want to see happen in the part of North Charleston that we are serving.” Fresh Future Farm is meant to be a model for creating viable opportunities for people needing employment – and will likely incorporate more cooking demonstrations. “The purpose is to show folks who are maybe used to eating most of their foods out of a box, like packaged foods, that you can incorporate some fresh produce and herbs in a way that is fresh and delicious and culturally relevant.”

One taste she can't live without?

“Fresh mustard greens. Put a fresh mustard green on a ham sandwich. It will change your life.”

Add too much salt to a soup or stew? Peel a potato and drop it in for 20-30 minutes. The starch in the potato will soak up the extra salt, just don’t forget to remove it before you serve the soup!

Not sure if your eggs are fresh? Grab a pot and fill it halfway with water, then drop your egg in. If it sinks, it's still good. If it floats, toss it.

Spill red wine on white fabric? Pour a pile of salt onto the stain immediately, then watch as the salt absorbs the liquid. Leave it overnight, then take your shirt (or skirt, or tablecloth) to the cleaners in the morning. We recommend Calhoun Street Cleaners.

Want crystal clear ice cubes? Just boil the water before freezing. Let it cool before pouring into freezer trays and you’ll have perfect ice!

Need to de-stem strawberries in a flash? Use a drinking straw and push under the stem from the bottom of the berry. Out pops the stem and you’ll have enough for a pie in minutes.

When Cristeta Comerford first came to the United States from her home country of the Philippines, she started –at the bottom of the business – working as a trainee in an industry she loved and wanted to succeed in. Her first job as a cook in a Chicago hotel led to such amazing success that in 2005 she was appointed by President Clinton as the first woman, FilipinoAmerican and Asian ever to be selected as the White House Executive Chef. Her passion for creative healthy eating, her ability to pull together fantastic menus, her talent as a chef and her love of children and community inspired First Lady Michelle Obama to ask her to stay on. Comerford is quoted saying “Don’t aspire to make a living, aspire to make a difference.” Now that’s food for thought! (source: sixtyandme.com)

#TopChef

Bravo Media’s Emmy and James Beard Award-winning “Top Chef ” takes on the culinary hotspot of Charleston for the new season, kicking off with a supersized premiere on Thursday, December 1 at 10pm and we know who we’re rooting for. In an unparalleled twist, eight acclaimed chefs from across the country including Charleston’s own Emily Hahn will unpack their knives alongside eight chefs from seasons past, who have never won the prestigious title and are back for redemption. Hahn, (AKA Empanada Mamma) is the Executive Chef at Warehouse Bar + Kitchen. Her cuisine is bright, flavorful, and elevates simple ingredients in inventive ways. In 2015, Hahn was named one of Charleston's "Rising Star Chefs" by FOOD & WINE Magazine and Eater Charleston's "Chef of the Year."

#AboutTime

“A woman’s place was in the home,” but a professional kitchen for many years was almost exclusively a man’s world – for example, the Culinary Institute of America, one of America’s most acclaimed culinary schools, didn’t accept women until 1970. Now, 44% of their 3,000 students are women. What a difference a few decades make! (source: CIAChef.edu)

Bon Appetit’s Dessert of the Year is “gettable” if you don’t mind a half-day drive (you’ll want to get up early, as they’re open daily from 7:30 a.m. to 2 p.m.). The magazine named the Molasses-Bourbon Doughnut from Hole Doughnuts in Asheville as the top pick for 2016. Says the magazine, “The dough is hand-shaped, fried to order in rice-bran oil, and then glazed with the sweet-boozy sauce. The result is a hot, misshapen, crunchy-on-the-outside, airy-on-the-inside yeast donut of the highest order.” Add that to your Foodie Bucket List!

#TwoStars

Executive Chef Dominique Crenn of Atelier Crenn has made history being the first female chef to earn two Michelin Stars. Her creativity is definitely worth the praise; she even has course meals in her restaurant resembling 13-line poems (how cool is that?). Not only has Crenn been the Executive Chef at countless fancy restaurants including Manhattan Country Club, Campton Place, and the Park Hyatt Grill, she was also named a “Chef to Watch” in 2007 and Best Chef of the Year in 2008 by John Mariani in Esquire Magazine. This talented chef is a major supporter of using organic, sustainable local produce in all of her food. She was a driving force behind “A Moveable Feast,” a project with proceeds benefiting CUESA. Crenn’s achievements just take the cake. (source: spoonuniversity.com)

SPENCER GEORGE

Spencer George is a writer, feminist, and blogger. She is the founder of the #NOTYOURGIRL campaign, which encourages young girls to embrace their true selves, and is a student at Barnard College of Columbia University.

Like most things, the concept of how one should eat a meal is a stereotype fed to us, often unknowingly. Turn on any TV show, watch any movie, read any book- dinner time is a place for the family to gather to hash out the details of their day, passing around plates of food. Depending on the movie you’re watching, the dinner table is a place of connection, of tension, of arguments and discussion. I lived alone with my mother and neither of us had much time to cook, which meant that dinner in my house usually consisted of trying out new restaurants and debating anything from the complications of modern education to whether or not ankle boots will stay on trend. Dinner was a time of social reflection, of intellectual debate and, sometimes, argument. It was at once both a break from homework, a chance to try new restaurants, and a place of academic stimulation.

MEALS SHARED AMONG FAMILY, AMONG FRIENDS, OR EVEN AMONG STRANGERS HAVE THE POWER TO CONNECT US.

Now that I’m in college and many of my meals are eaten alone, en route from class to class, I realize the value of something as simple as dinner. The very origins of common meals promote this notion of inclusivity, the notion that food is something that can bring people together. Meals shared among family, among friends, or even among strangers have the power to connect us. I never used to understand why breaking to eat a meal was important until I found myself eating a protein bar on the way to my 6 p.m. class and calling it dinner. I long for the comfort of dining with others, of discussing and debating, of even just having someone to ask every night, without fail, how my day was. It’s easy to get caught up in the rush of life and forget the joy that comes in sitting down to eat in the company of those you enjoy. But we shouldn’t forget about the practice of coming together to share a meal. I cherish some of the conversations that have emerged from mealtimes, things I wasn’t sure I would miss until I didn’t have them anymore. So, this month, especially in light of the holidays, I encourage you to share a meal with someone, anyone. And who knows? It could end up being one of the most interesting conversations you’ve ever had.

A ROLEX LUNCH “ S u s t e n a n c e a n d c o m m u n i t y - t w o o f o u r m o s t b a s i c n e e d s .”

I settled onto the blue tarp that Joseph, our van driver and Ugandan friend, had spread out next to the van for our lunch break. The equator sun broiled just beyond the tree above my head. I wiped my forehead on the sleeve of my t-shirt and flicked a large African ant that scurried into my personal tarp space. Our team of 48, along with our van drivers and security personnel, left our hotel in Masindi, Uganda early that morning and drove one and a half hours to set up a mobile medical clinic in the village of Bweyale within the Kiryandongo District. Today was our second day in Bweyale and our third of five clinic days. The midweek slump and jet lag had caught up with us by day three, and we swiveled between exhaustion and giddy delirium. “Joseph, you look handsome today!” He smiled at me from the trunk of the van. “This is my safari suit,” he said, brushing his hand along the heather fabric of his shirt. He handed me a Tupperware container, a banana fresh from the stem, and a warm Novida pineapple soda. I eyed the inching line of patients outside of the church where they waited to be seen by our physicians and the rest of our medical staff. We registered 200 patients each day, so our lunch breaks were quick. I popped the Tupperware lid and removed the napkin that our lunch lady always folded over our meals. Rolex! My favorite Uganda staple. Before you think that Ugandans hand out $20,000 timepieces on the regular - a Rolex, local to Uganda, derives its name from “rolled eggs.” In the city, street vendors whip together eggs, peppers and tomatoes in a mug, season and fry them. The resulting flat omelette is rolled up in a circular piece of bread called “chapati,” an unleavened bread similar to a soft tortilla and fried until it shows flecks of brown. My Rolex that day felt warm still as I sat cross-legged on the ground with my teammates. Janelle, one of our physical therapists, discussed a patient she’d seen that morning as the rest of us listened. A group of schoolchildren in their royal blue uniforms herded our attention away. They edged up behind us, giggling and curious. A few of us slipped our phones out, attempting to capture secret selfies with our nosey little entourage. The older kids figured out what we were doing and posed for the camera, hands on hips, faces contorted. The

54

whole of us burst into laughter and Joseph, always watchful and protective, stood from his chair and shooed the children off into the field so we could finish our lunch sans an audience. I inhaled the last bite of my Rolex, gulped the remaining Novida and passed my empty cartons to Joseph as I walked back into clinic, waving to my interpreter and his wife on my way. It’s been six weeks from that day. I’ve since returned to my side of the globe and the island I call home in Charleston. I ate Chickfil-A and drank a Holy City Pluff Mud Porter for dinner tonight after a bizarre workday. While the Lowcountry cools and drifts into Autumn, I think long and often of that afternoon, that lunch, under the tree that I only know as “the Lion King tree.” Especially now as we head into this new season - one of family and community and giving thanks - that third day tastes ever so sacred in reflection. My Uganda days began and concluded with community. Breakfast, lunch and dinner for 48. Each meal rich with laughter and tears, praise and thankfulness. Few things hearten me as much as breaking bread with my community. In Uganda, it was my American teammates, Joseph, and our other Ugandan friends and supporters who helped us serve villages during those five days. In Charleston, it’s my beautiful, motley crew of friends, my church of less than 100, and my coworkers with whom I share a break room during the week. Some of my sweetest moments and deepest friendships grew over a cup of coffee and a croissant, or a plate of spaghetti at 9:00 p.m. Sustenance and community - two of our most basic needs. It only makes sense that they should sit at the table together, or under the Lion King tree. As summer folds its beach chairs and brushes the sand from its feet, I fasten that third Ugandan day into my heart space and tuck it into the shelves of my memory. I flip to that chapter often to revoke the sweetness of a dessert banana and break warm, African bread with my friends. I remind myself that thankfulness is not just for this season of pumpkins and sweaters and turkey comas. My life is full of opportunity to commune and give thanks, whether I’m eating Rolex 7,500 miles from home or munching frozen DiGiorno’s over my coffee table with a friend. But, for the record, I’ll take a Rolex for 2,000 shillings any day.

What’s amazing about health care — children’s health care in particular — is that we are building someone’s future. And giving them the chance to be what they want when they grow up.” — Benjamin Woodhouse, RN Give children the chance to be what they want to be. When Benjamin Woodhouse was a kid, he imagined he would grow up to be a veterinarian. He wanted to care for others. Then he found his calling through nursing. What he finds most rewarding is being with the family, helping them make the right decisions for their child. MUSC Children’s Health is a system of preventive and clinical care that delivers the most advanced, evidencebased health services to children from fetal stage and tiny newborns through the teen years. While the flagship MUSC Children’s Hospital is located in downtown Charleston, specialized pediatric care is now delivered through an expanding network of outreach locations, making children’s health care more convenient for families across South Carolina.
