VEGAN RASPBERRY CHOCO Bonbons Ingredients: For the chocolate shell: 70 g of dark chocolate (min 60% cacao) For the filling: 20 g of Cacao butter by Dragon Superfoods 20 g white almond 10 g of coconut flower syrup (alternatively: Maple syrup, mild honey) 5 g of Coconut oil by Dragon Superfoods 1 pinch of vanilla grounded 40 g (frozen) raspberries 5 g Raspberry liqueur (optional) Also required: Heart chocolates shape. How to: 1. Melt the chocolate in the oven at a low temperature (about 40 ° C). Melt in another bowl cocoa butter, mousse of white almond, coconut oil, coconut flower nectar and the vanilla. In a third bowl defrost 40 g raspberries. Later we will use them for the filling of the candies. We put all three things in the oven. 2. Once the chocolate is melted spread a thin layer of it in the silicon form with hearts – it’s better to put gloves and do it with your fingers. Alternatively, you can also do it with a cooking brush. Then leave the form in the refrigerator so that the chocolate gets solid. 3. Put the remaining chocolate back in the oven. Then spread a second layer of chocolate over the first layer and put back the form in the refrigerator to solidify. This step is repeated until we are satisfied with the thickness of the chocolate walls. We usually recommend to make 2 layers. The remaining chocolate goes back in the oven to be used afterwards. 4. Let’s get started with the filling. Stir the mixture for stuffing again (cacao butter mousse, vanilla, and coconut flower nectar) briefly and put it back in the oven. 5. Take the defrosted raspberries from oven and run them through a sieve. Weigh them after that - you’ll need about 20 grams of raspberries. The remaining pieces of raspberries – left in the sieve, you can throw away. If this is too stressful for you and you do not have a problem with the seeds of raspberries, you can just mash 20g of raspberries and use them like that! Add the raspberry liqueur to the mashed raspberries. 6. Remove the mixture from the oven and stir again. Mix with the raspberry mixture and leave it out to cool and thicken. Stir periodically. 7. When the filling has cooled sufficiently, begin to pour it in the shape with the hearts. Put the form back in the fridge to harden. 8. After 15 minutes, if the filling is half tight, take the rest of the chocolate from the oven and distribute it on the candy so that they are all covered with chocolate. Now just wait until the candy harden in the fridge.

Vegan Scrumptious Cinnamon Rolls PrepTime: about 45 minutes | BakingTime: 16-20 minutes | serves 8-9 rolls
Ingredients: 200 grams spelt flour 30 grams Lucuma powder (I used the one from Dragon Superfoods) 70 grams Coconut sugar (I used the one from Dragon Superfoods) 2-3 tbsp poppy seed 1 tsp dry active yeast about 110 ml plant milk, divided 1 tsp Coconut sugar 70 grams coconut oil or vegan butter
Filling: 60 grams coconut oil or vegan butter, softened 2 tablespoons cinnamon 60 grams coconut sugar
How to: 1. Start off by mixing all of the dry ingredients for the dough together. Then, heat up all of the plantmilk, meanwhile whisk together 1 teaspoon coconut sugar with the yeast. Add half of the warm milk and set aside until frothy on top. 2. Add the coconut oil to the rest of the milk and turn on the heat until liquid. Add to the flour mix and if the yeast mixture is frothy yet, add it too. Take a wooden spoon and stir until combined. You might need some more milk if it’s too wet or some more flour if too dry. 3. Flour the surface (just a tiny bit) and knead the dough for about 5 minutes until smooth (shouldn’t be sticky). Let it rest for 30 minutes until it has risen. 4. During that time add coconut oil, coconut sugar and cinnamon into a little cooking pot and heat on low heat for about half a minute (!!). If it has softened a little bit, stir until everything sticks together. It should NOT be liquid or anywhere near liquid! 5. On a floured surface, roll the dough into a rectangular shape and spred the filling onto the whole dough-plate. It’ll probably be a rather thin layer. Roll the whole thing into one large roll starting from the long side. Cut into 5-7 cm thick pieces and preheat the oven to 180 degrees Celcius. Line a springform and put the rolls into it placing the rolls next to each other leaving no space in between. 6. Put into the oven and bake for about 16-20 minutes or until a fork comes out clean and they’re a little goldenbrown on top. Let them cool and enjoy!
